Long before joining Asda, like many people, I’d scoffed at reports about the amount of food thrown away by supermarkets. What I wasn’t aware of is that suppliers often send more than is needed, but by the time it’s sent back it’s out of date and goes to waste. I was really pleased that we’ve launched a new partnership with the charity FareShare to work with our suppliers and redirect this food to those who need it most. In the first year of the partnership, FareShare aims to redistribute 1,500 tonnes of surplus food sent to us – the equivalent of 3.6 million meals, saving the charities involved £4.5 million. To see how the partnership will make a difference, turn to page 67. August is a busy time for FareShare – the school holidays are when many children miss their regular school meals and go without. And we know our customers are struggling more than ever to manage. ‘Nothing beats the rich flavour of Victoria plums,’ says Richard Beach. Richard’s been growing plums on the 250-acre Mudwalls Farm in Warwickshire for the last 50 years, and has seen the company grow from producing plums for canning in the late 1960s, to becoming a busy pickyour-own farm in the 1970s. And for the last 30 years, the family farm has been supplying fresh Victoria plums to Asda. A FAMILY AFFAIR Richard’s favourite part of the work is walking around the orchards, checking the crops and comparing how they develop from one year to the next, he says. His grandson, Tom took an interest in the farm from a young age. ‘We live next door to the farm, so I like to look out my bedroom window onto the orchards,’ he says. ‘It’s great working with grandad – he’s shown me how to prune trees and drive the tractors. PLUM PRODUCER I’d like to continue working in agriculture – perhaps taking on the responsibility of the farm.’ WORKING LIFE AT THE FARM The season starts by cutting branches that could block the sunlight from getting to the fruit. The trees are then watered with the farm’s reservoir supply and bees are brought in to help pollination. The distinctive mottled red fruit is picked in August and it takes around three days from harvest to store delivery.

GREAT-TASTING PLUMS The main characteristic of English Victoria plums is their delicious sweet flavour, say the Beach family. They’re great eaten fresh from the punnet or stewed and served with fresh cream or ice cream. Mudwalls Farm hopes to supply Asda with at least 100 tonnes of the fruit this season. You’ll find the Victoria plums in stores from late August and throughout September.

STEWED PLUMS ● Stone 8-10 plums, then cut each fruit into four pieces. ● Cook in a pan with a little butter, a sprinkling of sugar, a squeeze of lemon juice and a splash of water. ● Cook gently for 10 minutes. Chill for up to a week. Serve on toast or with yogurt.

This season’s carrots are a great way to add colour and crunch to summer salads and stir-fries. Their natural sweetness also makes them delicious in soups, rostis and purées – and they’re brilliant roasted, too.

Courgettes are plentiful this time of year. To serve as a simple side, slice and sauté in a little butter. They’re also great in soups, flans, and pasta dishes.

Courgette fritters V Put 100g plain flour in a bowl and season. Whisk together 1 egg and 5tbsp milk, then gradually whisk into the flour to create a smooth batter. Grate 150g courgettes, squeeze out any excess moisture and stir into the batter. Fry spoonfuls of the mixture in a little oil for 2 minutes on each side until golden. Sprinkle with parsley and serve with a yogurt and mint dip. Serves 6 MED

blackberries Plump, juicy blackberries are in season right now, so why not try one of these delicious ideas? ● Add a handful to a cake mixture for a fruity sponge. ● Layer with cream, custard and jelly in a trifle. ● Cook with sliced apples to make a crumble or pie filling. ● Blitz into milk jellies. ● Stew with sugar to make a tangy sauce for ice cream.

Why not try… watermelon There’s nothing more refreshing than chilled watermelon on a hot summer’s day. Remove the rind and seeds, cube the flesh and add to fruit salads, blitz in smoothies or use in a fresh, cool salad with crumbled Feta.

3 ways with… mango

To prepare a mango, slice through lengthways as close as possible to the sides of the stone. Make criss-cross cuts in the flesh, but don’t cut into the skin. Turn the skin inside out and cut away the cubes of mango. Then cut any remaining flesh away from the stone, and cube.

Cube a ripe mango. Deseed ½ cucumber, cut into half moon shapes and add to the mango in a bowl. Stir in some cashew nuts and diced red chilli. Make a dressing of 3 parts oil to 1 part lemon juice and add a little honey. Drizzle over the salad before serving.

Cube a ripe mango and put in a food blender or liquidiser. Add a peeled and cubed banana and a little sugar (optional). Add some milk and blitz everything together. Blend in natural yogurt until the smoothie is the consistency you like.

Prepare the mango by cutting it into long fingers rather than cubes. Heat a little butter and sugar in a pan, then cook the mango until browned on all sides. Add a dash of rum and cook for a further 2-3 minutes. Serve with ice cream.

Cooks’ tips Sharpen your cookery skills and food know-how with our top hints

ESSENTIAL OILS ES Olive oil is one of the healthiest fats because it’s high in monounsaturated fats and low in saturated fat. Use it for cooking Mediterranean dishes and for salad dressings. Extra virgin olive oil is made from the first pressing of the olive, so it has the best flavour. It’s quite expensive, so rather than use it for cooking, buy in small bottles and save it for salad dressings and dipping into bread. Sunflower oil is economical and good value. It’s great for roasts, stir fries and frying. Save your waste Baguettes go stale after one day but leftovers make great garlic bread. Make deep cuts at 1.5cm intervals. Mix softened butter with crushed garlic and spread it in the cuts. Spread any remaining butter thinly on top. Wrap in foil and cook in the oven at 200C/180C Fan/Gas 6 for 10-15 minutes, opening the top of the foil for the last few minutes. Or cook from frozen for 15-20 minutes.

Honey rescue If your honey has gone cloudy and hard, revive it by standing the jar in hot water until it goes clear again. Or microwave for a few seconds on low – but take of the lid first. POACHED TO PERFECTION Perfect potatoes For great results, cook the variety of potato best suited to the dish: Roast potatoes, chips and baked potatoes Use King Edward and Maris Piper potatoes as once cooked, they’ll be crispy on the outside and fluffy on the inside. Mashed potatoes You need potatoes that are smooth and creamy – Desiree, Estima, King Edward and Maris Piper are best. Potato salad Use waxy potatoes, such as Charlotte or new potatoes.

Did you know? Basil and mint are best added at the end of cooking because they lose flavour when heated.

For poached eggs, you need the freshest eggs possible. Pour 3cm boiling water into a frying pan, add 1tsp vinegar and a pinch of salt and heat until gently simmering. Break one egg at a time into a cup. With a wooden spoon, swirl the water to make a ‘whirlpool’ and slide the egg into it. Cook for about 3-4 minutes or until the white is set and the yolk is still soft. When they’re cooked, carefully lift out on a fish slice and serve.

Overripe bananas make fantastic ice cream. Freeze the bananas in their skin. Then, once frozen, peel, cut into chunks and whizz for a few seconds in a processor with a spoonful of honey, jam or maple syrup. Eat straight away. AUGUST 2013 | ASDA.COM/MAGAZINE | 25

The key to getting the right flavour from garlic is all in the preparation. Crushing with a garlic press gives a strong flavour that’s great for Italian dishes. Slicing provides a more subtle taste, perfect for Asian recipes. 1 Cook the chicken in 1tbsp of the oil over a medium heat, stirring, for 3-4 minutes. Remove from the pan. Add another 1tbsp oil and the onion. Cook until soft. 2 Add the spices and cook over a low heat, stirring, for 2 minutes. Return the chicken to the pan and add the potato and 100ml water. Cover and simmer for 10 minutes or until the potato is tender, stirring frequently. 3 Tip into a bowl and add the sweetcorn and chutney. Mix together and leave to cool. 1 Trim any excess fat off the gammon and discard. Cut into 0.5cm pieces. Heat 1tsp oil in a large saucepan and fry the gammon until just cooked. Remove with a slotted spoon and set aside. 2 Heat the rest of the oil in the pan and cook the onion for 3-4 minutes until soft and golden, stirring often. Add the potatoes and cook for 2-3 minutes, stirring. 3 Add the chicken stock to the pan, bring to a simmer and cook, covered, for 5 minutes. Add the milk, bring back to a simmer

and cook, uncovered, for another 4-5 minutes until the potatoes are tender. 4 Stir in the sweetcorn and gammon, bring back to the boil and simmer very gently for another 5 minutes. Season with black pepper. 5 Stir in the cornflour mixture and simmer for 2 minutes. Discard the stalks from the parsley and chop the leaves. Stir half into the soup. Serve with bread, sprinkled with the rest of the parsley.

1 Preheat the oven to 200C/ 180C Fan/Gas 6. Line a baking tray with baking paper. Make up the instant mashed potato with 400ml boiling water, so that it’s slightly stiffer than usual. 2 Drain the tuna in a colander and press lightly to get rid of any excess water. Add the tuna to the mashed potato with the chives and cayenne. Mix well and leave to cool.

3 Make into fish shapes using your hands and carefully put on the baking tray. Lightly beat the egg with the melted butter and brush over the top and sides of the fishes. 4 Crush the cornflakes in a freezer bag and mix with the breadcrumbs. Pat onto the top and sides of the fish cakes. 5 Spray each fish cake with a squirt of olive oil and

cook for 10-15 minutes. 6 Add peas for eyes, and serve with asparagus, peas and sweetcorn. If you’d like to serve these fish cakes as we’ve done on our cover, arrange the asparagus with some dill sprigs and chives as ‘seaweed’, and add peas for bubbles. MED

Make-ahead lasagne This classic recipe makes two lasagnes, so you can eat one straight away or cook it from the fridge when you’re ready to eat. Remove and set aside. 2 Add the onion, carrots and celery to the pan and cook over a medium heat, stirring often, for 10 minutes or until the vegetables are softened. 3 Add the pork mince, turn the heat up and cook, stirring, until it browns. Tip into a bowl

and set aside. Add the steak mince to the pan and cook, stirring, until it browns. Return the pork and veg to the pan. 4 Add the bacon, tomatoes, stock cube, purée, oregano and 200ml water. Season with pepper. Heat until simmering, cover and simmer for 30 minutes, stirring often. 5 Preheat the oven to 190C/ 170C Fan/Gas 5. Melt the butter in a pan and stir in the flour. Cook over a low heat for 30 seconds, stirring. Gradually whisk in the milk. Heat until simmering, whisking all the time. Season with pepper.

6 Spread a third of the meat sauce in two 30cm x 21cm dishes. Put a lasagne sheet on top. Cut to fit. 7 Cover with another layer of meat sauce, then pasta. Repeat. Spread the white sauce on top and sprinkle on the cheese. Cook in the oven for 30-35 minutes, or refrigerate or freeze for later. 8 To cook from chilled, bake in the oven for 40-45 minutes; if frozen, defrost in the fridge overnight and cook as above.

large enough to hold the salmon fillets in one layer. Put in the fish, skin side down, and dot with 15g of the butter. Add 3tbsp water. Classic omelette Beat eggs with a dash of milk and seasoning. Heat a small nonstick pan. Melt a knob of butter and swirl it around to coat the pan. Pour in the eggs and cook until they start to set. Lift the edges with a spatula and let the liquid egg run underneath. Continue to lift the edges until just set but still slightly creamy on top. Glynis’ tips ● Use your leftover egg whites for meringues or freeze for up to 3 months. ● It’s essential to use full-fat condensed milk in this recipe or the mixture won’t thicken properly.

1 Preheat the oven to 160C/140C Fan/Gas 3. Lightly grease a 23cm loose-based flan tin with butter. Put the biscuits in a freezer bag and bash with a rolling pin to make crumbs. Melt the butter and stir in the crumbs and sugar. Transfer to the tin and use the back of a metal spoon to press the mixture firmly over the base and up the sides to an even thickness. Put on a baking tray and cook in the oven for 10 minutes. Allow to cool.

2 Separate the eggs and put the yolks in a large bowl – see the tip below for using up the leftover egg whites. Add the condensed milk, making sure you get all of it out of the can. Always use original full-fat sweetened condensed milk for this recipe and not the ‘light’ version – see tip below. Add the lime zest and whisk gently for about 2 minutes, using a hand or electric whisk, until everything is evenly combined.

Add the lime juice gradually, drizzling it in slowly and whisking gently all the time. While you’re whisking, the mixture will start to thicken as the lime juice reacts with the condensed milk. The mixture will be quite pale. If you want to give your pie filling a little more colour, add a few drops of green food colouring – but you can leave it out if you prefer.

Pour into the flan case, making sure you get all the mixture out with a spatula. Bake for 20 minutes or until the filling is just set. Leave to cool, then refrigerate. Before serving, whip the cream until it just holds its shape, taking care not to overwhip or let it get too stiff. Put the cream in a piping bag with a plain nozzle (or in a freezer bag with one corner cut off) and pipe small blobs around the edge of the pie. AUGUST 2013 | ASDA.COM/MAGAZINE | 49

50g carrots, ends removed 400g can Asda Butter Beans A handful of Asda Flat Leaf Parsley 50g extra mature Cheddar, grated 3 level tbsp Asda Onion Chutney 2 level tbsp tomato purée 50g wholemeal bread (preferably 2-3 days old) 4 wholemeal rolls, salad leaves, tomato ketchup, plus extra salad, to serve 1 Preheat the oven to 200C/ 180C Fan/Gas 6. Line a baking tray with baking paper and a plate with kitchen paper. Grate the carrots. 2 Squeeze in your hands to get rid of any excess moisture. Put on the paper-lined plate. 3 Drain and rinse the beans. Pat dry with kitchen paper. 4 Mash the beans in a large bowl with a potato masher. Cut the stalks off the parsley and discard. Chop the leaves. 5 Add to the beans with the carrot, cheese, chutney and tomato purée. 6 Break the bread into chunks and whizz in a processor or with a hand-held blender to make breadcrumbs. Add to the bowl and mix well. Season with black pepper. 7 With damp hands, shape into 4 patties about 1.5cm thick and put on the baking tray, leaving a gap between each one. Put in the fridge for 15-30 minutes, then cook in the oven for 15 minutes. 8 Halve the rolls. Put salad leaves on the bottom half, top with a burger, ketchup and other half. Serve with salad.

cucumber, and mix gently. 4 To make the dressing, whisk together the olive oil, vinegar, mustard, garlic (if using) and parsley. 5 Shell and quarter the eggs. Add to the salad and toss with the dressing before serving.

Put a chicken

breast between two sheets of clingfilm and gently bash with a rolling pin to flatten to 1.5cm. Repeat with the other breasts. 2 Mix the flour with the paprika. Mix the breadcrumbs with the Parmesan. Put the flour, breadcrumbs and eggs in three separate wide bowls. 3 Dip a chicken breast in flour to coat all over. Shake off the excess, then dip in the egg followed by the breadcrumbs, pressing down to make sure it’s evenly covered. Repeat with the other chicken breasts.

Put on a baking sheet and cook for 25-30 minutes, turning over halfway through. 4 Meanwhile, rinse the rice, add to a pan with 1.2 litres water and stir once. Crumble in the stock cube. Bring to the boil, cover and simmer for 7 minutes. Add the peas and sweetcorn, return to the boil and simmer for 5-7 minutes until the rice is cooked. Drain and serve with the chicken.

ith the economy still struggling, more people than ever are turning to food banks or getting fed at homeless shelters, day centres and breakfast clubs – which is why Asda has launched a new partnership with food redistribution charity FareShare. Surplus food from the chilled supply chain is passed on to FareShare, which in turn distributes it to charities it supports so they can create meals for those in need. Instead of sending any surplus food back to the manufacturer, we’re now redistributing it to FareShare, where it will be delivered to the hundreds of charities it supports to help people in need

WHERE DOES ASDA FIT IN? Although we’ve developed a scheme to reduce food waste in our supply chain, the nature of our business means there will inevitably be some surplus. Suppliers often send more stock than we’ve ordered – this food is all in date but at risk of going to waste. Not anymore. Our partnership with FareShare will ensure that this food, including dairy products, fruit and veg and chilled foods, goes to people who need it most. For FareShare, fresh and chilled produce is in great demand as it represents the most expensive part of a charity’s food bill. Our involvement in the scheme, which is backed by our fresh food suppliers, should see far more fresh produce being donated in the future.

Established in 2004, the charity believes that ‘no good food should be wasted’ and aims to rescue as much as possible of the 3 million tonnes of food that goes to waste every year in the UK**. FareShare redistributes the surplus food to 910 charities and community projects, where it is used to provide nutritious, home-made meals. Thanks to FareShare, we can cook them a meal – otherwise they’d just go hungry.’ Autism Initiatives UK receives food from FareShare every week, and as Sarah Moreton from the charity explains,

‘Working in partnership with FareShare has meant that we’ve been able to invest more money into our other enterprises that provide crucial services such as work experience, training and employment opportunities for our users. This has been an enormous help to us in making a very real difference to the lives of those people we support.’

Trussell Trust is a charity that provides emergency food to people in crisis, through food banks in the UK. With just a little basic first aid knowledge, you can help keep your family safe, wherever you are Minor accidents, scrapes and knocks are all part and parcel of family life. According to the British Red Cross, around three million people rush to hospital each year with injuries that could have been attended to with basic first aid knowledge. So if you’re prepared with a little know-how and a half-decent first aid kit, you should be able to deal with whatever crops up. Here’s our guide to the most common problems. BRUISING AND SWELLING Treatment Apply a cold compress to reduce swelling and pain – a bag of frozen peas or ice wrapped in a tea towel is ideal. If the child has had a blow to the head and they begin to feel sick, drowsy or their condition gets worse, call 999 because it may indicate a more serious injury. CUTS AND GRAZES Treatment Rinse the wound with cold water to clean away dirt, then pat dry and

ALLERGIES Symptoms Hay fever, which is caused by an allergic reaction to pollen, can result in long bouts of sneezing, watery eyes and itchy ears. Allergies to pets, and foods such as nuts, seafood and eggs can cause a rash, wheezing, stomach upset, swelling around the face or itching of the eyes and ears.

KEEP OUT OF SIGHT AND REACH OF CHILDREN. ALWAYS READ THE LABEL

Treatment An antihistamine syrup, which is easy for kids to swallow, should reduce the allergic reaction. If symptoms get worse, seek medical help.

BURNS AND SCALDS Treatment The faster you deal with burns, the less the damage. Cool under cold running water for at least 10 minutes to reduce pain, swelling and chances of scarring. Winning smile We all respond to a friendly smile, but did you know that looking after your teeth can have health benefits, too?

any of us would love to have pearly whites like television presenter Holly Willoughby or the cast of Glee. According to a study by Crest, having whiter teeth makes you more employable, creates a good first impression and makes you more attractive to the opposite sex. More importantly, looking after your teeth can help reduce the chance of developing serious health conditions, says British Dental Health Foundation advisor Karen Coates. ‘Poor oral health is associated with heart disease, stroke, diabetes and low birth weight. Oral health can improve with a good tooth care routine, so follow these tips below.’

How to care for your teeth USE FLUORIDE TOOTHPASTE You should brush teeth for two minutes twice a day with a fluoride toothpaste. Fluoride helps strengthen tooth enamel, making it more resistant to decay. After brushing, spit out excess toothpaste and leave the residual paste on your teeth for half an hour afterwards for full benefit. All Asda own-brand toothpastes contain fluoride. Or try Oral-B Pro-Expert Toothpaste, £3.47 (75ml) or 2 for £4*. CLEAN BETWEEN TEETH Brushing alone only cleans around 60 per cent of the tooth surface. Foods best for teeth It’s best to keep food or drink that contains sugar or acid to mealtimes as saliva can neutralise the plaque acids that are produced, preventing dental erosion. The saliva-neutralising process takes about an hour, but you can speed this up by using a fluoride mouth rinse, drinking a glass of water or chewing sugar-free gum. The British Dental Health Foundation suggests choosing snacks that are kind to teeth, such as vegetables, rice cakes, breadsticks and nuts. And according to oral health experts, eating foods such as celery, carrots and strawberries can help to polish teeth naturally – while strawberries also contain a natural bleaching agent that can help to reduce stains. Adding milk to tea and coffee helps minimise staining, too.

It’s no longer recommended that people have an automatic six month dental check-up. When you go to the dentist, they will check your oral health and suggest when you should return. It’s a good idea to take the little ones with you when you go for your check-ups as this helps them get used to the dental environment from a young age.
