June

While planning this issue, we discussed what makes our dads so special. Funnily enough, the things they did badly topped the list – bad jokes, dancing and fashion sense. Maybe it’s because dads revel in embarrassing us, secure in the knowledge that there’s little we can do about it! My dad’s sense of humour is defnitely an acquired taste. He used to spike up our hair for school to make us look silly. Even now he always asks for the ‘smelling salts’ when we go shopping together (because the bill is so ‘extortionate’). But I secretly love recoiling at his jokes as much as he loves telling them. He’s mine and I wouldn’t change him for the world. In May he walked me down the aisle at my wedding after helping make it all happen, so to celebrate both his birthday and Father’s Day this month, I think he deserves a special thank you – love you lots, Dad. Make sure you tell your dad how much he means to you this Father’s Day, too!

Tutti frutti ice lollies

Raspberry lemonade ice lollies

Pour some lemonade into a jug – you’ll need enough to half-fll 8 lolly moulds – and leave until almost fat. ● Slice a nectarine, peeled kiwi fruit, a few grapes and hulled strawberries (or use other fruits if you like). Divide half the fruit between the moulds. ● Add lemonade to half-fll. Freeze for 1hr. Repeat with the remaining fruit, then add lemonade to fll almost to the top of the moulds. ● Add lolly sticks and freeze for 30mins. Check that the sticks are upright, then freeze for 2-3hrs.

In a large jug, pour enough lemonade to fll about two-thirds of the way up your lolly moulds. Leave it until it stops fzzing. ● Put a few fresh raspberries (or any other soft fruit you like) in each of the moulds, gently squeezing to release a little juice. ● Half-fll the moulds with lemonade, then freeze for 2hrs. ● Add another layer of berries. Add lemonade to fll almost to the top. ● Return to the freezer for 30mins. Add the sticks and freeze for 4-8hrs. JUNE 2015 | ASDA.COM/RECIPES | 33

Brewing up a storm As Britain’s oldest brewery, Shepherd Neame draws on more e than 300 years of experience to produce Asda’s exclusive quality ales ) This is a really exciting time to be brewing, says Richard Frost, head brewer at Shepherd Neame. The family-owned business combines all-natural, traditional ingredients and state-of-the-art equipment to produce a selection of fne Kentish ales – including four exclusively for our Extra Special range. ‘Nothing quite matches our traditional ales for depth and diversity,’ says Richard (pictured above). His 85-strong team now produces 70 million pints of beer a year at the Kent brewery, which uses only local hops.

Where it all began Based in the Kent market town of Faversham, Shepherd Neame is the oldest brewery in the UK. It dates back to 1698, when n William William III was

on the throne, though there’s evidence that beer has been made at the site since 1573. The chalk-fltered spring water used sp iin n the brewing process is still pro drawn from the dra a company’s old com artesian well. art And the walls still An show scratches sho that tha were made by horse-drawn wagons hor in bygone days. b The Shepherd Neame name came Ne from fro Samuel Shepherd, who wh ran the brewery from fro 1732, and Percy

with hot spring water in a container known as a mash tun, to produce a sweet malt extract known as wort. This is transferred to a large brew kettle, or ‘copper’, where it’s combined with hops and boiled to extract the bitterness. ‘My favourite

moment is when the coppers are boiling and the air is flled with wonderful hop and malt aromas,’ says Richard. Finally, once the wort has cooled, the yeast is added and the beer is left to ferment in huge tanks.

PRODUCERS

The perfect summer drink Old meets new It might be Britain’s oldest brewery, but at Shepherd Neame the technology is totally up-to-the-minute ● The high-speed bottling line can fll up to 36,000 bottles an hour. ● A robot feeds empty kegs to the flling line, then stacks full ones for loading on to delivery vehicles. ● The brewery has pioneered a new method to heat the wort malt extract more efficiently, producing a fresher-tasting beer and cutting energy consumption. ● Wastage is also reduced by the brewery’s water recovery plant.

From top: the bottling line; a robot flling kegs; heating the wort. Top right: pouring hops into the brew kettle

● But some things don’t change – the brewers still test hops the traditional way, rubbing them between the palms of their hands to check the aroma.

‘Nothing quite matches our traditional ales for depth and diversity’

Locally produced British beers are gaining fans across the UK – and you’ll fnd something to suit every taste in our Extra Special fne ales brewed by Shepherd Neame… Extra Special Gentleman Jack Ale Rich and smooth, with caramel malt favours and spicy accents. r u b o r y a l e i n u F ll day long a

Stay on top of your game no matter how hectic life gets, with our easy tips for eating well Food for thought Got a busy day ahead? Making the right food choices, at the right times, can help to give your body what you need. It’s all about getting the balance right, and including these essentials… ● Energy-providing carbs to keep you going through the day. Sources include bread, pasta and potatoes. ● Body-repairing protein, found in fsh, nuts, beans, meat and cheese. ● Energy-releasing vitamins B6 and B12 – in eggs and milk. ● Oxygen-transporting iron

to help your red blood cells – in brown rice, beans, meat and kale. ● Brain-maintaining omega-3 fatty acids – in seeds and leafy vegetables. Eating wisely through the day doesn’t have to be difcult, either. Rice cakes spread with peanut butter or low-fat soft cheese are an easy snack for protein and carbs. And eating two kiwi fruit a day can improve your mood and energy levels, a study has shown*. Follow our 24-hour eating tips to get the most out of your day…

EAT SMART Brilliant brekkie

*KIWI FRUIT DAILY CAN IMPROVE MOOD AND ENERGY, CAMBRIDGE UNIVERSITY PRESS, 2013. **THE EFFECTS OF BREAKFAST ON BEHAVIOUR AND ACADEMIC PERFORMANCE IN CHILDREN AND ADOLESCENTS, ECONOMIC AND SOCIAL RESEARCH COUNCIL, 2013

A good breakfast can give you the energy you need to face the day – yet up to one third of us regularly skip it, says the British Dietetic Association. There’s also evidence that it helps kids’ performance at school. A study by the Human Appetite Research Unit at the University of Leeds** found that children who eat breakfast focus better on tasks and are more likely to achieve higher marks.

A cracking start

Protein is essential for the body to grow and repair itself. For a tasty, no-fuss breakfast containing protein, go for eggs. Vitamin B6 This allows the body to use and store energy from protein and carbohydrates. Granary and wholemeal bread are sources, plus they contain slow-release carbs, which can help keep you going. Top your toast with peanut butter for more vitamin B6. Fibre Soluble and insoluble fbre can help other foods to move through your digestive system more easily. Oats are a versatile source. Try oatcakes with low-fat soft cheese as a mid-morning mini-meal if you can’t face breakfast frst thing.

The whole fruit

Fruit juice contains vitamin C, needed for the absorption of iron and for tissue health. But it also has a high sugar content, which gives a quick energy spike but soon wears of. Instead, eat whole fruit – the sugar levels are less concentrated and it contains fbre, too.

Eggs are a great, no-fuss choice for a breakfast as they contain protein, which is essential for keeping your body in good repair Try these… ● Soft-boiled egg with wholemeal toast and avocado ● Scrambled egg on toast topped with smoked salmon ● No-addedsugar muesli with low-fat natural yogurt and fresh berries JUNE 2015

Power lunches

As well as giving you a break, lunch is your chance to reboot your energy levels. Making the right food choices can also help prevent mid-afternoon hunger pangs, so you’ll be less likely to grab a biscuit or other sugary snacks.

Midday marvels Complex carbohydrates such as fresh, canned or frozen veg and fruit, and whole grains, provide fuel for the muscles, brain and nervous system. Plus, the energy release may be slower and longer lasting, with fewer highs and lows, than when you eat starchy carbs. So opt for wholemeal pasta and bread, or brown rice, instead of white. Iron is a key part of the red blood cells that zip around your system carrying energy-giving oxygen. Sources include beef, pork, lamb, chicken or turkey, which all contain protein, too. Don’t overdo it though – the NHS recommends limiting your daily intake of red meat to 70g* (cooked weight). For a veggie lunch, try a bean salad, egg sandwiches or houmous. Vitamin D may help to maintain the immune system**, according to research. It also helps your body absorb the minerals calcium and phosphorus, both of which are essential for healthy bones. Food sources of Vitamin D include eggs, liver, cheese, mushrooms and oily fsh, including canned tuna. 54

JUNE 2015

Try these…

● Frittata made with

tuna, spring onions and mixed peppers ● Brown rice salad with chicken chunks, courgettes and mushrooms (or any veg of your choice) ● Canned sardines on wholemeal toast with a fresh tomato and onion salsa

Tuna and eggs contain vitamin D, which helps your body absorb calcium and may help maintain the immune system

EAT SMART

*RECOMMENDED MAXIMUM AT NHS.CO.UK. **VITAMIN D AND THE IMMUNE SYSTEM, JOURNAL OF INVESTIGATIVE MEDICINE, JAN 2008. †THE EFFECTS OF TEA ON PSYCHOPHYSIOLOGICAL STRESS RESPONSIVITY AND POST-STRESS RECOVERY, PSYCHOPHARMACOLOGY, 2007. WORDS: RADHIKA HOLMSTROM. PHOTOGRAPHS: GETTY IMAGES

Super suppers A nutritious, balanced evening meal will help prevent you waking up with the midnight munchies, making it more likely that you’ll get a satisfying night’s sleep. Stick to small portions and avoid rich, ‘heavy’ foods.

Try these…

● Grilled salmon

with new potatoes and steamed broccoli ● Chickpea and mixed vegetable brown rice pilaf ● Wholemeal pasta, with chopped, cooked chicken and diced red pepper, tossed in low-fat soft cheese with herbs

Strike a balance Omega-3 You may not be able to eat yourself clever, but this essential fatty acid can help to maintain brain function. Find it in oils, seeds, leafy green veg and organic milk. Oily fsh is a good source of omega-3 and is perfect for supper, so tuck into fresh, smoked or canned salmon, sardines or mackerel. Starchy carbs such as potatoes, pasta or brown rice are fne as part of your evening meal, but stick to a small portion. If you eat too much of them or have supper too close to bedtime, your digestion will still be working hard, which may disrupt your sleep.

Boost levels of omega-3 at suppertime with salmon, sardines or mackerel

Snacks on the go Carry a tasty, nutritious snack in your bag to help stave of hunger, keep you alert and reduce cravings for junk food through the day

Try these… A handful of almonds or walnuts.

This protein-packed hit also provides minerals, especially cobalt (a component of energy-releasing vitamin B12); copper to help trigger the release of iron; and magnesium, also essential for energy. ● Black tea – evidence suggests this lowers stress levels†. ● Popcorn makes a savvy, carb-providing snack, as long as you go for the plain variety. ● Veggie juices are an easy way towards your 5-a-day, and blitzing whole veggies like celery and kale into smoothies will keep fbre in the mix, too. CLASSIC ICE CREAM SPEC

BITES

From exciting events to fresh, new favours, discover what’s hot in the world of cooking THE BIG CHEESE

The humble cheese toastie is being given a gourmet upgrade as chefs revamp the classic recipe. Last month saw the opening of The Melt Room, in Soho, dedicated to US-style cheese ‘melts’, including a Portobello melt (right) and a Nutella and mascarpone combo (below). Morty & Bob’s Grilled Cheese Shack is also proving a hit at London’s Broadway Market. We asked co-founder Charlie Phillips for his top tips on creating the ultimate cheesy combination of ‘ooze, stringiness and favour’.

Chosen by you: Custard Cream Ice Creams; Bourbon Ice Creams; £2 (6 x 36.7g; 91p/100g)

OUT & ABOUT ● Yorkshire Post Food and

BEST BREAD FOR A CHEESE MELT? ‘We use sourdough, which is delicious and has a good crust. Avoid a white tin loaf – a bloomer is better – and don’t slice too thickly. A trick is to use slightly stale bread – it gets nice and crispy and has structure to hold the filling.’

THE BEST CHEESE?

‘Nothing beats a mature British Cheddar, but it’s good to mix it up with other cheeses such as Gruyere or Emmental. Don’t try feta or halloumi – they won’t melt properly.’

HOW TO COOK

‘Brush melted butter on the outside of the sandwich, getting right to the edges for maximum crispness. Fry for 3-4mins. Press the sarnie into the pan with an upside-down plate at first, but remove it once the cheese starts to melt. And be careful, oozing cheese is very hot.’ 64

CIALS

The TV chef and food writer found fame with The Little Paris Kitchen and explored her Malaysian heritage in A Cook Abroad on BBC2. Her latest book, Kitchen Notebook, is out now.

Watch out for The Groundnut boys, a talented trio whose sell-out pop-up restaurants showcase the favours of their mixed African and European heritage. Go to ASDA.com/recipes to try their mouthwatering Peri-Peri Chicken and the West African staple, fragrant Jollof Rice, also featured in their soon-to-be-released The Groundnut Cookbook.

You’ve got an Austrian mum and a Malay-Chinese dad. What were your teatime favourites growing up? We mostly ate Malaysian-Chinese dishes, but I also loved Garfeld the cartoon cat and always asked Mum to make his favourite food – lasagne. Your travels inspired Kitchen Notebook. What’s the most interesting place you’ve visited? It’s hard to pick just one place as even London, my home town, is inspiring. But I loved Istanbul. The street food, architecture and atmosphere all added up to a magical place. Can you share any foolproof ideas to impress dinner guests? Let the produce do the work for you. For example, take a sun-ripened tomato that’s juicy and full of favour. Slice it, drizzle over olive oil, then sprinkle sea salt on top – and that’s your starter or side dish. There’s something to be said about keeping things simple and using the best you can aford. I often serve just one fabulous cheese for the cheese course rather than several ordinary ones.

Your kitchen in the Little Paris Kitchen TV series was tiny. What’s your advice for cooking in a small area? It’s all about being organised, so that every utensil has a home. Displaying pots and plates on a bookshelf, for example, frees up kitchen space. You don’t need a lot of gadgets either. A hand-held blender with attachments will get most tasks done.

ON MY BOOKSHELF Deputy Food Editor Gregor McMaster says… ‘As barbecue season gets into full swing, I always reach for Jamie’s America cookbook. It’s packed with recipes that refect the rich heritage of the States, including Surf & Turf Gumbo and Chilli Cheese Cornbread. But I’m not sure I’ll be trying the Cajun Alligator recipe!’ For more US-inspired recipes, go to p21.

Cocktail classic Our Stateside-style recipes have got us in the mood for bourbon (American whiskey) – so celebrate with a refreshing Mint Julep. Put 2tsp caster sugar, 5 mint leaves and a handful of crushed ice in a glass and mix together well. Pour over 2 shots of American bourbon plus a splash of water, then mix again. Serve topped with a sprig of mint.

Dad knows best To celebrate Father’s Day, we asked celebrities to share the advice, tips and traits that their dads passed on to them

Warwick Davis Actor

‘My dad never pandered to me. If I wanted something from a high shelf [Warwick sufers from a condition afecting bone growth], he let me work it out by myself – because Mum and Dad won’t always be there. I’m the same with my kids [the condition was passed on to his two children]. I often see them climbing up shelves to get things.’

Ricky Gervais Comedian and actor

‘My dad was a labourer and he used to get up at 5.30 every morning. He worked for 50 years of his life, in all weathers, for – by showbiz standards – petty cash. I remind myself of that when I’m feeling a little bit hard done-by.’

70 | JUNE 2015

Alex Jones Host, The One Show ‘Dad’s driving advice is what I remember most: “When coming up to trafc lights, change down through the gears, otherwise you’ll spoil your gearbox.” I always follow that advice.’

‘I’ve got a big jaw. I got that from my father. Thank you very much, Dad!’ Kelly Osbourne Presenter and fashion designer

Bear Grylls Adventurer ‘My dad taught me that if you have very cold fngers, swing your arms really fast with your palms open, so that the force drives the blood to your fngertips. It works brilliantly!’ Bear’s new book, Ghost Flight, is out 4 June, priced £9

LIFE LESSONS

The Loose Women

‘My father told me, “Never be afraid to ask a stupid question.” I’ve based my career on it.’

‘My dad loves hooks! Every time he visited me when I was at college, he would scan my home looking for somewhere to put a hook. No door – or cupboard door – was safe! The love of hooks has been passed on to me. Now, my house is flled with hooks for tea towels, dustpans and brushes… I couldn’t do without them.’

Nadia Sawalha ‘My dad showed me how to fll a skip, “so you get every penny’s worth!”’

‘My father used to say: “If you can’t be good then don’t get caught.”’

Umar and Baasit Siddiqui Gogglebox

Phil Spencer Host, Location, Location, Location

Rafe Spall Actor ‘My dad [actor, Timothy] taught me that even if you get past the casting director’s door, you’ve still got to do your homework – you’ve still got to work hard. It’s a lesson I always remember’

From left: Umar, Sid, Baasit ‘‘Dad [fellow Gogglebox star, Sid] gave us DIY tips. Don’t stand close to a radiator when bleeding it because you’ll get soaked. When changing tyres, slightly undo the nuts while the tyre is on the foor before jacking the car up. He also taught us how to mix cement, porridge and wallpaper paste so they don’t get lumpy (not all together, obviously!).’

‘Home or away?

The BIG debate

Home Anne Clark, mum to Will, 15, and Caitlin, 13 ‘Holidaying in the UK suits us completely – the whole family loves it, including the dog. ‘There’s no hassle with jabs, passports or plane tickets. It’s also cheaper than going abroad (plus, our teens can text their friends without it costing a fortune). But those aren’t the only reasons. ‘There’s so much to explore here on our own doorsteps: Scotland, the Lake District, the mountains and the sea… I think it’s important to show the kids their heritage and history, and it’s fascinating to see how the culture and the landscape changes as you travel around the UK. ‘We love doing National Trails walks through all those amazing landscapes that you can only really appreciate on foot. We also visit landmarks, so the kids can see where the history they learn at school actually happened. We mix it up a bit: my husband likes visiting ancient battle sites,

the kids love theme parks, and for me, it’s all about the countryside. But wherever we go, we can do it at the drop of a hat. Plus, we can meet up with friends and relatives along the way. ‘Even if our holiday goes horribly wrong (especially with the weather), we can laugh about it – or of course, go home. But it’s never come to that. One year, we went to Cornwall in a borrowed camper van. It rained non-stop, the back-up electricity failed, the van broke down… and we still had a great time, just like we always do.’

‘There’s so much to explore on our own doorstep’

JUNE 2015

Away Ruth Parry, mum to Ella, 15, and Ben, 14 ‘As far as I’m concerned, a holiday only starts when we touch down on foreign soil. My husband and I have always loved travelling, and even before we had children, we agreed we’d take them abroad too. ‘When our kids were still toddlers, we did camping holidays in France. Then, once they were both over four, we started going further afeld, getting them used to non-package holidays. And now they’re teenagers, we always opt

for “adventurous” getaways. When we’re abroad, we use public transport, eat out locally and try to experience the culture of the place. It’s a cheaper way to travel and it’s also what we love doing. ‘It’s important to show kids that the world’s out there to be explored – it’s an education for them. Of course, we don’t focus on “educational activities”, but I think it’s great to see how other people around the world live. And some of it does link back to school – like our trip to Egypt, when we saw the pyramids! ‘It never gets boring. As they’ve got bigger, we’ve just increased the activity levels and thrown in a few more challenges. When my daughter was very little, she wanted a globe to see where we’d been – now she plans to go travelling when she’s fnished school. ‘It’s a great investment in family life – we’re making memories that we can share for ever. We often talk about our holidays and look through the photos. ‘I love visiting places in the UK, too, but it’s only when I’ve been through passport control that I’m really in the holiday mood.’ For great ideas for holidays in both the UK and abroad, go to ASDA.com/travel
