Serving up a
SWEET FESTIVE SEASON By JOSIE ADAMS

As we head towards the end of a year like no other, Deputy Mayor Geoff McDonald and his wife Lisa are looking forward to spending time with family.
W
hile December is usually heavily sprinkled with festive events and engagements for the McDonalds, this year has served up a different kind of Christmas day. “Lisa and I enjoy catching up with friends and family and attending community events that celebrate where we live,” Geoff says. “And we are grateful that organisers have, where possible, reimagined their events to ensure they are COVID safe and go ahead. “However, the COVID pandemic has meant that we have not seen all of Lisa’s family in person since March, so simply getting together this year will be special.” It will also be a time where Geoff can enjoy his newfound iso-hobby of baking. “Each new year I set myself a challenge to learn something new, but to be honest baking wasn’t originally it,” he says. “Lisa is a fantastic cook and can whip up a batch of freshly baked biscuits in minutes.” His first attempt at baking started early in the pandemic shutdown. “Lisa had bought kilos of apples by accident and I decided to make an apple pie,” he explains. Geoff shared his creation as the ‘photo of the day’ on his Instagram account with the hashtag #sticktogether. He was surprised at how well the post was received. With encouragement from the Queensland Country Women’s Association Oakey branch, he started a weekly baking challenge. “There is something very rewarding about providing something others gain enjoyment from.

“Some challenge recipes have been handed down through the generations from my nanna to Mum or my aunties then me. “Baking became a way for me to personally connect and check in on neighbours, friends and vulnerable members of our community.” Geoff says his personal favourite and most challenging bake to date was a lemon meringue cheesecake. “It proved so popular; I made a couple of them. “There have been a few flops along the way,” Geoff says, laughing. “I was quite selective as to who would receive these.” Local ingredients were used where possible to encourage the Toowoomba Regional Council’s commitment to supporting local producers and businesses. “It has been a challenging year for so many in our community; from not being able to be with unwell family members through to the stress of financial pressures from business downturn or suddenly finding oneself unemployed,” Geoff says. “One of the best things about challenges, though, are the opportunities they can bring. The community deserves credit for the way in which we have supported each other during 2020 and is reflective of the wonderful individuals and organisations in our region. “I say this often - we are blessed to live in the community we do. “My personal hope is that 2021 is a year overflowing with moments that create happy memories for everyone in our community.”

MINI BLONDE CHRISTMAS CAKES To find this recipe and other great recipes visit myfoodbook.com.au INGREDIENTS 200g dried apricots, chopped 150g dried apples, chopped 100g dried pears, chopped 50g sultanas 1/4 cup chopped glace ginger 440g can crushed pineapple, undrained 3/4 cup sugar 125g Western Star Salt Reduced Butter 1 teaspoon mixed spice 3/4 teaspoon cinnamon 3/4 teaspoon ground ginger 2/3 cup roughly chopped macadamia nuts 1 teaspoon bicarbonate of soda 2 eggs, lightly beaten 1 cup self raising flour 1 cup plain flour 2/3 cup macadamia nut halves, extra 2 tablespoons honey 20g Western Star Salt Reduced Butter, extra, melted METHOD
1. Combine dried fruits, ginger, pineapple, sugar, butter and spices in a
saucepan and bring to the boil stirring occasionally. Simmer for five minutes.
2. Remove from heat and stir in macadamia nuts and bicarbonate of soda. Allow to cool.
3. Line the sides and base of eight one-cup capacity dariole moulds with
baking paper. Stir eggs and flours into fruit mixture and spoon into the moulds. 4. Bake at 160°C for 45-50 minutes or until golden and cooked when tested with a skewer. 5. Combine remaining macadamia nuts, honey and butter and spoon over each cake. Return to the oven and bake for a further 8-10 minutes or until nuts are golden. Cool in moulds before turning out carefully.

Christmas Wonderland: reimagined hits the streets

Following the disappointment of locals after news their beloved Christmas event had been cancelled, community groups banded together to resolve the issue, and bring on the festive cheer.
I
t’s been a rocky year for the region, so when news broke about the cancellation of the Christmas Wonderland, Toowoomba locals didn’t hold back in showing their disappointment. Calls of “Christmas is cancelled” and “2020 strikes again” stuck with the Toowoomba Regional Council and the Toowoomba West Lions club, so the two groups banded together to re-purpose the popular event. Christmas Wonderland will now be taken beyond the Botanic Gardens into the streets of the CBD with a new, reimagined event. Christmas Wonderland: Reimagined will see shopfronts and the streets of the city lit up with Christmas lights and festive displays in a move that will sustain the event in a physically distanced, COVID-safe way.

The event will also stretch to smaller towns in the region. Towns like Cecil Plains, Crows Nest and Millmerran will also share in the festive joy by creating their own Christmas displays. Toowoomba Regional Council Deputy Mayor Geoff McDonald said the new event would be a boost to the economy if local businesses chose to take the opportunity. “One of the great advantages of highlighting the CBD, whether that’s in Toowoomba or in the townships, is that it will hopefully bring people into those areas that may not necessarily have gone out in the evenings or gone to at all. “This has an opportunity for retailers to
benefit from this. “I really think there’s an economic advantage for businesses if they grasp it.” West Toowoomba Lions member and project chair Marshall Cox said the Lions Club felt they needed to repurpose the event due to its popularity. “The community was going to miss out on so much this year we needed to see what we could do to bring some joy back into the community,” he says. The event will still raise vital funds for the Toowoomba Hospital Foundation, Toowoomba Hospice and Lifeline Darling Downs and South West, however donations will be acquired digitally instead of a gold coin dropped in a tin. Toowoomba’s Christmas Wonderland: Reimagined in partnership with Toowoomba Chamber of Commerce, Toowoomba Regional Council and Grand Central will light up the Toowoomba CBD from 7pm to 10pm each night of December.

ot even a pandemic can put the brakes on the city’s most popular, beloved Christmas event. It was announced this week that Toowoomba’s Christmas Wonderland will be moving to the CBD for 2020. This year Toowoomba’s Christmas Wonderland: Reimagined has
partnered with Toowoomba Chamber of Commerce, Toowoomba Regional Council and Grand Central to bring a COVID-safe version of the event to local businesses, shopfronts and laneways for the community to enjoy. Here are five reasons to visit Christmas Wonderland: Reimagined this year:

The priority for those involved is to create an environment that people still feel safe and secure, while also still fostering the Christmas spirit the original event is known for. They’ve done that by creating a comprehensive, COVID-safe plan which reduces contact between people, and maintains physical distancing. QR code donation spots will be set up at various lights displays to give people the opportunity to donate to the event’s beneficiaries – Toowoomba Hospital Foundation, Toowoomba Hospice and Lifeline Darling Downs and South West. Toowoomba Region Mayor Paul Antonio said he applauded organisers’ efforts to keep the spirit of Christmas alive by transferring one of the city’s most popular attractions to venues across the CBD. “After a challenging year, I know residents will enjoy the chance to safely view the reworked Christmas Wonderland light displays that also support charities that are helping people across the region,” Mayor Antonio said.

Having the display hit the streets is anticipated to have a positive impact on local businesses in and around the CBD. With increased foot traffic through the town comes an increase in attention and business for shops, cafes, and restaurants on the streets where lights will be displayed. MORALE BOOSTER WE ALL NEED
If there’s one thing Toowoomba deserves it’s a morale booster after this year. The Christmas Wonderland: Reimagined is predicted to be the exact dose of Christmas cheer the town needs. West Toowoomba Lions member and project chair Marshall Cox said the Lions Club felt they needed to repurpose the event due to its popularity. “The community was going to miss out on so much this year we needed to see what we could do to bring some joy back into the community,” he said.
INNOVATION COMES TO LIGHT
Like many community events, the Christmas Wonderland was just too good to lose for 2020, so the organisations involved were forced to put their innovative minds to the test. What has emerged is a COVID-safe, family friendly event for all to enjoy despite the conditions. Lions Club of Toowoomba West President Fred Olson said the reimagined event will bring the community the much-needed Christmas joy following the cancellation of the traditional display in Queens Park Botanical Parklands. “Each year our Members have been rewarded with the look of joy on the faces of the children as they walk through the displays in Queens Park,” he said. “Not to be denied by COVID, we have been committed to bringing the joy of Christmas to the community in another format. “Please join us in celebrating the joy of Christmas through these lighting displays on exhibition around Toowoomba in December.”
STILL RAISES FUNDS
At the end of the day the Christmas Wonderland is about supporting local charities and those in need at Christmas time, and the event, despite being reimagined, will still do that. Toowoomba Hospice Administration and Fundraising Manager Mark Munro said the committee had been working hard to come up with a version of the traditional event that will put a smile on everyone’s faces and urged the community to show their support. “With COVID-19 restrictions limiting so many people from doing the things they enjoy, we have all had to learn new ways of doing things,” he said. “Like our fellow beneficiaries we are still offering our services to those who need us, so please support this year’s reimagined Toowoomba’s Christmas Wonderland in the CBD.”

After Parties to Benefit Small Business With a little thinking outside the box, Toowoomba Chamber is giving a boost to the industry sector that was hit the hardest by COVID: hospitality.
B
etween February and March 2020, Conus Industry Employment Trends identified significant job losses (10.3 per cent) in the accommodation and hospitality industry across Queensland. In Toowoomba, this would equate to around 493 jobs lost. Toowoomba Chamber is giving the hospitality sector a boost by creating a series of “after parties” in venues throughout the CBD, following the reimagined Focus HR Business Excellence Awards. CEO of Toowoomba Chamber, Todd Rohl, said the organization wanted to partner with as many small businesses as possible to provide support. “By facilitating a series of ‘after parties’ in the CBD, we are providing

an opportunity for these venues to showcase their business to potential new customers,” he said. “We also have accommodation packages for guests who want to stay in town for the night. “We love our hospitality industry because it brings colour and life to our community so we really wanted to give back and thank those who were hardest hit in 2020.” Seven venues agreed to host “after parties” and all offered unique experiences – some with entertainment or shuttle bus transport, there are different price ranges for different types of food and drink packages. You can try something new, something different or even something colourful and it’s guilt free when you’re recycling fashion. One of my favourite thrift shop locations in Toowoomba is Love Me Forever Boutique; this store always has high-end and on trend fashion items that won’t break the bank. My tips and tricks of thrifting are

stick to brands you know, pick timeless cuts and colours and try something new. We all seem to get stuck in our styles and we never venture out of what we are comfortable with so try something fresh this season, whether that be a scarf on your head or a pop of colour - explore your own stylish expression. GO LINEN
Linen is very on-trend at the moment. Not only is linen a natural breathable fabric, so summer will be a breeze with linen items, it’s also timeless. Linen seems to be fashionable every summer and that makes it an investment for your wardrobe. One thing about vintage jeans is they look amazing on, but they also have a story to tell and I love the history behind clothes. Vintage jeans come in all shapes and sizes and it all depends on personal style so find your jeans style and own it. At Love Me Forever Boutique I found everything from Levi to Wrangler, Versace, Guess and so many more, not to mention they’re even styles that you just can’t find new.

When thrifting, keep an eye out for the hidden treasures of luxury brands, they seem to be few and far between, but I think the trick is frequent thrift shop visits and you’ll find the treasured big brand name among the norm. Another trick I’ve learned is when in doubt ask the friendly staff because they know the store inside and out so they will definitely have the inside information for you. Look for luxe brands like Gucci, Prada, Versace, Guess, Coach, Burberry, Givenchy, Balenciaga.. and that is just mentioning my favourites. At Love Me Forever Boutique I found plenty of hidden luxuries including a brand new Gucci Scarf and beautiful vintage Prada heels.

atoya ‘Toya’ Stallan is a 31-year-old from Toowoomba who incorporates a bit of ‘magic’ into each day. Toya is just your average mum of three ‘wildlings’ and two pets, a wife and part-time worker as well, but on the side, she operates 3 Moons where she creates beautiful items to allow others access to practical magic in their own homes. HOW DID YOU GET INTO MAGIC? As I’ve grown older and more comfortable in myself, I unintentionally became closer to this sort of thing and the people who practice alternative ways. The more I read and learn the more intrigued I become. HOW DO YOU USE MAGIC IN YOUR OWN HOME? I like using nature as much as possible. Plants, herbs, flowers, salts, feathers, water and crystals are a must have. Then I add my candles and music. If you believe it has power, then it does. Among the craziness of this year I definitely knew that moving forward I would be making “everyday magic� a nonnegotiable! Things like taking time to sit and enjoy the sunset, doing my rituals for the new and full moon and creating things that set my soul on fire. It’s the little things that hold the most magic. I don’t follow any type of way of “magic� and I just think that you’ll find magic everywhere if you just believe it.

BEHIND THE NAME OF
GINGER CARTEL by KATHERINE SAMPSON
Sarie Smith is the flaming haired heroine behind one of Toowoomba’s newest hair salon Ginger Cartell. Besides the incredible effort Sarie made opening the salon, the narrative behind the name Ginger Cartel is just as interesting.
S
o, let’s break the name down, when you hear ‘Cartel’ you might not immediately think “HAIR,” instead your mind goes to illegal syndicates from the early 1900s; and you’re not totally wrong. Sarie’s great uncle on her mother’smother’s side was the infamous Joe Taylor. Taylor was the first to open a nightclub in Sydney’s Kings Cross in the 1940s and at the time these were the home of the underworld, and rightly so, as Taylor ran a gambling cartel out of these. Of course, Sarie has nothing to do with her late relatives’ business, however it was a huge part of her family’s history as another relative on her mother’s-father’s side was also in the crowd, Francis Farrell. Bumper Farrell, as he was commonly known, was both an Australian representative in the forties for rugby league, but also a feared and revered detective in the New South Wales police force stationed in Sydney’s inner suburbs. Without knowing their families would eventually cross paths, a crime boss and his opposition police detective became the inspiration for Ginger Cartel’s naming. As for the red ‘A’ in the logo, that’s thanks to Joe Taylor’s superstition that the colour was good luck. “My uncle believed red was for good luck,” Sarie says. “His clubs and restaurants all had an element of red or he wore a red when he was betting on racing and boxing.” When it comes to the ‘Ginger’ half of the name, you might think it gets it thanks to Sarie’s brightly coloured red (ginger) hair, but she’s in fact naturally a dark blonde and has been opting for the vibrant alternative since she was eighteen. It’s not totally unrelated, and having such vivacious locks

definitely helped when it came to choose the name. Sarie also owns and runs a local dance studio, so dance is a large part of her life. Now you know this, the ‘Ginger’ half of the salon’s title was inspired by Sarie’s love of Fred Astaire and Ginger Rogers, who were Broadway dance partners between the 1930s and 40s. More along this culture, Sarie has styled the salon with inspirations from the very same era as the name. The space located at Central Plaza, on the corner of Ruthven and Long streets, was a hair salon prior to Ginger Cartel moving in. What use to be a plain white city-scape styled salon is now a 30s era, speakeasy themed salon and very much an ode to the name itself. For over fifteen years Sarie worked out of her home, until this July when she opened Ginger Cartel. Now along with two other hairdressers, Tegan Kay and Natalie Barton, she’s finally got a real space for her hairdressing. Looking to the future Sarie wants to “mob” the business and have multiple locations; of course only time will tell. For an appointment with Sarie, or moreover an appointment with any of Ginger Cartel’s talented hairdressers, appointments are essential on Mondays, while booking and walk-ins are available Tuesday through Saturday.

before getting implants If you’re thinking about getting breast augmentation surgery, you’ve probably Googled all you can and discussed your options with your cosmetic surgeon. Here are a handful of things you need to consider when making the decision to go under the knife.
D
r Eddy Dona is a plastic surgeon based in Sydney who specialises in reconstructive and cosmetic surgeries. “As a society, cosmetic procedures and plastic surgery have become less taboo to talk about. However, many people still don’t understand the options available to them and the importance of doing their research,” Dr Dona said. “A breast augmentation is a procedure that involves inserting implants into your breasts to create an enlarged appearance. But it is not that simple – the look and feel of your post-surgery breasts depends significantly on the decisions you make before you go under the knife.” With decades of experience, Dr Dona compiled some key issues you need to understand so you make the right decision. In this edition, Dr Dona talks about budgets, implant style and texture and the implant profile. For more information visit drdonaplasticsurgery. com.au. SALINE OR SILICONE There are two types of implants available, saline and silicone. I prefer to use silicone because they look and feel more natural. Most surgeons in Australia would use silicone implants because of
the better aesthetic outcomes achievable. Saline breast implants are a silicone envelope filled with saline, which is sterile salty water. The benefit of this implant is that if it leaks, the body will simply absorb the saline and you will immediately know because your breast will deflate. Some patients may request saline implants because they believe they are safer. Silicone breast implants are a silicone envelope filled with an elastic gel. The benefit of this implant is that they typically look and feel more natural. Whilst silicone implants can rupture, because the silicone does not go anywhere, most patients would not know the implant has ruptured and it does not cause any medical issues. Despite extensive discussion on the topic, no evidence exists to suggest silicone implants, intact or ruptured, are associated with any medical problems. IMPLANT POCKET The pocket essentially refers to where the implant is placed with respect to your chest wall muscle, pectoralis major. The implant can be over the muscle, or under the muscle. The different terms used for over the muscle include – overs, prepectoral, subglandular, subfascial. The different terms used for under the muscle include – unders, subpectoral, dual plane, dual plane 2, or other variations of ‘dual plane’.
While under the muscle pockets, whichever variety, are technically more demanding, with very few exceptions they are the better option and most experienced surgeons use these almost exclusively. You will need your surgeon to explain what pocket they are using and why. INCISION AND SCAR LOCATION The incision required to insert your implant is another consideration. The three recognised incisions are in the lower breast fold (IMF), around the
areolar border, or via the armpit. The vast majority of surgeons would choose the IMF incision as it is the most reliable, safest, and more predictable incision to perform the surgery. This is the approach that Dr Dona uses exclusively. SECOND OPINION If you’re not sure about your first surgeon during your consultation, then get a second, or third, opinion. The cost of a consultation is relatively inexpensive compared to the cost of surgery.

St Vincent’s finds strength in adversity in 2020
I
t’s fair to say our “2020 vision” didn’t go exactly as planned, but we are proud of what St Vincent’s Toowoomba has achieved this year. Hospital CEO Kathryn McKeefry explains the opening of the new $15 million Clive Berghofer Wing, encompassing a contemporary emergency department, medical assessment and planning unit, and radiology service was “the jewel in the crown” for the year that was. “The scheduled completion of the huge project was in the first quarter of 2021 but the Hutchinson Builders crew and subcontractors worked hard to deliver this outstanding facility 131 days ahead of the projected finish date,” Kathryn said. “The result was that our experienced medical, nursing, allied health and support teams could start caring for patients from mid-November in the stateof-the-art facility. “We’ve been able to care for 13,000 patients each year in the much smaller previous emergency centre, and expect an increase to around 15,000 now we have greater space and staffing capacity.”

The new medical imaging facilities at Queensland X-Ray will include nuclear medicine, ultrasound, X-ray, CT and MRI scanner and will be operational by mid-December. The building project included a refurbished birth suite which opened in March. It includes a bath that mothers in labour can use for pain relief, a private en-suite, and other modern fittings. Kathryn said the compulsory shutdown of elective surgery at the height of the COVID-19 pandemic had been challenging, but the hospital had navigated through the many changes needed to comply with government directives. “It has been a difficult year in many aspects, but I am pleased to reflect that the tough times brought us together in many respects,” she said. “Our staff and Visiting Medical Officers have been innovative and resilient, with exceptional patient care always at the heart of our operations. “Our rapid response cardiac service continues to perform strongly and we welcomed a host of new medical specialists to expand our offering.

St Vincent’s new emergency department opened to provide patient care in November. The Queensland X-ray radiology service is on track to be in service from mid-December. “Having modern facilities like the Clive Berghofer Operating Theatre Suite which opened in 2018 and added six new operating theatres, a new kitchen, and a new main reception area has made St Vincent’s a very attractive facility for healthcare professionals and patients alike.
“We are proud to have provided generations of care for almost 100 years and we will celebrate our centenary in 2022,” Kathryn said. “Our latest infrastructure improvements certainly make us well placed to care for the Darling Downs community for current and future generations.”

DIY CRANBERRY SAUCE FOR YOUR CHRISTMAS TURKEY Grabbing that jar of cranberry sauce for Christmas Day from the grocery store shelf seems to be as standard as a proper tradition itself. But why do we buy pre-packaged sauce that tastes little more than sugar, when homemade cranberry sauce is not only a lot more flavourful but also super easy to make? If you’ve made jam or conserve before, creating your own cranberry sauce at home should be a cinch – but all the same, if you’ve no experience with jams, this recipe is a great starting point. To make about two cups of cranberry sauce, we’ve got an easy recipe for you to follow.
INGREDIENTS 1 cup white sugar 1 cup water 4 cups cranberries (frozen cranberries work fine if you can’t find any fresh ones) METHOD 1. MAKE SUGAR SYRUP Combine sugar and water in a medium saucepan, then bring to a boil. Boil until sugar is dissolved, stirring consistently. 2. BRING IN THE CRANBERRIES Add the cranberries to the sugar syrup. Return saucepan to the boil, then simmer on low for about 10 minutes or until the cranberries burst. 3. FINISH IT OFF Once the cranberries have burst, you can add any other flavours if you’re using them (see note below) before taking the saucepan off the heat. Let the cranberry sauce cool in the saucepan until it’s about room temperature, then transfer into a container to finish cooling in the fridge. The sauce will continue to thicken as it cools. If you’d rather a smooth cranberry sauce, use a blender once the mixture is room temperature, before storing in the fridge to set. Note: Once you’re happy with this basic recipe, you can add extra flavours by including orange zest (or swapping out the cup of water for half orange juice and half water), currants, blueberries, cinnamon, nutmeg, or allspice – play around and see what’s most popular with your family!

1. To make the rhubarb-ginger glaze and relish: Sprinkle the sugar over the bottom of a heavy frying pan at medium heat. Cook without stirring for about nine minutes, or until the sugar melts and turns a deep golden brown. As the sugar browns, tilt frying pan to distribute melted sugar, but do not stir. 2. Gradually add the vinegar (the mixture will harden). Stir until the caramel begins to melt, about one minute. Add the ginger, cinnamon, star anise, and one rosemary sprig and stir for two minutes, or until the caramel is mostly melted. Add the rhubarb and 1/4 cup of water and cook for 10 minutes, or until the mixture is jammy. 3. Meanwhile, to prepare the ham: Position the oven rack on the bottom rung of the oven and preheat the oven to 180°C (160°C fan). 4. Place the remaining two rosemary sprigs in the base of a turkey roaster. Set the roasting rack in the pan. Remove the skin from the ham, leaving the fat intact. Run a small dull knife over the fat to lightly score it all over. Place the ham on the rack in the roasting pan, cover, and bake for about an hour and 10 minutes, or until a meat thermometer inserted into the thickest part of the ham registers 40°C. 5. Brush the ham with liquid from the rhubarb relish. Continue to bake, uncovered, for another 25 minutes, brushing the ham with rhubarb liquid every five minutes. The liquid should form a glaze over the ham and the ham should register at least 48ºC on the thermometer. Transfer the ham to a carving board and let it rest for 10 minutes. 6. Carve the ham and serve hot or warm with rhubarb relish.

1. First soak all the dried fruit in 50ml of brandy overnight.

Place in a 1.2litre ovenproof dish. 9. If you are microwaving the pudding, place an upturned plate over the dish and microwave on high for 5 minutes. 10. Leave to stand for 5 minutes, then microwave for a further 5 minutes. 1. If you are steaming your pudding, cover with foil or pudding cloth, and then steam gently for 3 hours. 12. Once cooked allow to cool. 13. Once cool wrap in foil and leave in a cool dry place until required. 14. Before reheating, prick the pudding several times and pour some more brandy over the top. 15. Steam for one to two hrs or microwave on high for 10 mins.

WHAT IS A SOUR BEER? Sour beer is a category description for beer which has an intentionally acidic, tart or sour taste. Within this category, there are various styles of sour beers, often originating from particular geographic regions. Belgian Lambics, German Gose, Berliner Weisse, Flanders/Flemish Red Ales, and Wild Ales are just some of these traditional styles. WHAT MAKES BEER SOUR? Historically, when beer was cooled in a coolship, which was open to the outside air, or was placed into barrels, the culture that would ferment the beer would usually contain wild yeast and bacteria (very similar to making a sourdough starter). However since the invention of the microscope, different bacteria strains have been identified and isolated. The most common microbes used in modern brewing include Lactobacillus, Pediococcus and Brettanomyces. In addition to bacteria, acid, usually Lactic or Phosphoric Acid, can also be directly added during the brewing process. The use of acidulated malt in the mash is also a process utilised by brewers. HOW DO YOU BREW IT? There are two preferable techniques to create a sour beer. The first is using wild yeast. This can be done by using a coolship, infected barrels, or even harvesting yeast from the environment and adding it to your beer. Using wild yeast can sometimes take months to ferment and a long time to mature. It is also quite unpredictable, as most of the time the brewery is uncertain of which yeast strains and bacteria are going to end up in the beer. This technique is best used if the brewery has a barrel program, whereby they can blend different barrels to achieve the flavour and complexity that they are looking for in their beer. The second technique, and the one that we use at 4 Brothers Brewing, is kettle souring. Kettle souring is done during the brewing process, after the mash has been completed. The wort is cooled to a temperature that the bacteria can thrive in, and then the bacteria are added directly into the kettle. We mostly use Lactobacillus, which is the bacteria used to make yoghurt. It takes between 24 and 48 hours for the bacteria to get the beer down to the pH level that we want. The best part about this technique is that we can then boil our wort, which will kill the bacteria, and then ferment the beer with our usual yeast, so it’s ready to serve in around 2 weeks. This prevents the possibility of our next batch of beer being unintentionally infected when we don’t want it to be a sour. Although this technique doesn’t usually produce a beer with the same complexity as a Wild Ale, it does provide other advantages, like the ability to add as many hops as we want (hops are a natural preservative so many wild yeasts and bacteria struggle to survive once hops are added) WHAT ABOUT FRUIT? A hot summer’s day is the perfect time to crush a fruited Berliner Weisse. Adding certain fruits can help achieve a tart flavour in the beer. This is because many fruits directly contribute organic acids, such as citric acid. Raspberry, blueberry, pineapple, mango - honestly anything you like, you can add to your beer. You are only limited by your imagination. If you’re planning on brewing a sour beer at home, I recommend getting a pH meter, or at the very least, using pH strips so that you can know what pH your beer is when it’s done brewing. (The lower the pH, the more acidic and sour your beer will be).

1. Mash grains for 60 minutes at 65°C 2. Mash-out for 10 minutes at 77°C 3. Raise to 85°C for 15 minutes (to pasteurize) 4. Cool wort to 38°C, test pH 5. If possible, add Lactic or Phosphoric acid to bring wort down
to 4.5pH 6. Add sour pitch, or Greek yoghurt 7. Cover and maintain 38°C until you reach 3.5pH, 24-48 hours 8. Boil for 30 minutes, adding hops at the specified times 9. Chill wort to below 20°C, and pitch yeast 19. If possible, ferment at 18°C for 7 days, then raise temp to 22°C for 3 days 11. Cold crash beer 12. Carbonate in bottles (with sugar) or kegs 13. Once carbonated, drink responsibly *If adding fruit, add after 7 days of fermentation for best results. Cheers!

f there was one word that was on everyone’s lips this year when it came to the world of wellness, it was ingestibles. I use the program as recommended by Silkies Roses: In a 10L bucket or spray container – put ¼ cup Eco Rose (dissolved), 1 heaped teaspoon of Eco Seaweed powder and ¼ cup Eco Oil, and fill with water. Mix well and spray over leaves to runoff at least once a month – fortnightly if you can manage. This is a safe and organically certified programme. Fertilise your roses regularly – choosing different types of fertiliser, slow release, sudden impact, composted manures, Thrive and pretty

much whatever you can obtain easily. Climbing roses – nothing looks more spectacular than an arbour covered in roses – the flowers and not just leaves. If the new growth is allowed to grow vertically straight to the top of your archway, then you will end up with an arbour covered in leaves and only a few roses at the top. However, if you tie your new growth horizontally across the archway to the end, train it up, and then back horizontally along the archway - the result will be an archway covered in roses from the bottom all the way to the top.

I
t’s always amazing to me that a house can be built from the ground up in just a few short months. In our case, our 315sq m fourbedroom, three-bathroom, three living home in Cabarlah is on schedule to be completed in 13 weeks – just over three months. With just 21 days (who’s counting?) to go before Christmas, we are on the countdown with things moving fast now. So far, the slab has been poured, framing is complete with electrical and plumbing rough-ins done, the roof is on, walls are sheeted, cabinetry has been installed, the internal fix out has been done, internal tiling is complete and our shed has been installed. But there are still a number of things that have to be completed before we can move in, including all the painting, finalising electrical and plumbing, and the carpentry fix out, as well as installing floor coverings, carpet and outdoor tiling.

He assures me we are on schedule, and that huge list of jobs will be done in the next three weeks. Again, amazing to me. The past month has involved finalising all our selections. As I mentioned in my previous article, we had delays with the development of the land, so we had 18 months to decide what we wanted our home to look like but to be honest, I don’t know if that was a blessing or a curse because we changed our mind so many times in that period. Our kitchen went from being all white, to white and grey, to all black, to black and dark woodgrain, to finally settling on white, oak woodgrain and grey. forever home, an investment home, a place for a growing family or a place to retire? For us, we wanted an environment to suit a growing family. They say building a house is one of the most stressful things you can do and add to that navigating being a new mum and going back to work – for me it has been a very hectic year, but one I wouldn’t change. With so many looks and options, choosing a style wasn’t something I could decide on while I had a baby crawling around at my feet, so when my son Billy would go to sleep at night I’d pour through magazines, online interior websites and, of course, Pinterest. I wanted to make sure everything we chose was sourced through local showrooms and businesses. One - for ease and timing reasons, and two – to support local businesses. Slowly but surely my vision for the house came together, one my husband was also on board with. The outside of our home is a mix of Colonial and American style with the cladded exterior, high-pitched roof and right-angled driveway. This initially left me stuck on how I wanted to style the inside, hence the
multiple changes to the kitchen, but over the course of a few months we have settled on what we call contemporary Scandi style. Scandi style is typically known as simple and minimalistic, while contemporary is subtle sophistication with a deliberate use of texture and clean lines. To look at the home as a big picture we’ve chosen to go with white walls, black window frames, oak wooden floor and grey carpet. I know it will look stunning but going into all the showrooms and actually deciding on the finishes was still difficult. I kept doubting myself, but as I am seeing the home come together I know we made the right choice in our fittings. My advice to anyone building, who is in the midst of choosing their finishes, is don’t waste time stressing about the small stuff such as the light fixtures or the depth of your laundry sink. Yes, they are important, but don’t let them keep you up at night. Focus your energy on the big things such as the paint colour and kitchen bench top - these are the types of finishes that will define your house and they are what’s going to matter when you move in.

t's always been a bit of a surprise to me that more people — wanting a new home built — don't demand that it is an energy efficient and sustainable home, seeing that they are so straight forward to build, often cost no more than a regular inefficient home, will save you a significant pile in running costs every year, and it's cutting edge technology! So in the long run, an energy efficient and sustainable home is actually cheaper to own and certainly much cheaper to live in every day than a regular house. So, why aren't these kind of homes the norm? I think that it is at least partly because, for many, an 'energy efficient' home conjures up the idea of some kind of weird science experiment. They think that people who pursue these kind of homes tend to wear white lab coats, talk in unintelligible technical jargon about building bricks out of recycled shopping bags and milk bottle tops. You know the kind — they keep to their own little group at parties, still wear pullovers and walk around in sandals with socks. But the truth is that you don't need a Phd in some obscure science, or even subscribe to Climate Change. A truly energy efficient home will look just like you want it to look - ultra modern, classic colonial, or blending in with your normal street. Whatever floats your boat. It sounds a bit corny but that is honestly what we do for every
home and it means when we sell homes, we know our clients achieve the best possible price from the market. HOW IS THE MARKET LOOKING AT THE MOMENT? At the moment, if you home is presented 10/10 it’s a sellers’ market. If you nail the presentation and have outstanding marketing, you should be achieving an amazing price at the moment. If you are looking for a good buy finding a home that is stuck halfway, not fully renovated but not original is your best bet. These properties are not as well received from the market and you can still get a good deal. WHAT RESULTS HAVE YOU EXPERIENCED? Selling Millbrook (9 Phillip Street) at the end of 2019 was amazing as it was one of Toowoomba’s first homes built in the 1860’s and originally owned by William Groom, Toowoomba’s first

in a print publication because I am a 99 per cent digital marketing agent. We made the move away from the traditional marketing strategies around five years ago. Social media is massive, we incorporate some cheeky videos to get people’s attention and push the properties across realestate.com.au, Facebook and Instagram. Recently one of our videos had close to 20,000 views on social media. Oh, and I can’t forget our VIP launch which is where we introduce properties to our existing buyers. That’s how we sell them off market, it’s not really off market as we work super hard to match the right property to the right buyer and we only sell them like this if the price is perfect. It’s a great strategy for people looking for a discreet sale.

The benefit of real estate is the hours are in your control and flexible so while I miss a lot of evening and weekend things, I make it to everything with the kids school, the concerts and cross country and so on. I make a point no matter how busy I am to ensure I am always at these special moments in our kids life. WHAT ARE YOU LOOKING FORWARD TO FOR 2021? We have lots planned for 2021. Our business is growing and evolving naturally and we have some exciting properties already lined up to come to the market in the new year. We also have a DA in with council to refit our office so we can provide an amazing space for our staff. On a personal level a little travel might be nice as we love going on adventures as a family.
WHAT’S IT LIKE WORKING WITH YOUR WIFE AT REALWAY? It’s actually really great. Most of the team like her more than me, so that’s kind of funny! It has its moments where we both just can’t chat any more work at home, but we have been doing it for so long we know when to switch off and stop chatting work so we can just relax together. The only real problem we have is that we want to buy all the amazing homes we list! YOU HAVE THREE DAUGHTERS, HOW DO YOU FIND TIME TO FIT EVERYTHING IN? That is a hard one. I wouldn’t always say it is a balance, I work on weekends and lots of late evening and early starts. So, I definitely make sacrifices and the only reason I can do what I do, is because my wife is so amazing. She picks up all the heavy lifting with the kids and does most of the running around. There is absolutely no way I could achieve what I achieve in real estate without her support – we are a

t’s not unusual for the 40-year-old teacher to run 100km a week – maintaining her health and fitness in preparation for ultra marathon events. Growing up on the Drakensberg escarpment in a town called Volksrust (South Africa), Willemse had an adventurer’s spirit. “Running was part of my life when I was growing up. I loved it,” Yolande says. A move to Australia in 2008 reignited her passion for running and eventually her love for ultra-marathons. “I entered a few different events and found my passion again,” she said. “We are so blessed, particularly here in Toowoomba, to have such wonderful landscapes to enjoy. Progressing through half and full marathon distances, Yolande believes she found her niche in the ultra-marathon community. Earlier this year, she finished the Tarawera Ultra Marathon (102km with a 3089m vertical elevation gain in New Zealand) in time of 15 hours, 33 minutes and 54 seconds. She also ran the 2019 Ultra Trail Australia 100km – 4400m vertical elevation gain in the Blue Mountains – Katoomba) finishing in 16 hours, 23 minutes and 35 seconds. “I’d still love to run something like the Boston Marathon, that’s a dream of mine, but I feel like I’m better suited to ultras,” she said. “I think you have to be young and fast for marathons. “It (ultras) are about relentless forward progress for me. “I just think about completing the section I’m on, making sure I get to the next aid station, and then I focus on the next section. “I don’t like to hike too much. If I can run the section I run it,” she says. “Earlier this year (pre COVID-19 restrictions), I entered the Tarawera ultra. My husband had commitments so I travelled by myself to New Zealand. “I never once felt lonely though, everyone was so welcoming and supportive. “I think it’s very important to surround yourself with positive people; it’s not helpful if you have negative people around you who question what you’re doing and have negative energy.”

YOUR GUIDE TO SNORKELLING A wonderful form of cardiovascular and muscle strengthening exercise, snorkelling is a wonderful pastime – but there are certain precautions you should follow as well.

o go snorkelling, you’ll need a mask, snorkel and - if travelling at distances through the water, particularly into deep water - fins. Snorkelling is a fantastic way to learn about marine life and increase wellbeing. It’s also beneficial for those suffering from joint pain or limited mobility. By snorkelling in different directions, diving underwater and treading water, you’ll be using almost every muscle in your body. An hour’s snorkelling burns around 1478kJ for a 70kg person, around the same as kayaking. You don’t even have to be very fit to snorkel. It’s also great for children or people with injuries, as it won’t stress your joints. If you’re new to snorkelling, it’s best to stick to shallow waters, and stay out of the surf. Regardless of whether you’re new or an ‘old hand’, there are some precautions you should take to ensure a safe experience: ⬛ Always go snorkelling with a friend as a safety precaution; ⬛ A wet suit is a good idea, as it gives

extra buoyancy and protection from the sun and stingers; ⬛To avoid pain in your ears when you dive, hold your nose, increase your lung pressure and ‘pop’ your ears; ⬛ Use a snorkel mask with tempered glass. If it breaks it will hold together like a car windscreen, rather than splinter as the cheaper brands will; ⬛ Always breathe out when you hit the surface, or you’ll take in water. If you use a self-draining snorkel, you won’t have to breathe as hard to clear out the brine; ⬛ If you suffer from diabetes or epilepsy, get checked out by a doctor with diving medicine experience before heading to the big blue. Using fins will strengthen your legs and tone your buttocks and thighs, and treading water is akin to cycling. Plus, most people go snorkelling because they enjoy it, meaning they’ll stay out in the water for longer – so you get exercise without even really realising it. Initially, Sarah liked how possessive Jackson appeared e.g. “You’re mine. I want to show you off.” Eventually the true Jackson revealed himself. When she had a different opinion on things, Jackson said things like “What would you know? You’re just stupid.” After being told she was stupid multiple times a day, she started to think she was. Jackson demanded that Sarah’s pay go into a joint account. When shopping, Sarah was often left red-faced at the checkout because Jackson had drained the account. He would do this when Sarah did not “behave”. Sarah learnt to change her behaviour to not anger Jackson. It didn’t matter what she did, Sarah was never good enough. Jackson frequently told her she was worthless and she began to feel that she was. When Sarah threatened to leave, Jackson pressed his face against
Sarah’s and said “If you leave. I will find you and kill you. If I can’t have you noone will.” She knew he would find her; he always knew where she was. Eventually Sarah worked up the courage to leave Jackson. Just because Jackson never hit Sarah, he still perpetrated domestic violence by exerting control over Sarah. Flying off the shelves
was in my favourite bookstore last week when a novel from my childhood suddenly popped into my head. I inquired about it at the counter and to my delight (and then disappointment) they informed me that they did indeed stock the hardback, but had recently sold the last copy. More are on backorder, so now I have to play the waiting game. As always, it got me thinking about the real estate industry and, in particular, the current rental market. It is going bananas and, like the bookstore, we can’t keep stock on the shelves either. As soon as a property comes in the door it’s pretty much snapped up instantly and we see multiple inquiries competing for every listing. That’s great for The Real Estate People, but not so much for the families and individuals who are eager to find the perfect rental to suit their tastes and needs. I hear anecdotally, that this lack of stock is currently the norm right across Toowoomba, Gatton and surrounds.
There’s so much going on in the area it has become a hotspot for renters as they move here to take up new employment opportunities, save ferociously for a deposit, or ‘escape’ apartment living down south (Queensland’s affordability is always a big draw card). If you ARE moving house in the coming months and will be renting for any period of time, my advice is to secure your rental property long before you actually move. Lock it in early, so you know you’ve got a guaranteed home to move to. Moving is stressful at the best of times, but to suddenly find you don’t have a roof over your head would be devastating. Yes, you still might get ‘something’, but chances are it won’t be in the neighbourhood you’re after; or you might have to compromise on the property layout or its features. Talk to a property manager early in the process and you can take your time to secure the perfect property with confidence. And whether you’re buying, renting or selling come next year, I hope 2021 treats you a lot better than 2020 did - I think we all deserve that. Have a great Christmas.

One of my favourite things to do to celebrate Christmas is our annual Santa photo at Grand Central, a family tradition lasting 35-years. My brothers and sister with Mum, Dad and my husband all come and sit with Santa followed by a Grand Central Food Court lunch together. A cherished Christmas tradition”

I’ve worked on Christmas day almost every year, it’s such a happy time of the year. Usually staff decorate the ward, dress up in bright, festive scrubs which gives us all the feel of our own little Christmas wonderland. It helps lift patient’s spirit who miss being with their family and make them feel that they are part of a celebration as well. Obviously this year is going to be different. Due to COVID restrictions decorations are going to be a huge miss but the Christmas spirit will definitely be at it’s usual high.”

Christmas is a really special time for my family and I. Usually we spend the day at my sister’s house at Palm Beach. We wake up early and share presents, mimosas in hand. I love seeing the excitement on my nieces and nephews faces. Then while my Filipino mother makes THE best spring rolls, the rest of the family and I help prepare lunch. We spend loads of time on the beach and eating delicious food. We spend the evening telling stories, listening and dancing to our favourite music. It’s definitely my favourite time of the year!”
We will be celebrating Christmas with the extended family a little earlier this year which will free up our Christmas Day. So, we will be doing something a little different: I will be spending the day with my best friend and business partner, Ally, her family, my partner and our kids. ore than 100 finalists at this year’s Toowoomba Chamber Focus HR Business Excellence Awards will have their eyes on 16 unique, hand-crafted winners’ trophies. Made from metal and local timbers, the trophies have, for the tenth year in a row, been designed and created under the supervision of Cobb+Co Museum’s Factory Workshops. Andrew MacDonald, artisan-in-residence at Cobb+Co Museum, has helped create and produce various unique trophies over the years from the Postle Gift and Toowoomba Exporting the World to a custom replica trophy for the 2020 AFL Premiership held here in Queensland. He said the Focus HR Business Excellence Awards trophies were very much a coordinated team effort. “We have drawn on the skills of three local businesses: Recognition Plus, DCM Diverse Cutting and Manufacturing and Oggy’s Airbrush and Kustom Paint,” Andrew said. “We’ve taken elements of an existing trophy and refashioned them to create a custom piece that captures the essence of the occasion which is glamourous and a bit Hollywood Oscars. “To do this we have sanded back the gold figurine and repainted it silver then fitted a new laser cut disk which is custom painted with the Focus HR logo. Each base is hand crafted here in the Cobb+Co Factory Workshop from local Camphor laurel wood.” “The Business of the Year trophy always has to be more impressive, so we’ve made a larger base from burl Camphor laurel and Red cedar.” The Focus HR Business Excellence Awards trophies are proudly sponsored by Harvey Norman Toowoomba.

Toowoomba Regional Art Gallery Visit the Toowoomba Regional Art Gallery over the summer to see a collaborative exhibition by two Toowoomba-based artists, Stephen Spurrier and David Usher. The exhibition, Gathering in the Light, features a dialogue about the working practices of both artists – looking at how they use solitude while overcoming isolation through collaboration. Spurrier and Usher’s artworks are a direct response to the social, environmental, esoteric and cosmic influences that have shaped 2020. 1. he Rachelle Roe Studio in Toowoomba is a home-based jewellery design studio coupled with my passion for photography. According to my mother, I was stringing beads at the age of five and capturing memorable moments on my grandfather’s old Box Brownie camera. It goes without saying that I have kept my passion alive and well. I have a passion for jewellery designing and particularly enjoy creating bohemian-themed pieces. This was my chosen theme for my recent photo shoot in the beautiful Peacehaven Botanic Gardens at neighbouring Highfields. Peacehaven Botanic Park was officially opened in 2012. It has been reported that Stan Kuhl held a passion to promote global peace and that this particular haven is quite reminiscent of some of the great gardens that Stan visited whilst travelling the world. It was such a joy to photograph Megan amidst the native flora and fauna of this beautiful location. Toowoomba boasts some beautiful landscapes, parks and gardens and is home to many artistic creatives. I particularly love the white vintage style dress that Megan’s mother was fortunate to find in a local second-hand store. Equally exquisite is the make-up artistry by Rachel’s Beauty. Rachel’s perfection is versatile and undoubted, and her creativity is breathtaking to experience. The Rachelle Roe Studio is an advocate for supporting local Toowoomba businesses, particularly during the uncertain times brought about by COVID-19. Style Artist chats to
Robyn Gray
Describe your style? My specialty is painting figures (from the back) in landscape. My style could be described as romantic impressionism. When did you start painting? I began by sketching my children and was surprised to gain a likeness and so began pursuing lessons and reading every art book in my local library. Your art evolution and influences? In 2018 I won an encouragement award at a local exhibition for a bursary to McGregor Summer School. So, I selected Barry and Lucy McCann to further my figures in landscapes. I am also influenced by Robert Hagan and Vladimir Volegov. I joined an online gallery Bluethumb in 2017 and have sold many artworks on this site which encouraged me to continue painting what I love, with a solid market outlet and following. Why do you enjoy painting? I enjoy the relaxation of mind and creativity of dreaming up new compositions that I think people will connect with. What inspires you? I am particularly inspired to paint the joy of children playing in nature. Highlights of your artistic life? I enjoy donating 10% from each sale to Shake It Up Australia, in memory of my late mum. It is a not-for-profit organisation established in 2011 in partnership with The Michael J. Fox Foundation for Parkinson’s disease research in Australia. I am also thrilled that I have been able to exhibit in Grammar Art Show, next to other artists who I have admired for years from afar. Tell us a little about yourself… I have lived in Toowoomba my whole life. I am married, with two married children who live locally also. My past working life included office work, merchandising, reception and seven years as part time Diversional Therapist in an older people’s ward in mental health. Now I am involved with Toowoomba Art Society. I paint a few days a week and have been kept busy with a lot of commissions. What do you like about Toowoomba? Queens Park, Spring Bluff, Picnic Point, the tree lined streets and the heritage areas with character homes.

he graduation ceremony was the first in months for the Kaye Foley Modelling Agency, after its May show was cancelled due to the pandemic. Following a three-week course in deportment and modelling techniques, 18 students took to the stage at Rumours International on November 7 to showcase what they had learnt. “It was the first course we had had this year, we went through deportment, job interviews and also modelling – so a two in one,” agency owner Kaye Foley says. “(During the course) they learnt about skin care, hair care, make up, how to sit, how to walk and then with the modelling, there was runway and posing for photos.” Kaye says the course taught its graduates important life skills, but also instilled them with confidence.
