Love is in the air… and I’m not just talking about Valentine’s Day! I’m talking about chillies, the star ingredient of our Flavour of the Month feature on page 25. My love affair with chillies began fairly late – I ate them in childhood chilli con carnes but didn’t enjoy them properly until my first Thai green curry. A honeymoon period of sweet chilli sauces and jams, chilli oils, Tabasco, cayenne and chorizo followed, and I flirted with powders and dry flakes before finally settling down with fresh chillies. Like any relationship it can be tough at times. The highs – the unmistakable warmth peeking through the simplest of casseroles, marinades and sauces. The lows – the occasional over seasoning, like being scolded after a lover’s tiff. In this issue, we’ve also indulged our passion for all things romantic – from a tempting dinner for two on page 57 to an Extra Special meal deal on page 62, plus flowers, cards and gifts, and a whole lot more. Break open the
Champagne Deep beneath the cathedral city of Reims in north-east France lies 150 miles of chalk cellars, which store millions of bottles of Champagne. It’s a huge draw for wine lovers who come to explore this underground maze beneath many of France’s famous Champagne houses. The city is also home to GH Martel, a fifth-generation family winery that produces the Louvel Fontaine range of Champagnes for Asda. Just like the four generations before them, brothers Vincent Rapeneau (General Manager) and Christophe (Cellarmaster and CEO) are both passionate about Champagne and making sure the right processes are in place to produce this world-class fizz. There are different types of sparkling wine produced around the world, but Vincent says that only those produced with grapes grown in the region can be called Champagne. And it’s the chalk soil that lies across the region that is key to creating ideal conditions for the grapes. ‘The chalk soil retains heat in the summer and absorbs water during the winter – which gives water back to the roots in the warmer months,’ he says. ‘The chalk cellars also help keep the bottles cool while the Champagne is ageing. In season How to make the most of the tastiest produce available in store this month at Asda
RHUBARB TART ♦ Preheat the oven to 200C/ 180C Fan/Gas 6. Cut 400g rhubarb into 8cm lengths and put in a shallow dish. Sprinkle with 2tbsp sugar and 100ml apple juice. Bake for 10-15 minutes until the rhubarb is just tender. Cool. ♦ Roll out 500g puff pastry to a rectangle 20cm x 32cm. Trim the edges with a sharp knife. Mark around the rim, 2cm from the edge, without cutting right through the pastry. Put on a baking tray. ♦ Whisk 1 level tbsp caster sugar and 100g soft cheese together. Whisk in 1 large egg yolk. Spread onto the pastry, avoiding the rim. ♦ Lift the rhubarb out of the juice and arrange on the pastry. Bake for 20-25 minutes. Serve with cream, ice cream or custard. CALORIES

Spotlight on FORCED RHUBARB Grown in dark heated sheds and harvested by candlelight to encourage fast growth, this rhubarb has a lush sweet taste. Wash and trim the stalks, then cut into pieces for pies, jellies and jams. Trimmed stalks will keep in the fridge for three days. I love leeks at this time of year. Although they’re in store all year round, winter leeks tend to have a stronger flavour. To prepare them, remove the tough outer leaves. Cook in a little oil with sliced celery and chopped carrots for a great base for soups. Cut into strips and use in stir-fries, or sauté in a little butter for 5-7 minutes, stirring, for a tasty side dish. You could also try our cheesy leeks recipe, right. Store raw leeks in a plastic food bag in the fridge for up to five days. To freeze them, blanch in boiling water for 2 minutes and allow to cool. Use in casseroles and pasta sauces.
CHEESY LEEKS ♦ Remove the tough outer leaves of 4 leeks, then top, tail and wash. Cut each in half and boil for 4 minutes. Drain. Put in an ovenproof dish. ♦ Melt 25g butter in a pan, then remove from the heat and stir in 25g flour and mix together well. Return to the hob and gradually whisk in 350ml milk until the mixture boils and thickens.

♦ Remove from the heat and add a pinch of cayenne pepper, 1tsp mustard and 30g mature Cheddar. Pour over the leeks. ♦ Sprinkle 15g Cheddar and 50g breadcrumbs on top. Bake at 190C/170C Fan/Gas 5 for 15 minutes. Serves 4 CALORIES

HOW TO PREPARE Halve, then scoop out the pulp and seeds and use in jellies or as a topping for pavlovas. Also, freeze in ice cube trays and add to drinks.

PASSION FRUIT DRESSING ♦ Make a base of three parts olive oil to one part vinegar. ♦ Mix in a squeeze of lime juice and a little honey. ♦ Add the pulp and seeds of two passion fruits. Mix and serve with an avocado salad.
TROPICAL SMOOTHIE ♦ Sieve the pulp of a few passion fruits to remove the seeds. Blend the passion fruit pulp with pieces of ripe mango, banana and a glass of orange juice. ♦ Serve in a tall glass with ice.
ETON MESS ♦ Whip some double cream until it just starts to thicken. ♦ Break a few meringue nests into small pieces. Fold Into the whipped cream, adding the seeds and pulp of several passion fruits. Chill.

Tomato & chilli chutney

To make this hot, medium or mild, adjust the amount of chillies to suit your taste 1.5kg vine-ripened tomatoes 2 large red onions, chopped 600g Bramley cooking apples (peeled weight), cored and roughly chopped 3cm piece root ginger, peeled and grated 4-6 large red chillies, finely chopped (remove the seeds for a milder flavour) 2 garlic cloves, finely chopped 150g sultanas 600ml red wine vinegar
350g light soft brown sugar 1½ level tsp mustard powder Make a small cut in the bottom of each tomato and put in a large heat-proof bowl. Cover with boiling water and leave for exactly 1 minute. Drain, then skin the tomatoes. Chop and put in a very large saucepan or preserving pan. Add the other ingredients, plus 2 level tsp salt, and heat

gently, stirring, until boiling. Simmer, uncovered, until the mixture is thick. This will take about 2 hours. As it starts to thicken, stir often so it doesn’t catch on the bottom. To test if it’s ready, draw a wooden spoon across the base of the pan – if you can see the bottom, it’s ready. Half an hour before the chutney is ready, wash the jars and lids in hot soapy water.
Rinse and put in the oven for 15 minutes at 140C/120C Fan/ Gas 1. Spoon the chutney into the hot jars, close and leave for at least 6 weeks for the flavour to mature. They will keep for up to a year if the jars are not opened – store in a cool, dark cupboard. Once you open a jar, keep it in the fridge and use within 2 weeks. CALORIES

Bring to the boil, cover and simmer gently for 10 minutes. Add the peppers and aubergine, return to the boil, cover and simmer for another 10 minutes. Add the pinto beans and simmer for 5 minutes. Serve with rice mixed with coriander.

The rich, sweet flavour of the chocolate complements the spicy kick of chilli 175g plain flour, plus extra for rolling out 100g butter, chilled, cut into small cubes 2 level tbsp icing sugar 50g walnuts, ground ½-1tsp dried crushed chillies (depending on how hot you like it) 300ml single cream 150g Asda Dark Chocolate (50% cocoa solids) 50g caster sugar 2 large free-range eggs 2-3 drops vanilla extract
Preheat the oven to 200C/180C Fan/Gas 6. Sift the flour and a pinch of salt into a bowl. Rub in the butter until the mixture resembles breadcrumbs. Stir in the icing sugar and walnuts. Sprinkle 1½-2tbsp chilled water over the surface and mix with a round-bladed knife until it forms clumps. Gather together with your hands to make a stiff dough. Put the pastry on a lightly floured surface and roll out to the thickness of a £1 coin. Use
to line a 23cm-deep flan case. Prick the base with a fork and lay a piece of foil, shiny-sidedown, inside. Weigh the foil down with dry rice. Bake for 10 minutes, then remove the foil and rice and return to the oven for 5 minutes. Reduce the oven to 160C/140C Fan/Gas 3. Put the crushed chillies in a small pan with the cream. Heat until almost boiling, then set aside for 5 minutes and allow to infuse. Break the chocolate into squares and put in a bowl.
Pour the hot cream onto the chocolate and stir until the chocolate melts. In another bowl, whisk together the caster sugar, eggs and vanilla extract until pale. Pour on the chocolate cream, stirring all the time. Pour into the flan case to come just below the top. Bake in the oven for 20-25 minutes until almost set in the middle. Serve warm or cold. The great thing about pulled pork is you can put it in the oven and forget about it. The trick is to slow-cook it at a low temperature to get it beautifully tender. Pouring in the cider also means the meat ‘steam roasts’ so is extra moist. We’ve served our pulled pork with homemade creamy coleslaw with apple and barbecue sauce for a smoky flavour.

How to make it H In America, pulled pork is cooked according to regional preference, but it’s often done using a re smoking method. Our version is slow-cooked in sm a conventional oven so it soaks up all of the juices Mix together the paprika, chilli powder, mustard powder, onion granules, salt and sunflower oil. Rub it all over the meat – but not on the skin. Put in a dish skin-side up. Cover loosely with clingfilm and refrigerate for at least 1 hour. Preheat the oven to 160C/140C Fan/Gas 3. Put the pork in a roasting tin, skin-side up, and pour the cider around the meat. Cover the tin with foil and then seal the foil to the tin edges, leaving enough room inside for air to circulate. Cook in the oven for 3½ hours. Remove the foil and discard. Increase the oven temperature to 200C/180C/
Jim’s tips ● The easiest way to shred pork is to use two forks and pull the meat apart into strands. ● To use up leftover pork, you could add to egg-fried rice or mix with beansprouts and then use to fill homemade spring rolls. ● To freeze leftover cooked pork, allow to cool at room temperature, cover tightly with clingfilm and freeze within an hour after cooking.
Gas 6 and cook, uncovered, for a further 30 minutes. Pull the pork into shreds – the meat will be meltingly tender now – and serve in ciabatta with the creamy coleslaw with apple (recipe below) and barbecue sauce. CALORIES

Drain the pasta and peas in a colander. Put the soft cheese, milk and half the Parmesan cheese in the saucepan and stir gently over a low heat until smooth and hot. Add the cooked ham and heat through. Season with black pepper.

Beef stir-fry Have all your ingredients prepared and close to hand before you start stir-frying because they’ll cook really quickly 2 nests Asda Egg Noodles from a 250g pack (about 170g) 2tbsp groundnut oil or sunflower oil, plus 1tsp for the noodles 400g rump steak, trimmed of fat and cut into bite-size pieces 4 spring onions, trimmed and sliced 150g carrots, cut into small sticks 150g broccoli, cut into small florets 250g mushrooms, halved

Simmer for 4 minutes, then drain. Toss with 1tsp oil and set aside. Heat 1tbsp oil in a wok and stir-fry the steak for 3-4 minutes or until it’s just

This creamy and lightly spiced recipe uses reduced-fat crème fraîche for a lighter curry that’s perfect for using up root vegetables 125g carrots, thickly sliced 125g potatoes, peeled weight, cut into bite-size pieces 125g parsnips, peeled weight, cut into bite-size pieces 1 large onion, chopped 1tbsp sunflower oil 200g jar Asda Chosen by you Korma Curry Paste 400g can chopped tomatoes 100g frozen peas 100g fine green beans, trimmed and cut in half
400g can chickpeas, drained and rinsed 1 level tbsp cornflour, mixed with 2tbsp water 75ml reduced-fat crème fraîche Asda Good For You Naan Bread and lime wedges, to serve Put the carrots, potatoes and parsnips in a pan, cover with cold water and bring to
the boil. Simmer for 5 minutes. Drain and set aside. Cook the onion in the oil in the saucepan, over a low heat, until soft but not coloured. Stir in the curry paste and cook over a low heat for another 30 seconds. Add the carrots, potatoes and parsnips and stir to coat everything. Add the tomatoes and 100ml water and heat until simmering. Cover and
simmer for 15-20 minutes. Add the peas and beans and bring back to the boil. Simmer for another 6 minutes until the beans are just tender. Add the chickpeas and cornflour, then simmer for 2 minutes. Stir in the crème fraîche and heat. Serve with naan and lime wedges.

Haddock bake A colourful, no-fuss supper that’s packed with Mediterranean vegetables 600g potatoes, cut into bitesized pieces 2tbsp mild olive oil 1 garlic clove, crushed ½ tsp dried mixed herbs 1 lemon 500g haddock fillet, skinned 2 red or yellow peppers, deseeded and cut into chunks 1 large courgette, sliced 200g cherry tomatoes 2tsp finely chopped fresh parsley
Preheat the oven to 220C/ 200C Fan/Gas 7. Put the potatoes in a pan and add enough cold water to just cover them. Bring to the boil and simmer for 5 minutes. Drain and pat off any excess moisture with kitchen paper. Mix 1tbsp of the olive oil with the crushed garlic and dried herbs, then toss the potatoes in this mixture. Spread out on a baking tray. Quarter the lemon. Put the

fish on a plate and squeeze over a little lemon juice. Season and set aside. Add the lemon wedges to the potatoes and cook in the oven for 25 minutes. Meanwhile toss the peppers and courgettes in the remaining oil and put on a lined baking tray. Cook in the oven, at the same time as the potatoes, for 20 minutes. Add the tomatoes and fresh parsley to the peppers
and courgettes and cook for another 5 minutes. Move the potatoes to the sides of the tray and put the fish in the middle. Cook for another 8-10 minutes or until the fish flakes easily. Mix all the vegetables together and serve on a platter with the baked haddock and lemon wedges.

Return to the oven and cook for another 10 minutes, turning the ribs in the sauce and basting them after 5 minutes. Put the rice in a saucepan

Classic pancakes
Don't forget Pancake Day on 12 February. Serve this basic pancake recipe with traditional lemon and sugar, or try our alternative fillings opposite 125g plain flour Pinch of salt 2 large free-range eggs 350ml semi-skimmed milk 1tbsp sunflower oil, plus extra for greasing Caster sugar and lemons, to serve Sift the flour and salt into a large bowl and make a hole in the centre. Break the eggs into
the hole and add 75ml of the milk and the oil. Whisk the eggs, milk and oil using a wire whisk. Gradually draw in the flour, whisking all the time until you have a thick, smooth batter. Gradually add the rest of the milk, whisking gently, until you have a smooth batter. Crumple up a piece of kitchen paper and soak the end in oil. Use this to grease

a small nonstick frying pan. Heat the pan, then pour in just enough batter to thinly coat the base of the pan, swirling it around to completely cover it. Cook for about 30 seconds. Flip the pancake using a fish slice and cook the other side until golden. Slide onto a plate. Repeat until all of the batter is used up, greasing the pan a little when needed.
Serve immediately with lemon juice and caster sugar. REHEATING TIP Stack them on an ovenproof plate and cover with foil. Reheat in the oven at 180C/160C Fan/Gas 4 for 10 minutes. Or cover the plate with clingfilm and reheat in the microwave on high for 1 minute. CALORIES

Apple & raisin

Peel, core and thinly slice eating apples (Cox’s or Granny Smith). Cook until tender in a pan with a splash of apple juice, a handful of raisins, a spoonful of brown sugar and a pinch of ground cinnamon. Stir often until the apples are tender and most of the juice has evaporated. Put on pancakes and roll up.
Strawberry & orange Gently heat some strawberry preserve or jam with a splash of orange juice and stir to combine. Add quartered or sliced, trimmed fresh or canned strawberries and heat gently until just hot. Put on pancakes and roll up.
Leek & goat’s cheese Cook some finely chopped leek (white part only) in a covered pan with a knob of butter until really soft. Season and put a spoonful on each pancake. Add a little crumbled goat’s cheese and roll up.
Spinach & ricotta Stir-fry baby leaf spinach in a nonstick pan until wilted. Season well, remove from the heat and stir in some ricotta and grated Parmesan or mature Cheddar. Put on pancakes and roll up.
Chicken & bacon Roughly chop some bacon and fry in a nonstick pan until starting to crisp. Add chopped fresh thyme, diced, cooked chicken and cook for 2 minutes. Stir in a dollop of reduced-fat crème fraîche and season well. Put on pancakes and roll up.

1 garlic clove 400g can chickpeas, drained 2tbsp lemon juice 2tbsp peanut butter 1tbsp olive oil 1 red and 1 yellow pepper 1 carrot 2 wholemeal pittas 2 level tsp sesame seeds ½ level tsp paprika Cut the end off the garlic, then peel and finely chop the clove. Put in a bowl with the chickpeas, lemon juice, peanut butter and oil. With adult supervision, use a handheld blender to blitz the ingredients together. Halve and deseed the peppers and cut into thick slices. Cut the top and bottom off the carrot, then peel and slice into thick sticks. Put the pitta breads on a baking sheet and sprinkle a little water over them. Ask an adult to toast the pittas under the grill until puffed up. Slice when cool. Put the houmous in a bowl and sprinkle on the sesame seeds and paprika. Serve with the peppers, carrots and pittas. The houmous will keep in the fridge, covered, for 2-3 days.

Meal for two No need to book a restaurant – celebrate Valentine’s Day with an intimate, candlelit three-course meal for two at home
Prawns with ginger & lime A simple yet impressive starter to get the evening off to a good start 240g pack Asda Frozen Raw King Prawns, defrosted 1tbsp groundnut oil or sunflower oil 1 garlic clove, thinly sliced 2cm piece fresh root ginger, peeled and cut into slivers ½ lime zest, grated
3-4tbsp lime juice, freshly squeezed 2 lime wedges, to garnish Crusty bread, to serve Drain any liquid from the defrosted prawns and pat them dry with kitchen paper.
Heat the oil in a large frying pan and cook the garlic and ginger over a low heat for 30 seconds until just cooked – don’t let the garlic brown. Add the prawns and stir-fry for 1 minute over a medium heat until they start to turn pink.

Don’t be afraid to try making this pasta at home – it’s easier than you may think and you don’t need a special machine to create it. After all, Italian cooks have been making it at home for centuries. And once you’ve mastered the recipe, why not experiment with different fillings, shapes and sizes? Have fun with it!
Filling 15g butter 150g butternut squash, (weighed without seeds and skin), cut in 1cm cubes 1 sage leaf 2 cardamom pods, squashed 100g ricotta

Sauce 25g unsalted butter 15g pine nuts 3-4 sage leaves, shredded or 8 small whole leaves 15g Parmesan, shaved
Preheat the oven to 190C/170C Fan/Gas 5. Grease a square of foil with butter and put the squash, sage and cardamom pods in the centre. Season lightly. Seal the edges to form a parcel, leaving room for air to circulate. Cook for 20-25 minutes. Tip into a bowl and leave to cool. Discard the cardamom and sage. Add the ricotta, then mash together.
2 Sift the flour into a bowl, make a hole in the centre and drop in the eggs and oil. Mix the eggs and oil together with your fingers, then gradually work in the flour until evenly mixed to a stiff dough. Lightly flour a work surface and knead the dough for 10 minutes until it’s really smooth and a bit stretchy. Wrap in clingfilm and leave in a cool place for 1 hour.

with the recipe, allowing the pasta dough to rest and the finished ravioli parcels to dry.
3 Cut the dough in two. Wrap one half in clingfilm and place the other on a lightly floured surface. Roll out a 18cm x 24cm rectangle to the thickness of a penny and cut out 12 x 6cm squares. Put the squash in a piping bag with a large nozzle and pipe onto the centre of each square. Roll out the remaining dough and cut into 12 squares. Brush the edges of the topped squares with water.
4 Place an unbrushed square over the squash, then pinch the edges and seal all around to make parcels. Place on a wire rack and leave for 20-30 minutes to dry. Boil a pan of salted water, add the pasta and simmer for 3-4 minutes. For the sauce, put the butter, nuts and sage in a pan and heat gently. Cook over a low heat until the nuts start to brown. Tempt your partner with this indulgent chocolate and cream dessert 25g Asda Plain Flour ½ level tsp baking powder 1 level tbsp cocoa powder 25g ground almonds 50g dark chocolate (70% cocoa solids) 1tbsp cold strong black coffee 50g butter, cut into cubes 1 large free-range egg, separated 50g caster sugar Cream and berries, to serve Preheat the oven to 180C/160C Fan/Gas 4. Grease the inside of two
ramekins, then line the bases with baking paper. In a bowl, sift together the flour, baking powder and cocoa. Stir in the almonds and set aside. Break the chocolate into squares and put it in a bowl over a pan of simmering water until the chocolate has melted – make sure the base of the bowl doesn’t touch the water or the chocolate will overheat. Remove the bowl from the pan and add the coffee and butter, but don’t stir. Whisk the egg white until it forms stiff, glossy peaks. Add

the sugar, a teaspoon at a time, whisking until stiff after each addition. Stir the chocolate mixture until smooth, then stir in the egg yolk. Heart biscuits These cute biscuits are super easy to ice and great for sharing with loved ones or your family 115g butter 55g caster sugar Few drops of vanilla extract 150g plain flour 25g cornflour 250g Royal Icing Sugar Food colouring, to decorate Mix the butter, caster sugar and vanilla extract until just evenly mixed. Stir in the flour and cornflour. Wrap in clingfilm and chill for about 30 minutes. Roll out to the thickness of a £1 coin and cut out different sizes of heart shapes with cutters – 6cm, 5cm and 4cm wide at the widest point. Bake at 180C/160C Fan/ Gas 4 for 10 minutes. Leave to cool on a wire rack. Make the icing sugar with 4tbsp water. Divide into small bowls to add pink and red food colouring before decorating the biscuits. Serve with chocolate dip, below. A pinch of salt is all we need in our everyday diet, but the majority of us consume much more, which can be damaging to our health. Read on to find out where it’s hidden and how you can reduce your intake Every day, 26 million people in the UK eat too much salt*. ThatÕs almost half of the population. Even if you donÕt usually add salt to your meals, you may consume more than you realise, especially as 75 per cent of the salt we eat is in manufactured foods, such as bread, ready meals and breakfast cereals. See our panel, right, for some of the worst offenders. WHY WE NEED SALT Also known as sodium chloride, salt is an essential part of our diet. ItÕs made up of 40 per cent sodium and 60 per cent chloride. Sodium helps to aid important functions such as muscle contraction, while chloride helps with digestion and
aids cell and tissue function. So itÕs important to consume some salt every day Ð but not too much. THE EFFECTS OF TOO MUCH SALT A diet thatÕs high in salt can lead to raised blood pressure (also called hypertension), which around one third of adults in the UK have. High blood pressure often has no symptoms and many people can have it for years without realising it. If you have high blood pressure, youÕre more likely to have a stroke or develop heart disease, and it can also lead to heart failure. Cutting down on salt will help to lower blood pressure and reduce the risk of developing heart problems.

HOW MUCH SALT SHOULD WE EAT? Adults are advised to consume no more than 6g of salt per day – this is around one full teaspoon. According to Consensus Action on Salt and Health (CASH), the nation’s current average salt intake is around 8.6g per day – 2.6g above healthy recommendations. For babies and children, the recommended maximum daily salt intakes for salt are shown in the table below. CUTTING BACK ON SALT Reducing your salt intake is much easier than you may think. Many people worry that food with less salt will taste bland, but this is a myth. After around three
