This month we’re celebrating all things snuggly, from homewares that make

you want to hibernate to meals that bring comfort and joy. I love this time of year – bring on the candles, the thick socks (and in my case PJs) for cosy evenings on the sofa! It’s even more enjoyable following a day out in the fresh air – turn to The Great Outdoors (p36) for ideas. To help make your weekends extra-easy, we’re championing slow-cooked roasts (p31) – this method makes any cut of meat more delicious and, as a bonus, frees up time for you to do other things. The frst time I slow-cooked lamb studded with lots of garlic was a revelation. You could slice it with a spoon and the garlic melted right into the meat. And don’t get me started on slow-cooked pork with crispy crackling, just like our cover recipe… Sit back, relax and enjoy this October.

Rose is a core favour in Turkish and Middle Eastern dishes – now try it for yourself. THE RISE OF THE FRIES Gourmet chip van Come Fry With Me proved so popular at this year’s festivals and street markets, it’s now opening a restaurant in London’s Covent Garden in October. Founder Tiffany Plant thinks fries deserve more than salt and vinegar. She uses toppings such as trufe and Parmesan, pesto chicken and Marmite, or vanilla icing on cinnamon sweet potato fries. Try some of Tifany’s ideas for jazzing up your fries at home… l Fry them in duck fat instead of regular oil. l Top your chips with leftovers such as chilli con carne, curry, Bolognese, grated cheese or baked beans with cumin or coriander. l Bored of ketchup? Try blue cheese dip or Bearnaise sauce. l Sprinkle with dried herbs and spices – try fajita spice mix, Cajun spice, garlic and rosemary seasoning or smoked paprika. Ribbon pasta with exotic mushrooms

OYSTER

This velvety variety has a tender texture and delicate favour. It works well with seafood, chicken and light spices.

Creamy garlic sauce and earthy mushrooms make an indulgent pasta dish Heat a little olive oil in a frying pan. Cook a handful of Extra Special Mixed Exotic Mushrooms for 5mins. Add crushed garlic and cook on low for 1min. Add a dollop of double cream, season with salt and pepper and simmer for 2mins. Toss with cooked pasta, such as tagliatelle, and serve with Parmesan – or mature Cheddar for a veggie version – and chopped parsley. Serves 2

ENOKI

With tiny caps on long, fne stems, these have a slight crunch and mild, fruity taste. Use in oriental soups and salads.

KING OYSTER

Related to the Oyster, this has little favour raw but the stems develop bite and a rich, savoury taste when sliced and sauteed.

PORTOBELLO

Big, fat, strong and earthy. Grill or roast to serve with red meat, or use in place of meat for a veggie variation on a recipe.

SHIITAKE

This frm, feshy variety adds a mild smokiness to Asian dishes – notably Japanese miso soup – and sauces and meat recipes.

Balsamic oyster mushrooms on bruschetta V

WHITE

Treat yourself to a taste of luxury with these rich, sweet-and-savoury bites

Mild-favoured with a closed cup – also available as smaller Baby Button Mushrooms. Try in soups and creamy sauces.

Cook a handful of Extra Special Oyster Mushrooms in a little oil, on a high heat, for 3mins. Stir in a good splash of balsamic vinegar and season. Simmer for a few minutes more until the balsamic reduces to a sticky glaze. Serve on toasted brioche slices. Serves 2

CHESTNUT

Like the White Mushroom, but larger, darker and nuttier in favour. Try pan-fried in garlic butter. 20

SPOTLIGHT ON Portobello & blue cheese salad V The strong favour and frm texture of Portobello mushrooms goes well with the blue cheese Make a marinade from red wine vinegar, clear honey and olive oil. Stir together with a few chopped thyme leaves. Slice Extra Special Portobello Mushrooms into strips and marinate for an hour. Remove from the marinade then dry fry over a high heat for 3mins on each side. When cooked, toss them through a pack of mixed salad leaves and crumble over some Smartprice French Blue Cheese. Drizzle on the pan juices as a dressing and sprinkle with chopped dryroast peanuts. Serves 2

Enoki, tofu & pak choi broth V This Asian soup is fresh, delicate and warming Mix half a vegetable stock cube with 400ml boiling water and a dash of soy sauce. Bring to a simmer and add cubed tofu, grated ginger, a squeeze of lime juice and Extra Special Enoki Mushrooms. Or try it with Extra Special Buna (brown) and Shiro (white) Shimeji Mushrooms. Simmer for 5mins, stir in a few pak choi leaves and serve. Serves 2

Let a couple of sirloin steaks come to room temperature, then season. Heat a little oil in a frying pan until sizzling. Cook the steaks for 2-3mins on each side for rare or 4-5mins for medium. Put on a board to rest, covered with foil. Add sliced mushrooms to the pan and fry for 3mins. Add some chopped onion and fry for 3mins, adding a little more oil if needed. 1 Preheat the oven to 200C/180C Fan/Gas 6. 2 In a small bowl, mix 1tbsp of the oil, 1tsp of the thyme and the garlic to make a paste. Rub on the underside of the pork and set aside. 3 Spread the onion slices over the middle of a large roasting tray to act as a trivet. Top with the pork joint, skin side up, and rub

Return to the oven for a further 40-50mins until the potatoes are cooked and the pears are starting to turn golden. 6 Remove the meat, pears and potatoes from the pan and set aside, keeping

them somewhere warm. 7 To make the gravy, tip any fat out of the roasting tin and place the tin on the hob over a medium heat. Add the perry and bring to the boil, scraping any sticky bits off the bottom of the pan and mashing the onion slices with a wooden spoon. Scatter some onion and thyme over the base. Top with a layer of potato and celeriac. Repeat twice more, fnishing with a potato and celeriac layer on top. 3 Pour in the stock and sit the lamb on top. Roast for 4hrs until the meat can be pulled from the bone with a fork. Garnish with thyme.

Blackberry autumn pudding V Adding blackberries to the traditional combination of soft fruits in juice-soaked bread makes this an autumnal twist on the summer favourite SERVES 8 READY IN 25MINS, PLUS CHILLING OVERNIGHT PRICE PER SERVING £1.21 400g blackberries 200g raspberries 100g blueberries 2tbsp Chosen by you Blackcurrant High Juice 100g caster sugar 8 slices farmhouse bread, crusts removed 1 Reserve a few berries for decoration. Put the rest in a pan with the juice. Simmer gently, covered, for 2-3mins. You can use frozen berries – just defrost

them on a plate at room temperature for 3hrs. 2 Add the sugar and stir, taking care not to break up the fruit. Remove from the heat and leave to cool. 3 Cut a circle from 1 slice of the bread to ft the bottom of a 1L pudding basin. 4 Gently strain the fruit juices from the pan and put into a bowl. 5 Dip one side of the circle of bread into the juices, then put into the basin,

dipped-side down. 6 Reserve one slice of bread for the top. Cut each of the remaining slices into 3 soldiers. Dip in the juice and use to line the basin tightly so no gaps remain. 7 Spoon the cooked fruit into the bread-lined basin. Top with the remaining bread and patch any holes, so no fruit shows. Drizzle any extra juice over the top. 8 Put the basin on a plate to catch any drips. On top,

lay a small, fat plate that fts the top of the basin snugly and weigh it down – cans of beans work well. Chill overnight in the fridge. 9 Remove the weights and run a knife around the edge, taking care not to tear the bread. Hold a plate frmly on top and fip to turn out. Top with the reserved fruit.

the opposite side. 4 Cut out a goal at each end of the box. 5 Pass a dowel into one hole and out of the opposite side. Attach 2 or 3 clothes pegs. Repeat for the other dowels, alternating the colours. 6 Add a ping pong ball and then kick of!

Do the same at the bottom and sides. 3 Build your box by layering up 11 sticks on each side so that they crisscross at the corners. Secure each stick with glue at the corners. 4 For the lid, lay 12 sticks side by side to form a square. Lay 1 stick across them at the top (about 1 stick width down) and glue. Repeat along the bottom edge. 5 Glue the big bead in the centre, on the same side, as a handle. Paint the box and lid. Decorate with gems.

Bottle bird feeder YOU NEED Empty 2L plastic bottle Scissors (ask an adult for help when using these) Bird seed Funnel or jug, for flling 2 George Home Wooden Spoons 1 screw eye 1 small cork 60cm sturdy garden twine Self-adhesive foam shapes TO MAKE 1 Stand the bottle upright, and fll a third of the way up with the bird seed. 2 Cut a hole in the bottle just above the level of the seed, big enough to insert the spoon handle, with a little extra opening for birds to get to the seed.

3 Push the spoon handle into the hole, keeping it horizontal, and cut another hole where the end of it touches the opposite side of the bottle. Now push it through both holes to form a perch on either side. 4 Add more seed to the bottle until it’s two-thirds full. Insert the second spoon as before. 5 Fill the bottle with more bird seed. 6 Ask an adult to pierce the bottle cap with the screw eye, then twist the cork onto the sharp end of it to secure. Put the cap on the bottle and add a loop made from the twine. 7 Decorate your feeder with foam shapes.

Aeroplane money box YOU NEED Scissors (ask an adult for help when using these) Double-sided sticky tape Empty round plastic bottle (about 330ml) Card in assorted colours TO MAKE 1 Cut a coin slot 3cm x 1cm, in the side of the bottle. 2 Make one side of the plane – draw an L-shape on card and cut out. Use as a guide

to make the opposite side. 3 Attach these to either side of the bottle with doublesided tape, with the slot at the top. Trim the card a little to avoid blocking the slot. 4 Draw 2 rectangles, each 2cm x 10cm, for engines. Cut out, roll into tubes and secure with tape. Attach to either side of the bottle, near the neck, making sure they rest on the table to hold the bottle steady.

Add 100g Chosen by you Wholefoods Popcorn to a pan. Cover with a lid and cook gently over a medium heat for 7mins (ask an adult to help) until the corn pops, shaking occasionally. Take care, as the lid will get hot. Continue to shake until the popping stops. Remove from the heat and leave to stand for 30 seconds. Stir through a little golden syrup or brown sugar and ground cinnamon. Serves 2

Making just one little change can help you on the way to better health TAKE A WALK

Just one brisk, 30-minute walk every day will help you maintain your ftness. Head into the great outdoors, or make part of your journey to work or the shops on foot. Why you should do it There’s no need to take exercise to extremes – it can put stress on your body and weaken your immune system. However, according to a report in the British Medical Journal*, moderate daily activity can help to reduce your risk of colds – or, if you do get ill, your symptoms may be less severe. Have an early night

The longer winter nights mean you want to sleep more, so go to bed an hour earlier, and at weekends, turn of your alarm and let yourself wake up naturally. Why you should do it Getting the right amount of sleep is vital for wellbeing. According to nhs.uk, less than 7-9 hours’ kip a night long-term can cause problems, such as stress and raised blood pressure. Studies** have also shown a link between poor sleep and obesity, and it might afect your memory, skin and immune system, too. Catching up may help to reverse the damage and make it easier for you to maintain a healthy weight.

Swap tea and cofee for herb tea. Ginger may settle your stomach, peppermint has a calming efect and chamomile can help to relax you. Flossing twice a day removes bacteria from the places your toothbrush can’t reach, helping to reduce gum-bleeding (a tell-tale sign of gum disease) by 40% more than just brushing. Dr Rob Clarke was the frst Breast Cancer Campaign researcher to receive a Fellowship grant for his studies on breast cancer stem cells. ‘These stem cells hold the key to vital new approaches and treatments to help us beat breast cancer once and for all,’ he explains.

Here are some of the projects the money funded... ● Research into fnding those who beneft most from drugs developed to reduce the risk of developing breast cancer. ● The Tissue Bank, which has so far collected 37,000 samples, vital for research, from 9,000 patients. ● Studies to help improve and personalise treatments. ● Plus, colleagues were instrumental in supporting the Spread the Word campaign, which raised awareness of secondary breast cancer. BREAST CANCER CARE Last year, Tickled Pink donated £2.5 million to Breast Cancer Care. Here’s how some of it was spent… ● Moving Forward courses, which are supported by Tickled Pink, help people to adjust to life after breast cancer treatment. The money donated means that these courses can be run for free and in more locations – a total of 90 courses are now available across the UK, including 12 new locations added in 2014. ● Breast Cancer Care’s HeadStrong service, which gives advice to patients losing their hair during chemotherapy, was able to expand its services. There are now 36 locations UK-wide, providing support and practical tips. ● Funds from Tickled Pink were used to increase training in breast health in local communities. As a result, attendance at our workshops grew by over 200%, helping more people than ever spot the signs of breast cancer and ultimately helping to save lives.

‘My biggest beauty secret is contouring’ KELLY BROOK The actress, model and presenter has shared pictures online of herself having contouring make-up applied. ‘It gives you a completely diferent bone structure,’ she says. OUR EXPERT SAYS Contouring is the new buzzword in make-up. It’s a simple trick-of-the-eye technique that gives your face its angles back. To emphasise

your cheekbones, take a stick foundation two shades darker than your usual base, and draw a line along the hollow part of your cheeks (where you feel the dip underneath the bones). Then, with a damp make-up sponge, tap over the contour colour so it blends seamlessly with your base. Finish with a highlighter stick, drawn along the tops of your cheekbones and blended in. Set with your usual powder.

‘No time for full make-up? Go for a red lip’ FEARNE COTTON ‘If I’m in a rush, I won’t do a full face of make-up in a shoddy way, I’ll just concentrate on one feature,’ explains the presenter and celeb mum, who likes to let her lipstick make a statement. ‘When you have less time, I think you have to really know what suits you. I’ll go, “Right I’m just going to do a red lip!” and then, in the car, put on red lipstick and sunglasses.’ OUR EXPERT SAYS A solo slick of bright lipstick can do wonders for your face, but if you don’t feel brave enough to wear a bold shade, especially in the daytime, apply just a little and blend it with your fngertips for a more subtle look. It still instantly brightens up your face but isn’t too glamorous for a trip to the soft play or supermarket.

says Ingrid Marsh ‘For me, Christmas is all about family, friends, feasting… and fun. It’s certainly not about planning it ages in advance. ‘If I wanted to, I could run Christmas like a military operation. But I believe in living for the moment, not stressing about something that’s months away. ‘It’s not that I don’t plan things – anything but. I run my own business and I’m a hands-on single mum. But at this time of year, I’m directing my eforts into helping my son get of to a good start at school, not worrying about something that’s happening at the end of term. ‘I don’t really think about Christmas until December, and the frst thing on my mind is the food. That’s the main point of the celebrations for me, so I put a lot into planning menus. We leave it late to get the tree, but really go to town decorating it – it’s all part

of the creativity and fun. ‘I leave present buying until Christmas Eve. And guess what? It works. I head to one big store, and don’t leave until it’s done! Plus, the sales are on, so you can get great bargains. Then I go to town on wrapping each gift to make it special. ‘My Christmas is arranged with the minimum of fuss and the maximum of fun – and it’s never gone wrong yet. It’s too early to think about it now, so I won’t let it bother me for weeks to come.’

says Kitty Wood ‘I’m already well into planning Christmas at this time of year. I like to pick up a few presents in the summer sales – or even earlier. Usually I’m done by November, so then I can concentrate on decorating our house and joining in the celebrations. If I didn’t do this, it would be too stressful and I wouldn’t enjoy it at all. ‘I’ve got a big family, plus three soon-to-be stepchildren, and I like to make sure I get them things

they’ll really love. So from summer onwards, if I see something suitable for someone, I’ll buy it. I also have a spreadsheet to record everything against my budget, crossing each item and person of when I’m done. I wrap everything as I go along, too. ‘Planning it this way makes it work fnancially, as well. My partner and I get paid weekly, so we have to spread out our spending on presents and food. ‘In the months leading up to Christmas, I’ll add an extra bottle of wine to my trolley when I’m out shopping, or even a Christmas pudding, rather than letting it all build up to one massive shop. I like to buy new decorations every year, and doing the rest of my shopping early gives me a bit of time and money left at the end. ‘The point of this forward planning means that I can relax and enjoy Christmas, rather than worrying. I know everything’s bought and wrapped, so I can go to parties, and visit friends and Santa’s grotto – just the fun stuf, without any stress. ‘Christmas can be pretty exhausting but I love it, and doing it this way means we can all have the best time.’
