HOW DOES IT WORK? We’ve managed to compress the same protection as a standard 150ml aerosol pack into a little can half the size. We’ve reengineered the spray system, reducing the amount of gas needed to deliver the same level of antiperspirant ingredient with each spray. With spring just around the corner, there’s no better time than March to shake away the cobwebs of winter and look forward to the promise of better weather and brighter days. For those itching to venture outdoors and start on the garden, we’ve got some great gardening tips and bargains on page 63, and with a new spring collection in our homewares range too, breathing new life into your home couldn’t be easier (page 71). But the highlight of the month for me has to be Mother’s Day on 10 March. In my family, it’s a time to pamper and spoil her rotten. Our ideas for a special afternoon tea on page 29 are a great way to celebrate. Swap tea for a glass of fizz for an indulgent treat, or if your little ones want to add their own special touch, why not get them to make our delicious cupcakes (page 36)? However you choose to toast yours – here’s to mum!

WHO GROWS IT HERBS

‘The great thing about potted herbs is their longevity. If you look after them, they can last three to five weeks – water them little and often and always from the base.’ Rob Grundy 1

Fresh herbs liven up your cooking and look beautiful in your kitchen. You’ll find a range of fresh potted herbs in store ready to take home and enjoy, including chives, coriander, mint, thyme, basil and parsley. They’re grown by Lincolnshire Herbs – and we were their first customer back in 1998. ‘Fast-forward 15 years and we now have eight acres of stateof-the-art facilities and grow 13 million herbs each year,’ says Site Manager Rob Grundy. ‘And last year, we were named Edible and Salad Grower of the Year at the Grower of the Year Awards, which was a great achievement,’ he says. HERB PRODUCTION The crops are grown all year round in glasshouses, where the temperature and irrigation are computer-controlled. ‘The process from sowing to harvest takes three to six weeks,’ says Rob. Once germinated, the herbs are placed in a gutter system and slowly moved automatically from one end of the glasshouse to the other. During this growing process, they’re ‘tickled’ by mechanical rubber strips, which mimic the movement of wind to help stimulate growth and encourage strength.’ CARING FOR YOUR HERBS Looking after your herb at home is simple, says Rob. Remove the packaging and put it on a saucer on a windowsill. Water it little and often and always from the base. Only snip off what you need. ‘Basil is my favourite, he adds. ‘My wife makes a lovely tomato and mozzarella side salad with it.’ For more herb ideas, visit getcooking. Boiling cauliflower is quick and easy but steaming locks in more flavour. Or why not try it roasted? Break into large even-sized florets and toss in olive oil. Put in a shallow baking dish and roast at 200C/180C Fan/ Gas 6 for 25-30 minutes.

♦ Break 700g cauliflower florets into small pieces. Steam or boil until just tender, then drain and cool. ♦ Mix 200g self-raising flour with 1 large egg and 200ml milk until you have a thick batter. Stir in the cauliflower pieces to coat. ♦ Heat some oil in a large frying pan and drop in tablespoons of the mixture one at a time – take care not to overcrowd the pan. ORANGES Freshly squeezed orange juice is great for livening up dressings and smoothies, or add segments to salads and desserts. Grated zest is also brilliant in sauces. Oranges will keep for two weeks at room temperature or in the fridge.

HOW TO PREPARE Carefully run a small sharp knife vertically around the middle of the plum. Twist to seperate, then ease out the stone with a teaspoon.

3 WAYS WITH…

Plums

BAKED PLUMS ♦ Halve and stone a few ripe plums (see left). ♦ Put in a roasting tin cut side up and top them with some crushed gingernut biscuits. ♦ Brush the plums with melted butter. Bake in the oven at 200C/ 180C Fan/ Gas 6 for 20 minutes.

PLUM SAUCE ♦ Stone and quarter 4-5 plums and cook in a pan with a little butter. ♦ Add some brown sugar, a pinch of nutmeg and a good splash of port. ♦ Cook for 10 minutes until tender. Blitz until smooth. Serve with duck.

STEWED PLUMS ♦ Stone 8-10 plums, then cut each fruit into four pieces. ♦ Cook in a pan with a little butter, a sprinkling of sugar, a squeeze of lemon juice and a splash of water. ♦ Cook gently for 10 minutes. Chill for up to a week. Serve on toast or with yogurt.

4 chicken breasts, sliced into thick strips 1 red onion, sliced

½ red onion, finely diced

215g kidney beans, rinsed and drained

Preheat oven to 180° (160° fan) or Gas Mark 4. Prepare the Mexican Chicken as directed on pack.

Cook the rice in boiling water according to the pack instructions. Drain the rice and rinse well under cold water. Add the beans, red onion and tomato and mix together.

Dice the avocado and mix with the lemon juice then stir into the rice mixture. Serve the Mexican Chicken with the rice.

Make the most of these wonderfully versatile kitchen staples – they’re worthy of the main event

English onion soup Give traditional French onion soup a twist with English cider and English Cheddar cheese 15g unsalted butter 1tbsp sunflower oil 500g large brown onions, halved and thinly sliced 1tsp caster sugar 15g plain flour 500ml reduced-salt beef stock 500ml cider 1 small baguette 75g mature Cheddar

Melt the butter and oil in a large saucepan. Add the onions and stir until they’re well coated. Cook over a low heat, stirring often, until soft. Stir in the sugar and continue to cook over a low heat for 15-20 minutes, stirring often, until they’re a deep golden brown. As you stir, make sure you take the spoon

right into the base of the pan to ensure that the onions don’t catch in places. Stir in the flour and cook, stirring all the time, for a further 1 minute. Gradually stir in the stock and then the cider. Bring to the boil, then cover and simmer for 35-40 minutes. Preheat the grill. Slice the baguette and put in a single

layer on a grill pan. Grill until toasted on one side. Turn over and sprinkle with the cheese, then grill until it melts. Divide the soup between six bowls and top each one with slices of bread. Sprinkle with black pepper, to serve.

Americanstyle onion rings V These also taste great with sweet chilli sauce 100g plain flour 2 level tsp Asda Cajun Seasoning 2 large egg yolks 1tbsp oil 150ml semi-skimmed milk 2 large onions, peeled Oil, for frying in deep fat fryer 1 egg white Tomato ketchup, to serve Sift the flour, cajun seasoning and a pinch of salt into a large bowl. Make a well in the centre and add the yolks and oil. Slowly whisk in the milk to make a smooth batter. Chill in the fridge, covered, for 20 minutes. Slice the onions into rings about 1.5cm in diameter. Separate the rings and set aside. Heat the oil in a deep fat fryer to 180C or you can use a large saucepan and fill it one-third with oil. Heat until a small piece of bread dropped in the oil turns golden brown in 60 seconds. Whisk the egg white until it forms stiff peaks and then gently fold it into the batter. Dip the rings into the batter, a few at a time to coat them completely, then carefully fry in the oil in batches, for 3-4 minutes each, turning them over half-way through, until golden brown. It’s important to only cook a few at a time, because if you overcrowd the pan, they won’t cook properly. Lift out with a slotted spoon and transfer to a plate topped with three sheets of kitchen paper – this will soak up any excess fat. Keep warm while you continue to cook the rest of the rings in the same way. Serve with tomato ketchup. CALORIES

This keeps for up to a month and is delicious with cold meats and cheeses 700g red onions, halved and very thinly sliced 2tbsp sunflower oil 1 bay leaf 1 sprig of fresh thyme 50g soft brown sugar 3tbsp balsamic vinegar 150ml red wine 75ml apple juice Put the onions in a saucepan with the oil and stir

to coat. Add the bay leaf and thyme. Cover and cook over a very low heat, stirring often, until they’re really soft and falling apart but not coloured. This is called ‘sweating’ and will take 20-30 minutes. Doing this will make the flavour milder and will bring out the natural sweetness of the onions. Add the sugar, balsamic

vinegar, red wine and apple juice and cook over a medium heat, uncovered, stirring often, until all the liquid has evaporated. This will take at least an hour. Stir continuously towards the end of the cooking time to make sure the chutney doesn’t catch and burn. Half an hour before the chutney is ready, wash a 450g jar and lid in hot soapy water

and then rinse and put in the oven for 20 minutes at 140C/ 120C Fan/Gas 1 to sterilise. Or you could wash the jar on the hot cycle in a dishwasher. Put the chutney in the sterilised jar and leave until cold. It will keep in the fridge for up to a month. CALORIES

Shallot V tarte tatin

450g pack shallots 50g unsalted butter 3tbsp balsamic vinegar 3 level tbsp brown sugar 2 sprigs of fresh thyme 300g Asda Ready to Roll Puff Pastry Flour, for rolling out Preheat the oven to 200C/ 180C Fan/Gas 6. Lightly grease a 20cm shallow (3-4cm deep) round cake tin – make sure it isn’t a loose-based tin or the liquid will run out as it cooks. Put the unpeeled shallots in a saucepan, cover with cold water and bring to the boil. Cover and simmer for 4 minutes. Drain and rinse under cold water until cool enough to handle. Peel the shallots, leaving just enough of the root end to stop them falling apart. Melt the butter in a frying pan, add the shallots and cook over a low heat, stirring gently and turning often, for about 10-15 minutes or until they are tender. Take care not to let the butter burn. Add the vinegar, sugar and thyme and stir. Cook, stirring occasionally, until the liquid is syrupy and thickened. Transfer the shallots and juices to the tin and leave to cool slightly for 10 minutes. Roll out the pastry and cut out a 23cm round. Lay it on top of the tin and tuck in the edges. Bake for about 25 minutes until the pastry has risen and turned golden. Turn out upside down onto a plate to serve. CALORIES

Onion gravy with sausages & mash Onion gravy is great with sausages, liver, steaks or chops. The slow cooking releases the natural sugars to give a fabulous rich flavour 15g butter 1tbsp sunflower oil 4 red onions, halved and finely sliced 200ml white wine 2 sprigs of fresh thyme 350ml chicken stock, made with 1 chicken stock cube 2 level tsp cornflour

Sausages, mashed potato and green beans, to serve Melt the butter and oil in a pan. Add the onions and stir to coat. Cover and cook over a very low heat, stirring often, until they’re a deep golden colour – this will take 30-40 minutes. Don’t be tempted to speed this up.

Add the wine and thyme and boil fast, uncovered, until the wine is reduced by half. As the wine reduces, the flavour will intensify, become richer and all the alcohol will burn off. Pour in the stock and leave to simmer for 5 minutes. Remove the thyme. Mix the cornflour with 2tbsp

cold water and stir into the onion mixture. Simmer for 2-4 minutes, then serve with sausages, mash and beans. If you want to serve it as part of a vegetarian meal, use vegetable stock instead of chicken stock. CALORIES

100g butter, softened 100g icing sugar 1tsp lemon juice Few drops vanilla extract 250g Asda Mascarpone Preheat the oven to 160C/ 140C Fan/Gas 3. Grease two 20cm sandwich tins and line the bases with baking paper. Put the orange zest in a small bowl with the juice and sultanas. Set aside for 20 minutes, stirring occasionally. Meanwhile, put the pecans on a baking tray and cook in the oven for 5 minutes. Chop the nuts, divide into two portions then set aside.

Sift the flour, baking powder, mixed spice, cinnamon, bicarbonate of soda and Xanthan gum into a bowl. Add one portion of the pecans and the coconut. Put the eggs in another large bowl with the sugar and whisk for a few minutes until the sugar starts to dissolve. Add the oil and whisk for a further few minutes. Stir in the sultanas and juice, carrots and flour mix. Put in the tins and bake for 35-45 minutes until the tops spring back when lightly pressed. Leave in the tins for 10 minutes, then cool on a wire rack.

Meanwhile, beat the butter and icing sugar until well mixed. Stir in the lemon juice, vanilla and mascarpone until smooth. Sandwich the sponges with one layer of the frosting and spread the rest on top of the cake. Sprinkle the remaining pecans on top. CALORIES

Scones with smoked salmon & soft cheese These are best made and eaten on the same day so that they’re really fresh. And they’re so easy – they take just 15 minutes to make and 12 minutes to bake 225g self-raising flour, plus extra for shaping Pinch of salt ¼ level tsp mustard powder Good pinch of cayenne 50g butter, in small cubes 75g extra mature Cheddar, grated 2tbsp chopped fresh chives 150ml semi-skimmed milk 150g Asda Lighter Plain Soft Cheese 100g smoked salmon Few sprigs of fresh dill

Preheat the oven to 220C/200C Fan/Gas 7. Grease two baking trays. Sift the flour, salt, mustard powder and cayenne into a bowl. Rub in the butter. Add the cheese and chives and stir until evenly mixed. Set aside 1tbsp of the milk. Add the rest to the milk, all at once, and mix with a round-bladed knife to make a soft but not sticky dough. won’t get a smooth dough. Flour your hands and gather the mixture together, handling it as little as possible. The less you handle the dough, the lighter the scones will be. Put on a lightly floured surface and pat out to 2cm thick. Flour a 5cm-wide cutter and cut out scones. Place on the trays. Gather the leftover dough, pat out and cut again. Repeat this until all the dough has been used up. There

should be enough to make 10. Brush the tops with the leftover milk, bake for 12-15 minutes, then cool on a wire rack. Just before serving, split the scones through the middle and spread the bottom halves with soft cheese. Top with a piece of smoked salmon and a sprig of dill. MAKES 25 READY IN 2HRS 30 MINS PRICE PER SERVING 23p

Grease and line a 20cm square, shallow tin. Preheat the oven to 160C/140C Fan/Gas 3. Beat together 225g butter, the caster sugar, eggs, flour and baking powder until creamy. Put in the tin and level the top. Bake for 45-50 minutes. Cool on a wire rack, then cut into 25 squares. Beat the butter for the icing until soft. Gradually beat in the icing sugar, vanilla and milk. Brush the sides and top of the cakes with warm apricot jam. Leave for 15 minutes to set. Spread the top and sides of the cakes thinly with the buttercream. Chill until it’s hard. Set aside 50g of the readyto-roll icing. Cut the rest into small pieces and put in a bowl. Whisk in 140ml boiling water to make a smooth fondant icing. Colour with food colouring. Put a fork into the side of the cakes to help cover them with icing. Colour the rest of the icing and roll out. Shape into flowers to decorate some cakes. Put the remaining fondant icing in a piping bag and write ‘mum’ on the others. Leave to set. CALORIES

KIDS’ COOKING FOOD 125g self-raising flour 1 level tsp baking powder 125g butter, softened 125g caster sugar 2 large free-range eggs Buttercream (see box below) Asda Red Food Colouring Asda Pink and White Pearls, to decorate Preheat the oven to 180C/160C Fan/Gas 4. Line a 12-hole bun tray with cupcake cases (not fairy cake or muffin cases). Sift the flour and baking powder together into a large bowl. It’s important to measure the baking powder accurately – use a measuring spoon and run your finger across the top to ensure that it’s level. Make sure the butter is soft (a bit like mayonnaise) but not melted. Add the butter, sugar and eggs to the flour. Beat with a wooden spoon until well mixed. Scrape the sides of the bowl with a spatula and beat again for 1 minute. Put the mixture in the paper cases, making sure they’re all about the same size. Bake for 18-20 minutes or until the tops spring back when lightly pressed. Cool on a wire rack. Make the buttercream – see recipe below. Add a tiny blob of red food colouring and beat until the icing is pink. Use a clean cocktail stick to add a little more colouring if necessary. Put the icing in a piping bag with a large star nozzle and pipe it onto the cakes. Or spread it with a knife. Sprinkle a few pearls on top of the cakes. CUPCAKE WITH BUTTERCREAM

Spicy ginger

Replace a heaped tbsp flour in the cake mixture with a heaped tbsp cocoa. Melt a few squares of dark chocolate and leave until just warm. Add to buttercream icing and spread thickly on top of the cakes. Decorate with chocolate buttons.

Add 2 balls of chopped stem ginger and ½tsp ground ginger to the mixture. Top with glacé icing made by replacing the water with syrup from the jar of ginger. Top with chopped stem ginger.

Cherry swirl Add a good handful of quartered glacé cherries to the cake mixture. Top with a swirl of buttercream and decorate with glacé cherries.

Zesty lemon Add the finely grated zest of an unwaxed lemon to the cake mixture. Make glacé icing, replacing the water with lemon juice and spoon on top. Decorate with finely shredded lemon zest.

Coffee & nut

Orange & sultana Add the finely grated zest of a small orange and a good handful of sultanas or raisins to the cake mixture. Make glacé icing, replacing the water with orange juice and spread on top.

Dissolve 1 level tbsp instant coffee in 1tbsp hot water and add to the cake mixture with some chopped pecans. Dissolve 5 level tsp instant coffee in 2tbsp hot water. Cool and add to the buttercream icing instead of the milk. Pipe onto the cakes and decorate with pecans.

How to make it H

A tagine is an ideal dish for weekend entertaining because, although it takes around two hours to cook, it doesn’t take a lot of time to put together. We’ve used lamb neck fillet in this recipe because it becomes incredibly tender when slow-cooked and it’s reasonably priced. Plus, it’s easy to cut, which makes your job easier!

2tbsp olive oil 2 x 300g packs Asda Butcher’s Selection Lamb Neck Fillets, trimmed of fat and cubed 1 large onion, chopped 1½ level tsp each ground cinnamon, ground ginger, ground cumin and smoked paprika 390g can Asda Chopped Tomatoes with Chilli & Peppers 250g carrots, sliced 1tbsp clear honey 2 red peppers, deseeded and sliced 3tbsp chopped fresh coriander, plus extra to serve 150g ready-to-eat prunes 150g ready-to-eat dried apricots 50g whole blanched almonds Couscous, to serve

£4 (75cl) Medium bodied, this Rioja is full of juicy red berry notes with a hint of spice. It’s perfect served with lamb.

Preheat the oven to 160C/140C Fan/Gas 3. Heat half the oil in a frying pan and cook the cubed lamb in batches until browned on both sides, then transfer to a casserole dish. Heat the remaining oil in the pan, then cook the onion until soft and starting to turn golden. Add all the spices with 2tbsp cold water. Stir over a medium heat for 1 minute, then mix with the lamb. Heat the tomatoes in the pan until simmering, stirring to pick up any leftover spices. Add to the lamb with 300ml hot water. Cover and cook in the oven for 45 minutes.

Add the carrots, honey and red peppers to the casserole dish. Cover and cook for another 45 minutes. Add the fresh coriander, prunes and apricots to the casserole. Cover and cook for a further 30 minutes. Meanwhile, put the almonds on a baking tray and roast for 5 minutes until golden. Shortcrust pastry is the workhorse of the pastry world. Once you know how to make it, you’re on your way to pies, tarts and pasties – and, of course, quiche. The classic quiche Lorraine comes from France – serve it cold if that’s more convenient, but for me, nothing beats warm quiche.

1 Preheat the oven to 200C/180C Fan/Gas 6. Sift the flour and a pinch of salt into a large bowl. Cut the butter and lard into small cubes and add to the flour. Then, using your fingertips and thumb, lift and rub the fat into the flour until it resembles breadcrumbs. Mix the egg yolk with 4tbsp cold water and add to the mixture. Mix until it forms clumps, adding a little more water if necessary. Gather together, wrap in clingfilm and chill for 15 minutes.

2 Lightly dust a work surface and rolling pin with flour. Roll out the pastry using short, sharp, light strokes to make a round about 29cm across. Gently lift the pastry onto the rolling pin, to help move it, and then place it over a 23cm flan tin. Carefully ease it in, using your fingers to make sure it goes right into the edge. Trim the top edges to about 4mm above the tin. Prick the base with a fork and chill for 15 minutes until the pastry is firm.

For the pastry 200g plain flour, plus extra for rolling out 75g butter, chilled 25g lard or white vegetable fat, at room temperature 1 egg yolk

3 Lay a piece of foil in the pastry case, shiny side down, and weigh it down with raw rice. Bake for 10 minutes, then remove the foil and rice and bake for another 5 minutes to cook the base. Reduce the oven temperature to 180C/160C Fan/Gas 4. Cook the gammon in a dry frying pan, over a medium heat, for about 4 minutes or until it’s just cooked. Drain off any juices that come out. Add the oil and spring onions and cook for another 2 minutes.

Sprinkle about a quarter of the cheese in the base of the flan case, then scatter the gammon and spring onions on top. Lightly beat the eggs and single cream together and season with pepper. Pour into the flan case and sprinkle the rest of the cheese on top. Bake for 25-30 minutes or until the filling is just set.

8 Pieces Chicken Drumsticks or Thighs (skin on, bone in) 1 Bisto Chicken Stock Melt 1 Medium Onion (peeled and roughly chopped) 1 Red Pepper (seeded and roughly chopped) 3 tbsp Olive Oil 2 cloves Garlic (peeled and chopped) 2 tsp Ground Cumin ½ tsp Ground Cinnamon 1 tsp Ground Paprika 2 tbsp Fresh Coriander 1 Fresh Lime 2 tbsp Tomato Paste 600g (cooked weight) Cous Cous

1 In a bowl, mix together the cumin, cinnamon, paprika, and grated lime zest. Make three slits in each of the chicken pieces, cutting through the skin and a little way into the flesh. Add to the bowl with the spices. 2 Add the rest of the ingredients (excluding the stock melt) and mix so that all the chicken and vegetables are well coated. If time allows, leave to marinade for about an hour. 3 Place into a baking tray big enough to spread everything out evenly and into a preheated oven at 180°C (160 fan). Roast for 10 minutes, remove, and add the stock melt to the tray. As it melts, stir it into the chicken and vegetables. Return to the oven and roast for another 20 – 25 minutes until the chicken is nicely browned, cooked through and piping hot. 4 Cook cous cous following the pack instructions, replacing water with vegetable stock and add chopped coriander. How to sow seeds

Fill seed trays or small pots with multipurpose compost – break up any lumps with your fingers or use a garden sieve if you have one. Gently firm the soil with your hand or use a tamping tool.

Place in a propagator, a clear plastic bag or cover with a piece of glass. Place on a warm window sill. Remove the cover once the seeds have germinated.

Remove any impurities with a cream cleanser. Tip Massage the cleanser using upward and circular motions to boost circulation. Wipe off with a damp flannel.
