Sportsmanship Gymnastics kicked off its new term on August 27 with a fantastic addition to its team – international gymnastic coach, dance artist and choreographer Judy Yiu. As head coach, Judy will be expanding on the fun yet disciplined gymnastics programme first introduced to DB in 2003 by Sportsmanship’s founder Charles Chan. Judy majored in choreography in the Contemporary Dance Bachelor of Fine Arts programme at the Hong Kong Academy for Performing Arts from 2005 to 2010, and received her Master of Fine Arts in Dance at Hollins University in 2015, with a full scholarship supported by The Hong Kong Jockey Club Music and Dance Fund. Judy is currently dance teacher and choreographer for the Hong Kong Gymnastics National Team. In this role, she is creating a new pedagogy combining gymnastics and dance, with a view to enhancing gymnasts’ artistic presentation and introducing gymnastic techniques into dance. Herself a member of the Hong Kong Gymnastics National Team from 1998 to 2003, Judy represented the region internationally, garnering multiple awards. With Level 1 certification from the International Gymnastics Federation (FIG), she has taught gymnastics, from kindergarten to graduate level, for more than 15 years in 20+ Hong Kong schools. Based out of Discovery Bay Recreation Club and Club Siena, Sportsmanship offers highly structured gymnastics classes, for kids aged three to 16, focused on floor exercises, beam and air trek. ou write books to support children battling cancer. Where did the idea come from? The Princess in the story is me. I moved to Hong Kong to marry my Prince Charming in 2005, then in 2008 I was diagnosed with brain cancer – CNS Lymphoma. I was 39 years old. I had eight cycles of chemotherapy over six months. My husband David took incredible care of me; his nickname for me is The Princess. After my treatment, I wrote 15 books about funny things that occurred during my treatment. I wrote my books to help children and their parents manage the experience better, by making them laugh. Hence the title of your first book, The Farting Princess. Yes. I first had cancer when I was 14-years old, so I can relate from a child’s perspective as well as from an adult’s. Laughter is the best medicine when you’re sick… and when you have chemotherapy, there’s a lot of farting going on! When the Prince came to the hospital, The Princess farted even more! And they were stinky and smelly, which made The Princess laugh her head off. My husband could smell the farts, but I couldn’t! How do children react to your books? The reactions are priceless. When I read my books, for example at the Elf Reading Day in Australia, I ask the children to make farting sounds whenever they hear the word fart or farting. They use their hands to create the farting sounds as well

as their armpits. I am planning to go into local hospitals to read my books to the children undergoing treatment, and also into schools. Kids benefit by laughing as it is great for the immune system. I will wear one of The Princess’ dresses and a tiara. And the books have spawned a mini franchise? Three of the 15 books are now available. There are also prints and greeting cards of the illustrations in the books, and of course my teddy bear, Mr Snuggles, who came with me to the hospital and who is in some of the books. There’s a charity angle too? I’m giving 50% of the net profits to cancer prevention, research and cure. If people also choose to make a donation, 100% of that is donated. I’ve just started selling my books and other merchandise, so I’m researching how best to utilise the 50%. As an example, if someone does not have insurance or it runs out like ours did, I would like to be able to pay directly for their treatment. My husband and I are in the process of starting our own foundation, The Roes Giving Foundation, to support our goal of creating a world without cancer. How are you getting the word out? Right now, you can buy my books at Bookazine, and on my website and Facebook page. I am working on getting everything on Amazon and Etsy. I had a table at the Discovery Bay Sunday Market in March and aim to have one in December. It fills my heart with joy to be able to utilise what we experienced to help others.

The Hong Kong Welsh Male Voice Choir gets a little help from Discovery Bay’s most melodic residents to celebrate its 40th anniversary. Elizabeth Kerr reports

ou haven’t really lived until you’ve seen 20 professional men willingly sing Abba. It’s not a karaoke bar, there are no spouses or kids raging at a wedding. It’s not an out of control office party. It’s the Hong Kong Welsh Male Voice Choir (HKWMVC) rehearsing on a balmy evening. They’re not messing around either. Each vocal section goes over a few lines again and again until the evening’s conductor thinks they’re

getting it. Abba may not have bothered with perfect harmony, but the HKWMVC certainly does. Ninety minutes earlier, Neil Juggins, Dennis Wan and Patrick Budden piled into a Central Starbucks after work, ready to sing (no pun intended) the praises of the choir. They seemed more like a bunch friends planning a knees-up in McSorley’s than 10% of the HKWMVC, and 60% of its Discovery Bay-based members. But they are indeed choirboys. Or ‘choirgentlemen.’

Men of Song Hong Kong native and banker Dennis has dropped in to lend some media support, but he’s ducking out of practice. “This is actually the first rehearsal I’ve skipped all year,” he says. “I was very proud of that, but family pulls me away tonight.” Dennis’ lament prompts recollections about how each of the men got into the choir, and why they stayed. Dennis notes singing for him was mostly karaoke prior

to the HKWMVC, and diving into a heavily Welsh repertoire early on was a bit manic. “I’ll admit it was a steep learning curve. I didn’t know what fourpart harmony was. I didn’t know the definition of bass and tenor. I couldn’t read Welsh; I can’t read music. I was almost totally illequipped to be in a Hong Kong Welsh male choir,” he says drily. “Though I am male. And from Hong Kong.” British equity analyst Neil joined three-and-a half years ago, with compatriot Patrick, a retired human resources pro who has been in Hong Kong since 1969. “I went along for a

session and enjoyed what I heard and ultimately stayed on,” recalls Patrick of a colleague’s invitation. “I always enjoyed singing, though I never thought I was very good at it.” Neil was an old choir hand, and simply wanted to keep at it. Founded by a group of Welshmen back in the 1970s, the HKWMVC celebrates its 40th anniversary this year. Chaired by Tim Davis, the choir was fortunate to hire English conductor, composer and former music director at the University of Warwick Colin Touchin to act as conductor and kick the choir up to another level. Hopefully, they’ll make it to the International Musical Eisteddfod in Llangollen, Wales,

next year, and perform Welsh songs for a Welsh audience for the first time ever. Not that the HKWMVC doesn’t get around already. The non-profit choir, operating on a member subscription basis, has had the privilege of performing at the Sydney Opera House, the Royal Albert Hall, on the Bund and on the Great Wall. The season winds down as choir members scatter for summer, but regular performances restart in autumn, peaking at Christmas. Shows with Discovery College Choir and Unsung Heroes are regular calendar appearances in DB, and a St David’s Day performance 

at St John’s Cathedral is a musthear. The choir also sponsors the Daffodil Prize scholarship at the Hong Kong Academy for Performing Arts for two students, who are invited to perform at annual concerts. Only Men Aloud Eventually, an actual Welshman, toy designer Richard Crosbie, shows up and quickly usurps Patrick’s seniority. In DB since 2002 and the choir since 2004, Richard arrived in Hong Kong from his native Trethomas, near Caerphilly, in the Rhymney Valley, in 1996. He stumbled upon the choir while seeking a harpist for his wedding. “I got to [St John’s] early, and I saw this big room with a bunch of chairs, and someone told me to take a seat at the back. Gradually the room filled up with men and before I know it I was in the middle of a choir rehearsal. When someone asked me where I was from it was, ‘Alright you’re in.’ Three months later I had failed to find a harpist, but a surprise Welsh choir turned up at my wedding. I’ve been there ever since.” Neil, Dennis and Patrick agree that the choir got in their blood and became something to look forward to, but Richard sums it up best. “I think everyone joins on a whim but the reasons they stay is that you end up creating something with a bunch of guys that’s really powerful, that you’re proud of. And you feel the reverence of the material. It’s quite moving. You’ve

created art. I don’t profess to be the greatest singer by any means but, by being part of a group, you get to create something better than you could on your own… it’s really something.” It takes dedication too, particularly if travelling to and from DB. None would have it any other way though. Eight-year resident Neil calls DB the closest thing to Singapore you’ll get in Hong Kong, while Richard admits, “It was either Lamma or Lantau because they were the two most affordable places in Hong Kong at the time. I love living in DB now, and I would live there by choice rather than by necessity.”

Hong Kongers. “We’ve got judges, lawyers, teachers; we’ve got Germans, Americans, Canadians and local Chinese members.” There’s some milling about and gossip before everyone displays enough discipline to sit in their assigned sections. In Colin Touchin’s absence William Chong steps in, and it’s amazing how quickly he whips them into shape in run-throughs of Panis Angelicus – yes, from St Thomas Aquinas’s Sacris solemniis – and Abba’s Take a Chance on Me.

Everyone has his favourites: Patrick is partial to I Dreamed a Dream from Les Misérables, Neil likes the chord progressions and harmonies of traditional Welsh songs, like Men of Harlech. All admit crowd-pleasers in Cantonese, Tagalog and Mandarin, like Teresa Tang’s classic The Moon Represents My Heart, are vital for reaching new audiences. The eminently singable Bohemian Rhapsody is a favourite. Is the HKWMVC getting ready to eclipse the late, great Freddie Mercury? A chorus of “No!” and denials ring out.

Back over at The Li Hall beside St John’s, about 20 of the choir’s 50 members prepare for rehearsal. It’s an amiable gathering that, while thin on Welshman, has, according to Patrick, a huge cross-section of

Patrick is a DB newbie at two years, having moved in after retiring. He and his wife think it’s great. “Previously I tended to think of it as a rather artificial place for Europeans, but it’s fantastic,” he says. “It’s peaceful. We don’t have the madding crowds. We’ve been very pleasantly surprised.” Dennis, also with two years under his belt, says simply, “It’s lovely there.”

It sometimes seems that every social activity comes with a side of Sauvignon Blanc, and it can be hard to reconcile that with a wellness-focused lifestyle. Samantha Wong reports

W

e all love to unwind at the end of the day… sometimes through a great training session or trail run, and sometimes in the plaza with the help of a few glasses of wine. Everything in moderation, right? Or not? Do we know what alcohol actually does to our bodies? Do we know how drinking impacts our health? And just how much alcohol is too much alcohol?

First, the bad news. Moderate to heavy drinking brings a long list of potential health problems with it, such as cardiovascular disease (heart attacks and strokes), liver and kidney dysfunction, diabetes, pancreatitis and osteoporosis. It is associated with an increased risk of certain cancers, including breast, oesophageal and liver.

THE DEMO

Furthermore, even moderate drinking messes with our hormones. It lowers testosterone, increases oestrogen and elevates cortisol (through poor sleeping patterns). Both sexes are affected in terms of fertility. And perhaps most profoundly, heavy drinkers and their families tend to have decreased quality of life.

“It’s not all doom and gloom,” says 10-year health coach and personal trainer, DB resident Claire Mas. “If you do enjoy a drink regularly, celebrate the benefits of being in the light to moderate category. Studies show that low to moderate alcohol consumption (particularly red wine) may improve immunity, reduce cardiovascular disease and stave off Alzheimer’s.

Now, the good news. Medically speaking, it’s fairly well-accepted that low to moderate drinkers may actually be healthier as a group than people who don’t drink at all.

“These benefits are not a reason I would advocate non-drinkers to start today,” Claire adds with a smile. “But rather a reason to encourage those who do consume

alcohol to be conscious of their amounts so that it is a support, rather than a hindrance, in their wellness journey.” How much is too much? So how much alcohol is too much? As with most health issues, the answer is different for each individual. It also depends on our age and gender. Men can drink more because they have higher levels of alcohol dehydrogenase, an enzyme in the stomach that digests alcohol, meaning less alcohol actually enters their blood


founding director and naturopath Graeme Bradshaw. “These are the ‘cleanest,’ least inflammatory choices. And drink your spirits without sugary mixers, which add extra calories. Try carbonated or soda water, with a splash of fresh lemon or lime juice.” And what of tonic? It doesn’t taste especially sweet (thanks to the bitter quinine), but it’s there on the label – 8 grams of sugar per 100 millilitres. This means that when you settle down to drink two modest gin and tonics, you consume at least four teaspoons of sugar. One alternative is to play around with soda and natural sweeteners – muddle some berries in the bottom of your glass or slip in an orange peel. But if you can’t imagine G or V without T, here’s a hot tip. Pay that little bit extra for Fever-Tree Naturally Light Tonic Water – it contains just 2.9 grams of sugar per 100 millilitres and has no nasty, artificially sweetened end flavour.

ON DRINK stream when they have a drink. Low to moderate alcohol consumption is typically defined as five to eight drinks per week for men, and two to six drinks per week for women. Moderate to high alcohol consumption is defined as 10 or more drinks per week for men, seven or more for women. Binge drinking is defined as five or more drinks at one sitting for men, and four or more drinks at one sitting for women. Now consider that a ‘standard drink’ contains around 0.6 fluid ounces of

pure alcohol. That’s about 12 fluid ounces of beer, 9 fluid ounces of malt liquor, 5 fluid ounces of wine and 1.5 fluid ounces of 80-proof distilled spirits. What’s your poison? If we’ve got a handle on our drinking and we’re drinking in moderation, which type of alcohol should we choose? Are some drinks ‘better’ for us than others? “Stick to low-sugar spirits, such as tequila, scotch or vodka,” says Integrated Medicine Institute (IMI)

And so, to wine. “Red is your best choice because it’s lower in sugar than white or sparkling,” Graeme says. “If you have gut issues, avoid beer and whisky as they often contain gluten and wheat. “Nominate three to four alcoholfree days each week,” Graeme adds. “Always note how much alcohol is going into your drinks and alternate them with a glass of water to stay hydrated.” The day after But does a big night out cancel out all the progress we’ve been making at the gym and with our diets? What’s the story behind alcohol consumption and fitness? Claire willingly admits that she drinks on average once a week because she enjoys the social aspect. “There are some weeks when I don’t drink at all and others when I have a 

couple of events to attend that might involve drinking,” she adds. “I do not drink in excess and I try to drink as much water as possible.” However, Claire is quick to focus on the way alcohol dysregulates hormones. “These changes will increase fat mass, decrease muscle mass, increase muscle soreness and decrease your energy levels. “Alcohol metabolism also inhibits nutrient absorption, so that what you are eating doesn’t necessarily make it to the tissues and organs that need to recover,” Claire adds. “If you are an exercise enthusiast (three or more sessions weekly) and a moderate alcohol consumer, you should be bolstering your body’s post-fitness recovery with at least a quality multivitamin, fish oil and branchedchain amino acid on the days that you choose to have a drink.” Opening the discussion about alcohol and weight gain, Claire says, “After you drink alcohol, your body diverts all of its resources to getting it out of your system, so it stops processing other forms of energy, storing them for later. A recent study suggests that it’s not alcohol itself that makes the waistline grow, but the food eaten after drinking that ends up on your love handles. Next time you have a drink, consider that everything you eat for the following hour will likely end up being stored, not burned. I commonly see clients lose 5 to 10 pounds just by cutting back on alcohol.” As well as packing on the calories, alcohol can get in the way of our wellness goals, simply because of the way it makes us feel the day after. We’re grumpy and lethargic, and in the mood for nothing that can’t be achieved from the couch.

“My biggest problem with drinking is that it’s such a demotivator,” says Claire ruefully. “I regularly see dedicated clients, who’ve worked hard on their diet and fitness goals all week, blow it all with a heavy drinking session on Friday night – after that the rest of their weekend is a wipe out.”

Many of us are programmed to think of drinking as a reward, something we get to do after a tough week. And I for one need to rethink this. For now, I’ve decided that as long as I’m drinking mindfully and controlling my intake, there’s no reason I can’t hit McSorley’s for a glass or two every now and then.

Essential chasers Graeme Bradshaw at IMI recommends that those of us who drink regularly introduce the following nutrients and supplements into our daily routine. “Take Liver Support – a potent clinical-grade formula containing milk thistle and other effective herbs – before you go out. Globetrot ters Suveera Sharma sits down with a DB family of five as they prepare to take a year’s sabbatical and travel the world

W

hat would it feel like to escape from where you are, cut off the shackles of work, society, education and more, and embrace true freedom by travelling the world? How wonderful would it be to flirt with a new destination for a while, and then move on to the next once the affair ends? Doug Tahirali and Mary Christine Merkley, with their three children, Kaia, 13, Skye, 10, and Willow, 8, are doing just that. They are taking a break from school and jobs and heading off for a year to travel the world. The travel bug Between them, Doug and Mary Christine, or MC as her friends call her, have already lived in nine countries, arguably more. And they both caught the travel bug early on.

Born in Canada, MC grew up in Geneva before heading back to Canada for university. She’s lived in Singapore and Australia, as well as Hong Kong. Doug, who comes from a military family, was also born in Canada, and while he too went to university there, he grew up in Belgium and Germany. Before settling in

Hong Kong, he lived in Africa for a year in a one-man tent, spent a year exploring the US in an old Volkswagen camper van, and a year backpacking in Asia. The couple first met in Canada and got serious 11 years later when they reconnected on a dive trip in Thailand. MC recalls, “When we decided to be together, we made a promise that even when we had kids, we would not give up on travel. We’ve been in Hong Kong for 15 years – 10 of those in DB, which is probably the longest we’ve spent in any place – but we have always travelled and taken the kids with us. We’ve been to Cambodia, Thailand, Vietnam, Singapore and Malaysia.” “We’ve given our kids 10 years of stability in DB,” Doug says. “For the younger two kids, DB is their first home. Now is the right time for them to embark on this adventure.” The grand tour It’s clear that travelling is the family’s first love. They left DB on July 5 to honour a promise made years ago, and will be travelling for 12 to 13 months. They plan to cover at least three continents, taking in as many countries as possible in order to make the most of their time away. 

MC explains, “We kickstart our trip by travelling to Mongolia for the Nadaam Festival, which [rather aptly] celebrates the nomadic culture of Mongolia. We’ll move on to Beijing to see the Great Wall, then on to Chengdu and Tibet.” Doug says, “The first part of the trip is very organised, and we know exactly what we’re doing. It’s better to introduce the children to the experience slowly. Later, we might be more flexible and play it by ear. “We will spend roughly three-and-a-half months in Asia, two-and-a-half months in Africa and six months in Latin America,” Doug adds. “We will be going to Nepal, followed by Uzbekistan, Turkmenistan and India. After this, we’ll move on to South Africa, covering Namibia and Botswana, and Zambia to see Victoria Falls. We will then go to South America, visiting Colombia, Peru and Ecuador.” Practical matters MC and Doug have both given up their jobs, (she’s in sales, he’s a physiotherapist), and put their belongings into storage. The girls will be home schooled while they’re travelling – “a combination of formal National Center for Distance Education and Khan Academy online courses… and school of life,” says MC. “Their teachers at the French International School have been hugely supportive,” she adds. “The school has given us one year leave of absence without needing to reapply. The girls will have their spots as long as we return by September 2019.”

In order to keep up the connection with home, the family has set up a blog, which they will update regularly with their travel experiences. “We have made it interactive so our friends and the kids’ friends can add their comments,” MC says. And what of finances? How are the couple funding a trip of this magnitude? “We have been saving for this trip for five years now,” says MC. “We are using air miles wherever possible. The budget is geared for backpacking and eating local.”

I also want to see the Isle of Skye because it has the same name as me.” It looks like Europe will be added to the family’s itinerary because not only does Skye want to visit Scotland, Kaia has a thing about France. “In history class, we have learnt about France, which I haven’t seen yet. I would love to go there,” she says. “I’m also excited about visiting Machu Picchu and want to see the cool rainbow mountains.”

What the kids have to say

For both girls, the only fly in the ointment is having to leave their friends behind. Kaia, already in secondary school, says, “I have mixed feelings as it will be tough to say goodbye to my friends not being sure whether I will ever see them again.” Skye knows she will miss her friends but is confident they will be able to stay in touch via the family’s blog.

So, what are the children looking forward to the most? Skye chips in excitedly, “My friends went on an African safari and it sounded like

We only have this one life to live and we have to live it in a way that sets an example for our kids and shows them the great life. That window is narrow. Time is running out and the kids will grow up.”

peak to any Early Years educator, and they’ll tell you that the big debate today is on the ‘push down’ of academics and whether children are being robbed of play, with many professionals expressing concern about the impact this has on young children and what it means for the future of society.

In a world where we try to fill young children’s schedules with formal, planned lessons, are we denying them the vital learning that selfinitiated play provides? According to experts such as psychologist Peter Gray, supporting and encouraging children’s inborn drive to play and explore is vital in order to provide them with valuable skills for both living and learning. In his 2014 article for The

Independent, Give Childhood Back to Children, Gray states, “If we want our offspring to have happy, productive and moral lives, we must allow more time for play, not less.” With this in mind, it’s clear that formal education for young children should have strong elements of play embedded. In fact, all forms of learning, including physical, social, emotional and cognitive development, are rooted in play, as students follow their curiosities to solve problems, with new ideas constantly unfolding in front of them. Defined as voluntary, self-motivated and engaging, play enables children to learn crucial lessons such as the cycle of practice, fail, try again; thus building persistence and resilience. Play also provides children with the

opportunity to develop confidence and creativity as they become risk takers and problem solvers, and it helps to strengthen cognitive thinking, with children taking an active part in their own learning. In a world where today’s workplaces report a lack of self-initiation, critical analysis and creativity, these valuable skills cannot be underestimated. Also embedded in play are social and emotional skills. As they engage with their peers, children experiment with and explore the different cues and rules of interaction, and learn about cooperation. They also investigate relationships and emotions, which helps them to develop an understanding of social behaviours and norms, and provides an insight into their own emotional responses.


Furthermore, through imaginary play, children are free to experiment with familiar and unfamiliar characters’ roles; they gain empathy as they explore others’ perspectives and grow a strong sense of self and belonging as they role play, applying the knowledge they are gaining socially in their daily lives. This opportunity to experiment with the unknown also enables them to learn to control and understand their impulses and fears. Yew Chung International School’s (YCIS) Early Childhood Education (ECE) section strongly advocates learning through play and positively supports and encourages character development for every student. At YCIS, individual children are valued for their strengths and

differences. All too often as adults, we forget about the importance of the formation of personality within a child and how it needs to be gently nurtured. When adults provide time for play, they show children that they respect and trust in their natural and authentic desire to learn and question their world. Through play, children have the opportunity to develop positive and secure dispositions, stable characters and unique personality traits. Teachers are actively engaged with children, while closely observing the ongoing learning of all students. That learning is creatively extended through further investigations, relevant conversations and thoughtful settings to deepen children’s play. My business is a success because we have been able to cultivate a close relationship with both children and parents in addressing the academic needs of students. We have a proven track record in helping students to cross hurdles, build confidence and improve their grades, all in a progressive and comfortable manner. We also provide a friendly and happy learning environment. As a result, parents and students recommend Eye Level to their friends within the community. To succeed in business, you need to have passion and believe in what you are doing. Stick to this belief and at the same time, finetune and enhance the minutiae of your business to fit the changing needs of the market. My advice for someone looking to start up a business is search your soul and find a business that fits your value system. Running a business is a job which asks for 24/7 attention and effort. One needs to have the energy and the will to keep going. My greatest achievement is hearing students tell me, “Math is so easy now, I love math!” It’s wonderful to see students improving their grades and moving up maths groups in school. I am also extremely happy and moved that many parents put their trust in Eye Level for long periods of time – some of our students have been with us for over 10 years. My plan for the future is to continue to serve the DB community as best we can and to find ways to enhance our offering to suit the needs of our students. When hiring staff, I always consider whether we share the same values. When that happens… boom! It’s a go! There are always ups and downs in any business. You need to have staff with similar value systems to ride the waves together. My personal motto is One step a day brings you closer to your dreams. The last person I texted was my lovely wife. elebrated on the 15th day of the eighth lunar month each year, MidAutumn Festival is a big deal all over Hong Kong, coinciding with the full harvest moon. This year’s festival falls on September 24, and whether it’s your first time celebrating or an event your family regularly enjoys, there’s a whole lot of fun to be had. While many cultures mark some sort of harvest festival, China has been celebrating this ancient seasonal rite for nearly three millennia, originally paying homage to a mythical dragon that brought rain for the farmers’ crops. Islands District Council Member (Discovery Bay) Amy Yung explains: “Mid-Autumn Festival is an ancient Chinese traditional custom that goes back thousands of years to the Shang dynasty, and is rooted in a communal celebration of the annual harvest. At the same time, it marks the changing of the seasons as part of the continual cycle of life. Successive generations are also part of this cycle, so it is natural for all the family, young and old, to get together to celebrate.” Born 10 days after Mid-Autumn Festival, Amy shares that she was named after the moon goddess, Chang’e. Said to bestow great beauty and romantic good fortune upon her followers, these days, Chang’e is honoured by burning incense, performing lion dances, and carrying lanterns – which are said to allow her to see her worshippers more clearly. Festive feasting And what is a celebration without food? Mid-Autumn Festival’s very own delicacy is the mooncake – an acquired taste, and an indulgent one. Made from an

intricately decorated pastry case that is filled with either lotus seed or red-bean paste, mooncakes also traditionally contain salted duck egg yolk, resulting in a rich, unctuous texture. If that isn’t quite to your taste, there are plenty more contemporary interpretations of the mooncake, including chocolate, ice cream, durian and even peanut butter versions that are every bit as celebratory. Most of Hong Kong’s luxury hotels sell beautifully packaged mooncakes that make great gifts. Maxim’s mooncakes, available all over town, make for a tasty, low-cost alternative. Mid-Autumn Festival also coincides with hairy-crab season. September through November, hairy crabs migrate from their freshwater habitat toward the ocean, and they are caught by mainland Chinese fishermen in river deltas. Supplies are limited, so you pay more than you would for a regular freshwater crab. Best accompanied by Chinese rice wine or ginger tea, the hairy crab’s flesh (particularly the female’s) is renowned for its sweetness, while its roe is creamy and buttery. You’ll have to head into town for your annual hairy-crab fix, but check out the special MidAutumn Festival menus at the Auberge Hong Kong, Club Siena, Discovery Bay Recreation Club

(DBRC) and Peony for steamed garoupa and other traditional Chinese delicacies. Lighting the night You can join lantern parades all over Hong Kong on September 24, but it has become traditional for DB residents to gather on Tai Pak Wan and celebrate the festival as a community. And while the festive atmosphere and picnicking families are a heart-warming sight, there is one element of the celebration that is not so welcome – glow sticks. Dana Winograd of Plastic Free Seas (PFS) and DB Green explains, “The first problem with glow sticks is that they are wasteful. They are a single-use plastic toy, used for a few hours and then thrown away. If they are disposed of correctly, they end up in the landfill, and we all know that the landfills are getting full. If they are not thrown away properly, they can end up in the ocean or in the environment, adding to the problem of plastic marine pollution.” Glow sticks’ outer plastic casings are not the only environmental issue. “Glow sticks contain chemicals to make them glow and so they contaminate the water and sand if they are cracked open,” Dana adds. DB Green (now joined by PFS)  has organised a beach clean-up

PFS and DB Green’s mission is to keep encouraging people to veto glow stick-use and to clean up after themselves at the end of the night at Tai Pak Wan on the day after the Mid-Autumn Festival for the past 11 years. In the past, they would collect upwards of 1,000 glow sticks, but recent attempts to inform people about the environmental hazards have reduced this number exponentially. “This campaign has been very successful and last year we collected less than 100 glow sticks on the beach,” Dana says. “There was a marked decrease the previous year as well. “Facebook posts encouraging people not to use glow sticks or to use less have helped inform parents of the issue,” Dana adds. “And we talk about the use of glow sticks in our work with students in schools. When children understand the impacts that these single-use plastics can have, they often opt for alternative ways to celebrate.” Going forward, PFS and DB Green’s mission is to keep encouraging people to veto glow stick-use and to clean up after themselves at the

end of the night, thereby reducing the amount of plastic waste created at the event. “People can use reusable items instead of single-use items – reusable lanterns, rechargeable battery-operated toys and flashlights,” Dana points out. Family Focus Amy concurs that glow sticks are a no-no on our beaches, urging families instead to get crafty. “In order to protect our environment, I prefer not to promote the use of glow sticks,” she says. “I remember during my younger days, we made our own lanterns, which was more creative and fun. The main materials we used were waste paper and haddock skins. Cheap and very effective, plus it was all our own work!” Pinterest has lots of examples of simple lantern-making guides to follow for all age groups, or you can buy paper lanterns in every conceivable shape and size all

over Hong Kong throughout the festive period. DB kids can also make their own ethical and eco-friendly lanterns at the DBRC on the evening of September 24. Of course, much like Christmas or Thanksgiving, the Mid-Autumn celebrations are a time to gather as a family and reflect on the year that has passed. In Hong Kong, the day after the festival is a public holiday, allowing families to eat together on the evening of the festival itself and rest up the following day. Amy recalls family celebrations in DB back in the mid-1990s: “My whole family used to celebrate the Mid-Autumn Festival together. After dinner, we went down to the beach – we brought along mooncakes, desserts and fruit. The memory of three generations gathering together enjoying those supertasty foods under the full moon is still as fresh and sweet today as it was then. The silver light reflecting off the gently rippling sea was quite magical.”

Castelo de São Jorge (St George Castle) is another must-visit – it towers majestically over the city and is a great spot to get your bearings.

WILDEST TRAM RIDE Lisbon is spread across seven steep hills, and one of the best ways to explore it is by hopping on the famous Tram 28, which packs in a number of the city’s attractions for the price of your ticket. You’ll also want to navigate the narrow lanes in the old town – Alfama – on foot, admiring the beautiful azulejos (painted tiles) on the buildings as you go.

Mint and Coriander Chutney Serves 4 • Mint leaves, small bunch • Coriander leaves, small bunch • 1 green chilli • ½ inch fresh ginger • ½ medium-sized onion • 1 lemon, juice only • 1 tsp sugar

Chop the mint, coriander, green chilli, ginger and onion. Put in a blender and add the lemon juice and sugar. Season to taste with a little salt. Add about 4 tbsp of water and blend all the ingredients together.

Vegetarian Kebabs Serves 4 • 8 mint leaves • 5 rose petals • 1 green chilli • ½ inch fresh ginger • 75 g cashew nuts • 113 g kidney beans, cooked • 75 g cottage cheese, well drained • 2 medium potatoes, boiled and mashed • 1 onion, sliced and caramelised • 2 tbsp cornflour • 1 tsp garam masala • 1 tsp chaat masala, optional

Grind the mint leaves, rose petals, chilli, ginger and cashews together in a food processor to make a coarse mixture. Add the kidney beans and blend again. Next, place the kebab mixture in a large mixing bowl. Add the remaining ingredients, and knead well to make a dough. Divide the mixture into 8 equal portions. Shape the portions into circular discs and place them in a preheated pan, greased with oil. Drizzle a few drops of oil over the kebabs and fry them on both sides until lightly crisp. etween us, my Spanish friend Carina and I have five languages. OK, I have just one. But I also boast a brief introduction to Swahili gained over lunch at a Greek restaurant in London with the late comic genius Spike Milligan. The brilliant and troubled Spike had recently returned from Kenya where he’d picked up an English-Swahili phrasebook published in the late 19th century. Over six hours of Retsina and ridiculousness, Milligan tried to slide into the conversational chaos this unforgettable phrase from his antiquarian find: “They have stolen the deaf man’s pineapples.” Try it sometime – and without losing your lunch. Which brings me to Spanish (no it doesn’t, and to brag of some sort of literary device to arrive there is cheating). I’ve been visiting Spain long enough to remember the east coast before it was vandalised via corruption and concrete. Spanish friends are appalled that I have mastered virtually none of their tongue (an

THE INTERNATIONAL CONNECTION Having learnt a little Swahili in a Greek restaurant in London, Peter Sherwood reveals that he’s gone on to create his own Latin-based lingo. It fails to build bridges with Spanish friends but it’s easily as popular as Basque! accusation I slither unctuously around by telling them I understand a lot but can’t yet speak it). Fact is, I long ago worked out that on hiking trails and in villages, I can get away with the words for bed, beer, wine and sandwich. And if that doesn’t work I revert – like most Australians and Brits – to the traditional linguistic homage to foreigners… speak much slower and a lot louder. I’ve been able to irritate the very tapas out of these same friends by developing a Spanish of my own, and while I remain the only one who can comprehend it, I feel I’m at least making a sort of Latin-based effort to integrate, while creating a lingo possibly centuries ahead of its time. It seems reasonable for my Spanish dialect to eventually be considered a work of some greatness, much along the lines of Bill Shakespeare or Samuel Johnson.

My established lexicon is too long (and colourful) for this page, but I can offer a few scintillating examples: Fotografia rapido (a movie). Fotografios rapidos (more than one movie). Marcus y Spencario (Marks and Spencer). Roberto es tu tio (Bob’s your uncle). Et cetera. As horrifying as it would be to both France and Britain, there lurks in the list of historical ‘what ifs’ the possibility that Britain would be French speaking if not for a few quirks of marital and martial fate. And were the Pyrenees mountains low rolling hills, who knows what languages Spain and France would be speaking instead of rarely speaking to each other. Maybe Basque would dominate; a language that has no known relative. Not so Hungarian, a cousin of Finnish. No, I can’t make sense of that connection either.
