Some favours can take you right back to a certain time and place. Like my frst taste of avocado, in a posh prawn sandwich at Bettys Cafe Tea Rooms (aged seven and feeling very sophisticated). Or the frst summer we made gazpacho, with homegrown tomatoes and basil. Those dishes that remind you of a special place or a person dear to you seem all the more precious. My Grandma’s delicate open sandwiches with honey-glazed ham and sour cream, which I still like to make, summed up her elegance and love of entertaining. Whereas my Granny Rosie’s fufy omelettes remind me of the fun we had in her kitchen that smelled of washing-up liquid and vegetables! By passing on these recipes to our loved ones, we pass on a little bit of ourselves, and the hope that they’ll remember us. Citrus fruit Want to add a zing to your spring? Discover fresh favours with our great citrus range

LIMES
Slightly tarter in taste than lemons, green-skinned limes are a staple of Asian and Mexican cooking, with the juice, zest and even the leaves used in recipes. Limes are also a perfect partner for chocolate in desserts. Try sprinkling lime juice on fnished dishes as a simple way to liven favours.
Quick & easy lime cheesecakes Mix your favourite soft cheese with icing sugar and creme fraiche. Add lime zest and juice, then dollop the soft cheese mixture on top of whole digestive biscuits. Decorate with thin shavings of fresh lime peel. Serve chilled.
Tip
Why not try…? A refreshing salsa. In a medium bowl, toss a cubed and deseeded cucumber, a diced red chilli, a bunch of fresh coriander, olive oil and the juice and zest of 1 lime. Set aside to allow the favours to combine. Serve with toasted pitta bread or tortilla chips.
If you have any old limes that are beginning to go pale or getting a yellow tinge, slice them into wedges and store them in the freezer. Use instead of ice cubes to cool drinks and add a tangy twist
Lemon & olive pasta Cook Chosen by you Spaghetti according to the pack instructions. Drain and set aside. Toast pine nuts in a frying pan until golden,
then mix with the juice and zest of 1 lemon, a handful of rocket leaves and some sliced black olives. Toss with the pasta, drizzle with olive oil and serve with Parmesan.
Why not try… Sprinkling lemon zest in cake mixture for a sponge with zing. Or add a little lemon juice to butter icing.
To get the most juice from a lemon, roll it on a hard surface for 1Osecs with the palm of your hand. Or microwave the fruit for 1O-15secs – warming them helps the juice flow more easily.

Pleasantly sharp, with juicy fesh and zesty rind, grapefruits come in red, pink and white varieties. The pink and red ones tend to be sweeter.
Pink grapefruit mojito
Grapefruit is also lovely grilled. Cut in half or in thick slices, sprinkle with brown sugar and put under a hot grill for 2mins. Sprinkle with a few raisins to serve.
Tip
Shake together soda water, a few fresh mint leaves, a pinch of sugar and a shot of white rum. Add freshly squeezed pink grapefruit juice and shake again. Pour over ice in a tall glass, and garnish with another sprig or two of fresh mint, plus thin slices of grapefruit.
Why not try…? Layering sliced grapefruit, Greek-style yogurt and chopped pistachios in a bowl for a quick and refreshing breakfast.
Sticky sweetclem sausages
SWEETCLEMS
Sweetclems are a variety of tangerine but smaller and sweeter, with a thin, loose skin that makes them easy to peel. Try delicious Nadorcott sweetclems, which still have their leaves intact on the fruit – this gives a good indication of their freshness. They are ideal for snacking and packed lunches, as well as cooking – look out for them in store.
Tip
Preheat the oven to 200C/ 180C Fan/Gas 6. Put Extra Special Pork Sausages on a baking tray and cook for 20mins. Meanwhile, mix sweetclem juice and honey, to make a glaze. Take the sausages out of the oven, brush with the glaze, then add a generous scattering of sweetclem segments. Return to the oven for another 10mins.
Why not try…? A salad of sweetclem segments, smoked salmon and rocket. Make a dressing with sweetclem juice and olive oil, seasoned to taste.

“A tasty family casserole in 30 minutes – perfect!” (serves 4 people)
Fry the mushrooms in 1 tbsp of oil for 5 mins until golden. Season and set aside.
2 tbsp vegetable oil 500g chestnut mushrooms, halved or quartered 2 medium onions, thickly sliced 8 pork sausages, halved 6 rashers streaky bacon, chopped 2 large carrots, peeled and cut into large chunks 2 large potatoes, peeled and cut into large chunks 2 tbsp freshly chopped thyme 300ml vegetable stock
Fry the onions, sausages and bacon in 1 tbsp of oil for 6-8 mins. Tuck the vegetables around the sausages, sprinkle over 1 tbsp of thyme and season. Add the stock, cover and cook for 15 mins. Stir in the mushrooms and re-cover. Cook for 10 mins until the sausages are cooked through. Stir and sprinkle with thyme. Serve with green veg.

How to…
…prepare cooked lobster 1 Lay the lobster on a chopping board. Carefully cut down the middle with a large, sharp knife. 2 Remove the greyish gills and stomach pouch. 3 Remove the vein that runs along the tail. 4 Twist of the claws and bash with a rolling pin or the back of a knife to crack open, and then remove the meat.

We’ve kept the dressing very simple here, so the wonderfully sweet favour of the lobster can really shine through. FISH SPECIAL PRAWNS Prawns are one of the most popular types of shellfsh. They have a mild favour and juicy, tender texture. Take your pick from our wide range, which includes standard and king prawns. They come raw, cooked or frozen, and prepared or whole (heads and tails on), so there’s something for everyone.
Cooking prawns Versatile prawns can be used in all kinds of recipes. Raw prawns (dark grey in pack) are best for hot dishes – ready-cooked ones may end up overdone and rubbery. Try raw prawns… Stir-fried Add Asda Raw Peeled King Prawns to stir-fries for the last 2-3mins. Cook until they turn pink on both sides. Used in soups and stews Add towards the end of the cooking time and cook only until they turn pink. Baked – brush with oil and grill for a few minutes.
Our cooked and peeled prawns can be used in… Sandwiches To make a great flling, mix with lemon juice and mayonnaise. Prawn cocktail A classic with lettuce and Marie Rose sauce (tomato mayonnaise). Whole shell-on prawns are easy to prepare… Twist of the head and peel of the shell and tail. For a gourmet-style treat, keep the tails on (right) for guests to peel of at the table.
Works well with… Asian favours such as garlic, chilli and ginger.
Prawns with chilli, lime & coriander Thaw some frozen Extra Special Raw Indonesian Tiger Prawns. Remove the shells but leave the tails on. Make a cut all along the back of each prawn and remove the veins. Put in a heatproof baking dish and top with thin slices of butter mixed with chopped chilli, lime juice and chopped fresh coriander. Cook under a preheated grill for 3-4mins until they go pink, turning occasionally and basting with the butter.

SQUID Squid, from the same family as octopus, has a subtle favour. It’s one of the easiest to prepare with our ready cleaned range. Asda Squid comes whole with the ink sac and other inedible parts removed – just slice into rings. Or to save time, try our precut Asda Raw Squid Rings.
Salt & pepper squid Cut the squid into rings, or thaw our precut ones, then rinse and pat dry with kitchen roll. Season some cornfour generously with salt and crushed black peppercorns, and put in a shallow dish. Add the squid, a few pieces at a time, and toss until evenly coated, then remove and shake gently to remove any excess. Pour sunfower oil into a pan to a depth of 1cm, and heat. Fry the squid, a few pieces at a time, until crisp and golden. Serve with lemon wedges.
Cooking squid To keep squid tender, either cook it very quickly or very slowly, otherwise it will become rubbery. Try… Frying Cook it fast and keep an eye on it. MUSSELS You can pick up fresh mussels in store at the fsh counter to use in all sorts of delicious dishes. Only a little preparation is needed (see recipe below) for a fantastic result. If you’re short on time, try Asda Scottish Rope Grown Mussels in a Garlic Butter Sauce, or our cooked frozen mussels.
Mussels with breadcrumbs, herbs & Parmesan
Serving the mussels in half shells adds wow factor, plus they make great party bites. Keep the other halves of the shells to use as ‘spoons’ to scoop out and eat the mussels SERVES 4 READY IN 40MINS PRICE PER SERVING £1.06 50g butter, softened 1tbsp chopped thyme leaves 1 small clove garlic, crushed 1tsp lemon juice 25g fresh breadcrumbs 15g Parmesan, grated 900g pack Asda Live Scottish Mussels 1 Mix together the butter, thyme, garlic, lemon juice, breadcrumbs and Parmesan. Set aside. 2 Wash the fresh mussels under cold running water, discarding any that stay open or have cracked or broken shells. 3 Pull and scrape of the beards – the tough fbres that stick out of the shells. Use a small, sharp knife to carefully remove any barnacles on the shells (see right). Rinse to ensure there aren’t any pieces of shell. 4 Put in a pan with 100ml water and season with salt and pepper. Cover, heat until simmering, then turn down to a low heat. Leave the mussels to cook in the steam for 4mins, shaking
the pan occasionally, until the shells open. 5 Drain the mussels and discard any that haven’t opened – they may have gone of. Pull the top shell of each mussel and discard, then put the mussels, still in the bottom shells, on a baking tray. Sit them close together so they support each other and don’t tip over. 6 Preheat the grill. Put a little of the Parmesan butter mixture on each one and cook under the grill until golden and bubbling.

Scallops with bacon & dry vermouth Thaw a 200g bag of Asda Uncooked & Shelled Frozen Scallops. Pat dry with kitchen roll. Grill some streaky bacon until crisp, put on kitchen roll to soak up excess fat, then break into small pieces. Melt a little butter in a large frying pan. Add the scallops and cook over a medium heat for 2mins, turning them midway through, until they’re just starting to go golden. Add a splash of dry vermouth, white wine or dry cider, and simmer for 1-2mins. Serve sprinkled with the bacon and chopped parsley.

Parsley sauce
Using curly parsley, rather than fat-leaf, gives this classic British sauce a milder favour. Add the parsley at the last minute, to preserve the taste and colour SERVES 4 READY IN 40MINS PRICE PER SERVING 38p 35g pack curly parsley 400ml full-fat milk 1 small onion, halved 1 small carrot 1 bay leaf 50g butter 40g plain flour Fish and sugarsnap peas, to serve 1 Cut the coarse stems of the parsley. Chop up the leaves and set aside. Put a few of the stems in a pan with the milk, onion, carrot and bay leaf. Heat until almost simmering. Remove from the heat and set aside for 15mins, so the favours can infuse. Strain into a jug, discarding the veg. 2 Melt the butter in a pan. Remove from the heat and stir in the four to make a paste. Cook over a low heat for 2mins, stirring, with a wooden spoon. The paste should be a straw colour. 3 Remove from the heat and gradually whisk in the milk, using a wire whisk, until smooth. Return to the heat and bring to the boil, whisking all the time. 4 Reduce the heat and simmer gently for 2mins. Stir in the parsley and season to taste.

Minced chicken with coriander & fsh sauce is one of my favourite dishes that Mum used to make me, and when I cook it, the savoury smell takes me back to my schooldays. The town I grew up in, Ipoh, in Malaysia, isn't very big, so I didn't get up for school until Minced chicken with late. I’d get ready in 10 minutes while Mum coriander & fsh sauce made breakfast. We’d dash to the car and I would eat this, with noodles, on the way. It was a 10-minute ride so I would wolf it down and get to school stinking of garlic! I didn't care, I just loved it – tender chicken with a delicious, salty yet sweet sauce. It’s easy to make and only uses a handful of ingredients, but the taste is fantastic. Cucur udang (Malaysian prawn fritters) Cucur is a well-known Malaysian street food. Sometimes, when my mum picked me up from school, she’d take me to a place across the road called Rainbow City, which was lined with food stalls. Most of the stalls came alive later in the evening but there was one selling fried noodles and cucur udang that opened earlier. We used to Cucur udang devour them, knowing it would spoil dinner but not caring. The fritters are very simple to make and can be eaten hot or at room temperature. Welsh cheesecakes (aka Grandma’s cakes) I always associate these cakes with my mum, and have lovely memories of her making them for visitors. Mum’s 90 now, so I make them for her. I’ve no idea where the name came from, as there’s no cheese in them! The ingredients have changed a bit over the years – margarine replaced butter during postwar rationing, and these days the jam isn’t always homemade. But they still taste amazing.

Mum's tips After she got her frst freezer, my mum took great delight in making extra portions of every suitable meal to fll it. She taught me all sorts of tricks to squeeze more in, like making soups and sauces thicker for freezing, to save space – then thawing and thinning them with stock, to eat. She was a single mother for many years, so she had to make sure that nothing was wasted. We didn't have expensive gadgets, but with Mum’s ability to cook cheap, wholesome food, we were always well fed and well loved.

The frst time my mum cooked this meal is really memorable. I don’t think we were used to eating dishes as rich as this, and it sparked an unfortunate love afair with creamy sauces. It’s what I’d call a go-to entertaining dish and it’s one of the few recipes we’ll make time and again. It must be made with meat on the bone – you don't get the same caramelised sticky sauce if you use chicken breast, as it lacks the fat content of thighs or drumsticks. And you can't skimp on the double cream, either! It’s best served with fufy rice or a salad with red onions and lots of garlicky vinegar.

Maamoul (date pastries) My dad’s Jewish family lived in London, but the food they cooked was a reminder of the years they lived in Egypt until they were forced to leave, after the Suez Crisis of 1956. Every time we visited, my grandma would produce a tin of these icing sugar-drenched date pastries, called maamoul. My sister and I would try to sneak an extra one or two while the grown-ups chattered away in a mixture of English, French and Arabic. My grandma never learnt English, and after she died, I thought her maamoul had died with her, but then I discovered she had passed her recipe on to my mum. Now, every time I bake them, I’m taken back to that kitchen in north London and a sweet woman who was trying to recreate the tastes of the home she’d had to leave so suddenly.

That would have been a real treasure to hand down.

My mum loves pea soup, so I decided to create this special chilled version for Mother’s Day, with added mint for extra favour. Linzi Brechin, Food Assistant
Top tip This chilled soup is deliciously refreshing, but if the weather’s chilly on Mother’s Day, it tastes just as good warmed through
1 Preheat the oven to 160C/140C Fan/Gas 3. Leave small tomatoes on the vine, but remove and halve larger ones. Put them all in a roasting tray. Sprinkle with the vinegar and salt, then bake for 20mins. 2 Mix the breadcrumbs, herbs and butter. Sprinkle over the tomatoes and cook for another 20mins. 3 Rub the garlic into one side of each baguette slice, then drizzle with the olive oil. Toast under the grill. 4 Remove the stalks from the tomatoes and use to top the bread.

MOTHER’S DAY LUNCH Roast pork belly with apple wedges & cider sauce Slow-roast pork is a tapas classic. We’ve paired the meltingly tender meat with apple and cider favours to add a traditional British twist SERVES 6 READY IN 3HRS 30MINS PRICE PER SERVING 89p 800g pork belly joint 2tsp sunflower oil 1tsp coarse sea salt 1 large onion 1 large carrot 150ml British dry cider 300ml pork stock, made with 1/2 a stock cube 1 level tbsp cornflour 4 Granny Smith apples 15g unsalted butter 1 Preheat the oven to 150C/130C Fan/Gas 2. Unroll the pork joint. Rub the skin with the oil, then sprinkle over the sea salt. 2 Cut the onion and carrot into thick slices, then put in a roasting tin to form a trivet – a layer for the pork to sit on, so that it cooks evenly. Lay the joint on top, skin-side up. Add enough water to come halfway up the layer of
veg – take care to avoid splashing the pork. 3 Cook the pork in the oven, uncovered, for 2hrs 30mins. Check every 30mins and top up the water if needed. 4 At the end of the cooking time, turn the oven up to 220C/200C Fan/Gas 7. Top up the water again and cook for another 25-30mins, until the pork skin is crisp. Remove from the oven. Leave to rest for 20mins, then take out the veg (you can freeze it to use in soups or stews). 5 For the sauce, pour away the fat and liquid in the tin. Add a splash of the cider, then use a spatula to scrape of the bits stuck to the base – they’re full of favour.
Spoon the cider and bits into a pan. Add the rest of the cider. Bring to a boil, then simmer for 10mins to reduce slightly. Add the stock. Heat to a simmer again. Meanwhile, mix the cornfour with 1tbsp cold water. Stir into the sauce until it boils and thickens. 6 Core and slice the apples. Fry in the butter until tender but still frm. Serve with the pork, with the sauce on the side.

1 Preheat the oven to 170C/ 150C Fan/Gas 3. Grease a shallow 21cm square ovenproof cake tin and line the base with baking paper. 2 Heat the 1tbsp oil in a frying pan and cook the onions over a low heat, stirring often, for 15mins,

Prick the sweet potatoes with a fork. Put on a baking tray and cook in the oven for 50-55mins, until tender when pierced with a knife. 2 Meanwhile, put the pumpkin seeds on another tray and cook for 5mins. Set aside. Leave the oven on. 3 Let the sweet potatoes cool slightly, then cut in half lengthways. Scoop the fesh out into a bowl and mash well with the soft cheese.

Bring to a simmer, then add the herbs, sausages and beans. Cover the pan and simmer for 15mins, stirring occasionally. 5 Meanwhile, put the breadcrumbs in a large frying pan and cook until golden, stirring all the time. 6 Transfer the cassoulet to a serving dish. Sprinkle on the toasted crumbs, black pepper and rosemary, if using. Serve immediately.

Who needs salt when you can add fresh, zingy favours with herbs. Use dried herbs at an early stage when cooking, so they infuse the dish. Fresh herbs are best added towards the end, to retain their taste and colour. Try chives with fsh; mint with lamb; and thyme with chicken.
PEPPER
It’s usually paired with salt, but pepper is equally delicious on its own, to add hot, spicy favour with bitter, fruity notes. Black pepper is slightly more pungent, so it’s great with mild favours such as chicken. White pepper is hotter and goes well with beef. For added texture, use crushed pepper rather than ground.
CITRUS JUICES
SPICES
Spices provide far more favour options than salt. Chilli fakes lift fsh dishes, while ginger goes well with pork. Cumin is great with beef, and cinnamon gives lamb a delicious North African twist. Add a little at a time, and be careful when mixing strong spices – they may clash.
A squeeze of lemon or lime juice gives dishes an instant lift. Add to olive oil for a simple salad dressing, or sprinkle over white meat or fsh, before or after cooking – it accentuates the favour, so you don’t need salt or heavy sauces either.

STEP 2. For the cupcakes: Put the cupcake ingredients in a bowl and beat with an electric hand mixer, until light and creamy. Split the mixture into 5 small bowls and colour each individually (red, yellow, blue, green and natural)

World-class Welshcakes Celebrate St David’s Day, on 1 March, with this classic teatime treat
With a soft yet crumbly texture and fruity, subtly spiced favour, Welshcakes are a true taste of tradition. This recipe dates from the mid-19th century, when coal miners in South Wales took them to work as a pocketsized treat – and they’re still popular in the region today. MAKES 30 READY IN 50MINS PRICE PER SERVING 4p Sift 225g self-raising four, /2 level tsp mixed spice and

a pinch of salt into a large bowl. Cut 115g chilled butter into cubes and rub into the four mixture until it looks like breadcrumbs. Stir in 75g caster sugar and 75g sultanas or currants. Lightly beat a medium egg and 2tbsp milk, then mix into the four mixture to make a soft but not sticky dough. On a foured surface, roll out the dough to 5-6mm thick, then cut into 6cm rounds. Repeat until all the dough has been used. Use a little
butter to lightly grease a cast-iron bakestone or a heavy-bottomed frying pan. Warm on a low heat. Cook the rounds in batches for 3mins on each side, or until golden brown. Fancy a refreshing drink with a twist? Then look out for bubble tea. As the name suggests, it’s a delicious mixture of tea with milk or fruit syrup. The diference is that it’s usually served cold and contains a layer of chewy tapioca balls or jellies, which you scoop with special straws with a spoon-like tip. Pour in the pan and continue to cook over a low heat for 25-30mins, until just set on the top. 5 With the help of an adult, hold a large plate over the pan and turn over so the tortilla is on the plate, golden-side up. Slide it back into the pan and cook for another 3-4mins. 6 Allow to cool, then cut into wedges. Serve with salad on the side.

says Andy Ferson ‘I do a radical clean and declutter every spring – and I love it. That’s on top of having a pretty good tidy-up every week. ‘So why do I do it? Well, I like living in a clean and tidy home. I also think it’s important to get all the allergens and dust out. It’s good exercise, too, both physical and mentally. Getting down on my hands and knees and scrubbing is a great de-stresser. ‘At work, I’m busy with lots of other people. At home, I can just focus on getting my cleaning tasks done. It’s lots of small achievements and I can see the results straight away. ‘I’ll start by clearing out anything I haven’t touched for a year. I’m ruthless. I don’t want the place cluttered up with junk that might come in useful “one day”. ‘Once the surplus stuf’s gone, I go through the cupboards, chucking out anything past its sell-by date. Then I start cleaning.
Nothing’s in a terrible state, but this an opportunity to shampoo the carpet, pull everything out and scrub, behind furniture as well as underneath, to make the whole place look pristine. It’s therapeutic – and once I’ve fnished, I feel even calmer. ‘It’s great to see my home really shine. I walk around, with the sun coming in through the gleaming windows, and I feel it’s somewhere I love to be. It’s well worth the efort.’

says Rhian Burgess ‘I’m no slob, and I like living in a clean home, but there are better things to do with my life than spend a weekend doing an intensive clean. A weekly go-round is totally fne, topped up with any emergency action that’s necessary. ‘In any case, cleaning’s one of the easiest chores to keep on top of these days. Once upon a time a good spring turnout made sense,
but we live in the age of washing machines and vacuum cleaners – not to mention rubber gloves and wipes. I can’t see how it could get to the stage where the house is so grubby that you need to do a full spring clean. ‘I’m the opposite of Monica from Friends: cleaning happens because it has to, not because I enjoy it or fnd it inspiring. I don’t have the time or the inclination to get down on my hands and knees and scrub behind things with a cotton bud. ‘I’ll admit that perhaps my home isn’t quite as pristine as those people who do dedicate a full weekend once a year to stripping it down, but frankly, that doesn’t bother me. I don’t want to live in an ultra-clean house – I’d fnd it a bit soulless and sterile. So maybe I’m not as houseproud as some, but my home is fne – I’m just not obsessive about it. ‘I’ll certainly make sure it’s looking its best if I’ve got friends coming over. But that’s the point. I’d rather think, “Lovely day, let’s have friends over”, than spend it cleaning. Spring is the time to get out and enjoy life, not be shut indoors with an array of cleaning products!’
