Letter of the month

Dear Asda

I really love the articles and recipes in your magazine. It’s kick-started my interest in cooking and baking, which I find enjoyable and therapeutic, and it’s helped me gain the confidence to experiment! I like how the recipes include so many different vegetables to maintain a healthy diet, and all the ingredients are easy to buy in my local store (Skelmersdale). Each month, there are great tips and information about products, and I look forward to sitting down with a cup of tea to have a good read – and plan my next cooking challenge! Dawn Tyrer, Lancashire

bounced BACK!

SOMETIMES THE WORST OF TIMES CAN GIVE YOU THE PUSH YOU NEED TO DO SOMETHING BRILLIANT, AS THESE THREE READERS FOUND OUT

‘WE HAD TO LEAVE EVERYTHING BEHIND AND START AGAIN’ Debbie Keeble, 50, runs Heck! Food with her husband Andrew, 50, and their four children. They live in Bedale, North Yorkshire

T

he first sausages we ever made are hard to forget. It was the late ’90s and, as farmers with four children under five, we needed some extra income. We raised pigs, so hit on the idea of making ‘posh’ sausages, and stayed up one night experimenting at our kitchen table. Unfortunately, the results were horrible! We’d used dried herbs for flavour, but the sausages tasted bland. So we then tried adding fresh ingredients – leeks, apples, sun-dried tomatoes, basil and garlic. We also used pork shoulder, so they were leaner. Our tasty sausages were an instant hit and, by 2005, we had an annual turnover of £2million. But I was worried. The bigger we became, the further we had to fall and I felt we needed someone to help our business keep growing. So, we joined forces with another, larger sausage supplier. It was a good move, but in 2006, they were bought up by a huge Dutch company and we missed making our quality sausages in small batches, with a personal touch. It was a very

tough decision to make, but we decided to stick to our values and, six years later, walked away with a payout. We could have retired early with the money. But we loved what we did – and we were good at it. Our children had grown up with our sausages and we were determined to work together to create a family business we could eventually pass on to them. We had nothing – not a single piece of equipment – but we thought, ‘What the heck!’ and ploughed everything we had into starting again from scratch. This time, thanks to our years of experience, we did several things

,

,

We wanted to create a family business we could pass on to our children

differently. We weren’t afraid to shake things up by introducing other flavours such as chorizo, bright packaging and new products such as chicken sausages and square breakfast versions that fit neatly between two slices of toast. Having the children on board gave us fresh ideas – such as using social media to spread the word – and it’s also brought our family closer together. That was 18 months ago, and now our Heck sausages are sold in Asda supermarkets nationwide, as well as through our website. We currently have a turnover of £8million and we’ve set our sights even higher. We’re no longer afraid to make mistakes, because that’s how we learn. Our experience has taught us that you have to be resilient and proud of what you do if you want to succeed. Most importantly, we’ve learned no-one else has a magic key they can give you – that’s something you have to find for yourself.’ heckfood.co.uk 12 | GOOD LIVING

‘I HAD TO GIVE UP MY JOB – SO I CREATED A NEW ONE!’

B

efore having kids, my job was everything to me. I worked for a college, helping graduates find employment. It was rewarding and busy, and when I had my first child, Daniel, in 2009, I naively thought I’d come back full time and my baby would fit around my working life. But after a year’s maternity leave, with this amazing little person in my life, I no longer wanted to work flat out. I asked to work part time but my bosses explained mine was a full-time role. Panicked, and not wanting a fight, I agreed to leave – but I had no idea what to do next. I had so much to offer, yet it seemed no one wanted part-time workers. Talking with my husband,

Peter, it seemed my only choice was to work full time or not at all. With one income, we’d have to downsize drastically. It was scary and daunting. I couldn’t believe I was the only person to face this dilemma. Noting the gap in the market, I wondered whether I could set up a business helping other mums get back into work – and be my own boss, too. Interestingly, when I went out and researched the idea, employers told me that, more than qualifications, they needed reliable staff who were good negotiators, could handle a budget and work well with others – all skills that parents develop naturally. And I believe mums put in twice the effort. In 2013, a few months after I had my daughter, Anna-Rose, I launched my

,

company Successful Mums. I now run workshops and one-to-one sessions, helping with CVs, work experience and confidence building. Some mums have had a long time off and feel no-one will want them because they’re ‘just a mum’. My aim is to help 1,000 women by the end of 2020. Thankfully, bosses are waking up to the value of parttimers and the brilliant skills that parents have. I hope that, one day, no-one has to experience the dilemma I faced after finishing maternity leave. I’ve found a good balance. Peter and I both now work part-time so we get to enjoy watching our children grow up. If one of the kids is poorly, or there’s a school sports day, we can be there. I’ve realised success doesn’t mean running yourself into the ground; it means doing what’s right for you and your family. successfulmums.co.uk

14 | GOOD LIVING

2011, when the lease came up on a shop in my hometown, I decided to go for it. The next two months were exciting but exhausting. Every weekend and evenings after work – with the help of friends and my fiancé, Joe – I was up to my elbows in dust and paint. Using all our savings, we did everything from papering walls to fitting sinks

and buying styling products. At the opening party in July, I was so proud of what we’d achieved. It seemed as if the entire neighbourhood came to wish us well. But just 24 hours later, my world came crashing down. Arriving at the salon on Monday I knew instantly something was wrong. The letterbox looked charred and, as I opened the front door, I was hit by a cloud of thick black smoke. The front area of the salon had burned and the rest was melted to a sticky mess, covered in layers of soot that clung to my clothes. The shock and smell made me physically sick – everything I’d worked for had been destroyed. The rest of that day is a horrific blur. The police discovered someone – we never found out who or why – had poured a solvent, like lighter fluid, through the letterbox and set fire to it. That night, I was in tears as I talked to Joe about what to do. We’d put everything we had into the salon, and now it was gone. I was tempted to take the easy route and walk away, but then I got angry – and determined. We’d worked so hard, and giving up would let the arsonists win. So I vowed to keep going. For the next three months we worked non-stop. While the walls could be washed and repainted, everything else, from the furniture to the skirting boards, had to be replaced. It was a dirty and difficult job, but thankfully my contents insurance covered a lot. I was overwhelmed by the kindness and support we received, too. A nearby salon even let me see clients there while mine was out of action. Finally, in October, the salon reopened. People might think I was mad trying again, but it was the right decision as I’ve loved every minute there since. The salon may be small but it’s always busy and we have many regular clients who’ve become friends. Four years on, I still get a buzz in the morning when I go to work – and the feeling is even sweeter knowing how much I overcame. Millie’s Hair Design, 01274 577 131

the family healthy generally falls to mums. I never fully appreciated my mother’s home-cooking until I had my own family. Gone were the days when my husband, Jonathan, 35, could order takeaways three nights a week… I needed food that would nourish my children – and I’m no Nigella! With our first child, Emilia, three, I was adamant that

nothing should touch her lips unless it was homemade from only the finest organic ingredients. Jonathan almost had a heart attack when he saw the weekly food bill almost triple. But, armed with a new blender and lots of mini plastic containers, I was determined to be Supermummy. Fast forward a few days, and all the organic fruit and vegetables I’d bought had gone off. I’d burned the apples while stewing them, and the root vegetable puree I had slaved over for an entire day was rejected with a simple flick of Emilia’s spoon. I was frazzled and felt like a failure. Things were not going according to plan. With baby number two, Eduardo, now 9 months, I was a lot more relaxed. We mums like to beat ourselves up about a lot of things, including how we feed our family. Cooking for a family is never easy. What helps me the most is sticking with a few simple recipes that are family favourites, then varying them from week to week. I may not be the perfect cook, but my children are happy and fed nutritious meals the majority of the week – with the odd takeaway pizza here and there!

Reasons we January

BROKE AND BORED OF SELF-IMPROVEMENT, ANYBODY? US TOO – JANUARY NEEDS MORE GOOD STUFF! SAY GOODBYE TO THE BLUES WITH OUR SPIN ON WHY THIS MONTH ROCKS

YOU’RE HIRED!

Whether you got a bit too friendly with a colleague at the office party, or that shiny grad got the promotion you were promised, January is a fantastic month to whip your CV into shape. Companies are arranging annual budgets and employing more staff. Time to fire off some emails…

YOUNG MORSE RETURNS

The new year usually brings great new series – or the return of old faves – and ITV’s superslick whodunnit (the prequel to the mighty Inspector Morse) is back on our screens on 3 January. It's bound to fill the Downton void on Sunday nights. Everyone rejoice!

PHOTOGRAPHS: GETTY IMAGES

NETFLIX NIGHTS

It might be windy and damp outside, but we love January for its opportunities to be anti-social. Pop on those panda slippers and have a marathon session of your fave TV show. We're addicted to The Man in the High Castle. Or, binge-watch Breaking Bad – if you can get past the bath tub scene in season 1, you're on the home straight.

GET YOUR SHOP ON

For anyone who has money left over (seriously, how?), January wants it. For those who don’t, dip into your savings. Now Christmas is over, turn your attention to you by taking advantage of further markdowns in the sales – even hairdressers have reductions for your new year barnet.

HOPE SPRINGS ETERNAL

In January, there's hope that everything bad in your life is going to disappear. Make the most of this blank slate. Leave those heartaches and mistakes behind and write an unbeatable cosmic shopping list for 2016.

Let the sun shine! THERE IS, QUITE LITERALLY, LIGHT AT THE END OF THE TUNNEL, MAKING THAT COMMUTE MORE BEARABLE AS MORNINGS GROW BRIGHTER. AWARDS SEASON IS UPON US

Hurrah! It's the start of red-carpet fashion and drama. Will anyone top Viola Davis’ kick-ass speech last year? Ricky Gervais hosts the Golden Globes this month as a prelude to the Oscars.

HAPPY HOLIDAYS!

No longer a pipe dream, now you can actually start planning your holibobs. Many travel agents are offering top deals, especially on family holidays.

LOOKING FOR LOVE?

This month is the best time to meet a partner and 5 January is the most popular day for singles to sign up to online dating. Fastest fingers first!

Parsnip yogurt

SERVES 4 READY IN 30 MINS PRICE PER SERVING 54p

Savour it! The savoury yogurt tzatziki from Greece is already mainstream, as is Indian raita – so why not beetroot, parsnip or butternut squash yogurt? The trend started in New York and is set to catch on here, with the demand for fewer sweet treats. Or try labneh – Middle Eastern yogurt-cheese, served with olives, seeds or veggies.

● 2tbsp sunflower oil ● 1 clove garlic, crushed ● 2 large parsnips, peeled and chopped ● 1 apple, cored and grated ● tsp nutmeg ● 200g Greek yogurt ● 4tbsp mixed nuts, toasted and chopped

1 Heat the oil in a saucepan and cook the garlic, parsnips and apple for 5 mins over a low heat. Add 100ml boiling water and simmer gently, uncovered, for 15 mins. 2 Blitz with a handheld blender and stir in the nutmeg and yogurt. Return to the pan and gently heat through. NUT-BUTTERED UP

There’s the classic peanut variety, of course – but now it seems there’s no nut that can’t be made into butter, including hazelnuts, pistachios and cashews. A source of fibre and protein, nut butters will be huge in 2016. Almond varieties are the most popular and when mixed with raw maple syrup or cocoa and coconut, they create a creamy, moreish spread. Or try Whole Earth 3 Nut Butter.

Last year’s kimchi was just a taster – now Korean food as a whole is having a moment. Tangy and spicy, it’s based on barbecue flavours and grilled meats. A good dish for newbies is a bulgogi burrito, stuffed with beef in a gochujang (red chilli) marinade. Or, try KFC (Korean fried chicken, that is!) with a side of mooli white radish slaw. Korean street food traders are flying the flag – including Choi Boys, Busan BBQ and Kimchi Cult.

Meridian Smooth Cashew Butter

Sea greens Say ‘konnichiwa’ to seaweed. Celeb cook Jamie Oliver predicts everyone will be eating algae like the age-defying Japanese in 10 years’ time. Wakame, sea spaghetti, kelp and nori – which can add a salty, savoury taste and a velvety or crispy texture to salads, soups and stir-fries – are popping up in restaurants across the country.

Waste not, want not This year is all about loving leftovers and things we’d usually bin. The charity Love Food Hate Waste estimates that 7 million tonnes of food is thrown away each year in the UK, over half of which is edible. We’re doing our bit by selling even more of our Beautiful on the Inside wonky veg, while River Cottage chef Hugh Fearnley-Whittingstall is taking the idea to extremes with his latest book of recipes – Potato Peel Soup and Spicy Crispy Fish Skeletons, anyone?

GET YOUR GOAT

Goat is the new steak. Already popping up on high-end menus, it officially arrived when chef Matt Gillan served it at the Women’s Institute Centenary Banquet last year. Lower in saturated fat than other red meats, goat tastes like a cross between lamb and venison. Try it slow braised, or roasted with garlic and rosemary.

Thanks to stocks in the North Sea rising above dangerously low levels, cod has now been removed from the Marine Conservation Society’s (MCS) ‘fish to avoid’ list, and this one-time Friday night fave is back in business. Hoorah! But don’t go overboard – the MCS suggests we eat it as an occasional treat while the cod population fully recovers.

WELCOME IN THE NEW YEAR WITH A NEW IMPROVED YOU. FROM MONEY SAVING TIPS TO EXERCISE TRICKS, READ ON AND GET CRACKING

THIS MONTH’S BIG QUESTION

I’m chasing the winter sun! Where can I get great rates on currency?

We’ve just got a new puppy! Do I really need to insure my pet?

We wish we were coming, too! ItÕs always useful to order currency before you travel (think taxi when you arrive) and to avoid hefty withdrawal charges abroad. Asda Travel Money doesnÕt charge any commission

to change your money, and you can order online and collect from any of our in-store bureaux Ð open seven days a week. Home delivery also available. Visit ASDA.com/travelmoney or call 0800 188 4002.

ItÕs a good idea to insure pets as soon as you can. Mischievous puppies can easily get into scrapes that require a trip to the vet. Putting insurance in place helps you dodge sky-high bills when they get older, too. Go to ASDA.com/petinsurance for more details.

My dad used to de-ice my car and I’ve just moved out of home. Any tips? Winter mornings can be difficult enough without finding your windscreen’s frozen. Avoid the advice about boiling kettles – if the water’s too hot it can crack the glass, and if it spills on the ground and freezes it can form a dangerous ice slick. Invest in a can of de-icer, such as Carplan Blue Star De-icer, £1.75 (600ml), and

50 | ASDA.COM

a scraper – don’t be tempted to use a credit card or CD case as you’ll scratch your windscreen. And do all your car windows and mirrors, otherwise your view might be dangerously restricted. Most good screenwashes also contain de-icer – try Asda Screenwash Concentrate, £1.96 (2.5L) or 2 for £3.

How can I light the perfect fire?

● First, warm the chimney – light a few

Remember, even if you build the perfect fire, it’s all for nothing if the wood you’re trying to burn is wet. Real Wood Logs, £3.50 (10kg) or 3 for £9, will help your fire roar!

Kitchen gadgets on test YES, THEY’RE THE KITCHEN GADGETS EVERYONE’S TALKING ABOUT, BUT DO YOU REALLY NEED THEM? GOOD LIVING FOOD EDITOR GREGOR MCMASTER GIVES YOU THE LOWDOWN…

Gregor’s verdict: With juicers, you tend to get what you pay for, so I was dubious about this budget model – but it was easy to blast my way to five-a-day. Lean grilling machine Gregor’s verdict: You can cook meat, fish and even fried eggs on this and it’s quicker than using your cooker – grill a chicken breast in under 8 mins and a salmon fillet in 4 mins. oconut water is just so last season. The latest trend is naturally flavoured waters – low-calorie ‘superdrinks’ that are said to buzz with nutrients and electrolytes. Celebs including Rihanna and Madonna have been spotted sipping birch water (sap tapped from the trunks of birch trees), maple water (with a hint of maple syrup) and bamboo (infused

with bamboo leaf extract). But you don’t need to head into the forest to pimp your water. Pop some ice cubes into a mini-bottle, glass or jug, add a mix of your fave fruit, veg and herbs, then top up with water for a refreshing, showstopping drink. Allow to infuse for a few minutes, then serve – leave the fruit in to keep the flavour coming. Just think of it as Pimm’s without the booze!

ays by the sea and a laidback lifestyle were at the top of the wishlist for mum Clare, 35, and her husband Jon, 42. So, two years ago, they left hectic London and moved to Devon with their kids Eddie, 11, Sammy, seven, and Annie, four. But, since then, things have got a bit too horizontal for Clare's liking which is why she volunteered her family for our challenge. The seven-day experiment includes a strict ban on snacks like cakes, sweets, biscuits, and (shock-horror) cheese. 'I love cheese,' says Clare. 'It’s my favourite thing in the world, so I don’t know how I’ll manage it!’ Naughty foods weren't the only thing to go; the family also said an emotional goodbye to TV and their beloved games console. ‘We have four TVs in our house, and they are on 24/7 – we call it the one-eyed god,’ says Clare, who also had to switch off her mobile after 6pm. Um, all totally doable… right? Read on and find out!

Clare's Diary

Monday

It's a bit of a novelty not watching TV, although I do absentmindedly go to switch it on a few times. The kids don’t seem to mind too much (let’s see how they are in a week) and get stuck into the huge Lego box that's been gathering dust for months. I’m finding it hard not to reach for my phone when the kids go to bed and, after a few hours, realise just how much I constantly check social media and emails. I always mean to read more, so instead of vegging out in front of the TV, it’s a good excuse for an early night and a new book.

Tuesday

For once, homework is done in record time and there are no arguments over ‘just five more minutes’ of TV series Gravity Falls. We also decide to go for a walk after dinner. But the no-cheese situation is terrible. I usually buy two cheeseboards a week and eat them both with my husband. I’m craving a nice slice of Stilton so much I can't focus on my book...

Wednesday

The kids are finding the lack of PlayStation hugely frustrating. In fact, they went berserk when they heard they weren’t allowed it. But they’ve started to play hide and seek and have even dug out toys they haven't played with for years. I’m itching to use my phone and the lack of cheese is

making me irritable. I have to keep reminding myself that this is good for me.

Thursday

I’m shocked when I hear the TV this morning! The kids, on autopilot (ahem), have switched it on and I rush into the room to remind them about our challenge. They’re pretty grumpy that we still have four days left. Someone give me strength. I’m surprised at how quickly they’ve got used to ditching cakes and biscuits after school, though. I try to limit treats to once or twice a week but my mum-in-law often drops round with delicious bakes that are hard to resist. I wonder if she’s

been feeding them cake on the sly… It seems quiet without TV when the kids are in bed, but we tackle life admin instead. I’d normally use my phone calculator to work out shopping budgets, but go old school with a pen and paper. *Turns brain on*

Friday

This is by far the hardest day. Traditionally we relax in front of a family movie and the kids get to stay up. They eat chocolate and we, of course, drink wine. To distract them, we take them swimming after school then listen to some Bob Marley. Before we know it, there's a family disco going on in our living room and we

all take it in turns to choose a song. It’s tempting to turn on the TV when the kids go to bed, but we resist and have an early night instead. It suddenly occurs to me that I’ve left my phone in my jacket since the school run and haven’t had the urge to check it once. I give myself a metaphorical pat on the back. I am no slave to tech! HEALTH

THE VERDICT

Psychotherapist Hilda Burke says: ‘The way to break a habitual pattern (like too much TV) is to make a note of all the things you're missing out on as a result. Clare appreciated the activities the family had more time to engage in such as reading books, playing board games and dancing. As long as they remember how much they enjoy these different pastimes now they have finished the challenge – and incorporate them into their lives on an ongoing basis – this whole exercise has been extremely worthwhile.’

Saturday

The kids struggle because the weekend is when they really max out on PlayStation time. We’ve planned a busy day, but they bicker as we get ready to go out. A picnic and kite keep them entertained at the beach, but we're mindful to stay there as long as we possibly can. When they go to bed, Jon and I row too. He's at the end of his tether and thinks we should cheat with a box set, but I’m adamant we stick to the rules. This whole living-without-a-telly malarkey is showing the cracks in our relationship...

Sunday

Without the distraction of TV, Sammy’s on time for football for the first time 84 | GOOD LIVING

ever. Whoop! Afterwards, we head to Dartmoor for a bit of leaf catching, an annual family game. The kids are exhausted, but knowing they might bicker, I set up a game of snakes and ladders as soon as we get home. While they can entertain themselves for a while, they need some distracting. Frankly, no TV is exhausting for everyone! Jon catches me sneakily checking my phone and we have a mini row. Double standards, anyone? He doesn't believe it's the first (or maybe second time) I've done it. Mum's the word.

‘Clare loves cheese, but too much of it can result in high levels of calories, saturated fat and salt. The plus side? It’s full of protein, calcium and phosphorous, important for strong bones as well as vitamin A that's great for boosting immunity. Clare should aim for just one cheeseboard a week. In terms of the sweet stuff, government guidelines are to reduce sugar to no more than seven teaspoons for teenagers and adults per day (a slice of victoria sponge is about four teaspoons). Clare sounds sensible, though. As long as she steers clear of fizzy drinks, cakes, sweets and biscuits – and prepares meals based on fresh, natural foods rather than processed food and takeaways – they should be fine.’

Clare says: ‘I’m glad we undertook this challenge because it made us all more conscious of the way we live – in particular, how much time the TV takes up. I’ve noticed the children are more self-sufficient in terms of playing and will even venture outside to the garden now instead of popping the box on. They are back to watching Spider Man first thing, – which they're very happy about – but mornings were much more streamlined without the TV on. I’ve vowed to continue to turn off my phone after dinner as it makes me feel more relaxed. Still, it's impossible to ditch the cheese! My skirt is feeling decidedly tighter since the challenge ended, but I'm determined to cut down – and the same goes for sugar. I’m far more aware of the dangers now.’

Our pet expert, vet Zara Boland, says: ‘Owners are responsible for what their animals eat – and overfeeding, or giving pets the wrong food, can make them fat. If an owner is overweight, there’s a higher chance their pet will be, too, and animals face the same health risks if they pile on the pounds – diabetes, high blood pressure, heart disease, arthritis and even cancer. Obesity can also reduce a pet’s life expectancy. Some dog breeds, such as Labradors, are prone to putting on weight, as are neutered animals, so choose a food that suits your pet’s age and lifestyle. Human food can be too calorific and salty for pets, or – in cases like raisins, chocolate and bones – actually dangerous. Read pet food labels for guidelines and weigh out food to keep your pet in good shape.’
