Welcome
We all know using sunscreen is important – when I’m on holiday, I religiously slap it on each morning before heading out, taking care to reapply regularly. But when the sun comes out in the UK, it’s either due to sheer shock or stupidity that I’ll happily sit out minus sunscreen, developing my freckles and quickly turning pink. Another reason I don’t always have sunscreen to hand has to be the price. For something that’s essential for protecting against skin cancer and delaying aging, suncream can be costly, especially if you’re buying for the whole family. This year, I’m turning over a new leaf and stocking up on suncare products – plus I’m supporting Asda’s Don’t Get Burnt campaign, lobbying against the Government’s 20 per cent ‘luxury’ tax that is placed on sunscreens. Sign our e-petition at your.ASDA.com/dontgetburnt and check out our guide to staying smart in the sun on page 68.

Come along and join in – kids will love it and we’re helping mums make their weekly shop more manageable by packing Fridays full of fun for little ones! Look out for details in your local store.
SUMMER CHEESES Our Feta and mozzarella cheeses are wonderful in summer. Regional nutrient-rich grass in the Mediterranean benefits from lots of sun and rain, so the milk used to produce these cheeses is high quality. Try mozzarella in a tomato and red onion salad.

Visit eggsforsoldiers.co.uk.

salmon Producer Murdo Mackay introduces us to his natural working place – the water – where he hand-rears salmon
WORDS: CARLY RIGLEY. PHOTOGRAPH: MONTY RATTERTON
Set in the picturesque fishing village of Ullapool, in the rugged northwest Scottish Highlands, Wester Ross Salmon is Scotland’s oldest independently owned salmon farm. The company has been hand-rearing fish since 1977. JOB SATISFACTION ‘There’s a great team spirit at Wester Ross Salmon,’ says Assistant Sea Farm Supervisor Murdo Mackay, seen here in the forefront. ‘And we take real pride in the job. ‘My working day starts at 8am, when we feed the fish,’ he says. The salmon are raised in deep sea lochs and are hand-fed fish trimmings. ‘Hand-rearing means that we’re on the water every day to feed and observe the fish – this is very different from the automated systems used by most other
fish farms,’ he says. ‘I enjoy working closely with the fish and seeing how lovely they look when they come out of the water at harvest.’ SALMON PRODUCTION ‘The fastest growing fish are ready around 22 months from the time they hatch,’ Murdo says. Once harvested, they’re taken to Edinburgh Salmon Company (ESCo) where the fish are filleted and boned, then prepared for either smoked salmon or raw salmon portions. Every week, ESCo processes on average around 38,000 salmon for Asda. QUALITY PRODUCE ‘What’s great about our salmon,’ Murdo says, ‘is that they’re tasty, affordable and come from the clear waters of Scottish Highland lochs.’

Often one of the unsung heroes of the veg world, British celery is at its best right now. But don’t just keep it for salads and dips, enjoy its distinctive flavour in cheesy chowders or create chunky guacamoles. And use it to add crunch to tuna sandwiches and tasty stir-fries.

What to do with…
REDISCOVER… SPINACH
Full of goodness and super tasty, spinach is great stirred into soups and sauces. Mix it with ricotta for a classic Italian cannelloni, or cook in a little butter for a speedy side. Remember that spinach has a high water content, so there’s no need to add water when cooking – just wilt in a covered pan.
Delicious in marinades and stuffings, thyme is great with pork and lamb, as well as roast vegetables. Here are a few ideas to make the most of the flavour of this heady, fragrant herb. ♦ Chop a little fresh thyme and add to home-made bread dough. ♦ Use chopped thyme in tomato sauces for pasta. ♦ Stir into home-made stews and soups. ♦ Sprinkle thyme leaves over potatoes before roasting.
3 WAYS WITH… PEPPERS
How to roast and skin peppers Halve and deseed then remove the stalk and white membrane. Put in a roasting tin skin-side up, drizzle with oil and grill until the skin blisters. Cool in a freezer bag, then peel off the skin.

Make parallel cuts in the skin of the duck breasts, taking care to cut through only the skin and fat, not the meat. Preheat the oven to 200C/ 180C Fan/Gas 6. Heat the oil and cook the shallot over a low heat until soft. Add the wine and boil, uncovered, until reduced by half. Add the
cherries, stock and redcurrant jelly and simmer for 5 minutes. Stir in the cornflour. Heat until simmering and thickened. Put the duck skin-side down in a cold frying pan. Cook over a medium heat for 5 minutes until the skin is golden brown and starting to crisp, and the fat has run out. Drain off and reserve the fat – it’s great for cooking roasties. Turn the breasts over and cook for 1 minute. Transfer
to a roasting tin and cook in the oven, skin-side up, for 9-15 minutes, depending on how pink you like your duck. Cover loosely in foil and rest for 10 minutes to allow the juices to reabsorb and keep the meat moist. Reheat the sauce and serve with the duck, roast potatoes and sugar snap peas.

Cover and simmer for 5-10 minutes until the cherries are tender. ♦ Add 3tbsp cherry brandy (optional) and 1 level tbsp cornflour, mixed with 2tbsp cold water. Heat until simmering and slightly thickened, then set aside. ♦ Preheat the oven to 130C/ 110C Fan/Gas ½. Sift 115g plain flour and a pinch of salt into a bowl and make a hole in the centre. Break 1 large egg into the hole and add 75ml milk and 1tsp sunflower oil. Gently whisk together the egg, milk and oil. Slowly draw in the flour, whisking gently until you have a thick, smooth batter. Gradually add another 200ml milk, whisking gently until all the liquid is incorporated. Set aside for 15-60 minutes. ♦ Melt 15g butter and stir into the batter. Grease a small nonstick frying pan, then heat it. Pour in some batter to thinly coat the base. Cook for 30 seconds or until it’s golden underneath. Flip over and repeat for the other side. Slide onto a plate and keep warm in the oven. Repeat with the remaining batter, greasing the pan as necessary. ♦ Reheat the cherry sauce and serve with the pancakes and ice cream.

Glazed chicken & vegetable roast An all-in-one tangy chicken and vegetable roast is ideal for summer get-togethers and lazy Sundays
Jim Viggars Head of Meat Quality
This chicken roast is brilliant for summer entertaining. It’s got all the components of a Sunday roast, but with hardly any of the work. The prep takes minutes, pans are kept to a minimum and it tastes fantastic.
Match with… n Wine Selection Claret, £4.48 (75cl) Forest fruit flavours and a subtle spice make this red the perfect partner to a roast. 46 | ASDA.COM/MAGAZINE | JULY 2013
1.8kg pack Asda Butcher’s Selection Chicken Selection Pack 4tbsp redcurrant jelly 1 clove garlic, crushed 2 level tbsp Asda Smoked Paprika 3tbsp red wine vinegar 2tbsp Worcestershire sauce 2tsp dried oregano 3tbsp olive oil 750g sweet potato (peeled weight), cut into large chunks 3 red or yellow peppers, deseeded and quartered 3 large red onions, each cut into 6 wedges Salad leaves, to serve
Jim’s tips ● Reduce the fat
and calories by removing the chicken skin before eating. ● Get ahead
by preparing the marinade and chicken in advance. Place it in a freezer bag, in the fridge overnight, so the next day’s prep is easier. ● It’s a versatile
marinade Try it with other meat like pork and lamb.
H How to m make it Ev Everything is cooked to together in two roasting pa pans, so there’s no need fo for fussy sides – just a si simple salad will do Remove excess skin from the chicken, leaving enough to cover the tops and sides. Then make cuts in the fleshy parts. Gently heat the redcurrant jelly until it starts to melt. Take off the heat and stir in the garlic, paprika, vinegar, Worcestershire sauce, oregano and half the oil. Cool, then put in a freezer bag with the chicken and seal the bag. Toss to coat all the pieces. Refrigerate for at least an hour, turning the bag occasionally. Preheat the oven to 190C/ 170C Fan/Gas 5. Remove the chicken from the marinade and divide between 2 roasting pans. Reserve the marinade. Cook the chicken in the oven for 30 minutes, then brush with the reserved marinade. Put the sweet potatoes, peppers and onion wedges in another freezer bag with the remaining oil. Toss to coat, then add to the pans. Cook for another 45 minutes, brushing the chicken with the marinade halfway through. Serve with salad leaves.

FOOD MASTERCLASS
Glynis McGuinness Food Editor
Home-made ice cream is really easy to do – you don’t even need to keep stirring as it freezes. And it’s so convenient having a dessert in the freezer that’s ready to serve. Just add fruit or a sauce for a creamy treat. Once you’ve mastered the basic recipe (below), you can make endless variations.
1 Separate the eggs, putting the whites in a large bowl and the yolks in a small bowl. Add 1 level tbsp icing sugar and the vanilla extract to the yolks and beat until evenly blended. Set aside. Using an electric mixer, whisk the egg whites until they form stiff glossy peaks. Add the rest of the icing sugar, a level tbsp at a time, whisking after each addition until stiff.
2 Whip the cream in another large bowl until it just starts to hold its shape. Take care not to overbeat it – if it’s too stiff, you won’t be able to blend in the egg mixtures smoothly. When you lift the whisk out of the bowl, the cream should hang from it.

Glynis’ tips To ensure your ice cream is nice and light…
3 Fold the yolk mixture and the whites into the cream with a spatula or large metal spoon until just evenly blended, taking care not to knock the air out. Transfer to a plastic box and freeze for at least 7 hours.
4 Serve the ice cream alone or with fruit, sauce or as an accompaniment to your favourite dessert. Alternatively, sandwich scoops of ice cream between caramel wafers, as seen on the previous page.
This recipe contains raw eggs and is not suitable for babies, toddlers, pregnant women and the elderly. Don’t mix yolks and whites Separate eggs one at a time, placing each white in a small bowl, before transferring to your whisking bowl. Even a small trace of egg yolk means your whites won’t whisk properly. The successful way to stiff whites You need a clean, dry bowl and beaters with no trace of grease or moisture.
50 | ASDA.COM/MAGAZINE | JULY 2013
Ice cream variations You can make this ice cream in lots of flavours – try these or create your own. Add the flavour during step 3. ● Raspberry Reduce the vanilla extract to ½tsp (see step 1). Add 300g fresh crushed raspberries to the cream and fold. ● Coffee Instead of vanilla, dissolve 3 level tbsp instant coffee granules in
2tbsp boiling water. Cool, then add to the cream and fold. ● Chocolate Reduce the vanilla extract to 1tsp. Break up 150g dark chocolate in a bowl and stand over a pan of simmering water, making sure the base doesn’t touch the water. Once the chocolate has melted, remove the bowl and leave until lukewarm. Add to the cream and fold.

Line a baking tray with baking paper. Cut an 8cm piece off the baguette, break into small pieces and put in a processor. Grate the zest of half the lemon into the processor. Add the cayenne and whizz until you have fine crumbs. Transfer to a shallow dish and add the Parmesan, stirring until evenly mixed. Lightly beat the egg with the olive oil and put in another shallow dish. Cut the fish into 4 evensized chunky fingers. Put the flour on a plate and coat the fish in flour, one piece at a time, shaking off any excess. Coat the fish in the egg mixture and then the crumb mixture, patting the crumbs on firmly. Put on a baking tray. Repeat with the remaining fish and place on the baking tray, making sure you leave a gap between each piece. You may have some crumbs left over. Sprinkle on the sesame seeds, then cook in the oven for 15-20 minutes. Cut 4 pieces from the baguette to the same length as the fish fingers. Paints lowdown
STATEMENT WALLS
Once you’ve chosen colours from the extensive Asda Your Home and Dulux ranges available in store and online, you’ll need the right paint for the job. Here’s our simple guide…
If it’s wow factor you’re after, paint one wall in a contrasting shade to the rest of the room, or opt for an eye-catching wallpaper. For an easy option, try Paste the Wall designs for a quick, mess-free makeover. We’ve got 18 designs in the range, including Dulux Meadowsweet teal (pictured), at just £18.97 a roll. And to add impact to a child’s bedroom, check out our Walltastic range – from fairy princesses to dinosaurs and maps of the world, these murals are all you’ll need to transform a room in a flash.
Matt It’s ideal for walls and ceilings. With only 5 per cent sheen or less, matt paint doesn’t reflect light, which means it’s great for camouflaging small lumps, bumps and cracks. Matt paints are more prone to scuff marks, but some matt emulsions are wipeable, so check the tin before buying. Satin or silk These water-based vinyl or acrylic paints are hard-wearing and wipeable, which makes them suitable for walls in high-wear areas, such as hallways and kitchens. A satin finish will be slightly shinier than silk. The finish can also be referred to as eggshell and has a 20 per cent sheen factor. Satinwood or semi-gloss Use these on woodwork, such as door frames. The sheen level in these paints falls between eggshell and gloss. Gloss High-gloss paint lends a classic finish to windows, banisters and dado rails. However, it will magnify imperfections, so always prepare the woodwork first.
*£1.50 BETWEEN 4 JULY AND 24 JULY
BRUSH STROKES Don’t overload your brush. Dip one-third into the tin and tap off any excess paint. Use the narrow side to paint edges – for example, where the wall meets the ceiling – applying with firm, steady strokes. For a straight-line finish, use masking tape, a spirit level and a slim brush from the Asda 5 Piece Paint Brush Set, £1.95*. 64 | ASDA.COM/MAGAZINE | JULY 2013
Halfway through a job? Seal the paint in an airtight container to prevent it from drying out overnight
Magic moments It can be difficult to keep track of where you’ve painted when you’re using white paint, so why not try Dulux Magic in matt or silk, £15.97 for 2.5L? It goes on pink and then fades to white as it dries so you can avoid patchiness. Now that’s magic!
PAINTS AND WALLPAPERS DIY
High roller Choose a short-pile roller if you’re working on smooth plaster; medium for uneven walls; long-pile or sheepskin for rough textured or external walls; foam for satin, eggshell and gloss. Harris Complete Decorating Kit, £9
FULL COVERAGE – FAST! Tackle nooks and crannies with paint pads. This set includes a corner pad for where walls meet, an edging pad that’s ideal for painting along skirting boards and door frames, a pad for behind radiators, and another for window frames and skirting.
Got leftover paint? You should never pour it down the drain, and rather than putting it in the bin or taking it to the tip, why not donate it to communityrepaint.org.uk? Simply take sealed paint tins to your nearest recycle centre to be donated to people and organisations who need it.

9 out of 10 women love it. Read what those who tried it thought: The everlasting Dove “I was so surprised on how long my small can has lasted. I am actually still using it after two weeks even though I am using it frequently through out the day. Very impressed to say the least“ ollie73
Really long lasting in a tiny can! “I’m going on holiday soon & this will help to make my case so much lighter. I would have been worried about running out before I tried it but it just seems to go on and on.“ zoefox565
A great product from Dove “it is a neat compact sized aerosol deodorant in a well designed can which is easy to use and hold and more practical to take out with you in a bag... I really like the fact it is more environmentally friendly as it is an important issue in today’s society. I am a fan of all Dove products anyway but this is just a great reinvention.” karenbturner
Don’t Get
BURNT
Keeping your family safe in the sun can be expensive – that’s why we’ve launched our campaign to make suncreens more afordable
Asda has teamed up with the British Skin Foundation and TV’s Dr Dawn Harper to raise awareness about sun safety and to challenge the Government’s 20 per cent VAT ‘luxury’ tax on sunscreen. With 60 per cent of the UK finding sunscreen items pricey, we’re calling for this tax to be reduced or removed as part of our commitment to provide afordable suncare.
Go to your.ASDA.com/ dontgetburnt to find out more about suncare and support our Don’t Get Burnt e-petition. 68 | ASDA.COM/MAGAZINE | JULY 2013
DR DAWN HARPER SAYS KEEP SAFE ‘According to a survey commissioned for Asda’s Don’t Get Burnt campaign, over half of Brits don’t apply sunscreen often enough. The sun emits UVB rays that cause sunburn, while UVA rays are associated with premature ageing of the skin. Exposure to both can increase the risk of developing skin cancer. This makes it important to stay safe in the sun at all times – so follow my tips opposite for how to keep you and your family sun smart this summer.’
SUN SAFETY HEALTH
STAY SUN SMART Choose sunscreen that protects against both UVA and UVB. The product’s sun protection factor (SPF) tells you how long you’re shielded from UVB rays. And UVA protection is measured by a star system, with five being the highest. Adults should use two tablespoons of lotion on the body and two teaspoons on the face, at least 20 minutes before
so use a sunscreen at all times. Out-of-date sunscreen won’t offer the protection stated on the bottle. If in doubt, check the product’s openjar symbol – this indicates the number of months it stays useable after it’s been opened.
WORDS: ANJANA GOSAI. PHOTOGRAPHS: ALAMY, JOHN CAREY
Pay attention to ears, lips, hairline and nape of the neck when applying, as these are prone to burning. Reapply cream every two hours – or more often if you’re swimming or doing sports that make you sweat. UVA rays can penetrate clouds and even glass,
Asda has a whole host of great-value sunscreens to choose from, whether you want a spray-on lotion or child-friendly cream. Here’s our guide to choosing the ones that are best for you and your family.
Best for grown-ups In peak British summer, an SPF rating of 30 is recommended for adults. Try Asda Protect Sun Lotion Spray SPF30, £3.50 (200ml) or 2 for £6.
Best for kids In strong sun, cover up with widebrimmed hats and loose-fitting clothes
OVER HALF OF BRITS DON’T APPLY A SUNSCREEN OFTEN ENOUGH stepping outdoors. For children, use a handful to cover the face and body.
Choosing your sunscreen
that cover arms and legs. Don’t forget to wear UV-protective sunglasses that have a CE mark of approval.
It can be tricky to avoid missing any bits when applying lotion to fidgety youngsters. Asda Protect Kids’ Disappearing Colour Spray, SPF30, £3.50 (200ml) or 2 for £6, turns green when sprayed on, so you can spot missed areas. Don’t worry – the green colour disappears as it’s rubbed in!
Best for babies A baby’s delicate skin needs maximum protection from the sun. Asda Protect Baby Protection Cream SPF50+, £3.50 (100ml) or 2 for £6, is free from colours, fragrances and preservatives. Remember that infants under a year old should be kept out of the sun altogether.
Best for families As well as using sunscreen, seek out the shade when the sun is at its strongest between 11am and 3pm. Just 10 minutes in powerful sunlight can be all it takes for UVB rays to burn the skin – and just one episode of sunburn can trigger melanoma, the fastest rising form of cancer in the UK.
Asda Protect Family Pack, £10 (4 x 200ml), contains sun lotions with SPF15 and SPF30, kids’ lotion SPF50, plus aftersun spray – all you’ll need to keep your family sun smart.
Best for anti-ageing For added protection from skin ageing, try Asda Protect Anti-Age Sun Lotion SPF30, £4 (200ml) or 2 for £6. It has active DNA and a collagen shield to help prevent sun-induced brown spots and wrinkles.

How to add light to your living room To make your living space bright and welcoming, start with a light base colour to reflect the light. Mix and match your soft furnishings and accessories to add texture, detail and colour and try these four easy tips. 1 Heavy curtains can darken a room, so replace with blinds. Or if you prefer curtains, opt for sheer fabrics. Tip: Use light-coloured flooring or place a light-coloured rug in the middle of the room or near the window to cast more light around the room. 2 North-facing living rooms can be dark, so use a mix of lights – from pendants with dimmer switches to floor and table lamps. Tip: Reflective and clear pendant shades throw more light into the room.

3 Swap a picture for a mirror or make an oversized mirror the focal point to increase light and space. Tip: Hang a mirror opposite or next to a window for maximum light. 4 Use plenty of glass. Cabinets with mirrored panels and glass tables will instantly make a room feel brighter. Tip: Display glittery or glass vases on shelves to reflect light into your living space.
