Hands up who likes doing the dishes? No takers? Thought not. In my eyes, bubbles are for the bath and time spent washing up is time I could spend winding down. If you agree, then you’ll love our Sarah Thom selection of Rukmini Iyer’s roasting tin recipes Asda Editor (p25) – minimal effort (and dishes to wash) yet maximum flavour. Her ethos is simple: ‘You shouldn’t have to sacrifice taste for ease,’ which is something we should all embrace. Back to school, back to uni, back to work… September’s not much of a pleasure, is it? The ‘normality’ presented by getting back to routine is a bitter pill to swallow and, as the days get shorter, I become less social butterfly and more sofa sloth. With autumn equinox on the horizon, hibernation becomes my main source of enjoyment. If you need me you’ll find me snuggled up… preferably hugging any dessert I can get my hands on (p46)!

1 Heat the oil in a wok or large frying pan over a high setting. Add the beef, spring onions, red onion and garlic, then stir-fry until the meat is browned and any liquid has evaporated. 2 Add the mushroom stir-fry, peppers and the chilli, if using. Cook for 4-5 mins, until the vegetables begin to wilt. 3 Stir in the noodles and the black bean and sweet chilli sauces. Heat through, for 2-3 mins, then serve. Energy

Prawn toast Vegan spring rolls

Crammed with crunchy veg and flavoured with garlic and ginger, dip these crispy golden bites in sweet soy sauce SERVES 6 READY IN 40 MINS PRICE PER SERVING 78pp

● 1tbsp sesame oil ● 2 cloves garlic, thinly sliced ● 100g beansprouts ● 1 red pepper, thinly sliced ● 180g trimmed fine beans ● 2 spring onions, halved then thinly

1 Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray with baking paper. 2 Heat ½ the sesame oil in a wok or large nonstick frying pan. Stir-fry the garlic, beansprouts, pepper, beans and onions for 3-4 mins on a high setting until starting to colour. Take the pan off the heat and stir in the ginger and water chestnuts. 3 Slice the filo into 12 rectangles. Put 1 heaped tbsp of the veg mixture at one end of each piece of filo and roll up, making sure the ends are folded in. Brush a little of the remaining oil over the edge of the filo to seal. 4 Arrange the spring rolls on the baking tray and cook in the oven for 15-18 mins, until golden brown and crisp. aside and allow to cool. Divide the chilled prawn mixture between the slices of toast and spread over evenly, all the way to the edges. 4 Sprinkle the sesame seeds evenly over each piece of toast then brush with the sesame oil. 5 Put the toasts on the tray and bake for 8-10 mins, until the prawn mixture is pink and cooked through, and the sesame seeds are golden brown. Cool for 5 mins then cut into triangles. 6 Sprinkle over the remaining spring onions. Serve the prawn toasts with the sweet chilli sauce, for dipping. Energy

1 Preheat the oven to 200C/ 180C Fan/Gas 6. 2 Toss the cauliflower in 1tsp of the oil to coat, then spread out on a large baking tray. Roast for 25-30 mins, until crisp and browned. 3 For the kung pao sauce, heat 1tsp of the oil in a large pan. Cook the onion, garlic and carrot over a medium heat for 5-6 mins, until starting to colour. Stir in the sriracha, tomato purée, rice vinegar, sugar and stock, then bring to a simmer. Stir 1tbsp cold water into the cornflour and add to the pan. 4 Add the pak choi and bamboo shoots and bring back to a simmer,

stirring regularly. Cook for 8-10 mins, until the sauce has thickened. 5 Meanwhile, for the fried rice, heat the rest of the oil in a large frying pan. Cook the spring onions and frozen mixed vegetables for 3-4 mins, until heated through. Heat the rice according to the pack instructions and tip into the pan with the vegetables. Stir through the soy sauce and cook for 2 mins. 6 Stir the roasted cauliflower into the kung pao sauce. Divide the rice between 4 plates and top with the kung pao cauliflower. Sprinkle with the chopped peanuts, some coriander and red chilli, to serve. Energy

Herby runner bean & pulled ham frittata

1 Preheat the oven to 200C/180C Fan/Gas 6. 2 Heat 1tbsp rapeseed oil and fry 1 large red onion, finely chopped, for 5-6 mins over a medium heat. Add 2 x 180g packs runner beans, trimmed and chopped. Cook until tender. 3 Tip into a bowl with 2tbsp chopped parsley, zest 1 lemon and 250g ricotta cheese. Stir and season with black pepper. 4 Melt 40g unsalted butter. ‘MY MIDWEEK MEAL MIRACLES’

ood writer Rukmini Iyer loves to cook and eat fresh, tasty food. However, after a busy day’s work, even she can struggle with the idea of whipping up an elaborate dinner from scratch. ‘As a food stylist, I can spend all day in the kitchen,’ says Rukimini, whose role often sees her styling delicious dishes for Good Living photoshoots. ‘I love the buzz and creativity, but it means the last thing I feel like doing when I get home is standing over the hob. ‘A few years ago, I started to adapt dishes such as steak fajitas, cooking them in the oven instead. That way, I can have a bath or sort myself out for the following day while dinner cooks. Plus,

because each meal is cooked in just one roasting tin, I don’t have a sinkful of pans to contend with before bed.’ And so in 2017, inspired by this clever yet simple solution, Rukmini wrote The Roasting Tin, the first in a series of brilliant cookbooks packed with delicious recipes, each baked in one tin. ‘My ethos with my recipes is that you shouldn’t have to sacrifice taste for ease,’ adds Rukmini. ‘I wanted to introduce as much flavour as possible with minimum effort – you pretty much just throw in all the ingredients and leave them to do their thing. broccoli ● 200g sugar snap peas ● 125g asparagus spears ● 200g frozen peas ● 2½tbsp sesame oil ● 4 salmon fillets ● ½tbsp soy sauce ● ½tbsp honey ● 6cm piece ginger, grated ● Juice 1 lime ● 3 spring onions, finely chopped ● Handful peanuts, roughly chopped ● 1 red chilli, finely sliced 1 Preheat the oven to 200C/180C Fan/Gas 6. 2 Put the broccoli into a large bowl, cover with boiling water, leave to stand for 1 min, then drain thoroughly.

3 Put the broccoli, sugar snaps, asparagus, frozen peas and 1tbsp of the sesame oil in a roasting tin and mix together. Arrange the salmon fillets on top. 4 To make the glaze, mix ½tbsp of the sesame oil with the soy sauce and honey, and spread over the salmon fillets. Roast for 20-25 mins until the fish is cooked through. 5 Meanwhile, to make the dressing, mix the ginger, lime juice and spring onions with 1tbsp of the sesame oil. Once the salmon is cooked, pour the dressing over the vegetables, scatter over the peanuts and red chilli and serve immediately. Energy

Roast in the oven for 25 mins, until the chicken breasts are cooked through. 5 For the dressing, whisk together the lime juice, extra virgin olive oil, mint and pomegranate seeds, then season with black pepper and set aside.

6 Once the rice has cooked, drain it well, then allow to steam dry for a few minutes. 7 Remove the chicken and avocados from the roasting tin and slice the chicken breasts. Tip the rice into the tin along with ½ of the dressing and the spinach, then mix well with the chilli oil left in the tin. 8 Arrange the chicken and avocado over the top, along with the remaining dressing, and serve. Today was brilliant. I really enjoyed it. The pizza was so fun to make and tasted delicious. I learnt how to knead dough properly, and then roll it out to make the pizza base. My favourite bit? Eating it, of course!

and 215ml warm (not hot) water, then mix together with your hands to form a dough. Knead on a floured surface until smooth. Divide into 2 pieces. On a floured surface, roll 1 of the dough pieces into a circle about ½cm thick and 30cm across. Move to a baking tray. Spread over ½ the tomatoes, squashing them with a spoon, then sprinkle over ½ the cheese. Repeat step 3 with the remaining dough, tomatoes and cheese to make another pizza. Move to another baking tray. Lay out the sweetcorn, peppers, spinach and broccoli on plates – and then have fun decorating the pizzas. Ask a grown-up to bake the pizzas for 10-15 mins until the cheese has melted, then serve immediately.

This has been my go-to recipe for years and the best part is you can just tip all of the sponge ingredients into one bowl and mix without worrying about creaming the butter and the sugar separately. It’s super easy to whip up and looks really impressive when you present it for a special celebration. Three-layered cakes are on-trend at the moment and feel a bit grander than a traditional two-sponge cake – without requiring too much extra effort. Chocolate drip celebration cake SERVES 40 READY IN 1 HR 30 MINS, PLUS COOLING PRICE PER SERVING 46p ● 250ml vegetable oil ● 4 medium eggs, beaten ● 450ml whole milk ● 1tsp vanilla extract ● 750g golden caster

1 Preheat the oven to 200C/180C Fan/Gas 6. Grease and line 3 x 20cm round cake tins. 2 In a very large bowl, combine the oil, eggs, milk and vanilla. Stir in the sugar then add the flour, cocoa and baking powder. Mix well. 3 Make up the coffee with 450ml boiling water. Add to the mixture and stir well. 4 Divide the mixture evenly between the tins. Bake for 40-45 mins until a skewer comes out clean. Cool in the tins for 20 mins, then completely on a wire rack. 5 Level each sponge with a serrated knife and put the first on a plate or board. 6 Finely chop 50g of the dark chocolate and stir into the frosting. Spread some over the top of the sponge. Stack with the next sponge and repeat to get a 3-layer

cake. Spread the top and sides with frosting; smooth with a palette knife. Pop in the fridge for 20 mins. 7 For the ganache, break up the remaining chocolate in a heatproof bowl. 8 Heat the cream in a pan until just steaming. Pour over the chocolate and leave for a few minutes. Mix well. Cool slightly for 10 mins. 9 Use a teaspoon to drip ganache down the sides of the cake, then spread over the top. Chill for 10 mins. 10 If using bunting, make 2 guide holes in the cake with a chopstick. Slide the straws in with the bunting hanging between them. Finish by decorating with the buttons, macarons and Raffaellos. Energy

P

eople are surprised when I say I’m not much of a cook. On the Downton set, a home economist brought in elaborate dishes and we tried to look like we knew what we were doing. There’d be a lot of garnishing, tasting and shouting as that seems to be what most chefs do on telly. I’ve got more into cooking since I became a vegan three years ago, after visiting a farm sanctuary in LA. I’d always seen myself as an animal lover, speaking up for welfare yet eating meat, but it was there I made a connection. Now, my mission is to find things that will make even those who’d never considered veganism say, ‘oh, that’s really nice’ – like this torte. I learnt it in a cookery class and made it for my husband Da’aboth and vegan and non-vegan friends afterwards, and they all loved it! I’m sure Mrs Patmore would approve, too. Stepping back into her shoes for the movie felt like coming home. Everything was the same: the costumes, the props, the pile of pans everyone keeps knocking over. I love the way her character has developed. She’s bossy but it comes from a good place. She can’t afford to have anyone being sloppy!

Prosecco-poached plum pavlova

1 Preheat the oven to 170C/150C Fan/Gas 3. Line a 30cm x 20cm rectangular baking tin with greaseproof paper. 2 Melt the chocolate and butter in a heatproof bowl over a pan of boiling water (don’t let the bowl touch the water). 3 Remove from the heat and mix in the wine, then the sugar, flour, cocoa, eggs, raspberries and vanilla. Stir until combined, then pour into the tin. 4 Bake on the middle shelf of the oven for 30-40 mins until a light crust has formed and the brownie is firm to the touch. 5 Remove from the tin and leave to cool completely. Dust with the icing sugar and cut into 12 squares to serve. Energy

1 Preheat the oven to 140C/120C Fan/Gas 1 and line a baking tray with baking paper. 2 Split open the vanilla pod, scrape the seeds into 240g of the golden caster sugar, mix and set aside.

3 In a clean, dry bowl, beat the egg whites into stiff peaks. Continue whisking and add the vanilla sugar 2tbsp at a time, waiting a few seconds between each addition. Continue until all the sugar has been used and you have a thick, glossy mixture. 4 Pile the meringue mixture onto the baking tray, smooth into a circle, and bake in the oven for 1 hr 30 mins. 5 Meanwhile, put the prosecco, the remaining 200g sugar and the spices into a pan. Stir over a medium heat until the sugar dissolves. 6 Reduce the heat until

there are hardly any bubbles and add the plums. Poach for 5 mins, turn off the heat and leave for 5 mins. Remove the plums with a slotted spoon. 7 Boil the syrup to reduce by two-thirds. Turn off the heat and leave to cool. Remove the cinnamon stick and cardamom pods. 8 Cool the meringue on a wire rack. To serve, whip the crème fraîche, pile it onto the meringue and top with the plums and cooled syrup. Energy

‘Fluffy, no-stick rice is simple if you follow these easy steps. Just remember, the ratio is 1 part rice to 1⅓ parts water or stock.’

A sizzling favourite with tender meat and veg in a spicy sauce SERVES 4 READY IN 20 MINS PRICE PER SERVING £1.55

● 2tsp rapeseed oil ● 2 large chicken breasts, diced ● 2 large spring onions, sliced ● Thumb-sized piece of ginger,

peeled and grated

● 3 cloves garlic, crushed ● 1 red and 1 orange pepper,

● 160g Extra Special Tenderstem

Broccoli, roughly chopped

● 160g sugarsnap peas, halved ● 120g pack Asda Szechuan

1 To serve 4 people, rinse 300g basmati or long grain rice in a sieve under cold water.

2 Next, tip into a saucepan, add 400ml cold water, stir and then bring to a boil.

1 Heat 1tsp of the oil in a wok, add the chicken and cook on a high heat, stirring, for 4-6 mins to brown. Set aside. Heat the remaining oil. Add the spring onions, ginger, garlic, peppers, broccoli and peas; stir-fry for 4 mins. 2 Add the chicken, plus any juices and the Szechuan and soy sauces. Bring to a simmer and cook for 3 mins. 3 Top with the coriander, peanuts and chilli. Delphine Chui, 30, co-founder of beauty blog @ftoxins, switched to organic after linking skin breakouts and headaches to her make-up.

Delphine says: ‘As a teen and young adult, I was obsessed with beauty. Blue mascara, glitter eyeshadow, vibrant lipsticks – you name it, I wore it. I used to get spots and suffer from headaches that would magically disappear after I took my make-up off. This made me wonder whether the ingredients in my make-up were the problem – and sure enough, I noticed positive results pretty quickly when I switched to organic brands. ‘I started to look into all the ingredients in my usual kit and realised that many conventional products contained chemicals known to have harmful effects. It really opened my eyes – and inspired my sister

and I to start our organic beauty and lifestyle blog, @ftoxins. ‘Now I’m further along in my conscious beauty “journey”, it’s become about more than just the health benefits. It’s also about the social and ethical impact the beauty industry has on the planet – for example, whether the people producing the raw ingredients for the products have been treated and paid fairly, too.’

Lynsey says: ‘Before having kids, I didn’t really care which beauty products I used. I’d go for things with attractive packaging or whatever was easy to use, and never considered the impact they might have on the environment. After having Jacob, I thought more about the products I was buying. When I looked at creams for his dry skin, I was stunned by all the ingredients – chemicals I didn’t want to put near him! ‘I started to look at what I was buying for myself, too, swapping my face wash for one without microbeads, the tiny pieces of plastic used to make products more abrasive. Instead, I looked for products that used more natural ingredients. I’ve noticed a real change in my skin – it used to be prone to redness and spots, but it’s now clear and glowing, which I’m sure is down to using fewer chemicals on it.’

Nicole says: ‘I never really understood beauty products when I was growing up – I didn’t know how to find the right ones for your skin or how to apply them properly. My mum didn’t wear make-up and I had no YouTube gurus to turn to. ‘Before choosing vegan beauty, I mostly borrowed whatever I could out of my older sister’s make-up bag! I spent my teenage years experimenting with skincare and make-up – mostly wasting my pocket money on products that didn’t suit me. It wasn’t

until I was in my late teens that I finally started finding the joy in beauty products. ‘Once I decided to commit fully to vegan beauty, I researched everything in my make-up bag to find out what I’d need to replace, then used up what I had left – that was important, as chucking things away is a huge waste! I also got a vegan beauty box so I could try out new beauty products. And it all started from there!’

Four mums discuss the highs, lows and laugh-out-loud mo oments of parenthood – and what they wish they y’d known before baby arrived

LEANNE GAVIN, 30, from Liverpool, runs a party planning company with husband Scott. They have six children, including baby Megan, nine months.

CHARLOTTE BEASLEY, 27, from London, is mum to Lola, two, and is currently setting up her own business.

NEHA RAJANI, 33, from Hertfordshire, runs personalised babywear brand Sonality with husband Dipe. They have two children, including Eva, seven weeks.

HATTY ASHDOWN, 40, from Kent, hosts Screaming with Laughter baby club and Funny Mummies podcast. She lives with husband Alex and two sons, including Buster, one.

Forget life as you know it – because having a baby will change all that! But whether it’s your first child or your third, the tips and support you get from other mothers can make all the difference when navigating the highs and lows of parenthood. Here, four mums share advice, the realities of raising little humans, and what becoming a parent has taught them about themselves… What has surprised you the most when it comes to motherhood? Hatty: That little old ladies think it’s fine to give me their opinion on Buster’s name. They say, ‘Oh, no – poor little thing!’ and I’m like, ‘you do realise you’re saying this to my face, don’t you?’. Charlotte: When I was pregnant, I was amazed at the number of horrific birth stories people try to tell you. Terrifying! Why anybody thinks you’ll appreciate their horror stories is beyond me. What’s your favourite part of the day with your baby? Hatty: Taking Buster out on the bus is pretty funny because he likes to have lots of attention – he’s not happy unless every single person is laughing with him. Neha: When Eva wakes up in the morning, she does a big stretch and gazes up at us. That quiet time before the craziness of the day kicks in is lovely. Charlotte: Lola’s really sweet at bedtime. We’ll sit and read story books together. Leanne: Megan is just so happy all the time. She brings us so much joy! What do you wish you’d known about parenting before you became a mum? Leanne: Stop at one! [Leanne has six children.] Hatty: That time can play tricks on you. I remember at a parenting class, someone said the days are long but 86 | GOOD LIVING

a year goes so fast. Some days last forever and I’m looking at the clock thinking, ‘Is it time for bed yet?’. Neha: When babies are developing and learning something new, everything else goes out the window. It explains so much! They stop feeding and sleeping because

their little brains are buzzing with all this new information. Charlotte: I would have liked a bit more information on how difficult breastfeeding can be. Often, new mums are sold this idea that the baby will just latch on and away you go, but it’s not that simple for a lot of women. Also, once you’ve nailed it, how relentless it is – you’re basically an all-night boob bar! Did you experience any pregnancy or birth complications? Leanne: We found out at 12 weeks that Megan had Down’s syndrome,

a woman in labour eat so much! Hatty: Buster was a really big baby so I had to be induced, where labour is artificially kickstarted by an injection. That’s when I found out epidurals – pain relief via an injection in the back – don’t work on me! Did you experience any mental health issues during or after birth? Charlotte: Anxiety – it was quite bad. I suffered from it a bit before, but having kids changes the way you see

so the main worry was that we might lose her during the pregnancy, as there was a greater chance of miscarrying. We had scans every four weeks, which was scary. Neha: I had an elective Caesarean section with Eva, after quite a difficult birth with my first child, Mia, now two. But Eva had problems with rapid breathing the day after she was born. It may have been due to fluid on her lungs, which is more common in C-section births. She was in intensive care for one night, which was really hard. Charlotte: My birth actually went very well – I was lucky. It was on my birthday that my waters broke and I went into hospital for an internal examination. After that, things kicked off very quickly and, two and a half hours later, Lola was born. The midwives said they’d never seen

things, probably forever. I had a whole list of worries I’d never had before. Leanne: I’ve experienced postnatal depression before, so I knew the signs. But, obviously, with Megan and her complications, it’s a whole lot deeper. Hatty: I went into a bit of a depression when I was pregnant with Buster, like a pre-anxiety of just thinking, ‘How am I going to handle this? How am I going to deal with two children?’. Neha: That’s the first time I’ve heard someone talk about prenatal depression. It should probably be discussed more. Do you ever miss your pre-mum life? Leanne: I have moments where I’m like, ‘I wish I’d never had kids so I could just jump on a plane and go anywhere.’ But I’d never change it, ever. Charlotte: I miss being able to get in the car without full-blown meltdowns, back-bending, screaming, kicking – just being able to get in and go. Neha: I miss just going out for dinner. When you’re a kid, you have to ask your mum if you can go out. As a mum, you still have to ask her if you can go out, because you need her to babysit! Hatty: I miss being able to have a proper conversation and finish a sentence without being interrupted. Also, going to the toilet alone!

Any funny parenting fails you’d care to share?! Hatty: Well, there was that time I was trying to change Buster’s nappy on a train and there was no loo roll so I had to use one of his socks… Neha: I’ve had to cut my babies out of bodysuits because they’ve pooed everywhere, all up the back! I’ve just thrown the bodysuits straight in the bin. Charlotte: The best piece of parenting advice ever? Many bodysuits are made with little folds in the shoulders, so if there’s a poo explosion, you can slide the suit off downwards, instead of up and over the baby’s head. Leanne: I saw a Facebook post about that the other day! I was like, ‘For goodness sake, I’ve had six kids now – how do I not know this?’! What is the most important thing parenting has taught you? Hatty: Patience – though it’s a work in progress! And how to multi-task. I’m like the best PA in the world now. GOOD LIVING | 87

Neha: Just realising I’m actually a really strong person. Mums don’t give themselves enough credit. You know what? I’m doing a great job. Charlotte: Resilience. You realise how much you can juggle and get done when little people are relying on you, so you feel like you can do anything. Leanne: I’ve learned just to take each day as it comes. How do I cope? I don’t know. You just do! 88 | GOOD LIVING

● Go your own way It’s not always helpful to hear that another baby is sleeping through the night when yours isn’t, and it’s easy to fall into the trap of ‘compare and despair’. But try to focus on what works for you and makes your baby happy. Things will happen at a rate that’s right for both of you. ● Anticipate sibling struggles Adjusting to a brand new baby can be really difficult for older kids. All of a sudden, they have to give up not just their toys and space but also

your undivided attention. Tackle this by involving them as much as you can. For example, make them your key helper, even if they just pass you wet wipes as you change a nappy. ● Make time for yourself A healthy parent is one who is able to prioritise themselves, so try to plan one small thing for yourself each day. Take a relaxing shower or bath, sit down with your baby to watch your favourite TV show, or treat yourself to a pack of your favourite biscuits to go with your morning cuppa. ● Find your tribe Getting together with other parents is really important. Often they dish out the most realistic advice, and meeting up with them will get you out of the house for a bit, too.

‘i LIKE TO IMPROVISE–I CALl MY DISHES “A SURPRISE”’

What kind of cook are you? Artistic and experimental. My sister laughs because everything I cook is called a ‘surprise’. I’m like, ‘I’ve made an avocado surprise’ because I never know how it’s going to turn out. I like to improvise and take in the flavourings and be a bit more creative. I never follow a recipe book. What’s your room service go-to? I really like hotel breakfasts so I make sure I get everything ticked off. Normally, at home, breakfast is a bit of a rush so in a hotel it’s an indulgence – I go for the muesli bowls and eggs. What would you cook us for dinner? I’d make quinoa with avocado. And of course I’d probably serve up one of my ‘surprises’… Were you a fussy eater as a child? My dad was pretty strict and believed if there’s food on the plate, you eat it. I wasn’t much of a fuss-pot. I’m lucky that my dad and sister are so on point when it comes to cooking. My

mum’s going to be annoyed that I’m not shouting out about her cooking skills, but my dad made a lot of traditional Zambian dishes including Nshima – corn maize [cornmeal] mixed with water into a dough, then dipped in a stew. It’s really good. Your biggest culinary disaster? I tried to make a pie, didn’t read a recipe book and replaced meat

with tofu. I put decorations on the pastry so it looked good but it was stodgy and tasted horrible. The friend I was cooking for had one or two bites then politely said, ‘thanks but no thanks’. Best meal cooked by a celebrity? Naughty Boy is a brilliant cook. He has a kitchen upstairs in his studio complex and last year made a vegan shepherd’s pie, which was banging. What do you eat while writing music? You need to fuel yourself but have to be so careful not to go into junk food territory, so I’ll eat popcorn or nuts. Where have you eaten the best food? Atlanta, Georgia. It’s all soul food – so heavy, but so good. There’s something about how they cook their Brussels sprouts. They fry them in a cool way and serve with mashed potato. What reminds you of being on tour? On the road, you spend the day being healthy then the venue staff will order pizza for everyone on the tour bus. Resisting that temptation is the hardest when you’re tired, hungry and celebrating because the show’s gone well, so I usually don’t say no! Emeli’s album, Real Life, is available from 13 September*
