hey say that having children gives you a new level of respect for your parents and all the suffering you put them through in your youth. I have to say I completely agree! There have been many occasions where I find myself wondering how my mum coped with looking after three kids under five years old. well preserved! March means marmalade. At least it does in Cumbria, where the annual World’s Original Dalemain Marmalade Awards & Festival takes place near Penrith. It’s the biggest jamboree celebrating Britain’s traditional citrus breakfast spread. Over 2,000 marmalades are entered into competition and categories include the best ‘merry’ marmalade infused with alcohol. Inspired? Try making your own using classic tart oranges, or any other citrus fruit, such as lemons or pink grapefruit. ‘The depth of colour depends largely on the type of sugar used,’ says artisan marmalade maker Sarah Randell, who happily uses a jar to make gooey marmalade drizzle cake. Hurrah! We’ve come out on top in Which? magazine’s search for the cheapest supermarket of 2016. The well-respected, independent consumer group found that a basket of 80 popular branded items at Asda costs, on average, £154.14 across the year†. That’s over £6 cheaper than the same shop at second place, Morrisons, and nearly £20 less expensive than at Waitrose††.

Tasty TV Want to eat like a king? The 15-part series, Royal Recipes on BBC1 is packed with dishes such as coronation chicken and Champagne sorbet that viewers can make at home. ivide ½ pack Asda Vanilla Flavour Frosting between 2 bowls. Stir purple food colouring into one batch and pink into the other, one drop at a time, until you get the right shade. Spoon each colour into a separate piping bag with a star nozzle. Take an Asda Plain Fairy Cake and pipe on the pink icing – start in the centre and work outwards in a spiral swirl to form the petals. Repeat until you have 3 pink and 2 purple frosted cupcakes. Roll out Bake & Create Ready To Roll Icing in Green to 2mm thick. Use a sharp knife to cut out 5-10 leaf shapes and mark with ‘veins’. Allow to dry then position 1 or 2 leaves on the side of each flower. Line a pretty biscuit tin with crèpe paper, arrange the cupcakes inside and finish with extra crèpe paper, to decorate.

Jewelled butternut squash houmous & griddled crudités V This easy-prep sharing starter is bursting with flavours and colours

SERVES 6 AS A STARTER READY IN 1 HR PRICE PER SERVING £1.15

1 In a small, non-metallic bowl, toss ½ red onion, sliced, with juice ½ lemon. Set aside. 2 Put 2 x 200g pots Asda Reduced Fat Houmous, 300g Scratch Cook Butternut Squash Chunks, cooked according to pack instructions and ½ x 215g can Asda Good& Balanced Chickpeas, drained in a processor. Blitz briefly, to a coarse paste. Spread into a shallow serving bowl, then scatter over the other ½ can chickpeas, 5 Asda Sundried Tomatoes, roughly chopped, 1tbsp Asda Good& Balanced Pumpkin Seeds and 40g Asda Light Greek Salad Cheese, crumbled. Top with the onions, drizzle over 1tbsp rapeseed oil and garnish with 1tbsp chopped parsley. 3 Heat a large griddle pan on high. Toss 4 spring onions, trimmed, 4 small carrots, halved, 4 radishes, halved and 125g Extra Special Asparagus Tips together with 1tbsp rapeseed oil and griddle for 1-2 mins on each side until charred but still crunchy. Transfer to a plate. 4 Griddle 2 Asda Pitta Breads for 1 min each side and cut into triangles. Serve immediately with the jewelled houmous and griddled crudités. Each 352g serving contains: ENERGY

Moroccan-style spatchcock chicken with dill yogurt

● 1.7kg-1.9kg Extra Special Whole Free Range Corn Fed Chicken ● 8 shallots, halved ● 4 bay leaves ● 2 small lemons, halved ● 3tbsp olive oil ● 2 cloves garlic, crushed ● 1½tbsp Asda Ras El Hanout ● 2tbsp honey

● 300ml Asda Fat Free Greek Style Yogurt ● 1tbsp dill, chopped ● 1tbsp tahini 1 Preheat the oven to 200C/ 180C Fan/Gas 6. 2 To spatchcock the chicken, lay it breast-side down on a chopping board. Using strong kitchen scissors, cut along the backbone, about 2-3cm away from it on each side, then discard. Turn the

bird over and press as flat as possible with your hands. 3 Put the shallots, bay leaves and 3 lemon halves in the middle of a large roasting tray. Top with the chicken, breast-side up. Mix 2tbsp of the olive oil, half the garlic and 1tbsp ras el hanout to make a paste. Rub over the chicken. 4 Roast the chicken for 45 mins. Remove from the oven, drizzle over the honey and sprinkle on the rest of the ras el hanout. Return to the oven for 10 mins, until the skin is golden and crisp and the juices run clear. 5 To make the dill yogurt, mix the yogurt with the

remaining garlic, 1tbsp olive oil and the juice from the remaining lemon half. Mix in the dill and tahini – add a splash of water if the mixture is too thick. 6 Transfer the chicken to a serving platter and spoon over any pan juices. Garnish with the roasted shallots, lemons and bay leaves. Serve with the dill yogurt on the side, plus LebaneseStyle French Beans and Chilli-Lemon-Mint Roasted Butternut Squash (recipes online – see below). Each 220g serving contains: ENERGY

Triple-tier Persian pavlova

A spectacular masterpiece in meringue! SERVES 26 READY IN 2 HRS, PLUS COOLING PRICE PER SERVING 42p

1 For the rhubarb curd, put 300g rhubarb, chopped, in a pan with 50g caster sugar and 1tbsp water, bring to a boil, cover and simmer for 8 mins, until tender. Take off the heat, allow to cool slightly and purée with a handheld blender. 2 In a large bowl, whisk 2 eggs with 2tsp cornflour and 100g caster sugar. Slowly pour in the rhubarb purée and 2-3 drops pink food colouring (optional). Transfer to a pan, put on a

low heat, add 60g unsalted butter, and stir for 10-12 mins until the mixture thickens. Don’t let it boil as this will scramble the eggs. Pour into a bowl, allow to cool, then chill in the fridge. 3 To make the meringues, preheat the oven to 120C/ 100C Fan/Gas ½. Take 3 pieces of baking paper and, using a 20cm round plate as a guide, mark a pencil circle on each – it should be visible when you turn the paper over. Arrange each

piece, pencil-side down, on a separate baking sheet. 4 Put 8 large egg whites in a clean, dry bowl and beat with an electric hand-whisk until the eggs are white, thick and stiff peaks form. Keep whisking, on a high speed, and add 400g caster sugar, 1tbsp at a time, until the peaks look glossy. Finally, whisk in 2tsp each cornflour, rose water and white wine vinegar. 5 Divide the meringue mix between the 3 baking sheets, spreading it evenly inside the circles. Bake all 3 for 1 hr 30 mins, or until the paper is easy to pull away from the meringues.

Turn off the heat and allow to cool in the oven. 6 In a large bowl, whisk 600ml whipping cream into soft peaks. To assemble, put a meringue on a serving plate, spread half the cream on it, drizzle with some rhubarb curd and sprinkle on 1½tbsp pistachios. Add the second meringue, then more cream, curd and pistachios. Top with the final meringue and garnish with pistachios, Asda Dried Rose Petals, figs and a mint sprig. Serve immediately. ● 100g granulated sugar ● 3tbsp Asda Dried Rose Petals ● Juice ½ lemon ● 100g rasperries ● 1-1.5L Asda Eden Falls Sparkling Mineral Water ● Mint sprigs, to serve 1 Put the sugar, rose petals and lemon juice in a small saucepan with 100ml water. Bring to a boil and simmer for 2-3 mins until the sugar dissolves. Remove from the

heat and allow to steep for 20-30 mins until the syrup has cooled. Pour it through a sieve and discard the rose petals. 2 To make the spritz, pour the syrup into a large jug, add the raspberries and crush slightly with a fork. Half-fill the jug with ice and pour over the sparkling water. Serve immediately garnished with mint sprigs. Each 153ml serving contains: ENERGY

Gold crunch adds a touch of glam to these fun biscuits MAKES 24 READY IN 50 MINS PRICE PER SERVING 12p

Preheat the oven to 180C/160C Fan/ Gas 4. Rub 150g flour into 100g butter until it looks like breadcrumbs. Stir in 50g caster sugar, then 1tbsp cold water and mix to a dough. Roll out on a floured surface to 5mm thick. Cut into 24 rectangles, trim the top corners to get a tea bag shape and make a small hole 1cm down from the top centre. Lay the biscuits on a baking tray lined with baking paper, then bake for 20-25 mins until

golden. Remove from the oven, cool, then loop string through the hole. In a glass bowl over a pan of simmering water, melt 125g plain chocolate. Mix a little horseradish sauce and crème fraîche together then spoon into the centre of the puddings. Top with thin slices of cooked roast beef and garnish with thyme leaves, rocket and a sprinkling of smoked paprika.

Mix a few slices of smoked salmon with a squeeze of lime juice until evenly coated. Spread some guacamole and cool tomato salsa on to tortilla wraps and top with a layer of the salmon. Sprinkle with Grower’s Selection Strong Wild Rocket. Tightly roll up the wrap then slice. Serve with a garnish of rocket leaves sprinkled around the pinwheels.

Spread light soft cheese onto white bread and season with a grind of black pepper. Thinly slice a couple of radishes into circles and run a veg peeler along a cucumber, lengthwise, to create thin ribbons. Arrange the veg in rows on the bread, remove the crusts and cut into small triangles and rectangles to serve.

Preheat the oven to 220C/200C Fan/Gas 7. Fry 50g diced chorizo on medium until crisp, then drain excess oil on kitchen roll. Add 1 pinch dried rosemary to 125g self-raising flour and rub in 25g butter until it looks like fine breadcrumbs. Mix through 50g grated Iberico cheese and the chorizo until well combined. Make a well in the middle of the dry mixture and pour in 100ml skimmed milk, then mix to a dough with a blunt knife. Knead on a floured surface, flatten to about 2.5cm thick, then cut out 2-3cm rounds with a cookie cutter. Repeat until all the dough is used. Arrange on a baking tray lined with baking paper, brush with milk and sprinkle with more grated Iberico. Bake in the oven for 8-10 mins until golden and risen. It is farmer owned, so when Arla products are bought, the money helps to support farmers and their families. Arla’s 12,700 farmer owners, across Europe, work together to ensure its products are natural, safe and of the highest quality. To see how the scheme works, we met Arla farmer owner Sarah Williams, 54, and her son Edward, 30, at Jowett House Farm in Barnsley, South Yorkshire. Each night, Sarah can only relax when she knows her loved ones are snuggled up warm – her herd of 200 Holstein-Fresian dairy cows and calves. She has run the farm since 1993 and the mutual affection

His sons, Harry, five and Sam, two (above) love to help out too! ‘Each of my 200 cows has an activity monitor that works like a Fitbit fitness tracker. It shows how far she walks and how long she spends sleeping, lying down and chewing the cud. ‘Activity monitoring has been used in farming for about 10 years and is far more advanced for animals than it is for humans. ‘We record everything from the cow’s milk yield and quality to her calories consumed. A show-stopping pie to win over a crowd SERVES 12 READY IN 3 HRS, PLUS COOLING PRICE PER SERVING £1.45 ● 2 x 450g packs

Butcher’s Selection Stewing Steak, trimmed of fat, (makes roughly 700g lean meat), cut into 3cm cubes ● 3tbsp plain flour ● 2tbsp rapeseed oil ● 1 large onion, sliced ● 250g button mushrooms, halved ● 2 cloves garlic, sliced ● 1tbsp thyme leaves ● 1tbsp tomato purée ● 2tbsp Asda Brown Sauce ● 1 bay leaf ● 1 Knorr Rich Beef Stock Pot (or 200ml beef stock made from a stock cube) ● 200ml Guinness ● 375g Asda Ready Rolled Puff Pastry ● 1 egg, beaten ● Steamed greens, to serve 1 To make the filling, toss the steak in the flour. Heat 1tbsp of the oil in a large nonstick pan and cook the meat in small batches until browned. Set aside. 2 Using the same pan, add the remaining oil and cook the onion for 4-5 mins until soft and starting to colour. Remove from the heat and allow to cool. 4 Preheat the oven to 200C/180C Fan/Gas 6. Transfer the cooled filling to a 1.5L, deep-rimmed pie dish, removing the bay leaf. 5 Unroll the sheet of puff pastry. Brush the rim of the pie dish with the beaten egg and cover with the pastry sheet. Trim the edges with a sharp knife (saving the offcuts), and push the edges down with a fork to seal. Make a hole in the middle for the steam to escape and brush all over with beaten egg. Decorate with any offcuts of pastry, making words or a leaf pattern, and brush with more egg as needed. 6 Bake for 35-40 mins until the pastry is golden and crisp. Add the filling, gently pushing down. Briefly roll out the other sheet, brush the pie edge with egg and top with the pastry. Trim (saving the offcuts), crimp the edges with fingers and thumb and cut a hole in the middle for steam to escape. 5 Shape the pastry offcuts into leaves for the top and brush all over with egg. ricotta, 3 of the eggs, the lemon zest and caster sugar in a bowl. Stir in 50g of the pine nuts; set aside. 4 Roll out the larger ball of pastry on a floured surface until 4mm thick and use to line a 23cm fluted metal flan tin. Leave pastry overhanging. Spoon in the filling and spread out with the back of a spoon. 5 Roll out the second ball of pastry until 4mm thick. Place on top of the tart, roll a rolling pin over to seal and remove any excess pastry. Beat the last egg, brush over the top, scatter over the remaining pine nuts and bake for 35-40 mins until golden and crisp. 6 Cool on a wire rack, then remove from the tin. Serve dusted with icing sugar and scattered with lemon zest.

Unroll the pastry and, using a 20cm ovenproof frying pan as a template, cut a circle 2cm larger in diameter than the pan; chill until needed. 2 Heat the butter and caster sugar in the frying pan, stirring, until a caramel forms. Add 1tbsp of the brandy and bubble for 3 mins. Remove from

the heat and add the apples, curved-side down. 3 Return the pan to the heat and bubble for 8-10 mins until the apples have just started to soften and taken on a caramel colour. Set aside to cool for 5 mins. 4 Lay the pastry over the apples, tucking in around the edge with a dinner knife for a tight fit. Bake for 25-30 mins until golden and risen. 5 Meanwhile, beat together the crème fraîche, icing sugar and rest of the brandy. 6 Remove the tarte from the oven and leave for 5 mins before very carefully turning upside down onto a serving plate so the apples face up. Bring to the boil and simmer for 20 mins until syrupy. 4 Remove the ribs from the liquid and pat dry with kitchen paper. Discard the Guinness, bay leaves and onion. Increase the oven to 200C/180C Fan/Gas 6. 5 Brush the ribs with half the syrupy sauce, return to the oven for 10 mins, then brush with the rest of the sauce. Cook for 10 mins until sticky. Remove from the oven, rest for 10 mins, then slice to separate the ribs. 6 Mix the mayo with the mustard, then toss through the coleslaw mix and parsley. Serve with the ribs.

hile most people know they should be eating their five portions of fruit and veg a day, every day, it’s easy to forget that there’s more than one way to gobble the good stuff. Making sure you and your family are getting the right amount is important for a number of reasons. After all, eating a minimum of 400g of fruit and veg a day can lower the risk of health problems like heart disease, stroke and some cancers, and can help you maintain a healthy weight.* But it needn’t be a chore – in fact, it can be a lot of (delicious) fun! Here’s how to squeeze those colourful foods into your diet…

5-a-day how-to ‘Can I feed my family 5-a-day on a budget?’ ‘Absolutely! Fresh, frozen and canned all count towards your 5-a-day but do try to choose tinned veg without added sugar or salt – and tinned fruit in juice rather than syrup. There’s no need to defrost veggies before adding to your cooking, you can simply stir straight from the freezer into curries, rice, casseroles and soups. ‘Remember, you don’t have to eat your body weight in broccoli for it to count, either – just a few tablespoons of veg with a meal adds up.’ Great-value, handy canned veg is also

good – and can have higher levels of key nutrients. ‘The antioxidant lycopene is more readily available from canned tomatoes than from fresh,’ explains nutritionist Fiona Hunter**. Canned beans and pulses – such as lentils, chickpeas and kidney beans – contribute to your daily quota, but again, choose reduced-salt and sugar varieties. Reduced-sugar baked beans and spaghetti hoops contribute, too. ‘If you’re cooking with mince, use 25% less and then bulk it up with a can of lentils,’ says Fiona. ‘Nobody will notice – and it’s a cheap and easy

Help!’ ‘Kids often prefer raw vegetables to cooked,’ explains Fiona. So serve up crunchy raw veg with dips like houmous and guacamole – which contribute towards their

hether you’ve got a pampered Pomeranian or a tousled terrier, you’ll need to give them a hand to keep their coat in tip-top condition (happily, our feline friends tend to groom themselves). How much you need to groom your dog – and how often – will depend on their breed and coat type but, remember, it isn’t just about keeping them beautiful. Grooming allows you to spend quality bonding time with your pal, and gives you the chance to spot problems such as ticks, fleas, dirty ears or any new lumps or bumps.

First, put a non-slip mat in the sink or bath. Invest in a specially formulated shampoo, as dog skin has a different pH balance to ours. After, gently towel

dry, then keep your dog in a warm place until they are completely dry (especially small and thin breeds that get cold easily). Voilà, one pimped-up pooch!

(If you go out afterwards, all your hard work may be ruined at the first puddle!)

She is senior manager, pricing strategy at Asda

S

itting at a table in the swanky Hilton on Park Lane, I froze in shock when my name was called out – I​’d just won the Women of the Future Award for Business. My mum Karen, 56, was sitting beside me and, as I jumped to my feet, I saw her beaming proudly. ‘I knew you’d do it!’ she exclaimed. But the truth is, I could never have done it without her. Growing up, Mum was a rock to me and my three siblings. Helping with homework, talking through problems, ferrying us to swimming lessons… She was always there for us, despite juggling a part-time degree in counselling at Durham University. Watching Mum finish her degree, become a counsellor and start her own business was such a huge inspiration. Of course, being one of four kids, we weren’t rolling in it but what we lacked in luxuries, we more than made up for in love. At 18, I was stressing about what to study at uni. There was huge pressure to decide on a career path, but Mum just sat me down and told me there was plenty of time, that I should focus on my strengths

and do something I enjoyed. So, in 2007, I started a degree in psychology and, after graduating in 2011, I joined Asda. Amazingly, a twoweek work experience placement led to me securing a role as a junior analyst. Over the next five years, I rose through the ranks to head of pricing

Mum’s advice was always to find what you love, be a nice person and have fun! strategy, leading a team of 10 people. Mum was always on hand to give advice, helping me see things more clearly and figure out the best solution. A real people person, she encouraged me to treat everyone equally and to always be kind. In October 2016, I found out a colleague had nominated me for the Women of the Future award. I was flattered but never expected to get anywhere. However, a few weeks later, I found out I had been shortlisted, and in December I brought Mum to London as my plus-one for the awards ceremony. She’d never been to anything like that before and was so excited as we checked into our nice hotel and got changed into ball gowns. Convinced I wouldn’t win, I didn’t even prepare a speech so when my name was read out, I was absolutely flabbergasted. Standing on the stage was one of the proudest moments of my life, especially because Mum was there to share it with me. Now I mentor other Asda colleagues and I always pass on Mum’s advice: find what you love, be a nice person and have fun! She made so many sacrifices for us and I wouldn’t be where I am today without her advice, support and – most of all – her love.

osters were plastered all over Asda Eastlands in Manchester: colleagues could apply for the annual work trip to Arkansas, America, to visit our parent company, Walmart. ‘You should apply,’ Julie Feeney, 60, from the HR team kept telling me. What was the point, though? More than 180,000 people work for Asda – why would a checkout girl get chosen? I’d joined Asda at 16, working on Sundays while I did my A Levels. After I got my social change and law degree in 2013, I hadn’t a clue what to do. My parents wanted me to go into law but I took a year out to work full-time in Asda and think about my next step. I hadn’t considered a career there until Julie told me I could go far in the company. She was so supportive and I was flattered, but sceptical – how could I move up from the checkout? Julie convinced me to apply for the US trip and let me help organise training for 90 colleagues. This steep

learning curve led to me being chosen to go to the US in 2014. It opened my eyes to the opportunities at the company. When I returned, a promotion meant leaving the store – and Julie. But she was delighted for me. I’ve stayed in touch with Julie; she’s not just a mentor, she’s a friend. Last September, I won the 2016 Worldpay Everywoman in Retail award and one of the first things I did was text Julie a photo of me

and my trophy. She gave me the push I needed to change my life. Back at work, some girls from my team printed off a story about my award and taped it to the bulletin board with ‘inspirational’ written above my photo, which was lovely. Now I run workshops for colleagues who want to step up and I always keep an eye out for checkout staff. I want to help them, like Julie helped me. GOOD LIVING | 93

Now, I’m happier and more confident than I have ever been

hinking as far back as I can remember, I always knew there was something different with my body. It felt like it didn’t align with my brain. It wasn’t until my teens that I discovered the term ‘transgender,’ but even then I couldn’t admit it to my family – not even my granny Edna, now 94, who I’d always been especially close to. Tough as old boots but as glamorous as Joan Collins, she’d lived through the Second World War and 94 | GOOD LIVING

was full of stories about rationing and flirting with American soldiers. She baked a mean apple pie, loved ballroom dancing and always took me on days out to London. Despite her age, she was liberal and openminded but I still couldn’t bring myself to confide in her. Instead, I wrestled with depression and low self-esteem until I decided, in my early 20s, to come out to my family and transition from male to female. I broke the news to my parents, who were shocked but supportive once they realised they didn’t need to mourn the son they were losing. I was still ‘me’ – in fact, I was becoming the real me. They told Gran and she didn’t bat an eyelid. She just started calling me ‘Gemma’ and treated me exactly as she had done before. In fact, she didn’t ask me a single question and just accepted me and loved me unconditionally. It was a huge comfort and gave

and my only sadness is that Gran can’t see it. A few years back, she started to forget. Just little things to begin with, then gradually more and more. She’d get confused and agitated, and was finally diagnosed with Alzheimer’s disease in 2008. While she still manages to live at home and goes out to get her hair done every Friday, she’s a shell of the proud, strong-willed woman that she used to be. I’m just so grateful she showed me how amazing a woman can be – and I know she’d be really proud of the woman I am today.

I’ve got more time to experiment now. Has your diet changed much since retiring from athletics? When I was training, I could justify having a bad meal because I was burning it off. The healthiest I’ve ever been was when xxxxxx I was pregnant – I was so conscious of what I put in my body. Is Reggie a fussy eater? I’ve got a sweet tooth and love the cocoa Nakd bars – they taste like chocolate but have no added sugar. I ate lots while I was on deadline for my books! What’s the inspiration behind them? As soon as you have kids, you’re thrown into this imaginative world. It was a nice opportunity to be creative and relive my childhood memories. Dream dinner-party guest? Will Smith because he’s so funny. Most unusual food discovery? I once tried alligator in Florida – it’s OK but I’d never eat it again! Any strong culinary dislikes? Growing up I wasn’t keen on fish but my mum says your tastebuds change every seven years. Now, it’s one of my favourite foods to eat. Quick energy boost? A smoothie is always a good boost ahead of a run. I put coconut water, kale, avocado, mango, blueberries, raspberries and banana in the blender. Tasty. Secret to being a kitchen goddess? A good cookbook! I follow Jamie Oliver’s 30-Minute Meals. I’m tidy in the kitchen too, unlike my husband!
