For many, the word “Easter” conjures up images of bunnies and baskets, candy and colored eggs. But to a Christian Easter is about the resurrection of Lord Jesus and His triumph over sin and death. As I prepare myself for the celebration of Easter 2023, I’ve found inspiration and revelation in a book written by my brother-in-law, David Daniels.

An Unexpected King is a journey through the book of Mark written as a devotional. But it’s so much more. Rarely has a book impacted my thoughts and emotions and stayed with me as this book has. I don’t say that because the writer is my relative but because he is anointed to deliver the word of God in a relevant and powerful way.

An excerpt from the author himself said this, “An Unexpected King walks you through the life of Jesus, showing the unfolding revelation of His ministry, His identity, and His destiny in the Gospel of Mark. Each devotional chapter appeals to both the head and heart, connecting theological, historical, and cultural details to our personal lives today. With April starts lots of opportunities to get out and go grand. Loop 9 BBQ is now open in EpicCentral. Featuring premier brisket, scratch sides and a pie store, check out this newest addition to EpicCenter. Then, you can ride off that brisket and pie by joining me at Cyclin’ with the Mayor on April 20 at Daulton Elementary, 2607 N. Grand Peninsula, for a 5-mile bike ride. Riders of all ages and skill levels are encouraged to join the casual ride that meets at 6 p.m. and begins at 6:30 p.m. Farmers Market is now open Saturdays from 8 a.m. to 1 p.m. selling farm fresh fruits and vegetables, plants, fresh meats, tamales, baked goods, salsa, relishes, eggs, honey, chips, soaps, candles and more. Lone Star Park Thoroughbred horse racing starts April 13. Councilpersons Jacquin Headen and Kurt Johnson will conduct a joint Town Hall

on April 13 at Warmack Library from 6 – 8 p.m. The Friends of the Library Book Sale will be April 13-15 at the Main Library, 901 Conover. Main Street Fest is April 21-23 on Main Street downtown. The festival, with free parking and admission, will celebrate the fun, festive family atmosphere that is Grand Prairie with live music, carnival rides and games, arts and crafts, two entertainment stages, food and beer, a KIDZONE and fun for all. The Cinco de Mayo festival is May 6 at 300 W. Main St. The parade begins at 10 a.m., with festivities following all day. We also offer Electronics Recycling Days, Household Hazardous Waste Collection Days, Master Composter Classes, Shred Days and more throughout the year. The brave men and women of the Arlington Police Department go above and beyond to serve and protect our community. We can’t thank them enough. They also get help in their efforts from city employees, volunteers, and community organizations. The department’s annual awards ceremony is held each year to celebrate those individuals as well as outstanding officers. This year’s recipients were honored for everything from disrupting a cryptocurrency exchange that was helping to finance a foreign terrorist organization, to helping low-income families get safe, new car seats, and helping close a problem business operating illegally within the city. UNDERSTANDING THE SCHEMES OF OUR ENEMY

Johnny knocked on the door of Pastor Kenny’s office. “Come on in,” responded the pastor. He knew who it was before the door opened. Johnny had called him the day before and said he wanted to sit down with him because he had some “spiritual questions” he was wrestling with.

“How have you been, buddy?” the pastor asked as he stood up and gave Johnny a big hug.

“Well, that’s a great question. I guess I’ve been struggling a bit lately if I’m being honest.”

Johnny never wasted any time. He got straight to the point as he and the pastor took their seats on opposite sides of the desk.

“Well, tell me, what’s going on?” Pastor Kenny asked with a concerned look on his face.

“I’ve been giving a lot of thought to my relationship with God lately.”

“Well, that’s wonderful,” the pastor quickly interjected with a smile on his face.

“I guess so,” Johnny replied. “But I guess the question I’ve been wrestling with is, how does a person know if they are truly saved?”

The pastor’s demeanor quickly changed from a warm smile to a look of concern. “Johnny, are you asking this question because you’re questioning if you are truly saved?”

Johnny hesitated for a second but then answered. “Yeah, I guess I am.”

The look of concern quickly shifted to a subtle smile on the pastor’s face, “Johnny, I have known you for years. Heck, I’m the one who baptized you when you were seven years old. Remember?” Johnny nodded in agreement.

“Johnny, do you believe that Jesus is the Son of God and he died for your sins?” the pastor asked in a friendly but slightly condescending tone.

“Yes,” Johnny replied.

“Have you asked Him to come into your heart and forgive you of your sins?” the pastor asked with eyebrows slightly raised as if he already knew the answer.

“Yeah, but…” Johnny paused for a split second as he tried to find the words.

But before he could get the words out. The pastor interjected emphatically.

“Johnny! If you believe those things and you have asked Jesus into your heart, then you are saved. This is an attack from the Devil. The Devil is trying to get you to doubt your salvation. That’s what he does. I have seen this a thousand times. He’s always trying to get believers to doubt their salvation. Don’t let him do it!”

Although Johnny still had unanswered questions, he let out a sigh of relief as he heard those words from his pastor. After all, he had known Pastor Kenny for years and always looked up to him as a father in the faith. Johnny was a “normal Christian.” He hadn’t studied the Bible for years like Pastor Kenny had. He quietly thought to himself, I must be interpreting those passages wrong.

Johnny thanked his pastor for taking the time to meet with him and answer his questions, they enjoyed some small talk, and Johnny left.

Dear friend, this conversation is taking place every single day, and I am convinced it is sending more souls to Hell than quite possibly any other conversation of our age.

Every day men open the Word and read the stories of Jesus, and say to themselves, “Maybe I’m missing something here.

Maybe this isn’t as simple as that prayer I recited when I was seven years old. Maybe I’m not truly saved!” As they read, the Holy Spirit pleads with their hearts and minds to examine themselves before it’s too late. These men find themselves troubled in their soul, as they should, and they reach out to a friend or pastor whom they trust for counsel. They walk away, headed straight to the gates of Hell, with a smile on their face, rebuking the Devil all the way there. The enemy walks alongside them and laughs as he ponders the fact that men actually fall for this trick.

There is no doubt that the enemy wants genuine believers to doubt their salvation. Of course, he does. But of much greater importance to him is giving assurance of salvation to men who do not have it. Once a man is saved, he has lost him for good. But the man who is not a believer but thinks he is, this one he will have for all of eternity.

Have we considered the words of Paul to the Corinthians, “Test yourselves to see if you are in the faith; examine yourselves!” (2 Cor.13:5)

Have we understood the words of Jesus Himself? He said that MANY would show up on that day saying “Lord, Lord.” believing they are in relationship with Him, only to hear those terrifying words. “Away from Me, I never knew you.” (Mathew 7:23) We miss the entire reason He spoke these words in the first place! Isn’t He urging us to examine ourselves now, before that day, while there is still time? Shouldn’t we ponder the fact that the deceived never actually believe they are deceived and thereby ask ourselves, could I be deceived? Didn’t he tell the story so that men would agonize and wrestle with these words as they examine what it means to truly believe and if their faith has produced genuine fruit? I believe so!

Every unbeliever will suffer greatly on that day as they stand before the Judge. But I am convinced that the shock for those who thought they were believers, only to find out they had been deceived, will be a moment of horror far worse than any other.

There is no man on this earth qualified to give another man assurance of his faith. The very thought of this causes me to tremble within myself. When a man does that, he has stood in the place of God and made himself Judge. He has proven he does not understand the Scriptures. He will undoubtedly lead many men to Hell, and he will be judged for these actions.

My friend, self-examination and the conviction of the Holy Spirit are precious and beautiful works. They are the tools of the Holy Spirit that lead men into eternal life. They are the tools by which He leads His children to greater levels of repentance and conformity to His nature. And they are, in fact, the tools by which He gives us one of the most precious gifts of all on this side of Heaven, the assurance of our faith!

Salutes Chief Nursing Officer Nora Frasier, DNP, RN, FACHE, NEA-BC

Those who know Nora Frasier weren’t surprised when she was selected to receive the 2022 Excellence in Leadership Award from The Texas Organization for Nurse Leadership (TONL). As vice president/chief nursing officer at Methodist Mansfield Medical Center, Nora serves as the connection between a nursing staff she admires and a community she loves.

Each year TONL bestows the Excellence in Leadership Award to a nurse leader who has “made significant contributions as a nurse executive demonstrating the ability to relate and connect with their nursing staff through unique and effective methods and has improved their community through schools, clinics, and civic organizations”. Those who know Nora know she’s done both with heart and innovation.

Yet, this nursing career that’s impacted so many lives almost didn’t happen. “I was majoring in psychology when a friend came to visit and convinced me to

apply to nursing school,” she said. “I did so with the intention of becoming a psychiatric nurse, but the second I stepped into an ICU, I knew I’d found my calling.”

What followed has been a long and impactful nursing career spent exclusively at acute care nursing facilities with the majority of it in nurse leadership. “What I love about nursing is the perfect blend of caring with science and technology,” Nora said. “As nurses we assess and analyze what we can do to make our patients’ better. Then, we apply science and technology to make it happen. It’s wonderful to be able to make a difference in someone’s life when they’re at their most vulnerable.”

While the nurses on the front line practice their craft by applying their hearts and hands, nurse leaders like Nora make that care possible as they connect the heart, hands, and head in a relationship-based model of care. “The secret to our success at Methodist Mansfield is our connection to the community,” Nora said. “Our mission doesn’t stop at our four walls. This facility has really raised the standard of caring by owning the responsibility of improving the health of our community.”

They do this in many ways including volunteering around the community. They serve at nonprofit organizations such as Mansfield Mission Center, offer free sports physicals to high school athletes that include echocardiograms, sponsor the annual Run with Heart fundraiser, volunteer at community health fairs, sponsor the annual back-to-school bash, and present the Josh the Otter drowning prevention program for free around the community.

GARDENING WITH KIDS ISN’T JUST FUN – IT’S HEALTHY, TOO

There’s no question, playing in the dirt tops the list of fun for kids, particularly young children, despite the protests of many well-intended parents. If you are one of those worried parents, you can put your fears aside.

As it turns out, dirt is beneficial to kids’ long-term health, according to a Northwestern University article by Clare Milliken, “Germs at four, less inflammation at forty.” Studies have found that early exposure to certain germs, like those found in dirt, actually helps kids’ immune systems learn to regulate inflammation better. In turn, this exposure reduces kids’ risk for many diseases throughout their lives.

For that reason, a family garden is a perfect opportunity to build your kids’ immune systems. Better still, gardening offers lots of other benefits to kids and families.

GETTING STARTED

First, decide where to plant your garden. Then allow a small space for your child to have their own gar-den, too. This will help build your child’s enthusiasm for the garden and encourage them to take owner-ship and responsibility for it. Having their own garden can be exciting and rewarding for kids because they know that they, alone (or with minimal help), grew those little seeds into marvelous plants.

Next, decide what to plant. For young children, consider fastgrowing plants they are familiar with. Little kids also love plants that are colorful or have strong scents.

If your kids are older, let them choose what they want to grow.

But keep in mind your child’s personality. If he tends to be impatient, suggest plants that are easy to care for and grow quickly.

As you plan and prepare, include your child as much as possible. Remember, this stage is as much fun for kids as it is for parents and helps build their enthusiasm. Also, let them help you draw up the garden plan. If they’re old enough, they can also create their shopping list.

When you shop for supplies, take your kids along and let them pick out their own seeds and gardening tools. For the safety of young children, look for kids’ gardening tools made of durable plastic.

PLANTING YOUR GARDEN

When you begin planting, show your child how to plant the seeds and how to space them apart correctly. Then have your child water as directed.

Put a daily gardening task list on the refrigerator to help your child take responsibility for their garden.

Also, suggest keeping a garden log to help your child maintain enthusiasm. Kids can have fun recording the date of plantings, each day’s gardening activities, when each plant sprouts, the amount of growth of the plants, and the harvesting.

Finally, after harvesting, have your child help you prepare the vegetables. Try different ways of preparing or cooking them to help your kid develop a life-long love for fresh, healthy veggies.

WHAT TO CONSIDER WHEN PLANNING AN ADDITION

Are you and your spouse tired of sharing the bathroom in shifts? Has your family gained a new member? Do the kids need their own rooms? Does your kitchen feel tiny and cramped? Is it finally time for the home office you have talked about since you moved in? The list could go on, but one thing is sure — you are ready for more space, and the time is now. Here is a list that will help get the ball rolling in the right direction.

First, decide on your budget. Unless money is not an issue, you will likely end up making some cuts to your ideal vision, so enter into this process with that in mind. The average cost for an addition is between $40,000 and $50,000. This aggregate national number does not take into account size, scope, the slope of land, or geography. An extensive project could cost more than double this figure. If your addition is small and relatively simple, it may be less.

Once you have decided how much money you will need or can spend, you’ll need to determine your exact property lines to develop a plot plan, including your home, landscaping, and the location of the utilities. Then check local codes regarding restrictions about how close you can build to your neighbor.

Next, take a close look at your existing structure and floor plan. At this point, you’ll likely need help from a residential designer or architect to come up with an addition that will be not only economical but also attractive, useful, and fit with your current home style. As well as interior design, think about how the expansion will architecturally affect the exterior of your home.

Before work begins, make a list detailing the materials and the scope of the work to be done. Regarding materials (such as flooring, hardware, lighting, etc.), include first, second, and third options. Your first choice may turn out to put you over budget. A backup plan from the onset will ensure you do not lose time once your build-out begins. Determine at this stage what you can and cannot live without, where you can compromise, and where you can save money.

Finally, hire professionals. The number and type of people you will need will depend on the scale and scope of your project. Even if you plan a relatively small addition, you will need a designer or draftsperson to prepare one or more working drawings to apply for a building permit, freehand sketches or rough diagrams will not suffice. For large projects, you will likely need an architect to design an efficient layout and merge the addition’s design with your existing home. And do not forget to budget for the cost of the architect.

After your blueprints are complete, you will get bids from contractors. If you have plans for your home addition available for contractors to bid from, you will get a better sense of the cost because they will all be bidding from the same information.

Another option is to hire a design-build firm. They provide a complete package of services, including design consultation, construction drawings, and project management.

Though the idea of expanding your home can be daunting, when broken down into a few steps like these, an addition can be a relatively simple and extremely rewarding way to improve your home and lifestyle.

With spring in full swing in the Lone Star State, it’s time to throw open the windows, let the fresh air and sunshine pour in, and participate in the time-honored tradition of spring cleaning. This year, go beyond the usual scrubbing, dusting, and organizing. Include a home detox to improve indoor air quality and the water you drink and address items that could pose a health and safety hazard. Here are a few suggestions to help you get started.

HVAC Filters – Most air filter manufacturers and HVAC companies recommend changing your air fi lter every three months. These out-of-sight, out-of-mind passive workhorses keep the air in your home cleaner by capturing pollutants and contaminants from the air that passes through them.

Be aware that not all fi lters are created equal. Generally, the more expensive they are, the more efficient and effective they are at trapping dust, pollen, and pet dander so it doesn’t keep circulating through your house. Check the filtering grade assigned by the manufacturer before you buy replacement fi lters, and don’t be tempted to pinch pennies here. Usually, the higher the rating, the better the fi lter is at trapping specific particle types.

Chimney Inspection and Cleaning – If you have a wood-burning fireplace, creosote — a dangerous byproduct from burning wood — can build up to the point that smoke and toxic gasses like carbon monoxide get trapped inside your home. Furthermore, creosote accumulation can lead to chimney fires. Chimney cleaning removes creosote, soot, and debris.

You won’t have creosote build-up with a gas or propane fireplace, but you still need to have your chimney inspected and maintained. Ceramic logs can deteriorate and clog vents, bird nests, and debris may obstruct airflow in your chimney, and your fi replace should be checked to ensure there are no leaks and that it’s in good working order.

Air Duct Cleaning – You’d be surprised at what can lurk in your home’s air ducts. Pollen, pet dander, mold and mildew, dust mites, fungal spores, and even bacteria and viruses in your air vents can wreak havoc on your family’s health and well-being. Look into air duct cleaning services that offer full source removal cleaning, which includes breaking contaminants loose from surfaces and continuously collecting them to prevent any spread during the process. Many companies also offer antimicrobial, EPA-approved products they apply to nonporous surfaces in your HVAC system to address microbial contamination and help control odors.

IMPROVE YOUR HOME’S WATER QUALITY

Get a whole house water fi lter and enjoy cleaner, safer water from every tap. Ask your water quality consultant about different systems and look for those that follow NSF/ANSI standards. A global, independent organization, the NSF standards team “facilitates the development of public health standards,” and its service teams “test, audit, and certify products and services.”

The Candle Debate

Do you love the scent and flickering flame of a candle burning in your home? I used to have a candle going somewhere in my house several hours a day and especially enjoyed using fresh scents. Then one day, when our HVAC tech was performing a spring check-up on our system, he walked into the room holding the HVAC filter he’d just replaced with a new one, and it was completely black.

The candle debate is controversial. Candle manufacturers claim they aren’t hazardous to our health, and some believe soy candles are healthier than paraffin candles. My personal choice was to install a whole-home air purification system that actively removes many odor-causing contaminants from the indoor air. And when I occasionally want a pleasant scent in my home, like when I’m entertaining, I use essential oil blends in a cold air diffusion machine.

Upgrading your front door is one of the simplest and most cost-effective ways to give your home an instant facelift and improve energy effi ciency.

A recent study found that replacing a front door increases the home’s perceived value by as much as five times the cost of the new door, which means you get a return on your investment.

If you determine that now is the time for an update, do not think only about swapping one door out for another. Also, consider enlarging the entryway by installing a door with windows to either side or above it. The added natural light adds a sense of grandeur and creates a more open atmosphere. Here are a few options to consider.

Metal (Steel) Doors: Metal (steel) doors are very affordable and extremely durable, but they cannot be stained, only painted.

Fiberglass Doors: Fiberglass — probably the most popular current choice — offers wood’s beauty and versatility and metal’s durability. It is least affected by weather and ensures a long-term life span and easy operation. Fiberglass doors come in many styles and can be stained or painted.

If the existing entry door on your house doesn’t have any of the problems listed above, you may want to have someone refi nish or update it instead.

Embellish it: If every door on your block is brown or gray, a simple coat of bright paint will make your home stand out. You could also hang a wreath, add a dramatic house number, install some long shutters on either side, or add a specialty door knocker. Even a new doormat and some planters placed on either side with beautiful foliage will elevate your entry.

Add lights: Lights at your front door will boost your curb appeal. If you already have lights, consider replacing them as an update. On a front porch, a hanging fi xture will cast a welcoming pool of

light. And to add a bit of drama, spotlights at ground level aimed at the door will put your entry at center stage.

Dress up your entry with new trim: Replacing your front door trim with decorative moldings is an easy way to upgrade. In addition to wood, these are also available in PVC trims that look identical to their wooden counterparts.

Go high-tech: While the front door is not the most advanced part of your home, you should consider raising its status with a smart doorbell/video combo. Many options are available that will snap a picture anytime someone rings the doorbell and send it to your phone/computer. You can then select a video download, have a conversation with the visitor, or answer the door in person. Most systems store many images, so you can review, save, and delete them when you are ready.

Keep it tidy: Clean is impressive, which translates to curb appeal. Sweep your entry weekly, then scrub with soap and water intermittently. You will instantly bring your home’s appearance back to life.

Your front door is the fi rst thing that welcomes a passerby or visitor and sets the mood of your home. While style and budget are obvious considerations, any improvement you can make to your home’s most prominent feature is worth the investment. Your front door sets the fi rst and last impression. Make it a great one.

UNDERSTANDING AGE-RELATED MACULAR DEGENERATION

My neighbor, Camelia, is a force to be reckoned with. During her nine decades, she’s traveled to every continent. She’s climbed mountains and volcanos, ridden elephants and camels, traveled by dog sled, swam with sharks, gone SCUBA diving, spelunking, skydiving, and parasailing, slept in yurts and igloos, and visited parts of the rain forest few will ever see. Her robust lifestyle makes it all the sadder now that she’s restricted by age-related macular degeneration.

It began at 80 with blurry vision. By 83, Camelia had a dark spot forming in the center of her vision. That spot grew, and by her late 80s, instead of tramping through forests and diving into seas, she resigned herself to commercial cruises and guided groups. An insatiable reader, Camelia now listens to audiobooks. She hung up her car keys and sold her car. And last month, she canceled the New Yorker subscription she’s had since 1953.

What merciless disease has stopped my feisty, formidable friend in her tracks? The American Macular Degeneration Foundation describes it like this. “Macular degeneration is caused by deterioration of a critical portion of the retina, which is the tissue that lines the back of the eye and translates light from the images we see into electrical impulses, which are sent via the optic nerve to the brain, which interprets them as sight.”

The AMDF website explains that this critical area of the retina, known as the macula, captures detailed information, color perception, and contrast from the center of our visual fi eld. When that area deteriorates because of age and/or other factors, folks like Camelia begin to lose detailed, central vision and visual acuity in one eye or both. As AMD progresses, they can’t read, drive, do fi ne work like needlepoint, participate in sports, and eventually, they may not recognize faces or objects. The things they do see in the center of their vision become progressively duller, and eventually, all they have is their peripheral vision.

Although AMD rarely makes anyone go completely “lights out,” once it’s in its advanced stages, they’re considered legally blind. Eventually, even the peripheral vision they retain can lose sharpness and clarity. Sadly, there’s no cure for AMD, but treatment can often slow progression and head off serious vision loss. The key is early diagnosis and treatment. Be diligent about routine eye exams with a licensed optometrist or an ophthalmologist. If you receive an AMD diagnosis, look for a qualified retinologist who can advise you on how to check your vision weekly and chart any progression of symptoms. You can do this at home with an Amsler Grid Chart printed out or on your tablet or computer screen.

Your retinologist may prescribe nutritional supplements, including antioxidants, vitamins C and E, copper, and zinc. They may also recommend eye injections, laser therapy, and/or glasses with special lenses. Keep up with routine eye exams and follow the recommendations of your doctor. The right treatment could slow your vision loss and may even help you regain some of the vision you’ve lost.

Are you at risk for AMD?

While the causes of age-related macular degeneration are complex, many of these risk factors are under your control.

If you smoke, quit. If you’re overweight — especially around your abdomen — take steps to control your weight. If you’re frequently in the sun, wear sunglasses with proper UV protection. If you have high blood pressure, unchecked cardiovascular disease, or chronic inflammation throughout your body, partner with a doctor to address those conditions.

Unfortunately, some AMD risk factors are out of your hands. The older you get, the more your risk increases. You may also have genetic markers for AMD, and research seems to show that those with light-colored irises, those who are far-sighted, and even females are at greater risk for developing the disease (the latter simply because females tend to live longer).

Because factors such as our age, sex, and the roll of the genetic dice are out of our hands, all the more reason to be proactive about the things we can control in hopes of warding off AMD and preserving our precious sight for life.

injections are a popular way to address hollow-looking eyes as they restore volume and smooth the transition between the lower eyelid and cheeks. Tear troughs, under-eye bags, and hollows can look less pronounced, as well as dark circles. Touch-ups will be required if you like the results since dermal fi llers aren’t permanent.

Upper and Lower Eyelid Surgery – If you want a more permanent solution than fi llers, eyelid surgery is a great option if you’re a good candidate. Depending on your needs and goals, it can be performed on the upper eyelids, lower eyelids, or both. During a blepharoplasty (the medical term for eyelid surgery), your plastic surgeon will remove excess skin and fat and may tighten muscles. Usually performed on an outpatient basis and often under local anesthetic, results should last for years and, for some, a lifetime.

Double Eyelid Surgery – Some of us have visible upper eyelid folds, known as double eyelids, while others were born without these creases. Both are perfectly natural and beautiful, but if you would prefer to have a crease, consider getting double eyelid surgery. Two types of double eyelid surgery are generally available — incisional and “incisionless.” Ask

your plastic surgeon to explain the difference during your consultation, which type they recommend for you, and why. Microneedling – This minimally invasive procedure stimulates collagen production by pricking the skin at a very precise depth with tiny, sterilized needles. Especially popular for the face, neck, and décolletage, microneedling can also be used to address dark circles, fi ne lines, and thin, crepey skin under the eyes. Professional treatment at a shallower needle depth is used around the delicate, sensitive skin around and under the eyes than what’s used for the rest of the face. Microneedling is often available in a package of three sessions performed around three weeks for optimal results. You will need to schedule sessions during the year to maintain the results.

Chemical Eye Peel – Modern eye peels performed by a professional are considered safe and effective at addressing puffi ness beneath the eyes, fi ne lines, discoloration, and brightening under-eye circles. Since the skin around the eyes is thin, light to medium peels are used in this sensitive area to brighten and boost collagen and elastin production.

Hot air balloons are a finicky beast. To soar, they need perfect weather. And yet, Texas throws hot air balloon festivals every year. It’s almost as if the chance to see a balloon sail toward the clouds is worth dashed hopes if it does not work out. Several cities in the state boast such fests. Longview won a bid to host the National Hot Air Balloon Championships this year. They’ll welcome 50 of the best pilots in the United States for a week of early-morning balloon races around the city.

Spectators flock to these festivals, sometimes to watch them from afar and sometimes to ride about 30 feet up in a basket tethered to the ground. Most are happy to see the infl ated balloons cluster, all aglow at dusk, still tethered.

Magic can happen, but nothing we say will prepare you for a hot air balloon festival more than this key phrase: Weather permitting. Bring your hopes, not your expectations. There are no refunds anyway. Pilots need winds in the eight-mile-per-hour range to fly and use them to change direction as they ascend and descend. Races happen near predawn or very early in the morning, and while the early birds enjoy views from the ground, evening “glows” are a bigger crowd draw. That’s when all the balloons light up just after sunset, creating a spectacular view worth traveling to see.

We did our research on hot air balloon festivals in Texas for you, and here’s a little taste to help you take off.

LONGVIEW

For the next three years, little Longview will host national championships at the Great Texas Balloon Race. Texas State Champions are also selected in Longview this year, “so the competitions are a big deal,” said GTBR Chairman Dan Droege. He explained that racers compete Tuesday to Sunday morning, with the top ten from nationals qualifying for a world competition. Pilots aged 29 and younger compete as The Young Guns amongst themselves. Father’s Day weekend sees evening glows, skydivers, live music, and a whopping total of 81 flying balloons. A few unique shapes and remote-controlled balloons are planned, but no tethered rides. Pilots will offer trading cards to the kids.

COAT shrimp with pesto and let sit for 20 minutes, refrigerated. HEAT a sauté pan to med-high heat with 1 Tbsp. of extra virgin olive oil. COOK shrimp 2 to 3 minutes each side, remove from heat. TOSS remaining arugula with extra virgin olive oil, cherry tomatoes, 1 lemon juiced and zested. Season with salt & pepper. SERVE shrimp on top of salad.

GRILLED SALMON WITH CILANTRO CHIMICHURRI

SERVINGS: 4 | PREP: 15 MIN. | COOK: 10 MIN. | TOTAL: 25 MIN.

INGREDIENTS: 1 shallot, minced | 1 bunch cilantro | 2 Tbsp. red wine vinegar | 3 Tbsp. extra virgin olive oil, divided | ½ tsp. crushed red pepper flakes | Pinch salt & black pepper | 4 salmon filets (6 to 8 oz.)

DIRECTIONS: BLEND shallot, cilantro, red wine vinegar, 2 Tbsp. oil and red pepper in a food processor until smooth. RINSE and pat dry salmon filets. SEASON salmon with salt & pepper. HEAT grill or grill pan to high heat. COAT the grates with remaining oil or more until well coated. SEAR salmon on one side and let cook for 4 to 5 minutes. FLIP salmon and continuing cooking until desired doneness, 4 to 5 minutes more. SERVE salmon topped with chimichurri on a bed of rice.
