Okay, I’ll admit it… January scares me! The new year arrives and I always think: ‘How did I get here?’ I’m not sure if it’s a reflection on my age – or just Sarah Thom Asda Editor that the month has a habit of sneaking up on you when your back is turned. While I’m not a fan of the phrase ‘New Year, new you’ (I’ve never been able to keep resolutions!), for most people January presents the opportunity for self-reflection. And this is why we’ve dedicated this issue to achieving balance. If you’re like me and avoid resolutions, then let January simply be your excuse to try something new. Why not try a new food, a new exercise or a new style? My mum always says: ‘You’ll never know unless you try!’ It’s a phrase that I would have once cringed at uttering, but with our January issue packed full of new trends, there really has never been a better opportunity. Here’s to a happy new year, all!

1 Rinse the mussels under cold water and remove any beards by pulling them firmly. Set aside. 2 Heat the oil in a large pan over a medium heat. Add the shallots and carrot and fry for 5 mins. Add the garlic and chilli and fry for 2 mins, then stir in the turmeric. Fry for 1 min then add the lemongrass, broth, coconut milk and fish sauce. Bring to the boil then simmer for 5 mins.

3 Add the mussels, bring back to the boil, then cover and simmer for 5 mins until all the mussels have opened. Discard any that are unopened. 1 Heat the rapeseed oil in a large frying pan on a high setting. Cook the steaks for 2-3 mins on each side. Transfer to a plate, cover with foil and set aside for 10 mins to rest. 2 Add the red curry paste to a large pan and stir-fry for 1 min. Add the broth, kaffir lime leaves, brown sugar, fish sauce, pepper sauce and star anise, and bring to the boil. Simmer for 5 mins to let the flavours infuse. 3 Add the butternut squash, French beans, udon noodles and bamboo shoots to the pan. Bring back to the boil, cover, reduce the heat and simmer for 4 mins until the vegetables and noodles are just cooked through. Stir through the shredded basil, radishes and lime juice. 4 Meanwhile, slice the steaks into thin strips. 5 Ladle the soup into 6 bowls and top with the slices of steak. Drizzle the agave syrup all over the base of the tin. 2 Pat the orange slices dry on kitchen roll then arrange over the syrup. 3 Put the orange zest, eggs, butter, sugar, flour, orange extract, almonds and cinnamon in a bowl and whisk until light and fluffy. Spoon the mixture over the oranges, spread out to cover the fruit and bake for 25 mins until well risen and golden. Cool in the tin for 5 mins

then turn out onto a serving plate, so the oranges are on top. 4 Put the pink grapefruit juice and the marmalade in a small pan and simmer over a low heat, stirring occasionally, until the mixture reduces by half and becomes syrupy. 5 Spoon the pink grapefruit syrup all over the cake. he Welsh word ‘hiraeth’ encompasses many different emotions – nostalgia and a longing for home and people. It’s what I experience when the smell of my nan’s Welshcakes takes me back to my childhood – and reminds me of happy times, eating Welshcakes and watching Only Fools and Horses in Nan’s house in Caerphilly, where I grew up. Over the past five years, having battled with depression, I’ve realised that communication with family and understanding your past is the most important thing to achieve balance. I go to the Costa del Sol once a year with Nan and, through being present and in the moment and listening to her stories, I’ve learned so much. One of her best is about her grandmother, who would put a Welshcake in the pocket of her nightie, then wash it down with rum in the middle of the night! Nan’s Welshcakes have even been on TV. When I got my job on This Morning, she baked some for me to share on the set. One of the guests was Sir David Jason – Del Boy in Only Fools and Horses. Not only did he ask for a Welshcake, he ate it live on TV and thanked Nan. It was one of the best moments in Johnson family history – and in my career. 1 For the dip, fry 1 red onion, chopped, in 2tsp rapeseed oil on a medium heat for 5 mins. Add 200g tomato ketchup, 50ml red wine vinegar, 200ml Irn-Bru Sugar Free and 2tbsp Worcestershire sauce. Simmer for 3-4 mins. Set aside.

2 Next, put 6 medium eggs (at room temperature) in a pan of simmering water and cook for 6 mins. Drain, then place in iced water until cold to the touch. Crack and peel away the shells, taking care to keep the eggs whole.

3 Beat 1 medium egg and mix with 600g Simon Howie Original Haggis, breaking it down with the back of a fork. Roll into 6 balls. Place each ball on clingfilm, lay more clingfilm on top, then roll out into flat, 20cm rounds.

4 Remove the clingfilm from 1 haggis round. Wrap the haggis around 1 of the boiled eggs – use wet hands to shape the mixture, moulding it tightly to the egg, and sealing the edges together to close up any gaps. Repeat with the remaining boiled eggs and haggis.

5 Whisk 2 medium eggs with 1tbsp milk and put in a shallow bowl. Put 150g fresh breadcrumbs on a plate. Dip each Scotch egg into the egg mixture, rolling to coat, then roll in the breadcrumbs. Chill in the fridge for 30 mins, to firm up.

6 Heat sunflower oil in a deep-fat fryer or deep pan to 160C, or until a cube of bread dropped in turns golden in 40 secs. Fry 2 eggs at a time for 9-10 mins until golden. Drain on kitchen roll, slice in half and serve ½ egg per person with a salad garnish and Irn-Bru dip.

emma Koster, 40, a dental nurse, lives in north London with her husband Phillip, 41, a financial advisor, and their children Ellie, eight, Rafi, seven, and Tali, three. Each week they spend up to £100 on food and £60 on eating out or takeaways – but they’d like to spend less! ‘I do a big shop once a week,’ says Gemma, ‘but most days Phil pops

to a supermarket near his office as well, to top up on milk, bread, fruit and veg. ‘I’m a spontaneous shopper – I don’t plan meals or even make a list. Phil likes to think he’s more organised, but he also buys “off list”, so he spends more than he plans to. ‘I didn’t think we were slaves to big brands, but when I checked, I was surprised to find two-thirds

of the things we buy are branded products – it shows how little we notice what we pick up. ‘We don’t eat ready meals as a family, but we do rely on pre-prepped sauces for pasta and stock for soups. ‘I’d love to see our food bill come down without compromising on taste. So how easy is it to shop better and still eat well? ‘It’s all about forward-planning, trying new things and cooking from scratch,’ says Miguel. He sat down with the Kosters to show them how small tweaks to their way of life can have a big impact…

Plan ahead

‘Work out your meals for the week, take a list to the shops – and make sure you stick to it. You’re less likely to buy too much, which may get wasted, or end up not getting enough so you end up spending on takeaways.’

Overlap ingredients ‘Rather than cooking with leftovers, I prefer to “overlap” ingredients. If you buy a whole chicken, remove the legs and thighs before cooking. This gives you a crown to roast for Sunday lunch, then pan-fry the legs and thighs on Monday to have with green beans and dauphinoise potatoes. It’s a positive way of making what you buy go further.’

Buy own brand ‘When you’re shopping for store cupboard staples such as rice and pasta, choose supermarket own brand. You won’t notice the difference – but the savings you can make are huge.’

ot many people get to say that they have accomplished their childhood dreams. But at 23, Laura Crane has already been there, done that and won the trophies to prove it. ‘I struggled with school, but surfing kept me sane,’ says the two-time British champion. ‘It was the one thing I was good at.’ Bristol-born Laura discovered her talent for surfing at the age of 11, after her family moved to the coastal village of Croyde in Devon. For most of her teens, Laura competed at national level, then went global and spent nearly four years on Team GB. ‘I had an amazing time,’ she says. ‘I achieved my dream – it was sick!’ And that was just for starters. In 2018, Laura appeared on hit ITV reality show Love Island. Since then, her honest-talking, body-positive attitude has helped her to rack up almost 620k Instagram followers. She has also raised funds for charities worldwide and has a YouTube channel, @LauraCrane, dedicated to health and fitness. Now, Laura is the face of George’s new activewear collection. She chatted to Good Living about body image, home workouts and the confidence-boost of wearing fitness kit…

yoga. But, of course, surfing is my number one. ‘I’ve always loved the ocean and when I’m surfing, I forget about everything else. One minute you’re lying on a board, paddling, the next, you’re looking for a wave, then you’re standing up and surfing. You don’t have time to think about anything that’s unnecessary.’ Sporting style For Laura, fitness has always been more than just a hobby. ‘It means so much to me,’ she says. ‘It’s helped me through a lot of things.

‘Fitness means so much to me – it’s helped me through a lot of things’ ‘We’re told how exercise is so good for you and I really believe it,’ she says. ‘I feel better physically and mentally after it. Plus, when I’m in workout gear, whether or not I’m going to the gym, I feel empowered. ‘I like to do some sort of exercise every day – usually yoga in the morning and I’ll go running and do an indoor workout, like a mini circuit. I think TRX (Total Resistance Exercise) is great, too.’ And her top tip for getting and staying fit? ‘It can be hard to get into an exercise routine at first,’ she says. ‘But don’t overthink it – just do it. which led to self-doubt and insecurity. ‘I thought I had to be skinny to be a model, she explains. ‘But I had this very strong body as a result of doing the sport I loved. ‘I was trying to be both, which was crazy because my body was never put on this earth to be stick thin.’ So, how did it feel to appear on TV, rarely out of swimwear, knowing she was being watched by millions of viewers? ‘If Love Island taught me one thing, it’s how important it is to be you and not change for anyone else,’ says Laura. ‘We should all fully own our imperfections as there’s no need to dwell on them. Life is way too short to be worrying about body hang-ups.’

You’re a self-confessed beauty junkie. How did you first get into make-up? I started acting when I was young, so I’ve been in make-up chairs from the age of six, and I used to love watching women like Dee Wallace [her co-star in E.T. the Extra-Terrestrial] and Shelley Long [Irreconcilable Differences] transform. It’s like watching the secrets of a woman. They’d come in all tired and closed up, then get their rollers in and their make-up done. I loved how the make-up made these women stand more elegant, more confident. It had a huge impression on me and I was really into finding any make-up I could – putting eyeshadow out to my temples and heavy rouge on my cheeks from the age of nine or 10.

Do you have a hero skincare product? I’m really into sheet masks. The ones from South Korea are real game changers. I use one twice a week. How do you find balance when you’re feeling stressed out? Balance... Ha! I feel like the last few years of my life have been so chaotic and overwhelming that I’ve made

Where is your happy place? At night in bed with my kids, when I ask them the same question I ask them every night of our lives: ‘What was your favourite part of today?’ And they tell me, and it’s that moment when everything makes sense. It’s the best part of my day. Out of all your screen characters, who had the best style? Dylan Sanders in Charlie’s Angels comes to mind. I got to go undercover – one minute I was a race-car driver, the next I’d be in black tie or cool streetwear. That was the most fun, for sure.

What’s your top beauty tip? A smile is better than any lipstick. Frankly, I don’t care how good your hair and make-up is – the better you feel on the inside, the better it’s going to make you look. Beauty is so within. Smoky eye or a red lip? A red lip. I do love a smoky eye, but I can just throw on a lip any time. It’s so simple but really effective.

a promise to myself not to refer to ‘balance’ any more. ‘Overwhelmed’ just sounds like an excuse and you allow yourself to feel like you’re constantly under things and that’s a very helpless feeling. So I try to focus on words like ‘proactive’ and ‘problem-solving’ and concentrate on knowing where the light is at the end of the tunnel.

Tell us about your eyewear range for Asda Opticians. Which is your favourite design? I love eyewear so much I feel like it would be easier for me to create 100 pairs of glasses rather than four or six at a time – I just want to throw the kitchen sink at it! Balancing the scales We asked five people how weight and body image affect their happiness and shape their lives

The nation’s most popular New Year’s resolution, losing weight, is always centre stage in January. Here, our panel of five people, from very different backgrounds, candidly share their own experiences… How do you find a balance when it comes to diet and weight loss? Taryn: I can be very all or nothing, so if I’m on a diet, I’m strict about cutting things out – or I go the other way and eat whatever I want. But I’m trying to find a balance between the two, now. Shaun: Since I moved to London, I’ve put on 20 kilos as a result of going to the pub with mates and having some naughty food after. I want to be sociable, but I need to stay healthy. Pauline: It’s about compromise. I love eating out and tend to do it three or four times a week and wouldn’t want to give it up. But I also try to be conscious about making my own breakfast or lunch to balance that out. Do you have a good support network? Taryn: Yes, my mum was great when I was younger: she would come to the gym with me. At 16, I was pushing a size 20 and school was tough. But with Weight Watchers, I managed to go down to a size 8. It worked to have a plan where I could still have lasagne if I sacrificed extra points. Having Mum do all the cooking at the time helped, too. Pauline: My family are definitely getting better at being supportive. Shaun: I actually found I lost the most weight and got very healthy 82 | GOOD LIVING

when I did it by myself, but my family can be a great support. Nadya: Once you reach a certain weight, friends are frightened to talk about it because they’re worried they’ll upset you. I have to bring it up myself, so they know it’s OK to talk about it. How have your weight and body image affected your day-to-day life? Shaun: I’m more self-conscious when I have a bit of extra weight. If I see a girl in a bar, I’m focusing on what she’s looking at rather than the conversation we’re having. Taryn: I agree. Most dating is done online or on apps now – you’re talking to someone and they haven’t really seen you. So now I’ve stopped using the very best photos of myself: the ones that maybe make me look a bit slimmer. Now I put up more of a range, to show exactly who I am. Has it affected your mental health? Pauline: I had a mid-life crisis before my 30th birthday and turned to food. It was like, ‘This is what they do in the films – you can buy a tub of ice cream!’ I’d had some time off work and I felt like, ‘What else is there to do?’ Shaun: Yes, I was the same! You start feeling down and then look in the fridge for anything that will give you

a feel-good factor. You forget about it all and enjoy the food, but then feel bad about yourself later. Scott: Losing my mum when I was in my early twenties triggered the weight loss for me. Weight was a major factor in her death and it finally made me see myself as I was. But I took it a bit far and went from 17 stone to under 10 stone in just nine months. I lost the physical weight quickly, but it took me years to find a healthy balance mentally. Do you think it’s harder for men to open up and discuss issues about weight than it is for women? Scott: When I was growing up, my family was quite traditional about the roles of men and women – weight was discussed more by the women. For me, it was very much a case of, ‘Don’t worry about it, you’re a bloke. It doesn’t matter for you.’ What was the turning point for you? Pauline: I didn’t really enjoy doing exercise and was always dragging myself to the gym. Someone gave me the advice that as soon as I got home, I should put on my kit (rather than my pyjamas) and then decide whether or not I wanted to go to the gym. It’s a really simple trick, but it makes it easier to actually get up and get motivated. Nadya: Joining the Obesity Empowerment Network really helped me. Just to know that there are people out there who are concerned about you has

TARYN BEATY, 28, is a talent acquisition coordinator. She has struggled with her weight for the past 10 years, fluctuating between a size 8 and a size 18.

helped me so much. I no longer feel I’m isolated. What impact do you think social media has on body image? Taryn: I think it depends what you choose to see. I used to look at Instagram and see all of these slender, beautiful women and it would make me feel bad about myself. But now I follow more inspiring people – there are so many of them out there lobbying for body confidence. Pauline: My aunt has this filter that slims your face, but I don’t like it. I actually like my face shape (even though I don’t like my chin!). I don’t like those apps, but I do put other effects on. I think most people do. How do you feel today? Shaun: I’m definitely not comfortable in my own skin yet, but I’m getting on top of it; I’m watching what I eat and I’m back in the gym. I’ve signed up for the London Landmark half-marathon in April, so it’s nice to have something to aim for. Nadya: I’m not quite comfortable in my skin either, but what’s more important to me is that I’m more comfortable in my head now. Scott: I am happier now, due to all the changes I made. Losing weight changed my life and I’m mentally in a better place now than I was. Taryn: I would feel more comfortable if I were healthier and could lose a bit of weight, but I’m definitely happier because I feel like I don’t beat 84 | GOOD LIVING

myself up about it any more. I have good days and bad days, too, but overall, I understand about balance and I do feel happier now. Pauline: I’m a size 14 and I would like to be a size 12 before I turn 35. And I would love to fit into trousers that don’t have an elasticated waist! But I’m much happier because my weight is not such a priority to me any more.

‘It’s important to have a positive state of mind’

What’s the most important thing you’ve learned about yourself? Taryn: To stop comparing myself with other people and just be me. Shaun: Stay positive! Even though I don’t necessarily feel comfortable physically at the moment, I know I’ve lost weight before and it’s important to have a positive state of mind. That makes it easier to envisage yourself as how you want to be. Pauline: It’s the realisation that your friends don’t choose you because of your weight, they choose you because of your personality. They will always be there to support you. Scott: Managing my own expectations has been my biggest learning curve – that and not giving a monkey’s about anyone else’s opinion. I know myself best and I know what works and what doesn’t; that’s the one thing that has stayed constant throughout for me. Nadya: I think it’s about self-care and not being so self-critical. It’s about being kinder to myself on that journey to becoming my healthier self. And I am confident I will get there in the end.

We asked nutritionist and health expert Rick Hay for his tips for getting on track… ● Go flexitarian ‘Try to increase the fibre and colour within your diet,’ says Rick. ‘Fibre can help balance blood sugar levels and reduce cravings, so introduce more veggie and vegan dishes into your daily routine.’

● Get some support ‘Find someone you can talk to about your weight loss journey, whether it’s a friend, professional or group,’ says Rick. ‘Having an outlet to talk about it will help you to stop focusing on your weight 24/7.’ ● Swap your plates ‘Switching your usual plate or bowl for a smaller one (even just for one meal a day) is a great way to reduce your portions,’ explains Rick.

● Plan it out ‘Follow a plan,’ says Rick. ‘Whether it’s an online guide, a book or a fitness DVD, it’ll help to keep you motivated.’ ● Exercise gently ‘Getting into exercise four times a week, even walking for just 10 minutes, can make all the difference,’ says Rick. ‘It may help to boost your mood, too.’ For more advice from Rick, go to healthista.com

‘People always follow me around supermarkets’ What’s your go-to brekkie? Breakfast is invariably my wife’s lovely homemade bread, salted butter and homemade marmalade, which she sometimes flavours with whisky. I’ll also have a double espresso. I’m a fan of strong coffee. Is there any one dish that takes you back to your childhood? I was brought up in rural Kent and childhood memories of my dad Albert’s cooking are of slow-braised meat dishes like pot-au-feu, usually made with beef or pork, simmering on the stove. We’d eat the leftovers for the next few days. What was the first thing you cooked when you were young? Cheese on toast. If you mess around with cheese on toast, you can have great fun. The secret is good bread and a good mix of cheeses. When did you realise you wanted a career in cooking? Cooking is not just a job, it’s life. It’s who I am and what I do – and, in many respects, my daughter Emily, who has followed in my footsteps,

is exactly the same. She has always said that she wanted to be a chef. Where and when did you make your most exciting food discovery? Wherever I go, I always try to immerse myself in what the locals eat. I worked in Hong Kong for six months in the early 1980s as a young chef, and it was a great eye opener. The city was buzzing with markets and street food

and I got to taste jellyfish for the first time. The fermented dried shrimp and braised abalone were incredible, too! Do you watch what you eat? Chefs notoriously have a bad diet because we’re constantly snacking, drinking loads of coffee and eating carb-led food, which fills you up and keeps you going. Apart from drinking less coffee and giving up cigarettes, I haven’t consciously changed my diet much over the years. Worst culinary disaster? Many years ago, I was reheating a lamb stew on my new induction hob for dinner with my dad. But I couldn’t figure out the induction system and completely burned it to a cinder. It was inedible. Thankfully, as always, there was loads of cheese in the fridge. But, 15 years later, he still talks about it! Do you ever shop at supermarkets? My wife does the shopping, usually. I have an issue when I go to the supermarket because everyone follows me, looking at what I’ve put in the basket. ‘Ooh, I can’t believe he’s got a tub of Marmite in there!’ The French Revolution: 140 Recipes Made Fresh & Simple by Michel Roux Jr (Seven Dials) is out now
