I always look forward to this time of year... The days are longer, the weather’s warming up and the barbecue season is so nearly here. The thought of sitting outside and enjoying a drink, while delicious, fresh food chargrills on the barbecue, is really appealing. It’s the informal feel of it all that I love most. You can marinade your meat in advance, prepare a few salads, then just grill and go. Everyone’s a fan of the staple burgers, sausages and skewers, but barbecue trends are changing all the time. Look out for twists on a classic, or American-inspired smoky, sweet or even fruity marinades, sauces and dips. Hopefully, our BBQ recipes will inspire you with a new classic to add to your repertoire. One of my favourite new trends is fabulous ‘loaded dogs’. These delicious gourmet-quality sausages are topped with lovely fresh ingredients – just pile them on to make your very own signature hot dog.

with passion A dedication to craftsmanship and great food are what makes our new premium range of Finnebrogue sausages extra special, says producer Denis Lynn


PRODUCERS Tucked between lush rolling hills and ancient woodland in Northern Ireland is the Finnebrogue estate. This beautiful 600-acre farm is owned by Denis Lynn, an artisan farmer, and our newest sausage supplier. Denis has been producing artisan food for over a decade and employs over 200 people. There are around 2,000 deer on the estate, as well as the factory that produces our Extra Special sausages and hot dogs. Finnebrogue’s reputation for using high-quality ingredients to create premium, artisan-style products made them an obvious choice of partner. They already supply their award-winning sausages to a number of large retailers and top chefs including Heston Blumenthal

and, previously, Raymond Blanc, Rick Stein and Gordon Ramsay. For our Extra Special range, Denis only buys pork from farmers who can guarantee the welfare of their animals. But his real priority is making premium bangers that cook well and taste amazing. We caught up with Denis to fnd out more…

Why are your sausages so special? We only make food that excites and inspires us, and that we know our customers will enjoy eating. We believe that food can make a real difference and this is at the heart of everything we do. Our sausages are made by hand in small batches, using fresh cuts of pork from the shoulder and belly. Traditionally used in sausage making, these cuts have the perfect ratio of fat to meat. This means that the sausages will be succulent and tasty, whether you grill, fry or barbecue them. We know that customers always want the best quality, great value and fantastic new products, so we like to offer them something that they can’t

What do you look for when buying meat from suppliers? We work with a number of farmers and animal welfare and sustainability are crucial for us. I frmly believe that animals deserve as good a life as possible and that, as a farmer, it’s my responsibility to ensure that happens. That’s why we only use farmers from the British Isles who take good care of their animals. This may be as simple as designing pig accommodation that gives them freedom to move around. How does animal welfare afect the quality of the meat? Happy pigs make great food and they deserve to be well treated. But it’s not just about being looked after on the farm. If animals get stressed, it can afect the taste of the meat. We use a local abattoir so that when the pigs are sent there, they don’t have to travel too far and get stressed. 18 | ASDA.COM/MAGAZINE | MAY 2014

A true all-rounder that’s great for chips and roasties. It also mashes really well.

The king of new potatoes gets its unique favour from Jersey’s fertile soil. To let the wonderful taste shine through, just simmer or steam for 20 mins and add butter. Only in season from April to early June, so enjoy them now.

Serve up something new with potatoes...

BABY PEARL SALAD

Why not also try…

Add dressings to cooked potatoes while they’re still warm. This helps the liquid and flavour really soak in.

Preheat the oven to 180C/160C Fan/Gas 4. Peel and thinly slice Maris Piper potatoes. Layer in an ovenproof dish with thinly sliced onions until the dish is almost full. Pour over double cream to come almost to the top, add dabs of butter, season and cover with foil. Cook for 90 minutes, remove foil and cook for another 10 mins, until golden.

● Salted homemade crisps

Drizzle thin slices of Maris Piper with oil and bake until crisp. Sprinkle with rock salt.

Use leftover mashed potatoes to thicken sauces and soups, or put on top of pies instead of pastry.

Tip

In separate pans of salted water, boil Baby Pearl potatoes and sweetcorn cobettes until tender. Drain well and leave to cool. Make a dressing of three parts oil to one part cider vinegar, season and stir in a handful of torn watercress. Lightly smash the cooled potatoes with a fork, then cut the corn kernels from the cob. Put in a bowl and pour over the dressing. Serve.

● Potato omelette Add sliced cooked baby spuds to beaten eggs and chopped herbs, then fry in a little oil.

ROSTI

Peel and coarsely grate a few medium-size Rudolph potatoes. Wring out the grated potato in a clean tea towel to remove excess water. Put in a bowl with chopped thyme and season. Melt a knob of butter in a frying pan and add a heaped tablespoon of the potato mixture and press down lightly. Cook for 3-4 mins on each side until golden. Top with a poached egg. Serve.

cooked cabbage with mashed potatoes, form into cakes and fry until golden.

For added crunch, dust parboiled potatoes with cornflour before putting them in hot oil to roast.

Tip

POTATO SKINS

Preheat the oven to 200C/180C Fan/Gas 6. Rub olive oil over some large Marabel potatoes and cook for 80 mins, until golden. Halve and carefully scoop out most, but not all, of the inside of the potato and put in a bowl with fried bacon pieces, a handful of grated cheddar and a sprinkling of chopped chives. Spoon the mixture into the empty skins, return to the oven and bake for 10-15 mins.

Leave the skin on Marabel potatoes when mashing. It adds taste and texture, and the skin is packed with vitamins, too.

Tip

Storing

Fresh potatoes should be kept in a cool, dark place with good ventilation (but not in the fridge or freezer). Don’t wash potatoes before you store them – dampness can make them go of quicker. Leftover mashed or roast potatoes can be frozen in bags for up to 3 months.

SERVES 12 READY IN 1HR 30MINS PRICE PER SERVING 53p 200g plain flour, plus extra for rolling out 1tbsp icing sugar 1tbsp cocoa powder 100g salted butter, chilled and diced 5tbsp apricot jam 100g Extra Special 70% Cocoa Solids Ivory Coast Dark Chocolate 125g unsalted butter, softened 125g caster sugar 2 large eggs 125g ground almonds 5-6 fresh apricots 1 Preheat the oven to 190C/ 170C Fan/Gas 5. Sift 175g of the four, plus the icing sugar and cocoa, into a bowl. Rub in the chilled butter then add water, to form a stif dough. 2 Roll out the dough on a foured surface, then use to line a 23cm fan tin. Prick the base, lay a piece of baking paper on top and weigh down with dried rice to stop the dough

rising. Bake for 10 mins. Remove the paper and rice. Cook for another 5 mins. 3 Spread 3tbsp of the jam on the pastry base. Melt the chocolate in a bowl set over, but not touching, simmering water in a pan. Leave to cool for 10 mins.

Put the date in your diary – this year’s Big Lunch is coming up soon and it’s the perfect excuse to get your friends and local community together for a fun-flled day. The idea behind the event is simple. Launched by the Eden Project in 2009, it aims to get people across the UK eating lunch with their neighbours on one day each year. It’s a great way to strengthen ties in your community, and make new friends. You

could have your Big Lunch in your back garden, street, community centre or your local park – it’s up to you. In 2012, The Big Lunch became part of the Queen’s Jubilee celebrations, with over 8 million people joining in. This year we’d love you to use The Big Lunch to raise money for a charity or local cause you care about. To get you started, we’ve come up with fun recipes to make with the kids. Mini club sandwiches

Toast slices of white and brown bread and spread with butter. Layer iceberg lettuce, cooked chicken and grilled bacon between two slices to make a standard sandwich. On top of that, add a layer of chopped hard-boiled eggs mixed with mayonnaise, plus slices of tomato. Top with a third slice of toasted bread and cut the whole stack into quarters. Serve with a cocktail stick through the centre, to hold the layers together. For vegetarians, replace the meats and lettuce with Red Leicester cheese and sliced tomato, and top the layer of egg mayo mixture with salad cress for extra favour and texture.

INVITE EVERYONE Hand out invites and leafets, put up posters, and ‘share’ the event with friends on Facebook. And ask people to RSVP so you know how many seats, food and other party things you’ll need.

Fruity jellies

In a jug, make up a pack of Chosen by you Strawberry Flavour Jelly, following the instructions on the pack. Pour the jelly mixture into glasses. Leave to cool until just beginning to set, then add fresh blueberries. Leave to set. DO A FOOD SHARE Keep costs down by encouraging people to bring one dish, such as a plate of sandwiches or cakes, to share. To get a variety of foods, ask your neighbours on one side of the road to bring savouries, and the other to bring desserts.

GET CREATIVE Ask people to bring things like chairs and decorations such as balloons and fowers, or even chalk to draw on the pavement or walls (it’ll wash away afterwards!).

ON THE DAY Try to get everyone involved in games and activities. And if you play music, make sure it isn’t disturbing anyone, especially later on when kids have gone to bed.


Sammy the jammy snake

Preheat the oven to 190C/ 170C Fan/Gas 5. Sprinkle four over a work surface and roll out 500g Jus-Rol Shortcrust Pastry to the thickness of a pound coin. Cut out 12 rounds and use to line a 12-cup bun tin. Next, mix 100g golden syrup with 40g fresh breadcrumbs and 1tbsp lemon juice in a bowl. Use to fill 6 of the pastry cases. Fill the other 6 cases with 125g raspberry jam. Bake in the oven for 15-20 mins. Leave to cool, then line up the tarts and decorate with sweets or icing to look like a giant snake. 325g arborio or carnaroli risotto rice 2 level tsp mixed herbs 225g fresh or frozen peas 40g Parmesan, shaved 1 Dissolve the stock cube in 1 litre hot water in a pan. Leave on a low heat. 2 Next, heat the olive oil in

another, large, pan. Put in the onion and bacon and cook for 8–10 mins, stirring occasionally. Add the butter and mushrooms and cook on a medium heat for 5-8 mins, stirring occasionally, until softened. 3 Add the rice and stir over a low heat for 1 min. Add a ladleful or cup of hot stock and the herbs, then stir. Simmer gently until almost all of the stock

has been absorbed, then add another ladleful. Repeat the process for 15 mins. 4 Stir in the peas and add one more ladleful. Cook for another 5 mins, adding stock as needed, until the rice is tender. 5 Serve topped with the cheese.

SERVES 16 READY IN 2HRS PRICE PER SERVING 42p 225ml milk 5tbsp lemon juice 350g caster sugar Finely grated zest of 2 large unwaxed lemons 100g desiccated coconut 300g plain flour 11/2tsp baking powder 1 /2tsp bicarbonate of soda 225g butter, softened 4 large eggs

For the filling 75g unsalted butter 75g icing sugar 225g Philadelphia Full Fat Soft Cheese 1 /4tsp vanilla extract 1tbsp lemon juice 150g Chosen by you Lemon Curd 1 Preheat the oven to 180C/ 160C Fan/Gas 4. Grease and line three 20cm shallow cake tins. Put the milk and 1tbsp lemon juice in a jug. Stir and leave to

stand for at least 5 mins. 2 Put the rest of the juice in a pan with 75g sugar and heat gently until the sugar dissolves. Remove from the heat and stir in the lemon zest and coconut. HOW TO...

Max the marinade

Rather than using a basting brush to coat your meat or fsh with marinade, take sprigs of rosemary and thyme and tie them together with a piece of string. Dip the bunch of herbs in the marinade and brush over. It’ll add more favour – and save on the washing-up! To get the most from a marinade, leave meat to sit for several hours or overnight in the fridge. Fish, on the other hand, should only be left in a marinade for 30 minutes or the acidic juice, wine or vinegar will change the texture of the fsh.

Organising a last-minute outdoor party and just realised your barbecue needs a deep clean? Don’t panic! Just slice a lemon in half and dip the cut side in coarse sea salt. Use this to scrub the barbecue grill, then rinse with water. The grill will come up brilliantly and you’re ready to cook!

DON’T FORGET...

...to get your meat, fsh or vegetables out of the fridge and let them come to room temperature before they go on the barbie. If food’s too cold in the centre, the outside may burn before the rest has cooked through. Remember, though, that the food shouldn’t be out of the fridge for more than 30 minutes before cooking.

You’ll want to make sure the food stays safe at your barbecue, so stick to these simple food hygiene rules when you’re getting everything ready.

THE BBQ HOTSPOTS

● Always wash your hands thoroughly before preparing food, especially after touching raw meat or fsh. ● Use separate containers, plates and tongs for raw and cooked meat to avoid transferring bacteria from raw meat. ● Make sure frozen food is completely defrosted before it goes on the barbecue. ● Never part-cook food on the barbecue, leave it to one side, then fnish cooking later. ● When basting, never put a marinade that’s been in contact with raw meat onto already-cooked food.

The heat varies in diferent areas of the BBQ. Start cooking on the hottest part, right above the coals – they will be glowing hot with a powdery white surface when ready. Once food is seared, move it closer to the edge of the grill, where the coals are less hot. When cooked, keep food warm on the cooler outer edge.

Safely sizzling

It’s important to cook meat thoroughly, especially on a barbecue. Make this easier by cutting meat into smaller pieces, or cooking it in the oven frst before transferring straight to the BBQ to get that classic favour. Turning meat regularly on the grill avoids burning on one side but under-cooking on the other. And if you’re at all unsure, cut into the thickest part of meat (particularly chicken, pork, sausages and burgers) before serving, to check it’s cooked all the way through, there are no raw, pink bits, and that any juices run clear.

This soft, pillowy Italian fatbread looks impressive, but it’s surprisingly easy to make with our step-by-step guide

1 Preheat the oven to 200C/ 180C Fan/Gas 6. Line 2 baking trays with baking paper. Sift the four and salt into a large bowl. Add the yeast and stir to mix. 2 Add 4tbsp of the olive oil and 300ml tepid water. (Make sure the water is tepid – it shouldn’t feel hot to the touch.) Mix together to form a soft dough. 3 Turn the dough out onto a foured surface. Knead by folding the dough in half, then pushing it frmly away from you with the heel of your hand. Fold over again,

turn it slightly on the board and repeat. Do this for 10-15 mins until the dough is stretchy, smooth and elastic. See tip below. 4 Wash and dry the bowl, then grease it generously with olive oil. Put the dough back in the bowl and turn until it is coated in oil. Cover the bowl with greased clingflm. Leave in a warm place until the dough has doubled in size – about 45 mins in a warm room, or longer in a cooler place. 5 While the dough is rising, put the onions in a pan with

2tbsp olive oil and toss to coat. Put a round of baking paper on top of the onions, then put a lid on the pan. Cook over a very low heat for 10-15 mins until soft but not golden. Tip into a bowl and leave to cool. Put the risen dough on a foured surface and press frmly to knock the air out. Fold it and fatten again. 6 Sprinkle the thyme on top and knead into the dough until evenly distributed. Cut the dough in half and shape each piece into a rectangle

about 30cm x 20cm. Place on the lined baking trays. 7 With your fnger, press the dough surface to make dimples, then scatter the onion over the top. Cover loosely with some greased clingflm and leave to rise to about twice the size. 8 Bake for 30-35 mins until golden. Remove from the oven, drizzle over the remaining 2tbsp olive oil and sprinkle on the sea salt. Each 70g serving contains: ENERGY

TIPS & TRICKS MAKE CONTINUED 1 Preheat the oven to 160C/140C Fan/Gas 3. Grease the inside of a 20cm loose-bottom deep tin and line the base with baking paper. Melt 85g butter and mix with the biscuit crumbs. Press this mixture into the base of the tin to make an even layer. Chill for 15 mins. 2 Put the soft cheese, lemon juice, crème fraîche, 1 egg, vanilla extract, cornfour and 125g sugar

in a food processor or blender, then blitz until evenly mixed. Or use a hand-held blender. Set aside. 3 To make the mufn mixture, sift the four, cocoa and baking powder into a large bowl. Stir in 50g caster sugar and half the chocolate drops. Add 1 egg and the milk and mix with a fork until just combined – it doesn’t matter if you have a few lumps. Spread evenly over the biscuit base, leaving

a small gap at the edge of the tin. 4 Pour on the cheesecake mixture, then cook in the oven for 20 mins. Sprinkle the rest of the chocolate drops over the top and cook for another 40-45 mins, until the cheese mixture is just set. 5 Leave to cool, then chill. Each 121g serving contains: ENERGY

Tone your abdominal muscles and say goodbye to a wobbly tummy. Start with the plank – lie on your front, propped on your forearms and toes. Keeping your legs and back straight, raise your hips and hold your tummy in for 20 seconds. Repeat 5 times. Next, do 10 crunches. Lie on your back, feet fat, knees bent and hands across your chest. Raise your head and shoulders no more than 10cm of the foor and hold for 5 seconds.

For a total leg toner, try wall squats. Lean back on a wall with feet slightly apart, 60cm ahead of you. slide down to a seated position. Hold for 30-45 seconds. Repeat. Also, target thigh muscles by doing the scissors. Lie on your side and lift both legs about an inch of the foor. Keeping them straight, slowly open and close your legs in a kind of scissors motion. Do 15 scissors on each side.

Pelvic lifts work as a great bum toner. Lie on your back with arms by your sides, knees bent and feet fat on the foor. slowly lift your hips up until your body and legs are in a straight line. clench your bottom cheeks together and hold for 20 seconds. Repeat 10 times.

Swap love handles for an hourglass fgure by working the muscles of your midrift. Sit on the foor with your knees bent and heels on the ground. Keeping your back straight and chest up, lean backwards slightly with your arms held out in front. Slowly twist from your waist, rotating your shoulders as far left and then as far right as you can. Repeat this 20 times.
