Welcome After a long and semi-virtuous January, this month brings a hive of activity. I tend to keep Hana Keirnan Asda Editor my Valentine’s celebrations low-key, and this year I’m taking the pressure off and opting for our Extra Special Meal Deal (p14) and a movie with my husband. However, I do enjoy sharing the love with my friends and family and I’ll make

Yeast extract
THE FIVE S FLAVOURS Sweet
Sweet flavours aren’t just for desserts – they can balancce bitter, sour and spicy note es, and enhance saltiness. Classic choices are maple syrup or balsam mic vinegar, or natturallly sweett foods such as fruit and carrots.
Salty
Salt enhances flavours in a dish and balances sweetness and bitterness. Adding cheese, bacon or olives will lift the saltiness and bring a flavour boost.
When added to casseroles and stews, yeast extract gives a hit of umami and saltiness. Spread a thin layer over chicken skin to heighten the savoury roast flavour, or add to cheese on toast to give delicious earthy tones.
Balsamic glaze
Tangy balsamic glaze adds sweetness when drizzled on tomato salads and helps to balance the acidity. The glaze can also be used as the base for a sticky chicken marinade, or to help save an overly spicy pasta sauce.
Wine
A splash of wine will balance rich sauces, gravies and stews and give

1 Preheat the oven to 200C/180C Fan/Gas 6. Strain the porcini mushrooms (reserve the soaking liquid) and chop finely. 2 Brush the yeast extract over the chicken skin. Put the flour in a bowl and toss the chicken legs in it to coat completely. 3 Heat the oil in a large ovenproof dish over a medium setting. Fry the chicken legs for 2-3 mins on each side until just starting to colour – you may need to do this in batches. 4 Arrange the chicken legs in a single layer in the dish. Scatter over the garlic cloves, thyme and mushrooms. Pour in the reserved soaking liquid and the sherry, then bring to the boil. Transfer to the oven and roast for 45 mins until the chicken is golden and the liquid is reduced and sauce-like. 5 Meanwhile, 15 mins before the chicken is ready, bring a large pan of water to the boil and cook the potatoes for 12 mins until soft and
almost falling apart. Drain and return to the pan, then set aside, uncovered, for a couple of minutes to steam dry. 6 Add the mayonnaise and milk to the pan, then mash the potatoes until you have a smooth purée. 7 Divide the mayo mash between 4 plates, top with the chicken legs and drizzle over the pan juices. our years after bursting onto the scene with BOSH.TV, Sheffield lads Henry Firth and Ian Theasby should be pretty pleased with themselves. Having racked up 1.6 billion YouTube views, they are credited with ‘veganising’ faves such as lasagne and spaghetti Bolognese. Here, they reveal why they joined the plant-based revolution and share their top tips for making every kitchen vegan-friendly…
When and why did you become vegan? Henry: I saw a documentary that revealed how bad eating meat is for the environment. It said it contributes more to global warming than all planes, trains and cars combined. I went vegan overnight. Ian: I went vegetarian at the beginning of 2014 and felt really good. It made me think that veganism might be a good idea as well. I’ve got oily skin and used to have spots, but now they’ve cleared up. My hair’s got thicker, too. Was it easy to make vegan versions of popular dishes? Henry: All the info you need to make vegan versions of animal-based dishes is out there. We had repeated failures before we cracked our fish and chips recipe, but after six to 12 months, we were confident enough to try our own dishes. Then we really started to excel. Your smartest vegan swap? Ian: I used to be a big fan of scrambled egg. We developed a technique using firm and silken tofu to get both the silkiness and clumps of the egg, flavoured with garlic, turmeric and a little bit of black salt, which gives a real eggy-ness. You really can’t tell the difference.
What essentials do all vegan households need? Henry: Tofu, nutritional yeast (to make things taste cheesy), a plant-based milk and a good selection of spices to layer up the tastes. They help you get the complexity of flavour you get with meat. What would you say to those who think veganism is expensive and limiting? Henry: There are endless fruits and veg to choose from! In terms of expense, if you’re buying higher welfare meat, veganism is definitely cheaper, especially if you use dried beans, rice and pasta. You can make a vegan dish with five ingredients just as easily as a meat one. Can being ‘flexitarian’ make a difference, too? Ian: If we all cut out meat in the UK for one meal a week, we would reduce the UK’s carbon emissions by more than 8%, which is the equivalent to taking 16 million cars off the road. Spritz with 4 sprays of the oil, bake for 25 mins, turning them halfway through – spritz with more oil if too dry. 4 Meanwhile, make the satay sauce. Put the lime juice and the remaining ingredients (except for the coriander) into a blender with 4tbsp water. 3 Put the lemon zest and juice e in a mixing bowl. Add the nutritional yeast, miso o paste or soy sauce and coconut oil, and use a forrk to combine. Cut the presssed tofu into 1.5cm cube es. Tip into the bowl, toss to coat and leave to marinate for 25-30 mins. 4 Spread the tofu out on the baking tray and bake for 20-3 30 mins until golden, turniing halfway through. 5 Me eanwhile, heat the olive oil in n a large frying pan on medium. Add the cumin and stir for 30 secs. Add the onion; cook, stirring, for 5-7 mins. Add the
garlic and ginger; stir for 1 min. Add the garam masala, turmeric and chilli flakes; stir for 30 secs. Add the tomatoes; stir for 3-4 mins. Add the spinach; stir for 2 mins. Finally, add the cream alternative and stir for 2 mins, until the mixture has a creamy consistency. Make vegan meringues
For the perfect sweet treat this Valentine’s Day, whip up some aquafaba into a soft meringue mixture, just as you would with egg whites. Add colour or flavourings if you like, then bake in the oven, low and slow. Check the labels on any added ingredients to make sure they’re vegan, too.

Get mayo in an instant Use a handheld blender to mix neutral-flavoured oil with aquafaba for a quick mayonnaise-style dressing. Stir in your choice of herbs or spices for a tasty twist.
MAKES 8 READY IN 3 HRS, PLUS COOLING PRICE PER SERVING 14p
1 For the coulis, put 100g frozen raspberries, 40g caster sugar and 1tbsp water into a small pan. Bring to a simmer and cook for 10-12 mins until thick. Press through a sieve and discard the seeds. Allow to cool completely. 2 Preheat the oven to 120C/100C Fan/Gas ½. Line 2 large baking
trays with baking paper. 3 Put 100ml liquid from a shaken tin of chickpeas into a processor (or use a handheld mixer) and beat for 10-15 mins until it forms stiff peaks. 4 In a separate bowl, stir together 120g caster sugar, 1tsp cream of tartar and 2tsp cornflour. Beat into the meringue a spoonful at a time until incorporated and not grainy. 5 Put 4 dollops of the mixture onto each tray, and top each with 1-2tsp
of the coulis. Dip a cocktail stick or the end of a spoon into the coulis and swirl to make a marble effect. 6 Bake in the centre of the oven for 2-2½ hrs until the outside of the meringues is crisp. CHICKEN SAUSAGES WITH PEA AND POTATO CRUSH INGREDIENTS 1 pack Richmond Chicken Sausages 700g potatoes 150g frozen peas 50g butter 25g parmesan (optional) Salt and pepper to taste
METHOD 1. Preheat the grill to medium and cook the Richmond Chicken Sausages as per packet instructions. 2. Whilst the chicken sausages are cooking, chop the potatoes and place into a pan of boiling water and boil for 10 minutes. 3. Original Soft Cheese 50% Less Fat ● 1tsp vanilla extract ● 1tbsp icing sugar ● 1 medium egg ● 3tbsp Extra Special Blackcurrant Conserve ● Mint, to garnish (optional) 1 Divide the butter between 2 microwave-safe ramekins and heat on high for 20-30 secs until it melts. Swirl the ramekins to coat the insides with the butter, then stir the biscuit crumbs into the butter at the bottom of the ramekins. Press down with the back of a spoon. 2 In a bowl, beat together the soft cheese, vanilla and icing sugar until smooth; mix in the egg a little at a time. Spoon the mixture into the ramekins. 3 Microwave on a medium setting for 2 mins 30 secs to 3 mins, until just set. Chill in the freezer for
20 mins, or in the fridge for at least 1 hr. 4 To serve, heat the blackcurrant conserve in the microwave for 30 secs to soften. Run a round-bladed knife in between the inside of the ramekins and the cheesecakes and remove. Put on small plates and spoon over the warm jam topping. Garnish with mint leaves, if using. Energy

This issue, eight-year-old Irem shows us how to make one of her all-time favourite dishes, Sesame Salmon, served with vegetable rice. Irem loves this recipe because it’s full of delicious things and she especially loves making the sauce, which is slightly spicy but not too hot. You’ll often find her helping her mum make this dinner, which is perfect to serve for an easy midweek meal.

I’d stop deforestation Irem says: ‘When it comes to cooking, my gran has always inspired me. She grows all of her own veg in her garden, so I often pick what she needs for her recipes and then help her put it all together in the kitchen. She makes amazing curries. When I’m at home, I always help Mum and Dad cook food for me and my sister Mia, 15; this salmon dish, and lamb chops, are my favourites to make. I also like helping with recipes that use a whisk or a spatula – as they’re fun! We watch shows like Bake Off and Rick Stein together but I’m not sure if I want to be a chef when I grow up. I’ve still got a while to decide!’

Preheat the oven to 200C/180C Fan/Gas 6. In a shallow baking dish, mix together the honey,
sweet chilli sauce, soy sauce, grated ginger and sesame oil. Lay the skinned salmon fillets in the baking dish with the honey mixture, and carefully turn to coat them all over. Cover and set aside to marinate for 15 mins. Sprinkle the sesame seeds over the salmon and bake for 15 mins, until cooked through. Meanwhile, empty the micro rice into a pan. Open 3 individual bags of the Sunshine Mix frozen veg and weigh out 320g; save the rest for another time. Add the veg to the rice with 100ml water. Cover, bring to the boil and then simmer for 4-5 mins until hot. Drain. Divide the rice and veg mixture between 2 plates and top each with a salmon fillet to serve.

Beware of friends intent on sabotaging your new alcohol-free lifestyle, says soberista Kirstin Chaplin
ou did it! You survived Dry January. But what now? Whether you’ve decided to say goodbye to alcohol forever or just want to cut back, at some point you’ll find yourself face-to-face with your old drinking buddies. In my experience, this group of friends doesn’t like to let one of its former flock go easily, so be prepared for a couple of curve balls. It’s time to retox, they’ll say. Or: ‘It’s my birthday!’ When you’re committing to a drink-less lifestyle, there are a million and one reasons to have a beer, or a teeny-tiny vodka, so make sure your reasons for not indulging are stronger
than their arguments for! Be clear as to why you’re doing this. Whether it’s health, wealth, family or work, it’s no-one’s business but yours, so don’t be swayed or feel you have to over-explain your decision. be prepared When I gave up alcohol three years ago, I initially decided to do it for a year. This was an altogether more palatable option for me (and my friends) and, thankfully, I had their backing. Still, at first, I gave a wide swerve to situations where I’d be tempted to drink. You may do the same, and that’s OK. But when you choose to step back into the fray, it’s good to be prepared. In the face
of well-meaning friends leading me back into temptation, these are the four responses I used: ● ‘No thanks. I did Dry January and feel so good I’ve decided to carry on.’ ● ‘Actually, I’ve challenged myself to stay booze-free until July.’ ● ‘Drinking makes me anxious so I’m cutting back.’ (This one stops most people in their tracks.) ● ‘I don’t drink alcohol any more, but I would love a (insert mocktail of your choice here).’ It is hard but you only have to do it once. And you might be surprised by how many of your old tribe follow your lead! WIN THE WAR ON WASTE Shop smarter by avoiding excess packaging and reusing loose-produce bags at the supermarket. Waste educator Lindsay Miles shares her trolley tips
T
he key to this particular mission is to get organised before you head out. Reusable produce bags are a great way to avoid the thin plastic ones in the fruit and veg aisle (you can buy them made of mesh or cotton). If you’re buying from food service counters (the butcher, fishmonger, deli or bakery), bring reusable containers to put these items in. Look for unwrapped fruit and vegetables. Not an option? Choose the least amount of packaging. Bigger pack sizes use less packaging overall, but don’t buy so much that the food itself goes to waste.
pre-packaged, though some come in recyclable paper or cardboard. Choose tins and cans over plastic bottles, and glass jars rather than plastic ones. Aluminium and steel, along with glass, can be recycled indefinitely. This isn’t true of plastic (only 9% of plastic ever made has been recycled, and only 10% of that has been recycled more than once).
SMALL STEPS Where the only option is plastic, look for plastic numbers 1 and 2 (PET and HDPE) as these are more recyclable. Mixed materials (plastic, metal and paper smooshed up) are the hardest to recycle, so avoid where possible. Start small. Then move on to the next thing when you’re ready. All these changes add up over time.

I’d been married for 23 years and have had to learn how to think as a single woman and not automatically as part of a couple. Flirting was a skill I’d forgotten, too. I remember one date’s eyes glazing over as I waffled on about my boys not bringing their dirty cups down from their rooms – hardly sparkling conversattion! A friend to old me to ‘treat them all as practice dates’, and they were right. We speak constantly and meet up for platonic dates and days out where we often find ourselves chatting about the trials and tribulations of our romantic lives. He’s my go-to person if I meet someone new and want an opinion on them.

It’s nice to be appreciated again for being myself.’

Use visual cues Visual reminders prompt us to take action, which is why we write ‘to do’ and shopping lists. They’re also a good way of plotting our progress (think of a child with a sticker chart), which has a positive effect on our motivation. ‘Visual cues and measures of progress reinforce what we’re doing and give us a sense of immediate satisfaction,’ says James.
Create a Temptation Bundle Combining things you should be doing with things you want to do (a ‘Temptation Bundle’) can work. ‘Only binge-watch that boxset when tackling the ironing pile, or only allow yourself a pedicure if you deal with emails at the same time,’ says James. You’re more likely to do something if it has enjoyment attached to it. Enter into a commitment contract ‘If you know that you procrastinate by mindlessly playing games on your phone, delete the apps – or move them to somewhere less easy to access,’ says James. ‘Arranging to go to that exercise class with a friend also makes it harder to bail.’ Making yourself accountable can help overcome procrastination.

This month nordic walking Asda Magazine editor Hana Keirnan tried Nordic walking on Hampstead Heath, London. Here’s how she got on…
Instructor Martin gave me a pair of lightweight, adjustable poles, and showed me how to hold and plant them for maximum propulsion. You take your weight through the wrists, arms and core, and lean forward slightly – this engages all the major 76 | ASDA MAGAZINE
muscle groups. It’s important to co-ordinate swinging the poles with your stride so that they’re a help, not a hindrance; to begin with, my poles would skid sideways off the ground. Once I got the hang of it, though, I was able to walk much faster than normal: 30-40% faster, according to Martin! challenging terrain We stopped after 10 minutes to stretch, then set off again over more challenging terrain. Despite the chilly weather, I was starting to get pretty warm! I still had enough puff left to chat, though. There’s a lovely sociable aspect to this activity. The aim, I was told, is to “glide” and, once I stopped overthinking the technique and let my body find the rhythm,
I could really feel the magic start to happen. My body felt stronger I clocked up 11,000 steps over the hour and felt all my major muscle groups working. The next day my body felt tighter and stronger and, most Importantly, my back felt fine: loose and comfortable. I’m definitely going to find a Nordic walking group closer to home in Leeds and invest in a pair of poles, so I can do it regularly, It’s a brilliant low-impact, high-reward activity, and I loved how sociable it was, too. I grew up in the 80s, so I’ve seen a fair amount of double denim in my life. In the world of fashion, what goes around comes around, which is why now, in 2020, the dual denim trend is back. And this time, it’s cooler than ever. What makes double denim so wearable these days is there’s so much choice. Casual jackets and smart shirts; relaxed-fit jeans or more slim-cut styles; light denim, dark denim. It couldn’t be easier to pick a look that works for you. I can dress quite casually for the office, so jeans and trainers are my go-to work wardrobe. Adding a denim jacket in a contrasting shade of blue over a simple white T-shirt takes it up a notch and makes it feel a bit
more dressy. If I have an important interview or meeting, I might swap the trainers for brogues… Little styling tricks here and there can also elevate your all-over denim look. My favourite way to wear a denim jacket is with the top one or two buttons done up: you get a little glimpse of the top underneath and you can pop the collar up, yet it still feels relaxed. Double denim makes mornings easier. It takes all the hassle out of deciding what top or jacket to wear. A couple of pairs of jeans in two different shades of blue, a denim jacket, denim shirt, several neutral T-shirts and sweaters and a top in a vibrant colour make up the ultimate capsule wardrobe for work or play.

H e re, o n e wo m a n tells us how the right lingerie can help… Linda Vyas, 59, from Leicester, was diagnosed with breast cancer in 2015 and after a full-breast mastectomy, underwent reconstructive surgery. She explains how the post-surgery range from George has helped her regain her confidence.

eing diagnosed with breast cancer came as a terrible shock. I went for a regular mammogram and, within a week, was asked to attend a biopsy. I’ve come to terms with it all, but my message to other women is, don’t ignore that appointment: my mammogram saved my life, as I had no worrying symptoms whatsoever. Both chemotherapy and my medication make my skin more sensitive, so it’s really important that what I wear next to it is soft and non-irritating. The quality of the materials used in the George range is lovely: supportive and soft, with a choice of beautiful
colours. It’s ideal for everyday wear even if you haven’t had surgery! It was a fabulous idea for the George team to send their designs to people like me, who are living with the after-effects of cancer. I feel like they’ve taken on board exactly what I’ve asked for, which is so helpful for women in my position. Post-surgery, I’ve bought a lot of bras that are either too uncomfortable to wear or don’t fit properly, so it’s good to find pretty, feminine lingerie that helps me feel body confident again.’

‘W
hile working on the tills at Asda Toryglen for some years, I loved chatting to absolutely everyone, especially the children. And when one little girl came in six years ago, everything changed. I was doing my normal shift on a Sunday when Richard McShane and his one-year-old daughter Ellie, who has Down’s Syndrome, came to my till. I started making a fuss of her, like I normally do with the kids, but there was something very special about Ellie. I took one look at her and my heart just melted. Over the next few weeks and months, Ellie and her dad would come to my till every Sunday to pay for their shopping and we’d get chatting. Ellie was shy at first – she couldn’t really talk – but after a bit, her confidence grew and she started signing “thank you” and blowing me kisses when she left.

It wasn’t long before Ellie would ask for me whenever they were shopping in the store, and if I was on my break, one of my colleagues would come and find me and say, “Your wee pal is here.” 96 | ASDA MAGAZINE
Over the years, our friendship has grown and grown, and then one day, I said to her dad, “I’m going to adopt her as one of my honorary grandchildren.” And that’s what I’ve done.

Part of the family
I have 14 grandchildren of my own, and Ellie gets treated exactly the same as the rest of them. She gets birthday and Christmas presents from me, and when I go on holiday, I’ll bring her back a T-shirt, like I do for all the others. When Ellie comes in to see me at the shop now, she’ll tell me to get off my seat behind the till, so that she can sit down – because she’s the boss! Then we’ll scan her weekly shop together. She’ll also bring me in pictures and school photos, too, which never fail to make me cry. Her dad always jokes to Ellie and says, “Let’s see if we can make Izzy cry this week, shall we?” I always do.
I don’t know why I felt such an instant connection with Ellie, I just did. She’s got such a special spirit, and I love seeing her little face so much. I’m so thankful to her wonderful parents, Jane and Richard, who have allowed me to be a part of their family, and let Ellie become such a special part of mine.’

ou can probably remember your toddler’s worst tantrum ever. I can certainly remember my son Steven’s – it was because he wanted an Asda name badge! Steven loves the weekly shop at Asda and we’ve been going to the Dundee Milton store since he was a baby. When he was three, we were looking at Facebook and he saw someone with an Asda staff name badge and then threw the biggest tantrum ever because he wanted one, too. I explained that they were only for staff, but he cried for ages, and the next day, it was the first thing he mentioned! A while later, our local radio station, Tay FM, asked people to phone in and tell them about their child’s worst ever tantrum, so I phoned in and told them about the name badge. Little did I know, our local store’s community manager

Yvanne invited Steven for a VIP tour of the store with his grandad – he even went in the warehouse and wore a high-vis vest. Plus, he got his own name badge! ver since he was born, Joey, now two, has absolutely loved his Asda Up, Up and Away “blankie”. Whenever he bumped himself, he would cry for it – and he couldn’t go to sleep without it. So, when it fell apart, I went to my local store in Brighton to get another, but they’d sold out. I tried online but every single store was out of stock. We bought similar ones, but Joey would just cry for his “blankie”. It was so sad. When my mum suggested writing to Asda’s head office, I didn’t see the point as I knew they’d been
discontinued. So, I couldn’t believe it when Mum said she’d got a reply! One of the Asda colleagues in the Leeds store remembered seeing one – it was the last one! They sent it and didn’t even ask for payment. I was amazed. Do you have a regular fitness regime? I try to go to the gym three times a week. I meet with a friend and make it more of a social activity by going for a coffee. It also makes me less likely to skip it. How about self-care? I have a lovely spiritual healer and I’m more likely to spend a couple of hours with her than I am relaxing at home with a face mask. I come away recharged and feeling I can cope with whatever life brings. Must-haves in your fridge? I have two boys so there’s always pizza for when they are late back from school. Collect books It’s a lovely way to add character, and I like that they say something about you. Create a home hub If you have space, make the kitchen somewhere people can chat to you while you cook. Fill bowls with fruit I’m no good at keeping plants, but big bowls of fruit look good and the kids are more likely to help themselves. Add soft furnishings My boys feel happy curled up with comfy cushions and throws, so are less likely to sit in their bedrooms.

My house is pretty spotless as you walk in, but open a cupboard and everything falls out. If you didn’t know me, you’d think my life was well put together – just don’t open any doors… Is it hard keeping the house tidy with two boys and your dogs? You can’t move for trainers. Any mum will empathise because you say the same things again and again. Can you put your trainers away? Can you pick your coat up? But as I’m saying it, I’m doing it! I try to keep the dogs off the expensive sofa, which is the one they want to sit on, of course. At
