There’s no doubt we’re blessed with outstanding medical professionals and inspired business owners in the Arlington/Mansfield area. I’m proud to introduce you to a few of them.

It’s been a wonderful summer in North Texas. Hard to believe it’s already Back-to-School time. I hope you made some lifetime memories with the ones you love, during Summer 2023, and that you’ll take the opportunity to squeeze in a few more, before we settle back into our school routine and start looking forward to the holidays.

Lastly, I recently read John Brevere’s anointed book, “The Awe of God”. If you’ve been yearning for a deeper walk with the Lord, please consider this 40-day journey of complete transformation. After reading this book, I am a different person than I was several months ago. I thank God for the revelation shared in this volume. I believe we’re witnessing an outpouring of the Holy Spirit right now like never before. The summer in Mansfield has been fun-filled and full of great activities for the whole family. I know, kids, it’s back to school. Here’s yet another reason to be a proud Arlington resident. We’ll soon be home to the National Medal of Honor Museum. In fact, just recently the National Medal of Honor Museum Foundation (NMOHMF) celebrated a major milestone in its construction of the facility with the placement of the building’s final steel beam. The beam was signed by NMOHMF team members, construction workers, donors, supporters, and community members before it was put into place during a “Topping Out” ceremony at the construction site.

The Museum is scheduled to be completed in early 2025 and will contain more than 100,000 square feet of space, with 31,000 square feet dedicated to exhibition galleries detailing the history of the Medal of Honor and the stories of the American heroes who’ve earned it. The museum will also

offer dedicated spaces for classrooms, meeting venues, symposiums, memorials, and ceremonies.

I hope you’re all staying safe as our city experiences triple-digit temperatures. As much as you’re able, stay indoors and out of direct sunlight. Stay hydrated. Make regular checks on elderly neighbors and family members. Refrain from leaving pets in your parked car, even with the windows cracked. Know the signs of heat stroke and get immediate help if you’re experiencing them.

A REFLECTION ON ALCOHOL AFTER 12 YEARS OF SOBRIETY

“If we consider the unblushing promises of reward and the staggering nature of the rewards promised in the Gospels, It would seem that our Lord finds our desires not too strong, but too weak. We are half-hearted creatures, fooling about with drink and sex and ambition, when infinite joy is offered us, like an ignorant child who wants to go on making mud pies in a slum because he cannot imagine what is meant by the offer of a holiday at the sea. We are far too easily pleased.”

To my brothers and sisters in Christ struggling with alcohol, I understand the battle you are in. I had to lay down alcohol for good just over 12 years ago. As I thought about what I would write to you today and reflected on these past 12 years, this is the message that burns deepest within me: You are choosing a lesser life! You are making an illogical decision. As Lewis said above, you are choosing mud pies in the slum when there is a holiday at the sea being offered to you. Lewis is making an appeal to logic. It’s like choosing a fast-food hamburger when you could be eating a filet at a 5-star steakhouse or choosing to drive an old beat-up clunker when you could be driving a brand-new car. These decisions would make no sense. My friend, I have traveled both roads, and I can say with complete conviction that what I have given up cannot be compared to what I have gained. My heart breaks for you because of the life you are missing out on.

Paul wrote to the Ephesians, “And do not get drunk with wine, for that is dissipation, but be filled with the Spirit….” (Ephesians 5:18). Most people would see this verse as a command or a spiritual appeal (which I do believe it is). But after twelve years of sobriety, I have also come to understand this verse in a very different way. I believe he is making a logical appeal as well. Paul is appealing to something GREATER! He is telling them not to be ignorant children , as Lewis would say, and make the obvious and correct decision. He is encouraging them to put down the lesser life and pick up the greater one.

In his letter to the Hebrews, Paul says, “Therefore, since we are surrounded by such a great cloud of witnesses, let us throw off everything that hinders and the sin that so easily entangles. And let us run with perseverance the race marked out for us, fixing our eyes on Jesus, the pioneer and perfecter of faith. For the joy set before Him He endured the cross, scorning its shame, and sat down at the right hand of the throne of God.” (Hebrews 12:1-2)

In this passage, Paul is saying that the Christian life is like a runner in a race. Now why does a runner

throw off everything that hinders and entangles him? For the PRIZE! He then backs it up with the example of Jesus. Why did Jesus endure the pain and shame of the cross? For the JOY set before Him. The prize being offered to the runner makes anything that hinders his running illogical, and thus the runner throws these things aside quickly and violently.

The runner who sees the prize no longer finds himself asking questions like, “Am I really an alcoholic?” or “Is what I am doing wrong or sinful?” All these questions become irrelevant. When the child understands and sees how great the experience of a holiday at the sea will be, they no longer ask themself if it’s wrong or right to eat the mud pie. That question doesn’t matter to them anymore.

In light of what I have written above, there is something else you must understand. You are struggling with alcohol, and you think that God is displeased with you. Some of you may even envision a scowl on God’s face. Or maybe you believe the countenance on His face is one of disappointment in you. And that each time you fail, His disappointment grows. Oh no, my friend. You couldn’t be more wrong. Let me be clear. If you are His child, He is not angry with you. He is not disappointed in you today. He is disappointed for you! Please understand the difference. He is looking at you with tears running down His face. His heart weeps for you. He is your Dad. He is heartbroken. He is the Father of the prodigal, eagerly waiting on His child to grow tired of eating slop with the pigs and come home. He weeps because He wants to go on vacation with you; He wants to take you on a holiday at the sea.

As your fellow brother in Christ, I have written these words because I have been exactly where you are, and I am begging and pleading with you — put down the mud pie and come experience a holiday at the sea with me.

wo words we rarely hear in the same sentence are tax and free. But that is precisely what Texas residents will experience on the third Sales Tax Holiday weekend of 2023, between August 11 to 13, coinciding with the beginning of the new school year. That means most clothing and school supplies of less than $100 are exempt from sales tax. And depending on how big a family you have and their needs, the savings can be significant.

TAXFREE WEEKEND IN AUGUST

A survey conducted by Deloitte, a worldwide auditing, consulting, and tax services company, found that the average spent per child for clothing and school supplies in the U.S. was $661 in 2022. The state-wide sales tax in Texas is 6.25%, but many local municipalities tack on another two points, making the sales tax 8.25%. Thus, the tax-free weekend savings are $54.50 for every $661.00. Multiply that by a second and third child, and the savings isn’t chump change for many families.

Shoppers, however, are advised to visit Comptroller.Texas.Gov and search for sales tax weekend 2023 for a detailed list of tax-exempt items and those that aren’t. This will help avoid confusion and delays in the checkout line. For example, most shoes, including sneakers and tennis shoes, are exempt, but cleated and spiked sports shoes are not. Sleepwear, dresses, jeans, sweaters, sweatshirts, sweat suits, leggings, and even diapers are exempt, but not sports equipment, jewelry, handbags, and purses. Backpacks under $100 are exempt but only for elementary and secondary school children.

Most of the basic school supplies are exempt from sales tax. A short list includes binders, chalk, calculators, erasers, folders, crayons, markers, lunch boxes, legal pads, scissors, notebooks, pencils, pens, glue, and paste. In addition to individual items costing $100 or more, computers, laptops, and other electronics are not exempt.

Shoppers, however, should have their eyes wide open before venturing out into the masses on a sales tax holiday weekend. Some retailers may increase prices to take advantage of the influx of shoppers. Items that may have been on sale earlier in the summer may now be marked up to their pre-sale price. So, check prices the week before or even the week after, a tax-free weekend, and you may get better deals. And don’t be lulled into buying taxable items you don’t need.

While states like Texas gain good publicity on tax-free weekends, they also lose millions in tax revenue. What’s more, tax-free weekends are open to non-residents of Texas. Think Oklahoma and Louisiana. This may help retailers but doesn’t add to the state’s tax coffers. A study by Federal Reserve researchers in 2017 found that sales tax holidays don’t stimulate the economy but simply shift the time when consumers make their purchases.

But here is some good news for people who want to avoid crowded malls and shopping centers and make their purchases online. Amazon, the largest online retailer, says it honors a state’s sales tax holiday and will not charge the customary tax for exempt items. Of course, the biggest problem with purchasing online is buying apparel that may not fit and must be returned. If you buy it again, it most likely won’t be during the sales tax holiday, which means life can get more complicated.

For my kids, turning five and getting their first library card was a rite of passage. Summers meant the excitement of summer reading programs and family-fun entertainment like magicians, clowns, and dancing dogs. When they were preschoolers, the library meant Story Time and Mommy and Me classes. When they were teens, it was a quiet place to study. It’s where I learned to knit, where we rented movies before streaming, and where we still go every time the internet crashes in our rural neighborhood — often!

September is Library Card Sign-up Month. And at a time when kids and adults are reading less, libraries have risen to the challenge with amazingly creative programs to keep patrons of all ages engaged and enriched. Libraries around the country are taking on the role of community centers with farmers markets, yoga classes, plant swaps, pop-up playgrounds, author readings and book signings, lecture series, and more — a few even loan out power tools or neckties for job interviews.

Many libraries keep puzzles, color sheets, and educational games on hand to occupy kids while parents research or study. Some urban libraries have bookmobiles that bring books into communities that otherwise wouldn’t have access. IS

ANKLE JOINT REPLACEMENT SURGERY?

Ankle joint replacement, also known as total ankle arthroplasty, is a procedure performed to relieve pain and immobility due to arthritis that has not responded to conservative measures. The goal of ankle joint replacement surgery is to alleviate ankle pain and increase the mobility and function of the ankle joint. Ankle joint replacement is recommended for many people of wide variety of ages with ankle arthritis.

WHAT IS ANKLE ARTHRITIS?

Arthritis is a term used to describe loss of cartilage and decreased function of a specific joint. Traditionally, in the hips or knees this is caused by osteoarthritis. However, the ankle is a different world and arthritis in the ankle is typically caused by trauma. Previous sprains fractures and other injuries are likely to contribute to ankle arthritis in the future. Ankle arthritis typically presents itself with localized swelling achiness and a feeling like the ankle is stiff, clicking or stuck in one position.

HOW IS ANKLE ARTHRITIS DIAGNOSED?

Ankle arthritis is diagnosed by your physician after reviewing your history and performing an examination of the symptomatic ankle. Imaging studies such as X-ray, CT and/or MRI may be ordered to confirm the diagnosis.

WHAT ARE THE TREATMENT OPTIONS FOR ANKLE ARTHRITIS?

Conservative treatment of ankle arthritis involves physical therapy, bracing, orthotics, injections, oral anti-inflammatories as well as platelet rich plasma injection.

HOW IS AN ANKLE JOINT REPLACEMENT PERFORMED?

Ankle joint replacement surgery is performed under general anesthesia. Your surgeon makes an incision over the front of the ankle. The muscles are retracted, and tendons and ligaments moved away to expose the ankle joint. The damaged regions of the tibia, fibula and talus bone are then removed using special instruments, and the remaining healthy bones are reshaped to fit an artificial joint or prosthesis. A bone graft is inserted between the tibia and fibula to create a fusion of the two bones and prevent loosening of the prosthesis. The prosthetics are kept in position with special bone cement and instrumentation such as screws to support the artificial ankle. At the end of the surgery, tendons and other structures are positioned back to cover the new joint. The wound is sutured closed and covered with a sterile dressing.

WHAT IS THE POSTOPERATIVE CARE FOR AN ANKLE JOINT REPLACEMENT?

Patient in most cases can begin weight-bearing two weeks after ankle joint replacement. Several factors will determine when you can start walking and moving the ankle but generally two weeks is when you can begin weight-bearing.

After the initial two weeks physical therapy will begin and protected weight-bearing in a boot will also begin. It’s critical that early range of motion is initiated soon after the surgery to reduce immobility of the joint.

For most individuals and ankle joint replacement is a very successful surgery resulting in reduced pain and increased mobility and function.

You’ve navigated a lot since becoming a parent. Potty training, teething, pulling off a 13-year-old’s slumber party without (many) tears. You’ve helped orchestrate the perfect prom proposal. You’ve even homeschooled during a pandemic. So, when it comes to college applications, you’ve got this. Here are a few dos and don’ts that might help.

DO consider colleges together.

Begin by considering your child’s college goals. What are the school offerings, characteristics, and values that matter most to them? Once their preferences and goals are clear, you can compile a list of potential institutions that suit your child, their plans, and their needs.

DON’T take over.

The college admission process can be stressful. Your child may be uncertain about choosing a school, fearful of rejection, or anxious about meeting impending deadlines. Be there to help them stay on track and understand what’s expected of them, not to write their admission essay, dictate where they’ll apply, or butt in during admission interviews.

DO let them know the restrictions early on.

Are there financial or geographic restrictions that limit the list of colleges your child should consider? Discuss them at the beginning of your search so you don’t waste time and energy researching colleges they won’t realistically be able to attend. Be sure you’re current with your tax information. They’ll need that for their FAFSA.

DO generate a financial plan.

Get a clear picture of the monetary commitment you and your student will be making. Remember that the costs listed on

You’ll soon be bombarded with admissions emails. If you share your personal or business email address, you’re going to drown in communications from colleges. Setting up a separate email can help you and your child compartmentalize the admissions process so it doesn’t take over your life.

DO let your child know there’s more than one “right college.” In the end, the college experience is what your child makes it. When exploring their options, students often place too much weight on one institution rather than taking the time to determine which school is truly the right fit for them. Encourage them to seriously consider at least three schools. DO plan in-person campus visits when possible.

Being on campus can help your child imagine themselves in a particular school community, explore the surrounding city, and get to know the area. By all means, go along if you’re invited. But don’t get your feelings hurt if your child wants to go alone or with a friend.

Your child is taking a giant step toward independence. They’ll definitely need you for things like supplying family financial details and suggesting different variables to consider. Help them stay organized and on top of deadlines. Guide them. Encourage them. Incentivize them. And most of all — love them through this stressful process.

The medical community recommends that people have an annual checkup to identify potential health issues before they start. And if preventive medicine is a good idea for humans, it should apply to other family members, including our pets. Dogs and cats also have potential health issues, some of them genetic. It would make sense, then, to know as much as you can about a pet when you purchase or rescue one and be aware of any symptoms that develop as it ages. An annual wellness exam for a dog or cat will include bloodwork, urine, and fecal tests, an assessment of coat and skin, dental and ear exams, and vaccinations. It will ensure that your pet gets the care it needs to prevent some disorders or at least provide early detection.

Like newborn babies, puppies and kittens will see the veterinarian more often during their first year. However, unlike human babies, they reach adulthood by the age of one, even if they still grow for another several months. Hypothyroidism, kidney disease, high blood

pressure, heart disease, arthritis, epilepsy, obesity, and cancer can have the same impact on pets as they do on humans.

Some dog breeds, for example, may be prone to specific disorders. Herding dogs such as German Shepherds, Border Collies, Australian Shepherds, Great Danes, Mastiffs, and Golden Retrievers are at risk for hip dysplasia and arthritis. West Highland White Terriers often develop chronic allergic skin issues. Chihuahuas, the smallest breed, are prone to hypoglycemia (low blood sugar) and tracheal collapse, which makes it hard for them to breathe.

An annual wellness exam enables your veterinarian to establish a plan for your pet. That will include recommendations for a pet’s proper weight and diet. A wellness visit will ensure that your pet is current on vaccinations such as rabies, canine influenza, and distemper, and for cats, feline parvovirus, among others. Pets that go outdoors should also receive a monthly dose of medication to prevent heartworms, ticks, and fleas,

available in a chewable three-in-one tablet.

A veterinarian can also better estimate the age of a dog you may have rescued, which is important given that our pets have a relatively short lifespan. A Mastiff has an average life expectancy of only eight years, while most dog breeds, from small to large, can live from 10 to 15 years. A house cat can live for 17 years and longer, while cats that live primarily outdoors may encounter natural hazards such as predators and man-made hazards like automobiles.

An annual exam becomes even more important as a dog and cat age. On average, dogs reach their senior years around seven, and cats, perhaps a few years later. With age comes diminished hearing and sight, the onset of arthritis, and increased anxiety. They are also prone to more diseases as they age. So, although their lifespan is considerably shorter, our pets share many traits humans have in old age. Wellness exams make it possible for pets to live life to the fullest.

As a parent, it’s important to keep an eye on your child’s vision health, as poor eyesight can signifi cantly impact their learning and overall development. While some children may struggle to see or read, others may not notice or communicate their vision problems. Here are five signs that your child might need glasses.

SQUINTING AND EYE RUBBING

If you notice your child squinting, closing one eye, or rubbing their eyes frequently, it could be a sign of vision problems. According to the American Academy of Ophthalmology, frequent eye rubbing can lead to a condition called keratoconus, which can cause significant vision loss if not treated promptly.

When selecting the right eyeglass frames for children, there are several factors to consider ensuring a comfortable and functional fit.

FREQUENT HEADACHES

Headaches are a common symptom of eye strain and fatigue, especially in children who spend extended periods in front of screens or reading books.

Durability : Children can be rough on their glasses, so opt for frames made from durable materials such as acetate or flexible plastic. Reinforced hinges and scratch-resistant lenses are also important to withstand the wear and tear of active kids.

Style and Preference : Let your child have a say in selecting their frames. Choose a style that they feel comfortable wearing, and that reflects their personality. This can boost their confidence and encourage them to wear their glasses consistently.

Prescription Needs: Work with an optician to ensure the frames accommodate your child’s prescription lenses. Some frame styles may not be suitable for certain lens types, so it’s important to consider the prescription requirements.

Safety Considerations: Opt for frames with rounded edges and no sharp corners to reduce the risk of injury. Janet didn’t really have an issue with her milestone birthday approaching — you know, one of those that end in a zero. What she did resent were the pounds slowly settling around her middle. But that’s just part of getting older, right? At the same time, her family history of heart disease and diabetes had her worried.

She certainly wasn’t what most people would consider overweight, and some strategic wardrobe shifts helped her camouflage her growing belly most of the time. But when she was diagnosed as prediabetic (meaning she risked developing diabetes in the next 10 years), she decided it was time to say “goodbye” to her spare tire.

FACTS ABOUT BELLY FAT

In fact, Janet had more to worry about than a predisposition to diabetes or heart disease. Belly fat can contribute to some forms of cancer. Known as “subcutaneous fat” or “visceral fat,” the fat you can grab with your hands can build up in the spaces between and around your stomach and intestines. Once there, it can produce toxins that affect the way your body works, including “cytokines” that boost your chances of heart disease, make your body less sensitive to insulin, which can lead to diabetes, and cause infl ammation, which can lead to certain cancers including colon, esophageal, and pancreatic.

SOME GOOD NEWS

The encouraging news is that even modest weight loss can reduce your risk of diabetes and other problems. Here are some ideas for losing belly fat.

Fill at least half of your plate with veggies. Choose more leafy greens, cruciferous vegetables (broccoli, Brussels

sprouts, cabbage, caulifl ower, collard greens, kale, and turnips), and beans over carb-filled veggies such as potatoes, corn, or carrots.

Avoid processed and packaged foods often loaded with trans fats, sugar, and salt — all guaranteed to boost belly fat.

Undertake some strength training exercises twice a week in addition to a moderate activity like walking or biking for half an hour a day, fi ve days a week.

If you sit for your job, make a habit of getting up and moving around throughout your day, even if you’re exercising throughout the week. Some ways to do that are:

• Take a stroll around the office (at least) every hour.

• Periodically stretch at your desk.

• Skip the elevator and take the stairs.

• Take up gardening or something requiring you to move once you get home.

Try to get between seven and eight hours of sleep each night since lack of sleep can lead to weight gain, diabetes, and other health problems.

Take steps to control stress since the stress hormone cortisol can override your diet and workouts, depositing fat in your belly area. Exercise and meditation can help relieve stress.

For Janet, losing belly fat took effort and patience. But over the past year, she’s slowly regained her waistline and feels good in her clothes again. Even better, she’s no longer prediabetic and looks forward to the decade ahead with optimism.

CHIN AUGMENTING PROCEDURE OPTIONS

Facial harmony is a crucial aspect of beauty, and a balanced chin plays a signifi cant role in achieving it. Fortunately, advancements in cosmetic surgery have made it possible to improve the appearance of the chin with implants and other procedures.

Chin implants, also known as chin augmentation, are a popular cosmetic procedure that involves placing a silicone implant to augment the size and shape of the chin. Chin implants come in different shapes and sizes to suit other facial structures and aesthetic preferences. The procedure is usually performed under local anesthesia with sedation or general anesthesia, and it takes about 30 to 45 minutes to complete.

Before the procedure, the surgeon will examine the face and chin to determine the ideal implant size and shape. They may also take measurements and photos and use computer imaging to simulate the expected outcome. The surgeon will then make a small incision under the chin or inside the mouth to insert the implant. The implant is positioned over the existing bone to create a more prominent and balanced chin. There is also Kybella, an FDA-approved injectable treatment for reducing submental fat. Kybella contains a naturally occurring substance called deoxycholic acid, which dissolves fat cells when injected into the chin and neck area. The treatment involves a series of injections, and the number of treatments required varies depending on the patient’s needs. Kybella is a non-surgical procedure that requires little to no downtime, making it an excellent option for patients who prefer non-invasive treatments.

Chin implants, genioplasty, submental liposuction, and Kybella are all effective options for enhancing the appearance of the chin and jawline. However, patients should consult a boardcertifi ed plastic surgeon to determine the best choice for their needs and goals. Consider incorporating more scents into your space.

Our sense of smell is a major player in the feeling of a space and is often overlooked. Think about when you walk into someone else’s home. Can you tell that they just burned salmon or cooked broccoli? Or does the house smell musty and, as a result, feel dingy? Or is the mix of aromas warm and inviting? There is a reason why realtors bake cookies before a showing. Scents make a difference. To incorporate our olfactory sense into your home, utilize candles, diffusers, and sprays. My favorites are peppermint, lemon, citrus, lavender, and eucalyptus. To recreate a Zen hotel experience at home, dab essential oil inside a toilet paper roll before putting it on the holder or soak a cotton ball in a fragrant oil and place it underneath the trash bag. You will be surprised how pleasant the result is.

Consider incorporating more tactile sensations into your space. Textures, surfaces, and materials are combined to create a feeling — good or bad — in a home. How would you describe a kitchen with long, slick countertops and bright white lights? Most people would say it feels sterile. Now, contrast that feeling with a cottage, soft sofas, fuzzy blankets, and a plush rug underneath your feet. You might say that space feels cozy. Notice I described the room’s textures, and the result was a feeling.

Consider the textures of your sofa, bed, or comforter. How do your sheets feel? Are they pilled with little balls from wear and washing? What does not feel soft anymore? It might be time to invest in some new items that are soothing to the touch.

Perhaps there is a small bowl of mints by the entry, or a bottle of water and a snack basket left in a guest room.

Consider what your space sounds like. In college, I lived in a loft with upstairs neighbors who used rolling chairs to play hockey. Living beneath them was an explosion of sound that was fun for only the game’s players. Do you live near a noisy road or train? Do you have neighbors who can hear you through paper-thin walls and vice versa? Do your floorboards creak, or does your HVAC shutter when it turns on? All of these contribute to the sound of your home. To create the background noise, you want and combat those you do not, grab a sound machine or a fan as a good starting place. Consider speakers or surround sound playing your favorite music.

While this quiz focuses on the sense that speaks most powerfully to you, take note of the other answers as well. Choose your favorite ideas from each category and incorporate them in a way that resonates with you.

It’s not called the Barbecue Capital of Texas for nothing. As residents well know, barbecue is a time-honored tradition in Lockhart. And with some new ‘cue on the scene, there’s now another great excuse to chow down in this meat mecca. Female-owned Barbs B Q bucks the expected German approach with South Texas style and serves up smoke every Saturday on the main square. One day a week is enough to make the point that Barbs is worth the wait.

“We all live in Austin,” said Haley Conlin, one of the owners of Barbs B Q, from behind their counter one sunny Saturday in June. Presumably, the founding female trio just drives in. More on that later.

Other Austin-to-Lockhart businesses have set up shop in the small city years ago, and more keep coming.

FLOCKING FOODIES

Chefs Sarah Heard (Lockhart High graduate) and Nathan Lemley of Austin’s Foreign & Domestic opened Commerce Cafe, which offers Southern farm-to-table fare. With Old Pal Texas Tavern, the owners of Nickel City and Uncle Nicky’s — both found in Austin — set up a divey bar specializing in fried chicken with live music on weekends. Down the street, pizza lovers savor slices at patio tables near the neon sign of Loop and Lil’s Pizza, opened years back by three friends with Austin roots. Across the road, Little Trouble diners enjoy feasts from Casey Wilcox, the former chef from Austin’s Justine’s.

Caldwell County Courthouse

On a recent visit, I wandered near a small crowd outside El Dorado, a restaurant and event space whose head chef is Wilcox. I was handed a Topo Chico and told to enjoy the show, which was jazz-country songwriter and musician Melissa Carper, another Austin connection, playing the double bass with a four-piece band to a packed room of lively dancers lit by chandeliers.

BARBEQUE BECKONS

The Chisholm Trail is celebrated yearly with parades, a rodeo, and cooking competitions, but heart-stoppingly good smoked meat claims fame for the city. Gunslingers and saloons color Lockhart’s history, but barbecue connects it to the present.

Historian Donaly Brice, former Caldwell County Historical Commission chairman, said he remembers tasty brisket as a big part of social life, even in childhood. Diners were unfussily and communally seated. And hands functioned as primary utensils at an old-school barbecue joint, but Kreuz Market made concessions for cutlery. “They had butcher knives chained to the table about every two to three feet, and you shared them with whoever sat next to you,” said Brice.

The all-woman team behind Barbs B Q opened their doors in May with Chuck Charnichart as pitmaster. The threeperson team dishes carnivore cuisine a stone’s throw from established purveyors Smitty’s, Kreuz Market, and Black’s.

Barbs B Q

These institutions hail from a time when meat markets needed creative ways to sell unwanted cuts, slowly developing what would become a coveted plate.

Barbs’ South Texas fl avors stand out with charro beans topped in queso fresco, concha pudding, red and green salsa, and green spaghetti coated in creamy roasted poblano, jalapeno, cilantro, cream cheese, sour cream, and milk. Unlike the nearby barbecue masters casing German-inspired sausage, Barbs skips the links in favor of lamb.

WHEN THE SMOKE CLEARS

International visitors crowd in too. Lockhart’s population stood at less than 15,000 during the last census, but over a million roam through yearly, according to Rollfast Ranchwear owner Ben Sparks, though we could not confi rm the number. Aussie tourist accents chime in at the Museum of Clocks and Watches, where volunteer teen docents mentored by an elder horologist release the cuckoos on antique German timepieces.

You can also bring a chair to Courthouse Nights, a free monthly concert with a surprisingly diverse lineup just outside the Caldwell County Courthouse and wear your dancing shoes just in case you get the urge to move to the music. Lockhart Arts & Crafts, inspired by Austin’s Spiderhouse, hosts live music each weekend. Shop gorgeous vintage furnishings at Stampworthy Goods, and take in history at the Caldwell County Museum, an old castellated-style jail. Look up and look around. The old buildings might mesmerize you.

Lockhart offers a heaping helping of history, crafted culinary delights, and lovingly tended shops clustered beneath the central clock tower crowning the bold lime and sandstone courthouse on the main square. This relatively tiny town will continue to grow, so enjoy the unexpected surprises and charm while they last.

LASAGNA ROLL UP INGREDIENTS: 12 lasagna noodles | 1 lb. ground beef | 1 zucchini, chopped | 1 squash, chopped | 1 carrot, peeled, chopped | ½ onion, chopped | 15 oz. ricotta | 1 egg | ½ cup spinach, chopped | 1 Tbsp. garlic powder | 1 Tbsp. Italian seasoning | 24 oz. marinara, divided | 2 cups mozzarella

DIRECTIONS: PREHEAT oven to 375°. COOK noodles according to the package. LINE a baking sheet with parchment paper and spray with non-stick spray. To prepare noodles for assembly, drain and lay flat on parchment paper in a single layer and spray again with non-stick spray (for remaining noodles, repeat the process). BROWN ground beef and vegetables in a medium sauce pot. DRAIN and add 16 oz. of marinara. SEASON with garlic powder and Italian seasoning. MIX in a separate bowl, ricotta, egg, and chopped spinach. POUR ½ of beef marinara into the bottom of a 9x9 baking pan, set aside. SPREAD 2 Tbsp. of ricotta mixture over the top of each noodle. ADD Tbsp. of meat sauce in a strip over ricotta and roll up. ARRANGE rolled noodles in the prepared pan. TOP with remaining meat sauce and mozzarella. COVER with foil and bake for 40 minutes. REMOVE foil and bake for an additional 5 mins. until the cheese is golden. RESERVE the remaining marinara for dipping sauce.

CHEESY BREAD STICK INGREDIENTS: Pizza dough, storebought | 2 Tbsp. butter, melted | 1 Tbsp. garlic powder | 2 cups shredded mozzarella

DIRECTIONS: LINE baking sheet with parchment paper. Unroll dough. MELT butter and stir in garlic powder. BRUSH with butter and garlic mixture. TOP with cheese. BAKE according to package.

LEMON BAR INGREDIENTS: Crust: 1 ½ cup flour | ¼ cup cornstarch | ¼ cup powdered sugar + 2 Tbsp. | ½ tsp. salt | 1 ½ cup butter, cold and cut into pieces Filling: 4 eggs | ¼ cup sugar | ¼ cup flour | ½ tsp. salt | ¾ cup lemon juice | ½ cup butter, cold and cut into pieces | 2 Tbsp. powdered sugar for dusting

DIRECTIONS: PREHEAT oven to 350°. LINE 9x13 baking pan with parchment leaving an overhang of 2”. SPRAY with non-stick spray. COMBINE the dry crust ingredients in a food processor. ADD the butter until the mixture looks like coarse sand. PRESS crust into baking pan. BAKE for 20 mins. STIR the filling ingredients in a sauce pot except for butter. HEAT over medium heat and whisk until simmering and thick. REMOVE from heat and stir in butter. POUR filling onto crust. LOWER oven to 300°. BAKE until set, 12-15 mins. PLACE on a wire rack to cool and then refrigerate. DUST with powdered sugar before serving.

INGREDIENTS: 2 lbs. ground beef | 1 green bell pepper, diced | 1 onion, diced | 1 can cream of mushroom soup | 4 Roma tomato, core removed, diced | 1 pkg. of tator tots | 2 cups shredded cheddar

DIRECTIONS: PREHEAT oven to 350°. SAUTÉ bell pepper and onion. ADD ground beef and brown. DRAIN , then return to pan. ADD mushroom soup and stir. DICE tomatoes and set aside. Spray bottom of a 9x13 baking dish. PLACE ½ package of tots in dish. LAYER with beef mixture. SPRINKLE tomatoes over beef. COVER with remaining tots. TOP with shredded cheese. BAKE for 30 mins. until tots are cooked, and cheese is melted. GARNISH with ketchup and mustard.

INGREDIENTS: 2 cups old-fashioned oats | 1 tsp. baking powder | 2 Tbsp. cornstarch | 1 ½ Tbsp. cinnamon | 2 Tbsp. maple syrup | 1 egg | 1 tsp. vanilla | 1 apple, peeled, chopped ¼ in. cubes | ½ tsp. salt | ¼ cup brown sugar | ½ cup butter, melted

DIRECTIONS: PREHEAT oven to 350°. LINE 9 x 9 baking pan with parchment paper and spray with non-stick spray. COMBINE oats, baking powder, cornstarch, and cinnamon. STIR in maple syrup, egg, and vanilla. Fold in apple. MELT butter and mix with sugar and salt. POUR into the oat mixture. PRESS into the baking pan. Bake for 25-30 mins.
