With so much happening in the Mansfield community, it’s sometimes hard to keep up. But the City has numerous communication channels providing information to residents on what’s happening with city government, city services and city events. Last year the City website was redesigned and now features several ways to get information. The Notify Me feature provides email or text updates on all city news and information, while the Mansfield Emergency Alert System sends notifications on severe weather and other emergencies and puts the control on how to receive those messages in your hands. The website also features meeting agendas, forms, maps and calendars. There are eight Facebook pages, including the main
mayor
City page that posts regular updates, including previews and recaps of City Council meetings. There are also six Twitter pages, six Instagram accounts, two Nextdoor agency pages and a YouTube channel. All of these communication channels are available 24/7 and offer residents ways to connect with what’s happening with the City of Mansfield. On Nov. 3, 2020, Grand Prairie voters will be asked to consider renewing the ¼ cent sales tax for our Community Policing District. This is a renewal of an existing sales tax, not a new tax. The Community Policing Sales Tax currently is paying off the debt on the Public Safety Building (PSB) Police-Fire Headquarters and for police officer salaries, benefits, equipment and training. The proposition asks voters to consider extending the tax for 20 years to hire police officers and pay for their salaries, benefits, equipment and training, once the PSB is paid off. If approved, the amount you pay in sales tax in Grand Prairie stays the same. It is a continuation of the existing tax. Shoppers who do not live in Grand Prairie will help pay for public safety services. And, the city would be able to maintain the 1.5 officer per 1,000 population ratio of coverage. If not approved, the city would have to absorb the cost of police services back into the general fund, which

GRA ND PRAI RI E would require elimination of police and city services to balance the budget; or ask voters in May 2021 to raise property taxes 4-6 cents per $100 of taxable value to fund police officers. The City of Grand Prairie’s population has increased by more than 30,000 residents since 2007 when the Community Policing Tax was first passed. In 2007, the Police Department employed 223 police officers, or 1.3 officers per 1,000 population. Currently, the department employs 286 officers, which translates to about 1.5 officers per 1,000. Crime has decreased by 47% since 2010, and Grand Prairie is consistently a Top Ten Safest Large City in Texas, as ranked by the FBI. We ask you to consider voting in the Nov. 3, 2020 election with regard to the continuation of the existing City of Grand Prairie Community Policing Sales Tax of ¼ cent.

Well, Arlington, we’re number one again. This time it’s in the highest 2020 census self-response rate for any big Texas city (over 300,000 in population). Our 67.2% self-response rate made us number one and, by the time you read this, that number might be higher. Thanks to everyone who took the time to respond. Your answers will shape our city’s future, for the next ten years. Arlington ISD’s new arts and athletics complex reached a milestone, last month, as the pool in the soon-to-open athletics center was filled for the first time. Diving boards were also installed in the first-ever natatorium for the Arlington ISD which includes the 50-meter pool with moveable bulkheads, a diving area, warm-up pool, and seating for 1,000 spectators. Part of the district’s new athletics center, a 2014 bond
A RLINGTON project, the facility includes the natatorium and an arena for basketball, volleyball, wrestling, and elementary gymnastics. Next door to the athletics center is the district’s future center for visual and performing arts. The CVPA is slotted to open this fall to serve the entire district—grades Pre-K-through-12—with world-class performance and demonstration venues. It includes a 1,250-seat concert hall, 425-seat theater, classroom space, art and dance studios, instrument repair center, and art gallery. The two facilities, which comprise the Arlington ISD Arts and Athletics Complex, are just two more reasons life in The American Dream is unlike nowhere else.

HEARING GOD'S WHISPER THROUGH ALL OF THE NOISE BY JOS HU A HOLOHAN
A decibel is a unit of measure that informs us of the intensity of a particular sound. For instance, if you do your research, you will find different sounds can be measured at a certain decibel. A whisper is first measured at around 15 Db, and the last mention of a whisper at its loudest registers around 30 Db. I am convinced that what we are tuning into on a regular basis informs us on how we look at things, what we believe, and ultimately how we behave and live our lives. Born and raised on Long Island, New York as a preacher’s kid, I went right to work after graduating high school. Working as a forklift mechanic for 15 years, the things I listened to varied over the years. Work for me involved traveling all five boroughs of NYC, constantly surrounded by the sound of heavy machinery, people barking commands at one another, heavy traffic, and blaring sirens. I now find myself penning the words to this article as a full-time Pastor in Dallas-Fort Worth, Texas. How I found myself moving from New York to Texas is a long story filled with divine intervention. The cause can be credited to nothing short of the Amazing Grace of God, and the Heavenly Sound that was able to find its way through all of the noise straight into the depths of my heart.

During this season of COVID-19, social unrest, and the elections coming, I think we can all agree there is a lot of loud noise. This truly is an unprecedented time in history, and I believe that it’s God’s invitation for all of us to tune the ears of our hearts to a specific sound. The two words Amazing Grace that have long preceded the words “how sweet the sound” from one generation to the next in the form of song have made a remarkable impact on my life. I want to talk to you briefly about the Sound of Grace. Grace is a word that is seldom used, and if ever, it mostly revolves around your family gathering around the dinner table when everyone is ready to eat. I think that is great! But is it God’s intention that Grace is something that is only mentioned at the dinner table? The world we live in today is full of so much noise. If you listen to the news for long enough, and the sounds that are being released from all of the available outlets, I don’t think it will be long before you start to feel weighed down, hopeless about your future, and just chock full of the cares of this world. About 11 years ago, I was introduced to a Pastor by the name of Joseph Prince through one of his books given to me by my father called Destined to Reign. I had heard the gospel before and knew that Jesus died for my sins, but somehow along the way, I never truly heard about the Riches of God’s Grace and what that meant for me. This book completely revolutionized my life because it helped me to see the person of Jesus through the pages of the Bible very differently. Previously I thought that if I did something bad, God would give me something bad in return, and if I did something good, I would get good in return. I began to dig into the scriptures more and saw Jesus getting all of the bad that He didn’t deserve at the cross so that I could get all of the good that I didn’t deserve through the cross, in what my Pastor likes to call the Divine Exchange (see 2 Corinthians 5:21). Somehow along the way, even while being blessed to grow up in church, I never once heard anyone preach this beautiful truth found in the New Covenant. This is the Sound that truly put me on a trajectory of seeing the beauty of my savior Jesus Christ not just at church as an event on Sunday, but at work, in the daily grind, and yes, even on a Monday morning ... hello! This is the Sound that brought about and continues to bring about change for the better in all of my behavior. Perhaps what God was trying to communicate to me as a believer in Jesus was that I was in this world, but not of this world. Perhaps this Sound didn’t originate from this world
are you could be just like me, on a journey of tuning your ears to the Sound of God’s Grace (unmerited Favor) that the Bible describes as being the key ingredient to your salvation (see Ephesians 2:8-9). If you find yourself not knowing what you believe, you need to hear His gentle and quiet whisper toward you today, reminding you to stop working to try to get to Him, because He already successfully worked His way in the person of Christ to get to you. When I say salvation, I don’t just mean escaping from the grips of eternal punishment. Salvation is much more than that. It’s continuing to catch God’s generous heart for you on this side of heaven by allowing him to take hold of the volume control residing in your heart and giving Him permission to increase the Sound of His amazing Grace through the unveiling of His Son, the Lord Jesus Christ, and the things He freely gave you at the cross. Getting back to the numbers that I mentioned in the beginning of our time together, I want to draw your attention to the numbers 15 and 30. In the Bible, numbers carry meaning. Fifteen means rest, and 30 is the number of calling and/or going public. The first time the word Grace is mentioned in the Bible it is attached to the name Noah, which also means rest (see Genesis 6:8). God is truly calling humanity to tune into this Sound of Grace so that we can take advantage of spiritual geography within, that transcends our natural habit in which our confidence has been so strongly built around. It is amazing to me that a virus can quickly wake us up to the truth of how humanity is so intricately woven together while co-existing on opposite sides of the globe. I bet there is a Rest on the inside of us all that God is inviting us to access. I truly believe that God is asking us all to participate with His Grace going public in our lives first, as He blesses us with front row seats to His goodness. How do we participate, you might ask? Can I respond with, how much are you willing to receive from Him before you get your act together? Chances are He is willing to give you much more than you are willing to receive. As you live your life in the middle of the loud, you will begin to realize that He is not in the things that are loud, but in the gentle and quiet whisper to show off how close He truly is. When someone is this close, there is no need to shout “… Ahhhh — Amazing Grace, how sweet the Sound.” (see 1 Kings 19:11-12).

As a metaphorical pendulum swings back and forth before your eyes, think back to your childhood and the magic surrounding Halloween. Inhale the crisp autumn air. Hear the rustle of autumn leaves. Admire twinkling jack-o’-lanterns peeking out from the dusk. Feel the weight of your treat bag full of sweet treasures. While you can’t literally travel back in time and bring those memories to life, sharing cherished traditions, treats, and a few harmless tricks with your own family can be just as special. Among hayrides, bobbing for apples, picking out or making new costumes, and decorating the yard, there is an endless array of fun-filled activities to choose from. This spooky season, plan to create some new family traditions of your own.

risten was 14 years old when her whole life changed. Raised in a broken and abusive home, she was forced to look for affirmation in dangerous places. She met Jeremy online and he gave her the attention she craved. Kristen agreed to meet him at a party, but it didn’t take long to realize he wasn’t who he said he was. He tricked her, trapped her, and trafficked her. She was no longer a 14-year-old girl looking for love. She was one of 400 underage girls who are raped for profit in the Dallas area each night. Meanwhile across town, Alicia Bush was living her American Dream. Married to a devoted husband, she’d just given birth to her third child. She had a beautiful home, a circle of supportive friends and family, and was at the apex of her medical sales career. Life was good. But Alicia couldn’t shake the feeling that God had more for her. “My husband and I had gone on mission trips in other countries,” she said. “But I felt like, if you want to make a lasting impact, you need to do it where you live. I loved working in healthcare, and I was good at it, but felt like God was calling me to more.” Alicia spent 11 months “fostering a yes” in her heart. “I prayed, ‘Lord, whatever it is, I want to be completely obedient’. My husband had been to a men’s breakfast a couple years before and had learned about the sex trafficking problem in this area. But I assumed God would use me in healthcare.” Then, one morning Alicia awoke with God’s answer on her heart. “The Lord said, ‘You will build an after-care facility for girls rescued from sex trafficking.’ I didn’t even know whether this was a need or if someone else was already doing it,” Alicia said. “But I told my husband and he was completely onboard.” What followed was a huge learning curve for Alicia. She began talking to law enforcement, organizations

helping trafficking survivors, and others. “I pictured a girl being rescued and a loving family waiting to welcome her back but learned that many of the girls were actually sent to jail,” Alicia said. “There wasn’t a good solution in place for them.” The result of all that asking, searching, and praying was Treasured Vessels Foundation, a long-term safe space where girls can go to heal and grow after being exploited by sex trafficking, a place where purpose and value can be restored to them, and a holistic and comprehensive therapeutic approach offers them hope for a sustainable future. With the help of Director of Community Impact Kelly Singleton and Director of Communications Abigail Ours, Treasured Vessels opened their first shelter in January of 2020 serving girls 18 to 24 and is working now to construct a second facility for girls nine to 17. Each shelter includes a licensed professional counselor—on staff at all times—a program director who’s also a nurse and case manager, and residential assistants, some of whom are awake and in the home with the girls 24 hours a day. Along with food, clothing, and lodging, the girls are provided with group therapy, substance abuse counseling, even martial arts. The program is tailored to meet the needs of each girl. “We received more applications—girls asking to join the program—in the last week than the entire year,” Alicia said. “The need is great. The program currently costs $25,000 a month to run and we only see that number rising, as more girls are rescued and given an opportunity to heal.” What part can you play? They need prayer, of course. But they also need funding, volunteers, and those willing to spread the word. The story for Kristen and so many others can have a happy ending. ou have cancer.” These are scary, life-changing words. After the utter shock comes a fight for life — that precious gift we all sometimes take for granted. For me, it felt like I was held captive in a room from which I was desperate to escape. All I wanted to do was walk through the door toward the promise of a longer life and all the glorious things that come with it.

Fighting the good fight, I remained upbeat and reassured friends and family everything would be fine. What I hadn’t anticipated was what was on the other side of the door. Life, sure, but not the same life I knew before. Someone told me, “Once a cancer patient, always a cancer patient.” Frankly, I thought this sounded a little dramatic. Now, being on the other side of breast cancer, I get it. An overused term for this is the “new normal,” which is both wonderful and challenging. The wonderful part, obviously, is that I’m alive. I celebrate this deeply and cherish every moment spent with friends and family, doing the things I love, and marveling at this incredible planet we live on teaming with life. So, what are the challenging aspects of survivorship? It’s different for everyone. For me, it’s a twofold issue with one amazing surprise thrown in. First, it’s natural to worry about cancer recurrence. Are there cancer cells running loose in my body that can multiply and create another tumor? What are the odds? But I refuse to spend my precious time worrying and wondering, “What if?” Being mindful, living in the moment, and focusing on

positivity helps me avoid dark thoughts. The second is handling treatment side effects. For example, depending on your treatment, you can have ongoing effects from chemotherapy and radiation therapy, and painful lymphedema due to lymph node removal. If diagnosed with hormone-positive breast cancer as I was, you will be taking hormone-suppressing medication for years. While some women have few if any related side effects from these drugs, others suffer from life-altering side effects. They can be so severe that 25 to 40 percent of women stop hormone suppression therapy, willing to trade off the lower probability of cancer recurrence for improved quality of life. Personally, it’s a risk I’m not willing to take at this point, but I understand why women are driven to make this difficult decision. The surprise gift is the “pink sisterhood.” When you’re on the outside, it’s a group you never want to join. Once on the inside, it’s pretty marvelous. There are pink sisters all around who understand, provide support and empathy, and sometimes simply lend an ear when you need to vent. I meet these amazing, fearless women all the time, often when I least expect it. We share a common bond that transcends any differences we may have. With this comes an overwhelming desire to share and rejoice in our strength to fight and forge ahead with a collective passion ignited in us all.

he sad truth is many Americans are carrying around too many pounds. According to the Institute for Health Metrics and Evaluation (IHME), an estimated 160 million Americans are overweight or obese, including nearly 75 percent of American men and over 60 percent of American women.

For those for whom diet, and exercise have not worked in shedding unneeded weight, bariatric (weight-loss) surgery may be the answer. While bariatric surgery can offer many benefits, all forms of weight-loss surgery are major operations with possible side effects and risks, though these are minimal.

Bariatric Surgery: Risks and Benefits You may be a candidate for bariatric surgery if you are more than 100 pounds over your ideal body weight, have a Body Mass Index (BMI) over 40, or have a BMI over 35 and are experiencing obesityrelated conditions like high blood pressure or diabetes. Before proceeding with surgery, however, you should have a thorough understanding of both the risks and benefits. COMMON RISKS If you’re considering this weight-loss option, here are some things you need to know. A VARIETY OF OPTIONS In 2018, 252,000 bariatric surgeries were performed in the U.S., and the following are three of the more commonly used procedures. Sleeve gastrectomy (SG) - The SG procedure involves removing about 80 percent of the stomach, leaving a long, tube-like pouch. The smaller stomach cannot hold as much food, and it also produces less of the appetite-regulating hormone ghrelin, which may lessen your appetite. Roux-en-Y gastric bypass (RYGB) - With RYGB, the surgeon cuts across the top of the stomach, creating a pouch about the size of a walnut that can hold only about an ounce of food. Normally the stomach holds up to three pints of food. Next, the surgeon sews part of the small intestine directly to the pouch. Food then goes into this pouch and the small intestine, bypassing most of the stomach and the first section of the small intestine. Of these two, RYGB was initially the more popular option, but because SG tends to have fewer postoperative complications, by 2016, the number of SG procedures was three times higher than RYGB.
The more common risks of bariatric surgery include: • Infection • Excessive bleeding • Negative reaction to anesthesia • Blood clots • Lung or breathing problems • Leaks in the gastrointestinal tract Longer-term risks and complications can include: • Bowel obstruction • Diarrhea, flushing, lightheadedness, nausea or vomiting • Gallstones • Hernias • Low blood sugar (hypoglycemia) • Malnutrition BENEFITS On the other hand, if you and your physician agree that bariatric surgery is your best option moving forward, there are many possible benefits. • Long-term weight loss – Most studies have concluded that more than 90 percent of those affected by severe obesity can maintain 50 percent or more of their surgically-related weight loss.
Gastric banding - This is a third option in which the surgeon places a band around the upper portion of the stomach and injects a saline solution to inflate it. The inflation creates a smaller stomach pouch, reducing the amount of food the stomach can hold.
• Remission from type 2 diabetes – A recent Cleveland Clinic study found almost all obese patients with type 2 diabetes remained free of insulin and other medications for at least three years.
After surgery - There are, of course, other bariatric options. Still, whatever procedure you undergo, for one or two days, you won’t be able to eat or drink, giving your stomach and digestive system time to heal. Gradually you’ll progress to liquids, then pureed, very soft foods and finally, regular food. For several months you’ll also need regular medical checkups to monitor your post-operative health.
• Depression relief – A poor body image or social stigma can lead to depression, and losing excess weight can improve emotional health.
If you don’t lose weight - It is possible not to lose weight or regain weight after bariatric surgery. These complications can happen if you’re not eating healthy foods and exercising regularly. In this case, it’s essential to see your doctor immediately to explore the factors contributing to your lack of weight loss.
• Improved cardiovascular health – Bariatric surgery can reduce coronary heart disease risk, stroke, and peripheral heart disease.
• Elimination of sleep apnea – People with sleep apnea can often stop using their CPAP machine at night. • Joint pain relief – Stress on joints can be relieved, often allowing people to stop using pain medications and enjoy more mobility. • Improved fertility – Bariatric surgery could improve a woman’s fertility during childbearing years. Weighing risks against rewards - Dr. Philip Schauer, one of the nation’s leading bariatric surgical specialists, concludes that this surgery’s risks are no greater than a knee or gall bladder procedure, and the outcome could be life-transforming.

STEP 1: Start a plan. Postponing treatment increases the likelihood of increased expenses, so don’t put off scheduling a consultation to start your personalized smile plan. Think of it as the dental equivalent of calling a plumber when you spot a small leak under the kitchen sink rather than waiting until your kitchen needs a full-blown renovation. The first step in any dental plan is addressing immediate pain or infection. Next, Periodontal disease must be treated. The underlying structures must be healthy enough to support new work in the long term. Never build on a faulty foundation. After any periodontal conditions are stable, your dental professionals will re-evaluate everything and fine-tune the plan made at the initial appointment. All future work recommended by your experienced practitioner will be noted and then phased in order of priority. Cosmetic procedures, such as veneers, can be done at any time after gums are healthy and any active infection is treated. Please note that veneers are not covered by insurance. Since long term work, such as crowns and dental implants, are best placed in a well-aligned arch, interested candidates might be advised to consult an orthodontist, too. STEP 2: Utilize insurance. Your dental professionals are interested in helping you best utilize any insurance benefits. The typical dental insurance covers about $1500 of dental costs per year. Don’t miss out on using the full amount. Sometimes dental offices will begin work on a significant treatment, such as an implant, in October. Then your dental provider might recommend waiting until January, when the insurance benefit has renewed, to place the crown on top of the implant, since those are separate charges. Future treatments are often planned by quadrant. Pardon the pun, but you might say the work is divided into bitesize chunks. If you are going into retirement soon, it’s a good idea to be up to date with all treatments so that the possibility of living without dental insurance is doable. After retirement, consider banking the yearly fee of what insurance would cost and self-insure that way. STEP 3: Slow and steady creates a winning smile. Rather than worrying about the long-term plan, just keep steadily whittling away at it every year. In a shorter time than you might think, your mouth will be well on its way to total restoration.

A PLAN to Expand A STEP-BY-STEP STRATEGY TO ADD EXTRA SPACE AT HOME BY C H E RYL AL E XAN DE R
re you and your spouse tired of sharing the bathroom in shifts? Has your family gained a new member? Do the kids need their own rooms? Does your kitchen feel tiny and cramped? Is it finally time for the home office you have been talking about since you moved in? The list could go on, but one thing is sure — you are ready for more space, and the time is now.

Here is a list that will help get the ball rolling in the right direction: First, decide on your budget. Unless money is not an issue, you will likely end up making some cuts to your ideal concept, so enter into this process with that in mind. An average cost for an addition is between $40,000 and $50,000. This aggregate national number does not take into account size, scope, slope of land, or geography. An extensive project could cost more than double this figure, if your addition is small and relatively simple, it may be much less. Once you have determined how much money you will need or can spend, then you’ll need to determine your exact property lines in order to develop a plot plan, including your home, landscaping and the location of the utilities. Then check local codes regarding restrictions about how close you can build to your neighbor. Next, take a close look at your existing structure and floor plan. At this point, you’ll likely need help from a residential designer or architect to come

up with an addition that will not only be economical, but also one that is attractive, useful, and that will fit with your current home style. As well as interior design, think about how the expansion will architecturally affect the exterior of your home. Before work begins, make a list detailing the materials and the scope of the work to be done. Regarding materials (such as flooring, hardware, lighting, etc.), include first, second, and third options. Your first choice may turn out to put you over budget. Having a backup plan from the onset, will ensure that you do not lose time once your build-out begins. Determine at this crucial stage what you can and cannot live without, where you can compromise, and where you can go dirt cheap. Finally, hire the professionals. The number and type of people you will need will depend on the scale and scope of your project. Even if you plan a rather small addition, you will need a designer or draftsperson to prepare one or more working drawings to apply for a building permit, freehand sketches or rough diagrams will not suffice. For large projects, you will likely need an architect who can design an efficient layout and merge the addition’s design with your existing home. And do not forget to budget for the cost of the architect. After your blueprints are complete, you will get bids from contractors. If you have plans for your home addition available for contractors to bid from, you will get a better sense of cost because they will all be bidding from the same information. Another option is to hire a design-build firm. They provide a complete package of services, including design consultation, construction drawings, and project management. Though the idea of expanding your home can be daunting, when broken down into a few steps like these, an addition can be a relatively simple and extremely rewarding way to improve your home and lifestyle.

yle Cisar didn’t set out to own and operate an overhead door company. FALLING FOR FUNGI THE ADVENTURES OF IDENTIFYING AND GROWING YOUR OWN MUSHROOMS BY MIMI GREENWOOD KNIGHT
If you enjoy growing some of your own food, don’t stop at tomatoes and herbs. Mushrooms can be fun to grow and crazy healthy to eat. They’re fat-free, low-cal, and packed with vitamins, antioxidants, and other nutrients. They’ve even been called a brain-healthy superfood. Although, they can be finicky to get started, once you give them the conditions they want and get them growing, they’ll knock your socks off with their daily metamorphosis. I began my mushroom growing adventures with a kit I got for Mother’s Day, a mushroom “block.” Within a week, I had robust crops of brown oyster and white oyster mushrooms growing on my windowsill, and they had the whole family riveted as my fungi doubled in size each day. I harvested them and made killer chicken parm with one, stroganoff with the other. I was hooked! My foray into mushroom foraging began when we hired a couple to landscape our yard, who turned out to be mushroom hunters. They pointed out a bountiful crop of chanterelles growing on a wooded section of our property.
After three evenings of studying them in books and videos, I whipped up a wild chanterelle risotto with them. Ooh, la la! Here’s the part where I tell you please, please, please don’t eat any mushroom you find, until you know what they are. I had mine validated by experienced mushroom hunters and still did copious research. There are field guides, phone apps, websites, and mushroom clubs to help with identification (see sidebar). When in doubt, DON’T eat them! Next, I bought living morel fungus from a company on Amazon and planted a perennial crop of morels. Mushrooms grow from spores — not seeds — and thrive in sawdust, grain, straw, or woodchips — not soil. A blend of spores and these nutrient materials is called “spawn,” which is a little like starter you may have used to make sourdough bread. Mine took a couple of years to get going, but they can produce pounds of morels each spring for decades once established. Now, we’re enjoying fresh-from-the-earth morels on pizza, in omelets, and in linguini. You can start your mushroom adventure with a commercial kit. Some grow right in the box they come in. My block allowed me three consecutive harvests. Others come with hand-cut logs inoculated with fungal spores (mycelium) and covered with cheese wax for protection from insects and other natural predators. One of the beauties of growing your own mushroom varieties, rather than wild harvesting them, is knowing what you’re getting. If you have young kids in your life, be sure to get them involved as you all start falling for fungi. If you’re brave, look for a mushroom foraging club in your area. Facebook is an excellent place to start. If you take all the proper precautions, there’s nothing more exciting than “getting your eyes on” and finding a healthy crop of edible mushrooms in the wild.

You need a new car. But you waited until now because October is when automakers traditionally roll out most of their new-year models. Guess what? You may need to show a little more patience. The COVID-19 pandemic has slowed production of 2021 models, especially those that have undergone a complete redesign. Still, those shiny new cars and trucks should be arriving between now and the holiday season, so you probably won’t have to wait until the ball drops in Times Square on New Year’s Eve to purchase a new ride. Tradition and getting a head start on marketing are among the reasons the new model year starts in the fall of the current year. In fact, some of the next year’s models are now available even earlier. Dealers are especially motivated in the fall, however, because they want to
reduce inventory and make room for those new models. So, there are plenty of incentives, among them increased cash-back rewards and customerfriendly financing. Some dealers also include free routine maintenance for up to two years. We have already seen some incentives ahead of schedule due to the pandemic’s impact on the global economy. There are a few things to remember if you are in the market for a car. While there are usually minor changes in most models from year-to-year, automakers typically redesign a model from top to bottom every four-tosix years, which sometimes means you won’t even recognize it as the same car. Do some research. If having the latest model is important, you might pay more for your new car, even with incentives. If a body st yle change isn’t that important to you, or if you prefer the old body style anyway, then you may get even a better deal on a new “leftover” model. However, be aware that it may depreciate faster because of the redesign, and you may not have a lot of choices. Also, keep in mind that in the age of technology, the new redesigned model may have more bells and whistles. Some cars already park themselves, beep and flash lights to correct you when you are meandering out of your lane, and apply the brakes if you don’t. Pretty soon, they will be brewing coffee for the morning rush hour. That brings up another tip. When you get a great deal on a new car, consider reinvesting some of the savings on an extended warranty, including the technology package. All those bells and whistles can be costly to repair.
Lexus IS: Redesigned front and rear and upgraded technology package inside. Kelley Blue Book estimates the base model will start at $40,000.
Ford Mustang Mach-E: The newest Mustang is an electric car. The automaker says it can go as many as 300 miles before you need to find an outlet. Starting at just under $40,000.
Nissan Rogue: Redesigned exterior, more power under the hood, and slightly better gas mileage. Not yet priced but figure starting at $25,000$26,000 for a base model.
Buick Envision: You will have to wait until early in 2021 for this completely redesigned luxury crossover. It offers a more spacious interior and upgraded technology package. Not yet priced, but plan on it starting around $37,000.
Ford Bronco: All new design for interior and exterior. First four-door Bronco. Base model starts at $34,000 for the four-door, and the two-door model starts at $30,000. You will probably have to wait until the spring of 2021.

How cool is that? Cooler yet is virtual reality (VR), which involves the use of computer technology to create a simulated environment. It’s a little like the Star Trek holodeck, but the experience is brought to you via wearable headgear. All you need is a VR system such as an Oculus to navigate through the Narrows in Zion National Park, walk through the Roman Forum, or visit Hawaii, to name a few destinations. A VR experience in Patagonia, for instance, even allows you to fly like a bird, soaring past waterfalls and over glacial formations. If Crater Lake in Oregon isn’t on your virtual reality bucket list, it should be. Take an immersive adventure around the lake that includes an interactive map. Jump to different locations and animated scenes depicting Mount Mazama’s massive eruption and the creation of the caldera, which holds the lake today. You can even interact with pop-up windows showing detailed information on local wildlife. Virtual experiences are not the same as the real thing, but they let you dream big, gain knowledge, and plan for the future. We won’t be stuck at home forever, and when you feel comfortable traveling again, your bucket list will be updated with some amazing new things to do and see.

HOMEMADE PASTA MAKES: 4 SER. | PREP TIME: 60 TO 90 MIN. COOK TIME: 2 TO 4 MIN. INGREDIENTS: 4 large eggs, room temperature | 2 ½ cups all-purpose flour | 1 Tbsp. olive oil | 1 tsp. salt, plus salt for water DIRECTIONS: ADD all ingredients to the bowl of a food processor with a normal blade. Pulse for 10 to 15 seconds until the mixture becomes crumbly. REMOVE the dough from the food processor and form into a ball. Place on a lightly floured, clean, flat surface. Knead the dough for two minutes using the palm of your hand to flatten the dough and then fold over, again and again until it reaches a smooth and elastic consistency. If the dough seems sticky, add a little more flour. You want it to be pretty dry. FORM into a ball and wrap tightly with plastic wrap. Let sit for 30 minutes. AFTER 30 minutes, unwrap the ball and cut into 4 equal wedges. Begin to work with one wedge while keeping the others tightly wrapped to prevent drying. SHAPE the wedge into a small oval. At this point, you can use a pasta maker attachment for your stand-up mixer or cut by hand. The following directions are to cut by hand. ON the flat, floured surface, roll dough into a long thin sheet using extra flour when needed to prevent sticking. Approximately 18 inches long and 3 to 4 inches wide. USING a pizza cutter or knife, cut the dough into preferred noodle width. Once all noodles are cut, gather and swirl into a little pasta nest. Repeat with remaining pasta wedges. TO COOK PASTA, fill a large pot with water and a generous amount of salt. Bring to a rapid boil. Place pasta into boiling water and immediately begin to stir. Cook until desired texture. HOMEMADE pasta cooks much quicker than store-bought. Al dente pasta typically takes about 2 minutes. Drain pasta and serve immediately.
DIRECTIONS: THAW roast and coat with 2 Tbsp. steak seasoning. Heat olive oil in a Dutch oven on high heat. Sear roast on all sides. Remove roast from pot and set aside. ADD 2 Tbsp. of chicken broth to the same pot and stir around with a wooden spoon to break up leftover beef and seasoning bits. Add vegetables and garlic to pot and cook, stirring occasionally, 3 to 4 minutes, or until vegetables are browned on edges. Add roast back to the pot. Cover with 4 cups of broth and COVER pot and cook on the stovetop over 2 Tbsp. steak seasoning. medium heat until you reach a low boil for 30 minutes. Turn heat down to low and simmer for 3 hours. Beef should be tender and vegetables soft. Serve warm.
TIPS AND TRICKS: Homemade pasta can be stored in the refrigerator for up to two days or frozen for up to two weeks.
TIPS & TRICKS: This same recipe can be cooked in the oven once the roast hits a low boil for 30 minutes. Remove pot from the stovetop and place in 250°F oven for 3 hours.
TATE FARMS STOVETOP POT ROAST MAKES: 4 TO 6 SER. | PREP TIME: 1 HR. | COOK TIME: 3 ½ HRS. INGREDIENTS: 4 to 5-pound beef roast (chuck, rump, pikes peak, 7 bone, arm) | 4 Tbsp. steak seasoning (preferably containing salt, pepper, garlic, onion powder, red pepper flakes) | 4 cups of beef or chicken broth | 2 Tbsp. olive oil | 2 Tbsp. minced garlic | 2 onions, quartered | 15 to 18 new or red potatoes, halved | 8 to 10 carrots, cut into large chunks | 4 celery sticks, cut into medium pieces

OVERNIGHT OATS MAKES: 1 SER. | PREP TIME: 10 MIN. | REST TIME: 2 TO 12 HRS. INGREDIENTS: ½ cup old fashioned oats | ½ cup milk | 1 Tbsp. chia seeds | 1 Tbsp. honey | ¼ tsp. vanilla extract DIRECTIONS: PLACE all ingredients into a glass container and combine. Cover container with lid or plastic wrap. PLACE in refrigerator for at least 2 hours or overnight. Toppings can be added the night before or upon serving. UNCOVER and enjoy straight from the container the next day. TIPS & TRICKS: Toppings for Overnight Oats are endless. Some favorites are peanut butter, Nutella, fresh fruit, jams, jellies, and nuts.
