A AMERICANS STYLE BBQ MEATS Asda Butcher’s Selection Ribshack range, from £3 Launched earlier this year, the Butcher’s Selection Ribshack range delivers a taste of the Deep South, thanks to a fact-finding trip our Food Development team made to America. They visited outlets in Dallas, Memphis and Kansas for research to help them create an authentic selection of pulled pork, smoky BBQ ribs, beef brisket and buffalo wings. Each year, the team takes part in the World Championship Barbecue Cooking Contest in Tennessee. This worldfamous competition

NEW CONCEPTS As well as travelling to other countries to experience authentic cuisine, Mark and the team glean ideas for new food ranges by referring to a huge library of recipe books and magazines in the Asda development kitchens. And to keep up to speed with cutting-edge food trends, he works in top kitchens every year, too. He’s completed a stint at the influential Noma in Copenhagen, Denmark, currently number two in the World’s 50 Best Restaurants list. Closer to home, he’s also worked at L’Enclume in Cumbria. It’s owned by Simon Rogan, one of the UK’s most respected chefs. attracts hundreds of teams for a stake in the prize pot and to showcase their barbecuing skills. Last year, Asda’s Food Development team entered the ‘brisket’ and ‘ribs’ category. In fact, Mark Richmond was so committed to proving that his barbecue technique was a winner, he spent two nights sleeping next to the team’s

As well as identifying food trends, the team carries out research on what new food products consumers would like to see in stores. Workshops are held with Asda colleagues

to brainstorm and create new product ideas. Once Asda approves a new product idea, it’s sent for consumer tests. Meticulous testing takes place before products can be developed.

US-INSPIRED DONUTS Premium Donuts, from the Asda Bakery, £1.20 for 2-pack or two packs for £2 American delis and the success of the Krispy Kreme chain in the UK spurred the development team to create premium donuts with caramel, coconut and raspberry fillings. Research showed that Asda customers were passionate about donuts with fillings and were keen to try trusted favourites.

RETRO DESSERTS Asda Baked Alaska, £3 The popularity of TV programmes such as The Great British Bake Off has demonstrated the nation’s appetite for traditional cakes and desserts. The development team are particularly proud of the Baked Alaska – a 70s-inspired showstopping dessert made with ice cream. It’s so convenient – just store it in your freezer until the right occasion. Then pop it in the oven for three minutes and the ice cream magically stays frozen. The result is yummy vanilla ice cream swirled with raspberry sauce on a layer of sponge, hidden within a light meringue. Look out for our new range of retro hot puddings, too, which includes an Extra Special Sticky Toffee Pudding, a family-sized jam roly poly and a coconut and raspberry sponge pudding.

In season How to make the most of the tastiest produce available in store this month at Asda

Moroccan-style pomegranate & couscous salad ♦ Cook couscous according to packet instructions. Put in a bowl and cool slightly. ♦ Add some chopped cooked chicken and sliced roasted peppers. Stir in some finely chopped dried apricots, along with a handful of pomegranate seeds and some chopped parsley. ♦ Squeeze over a little lemon juice. Serve with lemon wedges.

It’s harvest time for British pears so enjoy them at their sweet and juicy best. Conference, Comice or Williams varieties are great for both cooking and eating. Here’s our twist on the classic crumble.

Pear crumbles

♦ Preheat the oven to 180C/160C Fan/Gas 4. Peel 6 Conference pears and cut a little off the bottom of each. Put upright in a pan and pour over a bottle of red wine. Add 100g caster sugar and simmer for 20-30 minutes. Transfer to 6 ramekins, adding 4tbsp of the liquid to each. ♦ Rub 100g butter into 150g flour mixed with 85g sugar until it looks like breadcrumbs. Spoon around the pears. Bake for 25-30 minutes. ♦ Boil the remaining cooking liquid in the pan until reduced. Serve with the crumbles. Serves 6. MED

sunflower seeds Sunflowers produce a slightly nutty seed that contains potassium, iron and calcium. You can: ● Add a handful to a dressed salad for texture. ● Stir through risotto dishes for added crunch. ● Top a blue cheese and Parma ham pizza. ● Add to cake, scone and cookie mixes.

3 ways with… sweet potatoes

Sweet potatoes aren’t actually related to ordinary garden potatoes. They have a lighter, fluffier texture and count towards your 5-a-day. They’re great in soups, risottos, gratins, as wedges or double bake with a cheesy filling.

Preheat the oven to 200C/ 180C Fan/Gas 6. Peel a sweet potato and slice as thinly as possible. Put on a nonstick baking sheet in a single layer. Drizzle with olive oil. Cook in the oven for 20-25 minutes until crisp, turning from time to time. Cool on a wire rack.

Peel and cube a sweet potato. Put in a large pan, cover with cold water, bring to a simmer and cook for 10-15 minutes until tender. Drain and return to the pan. Stir in 50ml orange juice and mash. Season with pepper and top with a knob of butter.

Preheat the oven to 200C/180C Fan/Gas 6. Put some sausages in a roasting tin with peeled, thickly sliced sweet potato and red onion. Add some sliced fennel and drizzle with olive oil. Scatter over thyme sprigs and cook for 25-30 minutes, turning halfway through.

Cooks’ tips Sharpen your cookery skills and food know-how with our top hints

Tender moments Slow cooking is a wonderful way to tenderise tough cuts of meat, and gives delicious, melt-in-the-mouth results. The oven temperature must be very low – 150C/130C Fan/Gas 2. You can also do this in a slow cooker – ideal for leaving to cook all day while you’re out. Put extra root veg in stews to make meat go further and add more of your 5-a-day.

Melt chocolate perfectly every time for use in your cake and biscuit recipes

● If chocolate comes into direct

contact with heat it may burn and spoil, so melt using indirect heat from steam. First, break the chocolate into squares and put in a heatproof bowl. Stand over a pan of gently simmering water, making sure the base doesn’t touch the water. ● Don’t let any drops of water come into contact with the melting chocolate or it may seize and go hard. Never put a lid over it or condensation may drip in. ● Remove from the heat as soon as the chocolate has melted – wipe the base of the bowl as you remove it, so no drops of water get in. ● If you’re mixing liquids such as cream with the chocolate, add to the bowl with the solid chocolate. Don’t try to mix into melted chocolate, as it may go hard.

Mushroom & spinach risotto When making classic risotto, keep the stock simmering throughout the cooking time so the rice cooks constantly and evenly to give a good texture SERVES 4 READY IN 30 MINS PRICE PER SERVING ÂŁ1.64 1L hot vegetable stock, made with 1 stock cube 15g butter 3tbsp olive oil 1 onion, ďŹ nely chopped 2 cloves garlic, chopped 350g Asda Arborio Rice 2tsp fresh thyme leaves 100ml dry white wine 2 x 150g packs Extra Special Exotic Mushrooms, sliced 160g bag Asda Baby Spinach

40g Parmesan, shaved or grated 1 Put the stock in a pan on a very low heat to keep it warm while you make the risotto. 2 Heat the butter and 1tbsp of the oil in another saucepan and cook the onion and garlic until soft. 3 Add the rice and thyme, stir to coat in the oil, then cook for 1 minute over a low heat. Add a ladleful of hot

stock. Cook, stirring, until the stock is almost absorbed. Add 75ml of the wine and continue to cook over a low heat until almost absorbed. 4 Keep adding the stock a ladleful at a time, waiting for each addition to be almost absorbed before adding the next. Stir frequently. Cook like this for 15-20 minutes until the rice is tender. You may not need to use all the stock. 5 A few minutes before the

risotto is cooked, heat the remaining oil in a pan until hot and carefully add the mushrooms. Cook until browned. Add the spinach and stir until just wilted. Pour in the rest of the wine and cook for a further 30 seconds. 6 Add to the risotto, stir through and serve with the Parmesan sprinkled on top.

Mix in the remaining milk, the dried herbs and egg to make a dough. Roll out on a

floured surface to a thickness of 2-3cm and cut out 20 rounds with a pastry cutter, re-rolling if necessary. 4 Transfer the chicken and mushroom mixture to a large ovenproof dish and arrange the dough rings over the top. 5 Bake in the oven for 20-25 minutes until cooked through and the cobbler top is risen and golden.

Spicy eggs & greens stir-fry ♦ Beat 8 eggs with 4tbsp water. Season. ♦ Heat 2tbsp sunflower oil in a wok and stir-fry 2 large, deseeded and chopped red chillies, a 4cm piece peeled and grated ginger, a chopped garlic clove and 200g halved green beans for 2 minutes. ♦ Add a bunch of trimmed, sliced spring onions and 450g shredded baby pak choi. Stir-fry for 1 minute. Transfer to a bowl.

to the boil and simmer fast for 4 minutes. Drain well. 2 Roughly mash the potatoes with a fork and mix with the shredded greens. 3 Cook the bacon in a large nonstick frying pan until it starts to crisp. Add to the potato, leaving the fat behind. 4 Add the onion and 1tbsp oil to the pan and cook until soft. Add the garlic if using, and cook for another minute. Stir into the potato mixture. 5 Heat another tbsp of oil.

Add the potato mix and use the back of a large spoon to flatten it into a thick cake. 6 Cook over a medium heat until hot in the middle and the base is golden brown. 7 Slide onto a plate. Heat the last tbsp of oil and return the potato to the pan, flipping it over. Cook until browned. 8 Cut into wedges and serve with fried eggs.

Steak & ale pie A hearty British ale will give this warming dish a wonderful richness SERVES 6 READY IN 4HRS PRICE PER SERVING £1.56 700g pack Asda Butcher’s Selection Diced Casserole Beef 20g plain flour, plus extra for rolling out 1 medium onion, chopped 2tbsp sunflower oil 300ml ale 1 beef stock cube, crumbled 300g ready-to-roll puff pastry 1 medium egg, beaten Mashed potato and green vegetables, to serve 1 Preheat the oven to 150C/ 130C Fan/Gas 2. Put the beef in a bowl, sprinkle on the flour and season. Toss together to coat. Set aside. 2 Cook the onion in 1tbsp of the oil in a large frying pan until soft. Transfer to a casserole dish and keep warm. Heat half the remaining oil and cook half the beef over a high heat until just browned on all sides. Add to the onion. Repeat with the rest of the beef and oil. Sprinkle on any remaining flour.

3 Add the ale, stock cube and 120ml water, and heat until simmering. Pour over the meat, cover and bake for 2 hours 30 minutes until the beef is tender. 4 Transfer to a pie dish (about 1.2 litre) and leave until cold. If you put a pie funnel or a stainless steel egg cup in the middle, it will help to keep the pastry from sinking into the gravy. 5 Roll out the pastry to about ½cm larger than the pie dish. Cut a 1cm-wide strip from the leftover pastry. Dampen the rim of the dish and lay the strip all around it. Brush with egg, lay the pastry lid on top and press the edges together. Brush egg all over the pastry lid and make a hole in the middle. 6 Bake for 25-30 minutes until the pastry is puffed and golden. Serve with mashed potato and green veg. HIGH

1 Preheat the oven to 140C/ 120C Fan/Gas 1. Line 2 baking trays with double thickness kitchen paper. Fill an electric deep-fat fryer to the recommended level with oil, or one-third fill a large saucepan with oil and set aside. 2 Pat the prawns with kitchen paper to dry as much as possible. Toss them in the flour and shake off any excess. 3 Coat the prawns in the

beaten egg and then the breadcrumbs. Set aside. 4 Cut the potatoes into thicksized chips and pat dry with kitchen paper. Heat the oil until a piece of bread sizzles gently. Fry the chips in the fryer or pan of oil in batches until soft but not golden. As they cook, put on one of the lined trays. Don’t overcrowd the pan or the chips will steam rather than fry. 5 Reheat the oil until a piece

of bread browns in about 20 seconds. Cook the prawns in the oil until the crumbs are crisp and golden. Put on a lined tray and keep warm in the oven. 6 Cook the chips again in batches until crisp. 7 Serve immediately along with the tartare sauce and lemon wedges. HIGH

Drain, reserving 200ml cooking water, and mash. 2 In another large saucepan, cook the onion in the butter and oil over a medium heat until soft. Lay the fish on top and add the reserved water. Cover the pan and simmer very gently for 5 minutes. 3 Lift out the fish, discard the skin, then flake the fish. 4 Add the milk and potato to the pan and bring to a gentle simmer, stirring. For a quick version of this classic dish, use Asda Shortcrust Pastry SERVES 8 READY IN 1HR PRICE PER SERVING 49p 1 large onion, thinly sliced 250g potato (peeled weight), thickly sliced 150ml whole milk 300g plain flour, plus extra for rolling out Good pinch cayenne pepper ¼ level tsp mustard powder 150g butter, chilled, cut into small cubes 250g extra mature Cheddar, grated 1 medium egg, beaten Salad, to serve 1 Preheat the oven to 190C/ 170C Fan/Gas 5. Put the onion, potato and milk in a small pan. Cover and simmer for 10 minutes, stirring occasionally, until the veg is tender and most of the milk is absorbed. Tip into a bowl to cool. 2 Sift the flour, cayenne and mustard into a large bowl and rub in the butter until it resembles breadcrumbs.

3 Add 100g of the Cheddar and mix. Sprinkle on 3tbsp cold water and mix with a round-bladed knife to make a stiff dough. You may need another 1-2tsp water. 4 Roll the pastry into 2 rounds, the thickness of a £1 coin. Use half the pastry to line a 20cm flan case or shallow pie tin. Fill with the veg and milk and remaining cheese. 5 Brush the rim with egg and put the pie lid on top. Press the edges together. Make 2 cuts in the centre to allow steam to escape. Cauliflower cheese is filling enough to eat on its own, or it makes a great side dish. Getting the sauce right is key, but once you’ve cracked it, you could serve it over other veg or use in macaroni cheese. I’ve used pancetta in my recipe to give extra bite and a smoky taste.

Preheat the oven to 190C/170C Fan/Gas 5. Put the milk in a saucepan with the onion and bay leaf and heat over a low heat until it is almost at simmering point. Remove from the heat and set aside for 15 minutes for the flavours to infuse. Discard the onion and bay leaf.

Cut the stem off the cauliflower and discard it. Cut the cauliflower head into large, even-sized florets. Heat a large saucepan of water until boiling. Add the cauliflower, bring back to the boil and simmer for 4 minutes or until just tender. Drain well and put in an ovenproof dish.

To make the cheese sauce, melt the butter in another saucepan. Stir in the flour, mustard powder and cayenne to make a smooth paste (also called a roux). Cook over a low to medium heat for 1 minute, stirring the paste all the time. Remove the pan from the heat.

Gradually add the milk, whisking gently with a wire whisk. Return to the heat and bring back to the boil, whisking all the time and making sure the whisk goes right into the edges. Turn down the heat and simmer for 1 minute, whisking gently.

Remove from the heat and add three-quarters of the cheese. Season with freshly ground black pepper. Pour the sauce over the cauliflower. Sprinkle on the rest of the cheese. Cook in the oven for 15-20 minutes.

Meanwhile, put the pancetta on a baking tray and cook in the oven with the cauliflower cheese for 5-10 minutes or until crisp. Break the pancetta into pieces, scatter on top of the cooked cauliflower cheese and serve.

GLYNIS’ TIPS ● Heat the milk with onion and a bay leaf to give the sauce a subtle flavour that really adds to the dish. It’s great for all savoury white sauces. ● Use slightly more butter than flour in the roux (see Step 3) to make it easier to whisk the milk into the sauce. ● Streaky bacon can be used instead of the pancetta.

Make Lemon meringue pie

♦ Preheat the oven to 150C/130C Fan/Gas 2. Put an Asda Chosen by you 8inch Sweet Pastry Case on a baking tray. ♦ Empty 1 sachet Green’s Lemon Pie Filling into a saucepan. Add 280ml water and 1 medium egg yolk and mix together. ♦ Cook over a low heat, stirring continuously, until the mixture boils. Simmer for 1 minute, then pour into the flan case.

♦ Put 2 medium egg whites in a clean bowl and whisk until they form stiff peaks. Gradually whisk in 110g caster sugar, a quarter at a time, whisking until stiff again after each addition. ♦ Spread over the lemon pie filling and form peaks with the back of a spoon. Bake in the oven for 25 minutes until the meringue is crisp on the outside, soft on the inside.

Home-made buttery pastry, a zesty filling and fluffy meringue – a dessert worth waiting for! For the pastry case 200g plain flour, plus extra for rolling out 115g butter, chilled, cut into small cubes 1 level tbsp icing sugar 1 egg yolk For the filling 4 level tbsp cornflour 425g caster sugar Grated zest of 2 unwaxed lemons 150ml freshly squeezed lemon juice (from 2-3 lemons) 4 large eggs, separated 1 Preheat the oven to 200C/ 180C Fan/Gas 6. Sift the flour into a bowl with a small pinch of salt. Rub in the butter until the mixture resembles breadcrumbs. Stir in the icing sugar. Mix the yolk with 2tbsp very cold water. Add to the flour mixture and mix with a round-bladed knife to make

a stiff dough. You may need a few drops more water. 2 Roll the dough out on a lightly floured surface and use to line a 23cm flan tin. Chill for 30 minutes. 3 Prick the pastry base with a fork, then line with a piece of baking paper. Weigh the paper down with uncooked rice. Bake for 10 minutes. Remove the paper and rice, then return to the oven and cook for another 5 minutes. 3 Reduce the oven to 180C/ 160C Fan/Gas 4. To make the filling, put the cornflour and 225g of the caster sugar in a small pan. Gradually stir in 250ml water until the mixture is smooth. Heat to a gentle boil, stirring with a wooden spoon, until the mixture thickens. Remove from the heat and stir in the lemon zest and juice. 4 Put the egg yolks in a bowl and stir to break them up. Pour in the cornflour mixture in

Sponge puddings

Jam Spread a little jam in the base of each ramekin before putting in the sponge mixture.

With our scrumptious flavour variations, you’ll satisfy everyone!

Basic recipe Grease 4 ramekins and line the bases with baking paper. Beat together 100g softened butter, 100g caster sugar, 1 large egg, 1tbsp milk and 100g self-raising flour until smooth. Divide between the ramekins and cook as below. These recipes will make four individual puddings.

How to cook Microwave: cover each pudding with clingfilm and pierce the centre. Cook in the microwave on high for 3½-4 minutes (for a 750W cooker), or until the tops spring back when lightly pressed. Leave to stand for 1 minute, then carefully turn out. Oven: cover each pudding with foil, put in a roasting tin, pour in boiling water to come halfway up the ramekins, then cover the whole tin with foil. Bake at 190C/170C Fan/Gas 5 for 30 minutes. HIGH

Dissolve 2 level tsp instant coffee in 1tbsp boiling water. Add to the sponge mixture with some chopped dried dates and chopped pecans or walnuts. Decorate with chopped dates and nuts.

Ginger Put some chopped stem ginger, reserving a little for the mixture, and a little syrup from its jar in the base of each ramekin. Add the reserved stem ginger to the sponge mixture with 1 level tsp ground ginger.

Apple & cinnamon Peel, core and dice a Granny Smith or Cox’s apple, reserving slices to decorate. Stir the diced apple into the sponge mixture with ½ level tsp ground cinnamon. Sprinkle with cinnamon before serving.

SERVES 4 READY IN 40 MINS PRICE PER SERVING £1.02 2tbsp olive oil 3 spring onions, trimmed and sliced 160g bag ready washed baby spinach 175g Asda Ricotta 25g extra mature Cheddar cheese 270g pack Jus-Rol Filo Sheets 1 Preheat the oven to 190C/170C Fan/Gas 5. Line a baking tray with baking paper. Heat 1tsp of the oil in a large nonstick frying pan and cook the spring onions until soft. Transfer to a bowl. Add the spinach to the pan and cook until it wilts. 2 Tip the spinach into a sieve standing over a bowl. Press with the back of a wooden spoon to extract excess water. 3 Add the spinach, ricotta and Cheddar to the spring onions and mix together. Season with pepper. 4 Cut each sheet of pastry in half to make two pieces that are almost squares. Lay three squares on top of each other. 5 Keep the rest of the pastry covered with a clean, damp (not wet) tea towel, as filo pastry dries out and becomes brittle and unusable quickly. 6 Brush the top square of pastry with oil and put a quarter of the ricotta mixture in the middle. Fold up the edges to make a money purse shape and twist the top to seal it. 7 Brush all over with oil and put on the baking tray. Repeat to make three more parcels. Bake for 20-25 minutes or until crisp and golden. MED

1 Halve the leeks lengthways and rinse under cold running water. Pat dry with kitchen paper, then slice thinly. 2 Heat the oil in a large frying pan, add the leeks and stir to coat in oil. Cover and cook over a low heat for 5 minutes, stirring occasionally. 3 Add the mushrooms and

garlic. Cook, uncovered, for 10-12 minutes, stirring, until the mushrooms are cooked and the liquid has evaporated. 4 Meanwhile, add the pasta to a pan of boiling water. Bring back to the boil, stir once and then boil gently, uncovered, for 10-12 minutes. Drain. 5 Grill the bacon until the fat

Tip into a sieve, rinse under cold water, drain well and transfer to a bowl. 3 Put the beans in a bowl and add the tuna, sun-dried tomatoes, soft cheese and

half the spring onions, parsley and sweetcorn. Season and mix together roughly. Use to stuff the pepper halves. Return to the oven for 10-15 minutes. 4 Mix the rice with the rest of the spring onions, parsley, sweetcorn, cucumber and cherry tomatoes. Whisk 3tbsp olive oil with the vinegar and stir through the rice salad. Serve with the peppers.

It’s made me stronger – and I now have stronger relationships with family and friends.’

EDIT FOR RECYCLING If you’ve got something you’ve only ever worn twice – or not at all – in the last six months, donate it to charity or sell it on eBay. And check your clothes to see if they’ve lost their shape. Jeans with saggy knees, shirts with frayed collars and cuffs, or cardis with imprints in the elbows can all be put in the textile recycling bin in the car park at your local Asda store.

Use padded hangers Keep your best clothes in good condition by using soft padded hangers. These help to avoid stretching – especially on delicate knits, jersey and silk.

Dress up

Form a capsule wardrobe by mixing and matching key pieces, then experiment putting different outfits together. But don’t just stick to the same clothes combination each time. Keep your look fresh by continually swapping the tops you wear with your skirts or trousers – try it, it may just work!
