Passata perfetta

‘One of my favourite things to do is raid the cupboard and get creative when I’m cooking. It’s a very Italian way to cook but you do absolutely need a few key ingredients – always good quality olive oil, garlic and some organic passata. ‘In Italy, we love our pasta – you’ll see it on most menus wherever you are in the country. ‘I adore risotto – and this recipe from my Mamma is di erent. It is unusual for risotto to have a tomato sauce, but this was one of her specials, using le over tomato sauce from other dishes.
