Welcome May is one of those months where you just need to sit back and embrace the unpredictable. Let’s face facts: planning anything Sarah Thom around sunshine in the UK is risky, Asda Editor but when it comes to barbecues there’s added complexity. Never one to be beaten by the weather, I’ve often been caught in a downpour, plate over head to shield me from the rain, with a soggy burger bun in hand. I used to be a martyr to barbecues, slaving away for hours to dish up a spread to end all spreads. But I’ve now realised that the true joy of these occasions is spending as little time in the kitchen as possible. If you fancy risking the elements on a bank holiday weekend but don’t want to be stuck indoors, check out our summer food special (p27) for great ideas. On my street there’s a culture of ‘keeping up with the Joneses’, and the faintest whiff of freshly cut grass can set off a lawnmower epidemic. I’m partial to a spot of gardening myself but a little clueless on the flowers front, so enjoyed checking out the handy garden plant guide (p95). I now know my busy lizzies from my begonias – and have the skills to make the neighbours green with envy. Roll on summer!

l 400g dried chickpeas l 1tsp baking powder l 25g flat-leaf parsley, torn l 25g fresh coriander, torn l 2tbsp ground coriander l ½ onion, roughly chopped l 4 cloves garlic, crushed l 50ml olive oil l 50ml vegetable oil, for frying FOR THE DRESSING l 8tbsp tahini l 3tbsp Greek yogurt l Juice 3 lemons TO SERVE l 4 Little Gem lettuces, halved l 4 tomatoes, sliced l 100g radishes, sliced l ½ cucumber, sliced 1 Cover the chickpeas in cold water and stir in half of the baking powder. Cover and leave in the fridge overnight to soak. 2 Drain the chickpeas and put into a food processor with the rest of the baking powder. Add the parsley, fresh and ground coriander, onion, garlic and olive oil, and blitz to a paste. 3 Using wet hands, shape the mixture into 24 balls, flattening each one slightly. 4 Heat the vegetable oil in a deep pan until hot. Cook the falafel in batches for 6-8 mins, turning occasionally, until browned and cooked through. 5 Mix all of the ingredients for the dressing together,

along with 3-4tbsp cold water, until runny. 6 Arrange the falafels on a serving plate with the lettuce, tomatoes, radishes and cucumber. Drizzle over the dressing before serving. Energy

l 75ml sunflower oil l 1 medium-large whole chicken (skin on), chopped into 6-8 pieces, or 1.1kg chicken thighs and drumsticks l 2 onions, chopped l 2 tomatoes, chopped l 2tbsp tomato purée l 1 whole head garlic, cloves crushed l 1 lime, halved l 4 Kaffir lime leaves, halved l 3cm piece ginger, peeled and chopped l 5 cardamom pods l 1 cinnamon stick l 1tsp ground cumin l 1tsp ground coriander l 1tsp ground cinnamon l 1tsp ground ginger l 1tsp black pepper l 350g basmati rice, rinsed l 25g fresh coriander, roughly chopped, plus extra to serve l 25g flat-leaf parsley, roughly chopped l 50g pine nuts, toasted 1 Heat the oil in a large pan over a high heat.

In batches, add the chicken, skin-side down, and cook until browned. Remove the chicken using a slotted spoon and set aside. 2 Add the onions to the pan and cook for 5 mins until softened. Add the tomatoes, tomato purée, garlic, lime halves, lime leaves, fresh ginger and all of the dried spices. Cook for 5 mins, stirring. 3 Return the chicken to the pan, top up with 700ml boiling water, cover and cook for 30-40 mins, until the chicken is cooked through. 4 Use a slotted spoon to remove the chicken. Set aside and keep warm. 5 Add the rice to the pan, topping up with water if needed so it covers the rice by about 2cm. Stir through the chopped coriander and parsley and cook over a low heat for 20 mins. 6 When all of the liquid has been absorbed and the rice is cooked, tip out onto a serving platter, top with

the chicken and scatter over the pine nuts and extra coriander. Energy

Grilled red pepper adds a sweet, smoky depth to this mildly spiced version of the classic dip SERVES 4 READY IN 30 MINS PRICE PER SERVING 64p

1 Preheat the grill on a high setting. Place 2 red peppers, deseeded and quartered, skin-side up on a baking tray. Roast for 20 mins until the skins are blackened, adding 1 red chilli, deseeded and halved, for the last 10 mins. Put the peppers and chilli in a resealable sandwich bag, and allow to cool fully. Peel off the skins and discard, then roughly chop the flesh. 2 In a food processor, blend the peppers and chilli with a 400g tin chickpeas, drained and

rinsed, 1tbsp tahini, 1tsp ground coriander, ½tsp ground cumin, ½tsp smoked paprika, 1tbsp extra virgin olive oil, zest and juice 1 lemon and 2tbsp water until smooth. 3 Drizzle with 1tsp olive oil then sprinkle with 50g feta, crumbled, 1tbsp flat-leaf parsley, chopped, a pinch of smoked paprika and freshly ground black pepper. Middle Eastern-style shakshuka

A trio of peppers brings a wonderful sweetness to the tangy sauce of this delicious egg dish SERVES 4 READY IN 30 MINS PRICE PER SERVING 87p

1 Heat 1tsp rapeseed oil in a large nonstick frying pan on a medium setting. Add a 3-pack Grower’s Selection Sweet Peppers, deseeded and sliced, 1 red onion, sliced, 2 cloves garlic, sliced, and 1tsp smoked paprika. Stir to mix together then cook for 5 mins until the peppers are softened. 2 Add a 400g tin chopped tomatoes, stir to combine and simmer for 10 mins. 3 Make 4 wells in the shakshuka mixture and crack in 4 eggs. Lime & paprika vegan butter In a bowl, beat Flora Dairy Free until light and fluffy. Mix in some smoked paprika, a pinch of chipotle chilli flakes, some lime zest, crushed garlic, a handful of finely chopped coriander and some chopped chives.

Avocado ‘butter’ with bacon

In a dry pan, fry smoked bacon rashers over a medium heat until crisp. Put on a plate lined with kitchen roll to cool completely, then crumble into small pieces. Blitz avocado flesh with lemon juice and zest and some chopped basil until smooth. Spoon into a bowl and season with black pepper. To serve, top the corn with the avocado and sprinkle over the bacon and more basil leaves. To make this topping vegan, sprinkle with chopped toasted flaked almonds in place of the bacon.

Beat unsalted butter until light and fluffy. Stir in grated Parmesan, some sriracha sauce, finely chopped red chilli, crushed garlic and finely chopped chives until combined.

Tomatoes

Tomatoes ripened on the vine have a fresh, summery scent and deep red colour. They’re great in salads, of course, but also cook beautifully on skewers on the barbecue or gently roasted in the oven to intensify the sweet flavour. Drizzle with balsamic or use to top bruschetta for an impressive side.

1 MONTH BEFORE

Start exfoliating With four weeks to go, this is the perfect time to start exfoliating as it will give the skin time to settle down before you reach the beach. ‘The trick is to start gently and don’t overdo the scrubbing,’ says Holly Wagman, expert at the Skin Academy. ‘Lots of people throw off their winter woollies and scrub away, only to find that skin becomes inflamed – which isn’t a great look!’ Try a mitt, loofah or gentle body scrub in the shower, using circular motions, two or three times a week. 3 WEEKS BEFORE By thinking about hair removal a few weeks before your holiday your skin will have lost any redness from the trauma and the follicles will have time to recover before any pre-holiday self-tan you might be planning. ‘A common mistake is leaving too little time between waxing and tanning, and ending up with a “speckled” effect or even a skin rash,’ explains Shanice Ferracho, head trainer at the Ministry of Waxing. ‘Three weeks before is great because the beauty of waxing is that you’re removing hair from the root, so you’ll have soft, smooth skin for longer.’

LET IT GROW Hair has to be a certain length to wax off any part of the body, so let it grow for at least three weeks beforehand. And, whether you’re planning to remove it at home or go to a salon, always use

2 WEEKS BEFORE Starting your self-tanning routine two weeks before you go leaves time to build up colour slowly, and to correct any streaky mistakes. Keeping up a gentle exfoliating routine and using plenty of moisturiser over the fortnight will help you avoid patchiness that can occur when self-tan starts to fade, so by the time you go away you should have a beautiful natural-looking colour. But a good faux tan is all in the prep. ‘Shave or wax at least 24 hours before your first application and exfoliate the night before,’ says Strictly Come Dancing and Norvell tanner, Carrie Marsh. ‘Apply moisturiser to “hot spots” such as knees, elbows and ankles to prevent

Start hair removal a moisturiser afterwards – ideally one with anti-inflammatory properties, to help soothe. If you go for a salon tan, avoid wearing perfume, moisturiser or deodorant as they react with the colour. And don’t go for anything drastic – only take your skin a shade or two darker. When painting, always start with your big toe and let polish dry between coats before adding a top coat for a hard-wearing finish and shine.’ Remember to use a rich foot cream every night after your pedi to maintain skin softness, and add a fresh slick of polish to toenails the day before you go. She’s mum to Elsie, five, Marnie, three, and Reggie, six months. ‘The best advice I can give to any new mum is to remember yourself. It’s so easy to get lost in motherhood, but carving out time for you is so important. It doesn’t matter whether it’s an hour in a coffee shop with a good book, or a solo trip to the supermarket – which as all mums know can feel like a spa break! Time for your own thoughts and time away

from hearing “Mummy” on repeat is essential for your wellbeing. Never feel guilty about needing it. I blog about my own struggles with mental health problems – I was diagnosed with anxiety and OCD after my daughters were born. It’s hard to take that first step and admit you’re not coping and need help. But once you get it out in the open, you’ll be amazed to find how many other mothers around you have felt the same. It’s normal to struggle sometimes – and it doesn’t make you any less of a brilliant mum.’

@mother_ofall_adventures Jade Arif, 33, is mum to Theo, 11, Mellie, four, Raulf, three, Eidee, two, and Forrest, six months – and shares her experiences at @mother_ofall_adventures. ‘I wish someone had told me before I became a mum that I shouldn’t compare myself to other mothers. I used to look at what baby kit they’d bought and how they cared for their little one, then try to copy it, never feeling I was as capable as them. Over time – and four more children later – I’ve learned to trust my instincts and do things my way. Every baby is different, every mum

is different and now I forge my own path. I’m much happier and more confident as a result. Social media has made it easier to be honest about motherhood. It’s rare a day goes by that I don’t have to deal with a toddler tantrum: Raulf had an epic one recently because I wouldn’t let him run around a train carriage. I don’t hesitate to share difficult moments along with the good ones, though, because that’s real life. I can sum up motherhood in two words – learning curve – because you never reach a point where you know it all.’

mummy nutrition Nichola Ludlam-Raine, 33, is mum to Henry, six months, and blogs on pregnancy and beyond at Mummy Nutrition and @mummynutrition. ‘A top tip from me? Don’t pick up a crying baby during a nappy change. I learnt that the hard way when Henry recently pooed all over me! So far, it’s the little life hacks that I’ve discovered that have helped me most, such as putting babygrows in sunlight to get rid of poo stains. The best thing I’ve invested in since having Henry is a good baby carrier. It’s great

because I can be hands-free, he’s able to be close to me and we can get out and about more easily. Before you have a child, you’re used to being able to get so much done – but you have to readjust your expectations of yourself once you’ve got a baby. Keep a daily one-line diary recording the little “wins”, whether it’s making your first solo trip out with your baby or making it through a tough night of feeding. Never forget you’re keeping a little human alive, which is a huge achievement in itself.’

Leanne Cornelius, 34, mum to Aria, four, and Carrie, eight months, is the creator of parenting and lifestyle blog A Slice Of My Life Wales and @mama_cornelius. ‘One mummy blogger I admire is Giovanna Fletcher, wife of McFly singer Tom Fletcher. She’s really down to earth and her honesty is refreshing – it’s how I try to be in my own blog. When I had my first baby, a midwife told me to prepare to be inundated with well-meaning advice but not to feel obliged to follow it all – and I’ve always remembered that. At the moment I’m breastfeeding and having to look after my elder daughter. If I have to put cartoons on Netflix to distract Aria so I can feed the baby, I’ll do it. A bit of TV is fine for kids, and it’s important to keep things in perspective.’

Not Another Mummy Blog wants to cook a pasta bake for your dinner or hold your baby so you can shower or take a power nap, say yes. With my first baby, I was so used to being independent that I found it hard to accept help. Now I welcome it with open arms. One of my most memorable parenting “fails” was when we went on a mini-break with Grace, who was four at the time. I’d planned the trip with military precision – or so I thought, until we arrived and realised her suitcase had been left at home. We managed to kit her out from a nearby supermarket, but I still cringe about it!’

Fresh herbs are always a great addition to any summer dish – and the plants make an attractive display outside. ‘Herbs are low-maintenance plants, so will be happy in even a small, sunny spot,’ says Dawn. ‘Varieties such as sage*, rosemary* and thyme* like to be in soil that’s well drained, so if you’re planting in containers put a good layer of gravel or broken crocks in the bottom of the pot before planting up. Try positioning pots of herbs either side of a doorway – they will release a wonderful burst of fragrance every time you brush past. And remember, after you’ve planted your herbs, use them! Harvesting regularly will encourage growth.’

Hanging Baskets A hanging basket packed with flowering plants can bring an instant splash of colour to almost any outdoor space. ‘You can buy baskets ready planted up, but it’s also easy to create your own,’ says Dawn. ‘First, put a coco fibre liner in a wire hanging basket, then line with a piece of plastic bag punctured with a few drainage holes. Fill with potting compost, stirring in some slow-release plant food. For a 12in basket, you’ll need about 10 small bedding plants such as petunias* and lobelia*. Include plants that trail down the outside of the basket to maximise the display – position these around the outer edge of the basket so they tumble down as they grow.’

Once your basket is hung in position, don’t forget to water it regularly – you might need to do this every day when the weather’s hot. It’s best to water early in the morning or in the evening when it’s cooler, to allow the water to sink into the soil and avoid the plants getting ‘scorched’ by the sun.

Climbers

Climbing plants are ideal for bringing extra blooms to an outdoor area. They’ll add plenty of height interest, too. ‘Climbers, such as large-bloomed clematis* and fragrant jasmine* and honeysuckle*, are particularly good for cheering up small gardens where a lot of the space available is on walls and fences,’ says Dawn. ‘A climber can also give the illusion that the area is bigger, as by covering boundaries, you can’t tell where your garden smine actually ends. When Ja planting a climber, dig the hole for the plant at least 30cm away from the wall or fence to avoid the driest soil. You can plant climbers in a container as well, but make sure the pot is large so the roots won’t dry out too quickly.’

Cutting off dead or fading blooms encourages plants to put their energy into making more flowers rather than producing seeds.

Add a mulch

Putting a mulch of bark or wood chips on beds, or adding a layer of gravel to the top of soil in pots, can cut down on watering and weeding.

Keep on top of weeds

Regular weeding means you’ll get rid of the plants before they seed and produce more weeds – which will save you work later on.

‘I COOKED my CHRISTMAS TURKEY ON THE BARBECUE’ What kind of cook are you? I mark myself down as capable and occasionally ambitious. Yesterday, I made a rabbit pot stew in the slow cooker, served with new potatoes. What dish or ingredient really reminds you of your childhood? Mum grew lots of vegetables and in the summer, we had to eat artichokes every night for three weeks. Then it would switch to strawberries and raspberries, or rhubarb. If artichokes are on a menu now, I won’t pick them. I think I’ve had my fill. First thing you learned to cook? Pancakes, because I really liked them and my mum was sick of making them for me. My mum was very much the cook in our household and she taught me some stuff, but the rest I’ve learned along the way. Your top culinary tip? I did the first series of Hell’s Kitchen in 2004 and picked up loads of cooking tips from that. The best tip was, if you’re using butter for frying, put a drop of olive oil in the pan and then add the butter – the oil helps to stop the butter from burning.

Is it true you’re always barbecuing? Yes! I’ve got one of those barbecues that can also be used like a big ceramic oven. You can cook everything in it so I use mine all year round. You can do a slow-cooked piece of lamb in it all day and it comes out with a charcoal-smoked flavour. In fact, I even cooked a turkey in it for Christmas lunch last year.

What food is always a winner when you’re cooking for your daughters Scarlett, 19, and Willow, 14? One’s a veggie and the other is a vegan so I do a slow-cooked lentil Bolognese, which I leave on all day and they really like that. When my kids are here, we’re essentially meat-free. I do a really good seafood risotto with crayfish that you put in really late, so they finish cooking in the pan while you let the risotto settle. You’re the Pub Landlord and host a pub quiz on TV. What’s your go-to choice from a pub-food menu? I quite like unpretentious pub food. I’m not a big gastro pub fan. At my local, I’ll just have a BLT rather than the fancier option. Does cooking bring you joy? It really does and my favourite thing of all is to cook a big Sunday lunch and have everyone round the table to eat nice food and drink wine.
