WAVING THE STARS AND STRIPES FOR A USA-STYLE FEAST

The Fourth of July is a big deal in America and a great opportunity to throw a backyard party with food and fireworks to celebrate the ‘special relationship’. Top of the bill at any Independence Day do are lip-smackin’, homecooked favourites such as cheeseburger sliders, hot dogs with onion rings and deep-filled cherry and apple pies. Party pieces might include grilled corn wrapped in bacon, fried chicken and cornbread, mac ’n’ cheese and stars-and-stripes cupcakes. Get a cheerleading whoop from foodies by adding one of Asda’s A Taste of America Cooking Sauces, £1 (500g; 20p/100g), such as Memphis BBQ or Cowboy Chilli to some ribs or wings, blast on a sizzling grill and seal the deal with a side of curly fries. FAMILY FAVOURITES

‘Mum fuelled my passion for food’

EastEnders star Lisa Faulkner takes a trip down memory lane with her mum’s Bolognese sauce

Words: Susan Springate.

M

y passion for food came from my mum. She was an amazing cook and I feel she’s now in everything I do, especially when I’m in the kitchen. Mum and Dad had to live frugally when I was growing up and Mum would buy a load of mince and make a variety of dishes including thatched cottage pie, moussaka and my favourite, spaghetti Bolognese. After she died, when I was 16, my sister and I became the cooks of the house. To this day, I still use my mother’s utensils. She’d dreamt of working in home economics and would have been so proud of me winning Celebrity Masterchef in 2010. I find great joy in passing on Mum’s recipes to my daughter Billie, 10. That to me is the joy of cooking – sharing a love of food, a memory of why something tasted so good. Billie loves Mum’s Bolognese recipe and even helps me cook it. We add mint to vary the flavour and use ‘spiralised’ butternut squash instead of pasta. Food has played such an important role in my life. I think about it pretty much all the time and me and my boyfriend John [Torode] talk about it non-stop. So it’s apt I’m doing it as a job now. Mum is probably doing cartwheels! 1 Heat 3tsp of oil in a pan and fry the onion for 10 mins until soft and golden. Add the garlic and fry for 1 min. Add the lamb. Increase the heat and break up the mince with a spatula until browned. 2 Add the wine (use water or grape juice if cooking for kids). Simmer until reduced by half, then add the tomatoes, purée and stock. Season, stir in the nutmeg and

simmer for 1 hr 30 mins, adding more stock if too dry. 3 Meanwhile, preheat the oven to 190C/170C Fan/Gas 5. Cut the squash across the middle to separate the thinner ‘neck’ from the wider bulb – save the bulb for another dish. Peel the neck and make into noodles. Season and drizzle with 2tsp oil, then roast for 20 mins or until tender. 4 Stir the mint into the sauce. Serve on the noodles and top with feta and mint leaves. Each 416g serving contains: ENERGY

Bring together with a palette knife, transfer to a floured board and knead to a dough. Wrap in clingfilm and refrigerate until needed. 2 On a baking sheet, toss together the sweet potato and squash mix, the red onion and 1tbsp of the oil. Bake for 25 mins until golden and tender. Spread the base with the veg mash, add a layer of red pepper, then the chicken, mushrooms and ham. Top with the ricotta mixture. 6 Roll out the reserved pastry into a round, big enough to cover your pie with a small overlap. Brush the edge of the pie with egg and top with the pastry lid, press down to seal and remove any excess with a sharp knife. Crimp the edges with your fingers to seal completely, then cut a small hole in the middle to allow the steam to escape during cooking. Brush the top with egg and bake for 50-60 mins until the crust is golden and crisp. 7 Take out of the oven and allow to cool completely in the tin. Turn out and cut into slices to serve.

Grilled prawn & halloumi salad

‘I love a bit of grilled squeaky cheese! It may seem odd grilling the watermelon, but it tastes wicked with the salty halloumi. If you’re not a fan of prawns, you could use grilled chicken instead.’ SERVES 4 READY IN 20 MINS PRICE PER SERVING £5.25 ● 600g raw prawns,

1 Fire up the barbecue, if using, 30 mins before you want to start cooking. 2 Cook the prawns, watermelon and halloumi separately on the hot barbecue or using a hot griddle pan. Each ingredient will take roughly 2 mins to cook on each side on the barbecue. 3 If you’re using a griddle pan, the prawns will need 2 mins 30 secs on each side. Cook the prawns first, making sure they are pink all the way through, then add the watermelon, and finally the halloumi,

so it remains warm when you serve the salad. 4 When the prawns, watermelon and halloumi have all been cooked, toss them together in a bowl with the basil, mint, pine nuts, olives and rocket. 5 Serve the salad immediately with a glug of olive oil drizzled over, a sprinkling of black pepper and the lemon wedges, to squeeze. M

any of the buzzwords and leading trends of our food world – plant power, veggie-based protein and raw and fermented foods – have been part of Far Eastern food culture for centuries. From sushi and matcha ice cream to hot squid balls via vending machines and noodles made from seafood, the Far East has always been a melting pot of tradition and innovation. And its ideas and flavours are more popular than ever among Britain’s chefs and foodies. We explore the hottest food trends and traditions arriving from East Asia.

MISO MAGIC While bone broth has stolen the trend headlines in recent years, there’s nothing faddish about miso soup. The Japanese have been starting the day with this instant soup of fermented soy beans for centuries. Chefs in the UK are also discovering inventive ways to use miso’s umami uplift, such as mashed in sweet potatoes or mixed with marmalade as a glaze for roast duck.

2

Asda Miso Paste, £2 (95g; £2.11/100g)

TOP TOFU A lot of Britons are baffled by tofu but they’ve probably only tasted bland varieties of the soya bean curd. In the Far East, tofu is an artisan delicacy and a mainstream protein source. Thankfully, better-quality tofu is now becoming more widely available in the UK and even ready-marinated with the likes of soy sauce and teriyaki. What’s more, we’re learning how to cook the stuff and inject it with flavour. Fresh silky-soft tofu is great in Asian soups, coated in sesame seeds and stir-fried with broccoli or scrambled with spinach and spring onions.

DIVINE DUMPLINGS Like all great cuisines, Asian food is rooted in good, honest peasant food, even if it’s gone gourmet in the meantime. Wagyu beef and king crab dumplings are both on the menu at Manchester’s contemporary Tattu – with a sister restaurant recently opened in Leeds – and dumplings are sure to be on the menu at the Taiwanese Din Tai Fung when it opens in London this summer. The latter’s signature xiao long bao – delicate dumpling pouches filled with juicy pork and a shot of broth – have been described as the closest thing to heaven in one bite. For the full-effect, flavour explosion, pierce them with your teeth, not chopsticks.

RAW APPEAL The coolest hit of 2016, Poke (pronounced poh-kay) – chunks of fresh tuna and veg soaked in a soy, lime and sesame oil marinade and served on a bed of seaweed-seasoned rice – is essentially sushi deconstructed in a bowl. Sushi is said to be the third most popular Asian meal in the UK after sweet and sour chicken and Thai green curry*. The Japanese have always paved the way with quirky food trends and what’s big in Japan often takes off around the world, as a recent fad for burgers and doughnuts made from sushi ingredients showed when it went viral on Instagram.

ASDA KOREAN BARBECUE PORK NOODLES

Asda Korean Barbecue Pork Noodles, £2.80 (400g; 70p/100g)

This combines the spice of Korean cuisine with a smoky red miso paste to create a sticky, spicy sauce that’s great over noodles.’ Mark Richmond, Innovations Development Chef at Asda

5

NEW NOODLES Alongside rice, noodles are one of the pillars of Far Eastern cuisine, and pad thai, Vietnamese pho and fresh Japanese ramen are all thriving thanks to an explosion of ‘fast fine casual’ restaurants and street-food stalls. Soho’s Koya Bar even offers an English breakfast udon noodle with egg, bacon and shiitake mushrooms. The latest noodles to rock the woks in the West are Chinese la mian – handpulled noodles theatrically made in front of diners and served in a clear soup, topped with sliced cooked beef and fresh coriander or in a sour and spicy chicken and shrimp dish.

OTHER TRENDS TO LOOK OUT FOR… Rollups, a Thai-styled ice cream treat; jackfruit as the next big meat alternative; Filipino cuisine, especially Pinoy BBQ, flavoured with soy sauce, lemon, garlic, sugar, pepper, and banana ketchup; okonomiyaki or savoury Japanese pancakes; and Korean-inspired brunch complete with kimchee (a fermented vegetable side dish).

style it out Whether you’re off to a wedding or going to a garden party, here’s your summer hair sorted… the half bun Easier than a full bun, which can pull at the hairline, this style – as seen on Nicole Scherzinger – is super-speedy.

HOW TO l First, give your tresses a good brush, starting from the bottom. l Work in sea salt texturising spray from roots to tips – this makes hair look fuller even though half of it will be swept up into a bun. l Next, pull the front section up into a rough ponytail but, instead of securing it in place, start twisting it from the 82 | ASDA.COM/GROCERIES

base to the ends – pull as tight as possible and it will naturally start to swirl itself into a bun. l Once in place, secure with a band. l Pin any wispy bits and the bun itself with hairgrips and go over the whole lot again with sea salt spray.

Romantic waves A classic, effortless style – worn beautifully by Johnny Depp’s daughter Lily-Rose – this look suits all hair lengths and face shapes. HOW TO l Wash your hair, skipping the conditioner. Blow-dry smooth using heat-protection spray, then work into 5-8cm sections. l Start on the bottom layer, spritzing hairspray all over before winding the midlengths – but not the roots and ends – around your curling wand. l Hold each piece for a few seconds, then carefully let the curl drop. Mist with hairspray, then leave it alone. l Repeat all over your head, then give your hair another full coat of spray. l Once completely cooled, tip your head upside down and comb through with your fingers.

control curl cream for a smooth but not over-straightened finish. l Pull the front section of hair up and smooth it back with a brush for a sleek style. Alternatively, push it forward and use the fingers of your other hand to rub it sideways, giving it a messier texture. l Pull up the rest of your hair and add it to the front section, securing it all in a ponytail with a bobble. l You can add subtle curls or waves to the ends using a styling wand. l Set with curl-styling spray, then shake your ponytail out slightly.

the beauts braid Pretty plaits are a safe bet for a party as they’ll stay up as long as you do! Poldark’s Eleanor Tomlinson rocks this look. HOW TO l Blow-dry hair – get as much va-vavoom into the roots as you can. Then mist with a texturising spray, and work through with your fingers. l Create a fishtail braid if you know how. Or, for an easier option, use the end of a pintail comb to divide your hair into three sections. l Pull to one side of your head and plait tightly from the nape of the neck – you can loosen it later. l Secure with a glitter hair tie. l You can then let the braid hang loose, or wind it over your head and pin it into place for a halo effect.

Embrace summer with lush, leafy designs and prints inspired by the natural world

Expert Tips It’s easy to integrate Greenery into any colour scheme, says George Home editor Sharon Parsons ‘A vibrant green can seem a bit overwhelming at first sight, but when used in the right way, it really gives a room a lift. It’s a very refreshing hue, great for kitchens and bathrooms, and fun for kids’ rooms, too. ‘Botanical and natural themes are big at the moment, so don’t be afraid to paint a feature wall in a bold green – or just try a smaller panel. If you have a neutral scheme, green makes a great accent shade. Add pops of colour with cushions and ornaments – and, of course, plenty of plants!’

power hour Reclaim your lunch break this summer and give your mental and physical wellbeing a boost

T

hink what you could do with an extra hour in the day – walk in the park, catch up with a friend, go to the gym? With a whopping 82%* of UK workers no longer taking a full lunch hour, and 66% eating at their desk, Brits are putting in an estimated 19 extra days of work per year** munching a sarnie ‘al desko’. Why? ‘The perception is that lunch is for wimps,’ says Sir Cary Cooper, Professor of Organisational Psychology and Health at the Alliance Manchester Business School. ‘In these job-insecure times, people have got into the habit of having a

of UK workers no longer take a full lunch hour 25-minute lunch at their desk – and the evidence is, it’s damaging on every level you can imagine.’ Prof Cooper argues that ‘regularly skipping entitled breaks not only affects productivity, it can also

have damaging effects on work relationships.’ A 2014 study by Bupa suggests it can have a negative impact on your mental and physical health, too. Bank the benefits Taking time away from the office each day can have huge benefits, helping you re-energise your mind and body for the afternoon ahead. ‘Have lunch a reasonable walk from your office, then you get some exercise, too,’ suggests Professor Cooper. brisk walk could be just the thing to combat the harmful effects of sitting at a desk all day. Escaping the office with colleagues is also the key to building important bonds, because it encourages you to talk about something other than work. Researchers at the Massachusetts Institute of Technology found that chat and socialising during breaks significantly increases productivity, so having a natter about last night’s Corrie could be as good for business as it is for your brain – who knew?

A recent study in Gothenburg* found that people who worked a 30-hour week rather than 40 hours were more productive and had less illness and greater job satisfaction

MAKE A CHANGE In 2014, employees surveyed by Bupa admitted their top two reasons for skipping lunch were having a heavy workload and feeling pressured by their boss. ‘Nothing has changed in 2017,’ says Professor Cooper. ‘We’ve developed a culture in which we feel the need to show face-time to bosses, by working longer hours and through lunch.’ The sooner you get into better habits, the sooner you’ll see your own wellbeing and working environment improve. But how to combat the pressure not to take a break?

92 | ASDAGOODLIVING.CO.UK

● Don’t be afraid to say you’ve got too much on your plate. Flag to your boss and co-workers that you often have to work through lunch and see if projects can be shared. ● Make a plan If you want to be sipping coffee in a café by 1.15pm, write a to-do list and get all of your morning tasks done by 12.45pm. ● Leave for lunch at the same time each day so your co-workers see this as your time. If you need to, explain to your boss that a break makes you more productive – you’ll thank yourself later!

Take a screen break and chat to colleagues about holiday plans, or catch up with friends – just avoid gossiping or work moans!

Refocus your attention Find inner calm with some meditation. Download a free app like Headspace or Calm to help you.

Discover new places Explore the area around your workplace, and check out a market, museum, gallery or bookshop.

Move your body

Head to the gym, take an exercise class, have a swim – or just go for a brisk walk around the block.

Learn a language

Use an audio guide, podcast or app (try Duolingo) to start learning that language you’ve always wanted to or brush up before your holiday.

Go for a wander

Meander around your local area without a clear route and discover new places. Try a new café or pub, take photos of things that interest you or simply use the time to call your Mum for a catch-up.

It’s showtime!

Create a pretty display with two bunches of flowers and a little know-how

O

ur Asda colleagues are a talented bunch. Take John Dalton, who works on the checkouts in our Carlisle store. He’s also an expert florist and we’re so proud, we sponsored his trip to the 2017 RHS Chelsea Flower Show where he won a gold award for his floral creations! Inspired by the beautiful blooms at Chelsea, John has designed a spectacular arrangement* for you to put together at home, using two bunches of flowers from Asda – Lily Duo, £5 and Seasonal Breeze, £3.50 – plus a vase and a little garden foliage. And it’s easier than you may think – just follow his simple guide…

Go to ASDA.GL/ flowerarranging for more arrangement inspiration

flower power

STEP ONE ‘Soak a piece of floral foam (from your local florist) in water and cut it to fit the neck of your vase, with 5cm above the rim. Push the foliage stalks into the foam; make holes with a skewer if necessary.’

STEP TWO ‘Add the flowers – lilies, carnations and stocks – in layers, pushing the stems into the foam. Use the stocks to give height for a triangular shape. Water the foam daily to make your blooms last.’

How to get the best of your bunch ● Remove leaves from lower stems so they don’t rot in the water ● Soft stems like gerbera need to be cut straight across ● Hard or woody stems like roses need to be cut at a 45° angle ● Make sure vases are squeaky-clean before arranging your flowers ● If rose heads start to droop, snip stems at a 45° angle, then plunge into boiling water for 10-15 seconds, before quickly transferring to cold water

Selected stores only, subject to availability. *Flowers only – Lily Duo and Seasonal Breeze bunches. Completed arrangement is not available to buy

ini furries can make wonderful family pets. They are great for smaller homes compared with larger animals and, as it’s relatively easy to ensure they receive the care and attention they need, they can help children to learn the basics of keeping pets. But which type would suit your family best? hamsters and gerbils Fascinating and fun to watch, these small rodents enjoy climbing, exploring and hoarding food in nest boxes! Keep them busy in a large, multi-level cage with small boxes and tubes, an exercise wheel and plenty of dust-free bedding for burrowing. Gerbils, which are best kept in samesex pairs or groups, are more active during the day and live for up to five years. Hamsters are happier on their own, live for up to two years and are most active at night – so don’t keep them in a bedroom!

up to 20 hours a day. Like rabbits, they are intelligent so they need to be kept busy with ‘toys’, such as loo roll tubes. Guinea pigs can live for up to six years, while rabbits can live for up to 12. They’re both sociable and like to live with their own kind, so if you can, get more than one. A constant supply of fresh grass or grass hay with chopped green vegetables is essential to their health and wellbeing,

so a hutch with access to a run is best – just make sure it’s escape-proof! Ensure, too, that rabbits have room to explore, stand upright on their hind legs and hop around – ideally in a large garden.
