The City’s website has a whole new look, with a lot of new ways to stay connected to what’s happening and take care of City business online. City staff spent the last year working on the redesign of mansfieldtexas.gov, tapping government website company CivicPlus to assist with the new design and implement more more user friendly features and expand the city’s digital communications effort. There’s a great tool called Notify Me where residents can tailor their online experience and get email, phone or text messages when City calendars are updated, when news stories are posted and when online newsletters are produced. There is also a new emergency alert system offering more efficiency, diversity and user control than the

previous system. Code Red is no longer active in Mansfield. So you will need to go online to https://www.mansfieldtexas.gov/312/Mansfield-Emergency-Alert-System and register an account on the new system. Once registered then select the group messages you want to receive and how you want to receive them. We believe the new website offers our residents a better online experience. We’re excited for you to try it out.

As we gather family and friends for Thanksgiving, may I share what I’m thankful for as Mayor of this great city: 1. I get to be Mayor where I grew up, a city of friendly people with a passion for family, philanthropy and fun. 2. Grand Prairie continues to add retail, restaurant and commercial development, including the recently approved Epic East Retail Center to begin construction in early 2020, with stores opening late 2020. 3. Main Event Entertainment Center opens early 2020 bringing family fun and more reasons to visit Grand Prairie. 4. Our new City Hall will open in December, linking

Don’t look now, Arlington, but fall is upon us. It’s the time of year to stop and reflect on all our blessings. Here in The American Dream City our cup runneth over. And there’s no doubt one of the main things that make this a place like no other is the people who call Arlington home. Dr. Moody Alexander is one of them. A popular local orthodontist, Dr. Alexander helped found the non-profit, EthiopiaSmile in 2010. Since then, the group has provided free dental care to several hundred Ethiopians each year, primarily orphans, widows, the elderly, and those with dental infections. This in a country of 80 million people with fewer than 100 trained dentists. During that time, Dr. Alexander and his wife, Emily, have adopted three children from Ethiopia, making them parents of seven amazing children who no doubt will follow the example of love and selflessness their parents

My Mayor’s Mentors program is matching mentors with kids on the Big Brothers Big Sister wait list, creating dynamic and positive relationships that will benefit our future. 6. In my final months, I came to the sad reality that my life really did have a fourth quarter and the clock really would run out on me. I took the time to convey some thoughts that reflect back on my rich and full life. I’ve long recognized the power of effective communication. That’s why in my later years I began to reflect on the many life lessons I learned along the way, and shared them with all who would listen. Fortunately, I found the young have a thirst for this message. Many times over the years, I was fortunate enough to speak at student commencement ceremonies, and that gave me the chance to look out into a sea of the future and share some of these thoughts with young minds. My favor ite of these speeches included my grandchildren in the audience. That way, I told them, I’d get the opportunity to start over, experience every opportunity America has to offer. It’s your shot now. Over the years, my staff got used to hearing me in a meeting or on the phone asking, “Whaddya got?” That’s probably what my Maker is asking me about now. Here’s my best answer. I left an undying love for America, and the hope it presents for all. I left a passion for entrepreneurship, and the promise it sustains. I left the belief that future generations can and will do better than my own. Thank you. It’s time we all move on.

AWAY IF YOU HAD JUST MINUTES TO LIVE, WHERE DO YOU THINK YOU WOULD GO WHEN YOU DIED? BY K AR E N WI LLIAMS ON
ooner or later, we are all faced with the reality that we don’t live forever here on Earth. My dad faced it in 2014. My mom is a Christian and took us to church at an early age. My dad—a great man, husband, and father—wasn’t. He was an engineer at NASA who was raised on a family farm in Yukon, Oklahoma. I came to know the Lord at the age of 12 and my dad made a rare appearance at church to come to my baptism. It meant the world to me. My mom told me that as they began singing hymns, he said, “I have no idea what any of this means.” Have you ever felt that way?

There were many people who touched my dad’s life, some who were good Christians— and others who claimed they were but didn’t act that way and really turned my dad against becoming one. My dad worked hard, saved his money, and could fix just about anything. When my parents moved to Rockwall and my mom began attending church at the First Baptist Church of Rockwall, Pastor Steve Swofford got to know my dad and took an interest in his workshop. Those little connections are so important. My dad respected Pastor Swofford, but still didn’t think that knowing or believing in God would ever be relevant to his own life. In the early months of 2014, my dad was diagnosed with cancer. It was in his kidney, his spine, and pelvis. We watched my dad try to tackle this problem with the same methodical precision as he would anything he needed to fix. But his cancer couldn’t be fixed. When you realize you are at the end of your rope, you will contemplate, if you never have before, what will happen to you when you die, heaven and hell. We will all live in eternity somewhere. My dad asked to meet with Pastor Steve and talk about it. Something in our conscience tells us there must be a Creator. If a tornado ripped through a barn and whirled up all the metal, would we expect after the tornado to see a perfectly made barn and tractor, with all the intricate details allowing the tractor to run and the barn to stand? Many assume that our intricate bodies, our intricate world, came about because of a big bang and so order came from chaos. But there was a designer for Mount Rushmore, a designer for the building you work in, and a designer for your teeth and jaw. I’ve studied as a dentist for 25 years and still can’t believe how amazingly intricate just a single nerve system for a tooth is. Have you ever seen a molar shaped tooth in the front of someone’s mouth? The tooth buds for our permanent teeth are already forming by twenty weeks after conception—the enamel, the dentin, the nerves that allow us to feel ice cold Blue Bell ice cream. And at around age six, that molar emerges in the mouth in
its usual molar spot. Is that not amazing? I can’t study things like that and not believe there is a Creator. So, on a magnificent day in July, my dad told Pastor Steve that he had always tried to live a good life. But he had had some bad thoughts. He had told some little lies. He had sinned— which is enough to keep us from a holy and perfect God who loves us so much He had his own, His one and only Son, given as the sacrifice for our sins so we could be with Him forever. My dad realized that day what sin was in its simplest form. My dad realized that day who God was. My dad realized that day that he owed a debt he couldn’t pay, just as none of us can. We can’t work enough, serve enough, live long enough, pray enough, teach enough, be kind enough to ever cancel that debt to God.

Thankfully, God made it easy. He said, “here is my Son.” Jesus paid our debt. And we all have equal access to Jesus Christ as our savior. He came for all of us. My dad prayed to God that day, asking Him to forgive him for his sin, accepting Jesus as the debt-payer. My dad realized he couldn’t save himself— but God provided his Savior. At the age of 78, after so many people prayed for my dad, he was saved.

Tell them who you’re shopping for and where their interests lie. My walking partner loves romance novels—I don’t. The bookstore owner recommended a beautifully illustrated copy of Breakfast at Tiffany’s that Kathy will love.

f ter tracking what I did with the number of hours I spent connected and online for a single week, I found myself shocked at just how much time I’d been wasting on well, nothing much at all. So I promised myself I’d explore the world around me and connect with nature, friends, and family instead of spending so much time behind a computer screen or hunkered over my smart phone. I tried it on while vacationing on a tropical island last year and was pleased to discover my stress level went from full throttle to almost zero. It felt like I had reset my soul—which led me to search for more getaways that I thought might encourage me to unplug. After comparing options, I settled on three destinations, each with its own unique allure.

The Colorado Ghost Town How could a ghost town be a great vacation destination? As it turns out, this once-forgotten 1800s mining town has been reborn as a rustic luxury resort called Dunton Hot Springs. An adventurer at heart, I couldn’t resist Ian Anderson’s Cave Branch Adventure Company and Jungle Lodge. With tree house suites available and situated in the heart of Belize in a pristine rainforest, the Lodge offers luxury accommodations furnished with locally sourced marble and hardwood furniture, “elegantly integrated into the surrounding nature.” My tree house room was as incredible as I imaged it would be, replete with stunning natural views and jungle sounds, including those of nearby howler monkeys. I enjoyed the modern comforts of air conditioning and hot and cold running water up in my awesome tree house.

Although Caves Branch Adventure Company and Jungle Lodge specializes in fun and exciting adventure expeditions, which do they warn are strenuous, guests are always catered to. Relax in the pool and hot tub and enjoy cheese tastings held in the botanical gardens. A soothing aromatherapy massage after cave tubing is a must!

OUR FAMILY PROVIDES THE MAIN DISH, a couple of vegetable sides, and a few drinks. Everyone else is invited to bring an appetizer, a dessert, a side, or drinks. There is no rhythm to the flow. People arrive and set their contribution on the large kitchen island. Ahead of time, I set out napkins, disposable plates, cups, and cutlery. I make sure the bathrooms and main areas are relatively clean and inviting. We briefly say a thankful prayer before the meal, being mindful that not everyone may be of the same faith. Everyone casually helps themselves and we all have meaningful conversations while the children play outdoors. That’s a typical day of gathering at the Chavez Household. I grew up in a family of seven plus an occasional dog. At the age of five, my father bought a home in Texas while he struggled with his professional life as a teacher. My mother, a stay-at-home mom, always made sure there were parties at our house even when finances were not looking good. However, the best events were at my grandparents’ home. Once school was let out for the holidays or vacations, we would drive up from El Paso to Colorado, where my mom’s side of the family had immigrated in the 60s. With an extended family of over 65, those celebrations became a learning opportunity. I saw people interacting and being there for each other. Traditions and customs of Mexican heritage were passed down at these gatherings. My grandparents passed away a few years ago in their early 90s, but even in their late years, they still enjoyed having people visit and made ordinary days into celebrations. I am so thankful that their fondness for congregation was passed down to me. Gathering with people over a meal has been the most meaningful and rewarding skill I have mastered as a citizen of this earth. Are you feeling disconnected? I encourage you to try it. Graciously welcome people to join you in this life. Who knows? One day we might end up at the same table sharing a meal.

SAFE SIDE If you’re one of the many who travels elsewhere for Thanksgiving, don’t risk bringing an extra bird—do your part by whipping up some take-along sides that’ll be sure to fly off the table, and delight your host too BY M E L I S S A TAT E
SEMI-HOMEMADE
TIPS AND TRICKS: For a “semi-naked” cake, run the flat side of a butter knife or cake scraper around the outside of your frosted cake, removing excess frosting. Don’t worry about it being perfect, naked cakes are meant to be rustic!
PUMPKIN SPICE CAKE
WITH CREAM CHEESE FROSTING MAKES: 1 CAKE | TIME: ABOUT 1 HOUR FOR THE CAKE: 1 box spice cake mix | 15 oz. can pumpkin puree, not pumpkin pie mix | 3 eggs | 1 tsp. cinnamon | 1 tsp. vanilla DIRECTIONS: PREHEAT oven to 350˚F. Spray a bundt pan, sheet pan, or two 8-inch round pans with nonstick spray. IN A LARGE mixing bowl, beat cake mix, pumpkin puree, eggs, cinnamon, and vanilla. POUR into prepared pan(s). Cooking times will vary—follow box instructions. BAKE until toothpick comes out clean. Allow cake to cool slightly then invert on cooling rack to cool completely. PREPARE frosting while cake cools. FOR THE FROSTING: ½ cup butter, room temperature | 8 oz. block of cream cheese, room temperature | 4 cups powdered sugar | 1 tsp. vanilla | 1 Tbsp. milk DIRECTIONS: BEAT butter and cream cheese together. Mix in powdered sugar 1 cup at a time until combined into frosting. BEAT in vanilla and milk. Add in more milk, a teaspoon at a time, if frosting is too thick. ADD in more powdered sugar, ¼ cup at a time, if frosting is too thin. FROST cake generously with cream cheese icing and serve. (For a two-layer cake, double the frosting recipe.)

CRANBERRY SAUCE MAKES: 8-12 SERVINGS | TIME: 20 MIN + COOL INGREDIENTS: 1 cup sugar | ½ cup water | 12 oz. frozen cranberries | ¼ tsp. ground cinnamon | ½ tsp. vanilla DIRECTIONS: COMBINE sugar and water in medium saucepan and bring to boil. ADD cranberries and cinnamon and return to boil. REDUCE heat to low then simmer 10 to 12 minutes or until mixture begins to thicken, stirring occasionally. REMOVE from heat once the sauce has reached ideal consistency. Stir in vanilla and let cool. SERVE cold or at room temperature.
TIPS AND TRICKS: Provide small ramekins for your guests so they can keep the cranberry sauce on the side as desired. OR Garnish with grated orange peel or fresh mint leaves to
give your sauce a fresh look and spicy flavor.

MACARONI & CHEESE MAKES: ABOUT 6 SERVINGS | TIME: 30 MINUTES INGREDIENTS: 12 oz. large elbow noodles | 1½ cups whole milk | 2 Tbsp. flour | 2 cups freshly grated extra sharp cheddar | 2 cups freshly grated medium sharp cheddar | 1 cup freshly grated Gruyere | 1 tsp. pepper | ¾ tsp. salt BRING 4 quarts of salted water to a DIRECTIONS: boil in a large pot. Add pasta and cook according to package. Drain, rinse with cool water, return to pot and set aside. PLACE 1 cup of milk in a medium saucepan and warm over medium heat. While milk is warming, combine ½ cup of milk and 2 tablespoons of flour in a small bowl, making sure there are no lumps. ONCE MILK BEGINS TO STEAM, ADD in mixture from small bowl. Whisk continuously until the mixture thickens, about 2 minutes. Turn heat to low and begin to add in cheese one cup at a time, letting cheese melt into sauce before adding more. Once all cheese is combined, add salt and pepper. Adjust to taste. Pour cheese sauce over cooked noodles and combine.
TIPS AND TRICKS: This macaroni and cheese can easily be finished under the broiler as well. Turn broiler on high, spray any size baking pan with cooking spray, transfer desired amount of finished macaroni into baking pan, and cover with grated cheese of your choice. Broil for 2 to 4 minutes, checking continuously. november 2019
