The Bible has lots to say about love. During a month when we celebrate love, in all its forms, it helps to remember that 1 John 4:8 tells us God IS love. Throughout His word, God tells us how much He loves us in verses such as, “ God demonstrates his own love for us in this: While we were still sinners, Christ died for us” (Romans 5:8), “Nothing can ever separate us from the love of God” (Romans 8:38), “How great is the love the Father has lavished on us, that we should be called children of God” (1 John 3:1), and, of course, the ultimate love verse, “For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life.” (John 3:16) God goes on to teach us how we ought to love one another in verses such as, “By this everyone will know you are my disciples, if you love one another” (John 13:35), “Love your neighbor as yourself” (Leviticus 19:18,) and “Do everything in love” (1 Corinthians 16:14). In his letter to the Corinthians, the Apostle Paul even included an entire chapter on love concluding with, “And now these three remain: faith, hope, and love. But the greatest of these is love.” During this month as we celebrate love, it’s my prayer that you’ll rest in the love of the One who loved us first and share that love with everyone you know.

The New Year has finally come and 2021 promises to be a banner year for “Tree City USA,” Mansfield Texas. We expect great things to take place as our citizens prepare to recover from a very tough 2020. We expect to rise out of the difficult days of the pandemic stronger than ever. Our Walnut Creek Linear trail system is continuing to grow as far east as the 360 Tollway and as far west as our revitalized historic downtown area. We have continued plans to invite our residents and area visitors to join us in our entertainment venues and experience our rich cultural; the visual arts that make Mansfield a destination for family fun. Let us continue to work together to defeat this pandemic by following the county guidelines and

As we roll into 2021, COVID-19 still tops our news. At the writing of this letter, positive cases continued to soar, and hospitals were near or at capacity. If your healthcare provider is offering the COVID-19 vaccine, please consider getting it. The state has a list of providers you can find on our website at gptx.org/COVID-19. If you qualify and would like to receive the COVID vaccination, we recommend you register in either Dallas or Tarrant County, with your personal healthcare provider, or directly with any approved providers in order to receive the first available vaccination dose. Tarrant and Dallas County COVID-19 vaccination sites are open to all Texans, regardless of where you live. All vaccination information and links can be found on the city’s website at www.gptx.org/COVID-19. We’ve lost many in Grand Prairie to COVID-19,

In Arlington, we love to gather. Whether it’s cramming into a stadium to cheer our favorite team, taking in a concert or movie, or enjoying dinner at one of our outstanding restaurants, many of the things we used to enjoy just aren’t safe right now. I’ve been proud and amazed at the innovation of our local businesses, as they found ways to adapt their products and services to keep their customers and employees safe. Many local restaurants have added outdoor dining areas and ramped up their delivery options and local shops are offering curbside delivery. February is traditionally a beautiful month in The American Dream City. It’s a great time to take the family to the park or participate in any number of outdoor activities. Run, walk, or bike in your

A special election to fill the District 2 seat will be conducted in late February 2021. Another great loss to our community is Janice England, who succumbed to COVID-19 complications in late December. Janice served as Grand Prairie’s First Lady with grace, kindness and a gentle elegance for 21 years from 1992-2013 while her husband, Charles England, was Mayor. I know many of you have also suffered a loss due to COVID-19, and would encourage each of us to continue to be vigilent in wearing a mask, socially distancing, washing our hands, staying home if sick and being kind to others always. Best regards for a safe, happy and healthy 2021,

My pathway into this understanding over the last thirty years or so is mainly affected by Jonathan Edwards, C. S. Lewis, and the apostle Paul, but it does reach back to my father. My father was probably the happiest man I have ever known, and yet he was filled and consumed with the glory of God. So there was this both-and in my father’s life that had to have a resolution or explanation some day. Abundant joy and total commitment to the glory of God had to go together in some way.

SMALL DESIRES FOR BIG THINGS After my dad, C. S. Lewis came into the picture with his amazing statement that our problem as human beings is not that our desires are too strong, but that our desires are too weak. I thought my desires were the problem. Lewis says, No, your desires aren’t the problem. The weakness of your desires are the problem. You are like a child fooling about in slums with your mud pies because you can’t imagine what a holiday at the sea is like. In other words, your desires for the great things that God is offering you are way too small. Your problem is not big desires, but small desires for big things. Jonathan Edwards was the biggest influence of all. He says that God almighty in his trinitarian form is God the Father having an idea of himself which stands forth in God the Son, and having delight in himself, which stands forth in God the Holy Spirit surging back and forth as a person between the Father and the Son. Then, when God creates human beings, they are in his image so that we glorify God both by having a right idea of him — true doctrine — and by having appropriate, passionate emotions toward him. So I have these two great surging faculties in me: a thinking faculty that glorifies God by thinking rightly about him, and a feeling faculty that glorifies God by feeling rightly about him.
eager expectation and hope that I will not at all be ashamed, but that Christ will be magnified in my body through my death, for to me to die is gain. Does that make sense? The confidence that Christ will be magnified when I die is based on the fact that for me to die is gain. If Christ is gain in my dying, Christ will look magnificent in my dying. But there is still a missing piece to the argument. Verse 23, “I want to go and be with Christ for that is far better.” So the gain that he is talking about in verse 21 is Christ. If I go to be with Christ, if I die and go to be with Christ, that is far better. That’s my gain. So now let’s go back and see if the logic makes sense. My eager expectation is that Christ will be magnified in my death because I am going to experience death as gain — as more satisfying than anything this life could offer, and that gain is Jesus Christ. Let’s see if we can put it together. I am confident that Christ will be magnified in my dying, and the basis of that expectation that Christ will be shown to be magnificent in my dying is that I am going to experience my dying as gain; namely, as Christ being more satisfying to me than everything that life has to offer. I stake my belief in Christian Hedonism on the logic of Philippians 1:20–23.

And under all of that was the Bible, which tells us again and again to glorify God, and also tells us again and again to delight in God. So how do those two commands come together?
So, as an illustration: It’s my anniversary. I say to Noel, “I am going to take you out tonight, because it is our 47th anniversary, and spending the night with you would make me really happy.”
That question led me to the Westminster Catechism, and its first question: What is man’s chief end? Answer: Man’s chief end is to glorify God and enjoy him forever. And I ponder: Is it just and? What does “and” mean? Isn’t the chief end of man to glorify God by enjoying him forever? That’s what Edwards said. That’s what Lewis implied. That seemed to be what was surging in my father’s life. But is it biblical?
No wife has ever said, nor would Noel ever say, “You are so selfish. All you think about is yourself. It makes you happy taking me out and spending the evening with me.” No wife ever complains that is selfish. Why? Because if I pursue my full satisfaction in my wife, she is honored. So it is with God. If we are drawn to God because we want to spend time with God, if God is our treasure and our satisfaction, God is honored.
WHY DEATH IS GAIN That brings us to Philippians. Philippians 1:20–21 was the key text that settled for me that God is most glorified in us — or Christ is most magnified in us — when we are most satisfied in him. “My eager expectation is that Christ will be magnified in my body, whether by life or by death, for . . .” and that little word became all-important. “. . . for to me to live is Christ and to die is gain.” With that little word Paul grounds the certainty of his expectation that Christ will be magnified in his body when he lives and when he dies. Why? Because for him to live is Christ and to die is gain. How does that work? How does the logic work here? It became clearer for me when I dropped out the life pair, and focused on the death pair. Let’s say it like that: It is my

This is not peripheral to the Christian life or peripheral to the book of Philippians. This is right at the heart of what it means to be a believer, what it means to belong to Jesus Christ, what it means to treasure and trust Jesus Christ. This is not icing on the cake of Christianity. This is at the heart of Christianity.

ZEN ZONES (PREVIOUS PAGE) A foyer, back hall, or laundry room serves an essential purpose, but if you rethink those spaces with optimal functionality, they might create a little Zen for the whole family. Consider a built-in with seating and storage or purchase a bench and add hooks above and baskets below to corral jackets, backpacks, and shoes. Designate a drop zone for keys and schoolwork and see what a difference it could make for household organization.
WORKING WONDERS Of the many changes in 2020, the shift to working and learning from home was one of the most significant. A space that may have been underused and by one person in the household found many homeowners trying to carve out multiple workspaces in their homes. My view is if it has to be functional, at least make it beautiful. Some paint and perky wallpaper will work wonders. A real desk will also reinforce that "I'm at work now" mojo. And changing out a light fixture or adding a fun lamp is not expensive, and it can add a ton of style and reduce eye strain in your workspace. One of my clients had ample space for a substantial work-fromhome setup, so we built and stained shelves with storage (where the owner's books and globe collection take center stage), added a custom vintage tin ceiling, lighting, and leather seating. Go ahead and put your personal stamp on your workspace. Make it bold. Or beautiful. The style of your surroundings should inspire you to be in that space.

STUDY STATION If the kitchen bar or table is truly the only spot for homework (or classwork), I’m confident you can organize your students with individual tubs or handled totes to optimize their study time. But thriving is not easy when you have to clear it all away to make and serve dinner! For this client, I was able to Look at their home with new eyes and carve out a landing for a study spot. Do you have a hall or loft that you could commandeer for a student corner? Adding a deep wall shelf or slim table with chairs and good lighting is all it takes. Hang chalkboards or whiteboards above to track assig nments. Having a designated spot for an activity makes it easier to get in the zone, and the kids know that area serves a specific purpose. I’m encouraged to see all the ways my friends, neighbors, and clients are adapting to ongoing and new challenges. home maintenance calendar will allow you to maximize your efficiency and get everything done. To assist, we’ve compiled a list of things that need attention weekly, monthly, quarterly, biannually, and annually, by season. To keep from becoming overwhelmed, take on things you can do each weekend.

WEEKLY • Vacuum the floors. A neglected carpet can play host to dirt, dust, mites, and mold.
• Clean kitchen sink disposal. Put some vinegar in an ice tray and let it freeze, then run the ice cubes through the disposal. It freshens the disposal and sharpens the blades. • Clean range hood filters. Use a degreaser from an auto parts store mixed with hot water. Let the filter sit for a few minutes, rinse it off, and you’re good to go. • Inspect your fire extinguisher(s). Be sure that the extinguisher has easy access and is unblocked, that the gauge shows adequate pressure, and that it has no visible signs of wear and tear.
• Wipe down stovetop and vent. • Mow the lawn. When temperatures drop to around 40 degrees, most grass goes dormant, so you won’t need to cut it until the weather warms up again. • Clean window sills. • Wipe down kitchen appliances. Clean them all — microwave, oven, refrigerator — inside and out at least once a week.

• Test smoke and carbon dioxide detectors. • Test garage door auto-reverse feature. Place a 2×4 on the ground where the door would close. It should reverse when the door hits the wood. If you have photo-electric sensors, place something in front of them (not your body). If the door doesn’t immediately go back up, you have a problem. • Run water and flush toilets in unused spaces.
• Inspect and possibly change out HVAC filters. If the filter is dirty, change it, otherwise inspect it again next month.

Summer • Check grout in bathrooms, kitchen, etc. This will prolong the life and aesthetics of your tiled surfaces. • Inspect plumbing for leaks, clean aerators on faucets. If you have low water pressure out of a faucet, the aerator is likely the issue, and it’s an easy fix. • Take care of any insect problems you may have. Keep cobwebs clear, have ant poison handy, make sure all doors are tightly sealed. • Clean and repair patios as needed. Wash and possibly restain. Check for any loose boards or posts. • Check and clean dryer vent, other exhaust vents to exterior of the home. • Clean the garage.
Fall • Flush hot water heater and remove sediment. This prolongs the life of the heater and helps with efficiency.
BIANNUALLY • Test your water heater’s pressure valve. This will prevent mineral and corrosion buildup and help your heater run more efficiently. • Give your house a deep clean. Take one Saturday every six months with your whole family, clean the appliances, windows, dust every nook and cranny (including the closets), etc. • Replace batteries in smoke and carbon dioxide detectors. • Vacuum your refrigerator coils. The fridge can use up to 15% of your home’s total power, so you want it running as efficiently as possible. You could save up to $100 a year. ANNUALLY (BY SEASON) • Check exterior drainage. Make sure rainwater flows away from the house and that puddles don’t stand for more than 24 hours. If anything is questionable, check gutters, grade the area with some dirt, or hire professionals to raise the pavement to drain properly. • Clean gutters.
• Turn off and flush outdoor water faucets. Also, flush hoses and store them. Winterize sprinkler systems as well.
• Check driveway and pavement for cracks. Make sure to have any cracks re-sealed before winter. Water can freeze and expand in the cracks, causing more damage.
Winter
• Inspect the exterior of your home. Paint chipping? Is your siding damaged from winter? Holes in your brick? Foundation cracking? A good silicone/caulk can fix many of these problems. • Have your A/C serviced. • Repair or replace damaged window screens. • Clear dead plants/shrubs. • Check trees for interference with electric lines. Have these professionally trimmed if necessary. • Inspect roofing for damage, leaks, etc. Repair as needed; you may need a professional. LIVINGMAGAZINE.NET
• Get the heating system ready for winter. Check for leaks in doors and windows. Make sure heating vents are open and unblocked. Get furnace serviced and inspected at least every other year, preferably annually. Don’t forget about fireplaces if you have them.

Painting is the fastest way to upgrade your home. Just one coat of ballet pink turns a regular room into a nursery, and a new application of light yellow is all it takes to fill your kitchen with sunshine. Not to mention, painting is relatively inexpensive, can be done over a weekend, and is an effective way to change a room’s whole aesthetic.

Whether you want to paint a door, a wall, or your entire house, start with the best part, picking a color! Looking through Behr’s, Benjamin Moore’s, and Sherwin-Williams’ 2021 paint trends, it’s easy to see a theme — warm neutrals and bold colors. Yes, it’s still ok to go with a soft gray or sand. But if you want to mix it up in 2021, now’s your chance to go for it! Popular paint trends include creamy coffee, teal blue, soft white, deep yellow, rosy peach, strong gray, earthy green, pretty lilac, bold pink, and gorgeous periwinkle. If you’re painting your entire house, choose a couple of shades of white, sand, or gray neutral colors as your base. Think hallways, bathrooms, guest rooms, and living room. Then, find two or three colorful shades that make your heart sing. It’s your home, so you want to enjoy it! Paint these bolder shades in your kitchen, den, dining room, bedroom, or anywhere else that needs a refresh. Another thing to consider before you start painting is what kind of finish you want to have. Most colors come in various options, from glossy to matte. Below you’ll find a quick guide on choosing a finish: Glossy Often, you’ll see glossy paint on trim, molding, and doors. This type of paint is shiny and pretty, although it could be blinding if it covers an entire wall. Satin Also known as semi-sheen, satin paint isn’t quite as shiny as the glossy paint, but it’s more illuminating than matte paint. Keep in mind, the higher the sheen, the easier it is to clean. Choose this finish for areas that are more likely to get dirty, such as the kitchen, bathrooms, bedrooms, and playroom. Eggshell This finish is warmer and more muted than satin. Eggshell tends to absorb light rather than reflect it like satin or glossy finishes, giving it a cozier feel. This type of finish is excellent for living rooms, hallways, entryways, and other areas that are less likely to get scuffed. Matte Matte is the flattest finish you can get. While it does look smooth on a wall, it can be challenging to clean. One of the benefits is it requires fewer coats to look good (meaning it’s less expensive), and it’s easier to touch up if you do get a few marks on the wall. Repainting your house can seem daunting, but it’s a great way to add new life to your space. Bright colors, shiny new trim, scuff-free neutrals, and more can transform your house — and leave you smiling every day.

Assess Your Soil Send a soil sample to your local agricultural extension service for a soil test. For a minimal fee, they’ll tell you what minerals your soil is lacking so you can amend it before you plant. Loosen compacted soil to provide airflow and make it easier for young roots to grow. You can do this by adding perlite or organic matter like compost, which will add air and retain moisture. Top off raised beds as needed making sure any soil you add is clean and free of weed seeds and garden pests.
It was author Bailey White who wrote, “Your best gardening is always in the future.” That’s certainly true for me. There’s no garden lusher and more bountiful than the garden I’m planning to plant. When my spring seed catalogs arrive in December, I spend hours by the fireplace sipping tea and strategizing the beds I’ll plant in spring. But there’s much more to do right now than daydreaming.
Prepare to Prepare
Prep Beds
Here’s something I didn’t know as a new gardener. You should sterilize your garden tools before using them each spring. That’s because any remaining plant sap or dirt and debris can hold bacteria or fungal spores that you could inadvertently introduce into the bed. To do this, soak your garden tools in a solution of 10% bleach to 90% water for half an hour to kill any soil pathogens. Rinse well, then spend some time sharpening your tools, oiling, and removing any rust.
It’s time to add nutrients, ensure your soil isn’t compacted, and remove weeds. Do your best to remove the roots of the weeds before they start to seed in the spring. Turn the top six to eight inches of soil in your beds (unless you’re using a no-till gardening method) to find any overwintering pests and remove them. Turning your soil is especially important if you had problems with cutworms since they’re one of the earliest pests to emerge in the spring and can kill your seedlings before they have a chance to start.

Finish with Fertilizer Whether your garden is a feast for the eyes or a feast for your table, it needs to be fed before it will feed you. Fertilize a couple of weeks before planting. Or you can work in slow-release granular fertilizers for long-term nutrient boosts. The fertilizer you add will depend on what you plan to plant. Refer to your soil sample results and do some research on what your plants will need to thrive. Tomatoes, for instance, enjoy a kick of calcium to prevent blossom-end rot. But your petunias might prefer phosphorous. Now’s the time to order all of those gorgeous spring bulbs and seeds, too. Have fun planning and replanning your beds. This stage can bring as much enjoyment as the actual planting and growing.

In case you didn’t know, February is Heart Health Month, a reminder that we shouldn’t take the steady thump, thump, thump, of our heart for granted. Of course, that is easier said than done. It is estimated that if you live to be 80 years old, your heart will beat about 2.5 billion times. Who can count that high?

Medical science has developed vaccines to help prevent many diseases. But there is no vaccine to prevent heart disease. The good news is that you don’t need a vaccine for a healthy heart. It revolves around your lifestyle.
Exercise at least three times a week for 30 minutes each time. It can be walking, even housecleaning. Eat healthier. Smaller portions and a balanced diet are key. Add fiber to your diet as well. Maintain a healthy weight. Avoid crash diets. Consult your physician to devise a weight-loss plan for you. Put down the shaker of salt. There is already enough salt in most processed foods. Cut down on saturated fat. Some fat is good but not saturated fat and trans fats. Yes, that means limit cake, doughnuts, pizza, and any fried food. Nonetheless, we should recognize the warning signs of potential heart disease. According to the Centers for Disease Control, with the exception of the recent pandemic, heart disease is annually the leading cause of death in the U.S. Cardiovascular disease kills one American every 36 seconds. The American Heart Association adds that a staggering 48% of Americans have some form of coronary artery disease. So, how do you know if you have heart disease? Are there any warning signs? There are, although some are often dismissed for other disorders. For example, is that pain in my chest a heart attack or indigestion? An important factor in evaluating heart health is family history. It is helpful to know whether heart disease is prevalent on either or both sides of the family tree. You don’t want to overlook a genetic component. There are also other precursors. Elevated blood pressure can lead to heart disease, and there are usually no warning signs. Thus, monitoring blood pressure at home is important, especially if it is prevalent in

your family history. The human body has a remarkable capacity to absorb and tolerate stress, but that is not necessarily a good thing if it sends your blood pressure numbers soaring. Lifestyle plays a part in heart health. Obesit y elevates the r isk of hear t disease and can lead to diabetes. High cholesterol, particularly LDL, the bad kind, smoking, and a lack of physical activity can set you up for heart disease as well. But not having these risk factors does not make you immune. So, pay attention to potential warning signs such as shortness of breath, extreme fatigue, unexplained swelling of your feet, ankles or legs, chest or neck pain, nausea and vomiting, palpitations, dizziness, confusion and memory loss, and pain in your left arm or side. A ny of these symptoms can mimic other ailments, which is why you should never self-diagnose and seek immediate medical attention instead.
Sleep. It may be difficult but getting seven or eight hours of sleep a night keeps your immune system strong. Fight stress. Whether it is aerobic exercise, yoga, meditation, or just some downtime, you need to take a moment to wind down every day. Don’t neglect your teeth. There is a link between periodontal (gum) disease and heart disease. Be prepared. Check with your local Red Cross or visit the American Heart Association website to find where you can complete a course and be certified in CPR. There are a few online-only courses, but you may not be certified unless you attend an inperson course. Knowing how to administer CPR could save someone’s life.

Depending on your gender and age, your physician may recommend more than the basic screenings and tests during your annual visit. For Women
MAMMOGRAM – The American Cancer Society recommends a yearly mammogram for women ages 45 to 54 and screening every two years for women over age 55. PAP SME AR – Screening for cer vical cancer should begin at age 21. Additional screenings are recommended every three years for women with healthy immune systems. CHOLESTEROL TEST – This should begin for most women at age 45 but as early as age 20 for those with a genetic predisposition for diabetes or heart disease.

Your physician will make sure your prescriptions and over-the-counter medications and supplements don’t interact and create potentially dangerous side effects. Provide valuable guidance. Your doctor can provide information and motivation to lose weight, exercise regularly, or stop smoking, among others.

ABDOMINAL AORTIC ANEURYSM SCREENING – This is a one-time ultrasound screening recommended for men ages 65 to 75 who have smoked. For Women and Men
COLON CANCER TEST – This test usually begins around age 50 but possibly earlier depending on personal health conditions and family history. LUNG CANCER SCREENING – An annual low-dose CT scan is recommended for those ages 55 to 80 who are smokers or have smoked for a significant period of time. DIABETES – If you have a family history of diabetes or risk factors such as being overweight or having high blood pressure or high cholesterol, you should be screened for diabetes. If your doctor believes a part of your body needs special examination, you may receive a focused physical exam in which they look closely at that area to confirm their suspected diagnosis.

Do you love the sun, sand, and long stretches of the beach? South Padre Island is an iconic spring break destination in the Lone Star State, but if Florida is on your mind, the upper gulf coast is within a day’s drive.
Yes, it’s around a 13 and a half-hour drive from Dallas to Vail and about 14 hours from Houston to Taos, but in most cases, you can make it in one day, especially if you have another driver taking a turn at the wheel.
The well-heeled, pedestrian-friendly beach towns of South Walton (VisitSouthWalton.com), including postcard-worthy Rosemary Beach (RosemaryBeach. com) and Seaside, have been called the “Hamptons of the South.” Seaside’s quaint, breezy, pastel-colored beach cottages with white picket fences cast a laid-back mood. Pocket parks nestled among Rosemary Beach’s shaded streets are lined with pan-Caribbean-style homes and boardwalks that lead to the beautiful white sand beach. Tucked in the Sangre de Cristo Range at the edge of the Rockies, Taos has some pretty imposing runs, but there are plenty where beginners feel comfortable. While you’re there, drive from the ski valley to the town of Taos, known for its rich art history, and check out Taos (TaosPueblo.com). The only living Native American community, Taos Pueblo, is designated as a World Heritage Site by UNESCO and a National Historic Landmark.

Not all activities may be available, and some states may require you to quarantine after you enter. Clean your car before your road trip. You’ll have plenty of wrappers and debris to deal with as you drive along. Start with a clean slate. Get your vehicle checked a couple of weeks before your trip. Make sure fluid levels, tires, brakes, and anything else are up to par. Bring jumper cables and some extra wiper fluid. Preload your phone and tablet with apps, podcasts, and entertainment options. If you don’t have one already, create a memorable road trip playlist.

GUACAMOLE DEVILED EGGS MAKES: 6 (ONE WHOLE EGG PER SERVING) | COOK TIME:30 MINS. INGREDIENTS: 6 eggs | 1 medium avocado, halved and pitted | 1 ½ Tbsp. fat-free sour cream | 1 tsp. lime juice | 1 tomato, seeded and chopped | ¼ cup onion, diced small | 1 small jalapeño, diced small | ¼ tsp. salt | ¼ tsp. garlic powder DIRECTIONS: FILL a large pot with water. Add the eggs, making sure the water covers them. BRING to a boil over high heat. ONCE boiling, cover the pot and remove from heat. LET the eggs sit in the pot for 10 minutes. DRAIN water and place the eggs in a bowl of cold water and set aside. PREPARE your avocado, tomato, onion, and jalapeño while the eggs are cooling. ONCE the eggs are cool, remove the shells and slice the eggs in half longways, and remove the yolks. ADD 2 of the egg yolks to a medium bowl and discard the other 4 yolks. PLACE the egg white halves on a platter and set aside. USING a spoon, scoop the avocado into the same bowl as the egg yolks. MASH together with a fork. Stir in sour cream and lime juice. ADD all remaining ingredients and stir. SPOON the guacamole into each egg white half. GARNISH with extra tomatoes, jalapeño, or fresh cilantro and serve.

BAKED SALMON CAESAR SALAD MAKES: 2 SERVINGS PREP TIME: 10 MINS. | COOK TIME: 15 TO 17 MINS. INGREDIENTS: 2 salmon fillets, thawed if using frozen | 1 Tbsp. olive oil | ½ tsp. salt | ¼ tsp. garlic powder | ¼ tsp. onion powder | ¼ tsp. black pepper | ¼ tsp. crushed red pepper | 1 large head romaine lettuce, chopped | ½ cup shredded parmesan | ½ cup Caesar salad dressing | ¼ cup croutons | 1 lemon, quartered DIRECTIONS: PREHEAT oven to 400° F. MIX salt, garlic powder, onion powder, black pepper, and red pepper in a small bowl and set aside. COVER a small sheet pan with foil and place salmon fillets on foil. DRIZZLE ½ Tbsp. of olive oil on each fillet, turning to coat both sides. SPRINKLE seasoning mixture on salmon fillets, turning to coat both sides. BAKE for 13 to 15 minutes. ONCE baked, broil the top of fillets for 2 to 3 more minutes. WHILE salmon is baking, prepare the salad. CHOP romaine and toss with parmesan, Caesar dressing, and croutons. PLACE in two shallow bowls. ONCE the salmon is ready, place one fillet on each salad. SERVE with lemons and enjoy!
