Census Day is April 1. Are you ready to be counted? In just a few days U.S. residents will receive Census forms in the mail with 10 questions that will tell us how many people are living in Mansfield and in our country. It’s safe to respond, and your information is private. For the first time you will be able to reply to the Census online. You can also reply by phone or by mail. The data collected is important to local communities like Mansfield. Population is used to determine Congressional representation and draw district lines. In the last Census, Texas gained four additional seats in Congress. It’s also used to determine funding for programs like Head Start and Community Development Block Grants, which we’ve used in Mansfield for

roadway improvements. Locally we use the data to see how Mansfield is growing and make decisions on infrastructure expansion. So when your Census form comes in the mail this month, please take five minutes and answer those 10 questions. We’re counting on you.

In March residents throughout the nation, including Arlington, Mansfield and Grand Prairie, will begin receiving mailed invitations to respond to the 2020 Census count. This year for the first time, residents may respond online and by phone, in addition to the traditional method of responding by mail. Responding to the Census is completely confidential and no responses are shared with any other agency or organization. It is important to be counted, as it determines your city’s federal funding and electoral representation. We encourage you to respond to the Census; promote the Census to your friends, associates, church families and philanthropic organizations; and assures others that responses are safe and confidential. No Census employee will ask for money, bank information, social security number or political affiliation. You will be asked a few simple

There’s no doubt that what makes Arlington great is the people who call it home and the neighborhoods full of friendly folks investing in our quality of life. Since 2007, the Neighborhood Matching Grant program has helped make those neighborhoods even better with a total of $933,725 in financial support for projects and activities to “enhance and beautify neighborhoods, improve neighborhood vitality and participation, and foster civic pride”. On Feb. 11, the Arlington City Council approved just over $100,000 in grant funds for this year’s projects proposed by seven neighborhoods across The American Dream City. In past year, grant money has been used to upgrade neighborhood landscaping, add pedestrian walkways, enhance neighborhood entrances, and more. We can’t wait to see this year’s improvements. If your project

A RLINGTON wasn’t chosen, don’t worry. You’ll get another chance to propose your ideas in August 2020, when the next call for projects will open for 2021’s grants. We want to say a great big “thank you” to the Petco Foundation who recently donated $35,000 to Arlington Animal Services which they plan to use in their feline spay and neuter program. The foundation has been raising money in Petco stores to fund its grant program. Arlington Animal Services applied for one of the grants and won. Animal Services Manager Chris Huff says the money will be used to spay and neuter 600 domestic or feral cats. The check also came with toys and treats for our Arlington dog and cat population.

W

HEN JERRY MCCULLOUGH RETIRED, after 43 years as a teacher, coach, principal, and superintendent in Arlington

ISD, he was open to the next thing God had for him. After much prayer and meditation, the Lord began to open doors for Jerry to serve our community—in multiple ways. At 66, he began a ministry to other retirees, helping them find fulfilling in giving to others. “I work to encourage men and women to serve in their churches but also serve within the many great non-profit organizations in our community,” Jerry said. “Serving others is mentioned numerous times in the Bible but the word ‘retirement’ is not. If men and women who are retired—or even still working—would devote themselves to serving others, what an enormous impact that could make on the Arlington/Mansfield communities.” Jerry is making that impact in many ways. The architype of a servant leader, Jerry helped Mission Arlington develop and coordinate the Mission Arlington Baseball Program, Mission Arlington Basketball Program, and actively volunteers at their annual Christmas store. He’s a volunteer pastor of Apartment Church through Mission Arlington and attends the National Young Life Camp each summer as an adult guest host. He’s the chairperson of the Salvation Army Advisory Council, the Red Kettle committee, Tarrant County Child Protective Services Board, and the Arlington Young Life Advisory Council. He’s a member of the Salvation Army Family Life Committee, the Arlington Dental Health Board, the River Legacy Foundation Board, the North Texas Higher Education Board, the Trinity Sports Foundation Board, and a Rotarian of the Downtown Rotary Club. When the time rolled around this year for Arlington-Mansfield YMCA to bestow the annual Bill & Shari Bowie Community Leadership Award, Jerry was a natural choice. The Bill and Shari Bowie Community Leadership Award was created to encourage volunteerism and to recognize local community leaders who’ve made a considerable impact through their donated time, talent, and financial resources.

THE CRITERIA FOR THIS AWARD ARE: • VOLUNTEERISM The award recipient’s volunteer activity helps to design and implement solutions and strategies to build sustainable programs and services in our community.

• SOCIAL RESPONSIBILITY The recipient’s efforts have a positive impact on many lives. Their generous donations have improved or changed important social issues in our community. They are leaders in our community who help to encourage and lead a culture of philanthropy and volunteerism.

• YMCA ADVOCACY The recipient is a cause-driven leader, a YMCA advocate, and someone who’s shown willingness to help advance the Y’s mission of youth development, healthy living, and social responsibility. Jerry certainly ticked all those boxes and, at 66, is still open and looking for the next area where the Lord wants to use him. Thank you, Jerry, for all you do to make this community—and our world—a better place.

Based on the book by Jim Dent, 12 Mighty Orphans follows the Masonic Home Mighty Mites, a ragtag bunch spurned on to play football by a World War I medic turned Temple High School football coach. Outweighed, out-supplied, and outmatched, the team went on to become an inspiration in trying times.

Dallas native Luke Wilson stars as that real-life coach, Rusty Russell, who was himself or phaned at a young age. In an attempt to make good on a vow he made to God while recovering from mustard gas during the war, he accepts an opportunity to mentor and coach a group of orphans in desperate need of leadership, encouragement, and support. “For me, t here’s not h i ng more impor t ant than authenticit y in making a movie,” said director Ty Roberts. “We’ve been welcomed with open doors here and are thrilled to be working with local crews and cast members to bring this incredible true story to life.” St a r r i n g w it h W i l s on a re f i l m legends Martin Sheen and Robert D u v a l l , V i n e s s a S h a w, Wa y n e Knight, and Treat Williams. H a rr i s , M D John Harris and Edward Mairura came to their love of orthopedic medicine via different routes. “During medical school, my uncle was diagnosed with osteosarcoma of the pelvis,” Dr. Mairura said. “I took him to his appointments at the Mayo Clinic and met his treating orthopedic surgeon, Dr. Michael Yaszemski. I was intrigued by his level of compassion for my family, knowledge, bedside manner, and communication skills. Dr. Yaszemski kept in touch with me and offered me the opportunity to work in his lab performing research. It was during this time I decided to become an orthopedic surgeon; to one day help people the way Dr. Yaszemski helped my uncle.” Like Dr. Mairura, Dr. Harris knew he wanted to practice medicine, to “help change people’s lives with new and exciting medical technology”. But it was an interest in woodworking, during his med school years, that sparks his interest in orthopedics. “I fell in love with orthopedics from the first case I saw that involved drills, screwdrivers, and tools that were just like the ones in my garage. It was fascinating, and I was hooked,” he said. While he is fellowship trained in sports and arthroscopy, Dr. Harris really enjoys performing shoulder and knee replacements, fractures “from top to bottom” and especially knee and shoulder arthroscopy, and treating injuries such as ACL and meniscus tears, rotator cuff injuries and shoulder dislocations. “I also take care of pediatric sports injuries and trauma,” he said. Dr. Mairura performs general orthopedic surgery with a special interest in trauma,

It’s designed to encourage academic gains and develop social-emotional skills during the summer months so students are ready to begin the next grade in the fall. “Every child should be – and needs to be – outdoors,” emphasizes Rodriguez, “because exploring and enjoying nature provides an ideal opportunity to learn life lessons. I’m running this year’s Boston Marathon to give this opportunity to as many children as possible.” Rodriguez may be doing the running, but everyone else can play a part in supporting

Ber ma n , M D Dr. Joseph Berman’s 38-year medical practice experience in Arlington has opened up new opportunities for his patients. He and his staff of nurses and therapists are all members of The International Cartilage Repair Society. His office and Arlington Orthopedic Associates have been designated an international teaching facility by the International Society of Arthroscopy, Knee and Orthopedic Surgery. As one of only a few designated centers of excellence in joint restoration in the US, the Joint Preservation Center, of which Dr. Berman is the founder and medical director, now has the opportunity to offer patients new research and techniques in joint maintenance and repair. Dr. Berman recently completed a select FDA study and trial of a new artificial meniscus implant – the NuSurface. (As seen demonstrated on the picture included) One of only 10 centers in the USA to offer this artificial meniscus, the “C-shaped” shock absorber in the knee, for patients who’ve lost their medial meniscus. The device, easily implantable as an outpatient procedure, can save years of wear on the joint and decrease or significantly postpone the need for future surgery by decreasing the relative risk of arthritis. Enrollment has now been completed and data is being collated to present to the FDA. The FDA, because of the promise this device brings to the market, has put the NuSurface on a fast track. It is hoped that the device will come to market by early 2021, being available to the general public, potentially revolutionizing meniscal surgery. This may be an exciting answer to the question

many patients ask “what are you going to put back in” after the medial meniscus is removed. Having completed one study, Dr. Berman has embarked on another FDA study. Using natural sea coral plugs, the study will show that articular cartilage can be encouraged to grow toward the coral plugs. This is one the first studies of joint and cartilage restoration in which the FDA is allowing us to treat osteoarthritis. All studies prior have addressed injury to cartilage; this study will allow cartilage and bone growth which may preclude the indication of partial or total knee replacement. A potential exciting biologic restorative alternative to metal and plastic in the treatment of arthritis. Medicine is rapidly advancing. Many innovative techniques in arthroscopy and joint restoration did not exist when he started his practice. As new procedures become available, Dr. Ber-

man is on the forefront of evaluating these options for his patients. It should have been no surprise to Diane Blaising’s family when she found her calling helping others live a better life through improved hearing. Way back in elementary school, it was a young Diane who wowed her classmates with a science project demonstrating bone-conduction hearing. “This was back when we had portable record players,” she says. “I took the record player to school, and instead of using the needle on the record, I had a sewing needle stuck into a pencil eraser. We’d hold the wooden end of the pencil between our teeth and place the needle on the turning record and could hear the record through our teeth and bones in our skulls. It’s not coming through your ear canals. It’s bone-conduction hearing.” The workings of the human auditory system haven’t ceased to amaze Diane. Now, as a board-certified doctor of audiology, she’s discovered she likes the human side of audiology even more than the medical/science side. “I love the patient contact and making a difference in the lives of my patients the most,” she says. After more than 24 years serving as an audiologist, the last 12 with her own practice, Dr. Blaising provides a source for total hearing care. “I want my office to serve as a resource center for everything hearing,” she says. “I opened Cityview Audiology & Hearing Aids because I wanted to do more for my patients. For instance, we offer a free aural rehab class for anyone who wants to learn coping strategies for people with hearing loss and their families. Raised in a farm town in Northern California, Cheryl White set out for the East Coast to pursue higher education. With a Ph.D. under her belt, she delved into neuroscience research in the laboratory. But she always knew she wanted to work directly with people, using science to improve their lives. And so she went back to school to earn a medical degree at Harvard. While assisting in a pediatric burn unit as a medical student, she found her calling. “The first surgery I participated in was releasing burn scars from a teenager’s underarm so that she could raise her arm for the first time since her injury. On that day, I knew I would be a plastic surgeon.” As a board-certified plastic surgeon, Dr. White carries out a wide variety of reconstructive and aesthetic procedures, including surgeries of the face, breasts and body. “The mix of reconstructive and aesthetic surgery is challenging and stimulating. study conducted by researchers from five universities: Harvard, Australia’s Western Sydney University, the UK’s King’s College London, Oxford University, and the University of Manchester. The overall conclusion of the study, published in World Psychiatry, is that we’re only in the preliminary stage of exploring this question and have much to learn about the online world’s impact on the brain. Trying to reach at least some tentative conclusions, however, the scientists focused on three areas: attention and concentration, memory, and social interaction. Attention and concentration The researchers looked at a common online activity, multitasking, and concluded that this practice may well limit our ability to concentrate on completing specific tasks, both online and off. Memory Before the Internet, people had to store facts mentally, but now we can depend on the Internet for unlimited factual content. 5 Tips for Spending Less Time Online A recent study found that we spend about 50 hours a week on our online devices, approximately 30 percent of our lives. When you add to that the time spent working, commuting, and sleeping, there’s little left over for things like hobbies and interacting with friends and loved ones. If you’d like to spend less time staring at electronic screens, these five tips should help.

1. TURN OFF THE DEVICE ALL TOGETHER. Be proactive about simply turning it off, especially at home. You’ll be less likely to check email and social media notifications every few minutes.

2. LIMIT SOCIAL MEDIA. Unfortunately, social media c a n de vou r hou r s of t i me , so if you have f ive or more accounts, consider deleting some of them or uninstalling their dedicated apps.

3. LIMIT SMARTPHONE APPS. You’ll probably never ditch your smartphone in favor of a land line, but at least think seriously about limiting the number of apps that draw you to that miniscule screen.

4. GET OUT OF THE HOUSE. Modern technology allows us to connect easily and freely with others, but there’s nothing better than actual contact with good friends and loved ones.

5. GET INVOLVED. Join a civic club, a church, or a little theater group. Volunteer at a hospital, food pantry, or animal shelter. If actively involved in activities you enjoy, you’re less likely to be glued to a computer screen. The benefit of less screen time? Diabetic retinopathy occurs when the retina’s blood vessels become leaky. It will cause dark spots or floating string-like objects to appear in your line of vision. Glaucoma This slippery and asymptomatic disease causes gradual vision loss. Unfortunately, most people don’t realize they have glaucoma until it’s too late. The condition occurs due to abnormally high pressure in the eye that damages the optic nerve. Fortunately, glaucoma can be monitored by having a air puff test. If glaucoma is discovered early on, vision loss can be slowed down and in some cases prevented. Depending on the severity of the condition it can often be treated with eye drops and medication. In some cases, you might need laser surgery to control the pressure. You can reduce the risk of these three conditions by making lifestyle changes. Opt to exercise regularly, eat a healthy diet, and refrain from smoking. Cataracts Imagine walking around with sunglasses on that have a film over the lens and you’ll get a sense of what cataracts are like. Objects tend to appear cloudy and fuzzy. It occurs when protein clumps build up on the eye lens and obscure vision. Luckily the condition can be treated with a 15-minute procedure. Remember to value your vision and the gift of sight! And make annual eye exams a priority.

That’s why you need to find an agent you can trust, and hang onto them. A real estate professional who knows the ropes can get you the greatest value for your home when you sell, the best bang for your buck when you buy, and can help you keep transaction costs down when buying or selling. Your real estate agent will be your advocate throughout your home purchase or sale—your face, your voice, and your defense throughout a process that can be highly personal and mind-blowingly complex. Someone who understands the ins and outs of your unique real estate market can remove much of the stress from the process by anticipating complications and heading them off before you even know about them. exans wax poetic about the splendor of bluebonnets, but opinions vary about the best place to see them, and it can change from year to year. Many folks claim to know

an out-of-the-way patch undiscovered by throngs of bluebonnet seekers, and if you’re lucky, they’ll share their secret. For those of us who aren’t privy to this information, you can spot them from Lake Texoma to Big Bend, but the Hill County is generally considered bluebonnet central. Each year, thousands of people descend upon the area to soak in azure fields of bluebonnets in all their glory.

Hill Country Bluebonnet season in Central Texas, which usually peaks in early April, supplies the perfect reason for a Hill Country getaway. There are a few areas for bluebonnet viewing that are particularly popular. Known for its wineries, antique shops, and German heritage, Fredericksburg is a great place to see bluebonnets and view extensive wildflower fields. Be sure to visit Wildseed Farms, seven miles east of Fredericksburg, to capture the ultimate wildflower selfie. If you fancy a drive amidst rolling hills popping with color, head out of town on Texas North State Highway 16 to Llano. Burnet, around 55 miles northwest of Austin and officially recognized by the Texas legislature as the Bluebonnet Capital of Texas, is another place to start our bluebonnet drive. If you love a good reason to celebrate, and who doesn’t, the town goes all out during their annual Bluebonnet Festival. Hailed as “the most exciting smalltown festival in Texas,” it’s held the second weekend in April. After you’ve checked out Burnet, head south for 13 scenic miles on US 281 to Marble Falls. A bluebonnet map, updated daily, is displayed in the visitor center, taking the guesswork out of where to find the showiest blooms. If you want to snap a postcard worthy photo that’s sure to impress, the famous Bluebonnet House in Marble Falls may just be the perfect spot. While in Marble Falls, why not pop into the Bluebonnet Café for a slice of one of their delectable

home baked pies? If you’re there on a weekday, pie happy hour runs from 3 PM to 5 PM. Closer to Austin, Muleshoe Bend Recreation Area in Spicewood offers another oppor tunity to spy your favorite springtime f lower putting on a show. Bluebonnets can cover the entire park, which runs along the south side of the Colorado River on western Lake Travis. Pack a picnic lunch. Relax and enjoy the scenery! Closer to DFW Just 35 miles south of Dallas, the official 40-mile Bluebonnet Trail begins in Ennis, Texas. Get your trail map in April at the Ennis Visitor Center or search online and download one. The town pulls out the stops during their annual Bluebonnet Trails Festival. Held this year on April 17, 18, and 19, you’ll enjoy arts and crafts, food, wines, live music, and kids’ activities, making it fun for the whole family. North of Dallas around Lake Texoma is another good location to find bluebonnets. They often spread as far as the eye out at the Denison Dam, also known as Lake Texoma Dam. And on FM 423 next to the historic Zion Cemetery in Frisco, the hillside is usually blanketed in bluebonnets. Closer to Houston Brenham, nestled in the Hill Country foothills between Houston and Austin, boasts some incredible views of bluebonnets and other wildflowers. Look for the Wildflower Watch on the town’s website and learn about the best spots

ICONIC HILL COUNTRY DRIVE Willow City Loop, a 13mile, narrow two-lane private ranch road, is considered by many to be the quintessential bluebonnet drive in Texas. Here, nestled amongst rugged hills, valleys, and creeks, are stunning bluebonnetfilled meadows. You can also see phlox, firewheels (Indian blanket flower), Mexican poppies, and daisies along the way. Please be courteous of private landowners and do not trespass or block the road to take pictures. To get there, search for “Willow City loop map” to pull up a map.

If you’re up for a scenic drive, fields of flowers can be seen around towns surrounding Brenham such as Chappell Hill, which calls itself “the heart of Bluebonnet Country,” Burton, and Independence. Bluebonnet patches may also be spotted in Houston area parks. To name a few on the list—Buffalo Bayou Park, Spotts Park, Rob Flemming Park in The Woodlands, and Terry Hershey Park in Memorial. Out near Sugarland and Katy, blooms can be found in Blessington Farms.

Big Bend National Park Can’t wait until April to see bluebonnets? A different species of bluebonnet than that found in Central Texas blooms through early March in Big Bend. You may also enjoy cacti blooms and clusters of red ocotillos around this time of year or a bit later. We hope this brief list of places to see bluebonnets inspires you to hop in the car and take a road trip that promises unforgettable views. If possible, go during the week. Even backroads can get crammed with vehicles full of fellow bluebonnet lovers on the weekends.

Rodeo’s humble roots and timeless appeal By Mimi Greenwood Knight

C

an there be anything more Texan than rodeo?

Though the sport is iconic in our fair state, its origins actually trace back to Spain, the Spanish nobles who brought it here in the 1800s, and the early ranchos who blew off steam demonstrating their riding and roping prowess for one another. One can imagine they’d be flabbergasted to see how it’s evolved. Today’s rodeo—performed by pro athletes with huge stakes in arenas of tens of thousands of fans and full coverage on ESPN—has come a long way. During the late 1700s and early 1800s, as the new American cattle market grew, so did the need for skilled horsemen. Many of the men running the Spanish missions that then dotted the Texas landscape were descended from Spanish nobility and trained in the celebrated skills of horsemanship and roping. They passed these skills on to their workers, known as “vaqueros.” When mission lands were converted to privately owned ranchos, the vaqueros found work running cattle and managing the rangelands, becoming the first American “cowboys.” When the U.S. took these lands from Mexico in 1848, the vaqueros continued their work, now alongside American counterparts, with whom they shared their equestrian traditions.

Hello, Cowboy Each year during the annual roundup and branding of cattle, these vaqueros-turned-cowboys enjoyed displaying their horsemanship and roping skills for one another. Men being men, demonstrations soon turned into competitions. And the rodeo was born. As the ranks of American cowboys grew, so did the events. But when railroad stock cars replaced cattle drives and open rangelands were divided up and fenced off, those same cowboys were forced to seek other livelihoods. Yet the American rodeo tradition lived on with stock horse shows held in small towns throughout the west, offering cowboys the chance to supplement their now shrinking income. Clever showmen like Buffalo Bill Cody elaborated on the events, turning the America’s fascination with the “Wild West” into a lucrative business that would continue for many years. Those who were making their living through rodeos wanted to standardize the events and establish rules and regulations for the safety of competitors and animals. The Professional Rodeo Cowboys Association (PRCA) was established in 1936, instituting rules about safety, judging, and distribution of prize money. Today, the National Finals Rodeo is viewed by millions with standardized events such as bareback riding, steer wrestling, team roping, saddle bronc riding, calf roping, and bull riding. Many rodeos also include barrel racing, often dominated by female equestrians, while today’s stock horse shows revolve around the disciplines of reining and cutting, and usually include amateur riders as well as professional trainers.

The Houston Rodeo The Houston Livestock Show and Rodeo (HLSR) began in 1931 (under the name The Houston Stock Show and Livestock Exposition). The downtown rodeo parade was added in 1938. In 1942, cowboy entertainer Gene Autry was the first rodeo entertainer. And the rodeo was broadcast live—on pay-per-view—for the first time in 1992. Since its genesis, the show has not only survived wars and recessions but has awarded over $40 million to youth scholarships. Now the largest livestock and rodeo show in the world, it’s played host to famous entertainers ranging from Elvis Presley to George Strait, Kenny Chesney

A few highlights are a mutton bustin’ event where five- to six-year-olds cling onto the backs of sheep, a calf scramble with substantial prize money for teens, and food you won’t find anywhere else. We’re talking chocolate-covered jalapeños and giant pickle-stuffed corn dogs. There’s also a barbeque eating competition and a rodeo wine show. Over 300 vendors will be there selling cowboy boots and hats, farm gear, and more. It’s no coincidence the rodeo is scheduled during the peak of Houston’s azalea season. The town will be alive with color and the weather will be a delightful 70 degrees. See you at the arena!

Give the list to someone you trust and update it if things change.

Get or update your will. The right type of will saves your family time and money and gives you peace of mind knowing your wishes will be followed. While you’re at it, look into creating a power of attorney and a living will. A living will is a legal document that sets out your healthcare wishes in the event you cannot articulate them yourself. Power of attorney gives legal authority to another person to make property, financial, and other legal decisions for you.

Review your insurance beneficiaries. Make sure your designated beneficiaries are accurate and the distribution among individuals still reflects your wishes.

Life insurance. Work with an insurance advisor who will help you determine how much coverage you need and can afford, and what type of life insurance is right for you. If you already have a policy, schedule a review. Situations change. Your current coverage may not be sufficient.

Long term disability insurance. Disability can happen to anyone—an auto accident, a bad fall, a debilitating illness—we’re all vulnerable. Long term disability insurance can protect your income and your family’s financial well-being in the event you can’t work.

Long term care insurance. If you don’t have it, it’s time to seriously consider this type of insurance. It protects your nest egg (and/or your family’s potential inheritance) by covering many of the costs of a nursing home, assisted living, or in-home care which aren’t covered by Medicare.

If something were to happen to you in the blink of an eye, do you have a plan in place to protect your family? There are a few things to consider now which can give you peace of mind.

Homeowners, auto, and umbrella insurance. Review these policies with your agent to ensure your coverage will adequately pay for damage and protect your assets in the event of a lawsuit. For example, if you add a teen driver to your auto insurance policy, consider increasing your umbrella policy. With umbrella coverage, you can add $1 million or more to your auto and homeowner’s liability coverage, generally for pennies on the dollar. TIPS AND TRICKS The key to good Frito pie is good chili. This chili recipe can be made ahead of time and kept on warm in a slow cooker. Guests can assemble their own Frito pie at meal time! Add Fritos to a bowl, then top with chili, cheese, and any other desired toppings.

FRITO PIE BAKE MAKES: 6 TO 8 SERVINGS | TIME: 1 HOUR + 15 MINUTE BAKE INGREDIENTS: 2 lbs ground beef | 2 cups chicken broth | 14 oz. can diced tomatoes, with juice | 2½ tsp. dried onion | 2 tsp. paprika | 2 tsp. cumin | 1 tsp. garlic powder | 1 tsp. salt | 1 tsp. oregano | ½ tsp. cayenne pepper | 1 cup chili powder | 28 oz. Fritos corn chips (2 bags of 14 oz. each) | 2 cups shredded cheddar cheese | sour cream | green onions, diced DIRECTIONS: PREPARE chili by browning beef over medium heat in a large pot, then drain and return to stove. STIR in chicken broth, tomatoes, and all dry seasoning. Taste and adjust seasonings as needed. Simmer on low for 45 minutes to 1 hour, stirring occasionally. In the last 10 minutes of the chili cooking, preheat oven to 400 ˚F. SCATTER Fritos on a 9”x13” casserole dish and set aside. Once chili is ready, pour over Fritos. You can use all of the chili or your desired amount and refrigerate leftovers. SPRINKLE cheese on top of chili and bake 15 minutes or until cheese is melted. Let set 2 or 3 minutes, then top with green onions and sour cream.

LIME MARGARITA MAKES: 1 SERVING | TIME: 5 MINUTES INGREDIENTS: 1.5 oz. tequila (we prefer Dulce Vida because it is a Texas brand) | 1 oz. fresh squeezed lime juice, about 1 or 2 limes | 0.5 oz. blue agave or simple syrup | 1 cup ice | salt | fresh lime wedges DIRECTIONS: POUR ice into medium glass for mixing. Pour tequila, lime juice, and blue agave or simple syrup into glass. STIR or shake to combine. Set aside. Prepare margarita glass by running a fresh lime wedge around the rim and coating it in salt. POUR margarita into salt rimmed glass. GARNISH with a lime and enjoy! FUN FACT: The world’s first frozen margarita machine was invented in Dallas in 1971 by restaurateur Mariano Martinez.

PECAN PIE MUFFINS MAKES: 30 TO 34 MINI MUFFINS TIME: 30 MINUTES

INGREDIENTS: 1 cup brown sugar, packed | ½ cup all purpose flour | 2 eggs, beaten | 2/3 cup butter, melted and completely cooled | 1 tsp. vanilla | 1 cup chopped pecans DIRECTIONS: PREHEAT oven to 350 ˚F. Spray mini muffin pan with nonstick baking spray. MIX flour and brown sugar by hand in a mixing bowl. Add eggs, butter, and vanilla. Mix by hand until completely combined. STIR in pecans. Fill each mini muffin tin with 1 Tbsp. of mixture. BAKE 20 to 22 minutes or until golden brown around the edges FUN FACT: This recipe is our twist on pecan pie, a Texas original! My husband’s grandmother made this recipe for every special occasion in her home and it is now our go-to for an easy dessert. Serve a few muffins with a scoop of ice cream and you are set!
