FLAVOUR Chicken Korma SERVES: 2-3 PREPERATION TIME: 10 MINS, COOKING TIME: 15 MINS INGREDIENTS • 300g skinless chicken breast, cubed • 1 KNORR Curry Flavour Pot • 1 tbsp vegetable oil • 1 small onion, finely chopped • 1 clove garlic, finely chopped • 100ml single cream • KNORR Chicken Stock Cube dissolved in 75mls boiling water • Fresh coriander leaves, to garnish • Salt to taste

METHOD • Marinade the chicken in the KNORR Flavour Pot. • Heat the oil in a wok or large frying pan until hot, add the onion and fry for 2-3 minutes. Add the chicken and fry till golden brown. • Add the garlic and fry 30 seconds. • Add the cream and stock, stirring occasionally and simmer for 5 minutes. • Season to taste, garnish with coriander. Serve with basmati rice, naan, pickles and chutneys and your choice of Indian vegetables.

I have a confession to make: I’m a bad auntie. But if I’m going down, my sister’s coming down with me! Last Easter, we sent my nephews out on an egg hunt, dressed appropriately in their bunny ears, with home-made baskets ready to collect their eggs. We’d agreed they’d share their chocolate bounty, the lamb was slow cooking and it was all very idyllic – the relaxed day you’d hope for. The mistake we made, when asked by the innocent babes, ‘Do we have to hop all the way round?’, was saying, ‘Yes’. They’d added this instruction themselves, but we couldn’t resist. Mum’s garden is set across fve levels and, if you recall, last Easter there was still a little snow left on the ground. The cry as Jack fell down on the snow was heartbreaking…Followed by our very naughty giggles as the sight of the eggs fying and his bunny ears fopping was too much to bear. Worse still, we’d been flming the whole thing. I’m very sorry, boys – eggstra eggs this year!

Easter treats

It’s a tough job, but someone’s got to do it... We meet the talented teams behind our delicious Easter chocolate ranges FACT FILE Producer John Brewster, account manager of Isis, Belgium. This is a family business going back to 1923. The commitment to quality hasn’t changed but the company uses the latest production techniques nowadays. What they make Premium Belgian chocolate using the fnest ingredients, including cocoa beans from West Africa’s Ivory Coast. They make chocolate all year round – more than 5,000 tonnes of it – but with special seasonal products for occasions such as Easter and Christmas. How the chocolate is made... They roast the cocoa beans before milling them to make a cocoa liquor. This is mixed with sugar and whole milk powder to produce a paste. It’s all then put into a giant mixer to enhance the favour and texture before being heated at a high temperature to make molten chocolate. This liquid chocolate is put into moulds and left to cool and solidify. Peaches Equally delicious on their own or in salads and desserts. Or try adding peaches to pork, poultry and even fsh dishes for a tasty twist. In stores from mid April.

Stone fruits Take a fresh approach to sweet and savoury recipes Sweet, juicy, stone fruit make wonderful additions to your fruit bowl in April and May, as we wait for the British berries season to kick of. To test if stone fruit is ready to eat, lightly press the fesh to see if it yields slightly. If it doesn’t, store the fruit in a paper bag at room temperature to make it ripen faster. It’s best eaten or used in recipes immediately once ripe. To stone, slice the fruit through to the stone and rotate the knife all the way around the centre to cut the fesh in two. Twist each half in opposite directions until one comes away from the stone, then use a teaspoon to prise the stone out of the other half. Damon Johnson, Head of Produce Quality

Apricots With sweet but slightly tart fesh, apricots work well in both sweet and savoury recipes. Dried are a good alternative if ripe aren’t available. In stores from May.

Like a peach without the velvety skin, nectarines have the same juicy fesh and rich favour. In stores from mid April.

Serve up something new with...

APRICOTS

Apricot & chicken curry Cook a chopped onion in a little oil until soft, then add bite-sized pieces of chicken breast. Cook for 3-5 minutes. Pour in a cup of chicken stock and a squirt of tomato purée. Add ½tsp cumin and ½tsp cinnamon. Simmer for 2-3 minutes. Stir in chopped apricots and serve with couscous.

Tip

Apricot halves cook really well on the BBQ. Slice and serve on burgers and in salads. Why not also try…

l Baked apricots & pistachios Preheat the oven to 190C/170C Fan/Gas 5. Halve and stone apricots. Splash with a drop of brandy and bake for 10 minutes. Sprinkle with chopped pistachios and honey.

PEACHES

Peach & blue cheese salad Make a dressing of three parts olive oil and one part red wine vinegar. Add a little mustard. Toss with salad leaves and a handful of crumbled blue cheese. Stir in chopped walnuts and peaches slices. Drizzle the dressing over and serve.

Why not also try…

l Peach & yogurt lollies Blitz a chopped apricot, a dollop of natural yogurt, ¼tsp vanilla essence and lemon zest in a blender until smooth. Pour into Asda lolly moulds and freeze.

To peel a peach, cut a cross in the skin and drop it into boiling water. Leave for 30 seconds, then put in cold water. The peel should come away from the flesh easily.

Tip

NECTARINES

Nectarine & prosciutto pizza Preheat the oven to 200C/180C Fan/Gas 6. Brush nectarine slices with butter and cook on a griddle until soft. Spread a pizza base with mascarpone and bake for 7-8 minutes. Top with rocket, prosciutto, nectarines and serve.

Why not also try…

l Nectarine & fried mozzarella stack Slice a ball of drained fresh mozzarella. Dip in beaten egg and cover in breadcrumbs. Fry in butter for 1 minute on each side. Remove and cook nectarine slices in the pan. Stack your ingredients on a plate.

You can swap nectarines for peaches, and vice versa, in most recipes.

Tip

Freezing stone fruits

Choose ripe, unbruised fruit for the best results. Stone and cut into segments. Toss in a little lemon juice and sugar and put on a lined baking sheet in a single layer. Freeze overnight, then transfer to a freezer bag and use within six months. 22 | ASDA.COM/MAGAZINE | APRIL 2014

PLUMS

Plum mini fans Cut plums into segments and cook in a little butter until they soften. Fill Asda Individual Flan Bases with the cooked plums. Mix together some crème fraîche and honey and spoon on to the top. Add a generous drizzle of honey over each of your mini fans to fnish, then serve on small plates.

When you’re cooking with plums, it is best to choose ones that aren’t too ripe or too soft, so they don’t go mushy.

Tip

Why not also try…

l Plum & pear kebabs Thread segments of plum and pear alternately on to skewers. Drizzle with honey and cook in a griddle pan until soft.

HOW TO MAKE...

Your own vanilla sugar Want to give recipes a sweet twist? Try using vanilla sugar to add extra favour. You can easily make your own by adding split vanilla pods, minus the seeds, to a jar of caster sugar. After a few days, the sugar will soak up the vanilla favour. You don’t need to remove the pods either – it will keep

on developing. Vanilla pods have lots of other uses, too. Empty pods can be used to infuse milk, while the seeds can be added straight to dishes. Simply cut the pod in half longways and scrape out the seeds with a knife.

Bakers’ tips Brush up on your baking skills this Easter with insider know-how and handy hints WHAT TO DO IF... ...you don’t have the right sugar in the pantry? If a recipe calls for caster sugar but you’ve run out, pulse granulated sugar in a food processor to give it a finer texture – don’t reduce it to powder though. You can use caster sugar in place of brown for lighter fruit cakes and gingerbread. Preserving sugar has larger crystals that dissolve slowly and need less stirring. If you don’t have any, you could use granulated instead. No jam sugar? Granulated sugar will work just as well, but you’ll need to add a sachet of pectin, too (it helps jam to set).

Greasy spoons A tablespoon (or two!) of honey or syrup adds loads of favour, but it’s difcult to measure out. So before you dip in your measuring spoon, coat it in a little butter or oil. This will stop the honey or syrup sticking to the spoon, which means you also get a more accurate measure. Sweet! APRIL 2014 | ASDA.COM/MAGAZINE | 25

KNOW YOUR…

KITCHEN MUST-HAVE It’s a cupboard staple, but the many varieties of four can be Wheat grain confusing. The most common Endosperm type is made from wheat, but four can also be made from maize, barley and rice. Grains Bran layer can also be milled to produce specifc types of four, Germ depending on which parts of the grain are used and how much gluten it contains. All you really need to know though is which type works best in your baking... PLAIN FLOUR This is milled from the central or ‘endosperm’ part of the wheat grain only. It’s a great general-purpose four, used for making biscuits and pastries, or for thickening sauces. WHOLEMEAL/WHOLEWHEAT FLOUR This is made from the whole of the wheat grain, including the fbre-rich bran and germ. It’s mostly used for baking bread, but is also great for mufns or scones. SELF-RAISING FLOUR Raising agents are added to plain or wholemeal four to make self-raising four, which is mainly used for cakes. When the four is mixed with other ingredients and then baked, it produces gas bubbles, creating a nice airy sponge. STRONG WHITE BREAD FLOUR Made from high-gluten wheat, this is great for making white loaves. When you knead the dough, it stretches the gluten proteins, which trap gases released from the yeast and make bread rise. It’s not ideal for general baking though as it produces a heavy, dense cake. GLUTEN-FREE FLOUR This four is made from a mix of gluten-free grains, including rice four, potato starch, tapioca starch, maize four and buckwheat four. Since gluten is vital for a lot of baking, only use gluten-free four if a recipe calls for it.

Whipping up cake batter and whisking egg whites is much easier when you’ve got the right kitchen gear. This Breville Hand Mixer (£11) is compact and easy to use. Make sure you move the blades around the bowl so all the ingredients are blended together.

Cupboard vs fridge

Eggs... ...are a key ingredient when you’re baking. They help bind cake batter and the whites give volume to meringues.

What’s the best way to separate the yolk? 1 Place two clean bowls on the work surface. Gently crack the egg on the rim of one bowl and carefully pull the two halves apart over the bowl, letting the egg white drain through. 2 Gently tip the yolk into one half shell, then the other, pouring out the remaining white as you do it. 3 Once all the white has drained away, carefully drop the yolk into the other bowl.

When making cakes – and many other recipes too – it’s best to use eggs at room temperature, as they’re less likely to curdle. A cool room is good for storing eggs, but if your kitchen is particularly warm, keep eggs in the fridge and take them out 30-60 minutes before use.

Easter Eggy

Tiger Toast

A golden crunchy covering of Whitworths Demerara Sugar makes this a great recipe for Easter. Wait until the family get their claws into this delicious Easter treat that’s so simple to make the kids could do it

(with a little a help from you of course).

Preparation time 5 mins. Cooking time 15 mins. Serves 4 - 6.

What you need 100ml semi skimmed milk 3 medium free range eggs 6 slices Tiger Bread 1 tblsp vegetable oil for frying 1-2 teaspoons ground cinnamon 150g Whitworths Demerara Sugar

What you do 1. Pour the milk into a bowl and beat the eggs in another bowl. 2. Mix the Whitworths Demerara Sugar and cinnamon in a shallow dish. 3. Heat the oil in a large non stick frying pan over a medium heat. 4. Dip each slice of tiger bread briefy into the milk and then into the beaten egg, making sure the bread is well coated.

SERVING SUGGESTION

5. Add the bread to the pan and fry until golden on both sides. 6. Transfer the cooked Tiger Toast to the sugar mixture and coat generously. Serve immediately!

Banana, pecan & date mufns v This is a great way to use up overripe bananas – and they’ll go down a treat in lunchboxes MAKES 12 READY IN 50 MINS PRICE PER SERVING 26p 100g butter, melted, plus 10g for the topping 175g light soft brown sugar 300g very ripe bananas (peeled weight) 2 medium eggs, lightly beaten 275g plain flour ½ level tsp salt 2½ level tsp baking powder

1 level tsp cinnamon, plus ½ level tsp for the topping 50g pecans, chopped 125g dried stoned dates, cut into raisin-size pieces 65g granulated sugar 1 Preheat the oven to 180C/160C Fan/Gas 4. Line a mufn tin with 12 paper mufn cases. Stir the butter and sugar together.

2 In another bowl, mash the bananas with a fork, then add to the butter and sugar and mix well. Stir in the eggs. 3 Sift together the four, salt, baking powder and cinnamon. Stir this mixture into the banana mixture with the pecans and dates. 4 Divide between the paper cases. Mix together

Chocolate meringue with bananas

Drizzled tofee sauce and chopped hazelnuts add a yummy fnishing touch SERVES 10 READY IN 1HR 30MINS PRICE PER SERVING 36p 115g caster sugar 100g icing sugar 4 large egg whites 2 level tbsp cocoa powder 1tsp white wine vinegar 50g Asda milk chocolate, chopped, plus 50g for the topping 300ml whipping cream 4 bananas, sliced 3tbsp Askeys Treat Toffee Ice Cream Sauce 25g hazelnuts, toasted and chopped 1 Preheat the oven to 150C/ 130C Fan/Gas 2. Line a tray with baking paper. 2 Mix the icing and caster sugars and set aside. Put the egg whites in a large, clean bowl and whisk until foamy. Increase speed and whisk to form stif peaks. 3 Add the sugars a spoonful at a time, whisking until stif. Sift on the cocoa. Add the vinegar and 50g chopped chocolate and fold in gently. 4 Put on the tray and spread out to a 22cm round. Bake for 1 hour – it’s ready when the paper is easily peeled away. Leave to cool. 5 Put on a plate. Whip the cream and gently stir in most of the banana. Spread over the meringue, top with the rest of the banana, tofee sauce, the chopped chocolate and nuts. Line 2 baking trays with baking paper and brush with oil. Cut the bananas into even slices (about 5mm). Toss in a bowl with the lemon juice to coat.

Banana tofee tart v

This banana version of a tarte tatin is so simple. Make sure you use a cake tin with a solid base so the lovely sticky tofee doesn’t drip through SERVES 8 READY IN 50 MINS PRICE PER SERVING 26p 75g unsalted butter, plus extra for greasing 75g light soft brown sugar 6 medium-size bananas (just ripe) 500g pack ready-to-roll puff pastry Flour for rolling out 1 Preheat the oven to 200C/ 180C Fan/Gas 6. Grease a

20cm round cake tin. Melt the butter in a small pan. Add the sugar and stir until it dissolves. Simmer for 2 minutes, making sure it doesn’t burn. Pour half into the tin to cover the base. 2 Peel the bananas and cut into 1.5cm pieces. Arrange in the base of the cake tin to create a

layer. Spread the rest of the tofee mixture on top. 3 Roll out the pastry to roughly the thickness of a pound coin and then cut out a circle that is slightly larger than the tin. 4 Put the pastry over the bananas and tuck the edges in lightly. Make two 2cm cuts in the middle of the pastry.

5 Bake for 25-30 minutes, until the pastry is crisp and golden. Leave in the tin for a few minutes then carefully turn out onto a plate, upside down, so the bananas are on top. Each 194g serving contains: ENERGY

in a large bowl. Season. Dip the chicken in the egg mixture to coat, then in the crumb mixture, pressing the crumbs on to stick. Put on a baking tray and cook in the oven for 30 minutes. 3 Slice each banana in half, then lengthways to make 4 pieces. Put them on a baking tray, drizzle on half the oil, then lay the bacon on top. Cook for 30 minutes alongside the chicken.

4 In a pan, cook the onion in the rest of the oil over a low heat for 5 minutes. Add the pepper and courgette and cook for 5 minutes more until soft. Add the sweetcorn and butter beans, cover and cook for 5 minutes. Serve with the chicken and bananas.

Tzatziki v Peel a cucumber, then cut it in half lengthways and scoop out the seeds. Grate the cucumber on the coarse side of a grater, or you can cut it into very small dice if you prefer. Main Greek-style slowroasted leg of lamb

Slow cooking the joint makes the lamb wonderfully tender – just seal it securely with foil SERVES 6 READY IN 3HRS 40 MINS PLUS 20 MINS RESTING TIME PRICE PER SERVING £2.10 2 heads garlic 1 Butcher’s Selection Whole Lamb Leg (about 1.7kg) 2tbsp lemon juice 1tbsp olive oil 2tsp dried oregano ¼ level tsp ground cinnamon 200ml white or red wine 2 red onions, cut into segments 250g cherry tomatoes on the vine 1 Preheat the oven to 160C/140C Fan/Gas 3. Remove 3 cloves from one garlic head, peel them and cut into slivers. Then cut both garlic heads in half across the middle. 2 Use a sharp knife to make small, deep incisions all over the lamb. Put it in a large roasting tin. Whisk the lemon juice and oil with the oregano and cinnamon. 3 Push a sliver of garlic and some oregano and lemon paste into the incisions in the lamb. Spread the rest of the paste over the skin. Put the onion segments and the rest of the garlic in the tin, pour in the wine and top up with water to a depth of about 2cm. Cover the tin with foil, folding tightly at the rim but leaving room for air to circulate. 4 Roast for 4-5 hours. Remove the foil, drain of the liquid and cook, uncovered, for another 15 minutes. 5 Add the tomatoes, cook for another 15 minutes, then leave to rest for 15 minutes before carving. 1 Preheat the oven to 150C/130C Fan/Gas 2. Grease 6 small oven-proof bowls with the butter and put them in a roasting tin in the oven to warm up.

Put 175g caster sugar in a pan with 4tbsp water. Heat very gently, without stirring, until the sugar has melted. Increase the heat and boil gently until it is a rich golden brown. Don’t stir the melted sugar as it boils or it will crystallise. You can shake the pan very gently to ensure it caramelises evenly. 2 Pour the caramel into the warm bowls, holding them with a cloth so you don’t burn your hands. Gently rotate the bowls so that

Set aside. 3 Heat the milk in a pan until almost boiling, then add the vanilla. 4 Put the eggs and the 2 extra yolks in a bowl with 75g caster sugar and mix thoroughly with a wire whisk. Gradually pour in the hot milk, in a thin stream, stirring all the time. 5 Divide the mixture between the bowls. Stand them in a large roasting tin

and pour in enough water to cover the bowls’ bottom halves. Take care not to spill any water in the custard. 6 Cook in the oven for about 20 to 30 minutes, or until the custard is just set in the middle. Take them of the tin and leave to cool. Making these amazing Easter eggs isn’t as complicated as you might expect – and it’s so much fun! We’ve used a softer version of a roll-out icing to give a lovely creamy centre, and the fnished result is guaranteed to impress the whole family.

1 Put the butter, glucose and vanilla extract in a bowl with 1tsp water and mix with a wooden spoon. 2 Add the icing sugar gradually and mix to form a stif fondant icing. 3 Set aside a quarter of the icing and put the remainder in the fridge to chill. Add the yellow food colouring a drop at a time and fold in until you’re happy with the colour. Divide into 9 pieces

and roll into balls to make the yolks. Freeze for at least 30 minutes. 4 Divide the white icing into 9 pieces. Flatten out one piece and shape it around a yolk to make an egg shape. Repeat with the rest of the white icing and yolks. Stick a lolly stick into the end of each egg. Stand the eggs in egg boxes lined with clingflm and freeze for at least 3 hours.

Make feathered friends with your own garden café. You will need: an empty 1-litre juice carton; paper; 30cm-long twig; lollipop sticks; garden twine; craft glue; bird seed; scissors; acrylic paint in three colours; paintbrush

1 Rinse the carton and leave to dry. Using the scissors, prise out the plastic spout. Draw and cut out an arch on one side of the carton, then using the cut-out piece as a template, repeat on the opposite side of the carton. 2 Paint the outside of the carton. Leave it to dry then, in a diferent colour, paint a name for your feeder. 3 Cut the lollipop sticks in half and glue them on the

top of the carton to create a roof. Paint and leave to dry. 4 Make two holes in the top of the carton, thread a length of garden twine through the holes and tie to make a hanging loop. 5 Make a hole under each cut-out arch and slot the twig through to make a perch. Now fll with seed.

Kids love watching things grow – and this is a great way to get them started.

You will need: a wooden fruit crate or polystyrene box; a plastic bin bag; planting soil; herb seeds; acrylic paint in assorted colours; paintbrush 1 Make drainage holes in the bottom of the container. If you’re using a wooden crate, line it with a plastic bin bag.

MAKE 2 Paint the container, inside and out, with acrylic paint and leave to dry. Decorate the outside of your container – be as creative as you like! 3 Fill the container with the soil and plant your herb seeds in rows. 4 Garden herbs grow best when they get lots of sunlight, so make sure it isn’t anywhere too shady. The easiest to grow are basil, chives, coriander, rosemary, parsley and mint.

EASTER WREATH Bring spring indoors with this cute foral decoration. 1 Collect together all your cardboard egg boxes or trays. Then, using safety scissors, cut out 30 of the egg holder ‘cups’. These are going to be your fowers.

2 Cut small triangles out of the whole length of the rim of a few cups, and large triangles out the rest. Then trim the top edges to make a variety of petal shapes. 3 Paint both sides of each fower with poster paint and leave to dry,

then decorate the centres. Cut out a large ring from a cardboard box, paint it green and leave to dry. Arrange the fowers on top of the ring and glue in place. 4 Make two holes in the ring, loop a green ribbon through and hang.

Secure with sticky tape. ● Stick a length of ribbon to the back of the cone with craft glue and tie a bow at the front. ● Fill with mini chocolate eggs.

Give an Easter egg with a diference. They’ll treasure this sweet picture forever. ● Remove the cardboard mount and glass from a photo frame. Place the mount on a piece of card, draw around it and cut out. ● Cover the card with a piece of felt and stick the

edges to the back of the card with craft glue. Make sure the felt card fts snugly into the frame. ● Draw an egg shape on the felt lightly with a pencil. Using a needle and thread, sew a selection of buttons on to the card to fll the egg. ● Put the mount against the glass and ft your picture into the frame.


PaINTEd Eggs

Kids will love making these cute Easter ornaments and they’re a great way to brighten up your home. ● First ‘blow’ the egg white

and yolk out to empty the shells. You can do this by piercing each end of a fresh egg with a thick needle, making one hole a bit larger than the other. Over a bowl, insert the needle into the egg and gently wiggle it to break the yolk. Get a wide plastic straw and place one end over the smaller hole in the egg. Blow into the egg. It will take a few pufs for the contents to start coming out. ● Once the egg is empty, refll it with water through the large hole, then blow the water out. Leave the egg to dry. ● Apply a few coats of poster paint to the shell. ● Fold a length of ribbon back on itself and stick the cut ends together. Use superglue to stick it to the top of the egg. Tie another bit of ribbon into a bow around the ends. Hang your eggs from spring twigs or display them in pretty bowl.

gIfT JaRs & POTs Your friends and family can use these handy jars and pots to store knick-knacks after they’ve eaten the goodies inside. ● Wash out a selection of screw-top glass jars and terracotta fowerpots, and leave them to dry. ● To make a gift jar, paint the lid whichever colour you want with acrylic paint and put it aside to dry. Half-fll the jar with shredded tissue or crêpe paper, then add a selection

of mini chocolate eggs and chocolate animals. Screw on the lid and tie a length of ribbon around the lid’s edge, securing it with a big bow for a neat fnish. ● To make a gift fowerpot, paint the outside and inside of the pot with acrylic paint. Once the paint is dry, fll the pot with shredded tissue or crêpe paper and mini chocolate eggs. Place a chocolate animal on top. ● Loop a length of ribbon under the pot and up over the chocolate animal, then tie a bow to secure.

How to make them… 1 Preheat the oven to 180C/160C Fan/Gas 4. Put 12 sets of doubled-up small (petit four) cases on a baking tray and 12 larger (fairy cake) cases in a bun tin. Sift the four and baking powder into a bowl. Put 125g butter and the caster sugar into another bowl and beat with a wooden spoon until smooth. Then mix in the four mixture, eggs and 2tbsp milk. 2 Using a teaspoon, divide the mixture between all the cake cases. Bake the small cakes for 15 minutes and the larger cakes for 20-25 minutes, until the tops spring back when lightly pressed. Leave to cool on a wire rack. 3 Beat remaining 150g butter with the icing sugar, vanilla extract and 2tbsp milk. Crumble 4 large cakes and stir the crumbs into the icing mixture with 40g desiccated coconut.

1 4 Add a mound of icing to the top of each cake. Then lightly press each one, iced-side down, into a bowl of desiccated coconut. 5 Cut the chocolate fnger biscuits in half to make the ears. Colour the ready-to-roll icing pink. With your hands, shape the icing into ‘ear linings’ slightly smaller than the fnger biscuit bases. Stick two upright on top of each cake to look like ears. 6 Decorate the cakes using Jelly Tots as noses, Rainbow Sprinkles for whiskers, Choco Crunchies for eyes, and Fruittella Belts as hair bows. Fish parcels Baking fsh in parcels is healthy, delicious and perfect if you want to prepare meals in advance. It also works for any fsh!

How to cook... Put the fsh and other ingredients in the middle of a large rectangular sheet of baking paper or foil. To seal securely, take the two long sides and bring them together over the fsh. Fold over three times, leaving space inside for air to circulate. Scrunch and fold in the ends to make a parcel. Cook in the oven at 180C/ 160C Fan/Gas 4 for 20-25 minutes.

Sprinkle the salmon with sliced spring onion, coriander and chilli. Add drops of lime juice and Thai fsh sauce.

JOIN THE FUN there are lots of great organised outdoor events that you can get involved with, from local rambles (ramblers.org.uk) and wildlife walkabouts (rspb.org.uk) to forest fairytale adventures (forestry.gov.uk). Go online to fnd something near you.

Kids love playing outside and, as it’s National Gardening Week from 14 April, it’s a great time to dig out spades and trowels. Oliver Wilkins of the Royal Horticultural Society suggests starting by growing a few vegetables (it’ll encourage kids to eat their greens, too). You can also have a great time wildlife spotting. Get them out investigating the beetles and bugs in your garden or local park – then report any special ones they fnd to the charity Buglife (buglife.org.uk). You could even create a ‘mini meadow’ by planting a patch of wildfowers – it’ll also help save endangered bees.

Make a scarecrow

Making a scarecrow is a fun, simple way to keep hungry birds and other animals away from your plants – and you can make them in all shapes and sizes. You’ll need an old pillowcase for the head, old clothes that will form the body, newspaper or straw for stuffng, string to tie everything together and a permanent marker pen to draw a suitably scary face!

Putting up shelves

Varnishing woodwork

It’s simple and satisfying to give your woodwork a lift. Put dustsheets or newspaper down to protect the foor. Wipe down the surface so it’s free from dirt or grease and then sand down the wood. Dust with a brush or cloth, wipe with white spirit and leave to dry. Apply varnish in long, even strokes following the direction of the wood grain. Leave to dry. Rub down lightly and wipe with white spirit again before applying a second coat.

Resealing the bath

Fed up of unsightly mould around your bath? Fixing it is easier than you might think. Remove the old seal using sealant remover and a plastic scraper. Scrub the area and leave to dry. Fill the bath with water so it’s at its heaviest and lowest – that way the sealant won’t stretch and break the next time you have a bath. Use a sealant gun to apply a continuous line of Asda All Purpose Silicone Sealant (£4)** around the tub. Smooth with a round-edged tool and remove any excess with white spirit. Allow to dry for 24 hours before emptying the bath.

Fixing a dripping tap

Most leaks are caused by worn out washers (though it could be due to high water pressure or a broken pipe). If it’s the washer, you can fx it yourself. First, turn of the water. There should be a handle under the sink, or you can turn it of at the mains via the stopcock tap, which should be outside your house or near the water meter. Open the dripping tap at the top, unscrew the nut underneath and remove the washer. Install a new washer and screw the tap back together.

Changing a ceiling light

Electrical jobs can seem daunting, but follow these simple steps and you’ll be able to install a new light fxture. First, turn of the power to the whole house via your circuit breaker panel or fuse box. Remove bulbs and screws from the old fxture, then gently pull it down. Attach the wires from the new light ftting to the corresponding terminals in the electrical box – there will be a live wire (usually brown or red), a neutral (usually blue or black) and possibly a earth wire (usually green or yellow). Raise the new base plate and position it, then screw the bolts in place, using a Draper Ni-Cad Screwdriver (£15)**. Add light bulbs, and hey presto – a whole new look.

Filling holes in walls

First use your vacuum to remove any dust from the hole. Wet the area around the hole with a damp sponge, then smooth on Asda Multi-Purpose Ready Mixed Filler (£1.75)**. GET THE LIGHT RIGHT

Lighting is key to photo success. Overcast weather is actually good for taking outdoor snaps, as the light is fattering. If it’s bright, move people out of direct sunlight, so they aren’t squinting. Indoors, face them towards the light or use a fash – but don’t stand too close or they’ll look washed-out.

When you’re ready to take your snap, hold the phone as still as you can while you gently press the shutter button. Allow a little bit of time after you’ve pressed it in case there’s any shutter delay, to prevent out-of-focus pictures.

Compose your shot to get an interesting picture. Rather than having the subject in the middle of the screen, try positioning them of-centre and maybe not looking directly at the camera. Action shots, when people aren’t posing, are always fun.
