With only a month to go until Christmas, it’s time to mix things up in the kitchen. Stir-up Sunday (26 November) is when families traditionally gather to make the Christmas pudding, to give it plenty of time to mature before the day. In Victorian times, this would have been a plum pudding, but today we prefer a dense and rich version, leisurely soaked in rum, brandy or stout. It’s still fun to make and the mouthwatering aromas of dried fruit, citrus and spice fill the kitchen with a foretaste of Christmas. If you want a less-alcoholic and more savoury flavour, use stout instead of spirits. And adding a grating of apple and carrot helps balance out the flavours of all the dried fruit. Stir-up Sunday is also the ideal time to start other festive recipes that need time to mature, including mincemeat for the mince pies and Christmas cake.

This new trend could mean the end of tough dessert decisions… It all began a few years ago when a New York baker crossed a doughnut with a croissant to create a ‘cronut’. Since then, we’ve seen hybrids such as ‘piecaken’ (a pie in a cake) and ‘chocoflan’ (a chocolate flan cake). The latest trends blend classic desserts, so expect cheesecake waffles and ice cream-filled cupcakes. Two puds are always better than one!

Quick-win pickle

Pickled red onions are a great way to add a sweet tang to burgers and hot dogs on Bonfire Night. Warm 300ml apple cider vinegar, 3tbsp sugar, 1tbsp salt and 1tsp peppercorns in a small pan, whisking until the sugar dissolves. Cover and bring to the boil. Thinly slice a red onion and pack as much as you can into a 500ml sterilised jar. Pour the hot vinegar over, making sure all the onion is submerged. Cover and cool. Chill and leave for two hours. The pickle will keep for six months unopened, or two to three weeks in the fridge once opened. Each 5g serving contains: ENERGY

Add the stock cube and 100ml boiling water. Stir continuously until most of the water has been absorbed by the rice, then add 100ml more water and

repeat until the rice is lovely and tender. 3 Turn the heat off, then add the grated Parmesan and the spinach. Stir together and season once the spinach has wilted. Serve the risotto in a bowl sprinkled with crumbled goats’ cheese and freshly ground black pepper. Each 426g serving contains: ENERGY

Smoked mackerel & kale carbonara

‘Smoked mackerel is a great substitute for traditional pancetta because it has that amazing smoky flavour. Save the whites from the eggs for dessert meringues or try spinach and egg-white omelettes the next morning.’ SERVES 1 READY IN 15 MINS l 100g spaghetti l 25g kale,

1 Bring a large pan of water to the boil and cook the spaghetti for 8-9 mins until al dente. About 1 min before the pasta is cooked, add the kale to the pan. 2 Meanwhile, put the egg yolks, grated Parmesan

and plenty of freshly ground black pepper in a big bowl and mix together. Using tongs, transfer the cooked pasta and kale to the bowl, along with 2tbsp of the pasta cooking water. 3 Stir until the eggs cook with the heat of the pasta to form a rich, creamy sauce. Slow-cooked chilli

‘This hearty chilli takes a few hours to cook so it’s perfect to have when friends are coming over as it lets you get on with other things in the meantime. It’s impossible to mess up, too!’ SERVES 1 READY IN 3 HRS 30 MINS l 1 pork shoulder

1 Heat the olive oil in a casserole dish (or pan with a lid) over a medium to high heat. Season the pork steak, then brown

on all sides in the pan. Add the onion, cook for 5 mins and as it softens, add the tomatoes, 100ml water, the stock cube, cumin and chilli. 2 Turn the heat down, cover and simmer gently for about 3 hrs. Add the baked beans 2 mins before serving. Pull the meat apart using two forks, then serve the chilli topped with crème fraîche and the spring onions.

FOR THE CAKE ● 270g plain flour, sifted ● 250g granulated sugar ● 180g cocoa powder, sifted ● 2tsp baking powder ● 2tsp bicarbonate of soda ● 3 large eggs ● 180ml rapeseed oil, plus extra for greasing ● 300ml apple juice FOR THE GANACHE ● 100ml double cream ● 100g dark chocolate FOR THE FROSTING ● 340g butter, softened ● 150g soft cheese ● 300g icing sugar ● 150g peanut butter FOR THE TOPPING ● 100g whole macadamia nuts ● 200g caster sugar ● 215g jar Extra Special Salted Caramel Sauce ● 50g salted peanuts, roughly chopped ● Handful of peanut butter and caramel popcorn (optional) 1 Preheat the oven to 180C/160C Fan/Gas 4. Grease and base-line 3 straight-sided 20cm sandwich tins. 2 Mix together all the dry ingredients. In a jug, beat the wet ingredients together with a fork, then stir into the dry mixture and mix well. Cool in the tins on a wire rack. 3 To make the ganache, bring the cream to the boil in a small pan, then immediately remove from the heat. Break the chocolate into the pan and leave to melt before stirring until smooth. Leave to cool and thicken. 4 For the frosting, put the butter, soft cheese, icing sugar and peanut butter in a bowl and beat together until light and fluffy. 5 Beat the cooled chocolate ganache until light and fluffy. Put one sponge flat-side up on a serving plate and spread with half the ganache. Spread over 4tbsp of the peanut-butter frosting. Top with a second sponge, flat-side down, and repeat, then top with the final sponge. Spread half the remaining frosting thinly all over the top and sides of the cake. (You may get crumbs in the frosting but don’t worry.) Chill until firm – this may take 1-2 hrs. 6 Spread the remaining frosting all over the cake, smoothing with a palette knife. Chill until required. 7 The topping involves making caramel nuts, which isn’t hard – just

fiddly and a bit messy! Before you begin, put a sheet of newspaper on the floor to catch any drips. Next, for every macadamia, cut a 5cm length of sticky tape and keep to hand. Spike each nut with a cocktail stick. 8 Slowly heat the caster sugar in a saucepan until melted, swirling it around from time to time. Slowly bring to the boil and simmer until the caramel is a deep golden brown; set aside for about 10 min to cool and thicken slightly. 9 Dip a macadamia into the caramel and allow it to drip off the nut. If the mixture is too warm, the caramel will just run off the nut; if it’s the right temperature, it will cover the nut and drip off slowly, leaving a long thread of caramel that will harden as it cools. Tape the cocktail stick to the edge of the worktop, with the caramel ribbon hanging over the edge and above the paper. 10 Repeat with the remaining nuts and leave to set. If you struggle with this step, just tip your nuts into the caramel, give them a stir and turn out onto a sheet of baking paper, separating them before they cool. 11 When you are ready to serve, stand the jar of caramel sauce in a pan of hot water to warm it slightly. Give it a good stir then spread half over the top of the chilled cake; drizzle the rest down the sides. 12 Scatter the chopped nuts and popcorn, if using, around the top edge of the cake. he recollection of my mum, Lynne, serving up a side of cold salmon covered in fake cucumber scales still haunts me. No offence, Mum, but it looked really unappetising! So when I had kids I was determined for them to have a different memory of salmon by bringing it to life with delicious avocado, mango and lime flavours. I came up with the idea when Harry was really into salmon but Belle still needed convincing. I found that by adding the sweetness of mango, she would devour the fish. Now, this recipe has become a firm family favourite with my husband, Dan, 41, and our kids, Harry, eight, Belle, six, and Chester, three. We call it Friday-night salmon tacos because it’s for those evenings after a long week when you’re just too tired to cook a big meal. By putting all the ingredients on the table and getting everyone to help themselves, there’s minimal meal prep and it’s a chance for the kids to muck in and get a bit messy. It’s a great way to get them eating fish, too. I always find that whenever they get involved in making dinner, they tend to sit around the table for longer which makes for a really enjoyable family mealtime. We all love tucking into this dish! Friday-night salmon tacos

1 Heat the rapeseed oil to a medium heat in a large pan. Sweat the shallots, covered, for 8 mins until soft. Add the garlic and thyme. Cook for 2 mins. 2 Stir in the rice and gradually add the stock a little at a time, stirring continuously until the liquid has been absorbed – this should take about 15 mins. The rice is cooked when it is soft on the outside but has a slight bite in the centre. 3 Stir in the peas, Parmesan and prosciutto. Season with black pepper. Spread over a baking tray in a thin

layer and leave to cool completely. 4 Wet your hands and roll a spoonful of the risotto around a ball of blue cheese, if using, or shape a spoonful of risotto into a ball; make 15 more. 5 Heat the vegetable oil in a deep, heavy-bottomed pan over a medium heat until a breadcrumb sizzles when dropped in. Put the flour, eggs and breadcrumbs in 3 separate bowls. Dip the arancini in the flour, followed by the eggs, then the breadcrumbs. 6 Working in batches, put a few arancini on a slotted spoon, carefully lower into the hot oil and fry for 3-5 mins until golden. Drain on a baking tray lined with kitchen paper. 7 Toss the rocket in the olive oil and balsamic glaze and divide between 8 plates. Top each with 2 arancini balls and some Parmesan, if you like. Drain, then leave to steam-dry for 5 mins. 3 Meanwhile, heat 20ml of the oil in a pan over a medium heat, add the garlic and chopped basil, and fry for 2 mins until softened. Remove 1tbsp of the oil and set aside. 4 Return the potatoes to the pan and mash until smooth. Stir through the Parmesan and season with freshly ground black pepper. Turn over and fry for 2 mins more. Turn off the heat and pour the marsala or sherry into the pan. Return to the heat and simmer for 1 min, then add the stock and simmer for 5 mins until the chicken is cooked through. 8 Transfer the chicken to a plate,

cover with foil and leave to rest for 5 mins. To make a sauce, simmer the stock mixture until syrupy. 9 Bring a pan of water to the boil. Add the beans and cook for 1 min until thawed and bright green. Drain and toss through the garlic oil that was set aside. 10 Garnish each chicken breast with 2 basil leaves. Chocolate mousse tart with pistachio pastry

This delectable tart combines rich mousse with flavour and crunch. You can make it the day before and store in the fridge SERVES 16 READY IN 1 HR 15 MINS ● 100g unsalted pistachio

nuts, shelled ● 250g plain flour, plus extra to dust ● 245g chilled unsalted butter, cubed ● 50g icing sugar ● 1 egg, beaten ● 140g plain chocolate ● 3 eggs, yolks and whites separated ● 50g caster sugar

1 In a food processor, blend 80g of the pistachios to fine crumbs. Or chop finely then pass through a sieve. 2 Put the flour and 180g butter in a bowl and rub together with your fingertips until it resembles fine breadcrumbs. Stir through the

pistachios and icing sugar until evenly distributed. Add the egg a little at a time and, using a dinner knife, mix until it forms a ball. Turn out onto a work surface and gently knead for 30 secs until it forms a dough. Cover with clingfilm and chill for 15 mins. 3 Meanwhile, preheat the oven to 180C/160C Fan/Gas 4. 4 Roll the pastry out between 2 sheets of baking paper lightly dusted with flour, to the thickness of a £1 coin. Use to line a 23cm loosebottomed tart case. Line the pastry with baking paper, fill with baking beans or uncooked rice and bake for 15 mins. Remove the beans and cook for 5-8 mins until lightly golden. 5 Remove the baked pastry case from the oven, loosen the pastry to

prevent it sticking and leave to cool completely in the case. Fill any cracks with leftover pastry. 6 Melt the chocolate and the other 65g butter in a heatproof bowl set over a pan of barely simmering water (don’t let the water touch the bowl). 7 In a separate bowl, whisk the yolks and 30g of the caster sugar until pale and fluffy. Stir through the chocolate. 8 Place the egg whites in a clean bowl and whisk until thick and stiff. Whisk in the remaining caster sugar. 9 Using a large metal spoon, gently fold the egg whites into the chocolate in 3 additions. Pour into the pastry case. Chop the other 20g of the pistachios and sprinkle on the tart. Bake on the middle shelf for 20-30 mins until risen and firm. Leave to cool completely before serving. Set aside to chill. 2 Mix the gelatine with 60ml cold water, stir to combine and set aside. 3 Put the sugar, glucose and 60ml water in a pan; bring to the boil. Off the heat, whisk in the gelatine mixture. Stir in the condensed milk.

4 Add the chopped chocolate and leave to melt fully. Stir well, then divide between 4 bowls. Add a different drop of food gel to each bowl and mix well; add more gel if needed to build up the colour. 5 Carefully pour each coloured glaze into a bowl, to give a swirled pattern. 6 Push the cake pops fully into the glaze and twist as you pull the sticks out. 1 Preheat the oven to 190C/170C Fan/ Gas 5. Grease and line a 22cm x 31cm Swiss roll tin with baking paper. 2 In a large mixing bowl, whisk together the eggs, sugar and vanilla extract until doubled in size, pale and fluffy. Sift in the flour and baking powder, then fold in using a large metal spoon. 3 Divide the mixture between 3 bowls. Mix food gel into each, a drop at a time, so you have batters in blue, purple and black. 1 Preheat the oven to 200C/ 180C Fan/Gas 6. 2 Remove the leaves and stalks from 750g cauliflower, cut into chunks and blend until it resembles fine breadcrumbs. Put in a bowl and microwave on high for 5-6 mins until softened. Tip onto a clean tea towel, leave to cool, then fold up the towel and squeeze out any excess liquid. Return to the bowl, add 100g ground almonds and 2 eggs, beaten, stir to combine and season with black pepper. 3 Line a baking tray and grease with 1tsp rapeseed oil. Tip the cauliflower onto the tray. Shape the mixture into a skull, pushing half towards the bottom of the tray in a oval shape. Gather the rest into a wider semicircle at the top of the oval, making sure the two are touching. Bake for 15-18 mins until golden. 4 Spread 4tbsp Asda Tomato Passata with Basil over the base. 1 Preheat the oven to 180C/160C Fan/Gas 4. Grease and base-line 2 straight-sided 20cm sandwich tins. 2 For the cake, mix together all the dry ingredients. In a jug, beat the wet ingredients with a fork, then stir into the dry mixture and mix well. Pour into the tins. Bake for 25 mins until well-risen and a skewer inserted into the centre comes out clean. Cool in the tins on a wire rack. Turn up the oven to 200C/180C Fan/Gas 6. 3 For the frosting, beat the butter, soft cheese, icing sugar and peanut butter or Nutella until light and fluffy. Cover and chill until needed. 4 To make the gingerbread, melt the butter, sugar and syrup in a pan. Mix the flour, bicarbonate of soda and ginger in a large bowl and stir in the butter mixture to make a stiff dough. If it won’t quite come together, add a tiny splash of water. 5 Cut out the templates (you’ll find these online, see above). Roll out the dough between 2 sheets of baking paper until 5mm thick. Cut out 1 house front, 2 house supports, 1 door, 4 shutters and 7 gravestones, re-rolling as needed. Arrange wellspaced on lined baking trays and put in the oven. After 8-10 mins, remove the smaller pieces. Sprinkle the crushed sweets into the windows and bake the house front for a further 8-10 mins until golden. Leave to cool. 6 Sandwich the sponges together

with a third of the frosting and stand on a large cake board or tray. Spread the remaining frosting over the top and sides, and cover all over with Coco Pops. 7 Line a baking sheet with baking paper. Melt the chocolate in a bowl set over a pan of boiling water. Spoon into a piping bag fitted with a small plain nozzle and pipe 2 scary tree shapes onto the paper using half the chocolate. Freeze until set, then ‘over-pipe’ with a second chocolate layer. Freeze for 5-10 mins until set. 8 Decorate the gingerbread pieces with the icing, mixed with colourings as you like; fix the icing in place with a little syrup. ‘Dirty up’ the house by brushing it with a little dry cocoa powder. Fix the shutters in place with a little melted chocolate. 9 Stand the house on the top of the cake, pushing it into the icing and supporting it with the 2 triangular gingerbread supports. Stand the trees in place, fix on the door at an angle and add a broken fence made from Matchmakers. Fix gravestones in place with melted chocolate and add Malteser rocks. Use remaining icing and colourings to make a cat, eye balls and pumpkins. Scatter the sugar ‘dirt’ on the board to finish.

4 Line a 17cm square, loose-bottomed tin with half the pastry, line with baking paper and fill with dry rice or baking beans. Bake for 15 mins, remove beans and paper then bake for 5-8 mins until golden. 5 Cut the remaining pastry into 5mm-wide strips to fit the width of the tart tin. 6 Reduce the oven to 150C/130C Fan/Gas 2. Pour the filling into the cooked tart case and top

with the strips, overlapping slightly in a zig-zag pattern. 7 Bake for 30-40 mins until the pastry is golden and the filling has only a gentle wobble. Transfer to a casserole dish and bake, covered, for 3 hrs until the meat is tender. Allow to cool completely. 4 Meanwhile, cut 2 circles of pastry, 20cm and 15cm. Cut 2 eyes, the size of a 2p coin, from the 15cm circle, roll into 2 thin pieces and

use the egg to stick them to the head. Cut the rest of pastry into 8 strips and crimp with a fork. 5 Increase the oven to 190C/170C Fan/Gas 5. Put the filling in a round pie dish, with a mound in the middle. Arrange 4 pastry strips on top, for spider legs, lay the larger circle on top and add the head. Brush with the egg and sprinkle over the poppy seeds. Bake for 30 mins until golden and bubbling. Each 170g serving contains: ENERGY

Midnight mirror toffee apples When good apples go bad…

MAKES 10 READY IN 30 MINS, PLUS COOLING PRICE PER SERVING 58p

10 Granny Smith apples 850g caster sugar 140g liquid glucose 2 tubes Dr. Oetker Food Colour Gel in Black ● You will also need 10 lolly sticks and a sugar thermometer ● ● ● ●

1 Spear each apple with a lolly stick and set aside on a lined baking sheet. 2 Put the sugar, liquid glucose and 350ml water into a deep-sided pan

and heat gently, stirring, until the sugar has dissolved. Put a sugar thermometer in the pan, then turn up the heat to maximum. Without stirring, leave the sugar syrup to bubble until it reaches 137C – this will take up to 10 mins. 3 Once the caramel is at 137C, add the black food colour and gently swirl the pan to mix. If it looks like it’s crystallising, add a dash of boiling water, then stir briefly. Keep heating until the caramel reaches

150C, then turn off the heat. 4 Working very carefully, tip the pan so you can swirl each apple in the caramel by holding onto the stick. Carefully twirl the apple over the pan to remove the excess, then put on the lined baking sheet. Continue until you have dipped all the apples – repeat to give each apple a second coat. 5 Leave to cool, and serve that day. NOTE The caramel gets extremely hot. Black cupcakes with gruesome glass shards Dark-trend cakes with a decoration to die for! ● ● ● ● ● ● ● ● ● ● ●

½tsp rapeseed oil 120g self-raising flour 170g caster sugar 60g unsalted butter, at room temperature 120ml skimmed milk 1 large egg, beaten 1tsp vanilla extract 1tbsp Dr. Oetker Food Colour Gel in Black 115g icing sugar 50g full-fat soft cheese 1tbsp smooth raspberry jam

1 Preheat the oven to 180C/160C Fan/ Gas 4 and fill a muffin tin with 12 cupcake cases. Lightly grease a small baking tray with the oil. 2 Mix together the flour and 120g caster sugar, then, using an electric whisk, beat in 40g butter until the mixture has a sandy consistency. Pour in the milk, egg, vanilla and food colouring and whisk until smooth. 3 Spoon into the cake cases and bake for 15-20 mins until a skewer inserted

into the middle comes out clean. Leave to cool in the tin for 10 mins, then cool fully on a wire rack. 4 For the sugar glass, put the rest of the caster sugar in a pan and dissolve over a low heat, swirling occasionally – do not stir. It will turn gold. Pour onto the tray and leave in a cool, dry place to set. 5 Meanwhile, mix the icing sugar and remaining butter with a large spoon until evenly mixed. Add the soft cheese and beat for 2-3 mins until fluffy. Spread this icing over the 12 cupcakes. 6 Snap the sugar glass into shards and carefully push one into the top of each cupcake. Use the back of a spoon to smooth out the raspberry jam and spoon into a piping bag. Pipe drips of ‘blood’ around the sugar-glass shards. Each 61g serving contains: ENERGY

To make shapes in the pumpkin, push a cookie cutter – we used star and moon shapes – through the pumpkin, push out the cut-out flesh then carefully remove the cutter. To protect from sharp edges, cover your hand with a tea towel when pushing out the cutter from the inside.

● If you want, make small circular holes using the drill tool from the kit, or an electric drill. Take care as bits of pumpkin will fly everywhere! ● Scoop out any remaining flesh and pop the lid on.

PREPARING YOUR PUMPKIN

1 Wash your pumpkin and select the best side to carve. Place a large mug on top and draw around it with a marker pen.

2 Using the carving saw tool from the Pumpkin Carving Kit, cut around the circle and remove the lid.

3 Use the scoop to remove the pips, then scrape out as much flesh as possible until the pumpkin wall is an even thickness.

beastly bite (ADVANCED) depth of about 5mm. ● Do the same for the mouth, carefully cutting around each individual tooth. Remove the skin and flesh between the teeth so you can see into the mouth. Now shape each tooth. If a tooth falls out, pin it back in place with a cocktail stick. ● Using the drill tool from the kit, make the holes for the eyebrows and pupils. If you prefer, you can use

an electric drill and a small wood drill bit or even a hammer and a large nail – just take not to hit too hard. ● Carve a hole to one side of the mouth to fit the gourd or vegetable you’re using for the little animal. Carve a mouth in the gourd and add stick-on eyes. Insert the animal inside the mouth. ● Tidy up the inside of the pumpkin and any tatty edges, then add the lid.

Paint the entire face in white face paint, leaving the hollows around the eyes bare. Once dry, dampen a sponge and sweep a sheer layer of blue from the temples all the way down to the hollows of the cheekbones.

Using a paintbrush, draw black circles around the eyes covering the eyebrow and fill in with a thick, opaque colour. Outline the black circles with red ‘frills’ and fill them in.

3 DEvilish details For the nose, trace an upside-down black heart on the nose tip and fill in. Then, using the natural lip curves, draw vertical lines over the mouth, starting slightly above the bow and ending on the lower lip to create scary teeth. Add swirls as you please, from the outer corners of the mouth following the natural curves of the face. 4 blooms of doom

Using blue and pink or red face paints, draw flowers on the forehead and chin, using the designs on the dress as a guide. Do a small dot for the centre point of the flower, then use a brush or sponge to add petals. For an extra touch, stick jewels** to your flowers and between your eyes, if you like. Apply white base all over the face with a sponge and leave to dry. Using a pink paint, gently press your sponge across the forehead, cheekbones and along the jaw.

2 BLACK MAGIC

Using black face paint, draw thick eyebrows over your own, adding a sharp point to the start of the brow and the arch to give an angry appearance. Line the eyes along lower and upper lash lines, adding a sharp wing to the outer corners to elongate the eye. Blend a dark eyeshadow colour into the inner corners of the eyes and down the sides of the nose. Finally, colour lips entirely in black, using a lipstick or face paint.

3 a tangled web Draw a spiderweb at the corners of the eyes and along the cheekbones. Using the black face paint and a small brush, begin with five horizontal lines following the natural curve of the face, and then add the vertical lines. If you’re feeling really brave, paint a freehand scary spider to the middle of the forehead, too.

What do I need to know before holding a fireworks display in my garden?

We spoke to West Yorkshire Fire & Rescue Service and Asda colleague and trained volunteer firefighter Amanda Patience for tips on how to throw a safe Bonfire Night display… ★ Ensure you buy fireworks from a reputable retailer like Asda and that they have appropriate CE* markings. ★ Follow the instructions on your fireworks very carefully and cordon off the area where they will be lit. ★ Keep children under supervision at all times. ‘This amazing project has transformed my little boy’s life’ We’ve teamed up with BBC Children in Need this year to help thousands of disadvantaged kids access play opportunities across the UK

iggling with delight, Harry, six, is clearly relishing the playground fun he is enjoying with his 10-year-old twin sisters Poppy and Rosie. But it’s not a scenario that his mum Nicky takes for granted – for Harry has cerebral palsy and his condition has meant he has limited opportunities to play outside his home. Thanks to the funding from BBC Children in Need, there are now play projects around the country for kids who would otherwise miss out on this vital part of their development. Play helps build confidence and improves physical and emotional wellbeing.

So, this year, we’ve joined forces with BBC Children in Need to help 30,000 disadvantaged youngsters develop vital life skills through play. Money raised by customer and colleague fundraisers, as well as certain products we’re selling in store, will go towards funding projects that celebrate the ‘Power of Play’. One project to benefit is Thomley in Buckinghamshire, which Harry and his family visit at least twice a month. ‘Harry was able to play on a swing for the first time just last week’ them to socialise, learn new skills and become more independent. The facilities include a soft-play centre, art and music rooms and a sensory room. The centre has been a lifeline for 45-year-old Nicky and Harry, who has dyskinetic limbs, which means he has limited muscle tone and can’t even sit unaided. ‘We used to go to a children’s centre when Harry was little, but nothing was accessible to him,’ explains Nicky, who lives with her husband Noel, 48, in Oxfordshire. Harry was three when the family discovered Thomley. ‘I can go with the girls, knowing they’re safe playing outside while I’m with Harry. Plus, they can all play together, which hasn’t been possible anywhere else. ‘Only last week, he went on a swing for the first time. Harry is in a wheelchair, so he needs a hoist to take part in some activities and, at Thomley, they have all the right equipment on hand.’ Nicky believes Thomley has made a big difference to Harry’s life. ‘He absolutely loves it there,’ she says. ‘It means everything to us as a family and it’s important he gets the same opportunities to learn and play as his sisters. We’d be lost without it.’

‘Mason was a happy, smiley baby and was progressing well. But at 15 months, he started to regress and was babbling less. I work in a school for children with ASD, autism spectrum disorder, so I knew he was autistic. Even so, his diagnosis came as a great shock. Mason is non-verbal, so he’s easily frustrated, which can make his behaviour very challenging. He also sees the world differently, so becomes nervous around people. Mason used to go to a mainstream nursery because I wanted him to socialise, but it

made him anxious and withdrawn. My GP told me about the Peter Pan Centre, which is tailored to kids with complex disabilities and provides support through play. Mason started going in September 2016 and the change has been incredible. He’s more independent

and can brush his teeth and wash his hands – huge milestones. Plus, he’s made friends. The staff have helped him transition to his special needs school. Without them, I don’t know where we’d be now. They’ve made the stepping stone to Mason’s future much brighter.’

Hedgehog haven With their numbers in serious decline, what can we do to help hedgehogs? Vet Dr Zara Boland has some simple ideas

potting the spines of a little hedgehog as it snuffles through leaves in your garden is always exciting. But sadly, our prickly friends are in severe decline, with the UK population in urban areas down about a third in the UK since the millennium*. Experts are unsure of the exact cause – but the good news is that it’s easy to give them a helping hand. Sleep dreams Hedgehogs tend to hibernate from November to March, so in the autumn they feast on insects before the big sleep. Their excellent noses can detect food under a few centimetres of soil, but as the weather gets colder, this can be harder to find. Leaving them out some meaty pet food and a bowl of fresh water makes a great snack, but avoid bread, milk

and salty foods like bacon as they are bad for their digestive systems. RIGHT MOVE Compost heaps and log piles are dream homes for hedgehogs, so always check under your bonfire before you light it up. You can provide great nesting materials by leaving a corner of your garden ‘wild’ with piles of leaves and logs. Or, get the kids involved building a hedgehog hut, using wood or sturdy cardboard. Cut two side air vents and an entrance, put torn-up newspaper and dry grass or hay inside and set it next to a shrub in your garden. Cover with plastic sheeting, put twigs, dry grass and leaves on top of that – and you’ve got a 5-star hedgehog hotel!

Get your hedgehogs hibernation-ready with some nourishing cat food. Hedgehogs can suffer a variety of illnesses or injuries caused by garden or road accidents, and it’s great to be supporting them for future generations. When I came home, I stood in my kitchen with a knife and chopping board in front of me for 10 minutes, not knowing what to do! What’s your best food discovery? Miso marinated black cod from Nobu at Atlantis, The Palm in Dubai. It’s absolutely divine. Another gamechanger was discovering Parmesan and truffle fries at Albert Schloss, a German beer house in Manchester. Dream dinner party guests? My wife because she’s great company and David Beckham because he’s my favourite person in the world. He’s a very beautiful man, so he’d be there for eye candy!
