Seen all over Instagram, these puffed-up breakfast beauties are so simple to make. Preheat the oven to 230C/210C Fan/Gas 9. Take an egg and separate the white and yolk. Whisk the white into stiff peaks and add extras such as Parmesan, chives or ham. Spoon the egg whites onto a baking tray lined with baking paper, make a little ‘nest’ for the yolk and bake for 2 mins. Remove from the oven, add the yolk, season and bake for 3 mins until the whites turn golden. Serve immediately.

1 Preheat the oven to 200C/180C Fan/Gas 6. 2 Toss together 1tsp of the oil with the Mediterranean vegetables in a large roasting tin and cook in the oven for 25 mins until softened and turning golden. Cool slightly then add the pizza topper and stir to make sure the veg is completely coated. 3 Meanwhile, on a large baking tray, toss the sweet potato in the other 1tsp oil and the paprika, then roast for 20-25 mins until golden and tender. 4 Increase the oven temperature to 220C/200C Fan/Gas 7. 5 On a lightly floured surface, unroll the pizza base. Cut out 4 circles about 14cm in diameter, using a plate as a guide, rerolling the pizza base as necessary. Spoon a little of the veg onto one half of each circle and top each with a quarter

FOR THE KATSU CHICKEN ● 305g Asda British Chicken Breaded Mini Breast Fillets ● 300g Asda Thai Jasmine Rice (uncooked weight) ● 2tbsp Asda Rice Vinegar ● 1tsp rapeseed oil ● 2cm piece ginger, chopped ● 360g pack Grower’s Selection Beansprouts ● 350g Asda Taste of Japan Katsu Spice & Simmer Sauce FOR THE SALAD ● 1 cucumber ● 2 carrots ● 1 iceberg lettuce, shredded ● 2tbsp sweet chilli sauce ● Juice 1 lime ● 2tbsp chopped coriander 1 Preheat the oven to 220C/200C Fan/Gas 7. 2 Place the chicken on a baking tray lined with baking paper and cook for 15-20 mins until hot and crispy. Slice. 3 Cook the rice according to the pack instructions. When it is done, drain and stir through the rice vinegar. 4 Meanwhile, heat the oil in a pan, on medium. Add the ginger and fry for 1 min. Add the beansprouts and the dry spice cap from the Spice & Simmer kit. Fry for 2 mins, add the katsu sauce and simmer for 3-4 mins to heat through. 5 For the salad, pull a veg peeler down the length of the cucumber and carrot to create ribbons. Mix with the lettuce, chilli sauce, lime juice and coriander. 6 Divide the rice between 6 plates and top with chicken slices. Spoon over the katsu sauce and beansprouts. Serve with the salad.

350g Basmati rice 3tbsp rapeseed oil 1tbsp ghee or butter 1 cinnamon stick 2 star anise 1tsp cumin seeds 2 cardamom pods 1 bay leaf 1 large red onion, chopped 2cm piece ginger, peeled and grated 2 cloves garlic, crushed 4 vine tomatoes, chopped 1tsp turmeric 1tsp paprika 350g rump steak, cubed 200ml Greek yogurt

● Pinch saffron, in a little water

1 Parboil the rice for 7 mins so it’s firm but not raw. Drain and set aside. 2 Heat the oil and ghee in a pan on low. When hot, fry the whole spices for 30 secs to release their aroma. 3 Add the onion and fry for 3-5 mins on a medium heat. Add the ginger and garlic and cook for 30 secs. Add the tomatoes and cook for 10-15 mins until they reduce to a thick sauce. Add the turmeric and paprika. 4 Add the steak and stir-fry for

2-3 mins, to brown. Add the yogurt and cook for 3-4 mins until the sauce thickens again. Cover the pan. Turn the heat to low. 5 Simmer for 15-20 mins. If the beef is not cooked through after this time, add a little water and cook until the sauce thickens again. 6 Layer the rice evenly on top of the meat. Gregor McMaster, Food Editor I’m so pleased to see duck making a comeback recently – it’s so versatile. I love its rich, slightly gamey flavour which makes for a great comfort food, especially as the days get chillier. If you’ve never cooked it before, duck is nothing to be afraid of. There are so many ways to serve this bird and doing so is easier than you think – especially with our great Extra Special range of British whole Pekin ducks, breasts, breast steaks and legs. All our duck is 100% British and regulated by the Duck Assurance Scheme, so you can be sure of the highest standards of food safety and animal welfare. As our recipe shows, you can serve an Extra Special British Whole Duck as you would a roast chicken. The trick is getting the skin nice and crispy by patting it dry first, then pricking it to release the fat. Any leftover roast meat makes a great substitute for lamb in shepherd’s pie. Don’t want a whole duck? Try roasting a couple of our Extra Special British Duck Legs, £3.75 (450g; £8.33/kg). You could also serve Extra Special British Duck Breast Portions Asian-style, with the bird’s traditional best friend, orange, or even stir-fry an Extra Special British Duck Breast Steak, £6 (375g; £16/kg) for a quick salad. Stir in the Chinese 5 spice followed by the orange and lime juices, fish sauce and marmalade, and bring to the boil. 4 Mix the cornflour with a little cold water to make a paste. Add to the sauce, bring back to the boil and simmer for 2-3 mins until thickened. Remove from the heat and add the orange segments. Serve the duck with the orange sauce, rice and veg.

wo foods are in abundance in Bangladesh – fruit and river fish. But when my mum and dad, Asma and Jamir, moved to Britain as children, they could only buy – as my grandma called it – ‘English fish’ like salmon and haddock. Apparently, it isn’t as tasty as river fish and I remember Dad travelling miles to a Bengali fish market and spending his weekly wage on a big river fish, just so Mum could feel closer to home. I was born in the UK, where we had the luxury of clean running water – unlike in Bangladesh, where my relatives had to walk a mile to the nearest well. Every year, Dad managed to save up so we could spend the summer holidays there. It was like a different universe. We’d sit on the floor and eat with our hands, and this picture shows me doing just that – at the age of five, surrounded by my relatives, eating a river fish curry for lunch. I remember clearly, that morning we’d used nets to haul our catch from the river, which flowed next to my grandad’s hut. I first cooked this for my son when he was six months old using salmon – much to the horror of my parents. For me, though, it’s still just as delicious! There’s no finer way to spoil people than with cakes!

Baking blogger Emily Findlay, 25, works in PR and lives in Highbury, London When I was growing up, the smell of baking always filled our home. The biscuit tin was forever packed with traybakes made by my mum Kay, and there was always a cake or three in the cupboard or freezer, which we could whip out if guests arrived or if we were invited to someone’s house. Our family’s rule was that it was important to cherish loved ones, and there was no finer way to do that than spoiling them with home-baked goods! After I went to uni, the first thing I’d do when I came home was raid the cupboard – oaty caramel slices, spicy apple cake, apricot traybakes... Mum never gave herself any credit as a baker, but it was the ultimate feel-good, welcome-home treat. That was why, after Mum passed away from breast cancer in 2014, aged just 56, I was inspired to set up a baking blog to share her wholesome, old-school recipes, and new ones of my own. Flicking through her tattered, handwritten cookery book, seeing her scribbled notes saying things like ‘very moreish!’ amid splotches of cake batter, I knew she would approve. For this challenge, I baked Mum’s yogurt & lemon cake – one of my alltime favourites. It’s zesty and deliciously moist with a crunchy outer shell. The recipe wasn’t difficult – it’s a one-bowl wonder, so I just mixed the ingredients then popped it in the oven. The smell as it baked, then that first bite, transported me back to being 11 again, having a picnic with Mum and my big brother William, now 27. Lewis Craft, 40, from Abbots Langley, Hertfordshire, is a telecoms engineer Tiramisu, zabaglione, madeira cakes, homemade pizza… My mum Mia, 72, is from a little town north of Milan and, when I was growing up, she’d make the most delicious, wholesome, Italian dishes. As a teen, I didn’t really appreciate it – back then, food was just fuel, and I had nothing to compare it to. But I’ve since inherited Mum’s love of pottering around in the kitchen, and now I do most of the cooking for my wife, Nicola, 42. I’m a whiz at one-pot meals and things like stir-fries, and I’ve dabbled with baking bread and my own made-from-scratch pizzas. But Mum’s desserts always seemed pretty complicated. strong. Instead, I decided to tackle her strawberry gateau for Nic’s birthday. One of my favourites when I was a boy, it’s a moist sponge topped with mounds of whipped cream and strawberries – a kid’s idea of heaven in a cake. Mum would always wheel it out for special occasions, so I’ve got fond memories of eating it at parties and birthdays, fingers sticky and my face smeared with cream. Thankfully, it wasn’t too tricky to make – the most important thing

is having a good-quality whisk to mix the ingredients for the sponge, but apart from that, it’s pretty foolproof. It turned out perfectly, with a light-textured sponge, juicy strawberries, and fluffy whipped covering, although I have to confess it wasn’t quite as nice as Mum’s. When Nic tried a slice, she was very impressed – as was Mum. I’ve nailed the strawberry gateau – and I won’t rest till I’ve nailed the tiramisu, too!

1 Preheat the oven to 180C/160C Fan/Gas 4. Grease a deep 23cm round cake tin with a little of the butter and line with baking paper. 2 Melt the remaining butter. Allow to cool slightly but not solidify. 3 Using an electric hand-mixer beat together the eggs and sugar over a pan of gently simmering water until the mixture is thick, pale and mousse-like. 4 Sift half the flour over the mixture and fold in gently with a metal spoon. Pour the butter around the edges of the bowl and fold in. Add the vanilla, then sift and fold in the remaining flour. 5 Pour the mixture into the tin and bake for 35-40 mins until lightly browned on top. CHOCOLATE CHIP COOKIES – A RECIPE THAT SPANS FOUR GENERATIONS OF HOME BAKERS

Nan M is 87 but she still bakes every day!

Morgan Woods lives in King’s Lynn, Norfolk, and loves baking with daughter Imogen, eight As a child, I used to go to my nan’s every summer holiday when she looked after me and my sister. As little as three or four, I would be in the kitchen with her, baking cookies or cutting out pastry, so it’s great that Imogen has been baking – with a little help from me – since she was very little, too. For this challenge, I made my nan’s (her great-gran’s) chocolate chip cookies, which Imogen calls the yummiest in the world. Great-gran’s name is Mavis so Imogen calls her Nan M – she’s 87 but she still bakes every day. My mum lives down the road from her and often comes home to find something Nan M has baked for her as a treat by the front door! The recipe isn’t tricky at all, and when the cookies come out of the oven they have that fabulous smell you never forget. They are more spongy than chewy, which is the way I prefer them. ‘Sweet and chewy – the yummiest cookies ever in the world!’ SERVES 22 READY IN 30 MINS PRICE PER SERVING 16p ● 225g margarine

or softened butter ● 175g light brown sugar ● 4tbsp golden syrup ● 340g self-raising flour ● 275g white, milk and dark chocolate, chopped into chips ● 2-4tbsp semi-skimmed milk 1 Heat the oven to 180C/160C Fan/ Gas 4. 2 Beat together the butter and sugar until well mixed – this is easiest with an electric hand-mixer. 3 Add in the flour, syrup, chopped chocolate and milk. Mix well. 4 Line 2-3 baking sheets with baking

paper. Bake the cookies in batches if you don’t have many sheets. 5 Roll 1tbsp of the mixture into a ball, place it on the tray and squash it gently. As the cookies bake, the mixture will spread, so keep plenty of space between them. 6 Pop the cookies into the oven for 8-10 mins until golden. They will be very floppy when they come out after baking, so take care when you transfer them to a wire cooling rack. 7 Repeat until all the mixture is used. Each 50g biscuit contains ENERGY

How to mirrorglaze a cake ● 15g powdered gelatine ● 200g granulated sugar ● 200g glucose syrup ● 150g sweetened condensed

milk

● 200g good-quality white

● 3 different gel food colours ● 20g white chocolate stars ● Cake Décor Glitter spray

1 Before you start the mirror-glazing, cover your cake with a smooth layer of buttercream icing – see the full recipe online (details below). 2 To make the mirror-glaze icing, soak the gelatine in 80ml cold water for 5 mins. Heat the sugar, glucose syrup and 100ml water gently in a pan until the sugar dissolves. Bring to the boil until it reaches 103C. Remove from the heat. Add the gelatine and stir until smooth. Stir in the condensed milk. 3 Put the white chocolate into a bowl. Pour over the warm condensed milk mixture and leave for 5 mins. Stir until smooth. Test the mixture with a sugar thermometer – when it cools to 30C it is ready to use. Stir the glaze occasionally as it cools to prevent a skin forming. 4 Divide the cooled glaze between three bowls. Stir the gel food

colours into the bowls of glaze to make three different shades. 5 For a perfect finish, the glaze must flow over the cake and drip off the bottom. For this, stand the cake on a plate smaller than its base, balance this on a small bowl, then put on a clingfilm-lined baking sheet. 6 Pour over the cake, alternating between the colours so they form flowing patterns and cover all the buttercream. Any excess will drip off the base. Leave to set for 25 mins. 7 Lay the stars on baking paper and spray with glitter. When dry, turn over and repeat. Once the glaze is set, arrange the stars on the cake. Transfer to a cake stand to serve.

Tips to get it right… ● The temperature of the glaze has to be just right. Too hot and it won’t be thick enough; too cool and it won’t flow over the cake. ● Stir the ingredients for the glaze – don’t whisk as this will create air bubbles and spoil the smooth finish. ● You can make your sponge and the mirror glaze mixture up to 3 days ahead but you’ll need to apply the glaze on the day you’ll be serving the cake. Store the baked sponge in an airtight container and the glaze in the fridge. ● To use glaze from the fridge, microwave for 10 secs at a time until it’s just thin enough to pour.

Stir on a medium heat until the sugar dissolves. Reduce the heat until there are hardly any bubbles and add the plums. Poach for 5 mins, then turn off the heat and leave for 5 mins before removing the plums with a slotted spoon. 5 Boil the syrup to reduce it by two-thirds, then turn off the heat and let it cool. 6 Cool the baked meringue

5 Mix the crumble topping with the hazelnuts, oats, pine nuts and remaining Parmesan. Sprinkle over the cake mixture. 6 Bake in the middle of the oven for 50-60 mins until risen and golden. A skewer inserted into the centre should come out clean. 7 Allow the cake to cool in the tin for 10 mins, then unfasten the clasp and transfer the cake to a wire rack to cool completely. Create A full natural brow

Blot eyebrows with a tissue or blotting paper before applying make-up through them. This helps brow products last so much longer and not slide throughout the day.

To start, give brows a good brush with a clean mascara wand. Sweep up and out, creating lots of volume. I reply. See, no one tells you that the minute you send your child off to nursery, they repay your generosity by bringing home a small daily dose of a thousand different lurgies. Because children, for all that is adorable about them, are also completely gross, and if you put a flock of them (actual term) into a confined space together, they will swap germs like they’re football stickers. Fin-tastic friends Pets don’t have to be furry – a lower-maintenance fish could be an ideal choice, says vet Zara Boland

F

ish can make great additions to your family*. Like all pets, they need a good basic level of care but, depending on the species, they are relatively low-maintenance compared to cats and dogs. A great first pet, some fish live for about two years although others, such as goldfish, can live for 10 or more. Freshwater tropical species, like neon tetras, zebra danios and tiger plecos, are good for beginners. Tetras live in groups while plecos keep to themselves and need plenty of hideouts in their tank. Fish may not need regular walking or grooming but their environment needs to be kept clean and healthy. Their tank should be an appropriate size, with filters to help keep the water toxinfree. Most fish are fine if fed once a day but don’t overfeed as uneaten food and excess wastes can overload the filter. The surface of the water is where oxygen is absorbed, so go for a wide tank rather

than a tall one and ensure it’s aerated. It’s also vital to maintain the right temperature for your type of fish. Check the water temperature daily and use a special heater if necessary. Be water wise The RSPCA advises ‘fishless cycling’ when you first start your tank. This means running the filter for a few weeks before adding fish, to allow ‘friendly’ bacteria to colonise the filter. Seek advice from a reputable aquarium shop – they can explain the process and test the water to check if it’s ready for your new fish.

minnows. The weather loaches can be very entertaing to watch – they hide behind rocks or in gravel most of the time, then have a sudden urge to dart around the tank at top speed. I’ve read that, they do it when the weather changes

but I don’t know if that’s true. The fish all seem to get on well but one of my loaches can get a bit bossy at times and then the others keep out of its way. The way they interact is fascinating – I could watch them all day!’
