Price per serving

When we say ‘price per serving’ on our recipes, we mean the cost of the ingredients you will need to use to create the dish, divided by the number of people the recipe serves (for example ‘serves 4’). When you see the recipes at asdagoodliving.co.uk, you will be able to put the ingredients needed straight into your shopping basket – this will show the total cost of purchasing everything you need to make the recipe, not the ‘price per serving’; see above for this definition.

ROLLING BACK THE YEARS Founded in the early 1960s, Asda has always been committed to giving customers great value. From early beginnings as the UK’s first-ever food discounter to the return of our iconic ‘pocket tap’ in 2020, we’ve changed the way people shop forever. Here’s a trip down memory lane…

1960s

Genius ideas When the Asquiths heard a soup firm was offering money orders for returned labels, they bought 1,000 tins and redeemed the labels. Then they sold the soup in store and passed on the discount directly to customers. The food-discounting revolution had arrived – and we’ve been delivering great deals ever since! 8 | ASDA MAGAZINE

was for customers. A store with the quirky name Piggly Wiggly (which still exists today) blazed a trail for the modern supermarket. They returned home, bought the old Queens Theatre in Castleford, West Yorkshire, and

On 3 May 1965, the deal was sealed and a name was chosen. ASquith + DAiries = the birth of Asda!

1970s

The pocket tap By the 1970s we’d expanded beyond our northern roots, with more than 30 stores nationwide. Then, in 1977, we hit on the ad campaign that would cement us as a household name – the ‘Pocket Tap’. It saw customers filling the aisles and quoting, ‘That’s Asda Price!’, while cheekily patting their bottoms – and it’s still loved today.

opened the UK’s first self-service shop, followed by another soon afterwards. As the Asquiths’ venture went from strength to strength, Peter contacted Noel Stockdale at Associated Dairies, with a view to striking up a business partnership. On 3 May 1965, the deal was sealed and a name was chosen ASquith + DAiries = the birth of the Asda we know and love! The rest is history, but our mission to put our customers’ needs first and deliver great value continues to this day.

1980s

Happy 100th! In 1981, our 100th supermarket was opened, followed by a fresh look for all stores in 1984 and a new head office in Leeds in 1988. Own-brand groceries now offered even better value, and in 1989, we set style trends, too. We asked fashion guru George Davies to design a range of clothing – and our much-loved George brand was born.

Words: Samantha Wood

T

he old proverb ‘mighty oaks from little acorns grow’ describes our journey well. The family of Asda founders Peter and Fred Asquith owned a single butcher’s shop in the small town of Knottingley, West Yorkshire, dating back to the 1920s. But the two brothers were ambitious, with a keen eye for business, and looked further afield for inspiration. During a trip to the USA in 1958, the Asquiths saw for themselves how beneficial ‘under one roof’ shopping

health matters Ever since our first Asda Pharmacy opened in Harrogate in 1996, we’ve been passing on value to customers by offering free health checks and other services, including not-for-profit IVF medicines. That year also saw the start of Tickled Pink, our campaign to raise awareness and funds for breast cancer charities – more than £68 million so far.

In 1981 we opened our 100th supermarket, followed in 1984 by a fresh new look for all our stores

2000 and beyond

a winning streak The past two decades have seen us launch George Home, plus a 100-day satisfaction guarantee across most of our own-label clothes and homewares. Our commitment to value continued, and in 2017, at The Grocer Gold Awards, we were named the lowest-priced supermarket for the 20th year in a row.

● 1tbsp tomato purée ● ½tsp garlic granules ● 4 Asda Wholemeal Wraps ● 250g pack Grower’s Selection

White Mushrooms, sliced

● 200g pack Asda Wafer Thin

Cooked Ham, torn ● 125g pack Smart Price Mozzarella, drained and torn ● Rocket, to garnish (optional) STORE CUPBOARD ● 2tsp dried mixed herbs ● 2tbsp rapeseed oil 1 Preheat the oven to 200C/ 180C Fan/Gas 6. 2 For the sauce, pulse the chopped tomatoes, tomato purée, garlic granules and 1½tsp of the herbs in a blender until smooth. Don’t worry if it turns a lighter colour – it will soon go back to a vibrant red. 3 Put the wraps on a large baking tray, then brush a 2cm-wide border of the oil around the edges. This helps to stop them burning during cooking. 4 Fry the mushrooms in the remaining rapeseed oil over a high heat for 6-8 mins until browned. Don’t stir for the first 3 mins – then they’ll turn golden and be extra-flavoursome! 5 Put 3tbsp of the sauce in the centre of each wrap, then spread out with a spoon. Divide the mushrooms, ham and mozzarella between them to top. Sprinkle with the remaining herbs. 6 Pop in the oven for 8-10 mins – keep a careful eye on them as they cook very quickly! Season with fresh black pepper, garnish with the rocket, if using, then serve immediately. Energy

Vegan butternut squash risotto

‘This hearty dish of creamy rice and gold den butternut squash takes a bit of time and effort to create, but the end result is well worth it…’ SERVES 4 READY IN 40 MINS ● 1 butternut squash, peeled,

purée to the pan. Frying the purée at this stage this gives it a more mellow flavour – essential for a tasty risotto. 5 Add the rice to the pan and cook for 1 min to toast. 6 Reserve 1 ladleful of the stock and set aside. Add 1 ladleful to the pan, stirring continuously, and keep stirring until the rice absorbs all the liquid. Repeat, adding 1 ladleful of stock at a time, until it is all used. This process gives the best consistency – and it’s quite therapeutic! 7 Put half the roasted squash in a blender with the reserved stock, then blitz to a purée. Fold into the risotto, along with the grated courgette, then stir to combine. 8 When the rice is fully cooked, fold in the remaining butternut squash or scatter over the top if you prefer. Garnish with thyme leaves and season with freshly ground black pepper – and you’re good to go! Energy

Cheese graders Tina Beckett and Sue Twist are part of a busy team who make sure our range of Cheddars arrives in store in tip-top condition every day. With more than 30 years of dairy experience and know-how between them, they are just the people to recognise what makes a great cheese – especially

when their work can involve tasting 300 cheeses a day to make sure the Cheddar is developing perfectly. ‘The most satisfying part for us is when customers tell us how much they love the quality of the cheeses we’ve selected,’ Sue explains. So, who better to share their ultimate Cheddar recipes than these two experts…

Savoury cheese twirl scones

Cauli & broccoli cheese bake

‘Our mellow Medium Cheddar is ideal for adding a lovely rounded, cheesy flavour to these indulgent teatime favourites,’ says Tina. ‘A touch of yeast extract and cayenne adds an extra savouriness, too.’

For Tina, our full-bodied Mature Cheddar is just the thing to add deep richness to this side dish. She says: ‘The cheese and broccoli sauce has a hazelnut crumb which tastes even better with extra Cheddar added.’

Cheesy stuffed baked potatoes ‘The wonderful “bite” of our Extra Mature Cheddar takes jacket potatoes to the next level,’ explains Sue. ‘The spuds are mashed with the cheese, spring onions and mustard, then baked in the shells.’

waste not, want it…

No need for leftover fresh herbs to wilt. Make the most of their flavour and fragrance with these three simple solutions

32 | ASDAGOODLIVING.CO.UK

FOOD

1

Make herby ice cubes

TO FREEZE HERBS… 1 Remove any tough stems from the herbs and chop or tear large leaves, then pack loosely in an ice cube tray. 2 Pour over mild olive oil or melted butter to fill each ice cube compartment almost to the top. 3 Lay the tray flat in the freezer for at least 8 hrs, then transfer the frozen herb cubes to zip-seal freezer bags. Store in the freezer for up to 3 months.

Freeze leftover herbs in ice cube trays to make mini blocks that will add instant flavour to dishes. Try these: ● Parsley and garlic with melted butter Melt over steaks, or thaw and use in garlic bread. ● Basil, parsley and red chilli in mild olive oil Great melted over pasta. ● Thyme, rosemary and lemon zest in mild olive oil Try in a root veg traybake. ● Coriander and lime zest in mild olive oil Stir through chopped tomatoes and red onion for a zingy salsa.

3

Use in tabbouleh

Photographs: Maja Smend. Styling: Jenny Iggleden. Food styling: Lottie Covell

This Lebanese-inspired bulgur wheat salad, bursting with fresh flavours, is a great way to use up parsley and mint. Try it as a zingy side for grilled meats.

2

More for the freezer It’s not just leftover herbs that can be frozen… CHEESE Hard cheeses, such as Cheddar, freeze well. Grate or chop first – it’s easier to take a handful at a time from the freezer. Store for up to 6 months and thaw before using. EGGS Crack leftover eggs individually into a cupcake tin or large ice cube tray and cover before freezing. Keep frozen for up to 4 months; thaw before use. BANANAS Peel first, then freeze whole, mashed or sliced. Use within 3 months. GARLIC Freeze peeled cloves in freezer bags. Or blend to a paste with a splash of water or oil, then freeze in an ice cube tray. Use within 6 months. PASTA Cool cooked pasta, transfer to a freezer bag or container, freeze and use within 3 months. Thaw in the fridge before using. RICE Freeze cooked rice as soon as it’s cooled. Keep for up to 1 month. Thaw in the fridge and ensure it’s piping hot when reheated.

Add to chermoula

Use leftover coriander and parsley to make this North African-style dressing, with cumin, chilli and smoked paprika for extra punch. Delicious swirled into natural yogurt and served with warm, torn flatbreads.

NUTS Freeze leftover nuts in an airtight container or freezer bag and use within 12 months. Thaw before use, or use from frozen if adding to a recipe while cooking.

elcome to this month’s Kids’ Kitchen, where we feature recipes created for kids, by kids. This time, Nathaniel 14, shows us how to make one off his favourite dishes – creamy fish pie with a spicy twist. Nathaniel loves this recipe becau use it combines the savoury tastes he loves with a mild hit of curry, just to keep things interestting. Nathaniel has honed his cooking skills by helping his mum, Mignonne, in the kitchen every week. ‘F Friday night is curry night, and it’s always spectacular!’ he says.

ctriic! le e rs ca ll a e k a m d I’ Nathaniel says: ‘I’ve been cooking since I was 10. Mum says I’m always lurking around the kitchen! I get my inspiration from her as she’s a brilliant cook. She rustles up a mean curry but is also great at cakes. If I get half of mum’s skill in the kitchen, I’ll be delighted. I’m a big fan of Jamie Oliver, too. I love the energy and passion he puts into his food – he always gives it 100%. I like to get ideas from cookbooks and am happy to follow a recipe, although sometimes I prefer to make it up as I go along! For my dish, I combined two of my favourite things – fish pie and curry. I love the bit of heat and a kick the curry powder gives the dish, and it’s such an easy way to add flavour. ’ 58 | ASDA.COM/GROCERIES

I enjoyed this day so much! Food editor Gregor and the team were really supportive, which helped me feel more confident and has inspired me to keep cooking. I’d really like to be a chef when I’m older... but then again, I’d like to be a drummer, too. Maybe a drumming chef!’

ith summer drawing to a close and a welcome sense of normality returning after six strange months, the new season is full of promise. And if you’re sharpening your pencil ready to write a long to-do list, you’re not alone. According to a study*, September, October and November are the three most productive months for completing tasks. It’s likely a combination of that new-term feeling, plus a desire to get everything done before the festive season – but the main thing is, our good intentions get a welcome reboot. So, off you go!

THE LOWDOWN ON…

eating well ant to enjoy a varied and balanced diet, and reduce food waste, too? Taking a creative, resourceful and thoughtful approach to eating and nutrition can make all the difference. It’s also a great way to keep the cost of your food shop down, as planning your meals means fewer expensive impulse buys. The good news is, eating well on a budget can be easier than you may think. Here are my go-to tips – they haven’t failed me yet!

With some savvy and imaginative meal planning, you can enjoy a good diet, save money and keep food waste to a minimum, says registered nutritionist Rhiannon Lambert

Fill your freezer Although many of us tend to think of fresh produce as being higher in vitamins and minerals, frozen foods can be just as nourishing*†. In some cases, they may even contain more nutrients, as the produce is often quick-frozen within hours of being picked, locking in goodness*†. Frozen food is simple to store, lasts longer without going off, and is often cheaper. Plus, if you only thaw as much

as you need at a time, it can help you to cut down on waste, too. Remember to freeze your everyday leftovers as well, whether it’s a banana on the turn or that last slice of bread, to be used in a recipe another day.

Stock up on tinned veg Tinned veg usually costs just pennies, and benefits from a much longer shelf life than fresh produce. Beans and lentils are a

great choice – low in fat and calories, they’re usually a good source of fibre, contain vitamins and minerals, and also count towards your 5-a-day. They are good for bulking up meals, such as chilli con carne or curries, and may help to keep you fuller for longer. Tinned fruit, meanwhile, can be a useful alternative to fresh, and is great to serve as a quick dessert. Always opt for veg and fruit canned in water or its own juice, with no added sugar or salt.

Limit your food waste Each year, UK households waste 4.5 million tonnes of food, worth £14 billion and equivalent to 10 billion meals††. Shocked? We can all help to reduce this total by implementing some shopping savvy. Plan your ‘big shop’ well in advance, make a list, and don’t deviate from it. At home, note down what’s in the fridge along with the sell-by dates (stick a list on the door, if you need to). Also, try cooking with bits of veg you’d usually bin: cauliflower leaves are tasty roasted and used in pasta dishes, while broccoli stems can be chopped and added to stews or stir-fries. Shopping and eating smart is beneficial for both your bank balance and your health, and is easy when you know how! Like a glass of wine or beer? Soberista Kirstin Chaplin shares her favourite alcohol-free alternatives

or me, this time of year feels so invigorating. With the first hint of autumn in the air comes a sense of renewal, and the opportunity for a fresh start. I love it! Summers can often be boozy, with or without the trials of a pandemic, so September is a great montth to rein things in. The good news is, cuttin ng down needn’t mean missing out. With so many amazing no-alcohol alternatives

available, you can still enjoy a grown-up drink – minus the fuzzy head! cheers, beers! Let’s start with alcohol-free lager: Budweiser Zero, £3, (4 x 330ml; £2.27/L) is one of my favourites. It’s refreshing and less gassy than some other brands and doesn’t have the same chemical aftertaste. Alternatively, if you’re a fan of craft beer, do check out Brewdog Nanny State,

£4.50 (4 x 330ml; £3.41/L). It’s a rich, ruby-coloured ale that looks, smells and tastes just like the real thing – it’s authentically malty, with a great pour.

the wine list Finding a great alcohol-free wine is more of a challenge, but for me, McGuigan Zero Shiraz and McGuigan Zero Chardonnay, £4.50 each (75cl) are consistently good. The red is full of flavour with a lovely dryness and, while the white doesn’t have the heavy fruitiness of a full-alcohol bottle, it’s light, dry and easy to drink. If fizz is called for, let me make it easy for you! Try

Belle & Co Alcohol Free Sparkling Rosé, £3.50 (75cl) – a delicate blend of no-alcohol fermented grape juice with a hint of green tea. It’s sometthing special – lig ght, dry and deliciou usly moreish. Le ess waist? One final benefit: many no-alcohol alternatives are lower in calories than the standard versions (check the labels!) so it’s not just your liver that will thank yo ou for making the switch – you ur waistline will, too! The supermarket is a great place to start making sustainable swaps…

Buy loose fruit and veg to cut down on packaging waste. Otherwise, opt for goods with widely recyclable packaging, such as glass, cardboard and aluminium. Include veggie meals in your diet to help reduce greenhouse gas emissions. Meat and dairy are associated with much higher carbon emissions than plant-based food*. Shopping for food you’ll eat soon? Choose items nearing their use-by date. This reduces the risk of them needing to be binned by the store because they passed their use-by unsold. Wave goodbye to plastic bags and remember to pack reusable totes and refillable containers when you head in store. I always carry a reusable bag for impromptu food shopping. Work with nature: choose organic produce if you can, even if it’s just an item or two. This kind of farming prohibits synthetic fertilisers and restricts pesticides – great news for pollinators! Look out forr logos such as EU Organic and Soil Association on products.

THINGS YOU ONLY KNOW IF F… You live on your own For culture reporter Anna Hart, 36, living solo under lockdown has been unexpectedly rewarding You are your own best friend If you’d told me six months ago that I’d be living alone in my y flat in Margate during a lockdown, I would have panicked. My job takes me all over the world and I usually have a riich social life, which I love. However, recently, I’ve had to le earn how to be a good friend to myself, because I couldn’t re ely on others for support and entertainment. Instead, I kep pt well with yoga and beach walks, and I tapped back into o my old passions for jazz, French films and Victorian nov vels. And I realised that, in fact, I’m a pretty wonderfu ul companion! You can do that ‘impossible’ thing! During lockdown, I discovered d that I can assemble a flatpack ga arden bench. In the past, I would have given up after 20 minutes and asked someone more handy to help me out. This was partly laziness, but it was also frustration and mild embarrassment. I’ve learned that with time, patience, and necessity, I can tackle any old chore that needs doing g. Home is all about comfort A total detox from people-p pleasing has completely changed how I dress, because, for the first time, I’ve been dressing just for mysself. REASONS TO…

be cheerful

Positive psychology expert Vanessa King tells us why our happiness is worth taking seriously Feeling happier can have a positive effect on your physical health At a time when we are all more aware of our health, a happiness boost may help. Happier people tend to be healthier and more likely to take care of themselves. One study* found that people who were happier were less likely to catch a cold virus and, if they did, it didn’t last as long. Being happy is a skill we can learn We have more control over how we feel than we might think. Of course, many different things influence how happy we feel, not all of which are easy to change, but new science** shows that there are some simple ways to boost how we feel. And, as it turns out, feeling a sense of control is an important ingredient for happiness!

Happier people tend to help others There’s a connection between feeling happy and helping others. Doing someone a favour activates the feel-good ‘reward centre’ in our brain so, not only does the person we are helping benefit, so do we†! If you need cheering up, try doing someone else a kindness – it’s a win-win situation. Look for the positives Noticing life’s negatives is a survival trait we’ve evolved, but it can mean we overlook the positives. Training your brain to notice some good things each day has been shown to make us more flexible and creative, and better at problem solving. Feeling angry or sad at times is normal, so don’t ignore it, but have some tactics in your pocket that let you deal with it constructively.

Simple tips for boosting your mood… find the good stuff Each night, write down three things you were grateful for or enjoyed. Even bad days can have good moments. Then take time to

reflect on yourself and what you’re feeling. Take a walk Moving our bodies and getting daylight may help to lift our mood and clear our mind.

Ask for help If you have a problem or need assistance, asking others to help builds a connection and gives them the opportunity for a wellbeing boost, too!

They meant so much to me.’ Thanks for being an inspiration, Sam! And rest assured, we’ll keep on ringing in the community spirit.

How we’re helping to support the nation’s volunteers As Sam’s story shows, checking in with vulnerable people in the community has become more important than ever in recent months. That’s why the Asda Foundation donated £200,000 to the Royal Voluntary Service (RVS) to help fund its telephone befriending initiative. Asda Foundation manager Alexandra Preston says: ‘Community connections are a vital part of society. We’re proud that, with this donation, the RVS is able to provide a reassuring call from a friendly volunteer to those who need it the most.’

Welcome

home Discover how to create an inviting space this autumn using the new collections from George Home…

MEET OUR EXPERT Interior stylist Maxine Brady started out working on the style teams of UK home decor magazines including Home and House Beautiful. In her 20-year career, she has created stunning looks for decor shows, brands, TV and publications, as well as designing homes nationwide. Her work has also taken her around the world, to such places as New York, New Zealand, Australia and the Middle East. In 2015, she set up her multi-awardwinning blog We Love Home – welovehomeblog.com (@welovehomeblog) – where she shares DIY and styling tips from her own home. It’s safe to say Maxine is an expert on interior design and trends for your home. ‘Nothing sparks creativity like a new-season collection,’ says Maxine. ‘However, the key to a refresh is to keep things simple. You want your home to look beautiful and feel cosy but it also needs to work with your lifestyle and echo the time of year. In my (non-working) fireplace, for instance, I’ll swap summer’s vase of flowers for candles scented with autumnal orange and cinnamon. I also love cosy textures in the autumn, so I switch to a higher-tog duvet and weighty cotton cover and layer woven throws on my bed and sofa. I always embrace the new season and get excited just thinking about all the changes I can make in my home!’ Maxine is certainly enthusiastic about the new range from George Home. She says: ‘From a minimal Scandi look to opulent rose prints and velvet, there’s something to suit every taste.’ Here, she introduces the four collections and shares her styling tips and top picks for each look… 88 | GEORGE.COM

HOMES Cushions*, from £7. Floral velvet shade*, £25. Pink velvet stool with gold trim*, £25.

FRESH HISTORY I love this trend because… ‘The vintage rose patterns and rich velvet fabrics go brilliantly with the more modern touches, such as accents in metallic-gold tones. The colour palette is so warm and inviting, too. The mulberry, aubergine, teal and ochre tones give this range a touch of old-school glamour.’ How I’m styling it: ‘Be bold when it comes to layering on the textures. Look for velvet cushions with fringing, appliqué or embroidery to style your sofa. It’ll give your living room a touchy-feely look – so much so, you’ll look forward to snuggling up in it.’

My top picks

‘I love the detailing on this teal frayed floral cushion. The soft velvet finish and gold fringing g are such tactile, cosy textures – it’s beautiful to o lo ook at and relax into. And the aged pattern on n this rug makes it look both vintage and expensive. A great-v value buy.’ Traditional floral print cushion*,

COSY FOLK I love this trend because e… ‘In the colder months, I like to bring natural colours into my home, like burnt orange, rusty reds and midnight blues so I fee el connected to nature even on days when it’s too wet and wild to go out. These pieces, with a handcrafted d look in warm tones, feel very Scandi.’ How I’m styling it: ‘Provided your furniture has plain upholstery, why not get creative with your colour combina ations, adding in checks, tartans and chunky knits. Mix up your patterns like a pro.’

HOMES LIFE CURATED I love this trend because… ‘This collection takes inspiration from all around the globe, such as the Moroccan-style patterns on the rug and the tufted Aztec detailing on the grey footstool. If, like me, you love to travel, decorate your home with accessories to reflect your worldly adventures.’ How I’m styling it: ‘Calm grey tones are perfect for a pared-down autumn feel. LIft this look by adding soft greens to your space. This can be done with faux potted plants, art or a comfy throw – all of which will give relaxed vibes to your home.

SIMPLICITY I love this trend because… ‘This collection is perfect if you want to update your home but not stray too far from a neutral colour palette. Cushions, throws and rugs create texture and warmth. It’s cold outside – go crazy!’ How I’m styling it: ‘Create your own landscape by styling ceramics of different sizes next to each other to echo what you’d find in nature. The detailing is perfectly picked out on the Pink Mandala vase – place it next to an untextured piece so it’s not overshadowed.’

My top pickS

At Christmas, we organise a trolley full of toys and mince pies for the children’s ward at the hospital, and it’s always emotional – especially as it’s our customers who help to pull it all together. And the most challenging? Feeling like I’m struggling to give enough of my attention to both children. Sometimes I feel as if I’ve got to the end of the day and I’m just surviving rather than actually giving them the time they need. Describe an instant mum self-care trick from your book, Mindfulness For Mums… Rub your hands together really quickly and cup them over your eyes. It brings you a moment of warmth, time just for you. Are you into fitness? I exercise two or three times a week. If I miss a session, it affects how I feel mentally. I do strength training and yoga, and I also Iove to get outside for a run. 98 | ASDA MAGAZINE

tips for keeping calm at home

Pause for thought Remind yourself that though you can’t control the day’s events, you can control how you react. My space Create a calm corner in your home where you can take time out. Teddy bear breathing Lie down with your child, both place a teddy bear on your tummy and watch the teddies move as you breathe. It’s a great way to slow things down. Hand on heart Place one hand over your heart – this simple action alone is soothing. One-word wonder Take a deep breath in, then breathe out and say: ‘Today I choose patience’.

Right: Izzy and Harry with little Lola and Kit (far right). Below: Lola reading g in her mindfulness corner Pre-Covid, how did you and Harry make the most of any time you got to yourselves? If Granny was available to babysit, we tended to go for brunch or an afternoon at the cinema because by the evening we’re so tired! Does music feature in your daily lives? Music is always on in the house, especially at teatime. I love to play my violin to the kids because e they enjoy it however bad I sound! Harry and I met through music so it connects us as a family. I’d be lost without it. Are you close to the other McFly wives/mums? Yes – we’ve been around

each other for so long. We all understand what it’s like when our husbands have been away on tour, so we’ve developed a deep bond.

What’s the best thing about being a mum? Watching my children’s love for each other grow. I remember how I felt about my brothers when I was young and it’s really special.
