When my best friend said that she wanted to throw a Halloween party, I logged onto Pinterest for some inspiration quicker than you can say, ‘BOO’ TO A GHOST. A few years ago, I’d have suggested going for a meal, or pretending to be out to avoid the ‘trick-ortreaters’. How things change! Halloween and Bonfire Night are both reasons to be CHEERFUL. So, this issue, we’ve combined the two occasions, creating ‘gruesome’ Halloween party food recipes (page 31) and WARMING FOOD for Bonfire Night (page 69). Don’t forget to dress up for Halloween fun, too – our outfits on page 41 are spooktacular! All I need to do now is find a woolly hat and gloves, get close to the bonfire for some extra heat, then it will almost feel like I’m back to those balmy August nights…

The range now includes 26 varieties – here’s Martin’s top picks on this cheeseboard ‘The principle to putting together an impressive cheeseboard is to make it look as good as it tastes,’ says Martin, ‘so aim for a variety of flavours, shapes, textures and colours. ‘A good rule of thumb is to include a mix of hard cheeses, such as Cheddar or Manchego, soft cheeses (Brie or Taleggio) and blue varieties (Gorgonzola or Stilton). Persimmon salsa This makes a good alternative to mango salsa ♦ Remove the stalks from some persimmon and cut the fruit into small dice. ♦ Add some finely chopped red onion, canned or cooked sweetcorn, finely chopped deseeded red chilli, diced cucumber and chopped fresh mint. Mix together with a squeeze of lime juice and a splash of olive oil. garlic One of the most important ingredients in any kitchen, the humble garlic is a staple of Mediterranean and Asian cooking, where it’s often a base flavour. Just peel cloves and add crushed, chopped or sliced to stir-fries, soups and stews.
What to do with…
pumpkin seeds Instead of throwing away the pumpkin seeds, why not roast them? Wash the seeds, boil for 10 minutes, drain and spread on a baking sheet. Preheat the oven to 150C/ 130C Fan/Gas 2 and roast for 40 minutes until golden and crisp. A source of magnesium, they’re delicious in salads, pastas and soups. Alternatively, buy pumpkin seeds in store.
3 ways with… leeks
To prepare leeks, trim off the tough green tops and roots. Slice lengthways, then rinse under running water to remove any dirt. Dry with kitchen paper and slice. Add to soups, pasta, savoury tarts, pies and stews, or fry gently and serve as a side dish.
Leek & pea soup ♦ Fry finely chopped onion in olive oil until soft. Add sliced leeks and cook for another 5 minutes. ♦ Add veg stock and frozen peas and bring to a simmer. ♦ Season, roughly blitz with a hand-held blender and serve with crusty bread.
Sautéed leek & mushroom toast ♦ Gently fry sliced leeks in butter until soft. Add sliced mushrooms and fry until cooked. ♦ Stir through a little crème
fraîche and serve on thickly sliced, toasted bread.
Leek & bacon spaghetti ♦ Cook spaghetti in boiling, salted water for 10-12 minutes. ♦ Fry chopped bacon in olive oil. Add sliced leeks and cook until the bacon is crispy. ♦ Drain the spaghetti and mix in the leeks and bacon with some wholegrain mustard.

CASSEROLE COMBINATIONS Cheaper cuts of meat are full of flavour, but need slow cooking to make them tender. Try these ideas: ♦ Casserole or stewing beef Cook in beer or red wine with thyme, or in stock with a dash of brown sauce. ♦ Lamb stewing pack Add red or white wine with rosemary, or stock with a tablespoon each of mint sauce and redcurrant jelly. ♦ Casserole pork Cook in dry cider, stock and thyme. ♦ Chicken thighs Add chicken stock and white wine with rosemary, thyme or tarragon. HOW TO LOOK AFTER CHEESE Keep cheese in its original wrapping until you use it for the first time. Once opened, wrap any leftover cheese in greaseproof paper, which allows it to breathe and not sweat. Store wrapped pieces together in a large plastic box to stop them from making the fridge smell. Cheese often has a long ‘use by date’ but check the packaging. Once you open it, hard cheeses, such as Cheddar and Wensleydale should be eaten within five days, soft ones like blue and goat’s, within three days.

How to…
Caramelise onions for topping hot dogs (page 56), steaks and burgers. ♦ Peel, halve and slice two or three large red or brown onions and put in a large frying pan with 2tbsp olive oil. ♦ Cook over a low heat for 20-30 minutes, stirring and turning often until golden brown and soft. Don’t turn the heat up at any stage. As they cook, the moisture will be driven off and the natural sugars will caramelise. ♦ You can enhance the caramel at the end of cooking by adding a little brown sugar and balsamic vinegar and cooking for a further 5-10 minutes. Apples The apple harvest is in, so make the most of it with our delicious recipes featuring sweet, juicy eaters and sharp, tangy cookers
Toffee apples Before you start, always remember to wash the apples thoroughly in warm (not hot) water to remove all the wax, or the toffee won’t stick properly MAKES 6 READY IN 40 MINS PRICE PER SERVING 58p 6 eating apples 50g unsalted butter, plus extra for greasing 450g demerara sugar 2tsp cider vinegar 1tbsp golden syrup Chopped nuts or sesame seeds, to decorate 1 Wash the apples and dry thoroughly. Grease a sheet of baking paper and put on a baking tray. Push a lolly stick into each apple through the core, to approximately three-
quarters of the way down. 2 Put the sugar and 150ml water in a pan and heat gently, stirring often, until the sugar has dissolved. Add the butter, vinegar and syrup. 3 Increase the heat and boil for 10 minutes, without stirring, until it turns to toffee. Towards the end of the cooking time, test often by dropping a small amount into a bowl of cold water – if it turns hard, it’s ready. If you have a sugar thermometer, this will be when
it reaches 140C. Remove from the heat immediately. 4 Holding the apples by the sticks, dip them into the toffee and turn to cover. Sprinkle with sesame seeds or nuts and leave some plain. 1 Preheat the oven to 180C/ 160C Fan/Gas 4. Wash and dry the apples, then remove the cores using an apple corer or a sharp knife. Enlarge the holes slightly with a knife. Make a cut in the skin around the middle of each apple and put in an ovenproof dish. 2 Mix together the chopped

Caramelised French apple tart Our tart is as good as the ones you see in French bakeries, and so easy to make! SERVES 12 READY IN 1HR 20 MINS PRICE PER SERVING 40p For the pastry 250g plain flour, plus extra for rolling 150g butter, chilled, and cut into small pieces 1 level tbsp icing sugar 1 egg yolk For the filling 2 Granny Smith apples, peeled, cored and sliced 100g caster sugar 2tbsp lemon juice 750g Bramley cooking apples, peeled, cored and sliced
40g unsalted butter 4tbsp Hartley’s Smooth Apricot Jam 1 For the pastry, sift the flour with a pinch of salt, then rub in the butter until it resembles breadcrumbs. Add the icing sugar. Mix the egg yolk with 2tbsp ice-cold water and mix with the flour mixture to make a stiff dough. You may need a little more water. 2 Preheat the oven to 190C/ 170C Fan/Gas 5. Roll out the pastry on a lightly floured
surface and line a 23cm flan tin. Prick the base and chill for 15 minutes. Lay a sheet of baking paper in the flan case and weigh down with dry rice. Bake for 10 minutes, remove the paper and rice and cook for another 5 minutes. 3 Put the sliced Granny Smiths in a bowl with 50g of the caster sugar and the lemon juice and mix gently. Set aside, turning occasionally. 4 Put the Bramley apples in a pan with 25g of the butter and 2tbsp water. Cover and
cook until tender. Stir in the rest of the caster sugar and 2tbsp of the apricot jam and simmer, uncovered, stirring often, until you have a thick purée. Put in the flan case. 5 Drain the apple slices and arrange on top. Melt the rest of the butter and brush the apples. Bake for 25 minutes. 6 Heat the rest of the jam and brush over the warm apples. Individual spooky beef pies For an even quicker filling, use minced beef – just flavour it in the same way MAKES 8 READY IN 3HRS 45 MINS PLUS CHILLING PRICE PER SERVING 65p 250g pack Asda Diced Casserole Beef 1tbsp flour, plus extra for rolling 2tbsp sunflower oil 1 onion, chopped 1 beef stock cube, crumbled 2tsp Worcestershire sauce 2tbsp Asda Brown Sauce 2tbsp Asda Tomato Ketchup 175g butternut squash, flesh only, cut into small cubes 500g Jus-Rol Shortcrust Pastry 1 egg, beaten
1 Preheat the oven to 150C/ 130C Fan/Gas 2. Put the beef in a bowl, sprinkle on the flour and season. Toss to coat, then set aside. 2 Heat 1tbsp of the oil in a large frying pan, add the onion and cook until soft. Transfer to a casserole dish and keep warm in the oven. Heat the remaining oil and cook the beef over a high heat, until just browned on all sides. Add to the onion. 3 Add the stock cube and 175ml water to the pan and

heat until simmering. Stir in the Worcestershire sauce, brown sauce and ketchup. Pour over the meat, cover and cook in the oven for 1 hour 45 minutes. Add the squash and cook for another 30 minutes, until the meat is tender. Tip into a bowl and leave to cool. 4 While the meat is cooking, flour a work surface and roll out the pastry thinly. Cut out 8 x 10cm rounds and 8 x 11.5cm rounds, re-rolling the pastry as necessary. Cut jack-
o’-lantern faces in the smaller rounds. Put the rounds on a plate with a piece of baking paper between each one. Cover with cling film and chill. 5 Turn up the oven to 200C/ 180C Fan/Gas 6. Use the larger pastry rounds to line 8 Yorkshire pudding tins. Fill with the beef mixture. Brush the edges with egg. Put the pastry lids on top, brush with egg and bake for 20-25 minutes. CALORIES

Leave until the chocolate melts. 2 Remove the bowl from the pan of water and stir the peanut butter into the chocolate. 3 Arrange paper cases on a baking tray and fill with the chocolate mixture – if you double up the cases, the ‘brooms’ will hold their shape better. Chill until the chocolate mixture starts to firm up – about 30 minutes. 4 Put a Matchmaker (Mikado/ Cappuccino Flute) in the middle of each one (halved if necessary) to make the broomstick handle. Beef in red wine sauce Red wine gives a lovely richness and colour to the sauce, but you can use white if you have it to hand SERVES 6 READY IN 3HRS PRICE PER SERVING £2.01 700g pack Asda Butcher’s Selection Slow Cook Stewing Steak 40g flour 3tbsp sunflower oil 1 large onion 400ml red wine 1 beef stock cube 1 level tbsp chopped fresh thyme leaves or 1tsp dried thyme 500g carrots, sliced 2 x 300g cans cannellini
beans, rinsed and drained 400g mushrooms, halved or quartered New potatoes and broccoli, to serve 1 Preheat the oven to 150C/130C Fan/Gas 2. Toss the meat in the flour so all the pieces are coated. Season. 2 Heat 1tbsp of the oil in a large frying pan and cook half the beef until browned
on all sides. Transfer to a casserole dish. Repeat with another 1tbsp oil and the rest of the beef, sprinkling on any remaining flour. Keep warm, uncovered, in the oven. 3 Wipe out the frying pan and cook the onion in the remaining oil until soft. Add this to the meat. 4 Pour the wine into the frying pan, crumble in the stock cube and heat.
Simmer, uncovered, for 5 minutes. Add to the casserole with the thyme, carrots and 200ml boiling water. Cover and cook in the oven for 1 hour 30 minutes. 5 Stir in the beans and mushrooms. Cover and cook for another hour. Serve with new potatoes and broccoli.

♦ Preheat the oven to 150C/130C Fan/Gas 2. Put a 700g pack Asda Butcher’s Selection Slow Cook Stewing Steak in a casserole dish and add 1 chopped large onion, 350g diced carrots and 2 level tsp dried mixed herbs. ♦ Dissolve 1 beef stock cube in 450ml hot water, add 2tbsp tomato purée and stir to mix. Pour into the casserole, cover and cook in the oven for 2 hours 30 minutes. ♦ Half an hour before the beef is ready, put 3 peeled large potatoes and 1 peeled large swede, all cut into even-sized chunks, in a pan. Lift out the meat and veg with a slotted spoon and transfer to a pie dish. Add enough gravy to moisten the pie filling; reserve the rest. ♦ Increase the oven temperature to 200C/180C Fan/Gas 6. Drain the swede and potato, then mash with 25g butter. Spread over the pie filling and bake for 15-20 minutes. Heat the reserved gravy and serve with the pie.

1 level tbsp Asda Mild French Mustard 1 Preheat the oven to 150C/130C Fan/Gas 2. Heat 1tbsp of the oil in a large frying pan and cook the beef, in batches, over a high heat until browned all over. Transfer to a casserole dish, together with any cooking juices. 2 Heat the rest of the oil in the frying pan, add the onion
and cook until soft. Stir in the garlic, cook for 1 minute, then add to the meat. 3 Heat the light ale in the pan until simmering, then add to the casserole with the stock cube, bay leaves, carrots and 100ml water. Cover and cook in the oven for 2 hours 30 minutes or until the meat is tender. 4 Mix the cornflour with 3tbsp cold water and stir
it into the casserole. Remove the bay leaves. 5 Cut the baguette into 6 thick slices, leaving off the ends. Spread thinly with mustard and arrange on top of the meat, pressing each slice in lightly. Return to the oven, uncovered, for 20-30 minutes.

Put all the dried fruit in a bowl with 100ml rum or brandy. Cover with clingfilm and leave for 1-2 days to soak, stirring occasionally. Line a 22cm deep round or 20cm deep square cake tin with 3 layers of baking paper. Preheat the oven to 150C/130C Fan/Gas 2.

Put the mixture in the tin and level the top. Pat the top with damp fingertips, but don’t make it wet – this helps to prevent the top becoming too hard as the cake bakes.

Sift the flour and mixed spice together. Cream the butter and sugar together in another large bowl, then beat in the eggs one at a time. Beat well between each addition, adding a tablespoon of flour with each one.
Add the rest of the flour to the bowl along with the orange and lemon zest, the chopped nuts and the soaked, dried fruit and any remaining soaking liquid. Stir until evenly mixed.

Wrap with brown paper and tie with string. Bake for 2 hours. Reduce the oven to 140C/120C Fan/Gas 1 and cook for 1 hour 45 minutes or until a skewer comes out clean. Cover with a piece of baking paper after 2 hours if it’s browning too much.
Cool on a rack but don’t remove the baking paper as this helps keep the cake moist when stored. Once cold, store in an airtight box. Every week, pierce with a skewer, drizzle over 1tbsp rum or brandy, then re-store. Repeat until ready to ice.
GLYNIS’ TIPS ● For an alcohol-free cake, soak the fruit in apple or grape juice instead of brandy or rum and omit the weekly ‘feeds’. When stored correctly, it will keep perfectly well for up to 2 months without alcohol. ● You can use any combination of dried fruit instead of the raisins, sultanas and currants in the recipe. However,

the total weight must be 900g. SERVES 24 READY IN 1HR 20 MINS PRICE PER SERVING 10p 75g unsalted butter 200g golden syrup 400g caster sugar 1tsp malt or wine vinegar 2 level tbsp bicarbonate of soda Melted chocolate, for dipping 1 Line a shallow 22cm square cake tin with baking paper. 2 Put the butter, syrup, sugar and 4tbsp water in a large pan and stir gently, over a medium heat, until the sugar dissolves. Try not to splash the mixture up the sides of the pan as you stir. Increase the heat to high and bring the mixture to the boil. 3 Boil, without stirring, until a teaspoon of the mixture forms a hard ball when dropped into a bowl of cold water. If you have a sugar thermometer, the toffee is ready when it reaches 138C. 4 Immediately remove from the heat and add the vinegar and bicarbonate of soda. Be careful as the mixture will boil up and rise in the pan. 5 Stir once gently to mix everything together. 6 Pour immediately into the tin and leave until completely cold and set. 7 Break the set toffee into pieces with a rolling pin. Serve with melted chocolate for dipping. MED

Tip the ribs and marinade into a large roasting tin (or 2 medium tins), spreading them out evenly. 3 Roast for 1 hour 10 minutes; turn the ribs every 20 minutes. 4 Transfer the ribs to a serving platter and keep warm. Cut the carrots, squash and sweet

Toss to coat. 2 Spread out in a roasting tin and roast for 40-45 minutes, until tender with brown edges. 3 Heat the rest of the oil in a saucepan, add the spices and stir over a low heat for 1-2 minutes. Add 200ml of the stock and the tomato purée, and heat until simmering. 4 Add the roasted veg and purée smooth with a handheld blender or processor. 5 Add the milk and the rest of the stock and heat through. 500g lean minced beef steak 1 level tbsp chopped parsley 2tbsp olive oil 1 large onion, chopped 1 baking potato, cubed 1 red pepper, deseeded and chopped 2 level tsp smoked paprika 390g carton Asda Chosen by you Chopped Tomatoes with Chilli & Peppers 400ml vegetable stock 1tsp caraway seeds (optional) 1 Mix the mince and parsley, and season well. Cover the pan and cook over a low heat for 8 minutes, stirring occasionally. 3 Stir in the smoked paprika and cook for another minute. Add the chopped tomatoes and vegetable stock. Bring to the boil, partially cover and simmer for 15 minutes. 4 Purée the soup with a handheld blender or processor. Bring to the boil in the pan. Add the meatballs and caraway seeds (if using), then simmer, partially covered, for 10 minutes, before serving.

Sweet chilli salmon pasta This delicious supper for one is quick to rustle up. 1 Preheat the oven to 190C/ 170C Fan/Gas 5. Put a sheet of foil on a baking tray and put the frozen salmon in the centre. Drizzle on 1tsp each of the sweet chilli sauce and lemon juice. Fold up the foil to make a parcel, leaving room inside for air to circulate. 2 Cook in the oven for 20 minutes or until the fish
flakes easily. Tip the salmon and any juices into a bowl and break it into large flakes. 3 While the salmon is cooking, add the tagliatelle to a large pan of boiling water. Bring back to the bowl, stir once and simmer fast for 5 minutes. 4 Add the peas and return to the boil. Simmer fast for another 3 minutes. Drain.
5 Put the soft cheese in the pasta pan and add the rest of the chilli sauce and lemon juice. Heat until melted. Return the pasta and peas to the pan with the salmon and juices. Heat through, season with black pepper and serve.

HEARTY BREAKFAST
Everyone knows eating a good breakfast helps set you up for the day – and eggs are a classic, nutrient-rich choice. As well as being a good source of protein, they’re high in vitamins D, B2, B5, B7 and B12, and are a source of folic acid and selenium. Plus as there’s now no recommended limit, you can eat them as often as you like as part of a balanced diet. So start your day with a breakfast of poached or scrambled eggs and grilled tomatoes on wholegrain toast, and you’ll be ready to go.

Winning combinations Did you know that the mix of foods on your plate can bring an extra nutritional boost? For example, studies show that the antioxidant vitamin A in foods such as carrots and orange-fleshed sweet potatoes is better absorbed if they are eaten with fat or fat-containing foods, such as cheese or avocado, because the vitamin is fat-soluble. So you could combine cooked sweet potato, raw carrot and feta cheese with a little olive oil-based dressing for a great winter salad. Similarly, tomatoes are a good source of the antioxidant lycopene, which is better absorbed by our bodies when consumed with a fat such as olive oil. This just goes to show how good a Mediterranean diet is!

A little extra helps
Fresh food in season is great value and can also have the best flavour and nutritional value. In winter, look for goodness-packed greens, such as broccoli and kale, and try butternut squash in soups and curries. Lemons and other citrus fruits are also in season and add zesty flavours to meals – plus tangerines are ideal in lunch boxes.
Zinc helps to support our immune systems, which is particularly important in the cold winter months. And it’s also involved in maintaining healthy skin, hair and nails – useful when the weather’s harsh and damaging. Back to your roots Root vegetables such as sweet potato, beetroot and carrots may not be the most glamorous of foods, but they’re still a good way of getting your 5-a-day, especially in winter. Plus they contain antioxidants – which gives these roots their natural orange/red colouring. Try baked sweet potato wedges as a great alternative to chips, or roast whole beetroot in foil in the oven, then peel – a delicious accompaniment to meat or fish.
Brew-tastic! Did you know that green and black teas contain a similar amount of essential antioxidants and minerals? So whether you go for green or prefer to stick to a traditional cuppa, they both do a great job.

DIY HOME COSIES Lined or thermal curtains at doors as well as windows are great for keeping drafts out and heat in, and rugs will bring warmth to bare floors. Put foil behind radiators to reflect heat back into the room and don’t block them with furniture. And for snug nights, double up low-tog duvets, put a blanket or fleece throw under the fitted sheet and slip in a hot water bottle.
