While planning this issue, we discussed what makes our dads so special. Funnily enough, the things they did badly topped the list – bad jokes, dancing and fashion sense. Maybe it’s because dads revel in embarrassing us, secure in the knowledge that there’s little we can do about it! My dad’s sense of humour is defnitely an acquired taste. He used to spike up our hair for school to make us look silly. Even now he always asks for the ‘smelling salts’ when we go shopping together (because the bill is so ‘extortionate’). But I secretly love recoiling at his jokes as much as he loves telling them. He’s mine and I wouldn’t change him for the world. In May he walked me down the aisle at my wedding after helping make it all happen, so to celebrate both his birthday and Father’s Day this month, I think he deserves a special thank you – love you lots, Dad. Make sure you tell your dad how much he means to you this Father’s Day, too!

MANGETOUT Sweet, crisp mangetout
peas are perfect in light summer dishes. The freshfavoured pods are delicious raw in salads or with dips, or served lightly steamed or boiled as a side.

Mangetout means ‘eat all’ in French – the tiny peas are not removed from the pod – it’s enjoyed whole
In a frying pan, lightly cook a few generous handfuls of fresh mangetout, plus one or two sliced cooked beetroot, in a little vegetable oil. Remove from the heat, then toss with torn mozzarella and some finely diced shallot. Drizzle with a dressing made from olive oil, honey, a little mustard and a touch of creme fraiche.

Spicy chilli spinach v Melt some butter in a frying pan, then add chopped red chilli, crushed garlic and a little lemon juice. Add some spinach and cook, stirring, until wilted. Serve warm, topped with crispy-fried breadcrumbs.

They’re simple to prepare, too – just top, tail and slice before cooking. Stringless beans can be served boiled or steamed as a simple side dish. Bean & bacon salad Melt some butter in a frying pan. Add sliced and blanched stringless beans, chopped red chilli and crushed garlic, plus lemon juice to taste. Cook lightly so the beans are tender but not overdone. Serve topped with crispy bacon and flaked almonds.

Loaded potato skins Top potato skins with creamy cheese and crispy bacon for a classic US side dish SERVES 8 READY IN 2HRS PRICE PER SERVING 37p Preheat the oven to 200C/180C Fan/Gas 6. Wash 4 baking potatoes, then pat dry with kitchen roll. Prick with a fork, rub with 1tbsp sunflower oil, then sprinkle with 2tsp coarse sea salt. Bake for 1hr 15mins, or until the skins are crisp and the potatoes are cooked through. Leave to cool for 15mins. Cut in half and scoop out some
of the potato fesh, leaving a thin layer inside the skins. (The leftover potato can be used for mash.) Meanwhile, grill 4 rashers streaky bacon until crisp, then cut into pieces. Mix 150ml reduced-fat sour cream with 125g grated Cheddar and 3tbsp chopped chives. Divide between the potato skins. Heat through on the barbecue or grill for 5mins. Japanese edamame bean & plum salsa v Finely chop the contents of a pot of Chosen by you Edamame Bean Salad. Add some finely chopped plums, skin on. Mix a little soy sauce with a dash of wine vinegar. Stir through.

Raspberry lemonade ice lollies
Pour some lemonade into a jug – you’ll need enough to half-fll 8 lolly moulds – and leave until almost fat. ● Slice a nectarine, peeled kiwi fruit, a few grapes and hulled strawberries (or use other fruits if you like). Divide half the fruit between the moulds. ● Add lemonade to half-fll. Freeze for 1hr. Repeat with the remaining fruit, then add lemonade to fll almost to the top of the moulds. ● Add lolly sticks and freeze for 30mins. Check that the sticks are upright, then freeze for 2-3hrs.
In a large jug, pour enough lemonade to fll about two-thirds of the way up your lolly moulds. Leave it until it stops fzzing. ● Put a few fresh raspberries (or any other soft fruit you like) in each of the moulds, gently squeezing to release a little juice. ● Half-fll the moulds with lemonade, then freeze for 2hrs. ● Add another layer of berries. We’ve given classic peach and raspberry ice-cream a refreshing twist by serving it as a frozen mousse dessert, known as a semifreddo (Italian for ‘half cold’) SERVES 8 READY IN 5HRS PRICE PER SERVING 47p 411g can peaches in fruit juice 3 large egg yolks, plus 2 egg whites 90g caster sugar 150g fresh raspberries 2tsp lemon juice 75g Asda Full Fat Greek Yogurt 1 Line a 24cm loaf tin with a double layer of clingflm.
2 Drain the peaches and reserve 2tbsp of the juice. Puree the peaches and juice. 3 Put 2 of the egg yolks in a basin with 25g of the caster sugar, then whisk over a pan of hot water until pale and creamy – make sure the bottom of the basin doesn’t touch the water.
4 Remove the basin from the pan of water, then stir the peach puree into the egg yolk mixture. 5 Whisk 1 of the egg whites until stif, then whisk in 25g sugar, 1 heaped tsp at a time. Fold into the peach and egg mixture, then transfer to the prepared tin. Freeze. 6 For the raspberry layer, blend the berries with the lemon juice, then sieve to get a smooth, even puree with no pips or lumps. 7 Whisk the remaining egg yolk with 20g sugar over
hot water, as in step 3. 8 Add the raspberry puree to the egg yolk mixture, then stir in the yogurt. 9 Whisk the remaining egg white and sugar, as in step 5. Fold into the berry mixture. 10 Pour over the frozen peach layer. Return to the freezer for at least 4hrs. To serve, thaw for 10mins, then turn out of the tin and slice.

Brewing up a storm As Britain’s oldest brewery, Shepherd Neame draws on more e than 300 years of experience to produce Asda’s exclusive quality ales ) This is a really exciting time to be brewing, says Richard Frost, head brewer at Shepherd Neame. The family-owned business combines all-natural, traditional ingredients and state-of-the-art equipment to produce a selection of fne Kentish ales – including four exclusively for our Extra Special range. ‘Nothing quite matches our traditional ales for depth and diversity,’ says Richard (pictured above). His 85-strong team now produces 70 million pints of beer a year at the Kent brewery, which uses only local hops.
Where it all began Based in the Kent market town of Faversham, Shepherd Neame is the oldest brewery in the UK. It dates back to 1698, when n William William III was
on the throne, though there’s evidence that beer has been made at the site since 1573. How the beer is made
The Shepherd Neame team use just four main ingredients to produce their ale: malted barley, hops, water and yeast. The barley is frst crushed to produce a ‘grist’, which is then mixed 40

with hot spring water in a container known as a mash tun, to produce a sweet malt extract known as wort. This is transferred to a large brew kettle, or ‘copper’, where it’s combined with hops and boiled to extract the bitterness. ‘My favourite
moment is when the coppers are boiling and the air is flled with wonderful hop and malt aromas,’ says Richard. Finally, once the wort has cooled, the yeast is added and the beer is left to ferment in huge tanks.

She usually serves it with a rice salad, or try it dolloped on slices of toasted ciabatta SERVES 6 AS A SIDE READY IN 50MINS, PLUS 30MINS COOLING PRICE PER SERVING £1.09 613g pack Butcher’s Selection Chicken Breast Fillets 6 dried apricots 1 chicken stock cube 50g Greek yogurt 1tbsp sunflower oil 1 level tbsp mild curry powder Zest of 1 lime, plus 1tsp juice 50g reduced-fat mayonnaise 2tbsp mango chutney 1 large mango, cubed 1 red chilli, deseeded and finely chopped Rice salad, to serve Radish slices and lemon wedges, to serve
1 Put the chicken breasts and apricots in a pan, and cover with water. Crumble in the stock cube and bring to a simmer. Gently cook for 35mins, until the chicken is cooked through. Take the pan of the heat and set aside to cool. 2 Remove the apricots with a slotted spoon, then puree with a hand-held blender. Add the yogurt and blend until combined. Set aside. 3 Put the oil in a pan over a very low heat. Add the curry powder. Cook, stirring, for 2mins, then stir in the lime juice. Set aside to cool.
4 Mix the curry oil mixture into the yogurt and apricot sauce. Add the mayonnaise and mango chutney, and stir to combine. 5 Cut the chicken into slices. Add to the curry sauce along with the cubed mango and red chilli. Mix together. 6 Serve the coronation chicken on the rice salad, and top with slices of radish and lemon wedges.

Spoon into 8 shot glasses and press down lightly. Leave in the fridge to set. 2 In a microwave-proof bowl, beat together the sour cream, sugar and cornfour mixture. Cook in the microwave on 60% power* for 1min. Stir, then cook for a further 1min. 3 Leave for 5mins, then mix in the soft cheese, vanilla extract and lime juice. Pour in the egg yolks, stirring. Leave to cool, then pour on the biscuit bases. Chill. 4 Top with lime zest and biscuit crumbs, to serve.

Power lunches
As well as giving you a break, lunch is your chance to reboot your energy levels. Making the right food choices can also help prevent mid-afternoon hunger pangs, so you’ll be less likely to grab a biscuit or other sugary snacks.
Midday marvels Complex carbohydrates such as fresh, canned or frozen veg and fruit, and whole grains, provide fuel for the muscles, brain and nervous system. Plus, the energy release may be slower and longer lasting, with fewer highs and lows, than when you eat starchy carbs. So opt for wholemeal pasta and bread, or brown rice, instead of white. Iron is a key part of the red blood cells that zip around your system carrying energy-giving oxygen. Sources include beef, pork, lamb, chicken or turkey, which all contain protein, too. Don’t overdo it though – the NHS recommends limiting your daily intake of red meat to 70g* (cooked weight). For a veggie lunch, try a bean salad, egg sandwiches or houmous. Vitamin D may help to maintain the immune system**, according to research. It also helps your body absorb the minerals calcium and phosphorus, both of which are essential for healthy bones. You’ve got an Austrian mum and a Malay-Chinese dad. What were your teatime favourites growing up? We mostly ate Malaysian-Chinese dishes, but I also loved Garfeld the cartoon cat and always asked Mum to make his favourite food – lasagne. Your travels inspired Kitchen Notebook. What’s the most interesting place you’ve visited? It’s hard to pick just one place as even London, my home town, is inspiring. But I loved Istanbul. The street food, architecture and atmosphere all added up to a magical place. Can you share any foolproof ideas to impress dinner guests? Let the produce do the work for you. For example, take a sun-ripened tomato that’s juicy and full of favour. Slice it, drizzle over olive oil, then sprinkle sea salt on top – and that’s your starter or side dish. There’s something to be said about keeping things simple and using the best you can aford. I often serve just one fabulous cheese for the cheese course rather than several ordinary ones.
Your kitchen in the Little Paris Kitchen TV series was tiny. What’s your advice for cooking in a small area? It’s all about being organised, so that every utensil has a home. Displaying pots and plates on a bookshelf, for example, frees up kitchen space. You don’t need a lot of gadgets either. A hand-held blender with attachments will get most tasks done.

Home Anne Clark, mum to Will, 15, and Caitlin, 13 ‘Holidaying in the UK suits us completely – the whole family loves it, including the dog. ‘There’s no hassle with jabs, passports or plane tickets. It’s also cheaper than going abroad (plus, our teens can text their friends without it costing a fortune). But those aren’t the only reasons. ‘There’s so much to explore here on our own doorsteps: Scotland, the Lake District, the mountains and the sea… I think it’s important to show the kids their heritage and history, and it’s fascinating to see how the culture and the landscape changes as you travel around the UK. ‘We love doing National Trails walks through all those amazing landscapes that you can only really appreciate on foot. We also visit landmarks, so the kids can see where the history they learn at school actually happened. We mix it up a bit: my husband likes visiting ancient battle sites,
the kids love theme parks, and for me, it’s all about the countryside. But wherever we go, we can do it at the drop of a hat. Plus, we can meet up with friends and relatives along the way. ‘Even if our holiday goes horribly wrong (especially with the weather), we can laugh about it – or of course, go home. But it’s never come to that. One year, we went to Cornwall in a borrowed camper van. It rained non-stop, the back-up electricity failed, the van broke down… and we still had a great time, just like we always do.’

Away Ruth Parry, mum to Ella, 15, and Ben, 14 ‘As far as I’m concerned, a holiday only starts when we touch down on foreign soil. My husband and I have always loved travelling, and even before we had children, we agreed we’d take them abroad too. ‘When our kids were still toddlers, we did camping holidays in France. Then, once they were both over four, we started going further afeld, getting them used to non-package holidays. And now they’re teenagers, we always opt
for “adventurous” getaways. When we’re abroad, we use public transport, eat out locally and try to experience the culture of the place. It’s a cheaper way to travel and it’s also what we love doing. ‘It’s important to show kids that the world’s out there to be explored – it’s an education for them. Of course, we don’t focus on “educational activities”, but I think it’s great to see how other people around the world live. And some of it does link back to school – like our trip to Egypt, when we saw the pyramids! ‘It never gets boring. As they’ve got bigger, we’ve just increased the activity levels and thrown in a few more challenges. When my daughter was very little, she wanted a globe to see where we’d been – now she plans to go travelling when she’s fnished school. ‘It’s a great investment in family life – we’re making memories that we can share for ever.
