I’m a firm believer in the magic of Christmas. To quote a certain old man with a white beard: ‘Christmas isn’t just a day, it’s a frame of mind.’ It’s that season when one smell, Sarah Thom Asda Editor one taste, one song can transport you back to your childhood – to Christmas Eve spent wishing yourself to sleep in anticipation of Santa Claus coming and Christmas morning dashing into the living room to see if the reindeer have nibbled the carrot you left out. Now I’m older – and in my privileged position as Auntie Sarah – fewer things give me more joy than seeing my niece and nephew following the traditions that my parents set out for me and my sister when we were little. After all the preparation and ceremony, the real joy of Christmas is going the extra mile and spending time with those you love most. Whether you devote months to searching for a gift they’ll adore, or hours to prepping three types of potato for lunch, it’s the little things that count. It really is the most wonderful time of the year. Merry Christmas everyone!

Once upon a time, chestnuts were easy to find, sold as a hot snack on street corners. But now, for many, they only turn up in the stuffing at Christmas. They deserve a higher billing, though. They’re low in fat and a source of fibre, and their sweet, earthy flavour works well in a variety of recipes, from sprouts and bacon to cakes. They are available in ready-to-eat packs, but it’s easy to cook fresh chestnuts from scratch. No need to roast on an open fire: just score the skins and roast at 200C/ 180 Fan/Gas 6 for 25-30 mins until the skins are split and the flesh is tender. Peel and use in stuffing with pork, apple and herbs; in a soup with cauliflower, cream and sherry; or make our Mushroom & Chestnut Pithivier, a brilliant veggie main for Christmas Day. ‘It’s a tradition in southern Italy to eat seafood rather than meat on Christmas Eve. My family would celebrate the holiday together with some fantastic, fresh fish – and, coming from the Neapolitan coast, we were lucky enough to have great, locally caught produce right on our doorstep. Prawn dishes, like this one, are my favourite because they’re ideal for sharing and they remind me of home. I love the chilli kick, too!’

1 Put the olive oil, garlic and red chillies in a large frying pan and cook over a medium heat until the garlic starts to sizzle. Add the king prawns and fry for 3 mins on each side. 2 Add the lemon zest and juice with 2tbsp of the chopped parsley and toss

together. Fry for 1 min, stirring continuously. 3 Transfer to a serving platter, drizzle over the juices from the pan, sprinkle with the remaining flat-leaf parsley and serve immediately with the crusty bread and lemon wedges. Energy

1 Heat a heavy casserole until it is hot, then add the oil. Quickly brown the chicken on both sides. 2 Push the chicken to the side of the casserole and add the black beans, garlic, ginger and the orange zest strips. Stir for 30 secs. 3 Add no more than 150ml of the orange juice, the

chilli bean sauce and soy sauce. Bring to a boil, then reduce to a simmer. 4 Cover the casserole tightly and cook for 20 mins or until the chicken is cooked through. Top with the remaining zest and serve immediately with the new potatoes with fresh coriander. Energy

‘I’m a Buddhist, so I don’t strictly celebrate Christmas, but that doesn’t stop me getting into the spirit of things! During December, I like to enjoy all kinds of luxury food and I’ll buy the best meat and fish I can find. I love to cook for my friends and family, so I spend Christmas Eve and Christmas Day doing just that. This chicken casserole is perfect as it is really warming and great to share. ‘My wife Michelle and I have a great Christmas Eve tradition. Our children (Jean Frankie, 10, Jacques, six, and two-year-old Valentino) go to bed at 6pm, sleep for three hours, then we wake them up at 9pm and pretend it’s midnight and that Santa has been. Everybody gets so excited! Before bed, though, we always finish off our meal with this tasty apple tarte tatin. It’s quick to make, which means you can spend more time with the family.’

1 Preheat the oven to 200C/180C Fan/Gas 6. Line 6 tart tins with baking paper. 2 Put the caster sugar in a small pan and add just enough water so the sugar starts to dissolve. Heat gently until it dissolves completely. Do not stir.

3 Bring to a simmer and boil for 5 mins, without stirring, or until you have a golden-brown caramel. Pour into the tart tins. 4 Put 2 cardamom pods, 1 star anise, ½ vanilla pod and ½ cinnamon stick in the bottom of each tin. 5 Peel and slice the apples and arrange in each tin. 6 Unroll the puff pastry and cut into discs to cover the apple. Tuck

the edges of the pastry down the sides, making sure they touch the caramel. Bake for 20-30 mins until the pastry is crisp and golden and the apples are soft. 7 Leave the tartes to cool slightly, then invert onto plates to serve. Energy

Zesty glacé fruit meets rich dark chocolate MAKES 25 READY IN 4 HRS, PLUS COOLING PRICE PER SERVING 14p

1 Cut 6 clementines into slices about 5mm thick, discarding the top and bottom pieces. 2 Put 500g caster sugar in a large pan with 250ml water, bring to the boil and simmer for 2 mins until the sugar dissolves. Add the clementine slices, reduce the heat and simmer for 1 hr 30 mins until the peel is translucent. 3 Preheat the oven to 100C/80C Fan/Gas ¼. Line 2 baking trays with baking paper. Remove the slices from the syrup one by one, allowing any excess liquid to drain off,

and arrange in a single layer on one of the trays. Bake for 2 hrs. Remove and cool on a wire rack. 4 Melt 80g 70% cocoa dark chocolate in a heatproof bowl over a pan of barely simmering water (don’t let the water touch the bowl). Dip the slices in to half-cover and arrange on the other tray. Sprinkle with 20g candied ginger, finely chopped. When cool, store in an airtight container for up to a week. Energy 435kJ 104kcal

Clemencello

This delicious orange-flavoured twist on limoncello, the classic Italian lemon liqueur, makes a wonderful grown-up gift MAKES 1L READY IN 30 MINS, PLUS COOLING, PLUS 1 WEEK INFUSING PRICE PER 25ml SERVING 45p

1 Carefully remove the zest from 16 clementines with a fine grater, making sure you don’t include any of the white pith. 2 Put the zest in a 1L sterilised jar and pour over 1L Asda Triple Distilled Vodka. Set the jar aside in a cool, dark place for a week to allow the flavours of the clementine zest to infuse. Give the jar a shake from time to time, to ensure the flavour is evenly mixed throughout. 3 After a week, put 250g caster sugar in a pan with

250ml water. Bring to the boil and simmer for a couple of minutes until the sugar has dissolved completely. Remove the pan from the heat and allow the syrup to cool. 4 Pour the clementine vodka through a very fine sieve or muslin cloth, then mix with the cooled sugar syrup. Pour the mixture into sterilised bottles and seal. 5 The clemencello is best served chilled, over ice, or topped up with sparkling mineral water.

1 Squeeze 3 lemons, reserving the pips. Put the pips on a square of new J-cloth or muslin with 5 juniper berries, lightly crushed, and use string to tie into a bag. 2 Put in a large pan with the lemon juice, 400g whole clementines and 800ml water. Bring to the boil, cover and simmer for 1 hr 30 mins. 3 Discard the bag. Remove the clementines and put on a plate. Peel and cut the rind into strips. Roughly chop the clementine flesh, saving the juice. Return everything to the pan and

add 500g jam sugar (with pectin). Boil, uncovered, for 15-25 mins. Put a small drop onto a chilled plate and push gently with your finger. If it wrinkles, the marmalade is ready. 4 Remove from the heat and add 100ml Extra Special Triple Distilled Premium Gin. Leave for 20 mins, then stir and put into hot, sterilised jars. 1 Preheat the oven to 190C/170C Fan/Gas 5. Calculate the cooking time for the turkey (see above). 2 Juice 1 of the lemons, reserving the juiced halves. Mix the juice with 50g of the butter and set aside. Fry the shallots in the remaining butter for 4 mins. 3 Put the turkey breast-side up in a roasting tin. Fill the cavity with the shallots, 2 of the lemon halves, 2 of the orange halves and the juiced halves. Secure the skin with a cocktail stick.

4 Lift the skin at the neck, rub some of the lemon butter on the meat and the rest on the skin and legs. 5 Arrange the bacon on top and cover loosely with foil. 6 Roast for the calculated cooking time. About 30 mins before the end, brush the syrup over the turkey. Add the rest of the lemon and orange halves to the tin, with the onion and garlic, if using. 7 Increase the temperature to 200C/180C Fan/Gas 6. Return the turkey to the oven and roast, uncovered, for the remaining cooking time. To test, pierce the thickest part of the thigh with a skewer – the juices should run clear. If they look pink, roast for

another 15 mins and check again. Repeat until done. 8 Tilt the turkey to let any juices run into the tin and reserve them for the gravy. Transfer the bird to a serving platter, cover with foil and a tea towel, and rest for 30 mins. Garnish the platter, then serve. Energy

l 100g unsalted butter, plus extra for greasing l 100g bar Extra Special Peruvian Dark Chocolate, broken into pieces l 2 large eggs l 125g soft brown sugar l 50g self-raising flour l 2tbsp chopped fresh mint (optional) l 900ml tub Asda Really Creamy Mint Choc Chip Ice Cream, softened but not melted l 3 large egg whites l 180g caster sugar 1 Preheat the oven to 160C/140C Fan/Gas 3. Grease and line the base of a 19cm round, shallow, loose-bottomed cake tin. 2 Melt the butter and dark chocolate in a bowl over a pan of simmering water. Take the bowl off the pan; allow to cool for 10 mins. 3 In another bowl, beat together the eggs and sugar until foamy. Stir in the chocolate mixture. 1 Preheat the oven to 200C/180C Fan/Gas 6. 2 To make the crostinis, cut 400g Baker’s Selection Sourdough Boule into 1cm-thick slices. Use a 4.5cm cutter to cut out 16 rounds. Put on a baking tray and brush with 1tbsp rapeseed oil. Bake for 5-10 mins. 3 Separate the leaves and stalks of 10g mint. Add the stalks to a pan of boiling water with 200g frozen broad beans. Here, he talks about taking a more relaxed approach… All around the world, people are gearing up for Christmas. Across the UK, mulled wine is bubbling on the stove. In Scandinavian countries, children are gathering root vegetables to hide in their shoes for Sleipnir, the eight-legged horse of Norse god Odin (true story). Yet in the corner of south London where I live, chestnuts aren’t so much roasting on an open fire as languishing in the corner of a kitchen cupboard somewhere. Yes, this year, my wife Hannah, 37, and I are activating a Christmas setting that I like to call ‘a vague sense of normality’. We’re taking it easy; not getting too carried away. All too often these days, Christmas is an almighty fiasco, a tidal wave of domestic pressure and family drama. So, this year,

we’re not sending out bespoke cards of us all sweating in Reindeer outfits. There will be no conveyor belt of mince pies chugging towards our mouths. Nor will there be a blast of neon lights announcing how much we like Father Christmas to people who happen to be peering down from space. We’re ‘chill’. We’re keeping it on the down-low. We’re

celebrating at home with just our two kids – Gabriel, four, and Vivienne, one. With two small children in the mix, choosing which set of in-laws to visit on Christmas day is like Brexit all over again – both sides lobbying for our loyalty with dubious promises and exaggerations about what’s on offer. We then find ourselves attempting to squeeze three or four entire families into one house. Cue dogs barking for some unknown reason, sugar-rushing children, sherry-glazed adults and at least one relative chopping veg in a passive aggressive fashion, teetering on the edge of a meltdown.

Then, you have the gifts; one pile for your own brood and one for other people’s. What with all the siblings, brothers-in-law, sisters-in-law, uncles-in-law and gazillion cousins, inevitably you’ll forget someone along the way and become that first pinprick to burst the bubble of festive cheer. So, for the first time ever, my wife and I are steering our ship into uncharted waters. We’re staying at home – just us, the kids, a small turkey (which might turn out to be a chicken) and a precious opportunity to create our own family traditions from scratch. We’ll open presents without having to call a general assembly, eat lunch at the correct time, the music of Slade will be completely outlawed and the wearing of paper hats will be strictly optional (though thoroughly encouraged). My friend Mike told me over a bite of carrot and a shot of whiskey: ‘Christmas with just the four of us was one of the loveliest things we’ve ever done. I wouldn’t make a habit of it, for fear of offending people, but surely the odd year here and there can’t hurt, can it?’ Let’s hope not. So Merry Christmas, everyone. And godspeed, Sleipnir!

TV star Billie Faiers, 28, who has teamed up with George to launch her first babywear range, loves to make Christmas special for her kids, just like her parents did for her…

T

here’s no such thing as a quiet Christmas in our house. When I was younger, it was a huge family celebration, with at least 15 of us piling into one house armed with gifts. Our parents always went to town – our stepdad Dave would dress up in a full Santa suit to leave presents at the ends of our beds. Then, on Christmas morning we’d have tea and biscuits as we opened our stockings, followed by our Faiers family tradition of breakfast bagels with bacon. After lunch, we’d open the rest of the presents, then crack open Monopoly. My sister Sam has always been a really bad loser and wanted to be the banker, so she could steal the cash! Now, having children of my own [Nelly, four, and

Arthur, one] has made Christmas even more magical. Nelly is an early riser, so she’ll have us all up at the crack of dawn for sure, but it’s great to see her so excited. I love sharing our family traditions and making our own new ones. Last year, we did Elf on the Shelf, and both kids absolutely loved it. Though I did find myself searching Instagram for inspiration on what the naughty little elf might do next. It’s pretty hard to come up with a whole month’s worth of ideas! Other than that, I do exactly the same as Mum and Dad did with us, from putting oranges and sweets in the kids’ stockings to having tea and biscuits in bed. This year, I might

Christine Bromley, 57, lives in Leicester and is a FareShare volunteer. She says: ‘Four days a week, I volunteer at a FareShare warehouse, packing delivery vans with trays of food from the industrial size chillers. When I was made redundant in 2015, I was looking for a new challenge and wanted to do something worthwhile. Knowing that I’m helping to feed vulnerable people is so fulfilling. I’m so proud to be a part of FareShare, and knowing that we are going to be able to feed more people thanks to Asda’s investment is fantastic. Kimberley Keys, 29, is a Community Champion at Asda, Hamilton. She says: ‘For the past three years, our store in South Lanarkshire has helped to supply a local Trussell Trust foodbank, with customers filling a trolley with their donations. We’ve donated more than 9000kg of food, but the foodbank is seeing an increase in referrals and needs even more help. Thanks to Asda Fight Hunger Create Change, our customers can continue donating when they come in to do their shopping and Asda stores can also make sure edible surplus food is donated too, instead of being wasted. Any of us could find ourselves in a situation where we’re struggling to afford to eat properly, and myself and my colleagues feel really gratified that we can play a part in helping those in need. Since the programme launched, the generosity of our customers has been staggering. There’s barely time to empty the trolley before it’s being filled up again. It’s wonderful to be a part of such a positive movement for change.’

‘WE ALWAYS ATE TURKEY IN THE BLAZING SUMMER HEAT’

You grew up in Johannesburg, South Africa. What foods take you back? We grew the most wonderful plums in our orchard – the likes of which I’ve never tasted since – and we’d eat them straight off the tree. Delicious! What foods remind you of Christmas? My mother Peggy would make a passion fruit cream pudding with a dollop of sherry, served in little glasses. Our Christmases were always hilarious. Everyone ate turkey and mince pies and drank port in the blazing summer heat! My father would be Santa, sweltering in a red dressing gown and big white beard. Did your mum’s cooking inspire you? No, she was a terrible cook. She once tried to make marmalade out of all the lemons, burned it and for weeks everything smelled of burnt caramel! So how did you get into cooking? When I moved to Paris to study French, I was amazed that everyone talked about food. The woman that I au paired for fed her children exactly what the adults ate. The idea of not

giving children separate food but fresh, homemade produce was fantastic. It taught me that cooking didn’t have to be complicated. Ever had any kitchen disasters? I was once catering for 500 people and thawed a huge tub of what I thought was damson purée to stir through some ice cream, but it turned out to be beetroot. I had no option but to put a ton

of sugar in it. And do you know what? No one even noticed! What do you eat on a typical day? I’m a real leftovers queen, so I make lots of casseroles with any unused sausages, bacon, onions and beef stock. I just can’t bear to throw food away. My husband John says that he lives on leftovers. Are you much of a snacker? I’m from a generation where there were no snacks. I did fall in love with the South African version of the Mars Bar at university, though. You get to sample lots of delicious creations on The Great British Bake Off – do you have to stay healthy? I’ve been in the food business for such a long time that I do tend to get fat. I’m generally a stone overweight, so on days when we are judging, I try not to eat anything else that day aside from a salad. Learned any tricks on the show? You need very little baking powder or bicarbonate of soda. When bakes aren’t rising, most people put more in. No! The bake just over-rises, then collapses. Less is more!
