Christmas is the time of year when we all go that

extra mile to make others happy, such as hunting for the perfect gift that will show someone how much they mean to you. Or making sure you’ve included everyone’s favourite foods in the festive spread. Perhaps you travel a long distance to get together with loved ones. We’ve got some lovely stories from people who’ve celebrated the spirit of the season in different ways – from working in an Ebola hospital, to having two Christmases in two days in two different countries to keep two families happy (Because It’s Christmas, p9). The thing they all have in common is that they’ve broken with tradition to do something special – and this year, that’s what I’ll be doing, too. There’ll be no turkey and fewer presents… and I won’t be with my nephews, which will break my heart. Instead, I’m heading to Australia with my in-laws. To be honest, I’m a bit nervous, but I’m going to embrace the experience because it matters to those I love and it’ll still be Christmas – just a little bit different this year.

Chrıstmas… Some of us embrace tradition during the festive season, while others do things a little differently. We asked a few people to share their stories…

SERVING AWAY FROM HOME

‘I was in Afghanistan with The Navy,’ says Christopher Moore ‘These days I celebrate Christmas with my two young children – I’m a single father, so the day is all about them. Yet in 2006 and 2007 I spent it very differently, working with colleagues in Afghanistan. I’m a reservist with The Navy, and I work as a Mine Warfare Officer, surveying international shipping lanes to make sure there are no sea mines. ‘It certainly was a very different Christmas – not really festive at all, as the job of supporting the troops never stops. But on Christmas evening we did manage a special meal, and senior officers gave out presents that had been donated from home. This included about 50 from the Asda store in Wigan where my mum worked – and receiving the gifts meant a lot to everyone. ‘It was an experience I’lI never forget. In 2006, I was based at the international headquarters with French, American, Canadian, Dutch and Portuguese workers who

Community spirit i i ‘Christmas 2014 was one of the big moments of my life,’ says Michelle Frost ‘I’m one of the Asda Community Life Champions, and last Christmas Day a group of us brought the festivities to a church hall full of 70 people who would otherwise be alone or homeless. The town’s mayor came, we had a three-course lunch and there were board games and bingo. The feedback has been fantastic – and we’re expecting to repeat the success this year.’

Christmas in two countries ‘I flew to the Netherlands every year for a second Christmas,’ says Carole Edrich ‘Between 1993 and 2004 I had two Christmases every year. I worked half the week in the Netherlands and the rest of the week in London. When it came to enjoying the festivities I wanted to be with all the people I loved, so I celebrated it in both places. ‘I’d fly into London City Airport from the Netherlands on Christmas Eve and head straight to my parents’ house for a very traditional English Christmas – turkey, silly games, the lot. ‘Then, the next day, I’d get up at 7am, dash to the airport and fly back to Rotterdam to go to my Dutch ‘family’ – my closest friend and her husband and daughter. It helps that the Dutch celebrate Christmas over two days, and that it’s not such a massive blowout as in England. You have lovely food, but the big build-up is really for the New Year. We’d do the same fun things as I did in England, though, like playing games and going for walks on the beach. ‘I really enjoyed my 11 years of two Christmas Days with my two families – the one I was born into and love, and the other I chose and love.’

HELPING EBOLA PATIENTS It was ‘business as usual’ – in an Ebola hospital, says Dr John Wright ‘I’m a consultant physician at Bradford Royal Infirmary, but for the last 25 years, I’ve also volunteered in a small rural district hospital in Swaziland. ‘So when the NHS put out a call for volunteers to help tackle the Ebola epidemic, I put my name down – and then, rather to my shock, I was called up straight away. ‘So by the time Christmas came around, I’d already been working for nearly six weeks in Moyamba in Sierra Leone, with the charity Doctors of the World. ‘Ebola is a terrible disease – not just for the patients, but for the whole community. Ordinary life had completely shut down in the region, including any opportunity for people to get together. Schools were closed and there were no weddings a or football matches. Christmas o – which is usually a big celebration in Sierra Leone – c had been cancelled, too. h ‘We were working with the local health service and the lo

Royal Army Medical Corps, building a hospital from scratch for the local community. It opened just before Christmas with about 24 patients – and about half of them died. Sadly, many of our Sierra Leonean medical colleagues had already died as well. ‘And yet you adapt to this incredibly stressful situation, and start taking each day as it comes. We slept in eight-person tents, working round the clock – all the while knowing that we, too, might develop the disease. ‘Christmas Day went by almost without anyone noticing, as we all kept working flat out. I did manage a quick phone conversation with my wife. After being away from home for five weeks it wasn’t easy – I really missed my family. But mostly, my co-workers and I were completely caught up in the feeling of working together to overcome a common enemy. ‘I’ll be going back at the end of November to help support my colleagues in Sierra Leone set up their health service again, after the collapse of the a country’s economy. When Christmas is your day job… ‘I spend the day not thinking about Christmas,’ says Lorraine Pryce ‘One of the things I love about 25 December is that it’s one of the few days when I don’t concentrate on Christmas! My job as Festive Buying Manager for Asda means that decorations and crackers are on my to-do list all year round. ‘We started planning for this Christmas in 2014, with a trip to New York looking for inspiration – which is how we came up with the quirky shopping trolley tree decoration (above). My work gathers momentum towards December and then, on Christmas Eve, I down tools and go to my mum’s. Of course, I’ll be back at my desk in the New Year, busy planning for Christmas 2016!’

GOING ON AN ADVENTURE ‘I slept under the stars in North Africa,’ says Meraid Griffin ‘I’ve done my share of Christmases with presents under the tree, and now I like to do something different. Of course, I love seeing my family but it doesn’t have to be at Christmas – that’s my time to go on holiday. ‘In fact, my partner Dan and I had our first-ever date on Christmas Day 2010, on a beach in the Algarve in Portugal. Since then, we’ve spent almost every Christmas

having a different adventure somewhere new and exciting. ‘The most spectacular has been cycling in Morocco. In 2013, we went off into the Sahara on a track that’s the ancient road to Timbuktu. On Christmas Eve, we headed through the scrubland desert to a place called Targannt Gorge. ‘There was a camel train in the distance, but otherwise we were alone, with the stars above us – it was very Christmassy, in its own way! ‘We woke in the morning under the shadow of palm trees, and said “Happy Christmas” to each other. ‘Last year, we were in the High Atlas mountains on Christmas Eve. We blew most of our cash on dinner, and on Christmas Day we cycled off with the equivalent of about £1.50 in our pockets. ‘We stopped at a roadside shop and asked for some food. The man made us cheesetriangle sandwiches and mint tea. That was Christmas dinner! ‘I’ve no idea exactly what I’ll be doing this year – but we’ll be in Cuba, with the bikes again. And I’m looking forward to it.’

Dressing Santa’s little helpers ‘We came up with a Christmas nappy,’ says Claire Luck ‘SCA, the company I work for, manufactures Asda’s Little Angels nappies – and this year the brand has a festive nappy*. But the thing that meant the most was the belief in us as normal people who’d had misfortunes, not just figures in a doorway. For me, it was a turning point. ‘I went back to stay in the night shelter, but by 6 January I’d been offered sheltered accommodation. These days I work with my local church community, and I help out at their day centre. ‘From that first year, I resolved to be part of Crisis, too. Nobody deserves to be homeless. But I know that people can be very resilient. And I think it makes a difference to ‘guests’ that I’ve had a similar experience.’ crisis.org.uk

THINKING OF OTHERS ‘I realised that one day can change lives,’ says Caroline Billington ‘It was Christmas Day 2007 that made me realise that, yes, it’s only one day – but it really can make a difference. ‘I volunteer as a minibus driver for Handybus, which collects people who can’t get about much. That Christmas I had to pick up some older ladies from a block of sheltered-housing flats, take them to lunch at the local community hall, and pick them up in the afternoon. ‘It sounds pretty simple, and it was. But what struck me was the difference when I collected them. Just a few hours before, these ladies had been strangers who’d lost all their previous neighbours when they moved into the block – and several of them

had been widowed as well. ‘Now they were chatting away like old friends. They’d found themselves a new community and were arranging to meet up again. ‘After that, I kept reading about how many people spend the big day alone. So I set up a charity called Community Christmas, encouraging volunteers to run lunches and events for older people. Making an effort for this one day can make such a difference for the rest of the year.’ communitychristmas.org.uk

‘I found my way out of homelessness,’ says Tony Finney ‘Three years ago, I spent Christmas Day as one of the guests (as we call them) of homeless charity Crisis. It turned my life around – and ever since then, I’ve volunteered there myself. ‘By Christmas 2012, my life had become very hard. Within a month of losing my job as a porter, I’d lost my home, too. You can only live on other people’s goodwill for so long, and I ended up sleeping on cardboard in Epping Forest, in east London, through a freezing winter. ‘I was surviving on handouts – and physically and mentally, I was in a bad way. When I found a night shelter, I had food and a bed – but from Christmas to New Year it closes down, so we were referred to Crisis. ‘I walked into the charity’s building in central London and was greeted by a

outside of the cup and add a pompom on each side. For the scarf, cut a long strip of felt (about 24cm), snip a fringe into each end and glue around the base of the cup, with the ends overlapping to one side. Wrap a rectangle of the brown card around the tube, with 1cm overlap at each end, then secure in place with

Flatten the bottom end so it looks like a big toothpaste tube. Staple to close it, then trim to neaten, if necessary. Glue on glitter to cover the staples. Make pipe cleaner antlers and glue to the tube. Add wiggly eyes and a red pompom nose. Cut a hole in each side of the tube and attach a length of red ribbon for a handle. Repeat with the other half of the tube to make another treat bag.

Using a sharp knife, cut along both sides of the backbone, then remove and set aside. Open the turkey out flat. Trim off any fat. 2 Turn the bird over. Press down on either side of the breast until the breastbone cracks. Flatten the bird and tuck the wing tips under. Lay on a rack set over a rimmed baking tray. Preheat the oven to 180C/160C Fan/Gas 4. 3 In a processor, blend the ingredients for the rub until it resembles pesto. Season well. 4 Pat the rub over the turkey. Roast for 50mins, until cooked. To test, pierce the thickest part

of the thigh with a skewer. If the juices run clear, it’s done. If they are slightly pink, return to the oven for 10mins, then test again. Repeat until done. Remove from the tray and wrap in foil to rest. Do not wash the tray. 5 Put the backbone and giblets (not the liver) in a pan with 1L water, boil, then simmer for 30mins. Strain. Keep the stock. Discard the bone and giblets. 6 For the gravy, sweat the onion, carrot and bay leaf in the oil in a pan over a low heat for 10mins. Discard the bay leaf. 7 Add a little hot stock to the tray. Use a non-metallic spatula to scrape up the flavour-packed bits stuck to the base. Add to the onion mixture with the flour and cook for 1min, stirring. Take off the heat and stir in all the stock. Bring to a boil, stir until thickened. Simmer for 5-10mins, stirring, until smooth. 8 Carve the turkey and serve with the gravy. Each 325g serving contains: ENERGY

Blanch your Brussels!

Don’t get steamed up – pre-cook fresh Brussels sprouts with this classic chef’s cheat. Rinse your sprouts and pick off any discoloured leaves, then drop into a pan of boiling water. Simmer for 4-6mins, depending on size, then drain and immediately plunge into ice-cold water – this halts the cooking process to stop them going soggy. Once cooled, put in a bowl, cover with clingfilm and store in the fridge. Then just reheat to serve on the day.

Call on Santa’s little helpers... Food preparation takes up a lot of time so let the kids have fun getting stuck into simple tasks, such as washing sprouts and wrapping pigs in blankets*. Meanwhile, the grown-ups can chop the veg.

Stuffing freezes well in a covered oven dish. Thaw first thing on Christmas Day then just pop in the oven to cook. Make sure it’s piping hot all the way through before serving.

Mix your Yorkshire pudding batter on Christmas Eve and store in the fridge. Or make and freeze puds up to a month ahead, to reheat on the day.

Part-prepare roasties up to one month in advance. Halve or quarter peeled floury potatoes (such as Maris Piper or King Edward), cover with cold water in a pan and bring to the boil. Simmer for 5mins, drain, then shake in the pan to roughen up the edges for lots of crispy bits. Toss in melted goose fat, cool, freeze on a lined baking tray, then transfer to a freezer bag. On the day, preheat the oven to 190C/170C Fan/Gas 5. Add 1tbsp melted goose fat to a roasting tin, coat the potatoes in it, and cook for 20mins, turning once. Increase the heat to 220C/ 200C Fan/Gas 7 and cook for 35-45mins, tossing occasionally, until crisp and golden.

Baste your bird For succulent meat, baste your turkey with pan juices every 30mins as it roasts, and also while it’s resting after coming out of the oven.

Make stock for your gravy in advance – simmer a roast chicken carcass for 4hrs, strain the liquid, cool, then freeze. Thaw in the fridge overnight before using. Or make stock the day before with the giblets (not the liver) that come with the turkey. You could do this in a slow cooker overnight. To make your gravy, top up the stock with the strained turkey pan juices after roasting. Gravy can be frozen for up to 2 months.

Butter it up To keep turkey meat juicy and enhance the flavour, rub butter under and over the skin before roasting. Starting at the cavity end, loosen the skin – carefully so it doesn’t tear – and use your hands to work softened butter into the meat under it. Then rub more on the outside of the bird.

To make your turkey easier to carve, remove the wishbone before cooking. Lift the skin from the neck so you can see the meat underneath. Put your finger in the cavity and feel for the V-shaped wishbone. Cut around it with a small knife then pull it out carefully, making sure not to damage the meat around it.

Prick fresh cranberries with a sharp knife and place in a sterilised bottle (see below). Add strips of lime zest, then fill up to the top with vodka. Seal the bottle and set aside to infuse for at least 5 days, shaking 2 or 3 times a day. TO STERILISE, preheat the oven to 140C/120C Fan/ Gas 1. Wash the bottle in hot, soapy water, then rinse well. Remove any rubber seals, then put in the oven on its side for 30mins.

Leave to cool for 1hr. 2 To make 2 Swiss roll sponges, follow steps 1 to 4 of the basic recipe on p71, with ingredients in the quantities listed above divided between 2 tins. 3 Whisk the white chocolate cream for 2-3mins, until it starts to thicken. 30mins. Whip again until glossy and fluffy but still spreadable. 4 Set aside half of the white chocolate cream. Spread the rest on the unrolled sponges. Crush the raspberries with the Chambord and spread over the cream on the sponges. 5 Cut each sponge in half lengthways. Roll up one half and stand on a plate, cut-side up. Wrap a second half around it, then repeat with the other halves. Spread the remaining chocolate cream over the top and sides of the cake. 6 Wrap loosely in clingfilm and chill until ready to serve. Remove the clingfilm, arrange candy canes around the side of the cake, then add a ribbon. Crush another candy cane and sprinkle on top. Top with cake sparklers. Remove the ribbon and sparklers to serve.

1 Put the cream in a heavybottomed pan and heat until boiling. Take off the heat and add the white chocolate. Leave for 5mins, then stir until smooth. Leave to cool for 1hr. 2 Preheat the oven to 160C/ 140C Fan/Gas 3. Put the mints in a thick plastic bag, then put this bag inside two more bags to reinforce it against splitting. Using a rolling-pin handle, bash the mints until they are finely crushed. 3 Spread a quarter of the crushed mints over a nonstick baking sheet, and cook for 8-10mins, until they have melted and spread out. Remove from the oven and leave to cool. Break into shards and set aside. Repeat 3 more times with the rest of the crushed mints. 4 To make 2 Swiss roll sponges, follow steps 1 to 4 of the basic recipe on p71, with ingredients in the quantities listed above divided between 2 tins. 5 Whisk the cooled white chocolate cream for 2-3mins, until it starts to thicken. Chill in the fridge for 30mins, then whip again until it’s glossy

and fluffy but still spreadable. 6 Set aside two-thirds of the white chocolate cream. Spread the rest on the unrolled sponges. Crush the raspberries with a fork and spread over the cream. 7 Cut each sponge in half lengthways. Roll up one half and stand on a serving plate, cut-side up. Wrap a second half around the first section, then repeat with the third half. 8 Roll the remaining half up separately and sit it on top of the larger cake. Push a wooden skewer down through the cakes to secure the top cake onto the lower one. 9 Spread the remaining white chocolate cream over the cake, to look like jagged snow peaks. Wrap very loosely in clingfilm and chill until ready to serve. Remove the clingfilm and skewer. Push the mint shards into the white chocolate-cream icing to decorate.

250g shortbread biscuits, crushed 55g melted butter 150g butter 150g dark brown soft sugar 397g CARNATION® Condensed Milk 200g dark chocolate 55g Nestlé Milkybar

STEP 1. Combine the crushed biscuits and the melted butter, press into the tin. Chill for 20 mins. STEP 2. Heat the sugar and remaining butter in a non-stick pan gently, stirring, until melted. Add the CARNATION® Condensed Milk and bring to a rapid boil, stirring continuously. Cook for a minute or so or until the filling has thickened. Pour the caramel over the base. Cool, then chill until set. STEP 3. Melt the chocolate in separate bowls. Pour the dark chocolate over the caramel and then add spoonfuls of the melted Milkybar. Swirl together with a spoon for a marbled effect. STEP 4. Chill until set. The festive season in my world is fun and a little adventurous. I rarely know what I’m doing on New Year’s Eve until a few days before, but I have a tried-and-tested formula. Invite friends round and get them to each bring a dish they’re good at making. I cook pots of hearty food, like Indonesian curry or chicken pie, and have sausage rolls ready-made in the fridge that can be popped in the oven when guests are flagging. This recipe for Chocolate & Coconut Pie will be a winner whether you’re the host or bringing a plate.

Chocolate & coconut pie V SERVES 16 READY IN 1HR, PLUS CHILLING PRICE PER SERVING 53p 350g digestive biscuits 120g butter, melted 55g desiccated coconut 200g milk chocolate 200g dark chocolate 250ml double cream 180ml milk 100g soft light brown sugar 4 egg yolks 150ml coconut liqueur, such as Malibu 40g cornflour 220g caster sugar 4 egg whites tsp cream of tartar

1 Place the biscuits, butter and 25g of the coconut in a food processor and blitz to crumbs. Press into a 23cm fluted tart tin, making sure the crumbs cover the base and sides. Chill. 2 Break all the chocolate into pieces. Put in a pan with the cream, milk and brown sugar. Slowly heat over a low heat, stirring, until melted and thick. 3 In a large bowl, beat the egg yolks with the liqueur and cornflour. Set over a pan of gently simmering water, making sure the water doesn’t touch the bowl. Pour the chocolate mixture into the bowl, then stir for 5mins or until thick. Take off the heat and leave to cool for 10mins, stirring continuously. 4 Pour into the biscuit case. Sprinkle with the remaining

coconut and chill for at least 1hr. 5 Put the caster sugar and 60ml water in a pan. Boil for 5mins (don’t stir) until the mixture is a light caramel colour. Take off the heat and leave to cool for 3mins. 6 Meanwhile, whisk the egg whites with the cream of tartar until they form stiff peaks. Slowly drizzle the caramel into the egg whites while beating, then beat until shiny. 7 Preheat the oven to 220C/ 200C Fan/Gas 7. Spoon the meringue over the chocolate filling. On New Year’s Eve, I love watching the fireworks in Marlow from the Compleat Angler hotel, overlooking the River Thames. If you’re hosting a party, try to prepare loads beforehand, and stick to dishes that just need reheating or slow-cooking. These Mexican-inspired Crispy Cheesy Tostadas are brilliant snacks to serve to a party crowd because the spicy chilli mix can be made in advance and reheated on the night. You don’t have to serve them on plates, either – just stack them up like a pile of poppadoms in the middle of a table, then let everyone get stuck in.

Crispy cheesy tostadas SERVES 8 READY IN 55MINS PRICE PER SERVING 90p 500g minced pork 8 ripe plum tomatoes 2tsp cumin seeds 2tsp coriander seeds tsp smoked paprika 3 green chillies, diced 4 pickled green chillies or pickled hot peppers, sliced 8 flour tortillas 250g strong Cheddar, grated 1 Heat a non-stick frying pan over a medium heat. Add the pork and dry-fry for 20-25mins, stirring often, until the mince is crisp. Drain in a colander to remove any excess fat. Wipe out the pan with kitchen roll.

2 Meanwhile, bring a pan of water to the boil and have a bowl of iced water ready. Put the tomatoes in the boiling water for 10-15secs, then plunge into iced water. Peel, quarter, deseed and dice the tomatoes. 3 Preheat the oven to 160C/ 140C Fan/Gas 3. Put the cumin and coriander seeds in the frying pan and cook for a few minutes, rattling the pan, until they’re fragrant (be careful not to burn them). Remove and cool slightly. Using a spice grinder or pestle and mortar, grind the seeds to a powder. 4 Return the spices to the pan, with the paprika and tsp black pepper, and heat gently for 1min. Stir in the mince and fresh chillies. Cook for 2mins, then season to taste. Stir in

the pickled chillies and tomatoes and cook very gently, stirring occasionally, for 10mins until thickened. 5 Meanwhile, lay the tortillas on baking sheets and bake for 8-10mins until lightly browned. Remove from the oven and increase the temperature to 220C/200C Fan/Gas 7. 6 Spread the pork mixture over the tortillas and scatter the Cheddar on top. New Year’s Eve party food should include three or four exciting but simple meat and fish dishes; some piquant sauces such as rouille, aioli and spicy tomato; and two or three filling salads. Ideally, I’d serve a whole strip of beef sirloin charred on the barbecue and finished to rare in the oven, some racks of lamb, a whole poached salmon and marinated chicken. It’s a good idea to ask someone to help with the food, and make sure you don’t run out – there are always a few guests with eyes bigger than their bellies! Salads should be full of flavour, and this one is just that – with spring onions,

pomegranate seeds, parsley, mint and pistachios. I make it with freekeh – green wheat harvested while the grains are soft, then sundried. It’s popular in North Africa and the Middle East. Don’t worry if you don't have it, though, as pearl barley also works well.

SERVES 12 READY IN 40MINS, PLUS COOLING PRICE PER SERVING 32p 400g freekeh or pearl barley 10tbsp olive oil Seeds from 2 pomegranates 8 spring onions, chopped 2 handfuls roughly chopped flat-leaf parsley 2 handfuls roughly chopped mint

3tbsp pomegranate molasses or maple syrup 4tbsp crushed pistachios 1 Put the freekeh and 2L water in a pan with 2tsp salt and 2tbsp of the oil. Bring to the boil, then simmer for 15mins until just tender. Or, if you're using pearl barley, simply cook according to the instructions on the pack. Drain and cool. 2 Mix with the pomegranate seeds, onions and herbs, then season. Whisk the remaining oil and molasses. Season to taste. Add to the salad and mix gently. Top with the pistachios. I enjoy ringing in the New Year with the Cinnamon team [Vivek is Executive Chef of the three London-based restaurants] and their families, who join us for the midnight revelry. But if I’m ever at home for New Year’s Eve, I like to invite friends and keep the dishes simple, focusing mostly on finger food. My party-food mantra is anything will do as long as it’s low on effort and high on impact. After all, you don’t want to have to spend New Year’s Day cleaning and tidying up. I remember making hundreds of ‘chicken lollipops’ for the coffee shop at The Oberoi New Delhi hotel when I lived in India – they were coated in a spiced gram-flour batter and deep-fried. These Sticky Chicken Wings are oven-cooked with a marinade, and taste just as delicious.

Sticky chicken wings

SERVES 8 READY IN 50MINS, PLUS MARINATING PRICE PER SERVING 95p 2kg chicken wings, skin on 100g coriander, chopped For the marinade 2tbsp black peppercorns, cracked coarsely 8 cloves garlic, finely chopped 1 tbsp grain mustard 4 lemons, juice only 6tbsp honey For the kachumber salad 1 medium cucumber, deseeded and finely diced 1 carrot, peeled and finely diced

2 medium tomatoes, deseeded and finely diced 2 red onions, finely diced 1 green chilli, finely chopped 2tsp chopped coriander For the salad dressing Juice of 2 lemons 1tsp sugar 1 Mix the marinade ingredients together in a large bowl. Add the chicken wings, mix well and set aside for at least 1hr, or overnight if possible. 2 Preheat the oven to 200C/ 180C Fan/Gas 6. Line a large baking tray with foil. 3 Put the salad ingredients in a large bowl. Mix together the ingredients for the

dressing with 2tsp salt and gently fold into the salad. 4 Put the chicken wings on the baking tray and drizzle over half of the marinade. Sprinkle with 2tsp sea salt. Cook in the oven for about 35-40mins, turning the wings halfway through, until they become sticky and coated all over. FESTIVE COCKTAILS Add 1 shot rum and 1 shot brandy. Top up with hot milk. Stir well until frothy. Add a cinnamon stick stirrer – sprinkle over a little grated nutmeg, if you like. GIN The clean, herbal flavour of gin makes it a great base for long, refreshing drinks, such as our Snow Queen – blue curacao adds a zesty tang and subtle colour to this take on a simple classic. Gin also goes brilliantly with sweet or exotic ingredients – we used a peppermint candy cane, but you could try one in a fruity or spicy flavour, such as apple or cinnamon, instead.

WHISKY Whisky is great for creating warming drinks, and its strong flavour works well with sweet ingredients, such as honey. Put a few ice cubes in a cocktail shaker. Add 2 parts rum, 2 parts full-fat coconut milk, 1 part sweetened condensed milk, 1tsp almond extract, tsp vanilla extract, a pinch of nutmeg and a couple of drops of green food colouring. Shake until frothy. Chill for at least 3hrs. Moisten the rim of a cocktail glass with rum and dip into gingerbread biscuit crumbs. Pour the cocktail into the glass and serve sprinkled with chopped pistachio nuts.

Mix 3 parts Asda Green Ginger Wine, chilled, to 1 part whisky, then add a dash of Cointreau. Pour into a tumbler. Serve with a slice of clementine.

Tom & Jerry winter warmer* Separate 1 egg and beat the white until stiff. Mix together the yolk and 1tbsp caster sugar, then stir in a small pinch each of cinnamon, allspice and ground cloves, plus a few drops vanilla extract. Fold the beaten egg whites into the spiced yolk mixture. Spoon into an Irish coffee glass or mug.

Candy cane martini Dissolve a crushed candy cane in 1 part vermouth and 4 parts gin for 1hr. Shake with ice in a cocktail shaker. Moisten the rim of a chilled cocktail glass and dip into more crushed candy cane. Strain the cocktail into the glass and serve with a whole candy cane as a stirrer.

Snow Queen gin & lemonade Mix equal parts of lemonade and gin in a jug, then add a dash of blue curacao. Put ice cubes in a tall glass, pour over the cocktail and garnish with a twist of orange peel.

Christmas cake spice Manhattan Put ice cubes in a cocktail shaker. Add 2 parts whisky, 1 part vermouth, a splash of Angostura Bitters and a pinch each of cinnamon, nutmeg and allspice. Shake and strain into a cocktail glass.

Put a few ice cubes in a cocktail shaker. Add 1 part vodka, 1 part limoncello, 1 part fresh lime juice and 2 parts cranberry juice. Shake, then strain into a glass. Add a few pomegranate seeds. Wash and dry a stem of redcurrants. Brush with egg white, then sprinkle with caster sugar for a frosted effect. Use to decorate the glass.

White Christmas cream Put ice cubes in a cocktail shaker. Pour over 1 part vodka, 2 parts Amaretto and 1 part double cream. Shake well. Moisten the rim of a chilled cocktail glass and dip into desiccated coconut. Strain the cocktail into the glass. Sprinkle over a little grated nutmeg.
