‘I just wanted to write and say what a brilliant idea your Wonky Veg Boxes are. There’s so much in them – they’re really good value. From our box, we ate the potatoes, parsnips and cabbage with Sunday roast, the peppers and cucumber in a salad for work lunchboxes and we used the leeks and onions in a casserole for a quick and tasty weeknight tea. E
very Friday night for th he last six years, my sons Rhy ys, 11, and Owen, 10, have go one to St John Ambulance Badgers – a weekly first-aid group for kids. Owen has a severe nut allerg gy and suffered anaphylactic shockk aged five, which made me realise how important it was for them to o know what to do in an emergency y. As a single mum, I was always on the go, especially when I was pregnant with my third son Max in 2015. Juggling work with ch hores and childcare, I never stopped, so when I started to feel breath hless and occasionally faint, I just assumed I should take thingss easier. But after Max, now one, came along, I started to feel worse e. One afternoon in June 2015, whe en he was a few months old, we came home from visiting relativess and I suddenly felt woozy and brea athless. Max was sleeping, so I went for a lie-down while Rhys and Owen played on their Xbox. But as I walked across the bedroom, my

heart started thumping so hard, like I’d just run a marathon. Then everything went black and I slumped to the floor. Hearing the thud, Owen and Rhys rushed in to find me lying unconscious. Instead of panicking, my two brave boys swung into action. While Owen dashed to get the neighbours, Rhys dialled 999 and calmly told the operator what had happened. As instructed, they moved me onto my back to clear my airways, and opened the front door so the paramedics could run straight in. Five minutes later, they arrived, bundled me into the ambulance and hooked me up to an ECG to monitor my heart. As I came round, the paramedics told me what had happened. I was horrified, but so proud of the boys. If they hadn’t called 999 and followed the instructions, there’s no telling when, or if, I would have woken up. At Ealing Hospital, doctors said they suspected I had a type of tachycardia – an abnormally fast heart rate – as the electrical signals in my heart weren’t firing properly, and they referred me for more tests to get to the bottom of it. As soon as I was discharged, I went home and gave the boys a huge hug and thanked them for their bravery. ‘It was scary, Mum,’ Rhys admitted. ‘We did cry a bit, but then we remembered what we had to do!’ Two months later, the boys were invited to a Young Achievers’ Reception at Buckingham Palace to celebrate 70 St John Ambulance volunteers who’d all done amazing things. They were so excited to meet Princess Anne and tell her how they’d saved me. Then the following month, they received a St John Ambulance commendation at a ceremony in St John’s Church in Clerkenwell. Watching them go up to collect their badges, I felt so proud. Thankfully, I haven’t collapsed since, and if I feel my heart racing, I sit down immediately and rest. I’m due to have more tests, then I may need an operation or medication to stop it happening again. But in the meantime, I know my two little superheroes are watching over me. ‘Mum adopted our neighbour’s kids’ Jasmine Berry, 23, is a social work student and lives in Dagenham, Essex
N
ot many people would take in their neighbour’s children without hesitation – but that’s precisely what my mum Marcia, 56, did. A single parent to me and my brother Clarke, 24, she adopted twins Nathan and Eve, now 15, four years ago – and I couldn’t be prouder of her. We first met our neighbour, Anne, and the twins back in 2002, when they moved in across the street. Mum and Anne would always stop to say hello and we’d feed their cats when they went on holiday. But we didn’t have that much contact until 2008, when Anne told Mum she’d been diagnosed with ovarian cancer. Apart from a sick, elderly mother, Anne had no other close family – the twins, then nine, had been conceived by IVF with donor sperm. So, I started babysitting a few hours every day to give Anne a chance to rest and recuperate. By 2011, though, Anne was going downhill fast. Chemotherapy and a hysterectomy hadn’t stopped the cancer from spreading, and when I told Mum that Anne was struggling to take care of the twins, she started coming to the house with me. Every evening and morning, we’d make sure Nathan and Eve were fed, bathed, tucked up in bed on time and got up for school. Just nine years old at the time, neither of them really understood what was happening, but Mum was always there to comfort them with a hug or kind word. Intensely private and in denial about how sick she was, Anne never spoke about what would happen to the twins after she died, and we assumed someone from her extended family would step in. But in June 2011, Anne suddenly passed away in her sleep, aged 55, and it soon transpired that
there was no one else. Mum didn’t want the twins to go into care, especially as she knew it was likely they would be split up, so she immediately offered to take them in. Social services agreed, and they came home to our three-bed house that very same night, where I shared my double bed with them. Understandably, Nathan and Eve were devastated at the loss of their mum. They were quiet and withdrawn, too timid to even take a drink out of the fridge without asking. They were like two little lost souls. But over the following months, we showered them with love and affection. She took them bowling and to the cinema, and changed her hours at work so she could be home when they got back from school. Nurturing and patient, she held them when they cried, and was gently firm if they pushed boundaries. In 2012, after all the checks and paperwork had been done, Mum officially became Nathan and Eve’s legal guardian. It was pretty cramped at home, but we made it work. Now, the twins are normal, well-adjusted teens – Eve wants to be an illustrator, and Nathan is sports mad. We love them dearly, and I know Mum, who they call Aunt Marcia, hasn’t regretted her decision for a second. It can’t have been easy for her. Money has been tight and she’s made so many sacrifices taking on two children at a time in her life when she could have been winding down. She never thinks of herself and never takes a break – she’s now training to trek the Great Wall of China in May, fundraising for Target Ovarian Cancer in honour of Anne. Unfailingly modest, she doesn’t even know how amazing she is – but Nathan, Eve, Clarke and I do. She really is one in a million. For more info, visit targetovariancancer.org.uk

Knowing how hard it was, she wanted to help others struggling with Alzheimer's to help others struggling with the condition, Mum began volunteering for an Alzheimer’s charity after she retired in 2011. She helps with office admin and works in a cafe where sufferers and their carers go for respite and support. In her spare time, she knits twiddlemuffs – woollen muffs with buttons and different textures of thread, which act as sensory aids to help
soothe people with Alzheimer’s – and delivers them to local hospitals. Then, last year, she began volunteering with the Samaritans. After a six-month training programme, she now answers the helpline once a week. It can’t be easy dealing with people who are struggling to cope, but Mum handles it so well. Instead of relaxing and enjoying her retirement, she’s busier than ever, but I know she wouldn’t change a thing. From lost keys and forgotten homework to broken hearts and career woes, Mum has always been there. If anyone has a problem, she just wants to fix it – and that’s why she’s so very special. ometimes, a hero isn’t someone who does one big amazing thing – it’s hundreds of tiny kindnesses and a lifetime of always thinking of others before yourself. That’s my mum, Sue, 64. Kind, caring and utterly selfless, she’s always been there for me, my sister Nicola, 33, and so many others, too. When I was growing up, Mum always put family first. Her dad – my grandad, Jack – lived with us after my nana died of a stroke suddenly in 1985. Not wanting him to be on his own, Mum insisted he move in. And when he developed Alzheimer’s in 1999, she refused to put him in a home. It was hard for all of us to watch the warm-hearted and independent man we loved lose himself, but Mum was our rock. When Grandad got up in the middle of the night to wander around the house, she’d gently lead him back to bed. When he called her by her mum’s name, she didn’t even flinch. When he forgot how to do something simple like toast crumpets, she was unfailingly patient. She spent countless hours on the phone, trying to get him all the help he needed, and all this despite working full-time as a special needs coordinator in a school – a job she couldn’t afford to quit as a single mum to me and Nicola. Over the next few years, Grandad got more and more confused, frequently forgetting where he lived, or thinking it was 40 years earlier. He’d go to the post office every day for his pension and tell people he was being kidnapped! Still, Mum was adamant he would stay with us until the end – which came in 2003, when Grandad died from a heart attack aged 85. We were all devastated – Mum especially, as they were so close – but as usual she held it together for our sake. Knowing how hard it was, and wanting

SERVES 4 READY IN 25 MINS PRICE PER SERVING £1.25
Add 350g Extra Special Fettuccine to a pan of lightly salted boiling water. Stir once, bring back to the boil and simmer for 11-13 mins. Drain and return to the pan. Meanwhile, put 300g fresh peas, shelled, 150g broad beans, shelled and podded, and 250g asparagus in another pan and just cover with boiling water. Bring back to a boil and simmer for 4 mins. Drain. In a large pan, cook 1 red onion, chopped, in 15g butter and 1tbsp olive oil until soft but not browned. Add 10 cherry tomatoes, halved, and cook for 1 min more. Mix zest 1 unwaxed lemon, 2tbsp lemon juice, 1tbsp olive oil, 4tbsp Asda Crème Fraîche and 1tbsp Dijon mustard. Add to the pasta with all the veg and toss together. Reheat. Serve with a sprinkling of Parmesan, basil leaves and a lemon wedge.

● Butcher’s Selection Boneless Pork Shoulder Joint (about 1.8kg) ● 1 level tsp Asda Smoked Paprika ● 1 level tsp Colman’s Mustard Powder ● 1 level tsp brown sugar ● 1 tbsp sunflower oil ● 300ml apple juice ● 1 spring onion, shredded
● 1 red chilli, finely sliced ● BBQ sauce, to serve
1 Mix the paprika, mustard and sugar with the oil to make a marinade. 2 Preheat the oven to 150C/ 130C Fan/Gas 2. 3 Score the rind with a sharp knife – don’t cut too deep. 4 Rub the marinade over the meat but not the rind. Put the joint in a roasting tin, skin-side up. Carefully pour the apple juice into the tin,
around but not on the pork. 5 Cover with foil, loosely tented over the meat but forming a tight seal at the edges. Oven-cook for 6 hrs. 6 Carefully remove the foil and pour off some of the liquid. Turn the oven up to 220C/ 200C Fan/Gas 7. Return the pork to the oven and cook, uncovered, for another 20-25 mins, to crisp the rind. 7 Shred the tender meat with two forks and garnish with the spring onions and chillies.

FOR THE BISCUITS ● 150g ground almonds ● 200g icing sugar ● 4 large free range egg whites ● 75g caster sugar FOR THE FILLING ● 75g icing sugar ● 150g butter, softened ● 3 drops vanilla extract TO DECORATE ● Your choice of Dr. Oetker Gel Food Colours (optional) 1 Line 2 baking trays with
baking paper. 2 In a processor, blitz the ground almonds and icing sugar until completely mixed into a fine powder. 3 Whisk the egg whites in a bowl until they form glossy peaks – this is best done with an electric hand-mixer. Make sure the bowl is clean and dry or the mixture may collapse.
4 Add the caster sugar 1tbsp
at a time, whisking until stiff again after each addition. At this stage, add 1-2 drops of the food colour, if using. 5 Sift of the almond mixture at a time over the egg whites, folding in each time until it’s all combined. Spoon into a piping bag. 6 Pipe 56 x 3cm rounds onto the baking trays, leaving space between them to allow for spreading. Leave to rest for 15 mins. Preheat the oven to 180C/160C Fan/Gas 4. 7 Bake for 15 mins, then allow to cool on a wire rack. 8 For the filling, beat the icing sugar, butter and vanilla until fluffy, with 2 drops food colour, if using. I like to buy big bags of potatoes, but find they start to go green before I use them all. Can I avoid this?
Green skin on potatoes is caused by exposure to light, so the trick is to keep them in the dark and somewhere cool, ideally under 10C. Paint the carton with acrylic paint. Draw and cut out ‘doors’ on two opposite sides of the carton – not too near the bottom as you need to leave room for perches. Punch a small hole beneath each door, making sure they are the same distance from the bottom on both sides. Carefully push a long pencil or thin piece of wood dowelling through one side and out the other side to make perches. Make a roof by sticking lolly sticks on two pieces of card, then paint. Glue on the top of the carton. Punch two holes through the carton top and thread with string to make a handle. Put bird seed inside, then hang your feeder in the garden. For a clever alert when the birds come calling, hang wind chimes next to the carton and join together with string. As peckish birds land, the feeder will swing and ring the chimes.

Ten-year-old Looby Loo, a German Shepherd rescue dog, may be crowned as our Top Hero. When her owner, Toby Snow, 58, slipped into a diabetic coma, Looby Loo came to his aid by alerting Toby’s partner to his plight. Grateful Toby from Eastbourne says, ‘I wouldn’t be here today if it wasn’t for my dog.’
First place might go to Hitch the guinea pig, who earned her name after getting a free 150-mile car ride from Kent to Nottingham – in a bag of straw! She was rescued by Support Adoption for Pets and re-homed by Chris Deltic, 49, from Walsall. He says, ‘Hitch is so well looked -after now, she doesn’t want to escape!’

Remember that every woman is different, so listen to your body and make sure to check with your doctor before undergoing any physical activity.

What was the most shocking discovery of becoming a mum? J: Feeling it’s acceptable to go out with baby bodily fluid on your clothes. Before, I was so immaculate but now I do the scratch-and-sniff test, pop a scarf on over the top and hope nobody notices. [Everyone agrees!] S: I care more about how Martha looks. I feel people judge you through your child – if she’s a wreck, so am I!
What did you Google? C: How long it would take for my perineum to repair! Stephanie: How to repair cracked nipp ples when your nipple is actually falling off ff... ff J: I never thought I’d search online forr pictures of dirty nappies and compare e them to Ella’s to check if she was norm mal!
What did you worry about? J: I was petrified to leave the house when Ella was first born. It’s amazing just how much stuff one little person needs. You go from a lovely little handbag to packing for a two-week holiday every day. B: You know to expect it, but nothing can prepare you for it. C: I’d go out without a blanket or nappies and have to call into a shop. J: Ella’s a winter baby and I constantly worried about her temperature, sending her out like a little Eskimo, wearing six layers – she must have been sweltering!
Exactly how exhausting is it? Bethan: Like no other exhaustion you’v ve ever known. C: Sometimes you can’t even string a word together. S: I actually still feel quite triumphant if I manage to have a shower every day.
Did you ever feel isolated? J: I never thought I’d d be the type but I joined an NCT [National Childbirth Trust] group when I was pregnant. We met up every week afte er our kids were born and it kept me sane e. It was so nice to talk to women going through the same thing.

C: There’s so much pressure on social media, with mums posting things like, ‘My baby slept through the night’ and ‘Well, my baby’s eaten a three-course meal’. You have to remind yourself that people only post positive things or you can lose perspective and feel alone. Breastfeeding or bottle? J: You just can’t win. There’s stigma around breastfeeding in public, but then some of my friends were ashamed to get a bottle out of their bag to feed their babies. S: Breastfeeding was incredibly difficult for me, physically painful, but I felt so guilty when I stopped after three months. C: I breastfed Jack for six months, then gave him a bottle as I couldn’t deal with waking up three times a night. But I still felt guilty. Breastfeeding is so difficult – nobody can help you with it. All your baby wants is you. What about moving on to solid food? J: I questioned whether I was a bad mum for buying instead of making Ella’s food. C: With Harry, I made everything from scratch and batch-cooked his meals. Jack just eats what we have and I blend it down for him – it’s far easier. B: For me, knowledge is power so I went on a weaning NCT course. It was simple stuff – like, they can’t eat shellfish and honey – but it gave me confidence. When did you feel most judged? C: I was pressured to give Jack a dummy

but health visitors advised against it. Everyone has an opinion, often conflicting, so you learn to go with your intuition. B: I sat and cried at one clinic. Crawford had only put on an ounce in two weeks and two nurses glanced at each other in horror. They probably thought I was unstable for getting upset!
My friends talk about going out until 4am in London. I talk about soft play – it’s worlds apart! The best surprise of becoming a mum? B: Seeing them grow and develop their own personalities. C: How much love you have for them – you can’t believe it, it’s overwhelming. J: You worry because everyone tells you about it and you hope you’ll feel it.
C: I didn’t have it instantly. For me, it came with time. S: Yeah, it grows, doesn’t it? I love Martha more as I get to know her. J: It does take time. You have so many mixed emotions – it’s a lot to take in. Your shape changes – how did you cope? B: I put on three stone during my pregnancy – it suddenly felt like it wasn’t my body any more, it was all for Crawford. But it didn’t put me off having a second baby. J: I was like the Michelin Man! I suffered from oedema – a condition where excess fluid collects in the body. After I had Ella, I expected my stomach to ping back flat again. But when I looked down at it, I was disgusted – it was like an out-ofbody experience, I didn’t recognise it. C: The dreaded stretch marks – ugh! I also lost the baby weight but my ribs are bigger. S: Mine too!

How has it affected your relationship? C: You have to work really hard as a couple. We plan a date night once a month now to keep up that connection! B: You have to be careful it’s not all chores and the baby – we made a promise not to talk about Crawford constantly. J: It’s easy to resent the dad. I felt like I’d given up my body for nine months and was suddenly chained to the house while his life hadn’t changed. But then I remind myself that I had the chance to adjust and becoming a dad is a massive change for men to handle overnight.

C: I look up to my mum for advice and she’s influenced the way I’m bringing up my children. J: But there’s a generation difference. I have different opinions and challenge my mum’s suggestions. But you do appreciate that it’s bloomin’ hard and find a new respect for your parents. S: My mum sees danger everywhere. I always said if I had a daughter I’d never worry like that, but I’m exactly the same! Your most embarrassing incident? S: In a café, Martha slid out of a highchair because there wasn’t a bar between her legs. I watched her slowly slide onto the floor. I was mortified. C: Squirting breast milk across the room at a stranger. And putting a screaming Jack in his cot, then walking away. J: Yeah, I’ve left Ella in her room when she’s having a meltdown. People may frown on it but sometimes there’s nothing else you can do to console them. Baby product you couldn’t live without? S: You can’t have enough muslin cloths. J: Calpol, when Ella has a temperature. B: Our nappy disposal unit, because it stops all those horrible smells! C: When I need to get on with cooking dinner, I pop Jack in a Jumperoo – a bouncer – where he’s happy. It’s an absolute lifesaver!

Store leftovers in an airtight pot or covered with clingfilm for up to 3 days.

If it goes in easily, the squash is cooked. 2 Allow to cool before slicing in half lengthways and removing the inner orange flesh – make sure to discard
all the skin as well as the seeds and white pith. 3 Once cooled, weigh out 200g (eat any leftovers or use for soup). Whizz in a blender with the bananas and the juice until smooth, then serve immediately. Store leftovers in the fridge, covered, for up to 3 days (the banana may go a bit brown), or in the freezer for up to 3 months.

Babies are sensitive to the temperature of food, so test a little on the inside of your wrist – it should be no hotter than lukewarm. Many recipes can be frozen in little portions – use small pots or an ice cube tray. Before serving, thaw, heat to piping hot, then allow to cool again. Babies learn about food when they squish and squash it, so don’t tell them off for playing with their dinner! Don’t add salt or sugar when making baby food. Honey should also be avoided until your tot is at least one year old, due to bacteria that’s occasionally present in it. After your baby’s first birthday, you can replace formula or breast milk with cow’s milk – but you can breastfeed for as long as you want. Don’t feel guilty for using baby food from a jar. You can’t be Supermum all the time!

‘Meet the baby I thought I’d never have’

I still felt a huge sense of loss that my body wasn’t able to do what it’s designed for. Even tougher was being surrounded by women who were able to get pregnant easily. I have three sisters – one is my identical twin Claire – and eight nephews and nieces aged from four to 15. Claire announced she was

olding my daughter in my arms, just seconds after she was born, I could scarcely believe that I was finally a mother. Charlotte’s birth last June marked the end of a three-year journey, during which I’d pushed my body, marriage and finances to the limit – all to fulfil my lifelong dream of motherhood. When my husband Neil, 38, a management consultant, and I began trying for a baby in 2012, the year after we got together, I knew we’d need some help. I’d been treated for endometriosis, a condition that causes swelling and inflammation around the reproductive organs, as well as an ovarian cyst in 2010, and doctors warned I might need help to conceive. After eight months, my GP referred us for tests. These didn’t reveal why I wasn’t falling pregnant but we were advised to begin IVF because at 38, my fertility was waning. Despite knowing it would be hard for me to conceive,

I wept, ashamed at my jealousy that my sister was going to have her third child when all I wanted was one pregnant with Phoebe that year and, in private, I wept, ashamed at my jealousy that she was having her third child when all I wanted was one. Neil and I were entitled to one NHS-funded cycle of treatment and fortunately we only had to wait three months for it. I knew IVF held no guarantee of a baby, but the odds were stacked against me – I only had a 10% chance
every day to stimulate my ovaries, which left me tearful and emotional. Neil was so supportive and the thought that what we were going through might result in a pregnancy helped me cope. The following month, I had two embryos implanted then had to wait two unbearable weeks before I could take a test. Devastatingly, 13 days later, I began to bleed and
a test revealed that I wasn’t pregnant. I was totally overwhelmed with sadness. I’d been convinced that finally, it would be me with a bump, buying baby clothes and decorating a nursery. In an instant, all my optimism was smashed to bits. But I wasn’t giving up my dream yet and Neil agreed we should pay for a second cycle. We chose Assisted Reproduction and Gynaecology Centre (ARGC), a Harley Street clinic, because of its high success rate. This cycle of treatment, at a cost of £10,000, was much more intensive, involving daily blood tests, scans and meetings with doctors. I took a fortnight off work to devote myself to it, convinced that with such a tailored approach, it would work. So it came as a huge GOOD LIVING | 95

shock to be told the embryos created from my eggs and Neil’s sperm were of very poor quality. I completely fell apart. We went ahead but I wept throughout the procedure, knowing in my heart it wasn’t going to work, and I was right. Once again, IVF had failed.

With each Facebook pregnancy announcement or excited email, my heart broke a little more. I actively avoided pregnant women, even one of my best friends. I was ashamed but it was just too painful to see her bump growing. Sitting down together one evening in June 2014, Neil asked if I was sure I wanted
paid for from our savings. This third cycle, at the same clinic in September 2014, involved additional treatment and cost £17,000. As the day to take the test approached, I felt sick with anxiety. Neil and I waited in silence after I took the test in our bathroom, both prepared for failure.
I saw the result before Neil did and immediately dissolved into tears. He reached out to comfort me… then saw the positive test and we just held one another, alternately crying with relief and laughing with sheer joy. It was a moment I’ll never forget, pure elation that, after so long, I was pregnant. Early pregnancy is nerveracking for any woman and only when we reached the 12-week milestone could I finally begin to relax. I had a normal pregnancy and Charlotte was born on 5 June 2015, by elective caesarean section, weighing 7lb 14oz. I don’t think it was until she was laid on my chest, as Neil and I wept with happiness, that I truly believed I was a mum. It was the most surreal, amazing moment of my life.

It goes without saying that Charlotte is our whole world – we adore her. The love I feel for her is indescribable, and I believe she’s the baby we were destined to have. Every injection, every tear we shed, every penny we spent – they all led us to her. I will be forever grateful that IVF gave her to us and made my dream of being a mother come true.

What’s been your most exciting food discovery? Sushi. When I was 17 and modelling, I ended up living in Tokyo. At first, I couldn’t get my head round eating raw fish but, luckily, I loved it. Your favourite childhood food? My mum’s apple crumble and custard. She only used to make puddings for us at the weekend, so I really looked forward to it. What’s been your worstever food experience? Eating live sea urchins for our honeymoon breakfast when we were in the Caribbean. The guy who’d been diving 98 | GOOD LIVING
for them was so proud that I couldn’t refuse, but my stomach turned – they were still moving on the plate! Who’s the cook in your house? Me. Vernon’s hopeless. He needs some educating! Favourite roast? I’ve never liked red meat – in my teens, I used to squirrel it away in a napkin. But now I love cooking roast chicken on Sunday. And our local pub always brings extra gravy and Yorkshires when we turn up. ‘Here come the northerners!’ Do you have a trick for getting your kids to eat veg? I’ve discovered a great dish – steamed broccoli with a squeeze of lemon juice, chilli, garlic and bit of soy sauce, topped with toasted almonds – they love it! Do you limit their sugar intake? I keep chocolate as a treat at the weekend. I remember my dad would give me and my sister a Mars Bar as a treat on Friday

I can’t stand touching it and I’m obsessed with germs. I worry how clean the cupboard handles are! Do you bake? I made Amber a fairy princess ice cream cake for her last birthday. The base was layers of Neapolitan ice cream with sponge cake in a skirt shape – and half a Barbie was poking out of the top. What’s your guilty pleasure? I try to eat healthily but I’ve got a sweet tooth. I love Toffee Crisp Biscuits. I fight the kids for them at the weekend! How do you stay in shape? In January, after Strictly finished, I began exercising with a trainer twice a week. Then, for Sport Relief, I did a FitBit Celebrity Step-a-thon challenge with comedian Al Murray to help raise £100,000. Monitoring my steps has really motivated me to ditch the car and walk more.
