Pick-me-up peach iced tea This was my go-to fuel when I was studying for A-levels! Bubble up some peach slices in sugar and water for 20 mins. Blend until smooth, then strain. Dunk 2 black teabags in 500ml hot water for 3-5 mins, remove and cool. Fill a jug with ice, pour in the tea and add the peach mix to taste. Dress it up with mint and slices of peach. ASDA.COM | 11

Add to the marinade, cover with clingfilm and marinate in the fridge for 2 hrs, or ideally overnight. 3 Line a baking tray with baking paper. Preheat the grill to high then cook the chicken for 25-35 mins, turning halfway through, until cooked through and crispy. 4 Cook the rice according to the pack instructions. Caribbean curry patties & zingy salsa

1 Preheat the oven to 190C/170C Fan/Gas 5. Line a baking tray with baking paper. 2 Fry the lamb mince on a high heat for 5 mins, stirring, until evenly browned. Drain off any excess fat. 3 Add the red onion, garlic, carrots, celery, tomatoes, tomato purée, curry powder, cumin and turmeric. Cook for 8 mins, stirring occasionally, until the veg starts to soften. 4 Crumble in the stock cube, pour in 300ml boiling water and add the bay leaf. Stamp out 8 circles with a large cookie cutter. 6 Place a spoonful of the lamb mixture in the middle of each circle. Beat the egg with a pinch of turmeric, then dab around the edge of each circle. Fold the pastry over to get semicircular patties,

pinching the edges together with your fingers and thumb to seal. 7 Put the patties on the baking tray and brush with egg to glaze. Bake for 25-30 mins until golden and risen. 8 Meanwhile, mix all the ingredients for the salsa together. Serve with the curry patties.

FOR THE BURGERS ● 1tsp rapeseed oil ● 4 spring onions, chopped ● 1 clove garlic, crushed ● 1tsp allspice powder ● 240g Arborio rice ● 400ml 50% fat coconut milk ● 1 reduced-salt veg stock cube ● 200g frozen peas ● Juice and zest 1 lemon ● 25g pack coriander, chopped ● 2tbsp polenta FOR THE SLAW ● ½ red cabbage, finely sliced ● 2 carrots, peeled and grated ● 2 sticks celery, finely sliced

and cut into thin strips

● ½ red onion, finely sliced ● Juice 1 lime

1 Heat a large pan on medium. Add the oil, spring onion, garlic and allspice, and cook for 5 mins until softened. Boil 300ml water and set aside for later. 2 Add the rice and coconut milk to the spring onion mixture. Crumble in the stock cube and simmer, stirring constantly. When the coconut milk has been absorbed, gradually add a little of the hot water to the pan, stirring, until absorbed by

the rice. Repeat this process until the rice is cooked. Leave to cool. 3 Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray with baking paper. 4 Bring a pan of water to the boil. Add the peas, cook for 2-3 mins, drain and return to the pan. Lightly crush with the back of a fork then mix into the rice along with the lemon juice, zest and half the coriander. Season with black pepper. 5 Shape the rice into patties, roll in the polenta and place on the tray. Bake for 15-20 mins until golden and crisp. 6 Mix the slaw ingredients with the rest of the coriander. Serve with the burgers. Each 587g serving contains: ENERGY

1 Chop the frozen bananas into chunks and blitz in a processor with the custard and 1 pot of the yogurt until smooth. Spoon one third of the mixture into a shallow, lidded food-storage box and put in the freezer. 2 Add 3 drops green food colouring to the remaining mixture and blend to an even shade. Spoon the mixture into a shallow food storage

inging, my mum Doreen watched me add coconut milk to the chicken curry. ‘Put some music in the food!’ she laughed, then broke into another gospel song. It was the winter of 1969 and I’d just arrived in Brixton. My parents had come to the UK six years earlier, in search of a better life for us, while I stayed with my grandma Miriam in Jamaica. Then, aged 11, I’d joined them and my four siblings. It was a crazy culture shock, like landing on another planet. Jamaica, was lush, warm and green – here, the trees were bare and the wind bitter. But Mum had just the thing to ease my homesickness – the familiar food of the Caribbean. I’d help her dice the onion and peel the papaya, and the curry soon filled our flat with its exotic aromas. It also helped us to bond. I’d been so little when she’d left, but as we cooked together, we reconnected, too. Mum is still going strong at 87 – and the love of cooking she and my grandma instilled in me has never waned. Now I make chicken curry for Mum and I’ve taught the recipe to my son, Zaion, 32. I hope he’ll pass it on to his own child, too. It’s ideal for family and friends as you just put the pot on the table and everyone tucks in. It really is the perfect dish for bringing people together.

Remove and set aside. Cook the onion, aubergine, squash and potato in the remaining oil until they begin to soften. Add the spice paste and cook, stirring, for 4 mins, so it releases its fragrance. 3 Return the chicken to the pan and add the coconut milk, tamarind paste and bay leaves. Bring to a boil, then simmer, covered, for about 40 mins until cooked through. 4 Add the papaya, mango, lime and rum (leave out the rum if cooking for kids) and simmer, covered, for 5 mins. Serve immediately.

or kids, developing a healthy relationship with food can be so much easier if you get them into the kitchen as early as possible. Letting them get their hands – and the worktops – dirty is an ideal opportunity to develop their taste buds, and a great way for them to enjoy a more varied and balanced diet as they grow up. To help get them started – or teach them new skills – we’ve put together fun recipes for kids of different ages and levels. They’ll

learn how meals come together using fresh and store-cupboard ingredients. These dishes range from easy, for little ones who can just about stir with a wooden spoon, to more challenging, for older kids and teens who want to try their hand at new recipes. Along the way, they can learn new techniques – from basic peeling and cutting, to breading fishfingers and blending soup. Plus, of course, it’s a great way to get them involved with cleaning up afterwards!

SUPER SKILLS ✔ GRATING Zesting an orange is ideal for a first attempt at using a grater. Get your child to hold the orange firmly and move it down the fine side of the grater without pressing too hard, taking care not to scratch their fingers! ✔ MELTING Ask them to help you watch the apple juice as it’s heated with the gelatine and tell you if they see bubbles forming – if it boils, the jelly won’t set. Then they’ll see the gelatine melt, turning from solid to liquid. ✔ MASHING Get them to use the back of a fork to squish together the strawberries and jam, taking their time to get a smooth result. Show them that it makes it easier to mix the fruit into the yogurt, and it also helps the mixture freeze better, with no icy lumps.

Mix in the rest of the apple juice. 4 Divide the jelly between 4 plastic glasses and leave until cold. Stir in the berries then chill in the fridge for 3 hrs or until completely set. Serve the jelly with the frozen yogurt.

Cut the root and tough green leaves off the spring onions with kitchen scissors, then snip the rest into small pieces. 3 Heat the oil in a pan and add the carrot, red pepper, celery and half of the spring onion. Cook in the oven for 15 mins. 7 Add the pasta to a pan of boiling water, bring back to the boil, stir once and simmer for 10-11 mins. Drain. 8 Stir the meatballs into the tomato sauce and reheat for 3-4 mins until piping hot. Serve with the spaghetti.

The mixture should measure 400ml – if short, top up with water. 6 Stir in 175g of the yogurt and pour into 4 glasses. Leave to set in the fridge for at least 2 hrs. 7 Serve topped with the passionfruit seeds, the rest of the yogurt, the mint sprigs and raspberries.

lambering on hay bales and nibbling strawberries fresh from the field may sound like a scene from Enid Blyton’s The Famous Five, but it’s actually Open Farm Sunday. This is when farmers across the UK welcome families through their gates, so kids can enjoy a taste of country life. Good Living joined in the fun at Green End Farm in Yorkshire, where Simon Dobson, 57, has been growing fruit and veg for Asda for 30 years. ‘We open the farm to show there’s a story behind every bit of produce you buy in the supermarket,’ he explains. ‘There are people working a lot of 48 | ASDAGOODLIVING.CO.UK

hours, with a lot of passion to produce the fresh, tasty vegetables we eat.’ As a boy, farming was part of Simon’s everyday life, but he feels the younger generation know far less about where food comes from. ‘A lot of our holidays were spent on farms, picking potatoes or whatever. Now because of health and safety, and mechanisation, the young don’t do that. The connection has been lost.’ Simon believes seeing the produce growing in the 3,400-acre plot helps children understand the journey from his fields to their plates, and the kids can’t wait to find out.

Among the farm’s young visitors are brothers Alfie, five, and Harry, two, from Leeds, who have fun following two giant Shire horses as they drag a ‘I LOVE STRAWBERRIES!’ huge iron plough over a strip of field. LILY, 10 ‘With a good horseman, you could plough an acre a day like this,’ Simon explains to them. ‘But the tractor we have now is steered by satellite, so it’s closer to 40 acres.’ Alfie is impressed. ‘We learnt that a plough was how they got vegetables from the fields in the old days,’ he says. Meanwhile Joshuah, six, from Batley, is intrigued to discover how his favourite vegetables end up in the supermarket aisle. ‘I know cucumbers come from the shop, but they get them from a farm, where they grow out of the ground,’ he tells us. seed to a big plant that you can eat!’ And there’s another reason she loves Open Farm Sunday. ‘I’m a vegetarian, so it’s interesting to see where they grow everything, and the animals.’ The children also get excited about choosing their favourite things. Seb, six, from Dewsbury, picks tomatoes which, he says, he grows at home with mum Emma. ‘I like the taste a lot!’ Ivy, four, from Wakefield, grins as she picks a mis-shaped cucumber. ‘You can use the wonky ones as a boomerang!’ she laughs. ‘I’ve learned today that we should be kind to the animals we eat,’ says Lily Mae, 10. ‘And that it’s nice to get your vegetables from a farmer that lives near you. Also, you can put cucumber on eyes to cool them!’ All this chatter and excitement is music to farmer Simon’s ears, as he believes educating children about food is key. Although on Open Farm Sunday, the emphasis is on fun, too. ‘They have such an enjoyable experience,’ he says. ‘And for me, that is just fantastic!’ Visit farmsunday.org for info. Dad’s happy that I’m following in his footsteps CBBC star and daughter of celebrity chef Gordon, Tilly Ramsay, 17, reveals why her dad is so proud You have your own TV show and book, Matilda and the Ramsay Bunch: Tilly’s Kitchen Takeover. How do you handle being famous at a young age? Mum and Dad have helped me stay focused on schoolwork, and cooking at home at the weekend is relaxing. What was the first thing you cooked? Fairy cakes, with Mum, when I was four years old. I was about six when I did them by myself. Baking was an easy place to start. Best cooking advice from your dad? Not to give up on a dish, and have

fun. He does try to take over in the kitchen, which can be annoying, but he teaches me so much. Is it important to you to be seen as a chef in your own right? Yes! Dad helped me get into cooking and advises me in the kitchen, but I decide on my recipes. He’s really happy that someone else in the family loves cooking, though. Any celeb you’d like to cook for? Me and my brother Jack love Ed Sheeran. I’d cook cheeseburgers for him, which I think he’d like because he’s so down-to-earth. Who do you love cooking for you? My mum. Her spaghetti bolognese is definitely my desert island meal. She loves healthy food and has introduced us to chia seeds and green smoothies. Your biggest kitchen gaffe? Dad once came into the kitchen when I was cooking gyoza and started chatting to me while the dumplings were in the steamer. All the water evaporated from the pan and the

steamer caught on fire. I said, ‘Dad, get out! You made it go wrong!’ Quick supper suggestion? Pasta with a simple sauce – tinned tomatoes, garlic, onion and the secret ingredient we add at home… Marmite! You only need a teaspoon and it makes the sauce taste great. Your proudest culinary creation? For my parents’ 20th wedding anniversary I made a 20-layer rainbow cake – 10 layers of coloured sponge and 10 of icing, which I sprayed silver. It was really difficult, so it felt like a big achievement. Anything you’re scared to attempt? My dad’s Beef Wellington – it’s so good. He’s always telling me it has to be perfect, so I’m leaving it a few years before I give it a go! ● ASK PERMISSION However good at cooking you are, Mums and Dads like to know what you are up to in the kitchen, so always let them know before you get started. They will hang around to watch over you, but that’s OK – you might need their help from time to time. ● GET READY Before you start, always wash your hands and make sure your hair is off your face. If you are wearing light-coloured clothes or a favourite T-shirt, put on an apron to keep yourself clean. ● BE CAREFUL OF HOT THINGS Touching hot pans and ingredients will burn and hurt like mad. Always use oven gloves when handling hot pans and keep fingers away from flames, kettles, ovens, etc. ● BE HYGIENIC When you handle raw meat, eggs, shellfish and fish, you need to wash your hands before and after so you don’t spread bacteria and other germs. Make sure you also clean anything that comes into contact with these ingredients, such as knives, boards and bowls. ● TIDY UP A good chef is a tidy chef… or so Mum says. I am a disaster in the kitchen when it comes to mess but I always clean up after myself. ● HAVE FUN! Dad always says that it really shows in the food if you liked cooking it, so don’t get stressed – enjoy yourself!

Put a frying pan over a medium heat and put the pine nuts into the pan for 5 mins, moving them around often so they don’t burn. Tip onto a plate. 68 | ASDAGOODLIVING.CO.UK

2 Peel the garlic clove and crush it to a paste in a garlic crusher. Remove the seeds from the chilli, if using, and cut into small pieces. 3 Grate the Parmesan using the fine side of the grater, and being careful not to grate your fingers! 4 Drain the tomatoes over a measuring jug to catch all the oil. You need 175ml of oil, so if you have less than this, top up with olive oil. 5 Put the garlic, pine nuts, tomatoes, chilli (if you are adding it), Parmesan and oil into your blender and, with the lid on, blitz to a loose paste. Put the paste into a large mixing bowl. 6 Chop the chicken into chunks. Add to the bowl and mix thoroughly, then leave in the fridge for at least 1 hr. Always wash your hands after you have been touching raw meat.

7 Once the chicken has had a chance to marinate, preheat the grill to high. Thread the chicken on to the skewers and put them on a grill tray. 8 Cook under the grill for 5 mins and then turn over and grill again on the other side for the same amount of time. Make sure the chicken is cooked all the way through – cut into it and have a look. If it is cooked, there should be no pink in the middle. 9 While the chicken is cooking, chop the parsley with scissors. 10 Transfer the chicken skewers to a serving plate and garnish with the parsley. Danielle says, ‘My appearance has taken a back seat over the last few years – and not just because I’m so busy as a mum of three and part-time teacher. I have a gene mutation that causes breast and ovarian cancer so, in 2014, I had preventative surgery. I lost my own mum at a young age, and I want to be around for my kids. I had another operation last February, which triggered the menopause. Franki says, ‘I’ve been a single mum since Kingston was born, juggling looking after him with studying for an English degree and working in a bar, so I haven’t had much time to focus on myself. My hair is normally scraped back in a ponytail, and I run around in jeans with minimal make-up. I was worried Kingston would decide I should have blue or green hair, but when I saw my new style I was delighted – and so shocked, I barely recognised myself. ‘I’ve just finished my degree and am starting to apply for jobs. It’s nervewracking, but looking at my reflection after the makeover, I saw a glam woman ready to take on the world, rather than the uncertain girl I’ve often felt like inside. High five, Kingston!’

Whether a child is football mad or obsessed with purple décor, their room should reflect their personality. So when Isobel, 12, and Christian, nine, from London, set us the challenge of updating their bedrooms, we couldn’t wait to convert them from dull to dazzling! Isobel is a girlie-girl who loves pretty things – and, with ambitions to be a designer one day, she likes the colours in her room to be coordinated. Her brother Christian just wanted more of a fun space to play. Like many kids, both tend to complain when told it’s time for bed – so parents Helen and Dillon were keen for us to do whatever we could to make them actually want to turn in for the night. challenged them to a cheap but very cheerful week of activities over the half-term holiday. The kids soon got busy – even Jacob, which surprised me, as I thought it might be too ‘young’ for him. Plus, as the brushes and paints were so affordable there were plenty to go around, and no squabbles over them. It ended up being a very calm activity and I was able to play with Milo at the same time, too. The sun came out in the afternoon and we all had a ball sailing the boats in our paddling pool – then splashing around in it as well! tuesday Boo! It’s raining today, and the kids are getting antsy so I take them to the Norwich Millennium Library for a free drop-in Board Games afternoon. I’d recommend checking out your local library or community website to find out what’s going on in your area. While I get stuck into chess with the mums, Gracie and the gang play a mammoth game of Monopoly with some kids they’ve just met. Neve spends most of it in jail, but is chuffed to make a new friend. My brood spend so much time together, it’s great to see new faces. On the way back, we make a pit stop at Pizza Hut, where on Tuesdays you can get up to two free pizzas for kids 10 and under*. The kids crash into bed with full bellies and smiles all around!

would see what first. With a fair amount of practice under my belt by now, I’ve learnt the kids need a distraction to keep them occupied – wherever we go. We’d anticipated bumble bees and dragonflies, which we managed to catch glimpses of, but what no one expected was a grass snake, which slithered past us… As you can imagine there was a fair bit of shrieking – mostly from me! It was a lovely walk with lots of twists and turns over some manmade bridges all around the lakes. We took the dog and everyone had a paddle at the end! We had such a fun, bonding time and the kids were talking about our day right until they went to bed.

friday Rain again today, so before they had time to get fidgety, I drove the kids to Norwich Cathedral for a free guided tour. The older ones are enthralled with their headsets as they’re taken on a journey through history to learn how the cathedral has survived riot, war, plague and fire. acts to chew over… With one in four children in the UK suffering from tooth decay before they even start school*, a good dental-hygiene regime should begin at an early age. ‘Dental care for under-18s is free in the UK,’ says Professor Chris Deery, Dean School of Clinical Dentistry for the University of Sheffield. ‘So get little ones in the dentist’s chair as soon as those milk teeth appear – and get brushing!’

● Use just a smear of toothpaste for under-threes, and a pea-sized amount for kids aged three to six. Any more and they may want to spit it out before their teeth have been brushed properly. ● Make brushing fun with free** app Brush DJ. Kids can pick a song to brush to, timed to the optimum two minutes. ● Get them to spit out toothpaste without rinsing, so they don’t wash away tooth-protecting fluoride. ● Encourage kids to drink only milk or water between meals. The misery of being bullied can cause lasting damage – follow our guide and take the right steps to give your child the support they need

I

t’s a conversation every parent dreads: ‘Mum, Dad, I’m being bullied...’ But, with an estimated 1.5 million young people in the UK experiencing bullying in 2016*, it’s one every parent or carer needs to be geared up for. Just in case. ‘Letting your child know that they can talk to you at any time is key,’ says child psychology expert Professor Mike Boulton of the University of Chester. ‘At least half of all children who are being bullied, if

not more, don’t tell anyone.’ It’s obviously a sensitive subject and also one that increasingly needs to be addressed – Childline reported an 88% rise** in calls about online bullying in the last five years. Often, telling an adult is the only way for your child to stop what can be a very upsetting time for the whole family, so try to have the tools in place to help them with it. Here’s our guide to treating the issue, calmly, sensibly and supportively.

SPOT THE SIGNS

Some clues may be less obvious than others. If you notice any of the following, your child may be having a problem with bullies. ● Your child seems withdrawn, anxious, depressed ● Their behaviour becomes more defiant or aggressive ● Garments and belongings get ‘lost’ or damaged ● You notice unexplained physical injuries ● They try faking illness or skipping school ● They are unable to concentrate in lessons ● They have problems with eating or sleeping

TALK IT OUT Discussing bullying can be difficult for children – and for mums, dads and carers, too. ‘Parents may think their child can talk to them about anything, when actually they feel like they can’t,’ says Professor Boulton. Children often worry that they might not be believed, that they could be blamed, or that their parents might overreact and make a scene. For them, telling an adult could make the situation worse, or simply make no difference at all. The key is to approach them first. ‘Look for a good moment to raise it, in a way that doesn’t look like you’re interrogating them,’ says Professor Boulton. ‘Then give them time and space to think about what’s been said and let them talk to you if and when the time is right for them.’ Keep calm and listen carefully to everything they have to say, then discuss with them what they would like to do next. Reassure them that things will improve now they have told you. After your chat, keep reminding them that you’re there to talk about what they are feeling at any time. If they find speaking to you difficult, encourage them to get advice and support from a trained counsellor.

I’m in the gym most mornings and used to eat porridge until I got a lot of fatigue when training. I now have Ready Brek as I find it easier to digest. I’m also obsessed with coffee – I can’t start my day without one! Are you a healthy eater? I’m very disciplined in the week, but at the weekend I relax with food, which I think is down to having a girlfriend and being away most weekends. I did make her some food early doors, which was risky – a tuna steak niçoise. I’m embarrassed how easy it was, but it was just right. I put a lot of thought into it. Your cooking inspiration? My dad Goronwy, a meat-andtwo-veg man like myself, did all the cooking in our house so

I was brought up with a simple palate. I’ll have a protein-heavy sandwich or salad for lunch then chicken or white fish with veg for dinner. Celebrity inspiration? I love cooking shows where people are really passionate. I saw James Martin cooking an omelette in one minute and thought, ‘That’s my kind of cooking!’ Strangest thing you’ve eaten? Sea urchins (above) in the Tokyo Fish Market – they’re the most disgusting things I’ve ever eaten. I also had salmon eggs and blowfish, which is a Japanese delicacy, but if you eat the wrong part of the blowfish, you’ll die. Recent dining experience? I took some of my friends to London’s new hotel, The Ned, for the most random Sunday lunch. It has nine restaurants and, on my plate, I had a mixture of lobster, Sunday roast, granola and doughnut. My eyes were bigger than my belly. Favourite Welsh delicacy? Cawl in the winter is the best. It’s a traditional broth made with leftover veg and meat. I dip bread in it, which goes all soggy! Last supper? Whitebait to start, roast chicken with a Yorkshire pudding, and a massive apple crumble. I’m going to die full. Your guilty pleasure? A place in Cardiff, known as ‘Chip Alley’, that you only go to after a few drinks at the rugby. I’ll be back there again in the future, I know it.
