Farewell to David Edwards, but Onwards and Upwards for ASCA
A message from outgoing CEO, David Edwards
After a wonderful 14 years as CEO of ASCA I am retiring and handing over to Christine Bucca, who many of you will know as our previous Marketing Manager and Deputy CEO. ASCA will be in very good hands.
Over the last 14 years we have seen ASCA expand to all states and territories, with our membership now over 7100 schools. Our school canteen services have expanded, and we have a very high-quality group of supplier partners that fully understand the needs of school canteens.
Within the school more broadly, we have over 40 school supplier partners, ranging from the biggest and best known names, to innovative new suppliers that are introducing excellent new products and services.
And with the support of our member and supplier partners ASCA is now able to channel our funds to 10 charities that support the education of vulnerable children.
It is exciting for
me to know that ASCA’s new CEO has plans to further improve our services, and I am delighted to hand over to her.
I am thrilled to become the CEO of ASCA. This organisation has been close to my heart over six years now, and I am fully committed to expanding our reach.
ASCA not only provides essential savings and access to high-quality products and services to its member schools but also fosters a sense of community and connection among members. We aim to improve our services by adding more value, making things easier, more interactive, and more accessible. This includes making our newsletters more useful through interactivity.

Risoni & Meatballs
INGREDIENTS:
San Remo #47 Risoni 5kg
7kg Napolitana sauce
150mL olive oil
10 onions, finely chopped
20 garlic cloves, finely chopped
5kg pork & veal mince
5 cups breadcrumbs
METHOD:
2 1/2 cups grated Parmesan (plus extra to garnish)
10 eggs
2 1/2 cups finely chopped parsley (plus extra to garnish)
10 teaspoons sea salt
5 teaspoons cracked black pepper
10 balls fresh mozzarella
1. Heat a small frypan over medium to high heat, add olive oil, onion and garlic and sauté until softened. Set aside to cool slightly.
2. Place cooked onion and garlic, mince, breadcrumbs, Parmesan, egg, parsley, salt and pepper into a medium bowl and mix well to combine. Form into walnut sized meatballs.
3. Meanwhile, bring Napolitana sauce and 2 cups of water to the boil in a large, deep frypan.
4. Add meatballs and simmer for 5 minutes.
5. Add Risoni, stir well, cover and simmer for 15 minutes, stir occasionally.
6. Garnish with torn mozzarella, chopped parsley and grated Parmesan.
7. Serve and enjoy with family and friends!

Spinach & Ricotta Cannelloni
INGREDIENTS:
San Remo #99 Cannelloni 250g
250g frozen spinach (thawed)
225g fresh ricotta or cream cheese
2 egg yolks, lightly beaten
1 clove garlic, crushed
Pinch of nutmeg
METHOD:
1. Preheat oven to 200°C.
1/2 cup grated cheese (plus extra for serving)
Salt and pepper to taste
2 tablespoons olive oil
400g canned tomatoes
2/3 cup basil leaves
2. Mix spinach, ricotta cheese, egg yolks, garlic, grated cheese, nutmeg, salt and pepper together thoroughly in a medium sized bowl.
3. Fill cannelloni tubes with the prepared mixture.
4. To make the sauce, heat olive oil in frying pan, add canned tomatoes, basil, salt and pepper and bring to the boil. Remove from heat.
5. Grease an oven proof baking dish and pour layer of sauce over the base leaving enough to cover cannelloni.
6. Place a single layer of filled cannelloni side by side in the baking dish. Pour over the remaining sauce. Sprinkle with grated cheese.
7. Bake in oven at 200°C for 25-35 minutes (test by pricking with a skewer).
