GOOD LIVING AUGUST 2019

Wel elc lccooom mee m

To say that going to school ‘wasn’t for me’ is a massive n understatement. Our neighbours never needed to set an alarm as my weekday-morning protests were like to oo. clockwork, and homework was a daily aggravation, too. Sarah Thom However, there are a few things I miss from those darkk Asda Editor days. First… pencil cases. If it were acceptable for me to walk into a meeting with a mermaid pencil case full of gel pens and novelty erasers, I would. Second… packed lunches. The thrill of opening my lunchbo ox lunchbox to see what treasures were hidden inside was what got me through h the testing combination of double maths and science. Times have n ow now changed, but the buzz of choosing a new term get-up is unparallelled, and our A-Z of Back to School (p57) lets you and the kids indulge in a spot of pre-term planning. In the true spirit of adolescence, I will br ring bring this address to a close by saying, KIDZ RULE OK!

We test each recipe at least three times in an ordinary kitchen, to make sure it works for you first time and every time

PRICE PER SERVING When we say ‘price per serving’ on our recipes, we mean the cost of the ingredients you will need to use to create the dish, divided by the number of people the recipe serves (for example ‘serves 4’). When you see the recipes at asdagoodliving.co.uk, you will be able to put the ingredients needed straight into your shopping basket – this will show the total cost of purchasing everything you need to make the recipe, not the ‘price per serving’; see above for this definition.

Stringless beans ‘Fresh beans are at their peak in the UK at this time of year – and these snap-fresh stringless beans are tender, sweet and bursting with flavour. Prepping is easy, too, as there’s no fiddly stringing required. Cut, diagonally, into smaller pieces, then boil or steam for a few minutes and toss in butter and chopped fresh mint. They’re also great in pasta dishes, salads, as a curried side dish or stir-fried Asian style with added ginger, spring onions and soy sauce. Simply delicious.’ Grower’s Selection Stringless Beans, £1 (200g; £5/kg)

FISH FILLETS

‘Ever wondered how chefs get that wonderfully crisp, golden skin on a fish fillet? It’s easy once you know how. First, pat the skin dry with kitchen paper and rub with oil. Heat a little more oil in a nonstick frying pan until piping hot, then put the fillet skin-side down in the pan and press down with a spatula. Once the fish has turned opaque at the edges, simply flip it to finish the cooking.’ Selected stores only, subject to availability. Delivery, collection and carrier bag charges may apply. Strain, discarding the cucumber and mint, then keep the gin chilled in the fridge until you want to serve it, for up to 1 month. 3 To serve, curl a freshly cut cucumber ribbon around the inside of a tall glass. Add ice and 25ml of the gin, top up with soda water and decorate with a lime slice, fresh mint sprig and 2 paper straws.

THE HAIRY BIKERS

Celeb chefs Si King (left) and Dave Myers, aka The Hairy Bikers, say: ‘There are so many dishes that remind us of sunny times but a good paella is our favourite. It brings back memories of our days in southern Spain, sampling spicy delights, and we love to recreate those delicious meals at home. Paella is a great crowd-pleaser – just plonk the pot on the table for everyone to help themselves. The best!’

The Hairy Bikers’ seafood paella

The classic one-pot dish with juicy prawns, fresh mussels, spicy sausage and chicken SERVES 8 READY IN 1 HR PRICE PER SERVING £2.43

● 12 frozen Extra

Special Jumbo King Prawns Raw and Whole, thawed and shelled (tails left on)

● 1tbsp olive oil ● 600g Butcher’s

Selection British Chicken Boneless Thigh Fillets, diced ● 150g Asda Spanish Chorizo Sausage, sliced ● 4 cloves garlic, crushed ● 300g large tomatoes, halved, deseeded, flesh grated then skin discarded ● 1tsp smoked sweet paprika ● Zest 1 lemon, plus extra lemon wedges to serve ● 1.5L hot chicken stock ● 3 bay leaves ● 2 sprigs thyme ● 200g green beans, cut into short lengths ● 500g paella rice ● Pinch saffron threads, soaked in a little warm water ● 200g fresh mussels 28 | ASDA.COM/GROCERIES

1 Heat the oil in a paella pan or large frying pan over a medium heat. Season the chicken with black pepper and fry for 5 mins, turning regularly, until golden. Add the chorizo and cook for 1 min. Add the garlic, then cook for 2-3 mins. 2 Push everything to one side of the pan. Add the tomatoes to the centre and fry for 3 mins more. Mix everything together and add the paprika and lemon zest. Pour in all but a large ladleful of the stock. Add the bay leaves, thyme and green beans and bring back to the boil. 3 Turn the heat down to a simmer and sprinkle in the rice, trying to get it into as even a layer as possible. Add the saffron and stir – this is the only time you should stir the paella after the rice has been added. Simmer for 5 mins.

4 Turn the heat down and simmer slowly for 12-15 mins until the rice is just tender. If the pan gets dry before the rice has cooked, add some of the reserved stock and cook for a few mins more. 5 Meanwhile, wash the mussels thoroughly, scraping off any barnacles and pulling out any ‘beards’. Discard any mussels with broken shells or any that do not close tightly when tapped sharply. 6 When the rice is cooked, arrange the mussels and prawns over the paella. Cover with a damp tea towel or lid and leave over a low heat until the mussels have opened and the prawns are cooked through. Serve topped with the lemon wedges and thyme sprigs. Energy

The Instagram chef (@melizcooks) says: ‘Growing up in a big Turkish Cypriot family meant summers were about mezes served with grilled meats and seafood. This beautiful vegetarian moussaka was – and still is – a firm favourite, as the layered sliced vegetables soak up all the delicious flavours of the lentil and mushroom ragu. It can be prepared in advance and is perfect for eating al fresco.’

HOW TO…

Roast the perfect chicken

Food Editor Gregor McMaster shows you how to cook a crispy, golden whole bird that will wow the family at Sunday lunch

‘Getting the perfect combination of crispy golden skin and tender meat involves a little prep beforehand and attention while the chicken is in the oven, but it’s simple when you know how…’

1 Take an Extra Special Corn-Fed Norfolk Free Range Whole Chicken (typically 1.75kg) from the fridge 1 hr before cooking. Discard packaging, put in a roasting tin, pat dry inside and out with kitchen roll and set aside.

2 Allow the chicken to reach room temperature, then preheat the oven to 220C/200C Fan/Gas 7. Brush the outside of the bird all over with 2tbsp rapeseed oil, then season with plenty of freshly ground black pepper.

3 Add 2 lemons, halved, 2 heads garlic, unpeeled and cut in half, and a few rosemary sprigs to the roasting tin. Separate a small bunch thyme into sprigs and sprinkle over the chicken. Put in the oven and roast for 20 mins.

4 Reduce the oven to 190C/170C Fan/ Gas 5. Roast for 50-60* mins, basting every 20 mins with juices from the tin, until cooked through. To ensure the meat is juicy and tender, rest loosely covered for 10 mins before carving.

Get the most from your roast

GO ALL IN WITH THE TIN ● Roast the chicken in a tin that’s close to it in size – it shouldn’t be too big. This will help to stop the juices evaporating as it cooks and help to retain flavour. FOR SUPER-SUCCULENT MEAT ● After resting and carving the bird, drizzle the meat with the juices from the tin so it’s extra-moist and tender. LEFTOVERS YOU’LL LOVE Try serving them with… ● Roast sweet potato chunks, cherry tomatoes and lemon, and a watercress salad (below) ● Griddled courgettes, rocket and a lemon dressing ● Roast butternut squash with a tahini drizzle, sprinkled with parsley and pomegranate ● Fresh herb tabbouleh and giant cous cous

*For different weight chickens, cooking times should be adjusted accordingly – roast for 20-25 mins per 500g, plus an extra 20 mins

Cherry Arctic roll SERVES 14 READY IN 1HR 30 MINS, PLUS FREEZING PRICE PER SERVING 36p ● 900ml pack Asda Really

Briony says: ‘There’s something so nostalgic about Arctic roll. At school, we would have fish and chips for lunch on Fridays, with a slice of Arctic roll for pud – and my nan used to make her own vanilla version for family parties. This is the first time I’ve ever made one myself, though I’ve made plenty of Swiss rolls, and it’s so fun and easy. It’s the perfect retro, summery dessert for whipping out after a barbecue. Ice cream? Check. Sponge? Check. Jam and fruit? Check. What more could you want? Give it a go at home yourself!’

Creamy Vanilla Ice Cream ● 150g Asda Frozen for Freshness Morello Cherries ● 3 large eggs ● 120g caster sugar ● ½tsp vanilla extract ● 100g self-raising flour ● 8tbsp Extra Special Morello Cherry Conserve ● 100g white chocolate ● 100g fresh cherries ● 70g strawberries, halved 1 Take the ice cream from the freezer. Set aside for 10 mins to soften, then mix with the frozen cherries in a bowl. Scoop onto a sheet of baking paper and shape into a cylinder 32cm long. Put in the freezer to firm.

2 Preheat the oven to 180C/160C Fan/Gas 4. Line a 32cm x 22cm Swiss roll tin with nonstick baking paper. 3 Whisk together the eggs, 100g of the sugar and the vanilla until doubled in size. Sift over the flour and gently fold through until combined. Pour into the prepared tin, then bake for 12-15 mins until golden brown. 4 Put down a fresh sheet of baking paper and sprinkle over the remaining caster sugar. Tip out the sponge and peel off the original paper. Roll up the sponge lengthways, with the paper inside. Allow to cool. 5 Unroll the sponge and spread with ½ the cherry conserve. Unwrap the ice

cream and lay it along one long side of the sponge. Roll up the cake around the ice cream. Discard the paper, wrap the roll in clingfilm and pop it in the freezer for 20 mins. 6 Meanwhile, line another tray with baking paper. Melt the white chocolate and dip each fresh cherry to cover the base. Put onto the tray and chill until set. 7 Unwrap the Arctic roll, discarding the clingfilm. Put onto a cake board with the ‘join’ on the bottom. 8 Stir 2tsp boiling water into the remaining conserve; drizzle over the cake with a spoon. Decorate with the chocolate cherries and strawberry halves to serve. Energy

collaboration between the people who make the clothes and the kids who wear them – with fabulous results! So how did it work? First, George’s Class of 2019 were asked to share their favourite play yground game. The answ wer was unanimous – tag! Then they were tasked with drawing the imaginary monsters they believed were

chasing them. Their designs were brought to life by CGI and used in the final version of the ad you see on screen. Importantly, it’s not just their imaginations that kids develop when masterminding make-believe monsters. Did you know that play helps enhance resilience as well as emotional and social skills? It’s just one reason why Asda colleagues and customers are raising money to help more than 20,000 disadvantaged children in the UK develop vital skills through play – all while having fun.

DRAWING INSPIRATION From young imaginations do big monsters spring! These cheeky chappies (left) are the result of George’s little helpers putting pen to paper. The makers of the new advert took features from each child’s drawing to create the comical multi-eyed CGI creature you see in the final edit (below).

AND THERE’S MORE… It’s the question we all love to ask our kids – what do you want to be when you grow up? Healtlth Jump for Joe!

The Body Coach Joe Wicks is on a mission – to get kids all over the country moving and ready for the challenges of a new school year. Here’s how you and your family can join in the fun… GOOD LIVING | 73

T

he younger a child is when you introduce them to exercise, the better, according to fitness phenomenon Joe Wicks. ‘I recently went on a tour of UK schools to encourage pupils to get moving more, and I saw again and again why exercise for kids is such a powerful thing,’ says The Body Coach. ‘Children who do regular daily exercise have been shown to have a better attention span, are more focused on learning and are often a lot happier. There are so many easy ways you can help your kids to become more active – without you having to be a pro with a kettlebell!’ The ideas outlined here make it simple to get going today – so get those trainers at the ready…

1

BE A ROLE MODEL Children learn from what they see, so if you don’t do any exercise, it won’t be on their radar. Set a good example by getting motivated yourself, then make it a fun thing that you can do together. ‘You need to stop thinking that exercise is a scary activity that only happens in a gym,’ says Joe. ‘There is now so much information online, you could look for a simple workout or yoga stretches on YouTube that you and the kids can do together in your lounge. Or it could be as simple as putting on your favourite pop song and dancing in the kitchen. We need to move as much as possible around our kids, so they think it’s a normal, fun thing to do.’

2

MAKE FITNESS PART OF SOMETHING YOU (AND THEY) LOVE Tapping into things your kids enjoy is a great way to encourage them to get moving. If they love music, dance with them. If they’re football mad, 74 | GOOD LIVING

Joe shows schoolkids just how fun exercise can be…

If she’s part of ‘When I visited the schools, I did something I love, she’ll know that it’s something similar and the kids an activity we can do together – and didn’t realise they were doing hopefully she’ll want to go cycling exercise,’ says Joe. ‘They just thought with me when she’s older.’ they were playing a great game that

HEALTH & WELLBEING

Joe's tips for exercise with kids

● Stay hydrated. If you’re heading out, don’t forget a refillable bottle of water to make sure everyone keeps up their fluid intake. ● Avoid using weights in kids’ workouts. Instead, youngsters can simply use their body weight in exercises such as squats to help build strength and fitness. ● Walk more! Walking is one of the best exercises because it’s low impact and free, and also works the whole body.

happened to involve star jumps and running on the spot. I had children from three to 16 doing the same workout, so it’s good for all ages. Keep the instructions simple and fun and everyone is going to come away feeling good.’

A change for the better We meet three children with very different dietary challenges – and ask the queen of kids’ cooking, Annabel Karmel, to help them and their families to make healthy changes

AIRON, 12, and his mum Heather are from Swansea. Airon has a sweet tooth and has struggled with his weight for years.

TIANA, four, and her mum Donia are from Essex. Tiana has always been a fussy eater and refuses to try new foods. 78 | ASDAGOODLIVING.CO.UK

HEALTH & WELLBEING

ANNABEL KARMEL

Faced with a fussy son of her own, in 1991 Annabel Karmel began devising homemade recipes, compiling them into a book, New Complete Baby & Toddler Meal Planner. She has since become a household name, selling more than 6 million copies of her first book, launching a successful product range of organic baby purées and toddler meals nationwide and devising children’s menus for hotels and restaurants around the world.

F

or any parent, managing their child’s diet can be a real minefield. There’s so much information to sift through, including conflicting advice about what kids should eat and when. Factor in dealing with super-fussy eaters, overeating, snacking or even food allergies, and it can be tricky to know if you are doing the right thing. Luckily, with a career spanning 25 years, there’s nothing that Annabel Karmel – one of the UK’s leading authorities on cooking for kids – hasn’t seen. From food intolerances to portion sizes, she knows pretty much everything about what children should be

eating – and the best ways to get them to try it. ‘Cooking for a family needs to be fairly quick and easy,’ she says. ‘Plus, a dish has to be a crowd-pleaser – I think too many of us are running “kitchen cafés” at home, preparing multiple meals for different children. I don’t believe in this – you have to find recipes that everyone will eat, and that means tapping into what children find appealing.’ She says that one big mistake many parents make is thinking they can only give stereotypical children’s food to their kids. ‘Actually, kids love variety,’ she says. ‘They will enjoy dishes with lots of flavour, such as butter chicken curry and teriyaki salmon.’ With this in mind, we introduced Annabel to three children, each with a different dietary challenge, for her take on how their parents can introduce more healthy variety into their everyday meals. Read on for Annabel’s expert advice, plus delicious family recipes…

WILLIAM, seven, and his mum Stephanie are from Cardiff. William has an extreme allergy to flax seed, peanuts, tree nuts, mustard and sesame.

ANNABEL SAYS

THE CHALLENGE ‘Tiana has always been a fussy eater – she won’t try anything new’ Tiana only eats a handful of different foods and mum Donia feels she has run out of options. Donia says: ‘Tiana has always been incredibly fussy; as a baby, she was very difficult to wean. She gets fixated on the same foods – plain pasta or rice, chicken breasts, broccoli and mackerel – and will just eat those over and over again. If I encourage her to try something new, she looks at the plate and says, “That looks disgusting”. ‘I’ve tried every trick in the book and she still won’t budge. It’s got to the point where I’ll just ask what she wants because whatever I choose to cook, she won’t eat. She hates chips, bread, potatoes, fish, cereal, anything with sauce on and any vegetable that isn’t broccoli. I just don’t know what to do for her any more – I’m at my wits’ end.’ 80 | ASDA.COM/GROCERIES

‘Tiana drinks a lot of milk, which could be filling her up, so cutting that out might be a good start,’ explains Annabel. ‘If she doesn’t like chips, try sweet potatoes in meals. You can spiralise them and serve instead of pasta, try them as wedges or make them into “potato waffles”. Giving a dish child appeal – finger food is always popular! – is another way to help a child to enjoy eating. A reward chart could encourage Tiana to try some new foods. Get her involved in cooking them, too, as she may be more willing to taste something she’s helped to make.’

2 WEEKS ON

Donia says: ‘We’ve really made progress with Tiana over the past fortnight. Cutting down on milk has increased her appetite and she gave the meatball and spiralised sweet potato recipe (right) a try, which was a really big step for her. Thinking about how I present the food so that it looks appealing to Tiana, or is easy for her to eat with her hands, has also really helped. Getting her into cooking has been a good idea, too – she even ate a slice of bread that we had baked together.’

‘You can batch-cook these meatballs and freeze some for another day’

A source of protein

ANNABEL SAYS

THE CHALLENGE ‘We’ve got into bad eating habits, and snacking is our downfall’ Mum Heather feels responsible for her son Airon’s bad eating habits. She says: ‘Airon

has picked up his overeating from me. I’ve struggled with my weight from the age of four, and I can see those habits have been passed on to him. He’s overweight and feels self-conscious about it. I do feel responsible – after all, I do most of the food shopping and cooking – but it can be difficult. Many ready meals have four servings, but the three of us will end up eating it all. ‘Snacking is one of our big downfalls and, like me, Airon has a sweet tooth. My parents never cooked, so it isn’t a skill they passed down to me, but I’m trying to learn now so I can make us healthier family meals from scratch.’

‘To overhaul your child’s diet, you need to do it as a family,’ explains Annabel. ‘Start with a healthier approach to cooking – steaming and grilling foods instead of frying them, or why not make your own chicken nuggets at home? ‘If snacking is an issue, make sure you have something to hand when they come in from school. A selection of cut-up fruit works well (children will often walk straight past a fruit bowl) and handy packets of ready-sliced fruit are brilliant for lunchboxes, too.’

2 WEEKS ON

Heather says: ‘Chatting to Annabel was so helpful. It made me realise that I had just been serving the same meals and so wasn’t making it interesting for Airon or encouraging him to eat new things. I was surprised that he loved the salmon recipe (right) – we’ll definitely make it again! ‘Now that I’ve started cutting up the fruit for his lunchbox, he’s actually started eating it. Plus, after cooking this salad, I feel a bit more confident that I can follow a simple recipe and know that it’s going to be good for Airon.’

Giant cous cous salad with salmon & rainbow veggies

Annabel says: ‘This so-simple recipe is a delicious mix of crunchy veg and flaky salmon, and the maple syrup dressing is a winner.’ SERVES 4 READY IN 20 MINS, PLUS COOLING PRICE PER SERVING £1.59

1 Cook the cous cous and edamame beans separately, according to the pack instructions. HEALTH & WELLBEING

THE CHALLENGE ‘Food shopping for us means spending ages checking labels for allergy warnings’ Mum Stephanie has found that it’s becoming more difficult to buy food that son William is able to eat.

Stephanie says: ‘We had no idea William was allergic to anything until he went into anaphylactic shock, aged three, after drinking a smoothie with flax seed in it. Tests then showed he’s also allergic to peanuts, tree nuts, mustard and sesame. Following all the recent allergy awareness stories in the news, shopping for food is actually getting harder, as the “may contain” lists on everyday products seem to get longer. ‘William is an amazing little boy and he doesn’t let his allergies get to him, but they have definitely changed our lives as a family. We rarely eat out at restaurants – we’ve actually been refused service before – and eating at home means making a lot of meals from scratch. I definitely need some new ideas!’ 84 | ASDA.COM/GROCERIES

‘Allergies like William’s can mean it’s especially difficult to enjoy Indian or Chinese dishes,’ says Annabel. ‘That’s why I wanted to give a recipe for a dish that he probably wouldn’t be able to order if he was having dinner in a restaurant. It’s also a great family meal, too. ‘For sweet treats, Stephanie could make her own granola bars at home and simply swap out any nuts and sesame seeds for oats or pumpkin seeds. William can have fun and learn a few cooking skills helping her to make them, too.’

2 WEEKS ON

Stephanie says: ‘Annabel’s butter chicken recipe (right) is our new favourite family dish – and just being able to all eat the same meal together has made such a difference. But the biggest change has been the improvement I’ve seen in William’s confidence – he’s so much more optimistic about dealing with his allergies now. After speaking to Annabel, he has a sense that he will be able to eat many more dishes as long as we make the right food swaps when we prepare them.’

Butter chicken with yellow rice

Annabel says: ‘This delicious chicken curry is free from nuts, mustard and sesame – and it will go down a treat with the whole family.’ SERVES 4 READY IN 40 MINS PRICE PER SERVING 98p

● 15g unsalted butter ● 1 large onion, chopped ● 2cm piece root ginger,

peeled and grated

● 2 cloves garlic, crushed ● 1tsp Asda Garam Masala

Spice Blend

● 1tsp ground cumin ● 1tsp ground coriander ● 1tsp smoked paprika ● 2tbsp tomato purée ● 1 Oxo Reduced Salt

Chicken Stock Cube made up to 200ml ● 2 skinless chicken breasts, diced ● 1tbsp Extra Special Mango, Apple and Ginger Chutney ● ¼tsp turmeric ● 200g basmati rice ● 6tbsp full-fat Greek yogurt ● 1 spring onion, sliced, to garnish (optional)

1 For the curry, melt the butter in a pan over a medium heat. Add the onion and fry for 3-4 mins until softened but not browned, then add the ginger, garlic and spices. Cook for 30 secs, then add the tomato purée and chicken stock. Bring to a boil then reduce the heat and simmer for 10 mins. 2 Season the chicken with ground black pepper, add to the curry sauce with the mango chutney and simmer for 15-18 mins until cooked through. 3 For the yellow rice, put the turmeric in a pan of boiling water. Add the basmati rice and stir, then reduce the heat and simmer for 12-15 mins until the rice is just tender. Drain and leave to steam in the sieve, covered, for 5 mins. 4 Stir the Greek yogurt into the chicken curry just before serving and serve with the yellow rice, garnished with the spring onion, if using. GOOD LIVING

MY FOODIE LIFE

‘I’D LOVE Elton John TO COME TO my dinner party’

What dish reminds you of childhood? A roast dinner. Mum would do a roast once or twice a week when we were little, usually chicken or lamb. I love roast potatoes! You can’t beat them. Who cooks at home? I really enjoy cooking. Sometimes I’m busy and get home late, but I try to prep stuff in the week. We eat chicken casserole all year round and I make a shepherd’s pie-style dish, too – without the potato top but with spinach, peas, carrots and broccoli in it. The kids love it with a bit of cheese on top. Are Nelly and Arthur fussy eaters? Not at all! When we were in Valencia, they were eating clams, anchovies and calamari – all the adults were amazed! Growing up, Mum and Dad always encouraged us to try everything and it’s pretty much the same with my kids. What’s your signature dish? Spaghetti Bolognese. I make a tomato and chilli sauce, with carrots, onions, celery, beef stock, Worcestershire sauce, red wine, garlic and tomato purée, then I simmer it for hours.

I once made gnocchi – it was like seafood floating in wine

Any kitchen disasters? Once, I tried to do seafood gnocchi from scratch, which took me ages. It had white wine in the sauce and it just tasted like seafood floating in white wine! Greg and I had a couple of mouthfuls and then we were like, ‘Hmm, shall we leave that one?’ Do the kids help out in the kitchen? Yes, Nelly really wants to be involved.

Recently, she was like, ‘I really want a jacket potato with tuna and cheese’ and she got her little stool to stand on, ready to help me make it. We also bake cakes and cookies and she loves decorating them all – and eating the icing as she goes, of course! Who’s the best cook in the family? My Nanny Liz. She’s one of those nans who’s always in the kitchen. She makes cakes, sausage rolls, pork pies... all the good stuff! It’s her and my granddad’s thing – they love their food. How do you stay in shape? Just before Greg and I got married in March, I got a personal trainer to help me out and keep me motivated – and I’ve kept it up. I do weight training with some cardio. If I can’t find the time, I just try to eat a bit healthier. Ultimate dinner party guests? Elton John – I watched Rocketman and there was so much in that film about his life that I never even knew, so I feel like he’s very interesting. And Kris Jenner – she’d be really good. And your ultimate comfort food? I love a cheese and ham toastie. Billie’s range of summer clothes for babies aged 0-24mths is available now, exclusively from George
