Happy New Year! I don’t know about you, but after all those weeks of festive indulgence, I can struggle to get back to normality. Sarah Thom While I’m not really a fan of the Asda Editor saying ‘new year, new you’, this month I will be making some small changes that will hopefully benefit my pocket as well as my waistline! To celebrate meat-free Mondays, we’ve rustled up some veggie dishes that are just as tasty as their meaty counterparts – our Butternut Squash Wellington is a must-try (p65) – while our midweek meals made with just five ingredients are quick, easy and start at just 52p per serving, so they’ll make your money go that bit further (p27). Coming from a Scottish family, I’m loving our Burns Night recipes (p53) and will be having a ‘wee dram’ on the 25th while tucking into our Irn-Bru Pulled Pork – cheers (or as we say in Scotland ‘slàinte’)! I’m so excited about the year ahead and I hope you are, too. Bring it on, 2018!

1 Preheat the oven to 180C/

Add the ham, peas and broccoli, cooking until everything is heated through. 3 In a large jug, beat the eggs with the cottage cheese. Season with pepper. 4 Tip the ham mixture into the ovenproof dish, then pour over the egg mixture. good grind of black pepper and simmer for 15 mins. 4 Toast the almonds for 1-2 mins under a hot grill. 5 Spoon the mussels into bowls. Sprinkle with parsley and almonds. Serve with griddled or toasted slices of the ciabatta roll (optional). Energy

then cover tightly with a lid and take off the heat. After 30 mins, fluff with a fork and stir in the rice vinegar. 2 Put the sesame seeds on a plate. Brush both sides of the tuna with oil and press one side of each steak into the sesame seeds. 3 Heat a griddle pan or frying pan on a high setting. Sear the tuna steaks for 1 min on each side, or 2 mins on each side if you prefer it well done. Once seared, remove the tuna steaks,

place on a chopping board and slice into thin strips. 4 Stir the e ginger into the soy sauce e in a small bowl. WHY USE FROZEN? Our frozen fish and seafood is the same quality as our chilled range – and it’s frozen within hours of being harvested, for maximum freshness. Much of it can be cooked straight from frozen so you can whip up an impressive lunch or supper in minutes, or it can be thawed in the fridge and cooked like fresh fish. 1 Heat the oil on high in a wok or frying pan. Add the onion and curry paste and fry for 2 mins, stirring. Add the aubergine, courgette and mangetout. Cook for 2 mins. 2 Add the frozen salmon fillets, cover with the stock and simmer with the lid on for 20-25 mins or until the salmon is cooked through. 3 Meanwhile, cook the rice according to the instructions on the pack. Set aside. 4 Gently break the cooked salmon into chunks with a spoon. Add the coconut milk and heat through, stirring well – do not boil. 5 Divide the rice between 4 bowls. Top with the curry. Sprinkle with the coriander and chillies, if using. Energy

‘Exploring the Med has changed the way we cook’ The Hairy Bikers fill us in on their tour of the Mediterranean and serve up some of their favourite feel-good recipes

The Hairy Bikers – aka Si King and Dave Myers – have just completed a food tour of Italy, France and Spain for their new cookbook and accompanying TV series The Hairy Bikers’ Mediterranean Adventure. We met up with the lovable duo to get the lowdown on what they love about Mediterranean cooking…

region, the food has been cooked the same way for many years and I think that’s part of the identity of the cuisine. We met a lady called Michaela who was 110 years old – she put her long and fruitful life down to eating homemade minestrone. Awesome!

Your previous food tours include the UK, America and Asia. What attracted you to the Med this time? DAVE We’d always thought the Med had some of the best food in the world, so this was a dream. We discovered some brilliant recipes, like tumbet, a veggie dish from Majorca. Cooking that recipe is like bringing the sunshine of the Mediterranean to your plate.

What do you love about the flavours of the Med? SI They’re so fresh and clean. DAVE I love the variety, too. You might not think of the food as spicy, but Italian ’nduja sausage with peperoncino chillies is so tasty. And Corsican meat dishes, cooked with olive oil and wine, are very mellow.

Did you taste any weird and wonderful new dishes? SI On Carloforte, an island off Sardinia, they call tuna ‘the pig of the sea’! It’s such a precious resource, they really embrace nose-to-tail eating. So we had tuna testicles with olive oil and lemon juice. It was surprisingly very lovely and the taste was quite mild! Has Mediterranean food changed over the years? SI I don’t think it really changes – from region to

What’s the secret to living a healthy Med lifestyle? DAVE It’s all about balance. Being from the north, I tend to live on pork products, like bacon and sausages. In contrast, Mediterranean food is so varied. SI In the Med, people still bring food they grow at home into a marketplace for others to buy. So you get amazing seasonal produce. There’s very little processed food – and that’s the secret, really. Do you have any top tips for losing weight and eating better this January? Bring to the boil, then turn n the heat down slightly until somewhere between a simmer and a boil, and cook for 15 mins. 3 Blanch the broad beans in boiling g water for 3 mins,

then drain. Rinse in cold water and d peel off the skins. 4 Add the tomatoes to the soup,, cook for 5 mins, then add the green beans and broad beans, the cabbage and courgettes. Simmer, covered, for 5 mins or until th he green veg is tender, th hen add the peas and simm mer for 1-2 mins. 5 For the e dressing, finely chop the herbs and mix with the oil. FOR THE MARINADE ● 1tbsp olive oil ● Juice and zest 1 lemon ● 1tsp dried sage ● 1tsp dried oregano ● 3 cloves garlic, crushed ● ½tsp chilli flakes FOR THE TRAYBAKE ● 8 chicken thighs or 4 legs, skin on, bone in ● 2 red onions, quartered ● 1 bulb garlic, separated into cloves, unpeeled ● 400g butternut squash, peeled and cut into chunks ● 8 dried apricots ● ½tsp dried sage ● 2tbsp olive oil ● 50g green olives TO SERVE ● Fresh flat-leaf parsley and thyme, roughly chopped ● Lemon wedges 1 Mix together the marinade ingredients. 2 Put the chicken pieces in a bowl and season with pepper. Pour the marinade over the chicken – rub it into and under the skin. Leave to marinate in the fridge for at least 1 hr, preferably overnight. 3 Remove the chicken from the fridge 30 mins before cooking. Preheat the oven to 200C/180C Fan/Gas 6.

FOR THE CAKE ● 2 small oranges ● Butter, for greasing ● 6 eggs ● 225g caster sugar ● 250g ground alm monds ● 1tsp baking pow wder ● 75g flaked almo onds, lightly toasted TO SERVE ● 2tbsp icing suga ar ● 2tbsp grated ora ange zest ● 250ml crème fra aîche or whipped crea am

1 Put the e whole oranges in a sauccepan and cover with watter. Bring them to the boil, cover the pan with a lid and simmer for up to 2 hrs, or until the peel is tender enough you can pierce it with the handle of a wooden spoon. Drain the oranges and cool them under cold running water. Break them open, remove any pips then blitz in a food processor or blender

until you get a smo ooth orange purée. Set aside. 2 Preheat the oven to 180C/160C Fan/Gass 4. Grease a 23cm roun nd cake tin, preferably one with a loose bottom, and line the base with baking paper. 3 Put the eggs in a large bowl and whisk unttil very frothy – the texture e should be almost mousse-like. Gradually add the sug gar, whisking g constantly as you do so. Mix the ground almonds and baking powder together, then fold them into o a mixture. Finally add the orange purée. 4 Pour th he mixture into the prepared d cake tin. Bake in the oven for 50 mins-1 hr,

until the cake has shrunk away from the sides of the tin slightly and is firm but springy to the touch. Leave the cake to cool in the tin for 15 minutes, then turn it out onto a cooling rack. It might dip in the middle slightly as it cools, but don’t worry. 5 Mix the flaked almonds with the icing sugar and orange zest, making sure the zest is distributed evenly. Korean food hass been on the rise for the past few years and, in 2018, it’s almost certain to take the spottlight. ‘Dishes like kimchi and galbi are now universally popular and chefs are using Korean fla avours in classic dishes like fried chicken and barrbecue burritos,’ says Mark. For a Korean-inspire ed lunch, why not try a bibimbap bowl? Pronouncced ‘bee-beem-bahp’, this vibrant dish is a colourful combo of steamed rice, shredded sautéed vegetables, marinated beef, gochujang g (a spicy red chilli paste) and soy sauce, often n crowned with a golden fried egg. Don’t fancy y beef? Simply swap this out for a salmon fille et or some Korean spiced tofu.

Traditional dishes like Kalua pork ramen and tropical fruit desserts are now popping up on menus worldwide. This Hawaiian Pineapple Pudding Cake is full of sweet, ripe flavours – serve with coconut or mango ice cream for a truly exotic touch.

● 1 large pineapple ● 250g unsalted butter, softened ● 250g golden caster sugar ● 4 eggs, beaten ● 250g self-raising flour ● 200g can pineapple chunks in fruit juice ● 200g Asda Creamy Original Soft Cheese ● 100ml whipping cream ● 2tbsp icing sugar ● 1tsp vanilla extract ● 50g desiccated coconut

1 Preheat the oven to 140C/120C Fan/Gas 1. 2 To make the pineapple flowers, slice the top and bottom off the pineapple and cut off the rind. Using a small melon baller or a knife, cut out any dark eyes from the pineapple. 3 Thinly slice the pineapple using a mandoline or sharp knife. Lay out on baking trays lined with baking paper. 4 Bake for 30 mins until the tops have dried. Flip and cook for 30 mins. Take out of oven, allow to cool for 10 mins. 5 Put the pineapple slices into a muffin tin to help curve the edges and allow to cool fully before using. 6 To make the cake, increase the oven temperature to 180C/160C Fan/Gas 4. Grease and line a 20cm square tin with baking paper. 7 In a large bowl, beat together the butter, caster sugar, eggs and flour until pale, fluffy and well combined. 8 Drain the pineapple chunks, reserving the juice, and stir through the batter. Spoon into the tin, smooth th he top and bake in for 25-30 mins un ntil risen, golden and a knife come es out cleanly when inserted in the e cen ntre. 9 Remove from the oven n and, using a wooden spoon handle e, make ran ndom holes in the cake. Pourr 100ml off the reserved pineap pple juice evenly over the cake. 1 Preheat the oven to 150C/130C Fan/Gas 2. 2 Mix the paprika, 1tsp mustard powder and half the oil and rub over the meat (not the rind). Put the joint in a roasting tin or casserole dish, skin-side up. 3 Pour half the Irn-Bru into the tin (not over the pork). Cover with a lid or foil, sealing it tightly over the edges, leaving enough room around the joint for the air to circulate. Roast for 3-4 hrs until tender. 4 Carefully remove the foil or lid. Turn the oven up to

220C/200C Fan/Gas 7 and return the pork to the oven, uncovered. Cook for 20-25 mins to crisp the rind. 5 While the pork cooks, heat the remaining oil in a pan, add the onion and fry for 5 mins until soft. Add the ketchup, 5tbsp of the vinegar, Worcestershire sauce, remaining Irn-Bru and mustard powder. Simmer, uncovered, for 30 mins, stirring often, until the BBQ sauce is glossy. 6 Shred the cabbage, onion, sweet potato and turnip in a food processor (or thinly slice the cabbage and onion, and coarsely grate the sweet potato and turnip). In a large bowl, whisk the remaining 2tbsp vinegar, whisky, if using, sugar and mustards. Add the shredded veg and parsley and mix to coat thoroughly. Set aside to marinate for 1 hr. 7 Remove the pork from the oven and put on a plate. Remove the crisp skin, chop into bite-sized chunks and set aside. 8 Allow the meat to cool for 10 mins then scrape off any excess fat. Use 2 forks to shred the pork. 9 Pour the cooking liquor into a pan and heat to reduce by half. Stir in the BBQ sauce and mix with the pork. Serve with the crackling and coleslaw. 1 Grease a 20cm x 20cm shallow square tin. 2 Gently melt the butter in a large, heavy-based pan. Add the sugar and milk and simmer on low, stirring, until the sugar dissolves. Add the condensed milk, bring to a boil and simmer for 5-10 mins until thickened, stirring continuously. 3 Test the temperature of the mixture with a sugar thermometer. Once it reaches 115C, remove from the heat. Beat with an electric hand-whisk, on a slow speed, for 5 mins until thickened but still

liquid enough to pour. Transfer to the tin. After 15 mins, score the top to make it easier to break. Cool, then snap into pieces. 4 Blend the yogurt and ¼ of the tablet in a processor until smooth. Pour into a lidded, plastic container and freeze for 2 hrs, then blend again to break up the ice crystals. Freeze for 1 hr. Blend twice more, returning the mixture to the freezer each time. 5 Remove from the freezer 20 mins before serving and sprinkle with a little more tablet. 1 Preheat the oven to 200C/180C Fan/Gas 6. 2 Peel 2 sweet potatoes, thinly slice into strips. On 2 baking trays, toss with 1tbsp cornflour, 1tsp Cajun seasoning and black pepper, drizzle over 2tbsp rapeseed oil and spread out. Bake for 25-30 mins, turning once, until crisp. 3 Peel and grate 2 carrots, 3 raw beetroots and 1 red onion. Over a bowl, using your hands or an old clean tea towel, squeeze out the juice (it will stain). Put the veg in a large bowl. 4 Blitz 100g porridge oats, a 400g can kidney beans, drained and rinsed, 2tbsp coriander, chopped, and juice ½ lemon in a processor. Stir into the veg mixture with 1 egg. 5 With damp hands, form the mixture into 6 patties. Put on a baking tray and cook in the oven for 20-25 mins until lightly browned. 6 Halve 6 wholemeal bread rolls and toast. Put the burgers in the rolls with lettuce, red onion and gherkin. Gently cook in the remaining oil, in a large frying pan over a medium heat, for 3-5 mins. 6 Divide the courgetti between 4 bowls. Top with the Bolognese sauce and a sprinkling of the Cheddar. Energy

Toilet training This should begin as soon as you get your puppy home (at about eight weeks old). Take them outside after every meal and nap, or if they show signs of wanting to ‘go’, like sniffing, and place them on a scented puppy pad. If the pup has an accident indoors, don’t give them any attention while you clear it up. Sit and stay Work on training your pup little and often. Teaching them to sit, stay and come when you call or whistle will be invaluable when you’re out on walks. You’re a style icon for so many women – have you always loved make-up? The first make-up I ever owned was an eyeshadow Mum got me for Christmas when I was 12. I felt so grown-up when I wore it, but Mum was strict – she never let me wear make-up to school, only for special occasions. And if I put too much on, she’d say so! Do you have any hang-ups about your appearance? I’m so self-critical, but I’m no different to most other women. Some days I don’t have great skin – I get outbreaks of spots and feel self-conscious because it’s hard to hide. I’ve recently started laser treatment to

get to the root of it and I always keep my skincare routine simple. I also use products with salicylic acid as I find that seems to help. You did Strictly Come Dancing in 2014. How did the show change your life? It was the first thing I’d done on my own in years. As a new mum – my first son turned one when I was on the show – Stricctly was also about red discovering myself. Rea alising I could still perfo orm and that I was still me gave me a big g confidence boost.

Can you share any insider tips from your shoots with make-up professionals? The make-up artist for The Saturdays always did our eyes first. It makes sense, really, because once you do your eyeshadow or even mascara, it can drop onto your cheeks. How long do you spend doing your make-up? If I’m getting ready to go out, I’ll give myself an hour. I don’t like rushiing – it’s fun to enjoy the processs. But on a normal day? Pro obably about five minutes!

Do you ever take a risk with showstopping make-up? I tend to take more risks with my hair, which is weird – make-up is temporary whereas altering your hair can be a big change. When I first had long extensions, it wasn’t right. I was pregnant and it probably wasn’t the best time to try something new. I think I was trying to claw back my youth before becoming a mum!

‘On a normal day I do my make-up in about five minutes!’ Do you have any tips for feeling more confident? Rememb ber that while some peoplle might seem confident, they’’re probably not. We’re all the same e. The best beauty advice you’ve ever been given? Always take your make-up off before bed. I do it, even if I’ve been out or at an event – it’s so important. And keep to a routine. I cleanse, exfoliate and moisturise, and I use SPF every day.

THE Trainer Sarah Maxwell Want to get fit this new year but don’t want to hit the gym? As personal trainer to the stars Sarah Maxwell explains, exercising doesn’t have to be pricey. ‘I’m a working mum, so I know how hard it is to do it all,’ she says. Running is free and will get you fit in no time, but if you don’t fancy heading out, Sarah has chosen six simple moves you can do around the house. ‘They fit into your day and don’t require any expensive kit,’ she says. Strengthens abs. Do three, holding for 20 seconds each time, every other day 1 Lie face down on the floor, resting on your forearms, with elbows bent and palms flat on the floor. 2 Push off the floor, raising up onto your toes. Keep your back flat, in a straight line from head to heels. 3 Pull in your abdominal

muscles, tighten your glutes (bottom muscles) and keep them contracted. 4 Hold for a few seconds, then relax. (If this is hard, bend your legs and rest

your knees on the floor.) 5 Start with three planks, holding each for 20 seconds, with a 20-second rest in between. Build up to planks of one minute, if you can.

HALF PRESS-UP

Ideal for all-over arms and shoulders – and a great bust lifter. Do eight every other day to begin with 1 Get onto your hands and knees on the floor with your knees hip-width apart and hands slightly wider than shoulder-width apart, fingers forward and elbows straight. 2 Pull your abdominal muscles in tight, keep your back straight and maintain a straight line.

At the end of each set, hold the last position open for 10 seconds.

PLIé squat Great for thighs. Do three sets of 16, three times a week

1 Stand with your feet hip-width apart, abdominal muscles pulled in and your pelvis tucked under. 2 Take a small step out with your left foot, then with your right. Turn your feet outward. 3 Place your hands on your hips or on the back of a nearby chair for support. 4 Bending your legs, lower your body slowly then raise it back to the start position. Make sure that you have good posture throughout – your shoulders should be back and down, abdominal muscles pulled in, and hips and spine in alignment. 5 Aim for three sets of 16, resting between each set.

‘I’m like a futuristic jamie oliver!’ Do you follow a strict diet? We’re very well fed on set – we have proper meals from the local pub. I’ve not actually eaten bread since last September when I came back from America and my trousers didn’t fit. I panicked – I spend a lot of money on my trousers! I’m not really that health conscious, though. I still drink beer and eat sweets and crisps. What’s your breakfast of choice? At the weekend, I have a proper breakfast – bacon medallions, baked beans, mushrooms, two poached eggs, orange juice and a cup of tea. Will you go teetotal for January? No, I never go teetotal. I always have lots of Christmas parties, then January is for meeting up with all the people I didn’t see in December. What’s your best hangover cure? A bottle of Lucozade and a walk. Do you have any new foodie finds? I recently got into edamame [soy beans], which I keep in the freezer. I thought they’d make a great cinema snack and, when I was in LA, I saw

I don’t know what Holly [Willoughby] is like at cooking, but Fearne [Cotton] makes cakes without sugar, which seems impossible to me – but she seems to think it tastes nice. Dream dinner party guests? Winona Ryder. I’ve been in love with her ever since I saw Beetlejuice and I’m pleased she’s back on screen in Stranger Things. I’d also invite Jim Carrey. He makes me laugh. What would be your last meal? Christmas dinner is the best. Or a baked potato with cheese and coleslaw. Those are my meals.
