I’m so proud to welcome you to our 200th edition of Asda Magazine. As a team, we feel really privileged to produce this lovely little bundle of recipes, lifestyle and fashion articles. And, as the magazine has been going for almost 19 years, we thought it was a good time to get nostalgic. Researching past issues for our feature The Way We Were (p14) gave us lots of laughs. Trends in food, fashion and homes have changed quite a bit since the 1990s, as you’ll see! Every month, we try so hard to get it right, learning what we can about the issues that are important to you and your families, and the challenges you face – and we always appreciate your feedback. By far the best part of my job is opening your letters and emails and seeing what you’ve enjoyed making, or what’s struck a chord. I’d like to take this opportunity to thank all the people who’ve written to us over the years. You’ve made us think, giggle and even cry – long may it continue!

When it comes to food, society has moved on a lot since the 1990s and its ‘meat and two veg’ meals. Now everyone’s much more healthconscious, and our features have changed to refect that, ofering lots of great ideas for a healthier lifestyle.
Our tastes have altered quite a bit since 1995, says our Food Editor Glynis McGuinness. ‘We’re so much more adventurous now. As people have travelled further afield, they’ve been inspired by the food they’ve eaten abroad. And celebrity chefs, of course, have been a huge infuence.’ These ingredients were once exciting, but are fairly everyday now...

Cool for kids In 2002, Jamie Oliver started his school dinners campaign and it changed the way we tackled food for kids in our magazine. Since then, we’ve included loads of recipes for healthy lunchboxes, as well as launching our Chosen by kids range in 2013, featuring tasty, healthy products that kids (and parents) love. Food intolerances More and more people are discovering that they’re intolerant to gluten, dairy or wheat, so we now ofer special ‘Free from’ recipes. Plus, every issue includes vegetarian options.

No celebration is complete without a great party cake. We talked to cake developer Jill Downs to fnd out her recipe for success‌

CELEBRATION CAKES Imagine spending all your time thinking and talking about cake, dreaming up delicious recipes and show-stopping designs. It sounds like something out of Roald Dahl’s book Charlie And The Chocolate Factory. But that’s exactly what Jill Downs does as head of development for Finsbury Foods, who produce celebration cakes for us. Like a modern-day Willy Wonka, she works closely with our experts and her own team of chefs and cake designers to make sure our shelves are always stocked with the fnest celebration cakes. So how do they do it? Jill says, ‘We take inspiration from the latest trends in all sorts of places, from fashion catwalks and foristry, to kids’ toys and new technology. Looking at what’s popular helps spark new ideas for our cakes.’

Jill’s team currently help produce 56 diferent types of celebration cake for us. She explains, ‘As well as creating our own themes for designs, we make Disney cakes and ones featuring popular kids’
characters like Spider-Man and Hello Kitty. Our most popular cakes at the moment include a Disney Princess one and the Chosen by you Mega Chocolate Cake – a big chocolate cake with lots of actual chocolates on top!’ When it comes to making the cakes, Jill insists on the best ingredients. She says, ‘All our cakes are made just as you’d make them at

We always put the cakes through a taste panel, too. We’re after a great texture for the sponge and a nice balance of favours with the flling. How the cake looks is also very important, to kids and parents. It has to be a special cake that you can bring out with birthday
candles on, then cut up and put in party bags.’
Finishing touch
Importantly, almost all of the cakes are hand-fnished. Jill says, ‘We have an in-house training school where our team learn new ways to decorate cakes. For example, with our Clyde the Caterpillar Cake the sweets are placed by hand, not machine, and the face is hand-made, too. Lots of work goes into each one.’

Just like fashion, cake themes go in and out of style. Here, Jill reveals what’s hot this season… Two of the big cake trends right now are nostalgia and American infuence. For the American trend, we created a huge cupcake that looks like an icecream sundae.

Piñata cake MAKES 24 PORTIONS READY IN 3HRS PRICE PER SERVING 46p 460g butter, softened, plus 450g for the icing, softened 460g caster sugar Home2Bake Professional Icing Colours Concentrated Gel, or Asda Natural Food Colouring – we used yellow, red or pink, and blue 460g self-raising flour 8 large eggs 900g icing sugar 1tsp vanilla extract 350g mixed sweets (for example, Smarties, M&M’s, dolly mixture, jelly babies)

Preheat the oven to 180C/160C Fan/Gas 4. Grease and line 4 x 20cm sandwich tins. Beat together 115g butter and 115g caster sugar until light and creamy. Add a blob of the yellow gel colouring, or a few drops of yellow liquid food colouring, and beat in. Sift 115g of the four. Beat in 1 egg, then add 1 more egg and a spoonful of the four. Beat again, then fold in the rest of the 115g four. Put the mixture in one of the cake tins and level the top. Now repeat the

process to make another layer of cake, colouring the mixture orange by combining yellow and red colouring. Then make a reddish pink layer using the red or pink food colouring, and a blue layer with the blue colouring. Bake in the oven for 25mins or until the tops spring back when lightly pressed. Remove from the tins and leave to cool completely on a wire rack. Using a spoon, mix the remaining 450g butter with the icing sugar, vanilla and 4tbsp cold water until the sugar is just blended in, then beat with an electric mixer until light and creamy. Cut out 10cm rounds from the centres of the orange and pink sponge layers (you can freeze these to eat later). Spread some of the butter icing in a ring on top of the yellow layer, leaving a 10cm circle bare in the centre. Put the orange sponge ring on top of the iced yellow layer. Spread icing on the orange ring. Put the pink ring on top. Fill the hole with the sweets. Spread icing on top of the pink ring, then cover with the blue layer. Put 2 heaped tbsp icing in a bowl and thin down with 2tsp water. Spread thinly over the sides of the cake. Divide the rest of the icing into fve portions. Put two portions together in a bowl and colour yellow. Colour the other portions blue, pink and orange (by mixing yellow and red or pink). Get four plastic piping bags and cut of the ends. Fill each bag with a diferent colour icing. Pipe

blue icing around the base of the cake, then use a palette knife to spread it around the sides of the frst (yellow) layer. Pipe and spread pink icing around the edge of the orange layer, and orange icing around the pink. Pipe and spread some yellow icing around the sides of the top (blue) layer, then spread the rest over the top of the cake. To fnish, make a spiral pattern on top using the back of a teaspoon, which has been quickly dipped in boiling water. Each 132g serving contains: ENERGY

1 Halve the lobsters and remove the meat, discarding the stomach pouch and intestine vein. Return the meat to the lobster shells and add the prawns. 2 Cook the shallot in the butter in a pan until soft but not coloured. Add the wine, mustard and 4tbsp water. Simmer fast for 5mins, until reduced by a third. Season. 3 Blend the cornfour with a splash of the milk, then add to the pan with the rest of the milk. Bring to the boil,

Beat the eggs into the dough, a spoonful at a time. 4 Put individual heaped teaspoons of the dough on the lined baking trays, leaving gaps between each one. Bake for 20mins, until pufed up and golden. Remove from the oven and make a small hole in the side of each. Return to the oven for 5mins. Take out and cool on a wire rack. 5 To make the sauce, put the chocolate in a pan with
the granulated sugar and 200ml water. Heat gently, stirring often, until the chocolate melts. Simmer, uncovered, for 5mins, stirring often. Set aside. 6 Whip the double cream with the icing sugar until it just holds its shape. Fold in the raspberries. 7 Just before serving, split the buns open and fll with cream. Pour a little chocolate sauce over and serve the rest separately.

Gelatine
Get to grips with jelly with our guide to setting agents
Jellies and mousses need gelatine – or something similar – to make them set. Choose from these types… Leaf gelatine comes in clear, fat sheets. To use, soak them in cold water in a bowl for 10 minutes, then put the bowl over a pan of simmering water. Once it’s dissolved, add to the other ingredients to be set. You don’t always have to use water to dissolve gelatine – milk, fruit juice and other liquids will work too. Gelatine powder is made from gelatine
COOL IDEAS
Ice cubes are great for summer drinks, but you can freeze so much more than just plain water. Try making cubes of tonic water or fruit juice – ideal for cocktails. Freeze leftover wine or stock, too, ready to add to sauces. Or try chopped herbs frozen in oil to add extra favour to risottos and frittatas. Asda ice-cube trays, £1 (2-pack)
that’s been dried and ground into powder. Sprinkle over a bowl of cold water and leave for 10 minutes to soak and swell. Stand the bowl in hot water to dissolve, then add the gelatine mix to your recipe. Vegetarian gel is made from agar, a type of algae, and is a good alternative to normal gelatine, which contains animal products. TIME SAVER Peeling fresh root ginger can be really fddly if you use a knife or vegetable peeler, and it takes ages. To make it easier – and avoid removing too much of the juicy, favour-packed fesh with the peelings – use a teaspoon to scrape the skin of in strips. Then chop or grate the root ginger straight into your cooking. Simple!

Removing the backbone of a chicken, or ‘spatchcocking’, makes it much quicker to cook – you can roast a spatchcock chicken in just 45 minutes! Plus, you’ll also get more lovely crispy skin. Just follow our easy steps.

Put the chicken on a board. Using heavy-duty scissors, remove any neck skin and the ‘parson’s nose’ – the knobble of fesh near the legs. Snip along one side of the back bone, cutting through the ribs as you go. Repeat on the other side. Turn the bird over. Using the heel of your hands, push down frmly on the

breast bone to break it so you can fatten out the bird to an even thickness. Pull the legs and wings out to the sides. Insert a skewer diagonally through a leg to the wing on the opposite side; repeat on the other side so the skewers make an X shape. The chicken is now ready to roast, barbecue or grill.

The way to avoid these problems is to make sure the omelette cooks evenly. Choose a nonstick pan, which will allow you to move the egg round easily as it cooks. Heat the butter or oil to a medium heat, and tilt the pan to make sure the fat is evenly spread. Add the beaten egg then, once it starts to set, use a nonmetal spatula to pull the frmer bits of egg into the centre of the pan, leaving the runnier bits to fll the gaps and then set. Repeat until almost set all over, then fold the omelette in half. Perfect!

Home-made salad dressings are so easy to make.
Put 3 parts olive oil, 1 part white wine vinegar plus a dash of wholegrain mustard in a jar, and shake. You can experiment by using cider or red wine vinegar instead of white wine vinegar. Or try walnut oil rather than olive oil; or Dijon mustard instead of wholegrain. You can add other ingredients, too, such as a crushed garlic clove, a dash of soy or sweet chilli sauce or a drizzle of honey.

CRUNCHY Smoked mackerel Caesar salad Using a hand-held blender, whizz a dollop of mayonnaise with a clove of garlic, 1 chopped anchovy, a dash of white wine vinegar and a spot of Dijon mustard. Drizzle over shredded romaine lettuce; top with smoked mackerel fakes and croutons.
Why not try? For an easy dinner party starter, serve some sliced fgs with rocket leaves. Toss the fgs in a balsamic dressing, then scatter over the leaves with torn slices of parma ham. Or for a vegetarian option, replace the ham with crumbled goats’ cheese.
When storing lettuces in the fridge, line the crisper drawer with kitchen roll. This will help absorb moisture and keep them dry. And keep them whole - if you pull the leaves apart they won’t last as long.

5 How to make them… 1 Preheat the oven to 200C/ 180C Fan/Gas 6. Line a baking tray with baking paper. Roll the pastry out on a lightly foured surface to the thickness of a pound coin – you want a rectangle about 26cm x 40cm. Trim the edges to tidy them up, then cut the pastry in half lengthways to make two thinner pieces. 2 Cut the skin along the side of each sausage. then peel it of. Put the sausage meat in a bowl. Peel, core and fnely dice the apple. Add to the meat and mix together. 3 Lightly four your hands. Divide the meat mixture in two. Roll out each half to form a long sausage the same length as the pastry. 4 Lay one roll of sausage meat lengthways on each piece of pastry. Brush egg along one of the

6 longer edges of the pastry. 5 Fold the other edge of the pastry over the meat and roll to form a sausage roll. 6 Cut each roll into 12 mini rolls. Put on the tray, with the join underneath. Make 2 small cuts in the top of each roll and brush with the rest of the egg. Bake for about 20mins, until golden.

160C/ 140C Fan/Gas 3. Cut the head and tail from a whole gutted salmon (2-2.5kg), or ask the fshmonger to do it. Wipe the fsh with damp kitchen paper. Put in the middle of a large piece of extra-thick foil. Put a sliced lemon and a few sprigs of parsley in the fsh cavity and season. Spoon over 4tbsp white wine. Wrap up to make a parcel with tightly sealed
edges but with room for air to circulate. ● Put on a baking tray or in a roasting tin and bake for 40-45mins. Leave to cool in the foil. ● Carefully remove the skin from the salmon. Strawberry hazelnut shortcake ● Preheat the oven to 180C/160C Fan/Gas 4. Put 60g hazelnuts on a baking tray and cook for 5mins until golden – keep an eye on them, because they burn easily. ● Tip the nuts onto a plate and rub with kitchen paper to remove the skins. Leave until cold, then pulse in a processor until they are ground up – but don’t overprocess or you may end up with hazelnut butter. ● Sift 125g plain flour and a pinch of salt into a bowl. Our basic jelly recipe... Put 4tbsp cold water in a mug. Sprinkle 9g powdered gelatine over the water – always add the gelatine to the liquid, not the other way round. Leave to soak for 10mins. Next, carefully put the mug in a pan of gently simmering water – it should be deep enough to cover the bottom quarter of the mug.

As well as the usual meaning, ‘shy’ used to be a word to describe throwing something – hence, Coconut Shy. This fun fair favourite originates from the 19t h century, when coconuts were an exotic prize.
THE TWIST Tie a clothes line bet ween two trees or posts. Knot string around the handles of three servin g spoons, then tie them to the line so they swing freely. The kids take turn s throwing plastic balls or tennis balls at the spoons. They get a poi nt for each hit, and the child with the most points wins a prize. Pack smarter
Save space in your luggage by slipping small items such as socks and underwear into shoes, and roll up your clothes to stop them creasing so much. After you’ve ftted in as much as you can, close your suitcase and sit on it. Then, open it up again and squeeze those last bits and pieces in on top. Once you’ve got everything packed, weigh your suitcase on the bathroom scales to make sure you don’t get charged for excess baggage.
