“Always be thankful, for this is God’s will for you who belong to Christ Jesus.” 1 Thessalonians 5:18 Giving thanks can have a profound effect on our lives. Studies have shown that simple gratitude has physical benefits, producing dopamine, serotonin, and oxytocin in our brains that make us feel peaceful and happy. In Philippians 2:14, God through the Apostle Paul exhorts us, “In everything you do, stay away from complaining and arguing”. That’s a good place to start. Later, in Colossians 2:7 He tells us He wants our lives to “overflow with joy and thanksgiving for all He has done”. Sons and Daughters of the King, you have so much to be thankful for. If you haven’t already, consider establishing a daily routine of intentional gratitude. When you’re tempted to complain, think about specific ways God has been good to you. Consider the people in your life who truly bless you. Have you told them lately? Recall happy memories from your past and ways the Lord has blessed you then go and tell someone about them. As for me, I’m grateful to God for all of you! My faithful readers. Thank you for your unwavering support and encouragement for over two decades. For allowing me to share much of my life with you including my spiritual relationship with Christ. Happy Thanksgiving!

We have great events lined up this month, including: Be one of the first to see this year’s Prairie Lights at Lynn Creek during my annual Cyclin’ with the Mayor Ride. Put on your best Christmas attire, decorate your bike, and join me on Nov. 20 at 5610 Lake Ridge Parkway for a 2.8-mile bike ride along a trail lit by over 4 million holiday lights. The ride begins at 6:30 p.m. If you can’t make it for the bike ride, be sure to visit Prairie Lights, Nov. 23-Dec. 31–the event opens nightly at 6 p.m. We are offering Grand Prairie residents a $15 discount Nov. 27-Dec. 1 and $10 off any night after. Since its creation in 2017, the city’s largest charitable endowment has underwritten more than 500 programs or projects totaling $43.2 million for local nonprofits and city departments. Their philanthropy and forward thinking has ensure Arlington residents are cared for physically and mentally, are enriched by arts, cultural, and educational programming, and have access to meaningful resources and opportunities to help them achieve their American dream.
ARLINGTON experiences, house, and protect families facing domestic violence, and support the nonprofit sector’s fundraising efforts. The foundation’s largest gift this year was $750,000 to Taste Project, a nonprofit bringing its pay-what-you-can community restaurant concept to the heart of Downtown Arlington to help feed, educate, and serve Tarrant County’s food insecure residents. Thank you to all who invest in the future of Arlington through this vital foundation.

BEYOND the nod A TALE OF TWO GR ATITUDES BY M I K E M A Z Y C K
“Doesn’t it just make you so grateful?” That was the question asked to me countless times after coming home from last year’s mission trip to Kenya. As I shared stories of extreme poverty and sickness, horrific living conditions, and countless orphaned children, there was always one question that would conclude the discussion. It was usually asked in a rhetorical type of manner, where no response was expected or needed. They would shake their head, and some variation of those words would come out of their mouth: “Doesn’t it just make you so grateful?” I would nod my head in affirmation, unable to articulate my true feelings. Silence was easier than trying to find the words.

The truth is that the question irritated me. I was still trying to sort out my feelings, and everyone kept asking me the same question. I know it was a reasonable one, but nevertheless, it annoyed me. I felt like they expected a certain answer. Like I was supposed to come back with this ecstatic feeling of gratitude that put a smile on my face because of all the things I have been given in this life, happy and “grateful” that I was not living a life like those people. But that is not what I felt. I had no smile on my face. So, when I would respond with that nod of affirmation they were looking for, I could see the confusion in their eyes. Clearly, the countenance of my face had betrayed me. No, gratitude was not the emotion I was experiencing. At least not the type of gratitude they were imagining. While they were asking me about my gratitude, I found myself wrestling with different questions altogether. In Kenya, I met a family of six who slept on a hard floor in a filthy mud hut, no larger than my bathroom, with holes in the roof. Every night, they would bring their chickens and cow inside the “house” while they slept, otherwise, they would be stolen. As I observed this precious family, I couldn’t get the questions out of my head: Why? Why am I me? Why are they them? Why am I not them, and they not me? They did nothing to deserve this life. I did nothing to deserve mine. Yet here they are. And here I am. Why Lord? Silence was the only answer I would receive. Not long after that, we arrived at another village. An impoverished family stepped out of their mud hut and handed us their 16-year-old daughter’s twin babies to bring back to the orphanage. They were less than three months old. There was no father to help provide. While no one spoke of what had happened, it was presumed that the young girl had been raped. The family had no means to provide for these precious twins. As I stood there with the babies, under the hot African sun, looking at all the little mud huts that surrounded me, watching as their mom — still a child herself — signed papers and handed over their birth certificates, I couldn’t help but notice the grandfather silently observing it all from a distance. And once again, I wrestled with those questions: Why? Why is that not me and my family? Why did You choose to put them here and me there? Once again, there was only silence. My trip to Kenya is not the only time these questions have surfaced. Over the last several years, I have begun to read through the writings and biographies of many of the great saints that have gone before us in generations past. This has been one of the most spiritually fruitful things I have ever done in my life! However, it has also brought me to an unfortunate and sobering conclusion: This life has been unspeakably horrific for a far greater number of people than I had ever realized. The fact is that for thousands of years now, men, women, and children have lived out their lives on this earth in great suffering and cruelty. This life has brought extreme poverty, starvation, horrifying disease, and intense pain to billions of humans throughout history. Entire generations of souls across this earth have lived under
ruthless and evil dictators, men who have carried out some of the most gruesome and cruel forms of torture the mind could ever fathom. I now fully comprehend what those wise men meant when they wrote, “You will never understand where you are until you understand where you have been.” It has now become apparent to me that the life I am currently living is not a normal life. It is not the life that has been common to man for thousands of years. I am living in an unusual place in an unusual time. As I pondered these things, I found myself coming back to those same questions: Why? Why was I not born in one of those past generations? Why am I here, in America, in 2023? Why am I not suffering right now? Why do I enjoy a life of luxury, comfort, and convenience while so many souls before me have suffered so terribly? Why am I not sleeping with my family on the cold, hard floor of an 8x10 mud hut in Kenya right now? You may think it’s pointless to ponder questions like these, but I have found the opposite true. I have realized that sometimes, much fruit comes from pondering difficult questions that cannot be answered. And now, as I reflect on all the times I was asked, “Doesn’t it just make you so grateful?” I guess the answer is Yes and No. I suppose it depends on how you define the word grateful. In Dietrich Bonhoeffer’s Christian classic, The Cost of Discipleship, he distinguishes between cheap grace and costly grace. I would make the same distinction between cheap gratitude and costly gratitude. Cheap gratitude is what I believe we have come to accept today in America (and even the church). It’s a gratitude that is about us and our feelings, about us feeling good for what we have been given, and then going on about our day. It requires nothing from us. No response is necessary. It is superficial and self-centered. It puts a big smile on our faces as we think about how “blessed” our life is. Cheap gratitude makes for a great Facebook post but has precious little to do with true spirituality. Costly gratitude, on the other hand, is altogether different. It is not concerned with smiles and superficiality. Costly gratitude is sobering. Costly gratitude comes with great responsibility! Costly Gratitude evokes a response, an unction in your spirit to do something. Costly gratitude knows that a choice must now be made; a life must be laid down — a cross must be carried. Because “to everyone whom much has been given, much will be required.” (Luke 12:48) “Doesn’t it just make you so grateful?” I now know why I could never find the words, why silence was easier. It’s because words are cheap. I know in my heart that mere words will not suffice. The only way to truthfully answer that question is by my actions. My life must reveal that I am grateful! In the third week of December, Operation Care International, a ministry that meets the spiritual and physical needs of the homeless and impoverished, occupies 500,000 square feet of the Dallas Convention Center. Operation Care International’s Director Mike Tirone says, “It’s 500,000 square feet of love! There are thousands of children and families who depend on this event as their Christmas.” This year, on December 16, OCI will hold its annual “Christmas Gift” for the homeless and impoverished for the twentieth year. Operation Care International provides new shoes and socks for each guest, medical services and eyeglasses, new coats, sleeping bags, blankets, food, and entertainment. Guests can get haircuts, and the children have their own section with zip lines, bounce houses, face painting, cupcakes, and toys! For many children, this is their only Christmas! The event is entirely free for our homeless and impoverished guests. This year, we expect more children than ever as OCI works closely with the Dallas ISD.

Jennings, a former nurse who worked at Baylor Hospital. Susie grew up in the Philippines, where her mom used to feed impoverished people in their kitchen. As a child, Susie resented the attention for the homeless, and she decided she couldn’t stand them. “They would occupy my space and eat my food,” she explained. Susie moved to Dallas in 1982 and began working as a nurse. When the love of her life, David, was lost to suicide, Susie was broken. During this season, Susie asked God what she could do for Him. The answer came one day when she was driving by the homeless in Dallas, and God told her to bring blankets to the homeless. Susie became the “blanket lady” of Dallas, leading her to leave her job and start Operation Care International.

World Adoption Day, A Mother’s Story BY MIMI GREENWOOD KNIGHT
W
hen our son, Jonah, was eight, a tropical storm dropped a pine tree across two of our cars. The next morning, my husband, David, struggled with the help of three teenage boys to lift the tree. As the sun beat down, their frustration mounted, and the tree refused to budge, Jonah mused, “Too bad I’m not under that tree, Mom. Then, YOU could lift it.” There was no doubt in that boy’s mind that his mama could and would lift that tree off him — and he was absolutely right. Jonah is our fourth child. Although the birth of any child is a miracle, the way God brought Jonah into our family is one of the great miracles of my life, and I’ve never gotten over it. That’s because the same God who sang the Psalms into King David’s ear, commissioned Moses with the Ten Commandments, and stayed Abraham’s blade on Mount Mariah, took the time to speak to my husband and me and give us this precious child.
prayed and waited. Every morning, as I drove the kids to school, we prayed for their little brother. (We’d requested a boy to balance out our family of two girls and a boy.) Then, one very average morning, the home phone rang. A woman I’d never met told me a one-year-old boy was entering the foster care system. She asked if we wanted him. My first thought was, “You did not just call and offer me a human being!” It was surreal as was the trip to Walmart, where I walked in with three children and walked out with four. (We’d met our case worker there with Jonah so we could stock up on baby supplies.) What followed was
Two verses come to mind when I remember that time in our lives. Psalm 37:4 promises, “Delight yourself also in the Lord, and He will give you the desires of your heart.” God gave us a desire to adopt when adoption had never been on our radar, even during the years we’d struggled to conceive. The second is Ephesians 3:20, which promises God can do “exceedingly abundantly above all that we ask or think.” That’s precisely what He did when He ordained David Jonah to be ours. We chose to adopt through the foster care system, completed a ten-week training, then waited and prayed and

the longest year of my life while we waited to see whether we’d be allowed to keep our precious boy. I knew God had started this and would finish it, but I’d be lying if I said I wasn’t frantic most of that year. Now, our family celebrates two special days each September. There’s the 5th, which we call “Walmart Day,” the day Jonah came into our home, and the 20th, the day he became our legal child. But he was ours long before that. This mama knows that before God spoke the world into existence, He’d already chosen Jonah for us and us for Jonah.

Tis the season…to be jolly? For most of us, the holidays are a festive time of year. Starting with Thanksgiving, or, nowadays, Halloween, we eagerly anticipate celebrating with parties, holiday meals and drinks, exchanging gifts, and spending time with family and friends. But for some, the holidays can be fi lled with self-imposed stress. From planning the perfect party, finding the right gift, decking the halls, and devising decadent homemade treats, we can often lose sight of being in the moment. For others, who have lost family members or are just lonely, the holidays can make them sink into deeper depression. It is called the Blue Christmas syndrome. The question is, how can we manage stress and depression so that we can enjoy the holiday season instead of dreading it? For starters, be fiscally responsible. You can’t buy your kids everything on their list or indulge yourself and friends in gifts that you will still be paying for next holiday season. Set a spending limit and stick to it. A credit card can be your worst enemy this time of year. And if you don’t want to rub elbows with fellow shoppers in a crowded mall, shop online. But, overindulgence is not just a financial issue. People tend to eat and drink more from November through December until early January. That can result in unwanted weight

gain, unhealthy eating habits, and perhaps alcohol-induced bad behavior. Yes, it is easier said than done, but if you visit friends or family, have a healthy, fi lling snack beforehand, which will curb your appetite. And set a limit on how much alcohol you consume, especially if you are driving. Reuniting with family members can be a double-edged sword. It is great to have visitors spending a few days in your home but don’t let them overstay your invitation. None of us wants to deal with what Chevy Chase faced in the Christmas Vacation movie. On the other hand, don’t be disappointed if close friends or extended family cannot visit. Zoom, FaceTime, and Skype make it possible to reunite you even if you are miles apart. Also, be aware of Seasonal Affection Disorder (SAD). Even if you endure the holiday season, the transition from fall to winter, even in warmer climates, means shorter days and perhaps nothing to look forward to until spring or summer. Here are a few other rules of engagement to manage the holiday season. Make a daily schedule of what you want to accomplish and stick to it. But most importantly, give yourself time off, as well. Meditate, read a book, go for a long walk, or engage in some other form of exercise to relieve stress and anxiety. A little rest goes a long way, especially during the hustle and bustle of the holidays.

According to the Centers for Disease Control (CDC), 42.4% of Americans are obese, based on their Body Mass Index (BMI), a formula that is calculated using height and weight. That means their BMI is 30 or above. And going hand-in-hand with obesity is the rapid increase of Type 2 diabetes. Health organizations estimate that 37.3 million Americans have diabetes, and 20% of them don’t even know it. There are numerous risks associated with diabetes, including heart disease, strokes, hypertension, kidney disease, diabetic neuropathy, eye disease, gum disease, and, for pregnant women, gestational diabetes, which can imperil the health of the mother and unborn child. While Americans are often cited for being gluttonous, the World Health Organization says diabetes has also become a global problem.
TYPE 1 AND TYPE 2 DIABETES There are two types of diabetes. Type 1 often has a genetic component and occurs when a person’s immune system attacks the cells that produce insulin in the pancreas. That defect is present at birth and manifests itself in adolescence. In Type 2 diabetes, the pancreas makes less insulin, usually because of poor nutrition and a sedentary lifestyle. The result is that blood glucose levels, also called blood sugar, are above normal. People who are overweight, consume

too much sugar, and are sedentary are at a higher risk for developing Type 2 diabetes. Symptoms of Type 2 diabetes include increased thirst and urination, fatigue, unexplained weight loss, and blurred vision. But what makes the disease more concerning is that many people don’t have any symptoms. An annual physical with bloodwork will enable your primary care physician to monitor your glucose level and know whether you are diabetic or pre-diabetic. The thing to remember is that Type 2 diabetes can be controlled and sometimes reversed. A healthy weight-loss plan, moderate exercise, and better overall nutrition can keep glucose levels normal. Type 2 diabetics don’t have to take insulin injections unless their condition worsens over time. Oral medications can also be taken to help manage the disease. And here is some good news. Type 2 diabetics don’t have to spend the rest of their lives subsisting on kale, bamboo shoots, and celery. The golden rule of nutrition applies — everything in moderation. This means you can have a glass of wine, a cookie or two, that candy bar you crave, and fruit as long as you consume them sensibly and not make them a daily part of your diet.

We live in the age of “smart” technology. We have smartphones, smart TVs, smart cars, and smart houses. By utilizing the Internet, a person can raise or lower the thermostat, turn lights on and off, talk to someone at the front door, and arm or disarm the home alarm system, all from the workplace, grocery store, or in the car heading home. Few people know, however, that garage doors have been technologically advanced, if not “smart,” for more than 100 years. According to garage door websites, inventor C.G. Johnson created the first overhead garage door in 1921 that could be manually lifted and which ran on rails. Five years later, Johnson invented the first electric garage door opener, which opened and closed garage doors by pressing a button. In 1931, the remote opener made its debut. This history lesson won’t make you feel better if you once owned a house where you had to get out of the car in the pouring rain to lift the garage door. It is also worth noting that many garages were separate buildings, modeled after carriage houses in the horse and buggy days. And back in C.G. Johnson’s day, only the wealthy could afford an electrically powered overhead garage door. Fast-forward to today when garage doors are not just an overlooked appendage to the house but very much a part of the design element and smart house technology. Websites such as OverheadDoor.com and LiftMaster.com display the updated design of garage doors, which can be opened and

closed using an app on your smartphone or a key chain fob to avoid having a remote on your car’s visor or programed into your car. You can search for a dealer near you on each website. Garage doors come in wood, fi berglass, vinyl, aluminum, insulated steel, and what LiftMaster calls Thermacore, or insulated steel. There are a variety of colors to match the rest of the house’s exterior, or you can opt for a glass-paneled frameless door that is sleek and modern. Other styles include barn door and carriage house for more rustic or traditional home designs. In addition to remote entry from a phone app or key fob, a keypad can be installed outside the door so a homeowner can program it for additional security. And in the not-too-distant future, garage doors may include solar panels to help generate electricity. Depending on what kind of door a homeowner chooses and whether it is for a single, double, or three-car garage, the cost for all the bells and whistles can exceed $5,000. For that reason alone, garage door experts caution against making this a Do-It-Yourself project. Garage doors are heavy, and a person has to be comfortable with the electrical and mechanical components of installation. Garage doors will come with a warranty covering any damage that occurs when it is professionally installed. However, the warranty will be voided if damage is caused by a homeowner trying to install the door. Thus, the safest and “smartest” thing to do is leave it up to the professionals.

Although these hard, round fruits can be eaten raw, their tart taste is perfect for sweet treats and savory dishes. From quick breads and cakes to stuffing and holiday punch, they pop up in homes across the country. November is an especially cranberrycrazy month, with cranberry sauce served alongside nearly every Thanksgiving feast . According to Ocean Spray, Americans consume 80 million pounds of cranberries during the week of Thanksgiving alone.

Native North American Plant Like many of the wonderful native foods we consume in North America, wild cranberries (Vaccinium macrocarpon) were used by Native Americans. Called sassamenesh by the Algonquin and ibimi by the Wampanoag and Lenni-Lenape tribes, which translates as “bitter ” or “sour berries,” cranberries were used for everything from medicines to treat arrow wounds to cooking and tex tile dyes. One of the most popular uses for cranberries was pemmican, which is still prepared today. In areas where cranberries grew, Native Americans ate this high-protein, high-calorie combination of crushed cranberries, dried deer or bison meat , and melted fat , depending on it for their survival. It ’s reported that this survival food can last up to half a decade if you store it properly. Melt butter in the oven in a 9 x 13 pan. Sprinkle graham cracker crumbs over melted butter, then pour condensed milk evenly over the graham cracker crumbs. The consensus among

financial experts is that people should start saving for retirement as soon as they enter the workforce. Admittedly, it is difficult for a 20-something to think ahead 50 years, especially if they are cash-strapped because of a school or car loan or paying rent on their first apartment. It doesn’t get easier when couples buy their first home and often find themselves house poor. And then there is the seemingly never-ending expense of raising children.
So, how do you find a reasonable balance between having enough money to pay your bills and saving for a rainy day and beyond? Start with a budget. What are your recurring monthly expenses such as loans, rent/ mortgage, utilities, food, clothing, gasoline, and yes, that daily indulgence, a triple latte? Don’t indulge with all the remaining money. Either open an Individual Retirement Account or, if you’re working full-time, start contributing to your employer’s 401k plan as soon as you are eligible. No contribution is too small. These pre-tax dollars may lower your tax obligation to Uncle Sam, and your employer will match your 401k contribution. Then, build work on your credit reputation by obtaining credit cards because it will enable you to build a good credit score, which can save money when getting a loan for a car or house in the future. The key is to keep spending with plastic from getting out of hand. The Federal Reserve and Census Bureau estimate the average American household has approximately $8,000 of credit card debt. So, try paying off your card’s balance every month because credit card debt resulting from minimum payments and double-digit interest will cost you significantly more than what you used your card to purchase in the first place. And look for cards with no annual fee and a cash-back incentive.
There is a point of view that advocates adults entering the workplace to delay saving for retirement until they are in their 30s or even 40s when they earn more and have an established lifestyle. They also can contribute more when they are older. But keep in mind that in this age of technology, employees must ask themselves how secure they are in their job and will their job even exist in 10 or 15 years. Don’t count on money you haven’t earned yet. Most financial planners say that by the time wage earners reach the age of 40, they should have three times the amount of their annual salary in a retirement fund. They also say that people have from three-to-six months’ worth of savings earmarked for a rainyday fund should they lose their job or for unanticipated emergencies. In theory, that sounds great. The reality is, however, that 60% of American households live paycheck to paycheck, and the average American has only $4,500 in a savings account. So, consider hiring a financial planner sooner than later to help you invest and manage your investments to build a comfortable nest egg when you retire. You advise the planner on how much risk you are willing to take, knowing there is time to recover from a recession or market crash when you are younger. You can become more conservative as you get closer to retirement.
HIRING A FINANCIAL PLANNER Some people choose to be their own financial planner. They believe they have the time and acumen to invest their money. That is fine as long as they don’t think they are at a racetrack, betting on hunches and long shots. Research, however, reveals that many Americans would rather place their trust in a professional financial planner, either working independently or at a firm. Finding a planner, you can trust will help you maximize your investment in the long term. All the rules apply to what you would do when finding a contractor, or landscaper, or visiting dealerships to buy a car. Interview more than one candidate. Are you comfortable with the person handling your money? Are you compatible with their strategy? Are they properly licensed and credentialed? Understand the fees you will incur for their services and how they are determined. And most importantly, are they a fiduciary? This means they must always act in their client’s best interest and avoid conflicts of interest. They must also be up-front and disclose any potential conflict of interest. Finally, some financial advisors specialize in dealing with younger clients, while others may be better suited to older clients approaching or in retirement. november 2023

SHINING BRIGHT TRAIL OF LIGHTS The 59th Annual Trail of Lights in Zilker Park lights up the evening with two million lights and a whopping 96 trees dressed in glowing bulbs. Add 70 other radiant displays, and you have a highlight, if you will, of the Capital City Christmas. Tons of kid-friendly displays bring familiar characters and cute creatures to life-size form, drawing in the starry-eyed attendees into the gleaming spectacle. Remember to dress warm for this outdoor event, and don’t forget to bring your camera for a few photos under the glowing rainbow tunnel. Crowned by a ten-foot star, this “tree” is really more of a massive tent made of string lights. Centered around one of Austin’s last remaining Moonlight Towers, the giant tree is visible across town. It’s most fun, however, to stand directly beneath and look up at a swirling light pattern created by local City of Austin electricians. Visit the Trail of Lights and then mosey toward the 155’ tall tree for a spectacular evening with maximum sparkle enjoyment. In a tradition dating back to 1967, the Zilker tree shines from a few days after Thanksgiving until New Year’s Day. MOZARTS A perfect shoreline perch makes Mozart’s Coffee hard to beat any other time. During Christmas, it’s immersed in music and razzle-dazzle. While guests usually grab any open table near the floor-to-ceiling windows, under a sprawling and shady tree, or in the full glory of lakeside sunshine, tables are reserved during annual evening Light Shows in the winter. In pounds of tinsel on a festooned deck aglow with a cheerful nighttime atmosphere, the show features a live musician playing piano and singing their heart out for half an hour while a colorful light projection prances on the walls nearby. Book a Nautical Light Show Cruise to view from the water, and don’t forget to sample the heaps of tasty, themed treats from the cafe’s always-tempting dessert case. MARKETS Grab a hand-crafted, locally-made souvenir at Austin’s curated holiday markets. These markets don’t offer your typical trinkets or mass-produced tchotchke. Instead, you’ll find one-of-a-kind prints and other lovingly made fantastic frippery — fine art and live music round out the list.
HOLIDAY SING-ALONG & STROLL Possibly the best of both worlds, this event combines the luminous awe of a Christmas tree lighting ceremony with a Christmas marketplace and uses the Texas State Capitol as a stately backdrop. Join in on the 29th Annual Tree Lighting, Sing-Along and Stroll from 5 to 9 PM on December 2 for a chance to meet Santa, shop for a few gifts, and ring in the holiday season with festive music, family, and friends. INGREDIENTS: 2 cups hazelnut coffee | 4 oz. Frangelico liquor, divided | 1 pkg. gingersnaps | 1 pkg. graham crackers, divided | 1 cup granulated sugar | 4 Egg Yolks | 12 oz. Mascarpone cheese | 1 cup pumpkin puree | 2 cups heavy whipping cream | ¼ cup powdered sugar | ½ cup light brown sugar DIRECTIONS: BREW hazelnut coffee and place in a sauce pot. ADD 2 oz. Frangelico liquor and bring to a low simmer. MIX egg yolks and sugar in a separate metal bowl and whisk until combined. PL ACE bowl over simmering coffee and whisk until egg mixture thickens and doubles in volume. REMOVE from heat. FOLD mascarpone into egg mixture until blended. STIR in pumpkin puree. ADD heavy whipping cream, powdered sugar, and remaining Frangelico in a separate mixing bowl. BEAT with a wire whisk until whipped cream forms. FOLD whipped cream into egg/pumpkin mixture. Soak gingersnaps, one at a time, quickly in hazelnut coffee and layer in bottom of a 13 x 9 baking pan. REPEAT with graham crackers layering over gingersnaps. SPREAD a layer of pumpkin mascarpone mixture over graham crackers. REPEAT gingersnap, graham cracker, and pumpkin layer. REFRIGERATE overnight to set. BEFORE serving, mix remaining graham crackers with ½ cup of brown sugar in a food processor. SPRINKLE on top of tiramisu.

Poultry seasoning | ½ tsp. kosher salt | ¼ tsp. black pepper | 1 cup cooked turkey, chopped | 1 Tbsp. minced chives | 1 Tbsp. cooked bacon, chopped DIRECTIONS: SAUTÉ onion, celer y, and garlic in a medium sauce pot until translucent. ADD ma shed potatoes, stock, half and half, poultr y sea soning, salt and pepper. SIMMER until war m, then remove from heat. BLEND, using an immersion blender, until smooth. RETURN to heat and add chopped turkey. COOK until war med through. SERVE in bowls topped with chives and

PL ACE ch eesecl oth in a col an d e r an d a d d shred d ed pot atoes . Squeeze out excess liquid , then place potatoes in a bowl. MELT 1 Tbsp. of but ter in a non-stick skillet over medium-low heat. PL ACE potato and bean mixture in the skillet and pat down lightly. COOK for 12 minutes or so until golden and cr ispy. COVER pan with a f lat board with a handle. FLIP quickly, holding the handles of the skillet and board . ADD the remaining 1 Tbsp. of but ter to skillet. SLIDE the rosti back into skillet. COOK another 12 minutes until the second side is golden and cr ispy. SLIDE onto a cut ting board and cut into 4-6 wedges. SERVE immediately.
