Who doesn’t love old-style Christmas ham? Seriously, they are delicious - perfect on your plate next to some potato salad, roast lamb and pretty much any side dish in existence. But every year the Christmas ham seems to be the gift that keeps on giving, with leftovers well outlasting their due by date.
Fresh meats bourbon maple mustarD GlazeD ham Ingredients:
✩ 10-12 kg Fresh Meats Double Smoked Christmas ham
✩ ½ cup maple syrup
✩ 4 tbsp Whole grain mustard
✩ 1 tbsp bourbon
✩ 1 tbsp Whole cloves
✩ ½ cup brown sugar
✩ 2 sprigs fresh rosemary

1. Preheat oven to 170°
If you hate seeing delicious food go to waste then why not try giving this ancient trick a go.
2. Cut rind below the hock and peel off. With knife tip, lightly score fat in crosshatch pattern roughly 2cm by 2cm
First and foremost, be sure your fridge temperature is below 4°C. If your fridge has cool patches wedge the ham in these areas. The colder the temperature the longer your ham will last.
3. Stud each square with cloves 4. Place ham in large roasting pan and bake loosely covered with foil 5. Combine brown sugar, maple syrup, bourbon and mustard in bowl. Whisk until smooth 6. Check ham after 2 to 2½ hours. When thermometer inserted in centre of thickest part (not touching the bone) registers 60,° generously glaze on all sides 7. Bake for 30 minutes, reglaze and return to oven for another 30 minutes 8. Ready to cool, carve and serve
To ensure your ham doesn’t dry out in these ‘chilly conditions’, wrap the leftover meat in a clean moist tea towel. When dampening the tea towel add a splash of vinegar. This is where many people go wrong. Wrapping a dry tea towel around the ham won’t protect it from the temperature – the moistness combined with the vinegar will seal in the freshness. After you have wrapped your ham place the entire bundle in a re-usable seal bag or alternatively a clean pillow case. Be sure to change the tea towel and bag or pillow case every couple of days! Follow these simple steps and your ham has no chance of outlasting your stomach. It’ll stay fresh for weeks to come –ensuring you get to eat every last bit.

❄ When buying whole fish pay close attention to the eyes and scales. Freshly caught fish will have shiny eyes, so if you notice they are dull or cloudy there’s a strong chance the fish has been sitting there for a while. The same goes for the skin, the fresher the fish the shiner the skin and scales will be. ❄ It can be overwhelming, especially in a fish market but seafood should always smell fresh. The unfavourable ‘off’ smell is not a sign of good seafood, like any other meat product it is an indication the product is old.
❄ Similar to steak, fish meat should be dense and springy. If a fish feels soft, gooey or mushy, trust us, it will not bring you Christmas glee.

In the month of December often we see the prices of prawns rise significantly, especially in larger grades like the popular King Prawn. This year to bank a buck try buying your prawns early. If done correctly, frozen prawns can be just as fresh and tasty as unfrozen varieties. So, clear out some space in the freezer and stock up everybody!

Christmas is all about giving but for many Sunshine Coast residents, it’s not about presents and toys, it’s about giving back to the local community. It’s a busy season that seems to overload everyone’s schedules but finding time to lend a helping hand is what makes the holiday so special. Here are just a few examples of how you can help spread Christmas joy.
a Festive Feast While volunteers from Oz Harvest dedicate their entire year to feeding our region’s homeless and disadvantaged, during Christmas time that work becomes all the more special. Many homeless individuals often feel isolated from their family or the surrounding community and during the holidays that disconnection can intensify. That’s why throughout the Christmas period Oz Harvest ramp up the campaign asking the Sunshine Coast community to donate non-perishable food items. The more items they can get, the more meals the organisation can provide to help those who may not get to enjoy that Christmas Day feast feel loved and included. In the four years since its beginning, the charity has re-distributed more than 200,000 kilograms of food in the local region, which is equivalent to around 600,000 meals – that means a whole lot less hungry residents and a whole lot less wasted food. This Christmas get involved with the Oz Harvest’s annual food drive. Drop off locations are situated at the Noosa Civic Shopping Centre’s Little Community Pantry, as well as the organisation's headquarters at 1/39 Dacmar Road, Coolum Beach. But at Christmas time, when everyone seems to be on holiday with enough spare time to clear out their homes and wardrobes, the donations flood through the doors of shopfronts all around the country. And like everyone else, Vinnies volunteers treasure the festive season and take the opportunity to spend extra time with their families. This creates a new opening for the not-for-profit to welcome new volunteers on board. By volunteering over the Christmas period, individuals can meet other like-minded friends and enjoy the festive spirit along with the fun and frivolity that the season brings to many. FeelinG the Festive spirit? The Sunshine Coast hosts an abundance of not-for-profit organisations that contribute to the local community and what better time to get involved than Christmas? Volunteer cooking meals for the homeless, care for the disabled or get involved in environmental conservation– whatever it is that you feel a connection with, there is a group awaiting your help. Volunteers can find the best organisations to suit their interests through Volunteering Sunshine Coast. Volunteering Sunshine Coast operations manager Mark Hancock said the organisation ensures that other not-for-profit charities comply with legislation related to volunteering, so its members are always safe and covered while donating their time. all wrappeD up In Nambour, during the Christmas season members from the local Lions Club inhabit every shopper’s worst nightmare – the mall. From December 10-24, volunteers donate their time to wrap the presents of gift-buyers in return for a small donation. This saves Christmas in two ways. One, shoppers are relieved from the harrowing task of making an oddly-shaped, bumpy, awkward present look tree worthy, and two, they raise funds for local charities at a time when they need it most. Last year volunteers from the Nambour Lions Club raised nearly $3,000 for the Sunshine Coast Leukaemia Foundation that supports local patients who need to travel to Brisbane regularly for treatment. Aside from the satisfaction of helping others, Nambour Lions president Dawn Hebblewhite said many of the members get involved with the initiative simply because they have a great time. “It makes it feel like Christmas doesn’t it?” Dawn said. “The people we meet are very interesting and we all end up having such a fun time, by the end, we’re a little family. “I'd like to thank the Nambour Plaza who donate all our supplies to us.” Shopping centre visitors can also stock up on Christmas goodies when visiting the wrapping stall, as members sell their own Christmas cakes with the funds goingg directlyy into communityy projects run by the club. ✩ 2 large egg yolks
✩ ⅛ tsp clove powder
✩ 1 whole large egg
✩ ⅛ tsp nutmeg powder
✩ 1¼ cup milk
✩ ½ tsp cinnamon powder
✩ 6 tbsp sugar ✩ ½ tsp vanilla
✩ ¾ cup milk or heavy cream to add later ✩ Chai mix
✩ ¼ tsp ginger powder
Method: 1. In a saucepan, add the milk and spices and let the mix come to a simmer while on medium-low heat. Do not let it boil. 2. In a bowl, add the egg yolks and the whole egg, beat for one minute. Add the sugar and vanilla and beat until fluffy. 3. Tamper the egg mixture by adding the milk mix slowly while whisking. Pour the whole milk mix and continue whisking. 4. Return the egg and milk mixture to the saucepan and keep whisking while on medium heat for 3 minutes. The mixture is going to get thick. 5. Remove from heat and strain through a strainer. Add ¾ cup of milk or heavy cream and mix well. Let it cool completely and then refrigerate. 6. Top with a sprinkle of chai mix. ✩ ¾ cup rolled oats
✩ ¼ cup apple sauce
Peanut Butter Glaze
✩ ¾ cup wholemeal spelt flour
✩ ¼ cup rice bran oil
✩ 1 tbsp rice malt
✩ 1 tsp vanilla extract
✩ ¼ cup natural smooth peanut butter
✩ ¾ cup almond meal ✩ ⅓ cup cocoa powder ✩ ½ tsp salt
✩ ¼ cup rice malt syrup ✩ 1 tbsp stevia powder
✩ Pinch of salt
✩ 1 egg lightly beaten
✩ 1 tsp baking powder ✩ 1 tsp baking soda ✩ ½ cup almond milk Method: 1. Preheat an oven to 180C (fan-forced), line a large cookie tray with baking paper. 2. In a food processor place the oats and grind until a fine flour is formed. Tip the oat flour into a large bowl along with the spelt flour, almond flour, cocoa, salt, baking powder and baking soda. Give a quick stir to incorporate the ingredients together. 3. Gently heat the rice malt syrup in the microwave for 20-30 seconds until it is runny. Add to the dry ingredients along with the apple sauce, oil, vanilla, egg and almond milk. Mix the ingredients together until a stiff dough is formed. Let the mixture sit for 5 minutes to firm up. 4. Place the mixture into a piping bag with a large end. 5. Pipe donut size circles onto the lined cookie tray. Smooth any edges or bumps on the top with a spatula. Place into the oven and bake for 10-12 minutes or until a skewer comes out clean. Let the cookies completely cool before icing. PEANUT BUTTER GLAzE 1. In a microwave safe bowl add the peanut butter, salt and rice malt syrup. Heat in the microwave for 30 - 40 seconds or until runny enough to drizzle. 2. Method: 1. Melt the white chocolate and coconut oil in a saucepan until smooth. 2. Add the rest of the ingredients and mix until well combined. 3. Christmas a I love everything about Christmas – the heat, the carols, friends and family coming together and the sense of giving, but my absolute favourite part is styling my home for the festive season. Come November every year, it’s time for a “practice run.” I set up our formal dining table with Christmas love, festive cheer and everything fabulous preparing for Christmas Day. We’re now just

one month out from the big day, so if Christmas styling is hot on your agenda, here are some tips! Select a colour scheme. Choose a colour that is in keeping with the style of your home. This creates a beautiful consistency from your dining table, to your tree and throughout your home without feeling disjointed. Personally, I love to mix gold and silver with one or two feature colours and this year I’m using navy and turquoise to complement my Hamptons style home on the coast. Layer colours, patterns and textures. An example of this would be your tablecloth, placement, the plate itself and any décor sitting on top of your plate - make sure there are no two colours or patterns sitting together. This takes a little forward planning but I promise you’ll be satisfied with the result. If you’re looking to introduce a certain style or theme to your festive decorating, patterns, in particular, are a great way to add interest to your arrangement. “Keep it fair and make it square”. When you’re entertaining for the masses it’s important to ensure each individual setting is even. By keeping each place setting within a square or rectangle not only looks great but allows each guest their own small piece of real estate.
Create a beautiful centrepiece that will act as the focal point for your table setting. Place smaller décor items along the table to compliment the centrepiece and tie everything together by strategically placing quality garland and baubles. Replicate the colour scheme from your table to your tree, again separating the colours between tinsel, fairy lights and ornaments. Large bows, thick tinsel and feature ornaments are on trend this year so have fun and even match your gift wrapping to your tree for bonus styling points. Decorating your home for Christmas doesn’t need to be expensive. Fill empty coffee jars with chocolates, glass vases with candy canes or Christmas décor and recycle paper and boxes where you can. Once you’re satisfied with your beautiful styling, take a photo and give yourself a pat on the back. When the family arrives and trashes your home within seconds, just remember to enjoy your day and don’t worry about it.
