Interior decorating Scandinavian Style If you’re a renovator, DIY enthusiast, self-proclaimed interior designer or even just a fan of the old Feng Shui, then you’ve probably heard of the Scandinavian Style.
However, don’t go too white or your room might look very sterile. These pale colours allow light to bounce off the walls and to offset the gloominess of the outside world in the middle of northern winter but also keep it warm inside.
THE style comes from, you guessed it, Scandinavia as it follows simple design rules which are required when living up in the north. Because the sun is out for legitimately half the year, and the other half is spent in complete darkness, the Scandinavians came up with a few interior design techniques that just make living easier. And even though we don’t experience this profound night and day here in Australia, the Scandi look has crossed the seas and moved into our Aussie homes.
MATERIAL
COLOUR The colour palette for a Scandi-style home is generally white, bright white, light white and light greys, blues, greens and pale browns. The reason for such an insipid and bland colour scheme is to allow both natural and artificial light to travel further.
The Scandi style thrives on layering. So, incorporating finishes like stone and timber floorboards are a good start. Carpets aren’t as popular but throws and rugs are a different story. Natural materials such as wool, hemp and sisal are popular picks when flooring your Scandi home. But keep it simple, because a Scandinavian-style home has a very clean look. Lastly, don’t over-do a room by filling it with everything you own. Instead, follow the flow of the room and only use what is necessary: clean lines and simple joinery are the key to the Scandi style.

Destination hotspot It’s hard to believe Urban Paddock only opened its doors three years ago. HISTORIC Quambi house, turned hospitality hotspot, has grown in leaps and bounds under the leadership of owner Melissa Harms. Since starting as a place for Dalby locals to enjoy a cake and a coffee, the business has become a destination spot.
Travellers passing through town often stop to enjoy the relaxed atmosphere and it is an iconic lunch location for those wanting something more than just sweets. “The big backyard is a draw for groups and families in particular,” Mrs Harm said. “It gives a space where the kids can be outside while everyone is still able to relax and enjoy a great meal together.” The outdoor space is also an excellent location for parties and events like wedding receptions, along with Urban Paddock’s own Friday tapas nights. “The tapas nights are just something a little bit different for the community,” Mrs Harms said. “It’s a nice opportunity for friends and family to relax and enjoy the end
of another week together.” A business like Urban Paddock can never take off without the support of its loyal customers and dedicated staff. “I have to say a big thank you to the community who get behind us and support us,” Mrs Harms said. “I also have my staff to thank, they’re the backbone here. “It’s been a tough start with lots of behind the scenes work that people don’t see and lots of long hours so definitely a big thank you to them.”

Chinchilla Christian College As our communities grow, so too do their education needs.
AS OUR communities grow, so too do their education needs. Chinchilla Christian College saw a need for additional secondary education options in their town and expanded their P-7 school to accommodate their students all the way through to year 12. Principal Nathan McDonald said the expansion has meant the college is able to see students both begin prep and go right through to graduate and onto tertiary or career opportunities. “It’s exciting to see students come through to the school and then as they move through secondary start to really focus in on what they’re good at, what they enjoy, and move towards what they’re wanting to do after school,” Mr McDonald said. Chinchilla Christian College strives to provide a quality Christian education to all students enrolled in their school and provide a high-level of pastoral care for them. “We pride ourselves on providing a happy, safe environment for 08

Ever-changing business environment ROBYN Haig from the Chinchilla Chamber of Commerce and Industry said the community has seen a very large change, particularly in the past 10 years, from its primarily agricultural and support industries into servicing a large Coal Seam Gas sector and, even more recently, into renewables. “I think potentially because it was our region’s first voyage into that kind of heavier industry, when we moved from construction into operational phase of that CSG, it was a bit of a shock to some of the businesses that had built up to service it,” Ms Haig said. “But the recovery in Chinchilla thankfully has been quite strong.” Businesses that don’t directly rely on the construction and

service industry experienced benefits from increased foot traffic in the main shopping stretch on Heeney Street as a result of the population growth. “Up until two or three years ago they were reaping the benefits of having an increased population,” Ms Haig said. “In terms of population growth in a rural community, Chinchilla has been very strong and performed really well in comparison to other comparable towns in other areas who have seen a population decline. “That’s been a benefit to all our businesses, particularly our retail and main street shops. Ms Haig said the recent global retail trend of less physical spaces and more online shopping has made it tough for the retail sector. Campaigns, such as Buy Local in Chinchilla, Think Local in Dalby and the Buy from the Bush campaign that gained great traction this past Christmas season, have encouraged people to be more mindful of where they spend their money.

White Lotus Popular beauty business continues to grow and offer clients more options
WHITE Lotus opened its doors almost nine years ago and has been an example of how businesses in regional Australia can grow. Owner Leanne Kerr started her business as a sole operator, providing beauty therapy services to her clients. “Then I put on a trainee therapist, I moved shop and branched out into hair,” she said. “It just grew from there. “I had two staff then, a hairdresser and a beauty therapist in addition to myself; now I have six staff.” The continued growth of White Lotus and the move to the larger storefront has made Mrs Kerr’s salon one of the premier locations for local women. Day-to-day beauty needs for regular customer and hair and make-up for special events are all offered by the trained staff.
“For special events like weddings we offer the use of the whole salon if there’s a party of five or six, or more,” Mrs Kerr said. Formals are also big business for White Lotus and often a special day for the team. “With formals and weddings, it’s often the kids that we’ve seen grow up in town over the years, who we’ve know since they were little. “We feel special being part of their big days.” Looking after all of their clients during the boom the community experienced has meant that when the town started to return to the smaller community, White Lotus still had the support of their local clientele. Mrs Kerr and her team look forward to seeing what the next decade of business brings them.

differently because it is individualism that has helped DOM get to where they are today, doing things no other businesses in the region are doing. “It’s satisfying to watch young staff learn and grow, and I myself, I enjoy learning about new ways to do something or bringing new technology to the community,” he said. Nurturing the next generation of business people and innovators plays a huge part in Mr O’Brien’s business. He himself credits two local businesses, Johnson’s Motors and Dalby Moto, as having given him his start to a successful working life right here in Dalby. It’s these same opportunities Mr O’Brien strives to bring to his staff. “We do have the skills in this town, Dalby has a large history of manufacturing and exporting globally,” he said. “I think there is still that culture in town and a lot of that residual knowledge that we’ve been able to source through the community. “Dalby has long had an attitude of they don’t know they can’t do it, they just think they can.” Encouraging this attitude in his staff and the next generation has seen DOM Distribution do things other businesses can’t. It is a strong goal of Mr O’Brien to encourage people, specifically the up-and-coming generation, to remain in the region. For the sports lovers, our region is home to some fantastic athletes, you probably know some of them or even play on a sports team yourself. If it is an away game you’ll even get the chance to enjoy a drive and visit a town you haven’t been to in a while. The Bunya Mountains are a destination all of their own. You can head up for a hike, book a house or cabin to spend a night away, or just visit the cafe for lunch and enjoy the markets one weekend. Show season is now upon us too which means there will be an agricultural show for you to visit almost every week. While you travel and explore the Western Downs, you will also have the opportunity to support local businesses. Stop and browse through shops or enjoy a meal at one of the brilliant pubs and cafes that call our region home.

Mexican Taco Pizza SERVES: 4 PREP: 5 minutes COOK: 15 minutes INGREDIENTS 2 (450g pkt) pizza bases 300g medium chunky salsa 425g can mex beans, rinsed, drained 20g (1½ cups) grated mozzarella or pizza cheese 200g cherry tomatoes, halved 1 small red onion, sliced 1 avocado, sliced Fresh coriander sprigs, to serve Sour cream, to serve Hot sauce, to serve Sliced fresh chilli, to serve Lime wedges, to serve
METHOD 1. Preheat the oven to 220C/200C fan-forced. Place the pizza bases on 2 baking trays. Spread 3–4 tbsp salsa over each pizza base. Place the beans in a bowl and lightly mash. Divide mashed beans between the pizza bases. 2. Sprinkle a quarter of the cheese over the pizzas. Top with tomato and sliced onion. Sprinkle with the remaining cheese. Bake the pizzas for 10–15 minutes or until the cheese is melted and golden. 3. Serve the pizzas topped with avocado, coriander, sour cream, hot sauce and sliced chilli, and with lime wedges alongside. Recipe by Kerrie Ray Photo by Taste Magazine
Chickpea, lemon and rocket pesto pasta
SERVES: 4 PREP: 5 minutes COOK: 15 minutes
INGREDIENTS

300g wholegrain spaghetti 400g can chickpeas, rinsed, drained 120g pkt baby rocket leaves ½ cup fresh basil leaves 20g (¼ cup) finely grated pecorino 2 garlic cloves, peeled, halved 80ml (cup) lemon juice 1 tbsp water 2 tbsp extra virgin olive oil 80g (½ cup) drained peppadews Pecorino, extra, shaved, to serve Micro basil, to serve
1. Cook the pasta in a large saucepan of boiling salted water following the packet directions or until al dente. Drain, reserving ¼ cup cooking liquid. Return pasta to the saucepan. 2. Meanwhile process chickpeas, rocket, basil, pecorino, garlic, lemon juice and water until finely chopped. Season. Add oil in a slow, steady stream until well combined. Reserve ¼ cup pesto mixture. 3. Add the cooking water, peppers and remaining pesto to the pasta. Toss well to combine. Divide the pasta mixture among serving bowls. Top each with a spoonful of reserved pesto. Baked bean vegie nuggets MAKES: 12 PREP: 20 minutes COOK: 10 minutes READY in 30 minutes, these crispy vegetarian fried balls are made from baked beans, mashed potato and cheese.
INGREDIENTS 300g can baked beans in tomato sauce 2 cups mashed potato 80g (2/3 cup) pre-grated pizza cheese 75g (1½ cup) panko breadcrumbs 1 egg, whisked Light olive oil, to deep-fry Tomato relish, to serve Baby spinach, to serve (optional)
METHOD 1. Place the baked beans in a bowl and use a stick blender to blend coarsely. Line a baking tray with baking paper. 2. Add the potato, cheese and 20g (½ cup) breadcrumbs to the bowl. Season well with salt. Use a metal spoon to combine well. Roll 2 tbsp of the mixture into a ball and transfer to the prepared tray. Repeat to make 12 balls in total. 3. Place the egg in a shallow bowl. Place the remaining breadcrumbs on a plate. Dip a potato ball into the egg, allowing the excess to run off. Roll in breadcrumbs, pressing well to coat, then return to tray. Repeat with the remaining potato balls. 4. Pour oil into a deep frying pan or large saucepan to a depth of 7cm. Place over high heat. Add half the balls. Cook for 3–4 minutes or until golden. Use a slotted spoon to transfer to a plate lined with paper towel. Repeat with the remaining balls. 5. Arrange baked bean balls on a serving platter. Place the tomato relish in a small serving dish. Scatter over baby spinach, if using. Recipe by Alison Adams Photo by Nigel Lough
Roast strawberry compote with waffles SERVES: 4 PREP: 2 minutes COOK: 15 minutes INGREDIENTS 250g punnet strawberries, hulled, halved 1½ tbsp honey 1 tbsp fresh orange juice ½ vanilla bean, seeds scraped Waffles, toasted to serve Greek-style yoghurt, to serve
METHOD 1. Preheat oven to 200C/180C fan-forced. Place the strawberries in a baking dish. 2. Combine the honey, orange juice and vanilla seeds and bean. Drizzle over the strawberries. A night of glitz and glam for the books Western Downs Regional Council’s Words Out West Gala Dinner was a real page-turner event. ATTENDEES and guest speakers from the Words Out West Festival, hosted in Dalby from Friday, February 14, to Sunday, February 16, enjoyed a weekend of all things literature. The Saturday night was spent by many at the Dalby Events Centre for the Gala Dinner. Great food and drink from local suppliers, along with literature-themed decorations made for an enjoyable night. Australian wheelchair racer, Medal of the Order of Australia holder and author of Pushing the Limits Kurt Fearnley was the special guest speaker for the night. Mr Fearnley’s presentation got a standing ovation from guests and fellow presenters.
