Cheat’s black dahl with pilau rice
This beany, zingy curry is welcome, pre-Christmas fuel. Tuck into a soulsatisfying bowl on a busy day.

• 1 tbsp vegetable or sunflower oil
• 2 garlic cloves, crushed
• 50g Asda Tomato Purée Double
Concentrate
• 500g jar Asda Madras Curry Sauce
• 2 x 390g tins Asda Green Lentils in Water, drained and rinsed
• 400g tin Asda Red Kidney Beans in Water, drained and rinsed
• ¼ lemon, juice only
• ½ red onion, finely diced
• 2 x 250g Asda Pilau Micro Rice (or wholemeal or basmati)
• Asda Half Fat Fresh Soured Cream, to serve (optional)
1 Gently cook the onion for 8 mins in the oil, in a medium-large saucepan with a lid. When soft but not browned, stir in the garlic and tomato purée for a min. Add the madras curry sauce and drained and rinsed lentils and beans. Rinse out

the curry sauce jar with 200ml water and add this to the saucepan too. Cover and heat through for 5–6 mins until bubbling, stirring occasionally.
2 Mix the lemon juice with the red onion to lightly pickle. Heat the rice following the pack instructions.
3 Season to taste, serve with fluffy pilau rice, top with crunchy diced red onions, and a little soured cream.

Winter ragu with garlic and herb crumbs
A fall-back supper for the busy season with loads of flavour for minimal cost in this super easy, family-friendly dish.

• 100g Asda Lean Pork Mince
• Ungherese-style salami from Asda Italian Style Cured Salami & Cheese Selection, diced
• 1 tbsp olive oil
• 3 garlic cloves, crushed
• 50g Asda Tomato Purée Double Concentrate
• 425g Asda Passata
• 2 heaped tsp Asda Onion Gravy Granules
• 390g tin Asda Green Lentils in Water, drained and rinsed
• 350g Asda Linguine (or spaghetti)
• 40g Asda Garlic and Herb Stuffing Mix
• 2 tbsp Asda Half Fat Fresh Soured Cream
1 Put a large saucepan of salted water on to heat up for the pasta.
2 Fry the pork mince and salami in 1 tsp of oil until the pork is lightly browned and salami crisping. Stir in the garlic and tomato purée for 1 min. Stir in the passata, gravy granules and lentils with 250ml water. Gently bubble for 10 mins to thicken slightly.
3 When the water is boiling, cook the pasta for 9–12 mins until done. For the crumbs, in a small frying pan, fry the stuffing mix in the remaining 2 tsp oil until golden, stirring constantly.
4 Drain the pasta then tip straight into the ragu sauce. Turn off the heat under the pan, and dollop in the soured cream. Use tongs to toss everything together, then serve, with crispy stuffing crumbs for sprinkling over.
Cook’s tip Add a tsp of any caster or granulated sugar to help bring out the sweetness of the tomato in this sauce. BUDGET SAVVY 93P PER SERVE

Roast chicken with creamed cabbage and beans
Nurturing and satisfying, this all-in-one dish of comfort has tasty beans and greens, and will go down a treat.
Serves 4 | Ready in 55 mins

• 4 thighs from 1.1kg pack Asda Succulent Chicken Thighs
• 2 tsp olive oil
• 3 x 400g tins Asda Cannellini Beans in Water
• 2 tbsp Asda Wholegrain Mustard
• 2 garlic cloves, sliced
• ½ large Savoy cabbage, shredded
• 150ml Asda Half Fat Fresh
Soured Cream
• ¾ lemon, zest only
1 Preheat the oven to 220°C/200°C fan/ gas 7. Sit the chicken on an oven rack sat over a large roasting tin. Rub the tops of the thighs with the olive oil, season and roast for 30 mins.
2 Meanwhile, drain just 1 of the tins of beans. Just before the chicken timer goes, half fill a kettle and boil.
3 Carefully lift the rack of chicken off the tin (onto another tray to catch any extra juices). Add the cannellini beans and bean water into the roasting tin along with the mustard, sliced garlic and 250ml boiling water. Add the shredded cabbage and stir everything together, combining with the roasting chicken juices. Sit the chicken thighs directly on top, off the rack, and bake for a further 15 mins until everything is bubbling.
4 Lift the roasted chicken thighs off onto a plate and stir the soured cream and lemon zest
through the beany veg. Return the crispy roast chicken pieces and serve.
Cook’s tip Spare time while the chicken roasts? Shred the whole cabbage, store ½ in a food bag or lidded container in the fridge for Thursday or another night.
Leftovers tip Roast all the chicken thighs from the pack as above, then set aside the extra portions for sandwich fillings or freeze for a future stir-fry.

Pork-stuffing meatloaf with bubble and squeak mash
For a taste of good times ahead, cook up this moreish stuffing and meat combo, with parsnips and lashings of gravy.
Serves 4 | Ready in 50 mins

• 100g Asda Garlic & Herb Stuffing Mix
• 500g Asda Sweet & Earthy Parsnips, peeled and cut into large, even chunks (woody cores trimmed and discarded)
• 350g loose potatoes, peeled and cut into slightly larger chunks than the parsnips
BUDGET SAVVY 98P PER SERVE
• 400g Asda Lean Pork Mince
• 1 tsp vegetable or olive oil
• ½ large Savoy cabbage, shredded
• 1–2 tbsp Asda Wholegrain Mustard, optional
• 4 heaped tsp Asda Onion Gravy Granules
1 Tip the stuffing mix into a medium-sized mixing bowl and pour over 200ml boiling water. Leave to soak and cool for 15 mins while you prepare the veg and preheat the oven to 200°C/180°C fan/gas 6.
2 Put the parsnips in a large saucepan filled with cold water. Over a high heat bring to the boil, then add the potato chunks and cook for 12–14 mins until both are soft. Drain well, tip back into the saucepan and mash together.
3 Use hands to thoroughly mix the pork mince and stuffing together until completely blended. Using
2 criss-crossing pieces of baking paper, line the base and sides of a 900g loaf tin with an overhang. Evenly add the pork mixture, lightly pressing down to fill gaps, but leaving the top rough. Drizzle with the oil, season and bake for 25 mins.
4 Wilt the cabbage with 2–3 tbsp water in another saucepan with a lid for 3–5 mins, stirring occasionally. Stir the cabbage through the mash, with the mustard if using. Season and keep warm.
5 Remove the meatloaf from the oven and increase the temp to 220°C/200°C fan/ gas 7. Using the lining paper, carefully lift the meatloaf out of the tin onto a baking tray. Press the paper flat to the tray to expose the sides of the meatloaf, then bake for another 5–8 mins until lightly golden on top.
6 Make up 300ml of the gravy following pack instructions. Serve the bubble and squeak mash with thick slices of the meatloaf and pour over the gravy.
SO VERSATILE This meatloaf doubles as a side if you like meaty stuffing. Top with thyme or bay leaves.
Salami and provolone pizza traybake
Break out a deep-pan crowd-pleaser for the Friday night movie, with fancy yet quick toppings and no-fuss dough.
Serves 4 | Ready in 45 mins EF
• 500g Asda White Bread Mix
• 75g Asda Tomato Purée Double Concentrate
• 75g Asda Passata
• 1 garlic clove, crushed
• ½ red onion, thinly sliced
• Napoli-style salami (the one with peppercorns) from Asda Italian Style Cured Salami & Cheese Selection
• Provolone cheese from Asda Italian Style Cured Salami & Cheese Selection
• 1 tbsp olive oil, plus extra for greasing
• ½ tbsp lemon juice (from the remaining zested lemon)
• 90g Asda Mild Pea Shoot Salad
1 Save a tbsp of the bread mix for rolling out the dough. Make up the rest with 350ml hand-warm water for a slightly soft dough. Knead in the bowl for 5 mins until it starts to feel smooth and stretchy, then use the extra bread mix to roll out the dough to line a 22x30cm (approx) shallow greased baking tray, pushing the dough into the corners so the edges are thicker.
2 Leave the pizza base for 15 mins to rest while you prepare the toppings. Mix the tomato purée, passata and garlic with salt and pepper. Preheat the oven to 200°C/180°C fan/gas 6.
3 Spread the sauce over the base leaving a border. Top with the red onion, peppered salami and provolone cheese slices. Season and drizzle with ½ tbsp olive oil. Bake for 18–20 mins until puffed, crisp and browning on top.
4 Put the remaining olive oil and lemon juice in a salad bowl together, tip in the leaves and toss to dress. Serve the pizza in chunky slices, with the salad alongside.

Mincemeat loaf cake
Use a happy hack to keep this cake spiced and fruity without a looong list of ingredients and hours in the kitchen.
Serves 12–14 | Ready in 1 hr 40 mins, plus cooling d

• 225g Bake by Asda Plain Flour
• ½ tsp Bake by Asda Baking Powder
• 1½ tsp mixed spice
• 125g light brown sugar
• 100g glacé cherries, quartered
• ½ orange, zested
• 3 eggs
• 125g unsalted butter, melted
• 411g jar Asda Tasty Mincemeat
MAKE AHEAD freeze AND
1 Preheat the oven to 150°C/130°C fan/ gas 2 and grease and line a 24cm/900g loaf tin on the base and all sides.
2 Mix the flour, baking powder, spice and sugar in a large mixing bowl, then stir through the glacé cherries and zest. In another bowl, beat the eggs, melted butter and mincemeat with a fork. Mix the wet ingredients into the dry, then transfer to the lined tin. Level the top and bake for 1 hr 30 mins until a skewer poked into the centre of the sponge comes out clean. Cool in the tin, remove to decorate.

Spiced beef and carrot stew
Use your slow cooker to braise melt-in-themouth short ribs in a fragrant, spiced sauce.
Serves 6 | Ready in 8 hr 30 mins

• 40g plain flour, plus 1 tbsp
• 1.2kg Asda Succulent Beef Short Rib
• 6 Asda Extra Special Echalion Shallots, peeled and halved through the root
• 1 tbsp olive oil
• 1½ tbsp ras el hanout
• 2 tbsp tomato purée
• 300ml red wine
• ½ Savoy cabbage, cored, sliced and steamed (to serve, optional)
• 3 x 400g Asda Smooth & Buttery Classic Mash (to serve)
• 10g fresh parsley, chopped
• 60g pomegranate seeds
1 Tip 40g flour onto a plate, season and coat the ribs. Fry the shallots with oil in a large shallow pan over a medium heat until lightly golden. Transfer to a slow cooker.
2 Brown the short ribs all over for 15 mins in the same pan. Transfer to the slow cooker
more. Or preheat the oven to 170°C/150°C fan/gas 3, combine stew ingredients in a covered casserole pan and cook for 2 hrs Add the carrots and cook for 1 hr more.
4 Ladle the sauce into a pan on a high heat and reduce for 10–15 mins until thickened. Shred the beef off the bones . Heat the mash according to pack instructions.
5 Combine the sauce back with the beef and veg, then serve with steamed cabbage and mash topped with parsley and pomegranate seeds
Cook’s tip Once you have shredded the beef, cool completely and freeze for up to 3 months. Defrost in the fridge and reheat over a medium heat until piping hot. MAKE AHEAD freeze AND
• 2 low sodium beef stock cubes, made up to 800ml
• 2 bay leaves
• 1 cinnamon stick
• 300g Chantenay carrots, trimmed
3 To make the sauce for the stew, add the 1 tbsp flour and ras el hanout to the pan and cook for 1 min, stirring. Stir in the purée for a further min. Add the red wine, then cook for 5 mins until reduced by half. Add in the stock, bring to a simmer and transfer to the slow cooker too. Add the bay leaves and cinnamon, then stir. Cook for 6 hrs on low. Add the carrots and cook for 1½ hrs

• ½ butternut squash, halved lengthways, deseeded and finely sliced (approx 600g)
• 2½ tbsp olive oil, plus optional extra
• 2 Asda Extra Special Echalion Shallots, peeled and finely sliced
• 400g chestnut mushrooms, sliced
• 4 garlic cloves, finely sliced
• 150g sliced curly kale
• 180g Merchant Gourmet Cooked Whole Chestnuts, crumbled
• 1 tsp dried sage or 10g fresh sage, leaves picked
• 30g unsalted butter
• 50g plain flour
• 650ml milk
• a few large pinches of finely grated whole nutmeg (or use ground)
• 150g cheese, mix of mature cheddar and blue cheese, grated
• 200g dried lasagne sheets
• 15g hard cheese, finely grated
1 Preheat the oven to 200°C/180°C fan/ gas 6. Spread the butternut squash slices on 2 baking trays. Drizzle with 1 tbsp oil; season and roast for 20 mins.
2 Gently fry the shallots in ½ tbsp oil in a large frying pan over a medium-low heat until softened, then set aside in a bowl. Add ½ tbsp oil to the pan and return to a high heat. Add ½ the mushrooms and garlic, frying until any water evaporates and they start to colour. Repeat with the remaining oil and mushrooms, then add to the shallots.
3 Blanch the kale in boiling water for 1–2 mins, drain, run under cold water then squeeze out any excess. Add to the mushroom mixture with the chestnuts and ½ tsp dried sage or 5g fresh chopped sage; stir to combine and season.
4 Melt the butter in a saucepan over a medium heat. Stir in the flour for 1 min. Slowly pour in the milk and stir constantly until thickened. Remove from heat; add nutmeg and the mixed cheeses.
5 Spread ¹/3 of the mushroom mix into a 30x25cm baking dish. Top with ¹/3 of the squash, then the lasagne sheets. Top with ¹/3 of the béchamel sauce. Repeat twice, finishing with the béchamel, cover with foil; bake for 35 mins.
6 Remove and sprinkle with hard cheese and the remaining dried sage or fresh sage. Drizzle with a little extra olive oil, if you like, and return uncovered to the oven for 15 mins more, until golden brown. Leave to sit for 15 mins, before serving.
Cook’s tip To freeze; assemble, cool to room temperature, cover with foil and freeze for up to 1 month. Cook from frozen at 190°C/170°C fan/gas 5 for 1 hr 30 mins, removing foil after 1 hr, until piping hot.

Third-generation cheesemaker at Wyke Farms, Rich Clothier, shares why his deliciously tangy Exceptional by Asda Wyke Farms Extra Mature Cheddar recipe is under lock and key. Crackers and chutney at the ready...

The after-dinner cheeseboard – the cornerstone of any firstrate Christmas feast, complete with an array of hard and soft cheeses and plenty of chutney. And at the heart of it? It has to be a wellaged, flavour-packed cheddar, says Somerset-based managing director and cheesemaker Rich Clothier, who has been supplying Asda for 30 years.
‘My grandparents founded Wyke Farms in the early 20th century, but my family has been making cheese for hundreds of years, ’ Rich tells us proudly. In fact, it was his grandmother, Ivy, who perfected the very recipe for Exceptional by Asda Wyke Farms Extra Mature Cheddar that you’ll find in store today. ‘She was the first food technologist in the region. She wrote the recipe down, which was quite innovative in those days, and ensured it was made exactly the same way every day. We keep the recipe locked away in a safe now so no one can get their hands on it,’ he adds. Rich’s long-lived fascination with cheddar started when he was just three years old: ‘I used to go grading cheese with my dad – the reality was I was just scoffing as much cheese as I could! That was nearly 50 years ago. My family is completely obsessed with cheese and always will be – I think we could unite the world through cheddar,’ he jokes.
The love, attention to detail and pride that Rich’s family put into the cheese almost five decades ago remains today – along with some more technical aspects of the process, of course. ‘We make the cheese using the same live starter bacteria that my grandmother used. So we nurture the starters and propagate them here on the farm – it’s a really important part of the cheese-making process, and it means that no other cheese in the world can taste like ours,’ Rich explains. ‘I’d like to think my grandmother would be really proud that we still have that attention to detail and quality. She was conscious of the environment and working with nature,
so we make all our cheese using renewable energy and we’re really focused on sustainability, too,’ he shares. While traditional techniques are used, including replicating Rich’s grandmother’s optimal maturing temperatures for the cheese, it’s our fourlegged friends who are to thank for the immense end product, says Rich: ‘90% of the milk we use comes from cows that are grazing on local grass within 25 miles of the dairy, giving it a unique flavour in keeping with the region.’
So, what can we expect from a block of award-winning cheddar from Rich’s farm? ‘When grading the cheese, I’m looking for a well-rounded balance, not for the flavour to just hit you – we want that build-up in the mouth. It has sweet, silky and buttery notes, with a little nuttiness and a bit of bite – or, as it’s called in the cheese world, a complexity of flavours,’ Rich explains.

For the date ketchup
• 12 pitted dates, roughly chopped
• 75g tomato purée
• ½ red onion, finely chopped

1 Up to a week ahead, make the ketchup. Put all the ingredients, except the onion seeds, into a small saucepan with 200ml water over a medium heat. Bring to the boil, then reduce the heat and simmer gently for 10 mins, until dates and onion are soft. Blend until smooth, stir through
the seeds, cool and chill if making ahead.
2 Preheat a grill to high. Brush the cheese slices with the oil and grill alongside the bacon for 2–3 mins each side, until crisp and golden. Keep warm under foil while you grill the naan, following pack instructions, to soften.
3 Spread 1 tbsp of ketchup over each naan. Layer with bacon, cheese, rocket and tomatoes and serve immediately.

1 Preheat the oven to 220°C/200°C fan/ gas 7. Halve the cucumber lengthways, scoop out the seeds with a teaspoon; finely slice. Transfer to a bowl with a pinch of salt and the lemon juice. Set aside.
2 Bake the hash browns on a baking tray for 10 mins. Flip them then use a potato masher to flatten them slightly. Return to the oven and bake for a further 8–10 mins, until golden and crisp.
3 Bring a medium pan of water to the boil. Add the eggs and boil for 6 mins. Drain, then plunge into cold water until cool enough to peel. Drain the lemon juice off the cucumber and stir in the soured cream and half of the chives. Season to taste.
4 Divide the hash browns between 2 plates. Halve the eggs and arrange with the smoked salmon on the plates. Serve with the cucumber-soured cream and
lemon wedges and sprinkle the remaining chopped chives over the top.
Cook’s tip For easy peeling, gently tap the eggs all over on a chopping board to crack the shells. The eggs will slip out easily. Leftovers tip Mix the remaining soured cream and chives together to make a dip to serve with crisps or crudités.

Christmas isn’t really Christmas without some sensational smoked salmon and, this year, Asda has upped its smoked salmon game even further with the help of Lynda Jamieson and her team in Fraserburgh, Scotland. Lynda, a creative technologist at Sofina Foods, leads Asda’s key seafood ranges. With an impressive 30 years in the industry, 28 of which are in her current role, Lynda brings a wealth of experience and expertise to the table.
‘I love food, and I love seafood, so it doesn’t feel like a job to me – it’s a way of life,’ Lynda laughs. ‘We’ve been partners with Asda for over 30 years, delivering everything from raw and smoked salmon to barbecue mackerel and sea bass. We’ll get a seasonal brief from the team at Asda, which may include different ingredients or processes, and we will then develop the very best product we know customers will adore. I love the excitement of a brief and a new challenge – it’s one of the best parts of my job.’
With Asda estimating its stores will sell over 300,000 packs of Smoked Salmon over the festive period, Lynda was tasked with a unique challenge. She was to combine Asda’s signature Christmas flavour – fig, whisky and spiced honey – with what she knows and loves best:
seafood. The result? A tantalising blend of flavours to perk up your taste buds.
‘The whole process of developing a product like this, from brief to arrival in store, can take around a year. We create quite a few variations and work closely with Asda to get the perfect end product, altering the recipe along the way,’ she explains. ‘It’s been an interesting and rewarding product to develop because we experimented with different ingredients that don’t typically get paired with smoked salmon. You’ve got an element of the on-trend hot honey in there with the classic flavours of salmon, so it’s been a fun product to deliver,’ she adds.
So, what makes this salmon worthy of your festive feast – your Christmas Day brunch, elegant starter or Boxing Day buffet? ‘The product earned itself Exceptional status due to how it’s made. The salmon is farmed on the west coast of Scotland. It’s then cured with sea salt and demerara sugar, and we use the traditional method of hanging the salmon. It’s then smoked in a brick kiln for 30 hours,’ Lynda says.
Compared to other salmon, which is smoked for around eight to 15 hours, this is a long smoking process. But the extended time gives the fish its unique depth of flavour and intense smokiness. It also provides the beautiful pellicle, which is the top layer of the salmon. This meticulous process ensures every bite is a testament to our commitment to quality.
The fish is smoked over a blend of oak and whisky wood chips, giving it a distinctive taste before being handgarnished with a fig, honey and a single-malt whisky glaze. ‘You get a rich smokiness, sweetness from the fig, a gentle mixed spice flavour and a little chilli for warmth. It all marries well, so don’t overcomplicate it with other flavours on your plate. Keep it simple with a fresh, crisp salad and some lightly seeded bread or oatcakes.’ That sounds good to us, Lynda – let’s tuck in!

• 500g carrots, trimmed and peeled
• 1 head celery, trimmed

• ½ x 20g pack Asda Fresh & Earthy Growing Thyme

• 2 garlic bulbs, halved horizontally
• 1 tbsp vegetable oil
• 120g Bake by Asda Plain Flour
• 1 tbsp redcurrant jelly (or honey)
• 1 tbsp Yeast Extract (or Marmite)
• 1.5 litres chicken stock (made with 2 stock pots or cubes, or fresh)
1 Preheat the oven to 220°C/200°C fan/ gas 7 and chop the veg into 2cm chunks. Add to your largest baking tray (the one that comes with your oven is perfect) with the chicken wings, herbs and garlic. Toss with the oil and spread in an even layer with the wings on top; season well. Roast for 1 hr or until deeply browned.
2 Transfer the baking tray to the hob on a medium-high heat, mashing and stirring for 4–6 mins. Sprinkle and stir in the flour with the redcurrant jelly (or honey) and yeast extract, cooking out for 2–3 mins. Add the stock. Bring to the boil, scraping the base and sides to loosen caramelised bits. Remove from heat and sieve in batches into a large saucepan, pressing to extract all the liquid.
3 Bubble over a medium-high heat for 20–25 mins, or until reduced by about a third. Transfer to a container with a tight-fitting lid. Cool and chill for up to 4 days or freeze for up to 3 months. To serve, reheat with 500ml water to loosen, plus any resting juices from your roast, if you like. Season and reduce to a desired consistency.

Beef dripping smashed roasties
We’ve done it, we’ve perfected the Christmas spud – with a super-crispy exterior cooked in bone marrow dripping for extra yum and crunch.
Serves 8 | Ready in 2 hrs 40 mins
• 2kg Maris Piper (or other floury) potatoes, peeled and cut into large chunks
• 125g Asda Extra Special Bone Marrow Beef Dripping
• 35g (about 6 tbsp) Cook by Asda Roast Potato Seasoning
1 Cover the potatoes with cold water in a large saucepan. Cover, bring to the boil, then simmer until very tender, approx. 10–15 mins.
2 Drain, then shake with the lid on, to break up the edges. Spread them out on a wire rack to steam dry for 15 mins.
3 Meanwhile, preheat the oven to 180°C/160°C/gas 4 and gently melt the beef dripping in a small saucepan. Spread the potatoes in an even layer on a large, rimmed baking tray and pour over the dripping. Roast for 1 hr, basting halfway, until light golden and crisp.
4 Remove from the oven and, using a masher, smash the roasties to about 1–2cm thick, breaking the sides. Baste and roast for 30 mins more. Pour all but 2–3 tbsp of the dripping into a small container (you can drain, chill and reuse this). Scatter over ½ the potato seasoning, then flip potatoes and scatter over the rest. Roast for a final 10–20 mins, until very crisp and a rich brown colour.

Or toss with cooked carrots, parsnips or greens.

1 Preheat the oven to 220°C/200°C/gas 7. Trim the sprouts, discard damaged leaves and cut any larger ones in half lengthways. Scatter onto a large, rimmed baking tray, season and toss with the vegetable oil to coat.
2 Spread in a single layer and roast for 10 mins, until
charred slightly. Remove the tray from the oven and toss through the honey and both types of mustard, spreading out as before. Roast for a final 5–10 mins until the sprouts are sticky and tender.

1 Heat a large frying pan over medium heat. Add 2 tbsp oil, the leeks and season, then cook for 20 mins until softened. Use scissors to snip the apricots into small pieces and in a small bowl, cover with 200ml just-boiled water. Turn up the heat and fry the leeks for 5–8 mins more, stirring often until caramelised. Mix in the rosemary, parsnips and ½ the chopped parsley. Transfer to a large bowl and cool.
2 Add the water from the apricots to the bowl, along with ½ the fruit, ½ the chopped pecans, the breadcrumbs and miso paste (or crumbled stock cubes). Season and mix. Add the remaining chopped pecans to the reserved apricots, and stir through the cranberry sauce.
3 Preheat the oven to 180°C/160°C fan/ gas 4. Grease and line a 900g (2lb) loaf tin with a single strip of baking paper the width of the tin with over some overhanging at either end. Add all the fruit and pecan mixture to the base, followed by the leek and parsnip stuffing. Cover tightly with foil

We head into the kitchen with development chef, Nathan Brown, to find out which mouthwatering cut of lamb should feature on your festive menu this year, as a Boxing Day centrepiece or New Year’s Day feast

Who better to prepare your Christmas feast than a former chef?
With over three decades of experience in French classical cuisine, including leading kitchens in Michelin-star restaurants and four-star hotels, Nathan Brown is your man. ‘I love the fact that I’m able to talk about food quite passionately and capture people’s attention,’ shares Nathan, development chef at Dunbia Cross Hands in Llanelli. Founded in Northern Ireland, Dunbia has been going for nearly five decades, with locations UK-wide.
The company creates restaurant-worthy products, including super tasty slowcooked meat dishes and this year’s mustserve, the Welsh Lamb Guard of Honour with a West Country Vintage Cheddar, Rosemary, and Mint Crust with a Rich Lamb Jus. Hungry, anyone?
‘I always wanted to get into the world of development,’ says Nathan, ‘and now I’m responsible for working with Asda, helping to write briefs and develop dishes,’ he says. Nathan brings a wealth of experience from his cheffing days. ‘Half the team is from a restaurant background and from my point of view, we’re able to consider those on-trend aspects of what will make a dish work. We look at what well-known chefs are doing and try to
replicate those ideas in a way that’s both appealing and means that people don’t have to have their ovens on for eight hours straight.’
The Welsh Lamb Guard of Honour is undoubtedly the jewel in the crown this year, and Nathan suggests it would make a wow-factor Boxing Day main or even a delicious alternative to your Christmas Day turkey. ‘The lamb we use is fully traceable from farm to fork, sourced from exceptional Welsh farmers. With its abundant rain, the Welsh climate produces high-quality, tender and
flavoursome meat, which is extremely sweet,’ he explains. Nathan’s team butcher the meat to get a premium cut: ‘A rack of lamb comes with six bones on it, so we trim the meat from the bones and put two of them together, making a criss-cross shape known as the Guard of Honour.’
‘Our brief from Asda was to create something with this special cut, so with that in mind we chose flavours that wouldn’t overshadow the meat. I also wanted to give it some texture, so you have the softness of the meat with the crisp crumb,’ Nathan adds. Breadcrumbs are mixed with herbs and vintage cheddar, then this is added to the lamb by hand. As it cooks, you get a gorgeous golden colour. ‘We’ve also made a rich lamb jus to serve alongside. A lot of people feel that gravy is the most difficult part of a dish, so we wanted to make that convenient, too.’
The attention to detail with every single Guard of Honour being prepared by hand is a testament to the pride and joy Nathan and his team take in their work. ‘This is a one-off for Christmas and we want it to be special, so I oversee everything – I’ll make the first ones and ensure we have that consistency.’ Why not enjoy one of Nathan’s hand-made Guard of Honours on Boxing Day. ‘Serve it with Moroccan couscous and roasted veg – that’s my plan!’ Good thinking, chef.

Chocolate orange trifle

• 500g Asda Fresh Custard
• 150g Asda Extra Special Peruvian Dark Chocolate, chopped
• 50ml fresh whipping cream
To assemble

For the topping
• 200ml Exceptional by Asda Vanilla Double Cream (or fresh double cream, plus 1 tsp vanilla bean paste)
• 200ml fresh whipping cream
• 50g chocolate orange almonds, roughly chopped
• 20g Asda Extra Special Peruvian Dark Chocolate, grated
1 Add the custard and chocolate to a saucepan, place over a low-medium heat and cook, stirring constantly until the chocolate is fully melted. Scrape into a bowl, cover directly with clingfilm and cool. Chill until ready to assemble, then beat in the cream to combine.
2 To start assembling the dessert, use the yule log slices to line the sides of a large trifle bowl. Quarter the remaining slices
and fill the middle of the bowl, then drizzle the Cointreau over the sponge.
3 With the peel still on, cut 2 of the clementines into 5mm thick slices. Carefully remove the peel, leaving the clementine discs intact. Place a disc between each slice of yule log, pressing onto the sides of the bowl to stick. Spoon in the custard and spread evenly. Zest one of the remaining clementines and reserve for garnish. Using a sharp serrated knife, segment the remaining 2 clementines. Scatter the segments over the custard.
4 For the topping, whisk the double cream (and vanilla paste, if using) and whipping cream together until softly holding its shape, then spoon on top of the trifle. Scatter over the chocolate orange almonds, grated chocolate and reserved orange zest, then serve.
Cook’s tip To make in advance, do every step except the topping and refrigerate until needed. When ready to serve, whip up the topping and add the garnishes.

• 750g Asda Frozen for Freshness Black Forest Fruits, plus extra berries, frozen or fresh to serve (optional)
• 140g Asda Ready to Eat Figs, diced into bite-sized chunks, plus extra to serve (optional)
• 2 cinnamon sticks
• 2 star anise
• ¼ tsp ground cloves
• 125g caster sugar
• Asda Brandy Cream, Asda Vanilla Liqueur Cream or single cream, to serve (optional)
1 Line a 16cm pudding basin with a couple of pieces of clingfilm, so that plenty of excess hangs over the sides.
2 Trim the crusts from the bread. Cut a disc of bread to fit the bottom of the basin, then halve 6 slices into rectangles.
3 Add the fruit, spices (or mulled wine spice packet if using, see cook’s tip, below) and sugar to a large saucepan and place over a medium heat. Cook until the frozen fruit has defrosted and is swimming in juice. Once at a simmer, remove from the heat and set aside for 30 mins.
4 Put a sieve over a large bowl and tip in the fruit and juice. Remove the whole spices from the fruit.
5 Dip the rectangular bread pieces into the juices so that one side turns purple. Line the pudding basin with them, juice-stained side facing outwards, slightly overlapping each piece. Spoon the fruit into the pudding basin until full. Cut the remaining pieces of bread so they jigsaw neatly on top of the pudding. Dip these in the juices too and place them juice-side-up on top
of the pudding. Fold the clingfilm over the pudding and place a small, flat plate or saucer on top and weigh down with tins. Refrigerate for 6 hrs or overnight, chilling the remaining juices too.
6 To serve, unfold the clingfilm from the pudding base, invert it onto a plate, then lift away the basin and clingfilm. Pour or brush the reserved juices over any paler bits of bread and decorate with berries and figs, if you like. Serve with any leftover juice and your cream of choice.

The grand finale of any festive meal has to be the pudding – the kind of sweet sensation and stunning creation that’ll guarantee ʻoohsʼ and ʻahhsʼ as you serve it up to the family. So let’s get some expert advice on what to dish up this year, because if there’s anyone who knows a thing or two about puddings, it’s Cheryl Westwood. As head of product development for frozen desserts at the award-winning Country Style Foods, Cheryl is a total pro. ‘I’ve been at Country Style for two decades, and there’s not a job here that I haven’t done – I’m one of the old-timers!’ she says, proudly.
Cheryl and her team have crafted an absolute masterpiece as the final flourish for your feast this year – the Extra Special Raspberry, Pistachio and Passion Fruit Pavlova Wreath. This unique and delicious dessert is a testament to our commitment to quality and innovation.
‘The base of the wreath is a crisp meringue with a soft and chewy middle, so it melts in the mouth. We make it using British free-range eggs and then slow-bake it to perfection. We then load it with British cream, which we swirl into a delicious passion fruit compote, so it is beautifully tangy,’ she adds.

Having worked in the industry for more than 20 years, Cheryl has impressive experience when it comes to knowing what will work from a production point of view while still delivering flavour and originality. ‘I work closely with our chefs, and we make all our recipes from scratch, so they’re bespoke for Asda. That includes the fruit compotes, the meringue and the passion fruit cream. A lot of work goes into the finished product to make sure it’s as premium as possible, and part of that is hand-decorating every wreath. We strive to be the best and seek inspiration wherever we go,’ Cheryl shares.

‘This pudding has that chewy sweetness from the meringue, the richness of the whipped cream and a tangy cutthrough from the passion fruit, while the raspberries deliver a hint of sharpness. Added to this, you have toasted nuttiness from the pistachios, so it all works wonderfully well together,’ Cheryl says.
With a staggering 4,000 wreaths crafted daily, the Country Style Foods team invests a significant amount of care and attention to detail into each one. ‘Our production line team is highly skilled and welltrained. It takes a special kind of person to hand-drizzle on a moving line,’ Cheryl says, highlighting the team’s dedication and expertise.
All that attention to detail will pay off come Christmas. ‘To me, we eat with our eyes. When you see the vibrant colours –the green, the red and the white – it will draw you and your guests in. It looks and feels so Christmassy – like a wreath you’d hang on your door,’ she says. And what’s a festive table on the big day without a bit of visual theatre, after all…

Katsu-satay turkey noodles
Use up extra festive veg and leftover turkey in this nutty stir-fry that brings some welcome spice and interest.

• 250g pack dried egg noodles
• 60g Asda Katsu Curry Sauce Mix
• 60g Asda Classic Smooth Peanut Butter
• 3 Asda Zingy & Zesty Limes, 2 juiced, 1 cut into wedges (to serve)
• 2 tbsp Asda Light Soy Sauce
• 350g leftover roast turkey, shredded (a mix of white and dark meat works well)
• ¼ red cabbage, about 175g, cored and finely shredded
• 175g Asda Sweet & Nutty Trimmed Brussels Sprouts, finely shredded
• 2 medium Asda Crunchy & Sweet Carrots, peeled and cut into matchsticks
• 4 spring onions, trimmed and thinly sliced
• 15g fresh coriander, roughly chopped (optional)
1 Cook the noodles following the pack instructions, then drain.
2 Meanwhile, add the katsu granules and peanut butter to a jug with 375ml justboiled water. Stir well until smooth, then add the lime juice and soy sauce.
3 Tip the noodles into a frying pan with the sauce, turkey, veg and most of the spring onions. Toss together over a medium heat for 2–3 mins until everything is piping hot but the veg is still crunchy, adding a splash of water to loosen the sauce if necessary. Stir through most of the coriander, if using.
4 Serve topped with the remaining sliced spring onions and coriander, with lime wedges alongside.
Cook’s tip Make it a cold salad for a buffet lunch by adding drained noodles to the sauce. Once cool add the turkey, shredded vegetables and herbs.
Leftovers tip Add cooked Christmas veg such as carrots, sprouts and savoy cabbage – just slice and add in step 3. Save braised cabbage for sarnies though, the spices won’t work with this curry sauce.
Roasted veg soup with Brie-cranberry crumpets
Blitz leftover veg and cream into a bellywarming bowl of goodness and put extra cranberry sauce and Brie to tasty use.

1 In a large saucepan, fry the onion in the oil with a pinch of salt for 5–6 mins until soft and golden. Stir in the garlic and rosemary until fragrant. Add the vegetables, stock cube, 1.2 litres water and the honey. Bring to a simmer then cover and cook for 10 mins.
2 Meanwhile, preheat the grill to high. Place the crumpets on a foil-lined baking sheet and grill for 2 mins per side until nicely toasted. Spread over the cranberry sauce, top with the Brie slices and then grill for 2–3 mins more, until the cheese is bubbling.
3 Blend the soup with the cream added, until completely smooth, using a stick blender (or similar). Season to taste, then garnish portions with extra rosemary and a swirl of cream, if you like, with hot cheesy crumpets on the side.
Cook’s tip No roasted veg leftovers? No problem, you can use raw carrot and parsnip instead. You’ll need 700g in total of the veg and an
extra 5–8 mins of simmering time.
Air fryer tip To air-fry the crumpets, cook for 3–4 mins at 200°C until crisp. Top with the cranberry sauce and slices of Brie and air fry for 3–4 mins more until the topping is golden.
Shredded ham, leek and potato bake
Festive ham is transformed into a comforting, golden-topped dinner that’s ready with minimal prep.

• 1 tbsp olive oil
• 2 garlic cloves, crushed

• 50g plain flour
• 325ml semi-skimmed milk
• 1 low sodium stock cube, made up to 325ml
• 1–2 pinches ground nutmeg
• 1 tsp Asda Dijon Mustard

• 850g cooked potatoes (see tip), cut into 2–3cm chunks
• 200g leftover ham, shredded or cut into roughly 2cm pieces

1 Preheat the oven to 220°/200°C fan/gas 7. In a large saucepan, sweat the leeks in the oil with a pinch of salt for 10 mins, covering with a lid and stirring regularly. Add a splash of water if they dry out.
2 Add the garlic and thyme for 2 mins, then stir through the flour. Cook for a further 2 mins, stirring constantly. To prevent lumps, very gradually stir in the milk, followed by the stock. Season with the nutmeg, mustard, salt and pepper, then bring to a gentle simmer while stirring continuously. Thicken for a good 3–4 mins.
3 Stir through 40g of the cheese, then combine the sauce, potatoes and ham in a 20x30cm baking dish. Top with breadcrumbs and the remaining cheese and bake for 30–35 mins, until deep golden brown and bubbling.
Leave to stand for a few mins, then garnish with thyme before serving.
Cook’s tip Use up leftover roast potatoes, or peel and boil about 1kg Maris piper potatoes, cut into 2–3cm chunks, for 12–15 mins until just tender. Drain and leave to steam for 5 mins before adding them in step 4. Cheeseboard leftovers such as Brie, Stilton or Wensleydale would work in the sauce and topping too.

Croque madame with bread sauce-spiced béchamel
Makes 2 | Ready in 25 mins

Melt 15g butter with 2 tbsp plain flour in a saucepan. When combined, whisk in 200ml milk, 80g grated Asda British Light Extra Mature Cheddar, 1 tbsp Dijon mustard, 2 whole cloves, 2–3 pinches ground nutmeg and 1 very small onion, peeled and halved. Turn the heat to low and leave to thicken and infuse for 10 mins. Remove and discard the cloves, remove and slice the softened onion. Spread 4 bread slices with 1 tsp light mayo. In a non-stick frying pan on a medium heat, fry the 4 slices mayo-side down. Top 2 slices each with 50g sliced ham, 40g pickled red cabbage and 1 tbsp of béchamel sauce. Top with the other 2 slices (toasted side up) and squash. Lift the sandwiches into a shallow roasting tin, pour over the rest of the béchamel and grill until bubbling. Add the sliced onion and 2 eggs to the pan and fry to your liking. Top the sandwiches with both and serve with cornichons, if you like.
Beef and blue cheese subs with onion gravy

Get your leftover fillings ready first: thinly slice about 120g turkey, 150g roast potatoes , 120g cooked carrots/roasted parsnips (or a mix), 40g chestnuts , 100g cooked sprouts , 100g stuffing and 45g pigs in blankets . Curried veggie buns with mango-lime mayo and onion salad

Preheat the oven to 200°/180°C fan/gas 6. Using a potato masher, break up and mash 200g roast potatoes , 100g cooked carrots or parsnips or a mix, 100g frozen peas , 1 tsp veg oil and 2 tsp mild or medium curry powder, depending how spicy you like it. Shape into 2 patties and bake on a lined baking tray for 10–15 mins until golden and cooked
through. To make the onion salad, finely slice 1 small red onion and add to a small bowl. Mix 1 tbsp cranberry sauce with 1 tbsp red wine vinegar and pour over the sliced onions to pickle. In another bowl mix 2 tbsp light or vegan mayo with 2 tsp mango chutney, a pinch of lime zest and squeeze of lime juice (or lemon). Halve 2 bread rolls (gluten free or other), spread the bases with the mayo, then top with a few round lettuce leaves , the patties and a big spoonful of sweet pickled onions . Scrunch a few mini poppadoms over the top, and then squish on the tops of the rolls.

Whether you’re hosting Christmas lunch or heading to a party, a bottle of bubbly adds a touch of glamour to the occasion. But how do you choose the right sparkling wine to ensure you’re sipping on something truly sensational this Christmas?
At the pinnacle, Champagne is crafted using the traditional method with Chardonnay, Pinot Noir and Pinot Meunier grapes grown only in the Champagne region, aged for a minimum of 16 months for non-vintage or 36 months for vintage. Closer to home, English Sparkling Wine follows Champagne’s exacting standards, but in a cooler climate with a shorter ageing period, resulting in fresher flavours.
Hailing from northeast Italy, Prosecco is made primarily from Glera grapes, typically involving tank fermentation and a shorter ageing period, making it a more affordable bottle of the bunch.
