Fun on the farm Families across Britain will be heading into the countryside for Open Farm Sunday on 8 June. It’s a great day out – so why don’t you join them? At Asda, we know that supporting British farmers is important to our customers, which is why we’re a leading sponsor and supporter of Open Farm Sunday (OFS) through Asda Community Life. On 8 June, hundreds of farms across the country will open their gates to the public for OFS. It gives families the opportunity to get out into the countryside, meet farm animals and learn about where their food comes from. And the good news is most events are free!

We’ve now got lots of cheeses with exciting added favours, so why not try something new, says our cheese expert Tom Holmes If you stroll down our cheese aisles, you’ll see classics like Tom Holmes, Cheddar and Asda Cheese Edam beside Team everything from Feta to Manchego and Halloumi. And we’re always working to source the best new cheeses. There’s more choice than ever before, but if you really love a particular type of cheese, you may be a bit reluctant to try something new. Fortunately, you can now enjoy the best of both worlds with the growing trend for ‘favoured’ or ‘speciality’ cheeses. These are standard cheeses with fresh ingredients added for an extra burst of favour. To develop our new range of Chosen by you favoured cheeses, we did
lots of research to fnd out which foods and tastes you love. Farms Mature Cheddar. This wonderful cheese is produced by a family-run cheese maker in Somerset – the spiritual home of Cheddar – using milk from their own dairy cows and 100 other local farms within a 35-mile radius of their dairy.
Fresh ingredients
All the milk comes fresh from the cows each day and, using a 150-year-old family recipe, makes a Cheddar with a rich, creamy favour. It’s then left to mature for six months to give it a real bite, before being delivered to another Somerset company, Norseland, for the next stage of the process. Cook perfect pasta Get your pasta right every time with our handy tips. Heat a large pan of lightly salted water to full boil – don’t add oil as it will make the pasta greasy and the sauce won’t stick to it. Add the pasta, stir once and bring back to the boil. Stir again, then cook at a rolling boil, uncovered, for about 10-12mins for dried pasta or 6mins for fresh pasta. Pasta is ready when it’s ‘al dente’, an Italian term meaning ‘to the tooth’. You should feel a little bit of resistance when you bite it. Drain the pasta, but
don’t rinse with water if you’re serving it hot – the starch in the cooked pasta will help the sauce to stick to it. Reserve the cooking water – this is perfect for adjusting your sauce to the perfect consistency, and achieving a silky smooth texture. Serve the pasta as soon as possible after cooking, as it gets sticky as it cools. If the pasta is to be used in a salad, rinse it under cold running water as soon as it is cooked. This will remove the starch and stop the pasta sticking together.

For a crisp summer salad, you need clean, dry leaves – but washing and draining them can be fddly. That’s when a salad spinner comes in handy. AVOIDING SOGGY STIR-FRIES!
Stir-frying is one of the quickest, easiest ways to cook – plus it’s great for using up leftover veggies. Here’s how to make your stir-fries even better. Prepare everything in advance. Stir-fries cook fast – so once you get going, you won’t have time to chop things. Cut everything to a similar size, so ingredients cook at the same rate. Make sure the oil in the wok is really hot before you start adding the food. The ingredients will cook quickly but keep more moisture and bite. Keep moving everything around the pan so every bit is thoroughly cooked but not burnt.

DID YOU KNOW?
How to prepare garlic Garlic adds fabulous favour to dishes, but its strength depends on how you prepare it... CRUSHED Garlic crushed with a heavy knife or in a crusher has the strongest, most pungent favour. Cook over a low heat in a little oil for 1-2mins, taking care not to let it burn
or it will taste bitter. This is ideal for pasta sauces and soups. For the ultimate zip, add a little crushed raw garlic to salad dressings. CHOPPED This gives a strong favour to dishes, but is slightly milder than crushed. It’s the easiest way to prepare garlic if you’re frying it and adding it to
casseroles and stir-fries. ROASTED Whole cloves roasted with the skin on have a mild, almost sweet favour. Roast for about 20-25mins at 190C/170C Fan/Gas 5. Serve whole with dishes such as roasts or you can squeeze out the pulp and add it to mashed potato or sauces.

Getting more juice from your lemons Lemons and limes add a sharp zestiness to lots of recipes, from dressings to desserts. To get more juice out of citrus fruit, microwave for 10-15secs before squeezing and then rolling it on a board with the heel of your hand. This breaks the capsules in the fruit’s fesh that hold all the juice.

If you’re a fan of horseradish, you’ll love wasabi. It’s a Japanese root vegetable that’s grated to make a bright green paste with an intense, fery favour. LOVE YOUR LEFTOVER CHEESE
Got loads of odd bits of cheese in your fridge? Use up all these leftovers in a simple fondue. Grate all the pieces and put in a thick-based pan. Blend a little cornfour with some white wine in a bowl, then pour into the pan. Heat gently until the cheese mixture is melted and simmering, then remove from the hob but keep warm. Serve with a selection of breads and vegetable sticks – just put chunks on a skewer or fork to dip in without burning your fngers.

‘Peas and beans are such versatile vegetables – and we have so many more varieties in store than you might realise! Although they’re available fresh all year round from overseas suppliers, in the summer we source them from British farmers wherever possible. My favourites are newly shelled peas as they’re so sweet and tender. I sprinkle them with a little salt and just steam them for one or two minutes, or three minutes if they’re a bit older. I’m a big fan of broad beans, too – the shelled beans are great in pasta dishes for added texture. Damon Johnson, Head of Produce Quality
Minty pea dip Boil fresh or frozen peas for 3-5mins. Drain and put in a bowl with a knob of butter. Add crème fraîche and chopped mint, season, then mash well. Serve with slices of toast or cruditiés.
RUNNER BEANS Garlic & shallot runner beans Trim the ends of runner beans and slice diagonally into 1cm pieces. Heat a little oil and butter in a frying pan and add crushed garlic and a chopped shallot. Cook until soft. Add the beans and cook gently for 5mins. Season and serve.

Asian-style carrot & mangetout salad
When you’re using mangetout and green beans in salads, cook them in boiling water for 3 secs then dunk in cold water – this softens the raw texture and helps keep the colour.

Trim the tops and tails of a handful of mangetout. Put in a pan of boiling, lightly salted water and cook for 30secs. Drain, rinse under cold water then drain again. Put in a bowl, add a grated carrot and a fnely chopped, deseeded chilli. Toss the salad. Make a dressing of 3 parts oil to 1 part white wine vinegar. Add a little crushed garlic and grated ginger. Drizzle the dressing over the salad, then sprinkle on toasted sesame seeds.

Mini tomatoes have a sweetness that works well with cheese – and they cook quickly, too SERVES 4 READY IN 50MINS PRICE PER SERVING £1.21 500g pack ready-to-roll puff pastry Flour, for rolling out 1 red onion, chopped 1tbsp olive oil 15g butter 2tsp chopped thyme leaves, plus a few leaves to garnish 2tsp balsamic vinegar 220g Extra Special Tomkin Tomatoes, halved 100g pack Chosen by you Goats’ Cheese, chopped 1 Preheat the oven to 220C/ 200C Fan/Gas 7. Roll the pastry out to the thickness of a pound coin then cut out 4 rounds using a saucer as a guide. Put on a baking tray. Using the point of a knife, mark a rim around the edge of each tart (take care not to cut right through). Chill for at least 30mins. 2 Heat the oil and butter then cook the onion until soft. Add the thyme and vinegar, and simmer until evaporated. Leave to cool. 3 Divide the onion between the pastry cases, spreading

Fresh tomato sauce

Make a small cut in the skin of each of the large tomatoes and put in the water. Turn of the heat, leave for 20-30secs, then tip into a colander. Rinse well under cold water. Peel of the skins and roughly chop the tomatoes. 2 Heat 2tbsp of the oil in a pan, add the onion and

Add the rice and stir on a low heat for 2mins.
6 Add a ladleful of hot stock, stir gently and simmer until almost absorbed. Continue to add the stock, a ladleful at a time, and cook, stirring often, until the rice is just tender. You may not need all the stock. 7 Remove from the heat and stir in the parsley, mozzarella and Parmesan. Season to taste. 8 Grease a roasting tin and put in the tomatoes. Fill with the risotto, using a teaspoon. Put the lids on and cook in the oven for 25mins. Serve sprinkled with chopped parsley.

Put a big chunk in a blender or processor with some of the quartered tomatoes (and any juice), cucumber and red pepper chunks and garlic. Or use a hand-held blender. Whizz up in batches until smooth. 6 Add the oil, vinegar and sugar to the last batch
and whizz until fully blended in. Season to taste. 7 Put the soup in a large bowl, cover with clingflm and chill for 2 hours. 8 Just before serving, stir in the parsley and sherry, if using. Cut the reserved cucumber and red pepper into small dice. Pour the soup into bowls and scatter the spring onions, cucumber, red pepper and a little parsley on top.

50g Self Raising Flour, plus extra for rolling 50g faked almonds Icing sugar, to dust 1 Preheat the oven to 190C/ 170C Fan/Gas 5. Knead the pastry lightly, shape into a ball and fatten slightly. 2 Remove the base from a 22cm loose-based fan tin and put on a lightly foured surface. Put the pastry in the middle, then roll it out

The secret to making the perfect bacon sarnie is thick slices of crispy bacon in doorstops of soft white bread. Served with a nice cuppa. We’ve used king prawns in our recipe, but tempura works just as well with meat, fsh or vegetables like pumpkin, aubergine, carrots and baby corn. 1 Mix the mayonnaise with the wasabi paste (or use horseradish sauce instead). Set aside. Remove the shells from the prawns – hold one edge of the shell on the underside where the legs are and peel the other side away from the body in as large pieces as possible. Leave the tails – you can use them to hold the prawns while cooking and eating. 2 Using a small, sharp knife, make a shallow cut along the curved top side of the prawn. You’ll see a thin vein (this may be black or clear). Hook it out with the knife and discard. Rinse the
prawns under cold running water and pat dry with kitchen paper. Meanwhile, start to heat the oil in a deep-fat fryer or large pan. If you have a thermometer, heat until the oil is 180C. Or drop in a cube of bread – if it turns golden in 30secs, the oil is hot enough. 3 While the oil is heating, sift the four, cornfour, baking powder and salt into a bowl and make a well in the centre. Using a wire whisk, gradually mix in the cold sparkling water. Whisk from the centre outwards, to make a thick batter. Don’t over-whisk (see tip below).
4 Put the remaining four in a shallow bowl. Holding them by the tail, dip the prawns in, one at a time, to coat. Shake of any excess, then dip in the batter. 5 Carefully put the battered prawn in the hot oil. You can cook a few at a time if your pan is large enough. Cook for 2–3mins until golden and crisp. 6 Use a slotted spoon to remove from the oil and put on a plate lined with a double layer of kitchen paper. Keep warm while you cook the rest. Serve immediately with the wasabi mayonnaise.
Glynis’ tips ● To thaw the prawns, put them in a single layer in
a shallow dish lined with kitchen paper, then leave in the fridge for 4–5 hours. Once thawed, use within 24 hours. ● Tempura batter should be mixed quickly and used immediately so that it doesn’t lose the air and lightness from the bubbles in the water and the baking powder. To

avoid over-beating, mix it with a wire whisk or chopsticks. It should be lumpy and about as thick as double cream. ● Keep an eye on the oil and never leave it unattended. If it overheats, it could catch fre. ● Use raw prawns rather than ready-to-eat ones so that they don’t overcook as they fry and become tough.

2tbsp olive oil 50g unsalted butter 75g leek, shredded 100g extra Special Spanish Serrano Ham, finely chopped 60g plain flour, plus extra for coating 250ml milk Pinch ground nutmeg 2 eggs, beaten 150g pot asda breadcrumbs Sunflower oil, to deep fry 1 Heat the oil and butter in a pan until melted. Add the leek and stir to coat. Cover the pan and cook on a very low heat for 5mins. 2 Add the ham and cook for another 2mins, stirring. Remove from the heat and stir the four into the juices to make a paste. Return to heat and cook for a minute, stirring. 3 Warm the milk, then mix into the ham paste.
Bring to the boil and cook for 2mins, stirring, until the mixture forms a really thick sauce. 4 Stir in the nutmeg and season with pepper. Tip into a shallow bowl. Level the top and cover with clingflm. Leave to cool, then chill in the fridge for an hour. 5 Put the egg and the breadcrumbs in two separate shallow dishes. Lightly dust your hands with four, then roll the ham mixture into 12 equal-sized cylinders. Coat each one in egg then the breadcrumbs. 6 Heat a large pan of oil or a deep fryer to 180C. Cook for 3–4mins until golden. Remove with a slotted spoon and put on a plate lined with kitchen paper to soak up excess oil. Serve hot. Each 73g serving contains: ENErGY

It’s Men’s Health Week from 9 to 15 June – the ideal opportunity to get clued-up on preventable problems Did you know that UK men visit their GP only half as often as women? Whether due to embarrassment, fear or simply a reluctance to admit something’s wrong, it means that, at worst, serious problems might not be tackled early enough. And at best, it means that men are living with niggly symptoms that could be easily cleared up. Here are fve health issues men shouldn’t ignore – and the easy ways you can detect them.
1
Testicular cancer
SYMPTOMS A lump – probably painless – on the testicles. STATISTICS Overall this is relatively rare, but it’s the most common cancer in men aged up to 45, with over 2,000 new cases diagnosed every year*. HOW TO CHECK Rob Cornes of male cancer charity Orchid recommends men check themselves every month. ‘Do it after a hot bath or shower so your body is relaxed. Run a fnger over the surface of your testicles,’ he says. ‘If anything feels abnormal, such as a frm
lump inside or on the surface – get it checked out straight away.’ WHAT TO DO The good news is that testicular cancer is almost always curable if treated early. So if anything seems amiss, going to your GP will pay of in the long run. ‘They’ll be able to check it out, and may arrange a scan at the hospital,’ says Rob Cornes. ‘And remember, doctors have seen it all before, so there’s no need to be embarrassed.’

Heart disease
SYMPTOMS Pain, tightness and discomfort in the chest. STATISTICS Coronary heart disease afects 1.4 million men in the UK – over 500,000 more men than women**. And it’s the UK’s biggest killer, too. HOW TO CHECK The British Heart Foundation advises getting any worrying symptoms checked without delay. Watch out for any unusual pain, aching or ‘heavy’ feeling in the chest, especially if it spreads, or an indigestionstyle pain combined with feeling generally unwell. If this happens, get to the doctor or hospital immediately. WHAT TO DO As high blood pressure is linked to heart disease, and is the second biggest risk factor leading to premature death in the UK**, it’s a good idea to get this checked – your Asda Pharmacy can arrange a simple free blood pressure test. There’s also a lot you can do to bring down the risk of heart disease in the frst place, such as eating plenty of fruit and veg, and getting 150 minutes of exercise a week†. SYMPTOMS A low mood or anxiety that won’t go away, to the point where it afects everyday life. STATISTICS Men are particularly bad at acknowledging mental health problems. Just one in 10 men asks for help with depression, according to government statistics*. HOW TO CHECK ‘Look for signs such as cutting yourself of from friends, not doing things you usually
enjoy – or just not able to function in the usual way,’ says Sam Challis of mental health charity Mind. ‘Men are also likely to feel angry and aggressive when depressed.’ WHAT TO DO Taking this problem to your GP can seem a big step. But there’s a range of treatments on ofer, from counselling to medication, so there’ll be something to suit you. A confdential helpline like Mind’s may also help – visit mind.org.uk

SKIN CANCER
SYMPTOMS Any unusual changes in the skin – but especially changes to moles or freckles. This could be a sign of melanoma, the most serious type of skin cancer. STATISTICS Every year, around 6,200 men in the UK are diagnosed with melanoma**. HOW TO CHECK Men are more likely to develop melanoma on their chest and back (for women, it’s more often arms and legs), so a partner can be useful in spotting anything. Try the ‘ABCDE’ mole check list. Look for: Asymmetry (is one half diferent from the other?), Border (are the edges irregular?), Colour (is it more than one shade?), Diameter (is it bigger than 6mm?) and Enlargement (has it got bigger?). If your mole fts any of these, go to your GP. WHAT TO DO It’s important to get treatment as soon as possible. Although both sexes are equally likely to develop melanoma, men are more likely to die from it, possibly because they report it later**. Of course, it’s best to prevent it in the frst place. The main cause is over-exposure to sunlight, so cover up and use high-factor sunscreen. Go to cancerresearchuk.org for details.
