Our food editor Gregor McMaster celebrates the Great British asparagus season and catches up with the latest coffee trends

Spring is truly here when the first asparagus appears, during the last week of April. In the Vale of Evesham in Worcestershire – the farming heartland for these slimline spears – they take asparagus very seriously. It’s home to the British Asparagus Festival in honour of this unique green vegetable. As well as cooking demonstrations and coach tours, the Great English Asparagus Run delivers the season’s first bundles to the Houses of Parliament and Buckingham Palace. UK chefs love homegrown asparagus – the fresher the spears, the better the dish. Try melting butter over griddled asparagus and top
SEASONAL Put a spring in your step with a bowl of vibrant green soup, packed with seasonal veg and nutty quinoa. Asda Limited Edition Pea, Watercress & Quinoa Soup (600g)
with a poached egg. Serve griddled spears with a fresh salmon fillet and a twist of lemon, or make an easy pastry appetiser. 1 Preheat the oven to 200C/
1 Boil 200g Grower’s
Selection Red Potatoes, skins on, until tender. Drain and cut into thick slices. 2 Add 6 stems Grower’s Selection Asparagus, cut into 2cm pieces, to a pan of boiling water. Simmer for 3-4 mins until just tender. 3 Preheat the oven to 200C/180C Fan/Gas 6. 4 Heat 4tsp rapeseed oil in a frying pan. Add 3 spring onions, trimmed and sliced, and cook on low for 2-3 mins until starting to soften. 5 Transfer to a 30cm x 20cm baking dish. Add the potatoes and asparagus and stir to distribute evenly. Pour in 6 large eggs, beaten. Cook in the oven for 20 mins until just the egg on top of the bake is still uncooked. 6 Sprinkle on 25g Asda 30% Less Fat Mature Cheese, grated. Return to the oven until egg is set and the cheese melts.
1 Put 600g Grower’s Selection Maris Piper Potatoes, peeled and cut into chunks, in a large pan and cover with cold water. Bring to the boil and simmer for 10-15 mins, until tender. Drain and return to the pan. 2 Meanwhile, heat another pan of water until boiling. Add 300g Grower’s Selection Savoy cabbage, shredded, with hard stems discarded. Cover and cook for 5 mins until soft. Drain. 3 When the potatoes are done, put 4 spring onions, trimmed and finely sliced, and 150ml semi-skimmed milk in another pan, then heat to a simmer. Add to the potato with 15g reducedfat spread and mash until fluffy. Stir in the cabbage and divide between 6 plates. 4 Serve each portion topped with a poached egg, sprigs of Grower’s Selection Thyme and black pepper.

Prick 4 Grower’s Selection King Edward potatoes, rub with 4tsp rapeseed oil and bake until the skins are crisp. 2 Fry 500g lean beef mince, stirring to break up, then transfer to a saucepan. 3 Fry 1 red onion, chopped, in 1tsp oil, until soft. Add 1 clove garlic, crushed and 1 red pepper, deseeded and chopped. Cook for 2 mins. Add to the mince with 2tbsp plain flour. Then add 200ml reduced-salt beef stock, 1tsp Worcestershire sauce, and 6tbsp reduced-salt and sugar tomato ketchup. Cover and simmer for 20 mins until thickened. 4 Halve the potatoes and scoop out the flesh – save to make mash another time. Cut each shell into 3, brush with oil and bake for 10 mins. Serve with sloppy joe sauce and lime, to squeeze over.

Writer Josh Burt, 40, lives with his wife, Hannah, 35, an office manager, and their son, Gabriel, two, in south London uring the early days of parenthood, as a dad, you’re a bit of a third wheel. Mum provides the comfort, the nourishment. She is the universe around which everything revolves, while your role doesn’t quite hit the same dizzying heights. I felt more like a confused but enthusiastic cheerleader, standing there wearing all the right clobber but totally unsure of the choreography. There’s not a great deal of need for you – at least not early on. Yes, my wife Hannah found it helpful having me around for much-needed moral support, or to take the pushchair out for a few circuits of the local park while she caught up on sleep. But in a vital, sleeves-rolled-up, practical sense, I went from ‘king of the castle’, to ‘concerned onlooker’ in the blink of an eye, and some guys can find this very emasculating. Not me, though. Want to check your toddler is getting all the nutrients they need? Here’s how…

hances are, if you’ve got a toddler, bananas and veg sticks feature regularly in their diet. They’re one of the first foods parents give babies when they start solids as they’re easy to eat – and kids love them! But as babies move into toddler stage, it’s vital to give them a more varied, nutrient-packed diet to support growth. ‘After 12 months, you need to ensure your child has a good appetite for food by reducing milk intake,’ says Judy More, paediatric dietitian and expert for the Infant & Toddler Forum. ‘By this time, tots should be having three meals and two or three snacks a day. Plus, baby food should be replaced with normal family meals to offer more flavours and textures.’ 50 | ASDAGOODLIVING.CO.UK
It’s in the mix Make sure tots get a balanced diet by including… Starchy foods, like bread, rice, potatoes and pasta Serve five portions* of these each day. Avoid too many fibre-rich foods as toddlers can fill up on these before they’ve eaten enough to get all the nutrients they need. Move them onto wholegrains from about the age of five.
Fruit and veg Give toddlers their 5-a-day*, ideally different varieties – though don’t worry if they’ll only eat a few types. Milk and dairy Include three servings* a day to provide calcium for bones to develop. Choose full-fat versions at first (toddlers need
fat to provide the energy they need for growth). From age one, non-dairy alternatives can be introduced, but go for calcium-fortified, unsweetened versions‡. Protein foods, like beans, pulses, fish, eggs, and meat Tots need two servings* of these a day. Pulses, tofu, soya and Quorn are suitable for vegetarian diets.

TOddler’s diets – the low-down drink up
sugar pit On average, tots aged 18 months to three years get about nine cubes of added sugar a day in their diet** – at least twice the recommended maximum for four- to sixyear-olds. Biscuits, cakes, sweets, sugary drinks and fruit juice provide almost twothirds of this, so limit these.
When it comes to toddlers’ drinks, it’s best to stick with water and milk. From 12 months, full-fat cows’ milk is suitable in place of formula (it’s fine to continue breastfeeding). If children are developing well, you can give them semi-skimmed milk from the age of two.

Sister! Giovanna Fletcher and her sister Giorgina talk pregnancy and parenting

e’re big fans of Good Living’s down-to-earth columnist Giovanna Fletcher, 32 – and her older sister Giorgina, a PA who lives in East London with her husband Lee, is just as warm and gorgeous. Giorgina, 34, was living with Giovanna last year when she gave birth to her first child, daughter Summer Rae, now seven months. We find out how motherhood has changed the sisters’ bond… Have you always been close? Giovanna We’ve got closer since we had the kids. It was so magical being there for Giorgina when she brought Summer Rae home last September, and being able to enjoy those precious first moments together. Giorgina Lee and I moved in with Gi and Tom [Fletcher, McFly musician and Giovanna’s husband] when I was six months pregnant as we were getting some work done on our house. It was great for Lee to have a bit of a warm-up for fatherhood with their sons, Buzz, three, and Buddy, one. How did Giovanna help you in your first months of motherhood? Giorgina It was like having a live-in midwife! I learnt so much from her. She told me when to start expressing milk, when to give Summer Rae a bottle – everything! 54 | GOOD LIVING

Giovanna Not in a bossy way! I think it would be amazing to have a midwife who stays with you for a week or two after you have a baby. You leave hospital with this little bundle – they can’t communicate with you, you can’t communicate with them. It’s just so overwhelming. I was glad to be able to help Giorgina through that time. What surprised you most about having your first baby? Giovanna The amount of love you feel, and the love that grows is completely different to anything you’ve ever experienced. But then, so is the frustration! Giorgina I didn’t realise how up and down your emotions can be. During the first few months, I was literally crying over everything one minute, and laughing the next.

Was it difficult for you to leave the Fletcher household? Giorgina Yes! When Summer Rae was two months old, we moved back home. I remember getting into bed that first night and expressing milk. I was on autopilot and without Giovanna to help, I completely forgot to fit the bottle to the breast pump – and the milk went everywhere! Giovanna We now see each other once a week for pizza night – but it seems like a long time in between as the kids are growing up so fast.

Lee’s really supportive and never judges me when I’m erratic! In moments of doubt, what saved you? Giovanna I went through a phase where I Googled everything – ‘How

nappies by then! For the first year after I had Buzz, if anyone asked me a question about the kids, I’d turn to Tom for the answer. And I’ll never forget my first midwife appointment as a new mum. I didn’t realise she was there to be on my side and, when she arrived, there was milk everywhere and Buzz had done a massive poo up his back. I thought she was going to take him away from me. Instead, she just scooped him up and gave him a bath! I worried a lot less when I had Buddy.

Do you feel different about your body after having a baby? Giovanna Of course there are times where I think, ‘Oh my God, look at those stretch marks and wobbly bits!’ But I think it’s incredible that our bodies are able to create another human. Giorgina It certainly makes you appreciate your body before… Giovanna Oh yes! I look back at pre-pregnancy photos where I remember feeling proper downbeat about my appearance and I think, ‘Wow, you looked amazing!’. But you never appreciate it in the moment. Is it easy to make friends among other new mums? Giorgina I didn’t realise how cliquey motherhood can be. When I joined a baby sensory class last month, some mums ignored me when I tried to speak to them. Giovanna But sometimes, mums are oblivious. In any other moment, you’d be friendly and inclusive but your line of vision is narrowed because you’re so focused on your kids.

Does social media help mums? Giovanna It’s created a community so you don’t feel so overwhelmed or isolated. A blog I follow, Hurrah For Gin [about parenting ‘sans the sugar coating’], takes moments and makes them funny, like the ridiculousness of getting shoes on a toddler. Giorgina Obviously, there’s the flip side of Instagram where everything looks perfect – but people take photos of the special moments, not the meltdowns! That’s why social media is good, because it does highlight the tougher times. What’s your brother Mario [Falcone, of TOWIE fame] like as an uncle? Giovanna The kids love him. He’s a real family man and comes around
for cuddles. Now Buzz is running around, Mario’s really hands-on. Giorgina Yeah, he’s definitely broody… Any more kids on the cards? Giorgina Yeah, one or two! Giovanna Yeah, I think so… Giovanna, in your book Happy Mum, Happy Baby you talk about your struggle to conceive… Giovanna It made me feel fretful during both my pregnancies. It was important for me to share my experience as so many couples go through fertility problems. Writing the book was such a cathartic process. I feel like a different person now, and things that used to stress me out don’t anymore. My main priority is keeping my boys happy and having a happy home! Move it! Walking a dog or running around the garden with a pet is a great way to get kids outdoors and more active. Allowing younger children** to help scoop food and fill water bowls can not only help build a sense of responsibility, it can also help to improve their coordination skills. Caring for a pet may additionally boost aspects of a child’s emotional development, too – such as self-esteem and enhancing their social skills.

Kate Garraway on ditching the sweet stuff and ranking bottom in the family cooking stakes The Good Morning Britain presenter, 49, lives in North London with her husband Derek Draper, 49 and children Darcy, 11, and Billy, seven. What’s on your daily menu? I have to get up very early for work so I’ll usually have an avocado at 3.30am, then scrambled eggs at 7.30am. Later, I’ll have a chicken salad wrap from the canteen. If I feel mean, I eat mackerel as my producer doesn’t like the smell! As a kid, you ate… My parents had allotments, so we were fortunate to eat fresh veg in season most days. On Mondays, it was cold beef and sautéed potatoes left over from the Sunday roast, with Branston Pickle and baked beans. I loved that! Your signature dish? A great slow-roasted 62 | ASDA.COM/GROCERIES
beef cooked in Guinness for nine hours, served with red cabbage and apples – and the Garraway roast potatoes! Favourite tipple? I’m a bit of a lager girl, I’m afraid! I’m also partial to Amaretto – it’s so warm and comforting. I don’t drink much if I’m working, and if I do, I have to drink around 5pm, which is a bit weird. Have you tried different food fads? Absolutely! The Cabbage Soup Diet and all sorts, but none religiously as I like food too much. The advice has changed – I remember people saying, don’t eat avocados or eggs as they are full of fat – until we realised they were ‘good’ fats. Has your diet changed? I used to eat a lot of sugar – that’s how I managed my energy. I’d wake up and eat actual sugar cubes in the morning, which is terrible, so I cut that out. Now it’s all about balance.

Do your kids help you in the kitchen? Darcy has become interested after seeing YouTubers like Zoella cooking. I’m trying to teach her the basics. Her favourite meal is her Grandma Jacobs’ chicken dinner, then my mum’s chicken casserole, then my beef casserole, third. I hope to climb higher up the rankings. Guilty pleasure? Cadbury Dairy Milk Buttons. Worst cooking experience? When our gas went off one Christmas Day. I had to seek out the only house in our street with an electric oven to cook the turkey – we ended up eating at 9pm! Best meal ever? After I completed the Three Peaks Challenge, climbing the highest mountains in England, Scotland and Wales in 24 hours, my mother-in-law made spaghetti Bolognese. I was so ravenous, I thought it was the tastiest dish I’d ever had! Most romantic meal? We went to the Seychelles (above) on honeymoon but I was pregnant so I couldn’t eat lobster, which I love. 1 Preheat the oven to 200C/ 180C Fan/Gas 6. Put a 2.5-3kg Fishmonger’s Selection Whole Salmon (head removed) on a large board. Using a very sharp knife, make vertical slashes about 2cm deep down the salmon on both sides. Transfer the fish to a large baking sheet. 2 Mix 1tbsp fennel seeds, crushed, and 1 clove garlic, crushed, with 1tbsp rapeseed oil. Rub all over the salmon with your hands, being sure to get inside the slashes and the cavity of the fish. 3 Thinly slice ½ lemon, ½ lime, 1 pink grapefruit, 1 grapefruit and 1 medium orange. Arrange in the cavity of the salmon with 2 bay leaves and a few sprigs of dill. 4 Bake in the oven for 1 hr to 1 hr 10 mins, or until
the salmon is cooked through and comes away from the bone easily. 5 To make the dressing, combine juice ½ lemon, juice ½ lime, 3tbsp rapeseed oil, 1 shallot, finely chopped, and 1tsp honey. 1 For the marinade, put 3tbsp Asda Fat Free Greek Style Natural Yogurt in a bowl. 1 Bring a pan of water to the boil. Add the peas and cook for 6 mins until well cooked and bright green. Drain, then return to the pan with the lemon juice and zest, torn mint leaves, oil and chilli and roughly mash with the back of a fork. 2 Heat a griddle pan on high and cook the flatbreads for 2 mins on each side until golden with griddle lines. 3 Slice the flatbreads into wedges, top with the crushed peas, sprinkle with the mint sprigs and sumac, then serve.
1 Preheat the oven to 200C/ 180C Fan/Gas 6. Prepare the cous cous in a large bowl according to the pack instructions, then allow to cool. Gently stir with a fork to break it up and mix in the sundried tomatoes, olives, cheese and parsley. 2 Brush each of the pepper halves with the rapeseed oil and transfer onto a baking sheet with the cut side up. Fill the hollow in each half with the cous cous mixture, then bake in the oven for 15 mins or until the peppers are soft. You can serve them hot, but they’re just as delicious eaten at room temperature.
1 Slice the courgettes into long strips about 5mm thick. Put into a large bowl and toss together with 1tbsp of the rapeseed oil. 2 To make the dressing, whisk together the rest of the rapeseed oil, the lemon juice and zest, then season with plenty of black pepper. 3 Heat a griddle pan until it’s smoking hot. Grill the courgette slices for 1-2 mins on each side until they begin to char, but still have some ‘bite’. 4 Transfer the courgettes to a serving platter. Scatter over the shallot, red chilli, mint and capers, then drizzle with the dressing. Serve the salad hot or at room temperature.

1 Make up a 500g pack Asda White Bread Mix, and prove for 30-40 mins. Meanwhile, bring a pan of water to a boil, add 250g butternut squash, cubed, and blanch for 3-4 mins until just tender. Remove and drain on kitchen roll before placing in a bowl with 1 red onion, sliced, and 1tbsp rapeseed oil. Mix and set aside. Cook 80g baby spinach according to the packet instructions and squeeze out excess liquid. 2 Preheat the oven to 250C/230C Fan/Gas 9. 3 Knead the dough on a lightly floured surface for 1 min. Divide in half then use your hands or a rolling pin to shape into 2 pizza bases about 15mm thick. Transfer to a baking sheet. 4 Spread 4tbsp Napolina Tomato Sauce with Herbs Pizza Topping on each base. Create a unique table centrepiece with fresh spring flowers in a vase of mini eggs YOU’LL NEED ● Large clear glass vase (try our George Home selection) ● Smaller plastic beaker or container that fits inside the vase, slightly shorter than the height of the vase, with 2-3cm to spare around the rim ● 2 x 460g bags Cadbury Mini Eggs ● Selection of Asda fresh flowers 1 Sort the mini eggs into different colours. 2 Place the plastic cup or container inside the vase, making sure it’s in the middle, so there’s room to stack the eggs around the outside. 3 Start with one colour at the bottom and begin to pile them up in the space between the two containers until the layer is the thickness you want. (Hold the centre container while you do the first few layers so that the eggs don’t roll underneath.) 4 Alternate between colours of eggs to create different layers. 5 When you’ve filled the space between the two containers, carefully pour water into the centre one. 6 Arrange flowers in the water and you have a simple and beautiful Easter gift or table centrepiece.

Marb-ellous patterned eggs
Jazz up some egg shells with pretty marbling – the hottest trend in decorating right now YOU’LL NEED ● Paper towels ● Disposable plastic container ● Nail polishes in assorted colours ● Wooden skewer ● Water at room temperature ● Nail polish remover ● Fresh hollowed eggs (see tips, right) or polystyrene eggs ● Drinking straw ● Needle
1 Cover your table with paper towels to protect it. 2 Fill the plastic container three-quarters full with water at room temperature. (This is very important – if the water is too cold or too hot, the polish will sink or thicken too quickly.) 3 Pour a few drops of each nail polish over the water surface. The more you use, the darker and more covered the eggs will get. 4 Lightly swirl the water with a skewer to combine the colours a little. Take
care not to over-mix. 5 Working quickly, dip an egg into the water, twirling it around until it’s covered all over with colour. 6 Set the egg aside in the empty egg box to dry. 7 Repeat steps 3-6 for each egg. 8 Use the nail polish remover to get rid of any polish on your fingers. 9 To hang your eggs, ask a grown-up to thread a long sewing/darning needle with thread before you do your marbling. Poke the needle through the hole at one end of the egg, and out through the other, then tie a large knot at the bottom to secure it.

THE EASY WAY TO HOLLOW OUT EGGS
Pierce the top and bottom of an egg with a needle. Push the needle through one of the holes and swirl it around to break up the yolk. Working over a bowl, put the end of a straw over one of the holes and blow until all the contents have come out of the other end (keep the eggs in the fridge to scramble later). Repeat for all the eggs. Rinse out each egg with water and allow to dry overnight.

1 On your cardboard, draw around the larger plate to create the outer circle – our wreath was about 20cm in diameter. Place the smaller plate in the centre of the first circle and draw around it to create the ring shape. ● 6 large eggs ● 350g Flora Light Spread ● 350g caster sugar ● 325g self-raising flour, sieved ● 25g cocoa powder, sieved ● 1 x tube each of Dr. Oetker red and yellow gel food colouring ● 100g dark chocolate, broken into squares ● 150ml double cream ● 15g unsalted butter ● 2tsp vanilla extract ● 1-2tbsp milk ● 10g light brown soft sugar, to decorate ● 20g chocolate drops, to decorate ● Flat-leaf parsley sprigs
1 Preheat the oven to 180C/160 Fan/Gas 4. Grease and line the base of a 20cm square tin and a 24cm loaf tin. 2 Place 3 eggs, 175g lowfat spread, 175g caster sugar and 175g self-raising flour in a mixing bowl. Beat with an electric whisk for 3-4 mins until smooth and creamy. Add the red and yellow food colouring and beat in until you have a strong orange colour. 3 Spoon into the square tin and bake for 25-30 mins or until springy to touch. Cool then turn out onto a rack.
4 Meanwhile, put the chocolate in a small pan with the cream. Heat very gently until the chocolate melts. Remove from the heat and add the butter. Mix with a wooden spoon until smooth and glossy. Cover and set aside to cool. 5 Take a piece of card and cut out a carrot-shaped template, slightly longer than the depth of the tin, and cut out 10 carrots from the orange sponge. 6 Put the remaining eggs, spread, sugar, flour, plus the cocoa powder, vanilla extract and milk in a bowl. Beat for 3-4 mins with a clean electric whisk until smooth and creamy. 7 Stand the sponge carrots next to each other in a row across the centre of the tin. Ask someone else to help you hold them upright. Spoon the chocolate cake mix into the tin on either side of the carrots. Cover the top of the carrots with a double thickness of foil and bake for 35-40 mins or until the chocolate sponge is springy to the touch. Cool in the tin for 10 mins then turn out and cool on a wire rack. Once cold, place on a serving board. 8 Spread the chocolate icing over the chocolate part of the top of the cake and let it drizzle down the sides. Sprinkle with brown sugar and scatter with chocolate drops. Do the same around the bottom edges of the cake. Insert flat-leaf parsley sprigs into the carrots and serve. Defrost some macarons from our Extra Special Macaron Selection – we’ve used yellow ones, but other colours will be just as cute for the chicks. Using Asda Red Piping Icing, pipe a triangle in the centre of each to make a beak and add 2 dots at the base for the feet. Using Asda Black Piping Icing, pipe 2 small dots above the beak for eyes. Use Asda Yellow Piping Icing to pipe triangles on either side of the beak at the edge of the macaron for wings.

Watch them go potty for their 5-a-day with this juicy, help-yourself sharing pud 1 Ask a grown-up to help you peel pineapple, watermelon and orange melon and then cut them into slices about 1.5cm thick. 2 Use small flower-, starand heart-shaped cutters to cut out fruit shapes from the two different coloured melons and the pineapple. 3 Push green drinking straws into the fruit shapes (cut the bendy part of the straw away from some of them, and leave it on for the others, so that some of your flowers stand straight and some bend). 4 Cut Granny Smith apples into wedges, toss them 42 | ASDA.COM/GROCERIES

MAKES 12 READY IN 30 MINS, PLUS COOLING PRICE PER SERVING 25p
1 In a bowl, crush 60g Asda Cornflakes into small pieces. Add 60g Asda Rice Snaps and mix well. Set aside. Break 100g Dr. Oetker 35% Fine Cooks’ Milk Chocolate into squares and put in a pan with 150g golden syrup and 50g unsalted butter. Heat gently, stirring, until melted and bubbling. Simmer for 1 min 30 secs, stirring. Pour over the cereal and mix well. Spoon into 12 paper cases leaving enough aside to make 12 bunny ‘heads’. 2 When the mixture is nearly cold, roll into 12 heads. Put one on each cake and scatter with 2tbsp Asda Rainbow Sprinkles. Melt 25g Dr. Oetker 35% Fine Cooks’ Milk Chocolate. Dip the ends of cornflakes into it to make ears. 3 Mix 200g royal icing with about 7tsp water. Mix 1tbsp royal icing with Dr. Oetker Jet Black Gel Food Colouring. Put the icings in separate icing bags. Pipe on paws, tails and faces. Each cake (59g) contains: ENERGY
