September We know September’s all about getting back into the swing of things as we say goodbye to summer and our holidays start to feel like a distant memory. Everything picks up pace – it’s back to school or back to uni, or just back into the old routine. To be honest, it can be a bit daunting, but we’re here to help. This month’s magazine is packed with hints, tips and ideas to ease you into autumn. I know taking a packed lunch (or ‘pack up’ as I still call it, because I’m, what – like eight?) is cheaper and more satisfying than a soggy sandwich, but the planning can be a bind. So if you’re struggling to do that every day for the kids, we’ve put together some great ideas (p67), along with cheap, easy family suppers, plus more really useful ways to save time and money – turn to p62 and you’ll never waste food again… And because we can’t quite let go of summer, we’ve got a treat for you, too – an indulgent family brunch to celebrate the bank holiday in style (p27).

Avocadomania
As the thousands of recipe photos posted online reveal, our obsession with avocados isn’t going away. We’re eating them with poached eggs and chilli sauce, in smoothies and pesto. But ‘avo-on-toast’ – mashed with lemon juice and olive oil, then spread on thick-cut toast – is still the most popular choice.
HOW THEY LIKE THEIR AVOCADO TOAST Anna Jones Chef and food writer Anna loves avo-ontoast – her blog (annajones.co.uk) lists 10 ways with ‘the green beauties’. One of her favourites is mashed avocado with lemon juice, piled onto toast, and topped with a few thin slices of banana and a sprinkling of cinnamon. Wahaca This modern Mexican restaurant chain mashes avocado with olive oil, a little lime juice and a touch of chilli, and serves on toasted sour dough. Deliciously Ella Healthy eating food blogger and writer Ella Woodward says her favourite fve-minute lunch is mashed avocados with roasted tomatoes, olive oil, lime juice, chilli fakes and black pepper. For more delicious recipe ideas using avocados, check out ASDA.com/recipes
Top that… Pizzas are popular the world over, but there are some very unusual toppings! Think mayo, potato and bacon in Japan; banana curry in Sweden; and mutton and pickled ginger in India. Why not create your own mix of toppings at our in-store Pizza Counter?
We’ve all heard of brunch… but now the US craze for ‘brinner’ – that’s breakfast for dinner – is catching on, too. London restaurants already serving breakfastinspired mains include Ottolenghi, with its MiddleEastern eggs poached in a tomato and pepper sauce, and Canteen, ofering ‘all-day’ dishes such as bacon, fried eggs and bubble and squeak. Even The Wolseley serves its famous Eggs Benedict until midnight. For our Ottolenghiinspired brunch recipe, turn to p30

Go nuts… for young coconuts
If you love coconut water, enjoy it as nature intended, straight from our new young coconuts. The refreshing, naturally sweet water is high in potassium, and low in calories – and with no added extras, it’s a great way to stay hydrated. Just slice of the top and pop in a straw. The soft fesh is great added to curries or Thai recipes, too. Look out for Asda Young Coconuts in store now, £3.50 for 2-pack.
I grew up in Jamshedpur, India, where the streets were full of people selling regional food. One hawker came by every afternoon with south Indian rice cakes (idlis) and lentil stew (sambhar). I still crave them today! Did you help cook? I was good at peeling vegetables as a young boy, and it started my interest in cooking. Why do the British love Indian food so much? Britain’s had links with India for 400 years, so it was bound to happen. What’s your favourite food at home? My wife’s chicken curry – I love it when she cooks.

SCOTCH BONNET
These add a sweet, fruity favour with citrus hints. They also pack ferce heat, so a little goes a very long way. A key ingredient in the jerk dishes and rich meat stews of the Caribbean, they’re brilliant for superhot table sauces, too. Not for the faint of heart! 22

Method 1. Pre-heat the oven to 180ºC. Sift together the four, baking powder and sugar. 2. Whisk the egg and yoghurt together until smooth. 3. Rub the butter through the dry ingredients until you get a fne crumb texture. 4. Make a well in the centre of the dry ingredients, and pour in two thirds of the yoghurt. Use a fork to stir gently until you achieve a stiff dough - you may need to add a few more spoonfuls of the yoghurt mix. 5. When most of the dry ingredients are mixed into the dough (there should be about 3 tablespoons worth of dry crumbs in the bottom of your bowl), tip everything out onto your work top, and fold the dough onto itself until all the dried bits get mixed in. 6. Roll out the dough until it is about 1.5cm thick - you may need to lightly four your table and the top of the dough. Use a 5cm round cutter to form your scones. 7. Place the scones on a lined baking tray, if there is any of the yoghurt mix left over brush the top of each scone with it. 8. Bake for about 12-15 minutes, until well risen and golden brown. Serve warm with clotted cream and jam for a delicious afternoon treat!

1 Using your fngertips, rub the butter into the four until it resembles breadcrumbs. Add the yeast, sugar and salt, and stir to mix together. 2 Measure out 325ml lukewarm water. The water should not be hot – if it’s too warm, it will destroy the yeast. Add the water to the four mixture all at once, and mix with a spoon to make a soft, elastic dough. If the mixture is too sticky, add a little extra four. 3 Knead the dough on a lightly foured surface. To do this, put the heel of your hand on top of the dough and push it down frmly away from you. Gather the dough back together, give it a quarter turn, and push down again. Repeat for

10mins. Or, if you have a mixer with a dough hook, you can use this to knead the dough for 5mins. The kneading process helps to develop the gluten (the protein in the four), which gives the dough a good consistency – it should feel smooth and elastic by the time you’ve fnished kneading it. 4 Put the dough into a lightly oiled bowl and cover with clingflm. Leave in a warm place until it doubles in size – this is known as ‘proving’. You can skip this stage and go straight on to shaping your loaf (see Step 5) if you want to save time, as this recipe uses easy bake yeast. However, allowing your dough to prove will
give it a fner texture. 5 Remove the dough from the bowl and put it on a foured surface. Flatten it with your hand, then knead it again for 1-2mins. Shape into an oblong bloomer loaf and put on a lightly foured baking tray. Make cuts across the top with a sharp knife. Cover with lightly greased clingflm and leave in a warm place until it has doubled in size again. 6 Beat the egg with a pinch of salt. Brush over the loaf, then sprinkle on the poppy seeds. Bake in a preheated oven at 220C/200C Fan/Gas 7 for 25-35mins or until the base of the loaf sounds hollow when tapped. Leave to cool completely on a wire rack.

Hints & tips ● It’s essential to use ‘bread making’ four when you bake loaves or rolls – check the packaging. This type of four has a high gluten content, which gives the dough its elasticity.

handle of a wooden spoon and press it right through both balls. Bake as in Step 6, for 30-40mins. SPIRAL LOAF Roll the dough into a long sausage. Shape into a spiral. Bake as in Step 6, for 20-30mins.
● It’s almost impossible to over-knead dough by hand, but it can happen if you use a mixer. Follow the manufacturer’s instructions carefully and stop when the dough is smooth, glossy and elastic. ● Leaving the dough in a warm place makes it rise quickly. You can also put it somewhere cooler to rise, but it will take longer. Or try putting it in the fridge to rise overnight, ready to bake for breakfast.

A slow cooker is the perfect gadget for a student. Just throw all your ingredients into one pot, leave it to work its magic – completely safely – as you get on with your day, then come home to a delicious hot supper.
Aneesah adds stock to her slow-cooked beef stew – it only took her a few minutes to prep
‘The beef stew is so simple and easy. I’d never thought of getting a slow cooker but now it’s something I can see myself using regularly’ Aneesah They’re budget-friendly, too, as they use less energy than an oven, and are ideal for cooking cheaper cuts of meat, such as shoulder and brisket. Plus, you won’t need to use much oil, thanks to the moisture produced inside the slow cooker.
Aneesah says, ‘The stew was hearty, which I love – exactly the sort of food you miss when you’re away from home. I never thought of using a slow cooker before, but it makes things easier for a student. I’ll defnitely be buying one.’

Use it, t don’t lose it Fed up with wasting food? Our clever tips will help you to keep it fresh, use up leftovers – and save money, too
A
ccording to the charity WRAP’s Love Food Hate Waste campaign, we throw away 7 million tonnes of food and drink every year in the UK, more than half of which was perfectly fne to eat. This is the equivalent of an average family with children throwing away £700 a year – or around £60 a month. There’s no need to let good food go to waste, though – just shop smart and cook clever.

USE YOUR LOAF DonÕt bin slightly stale breadÉ COOK IT Make croutons by cutting bread into cubes, then toss in a little oil and bake or dry-fry. Serve with soup or salads, or add to pasta dishes for extra crunch. Keep in an airtight container for up to a week, or in the freezer for 3 months.

banana cake, or whizz into smoothies and milkshakes. ● Puree surplus apples and pears for crumbles and pies, or freeze in small portions to serve with pork. ● Don’t overload the fruit bowl. Lots of fruit kept together at room
temperature ripens quickly, so store some in the fridge for later. ● Keep bananas separate from other fruit – they give of a gas that speeds up the ripening process. And don’t refrigerate or their skins will turn brown.
LEFTOVERS SALAD SAVERS 3 ways to longer-lasting lettuce… 1 Store salad leaves loosely in the fridge in a plastic container lined with kitchen towels. els. eal Don’t squash them in or they’ll bruise. Or seal them in their original bag with a peg. e. 2 Whole lettuces keep really well in the fridge. Choose varieties such as Baby Gem, removing the leaves as and when you need them. 3 Cook with it! Stir leftover watercress or baby leaf spinach into risottos, curries or stir-fries.
SAVVY SHOPPER Before you go shopping, check what’s in your fridge to make sure you only buy what you need – and to see if anything is near its use-by y date. Food should be eaten by its use-by date, te, so if it’s almost out of date, cook it straight ght away so it will last a few days longer in n the fridge, or freeze if suitable for freezing. ng.
DAIRY DILEMMA ● Got a large carton of
milk nearing its use-by date? Turn it into shakes or smoothies, make custard or bake a rice pudding. ● Transform double cream into super-easy ice cream.
Whip it up, fold in fruit uit preserve or jam, then freeze to enjoy later. ● Only need a little bit of cream? Buy creme fraiche he instead – it keeps longer and is a great substitute.
HANDY HERB HINTS TS
It’s best to buy growing pots of herbs if you only use small amounts when you’re cooking. If you keep the pots well watered, they’ll last for weeks.
Mix leftover chopped herbs with butter, shape into a sausage, wrap in baking paper, chill, then freeze. Slice of from frozen and serve on veg or meat.
Freeze cut her herbs rbs iin ice cube trays with oil or water so you’ve always got some to hand. Or add to a bottle of white wine vinegar to give it a herby favour.

LEFTOVERS
LOVE YOUR VEG Past its best? Oh no it isn’t! Raw or cooked, try these four easy tricks with vegetables… 1 Revive wilting broccoli and celery by standing it in a jug of cold water. 2 Freeze surplus mashed potato in tablespoon-size portions for a glutenfree thickener for soups or casseroles. Or transform mash into fsh cakes – mix with canned salmon or tuna, leftover cooked fsh, and beaten egg.
3 Make a delicious soup using equal quantities of vegetables and stock. Anything goes, so use whatever’s lurking in the salad drawer – even tough broccoli stalks can go into the pot. 4 Give unused fresh vegetables, such as cauliflower, carrots, green beans, peppers and courgettes, a new lease of life in a homemade pickle. See our simple recipe below.
DID YOU KNOW YOU CAN FREEZE…? Eggs Mix a little salt or sugar with lightly beaten whole eggs or yolks before freezing to prevent them thickening too much. Separated egg whites can be frozen as they are. Milk and double cream freeze well – but not single cream.
Pesto Freeze any leftovers in ice cube trays (above). It will change colour, but taste the same. Bananas Freeze whole in their skins, then defrost, peel and use in cakes and to make smoothies. Nuts Freeze any left in the pack – it will help retain their freshness. Cheese Freeze soft cheeses such as Brie whole; grate hard cheeses such as Cheddar frst – it’s easier to add to sauces and sprinkle onto gratins.
A SPOONFUL OF… Is your fridge full of half-empty jars? Make every last drop count… ● Stir mayonnaise into mashed potato, or use in sandwiches instead of butter. ● Add a spoonful of chutney to casseroles, 64

cooked mince, stews and gravies for extra flavour. ● Drain the brine from opened jars of olives and top up with olive oil – they’ll last longer. ● Use the oil from sundried tomatoes in salad dressings, instead of olive

Heat until the sugar dissolves, then simmer for 5mins. Add the veg to the pan so it’s covered with the liquid, return to the boil and cook for a couple of minutes. Pack in sterilised jars, cover with the pickling vinegar and seal. It will keep in the fridge for up to a month.

Many snacks that seem ‘healthy’ are far from it. Ensure your child isn’t overdoing the sugar or salt – or falling foul of the school’s snack policy – by including one of these treats… ● A handful of almonds or other plain nuts ● A few pieces of dried mango or dried pineapple or a handful of raisins ● Plain popcorn ● Grapes set in sugar-free jelly ● Plain rice cakes
ASDA.COM/GROCERIES | SEPTEMBER 2015
Many dairy products are a source of calcium, an essential mineral for maintaining healthy bones and teeth. But they can also be high in fat and sugar, so be aware. These are ideal for lunchboxes… ● Low-fat natural yogurt – add sliced banana or chopped fruit if they don’t like plain yogurt V ● 30g cheese, such as fngers of mild Cheddar ● 1tbsp low-fat cottage cheese with cucumber sticks V
Get ahead
A little planning goes a long way. Get prepared at the weekend and you’ll save time in the week… Help them to their 5-a-day by adding a portion or two of fresh fruit and veg, or dried fruit such as apricots. Chop into mini portions to make them easy and fun to eat, and vary the types to keep things interesting. Give these a try… ● Small bunch of grapes ● Carrot sticks ● Kiwi fruit
cut in half – don’t forget to pack a plastic spoon ● Little pot of blueberries ● Two seedless satsumas
or clementines ● Mixed red and yellow pepper sticks
Cook enough pasta to last a few days (keep it covered in the fridge) and use to make diferent salads. Add reduced-fat soft cheese or mayo, cooked frozen veg and cooked meat, or mix with tomato-based sauces. Canned beans and pulses are great lunchbox standbys – cheap, versatile and with a long shelflife. Drain and stir into rice or potato salads, along with cooked vegetables and cooked meat. Hard-boil some eggs, then refrigerate. Use them throughout the week – sliced in sandwiches, chopped for egg mayo or halved as a snack. V
Veg boost
Kids often prefer sweeter vegetables, such as sweetcorn and carrots, or those without strong favours, like cucumber. They’re a cheap and easy way to bulk out fillings, as well as upping the veg count towards their 5-a-day
Cooked meat can be stirred into pasta, potato salads and rice dishes. For treats, make up a batch of homemade sugarfree jelly in mini plastic containers. Add chopped fruit to some. Keep in the fridge for up to a week.

D
DEHYDRATION can result from fever, diarrhoea, vomiting or sweating heavily, meaning your child is losing essential fuids. Don’t wait until they say they’re thirsty – encourage them to sip plenty of water, little and often, particularly if they’re unwell, out in the sun, or exercising.
F
Flu vaccine
This autumn, your child’s school will join the seasonal fght against fu. The nasal spray fu vaccine will now be ofered to all children in Years One and Two, and Years Seven and Eight in some areas, as part of a pilot scheme.

BUMPS and cuts can usually be soothed with a cuddle or a plaster with their favourite Disney character on, but head injuries need more attention. If your child has a headache, nausea, dizziness or blurred vision, head to A&E for a check-up.
Chickenpox
can mean a fever, headache, nausea, a sore throat, then a rash. Treat with Calpol Infant Paracetamol Suspension*†, £3 (100ml), or Asda Infant’s and Children’s Paracetamol*, £1 (100ml). For the itching, try Asda Calamine Lotion*, £1.10 (200ml).
E
Ear infections tend to be caused by viruses, and most clear up in days. Use Asda Infant’s and Children’s Ibuprofen Solution*, £1.80 (100ml), for the pain, but visit your GP if it persists or there’s a discharge.
G
GLANDULAR FEVER
Passed through saliva, the ‘kissing disease’ is very common in teenagers and comes with a high temperature, extreme tiredness and swollen glands. There’s no treatment, but seek advice from your GP. Ease with painkillers and plenty of fuids.
HPV (human papilloma virus) vaccination is ofered to girls in Year Eight (age 12-13), to protect against cervical cancer. It is usually given as two injections, within a six to 24-month period. Girls up to the age of 18 are eligible for the vaccine free on the NHS, but those over 15 may need three injections for it to be efective.

ITCHY, dry and red, the atopic eczema rash afects 20% of kids but they often grow out of it. If your child is sufering, see your GP for a diagnosis and treatment. To help ease the itch, use cotton bedlinen, ban pets from their room, switch to fragrance-free toiletries and use a rich moisturiser, such as E45 Lotion*, £3 (200ml), or an oat-based formula, such as Aveeno Skin Relief*, £5 (200ml).

MENINGITIS
K
On days out, make sure you’re prepared by taking a frst-aid kit. Stock it with plasters, kids’ ibuprofen and paracetamol, insect bite relief, antiseptic wash or wipes and cream, and a thermometer.
Serious and potentially disabling or even fatal, this is a viral or bacterial infection of the membranes around the brain and spinal cord. Symptoms include fever, drowsiness, a stif neck, headaches, convulsions and muscle pain. If a red or purple pinprick rash appears, try the ‘glass test’ – press a clear glass against the marks and if they don’t fade, treat it as a medical emergency and seek help immediately. For more information on meningitis, call 080 8801 0388 or visit meningitisnow.org
P
PUBERTY – when the body matures sexually – tends to occur between the ages of eight and 14. Girls develop breasts and start their periods, while boys’ voices ‘break’. It can be an emotional time, so encourage your child to speak about their feelings to you or another trusted adult, or to talk free and in confdence to ChildLine on 0800 1111. For information, visit childline.org.uk

NITS are the egg sacs of tiny lice that live in human hair. If you suspect your child has them, use the Nitrid Headlice Detector Comb, 99p, then treat the entire family with a nit-busting lotion or shampoo. See the range in our Healthcare Aisle or visit the Pharmacy for advice and bigger packs.

FAMILY WELLBEING
This serious, but thankfully rare, condition can lead to brain and liver damage. While the exact cause is unknown, most cases have been diagnosed in children with chickenpox or fu who took aspirin to ease their symptoms. The connection with Reye’s is one of the reasons why you should never give aspirin to children under the age of 16.
S
Slapped cheek syndrome This bizarrely named illness causes a bright red rash on the cheeks. It tends to be mild, with some kids sufering fu-like headaches, high temperatures or itchy skin before the redness appears. This develops into a pink, raised rash on the body. Treat with rest and paracetamol.
T
TONSILLITIS means the tonsils – two glands at the back of the throat – are infected. Symptoms include a sore throat, high temperature and a headache. Rest, painkillers and fuids will usually see it clear up within a week. Visit your GP if your child has pus-flled spots on their tonsils plus a high temperature, as antibiotics may be needed.
Vomiting can be a sign of a tummy bug, such as gastroenteritis. Treat with bed rest, plain foods and liquid – it’s good to replace fuids and vital mineral salts with Oralyte Hydration Drink*, £1 (200ml). If your child vomits repeatedly, it may be something more serious, such as meningitis, so seek medical help.
V
W
WORMS
If your child shows signs of an itchy bottom, check their poo for threadworms, which – as the name suggests – look like little white threads. Treatments, which will need to be taken by the whole family, are available from your Asda Pharmacist, who’ll also be able to advise you on hygiene measures to help reduce the risk of re-infection.
X
X-RAYS can help to diagnose everything from broken bones to breathing problems. They are safe for children as the amount of radiation involved is very small. However, doctors may ofer your child a lead shield, to protect organs such as the testes, ovaries or thyroid gland, just as an added precaution.
Z
U
Ulcers
These red or white sores inside the mouth can result from an infected cut, and often strike when kids are tired or stressed. They only last a few days, but can hurt a lot. Get your child to rinse their mouth with salt water, then soothe afected areas with Bonjela Junior Gel*, £3.30 (15g).
Y
YEAST INFECTIONS fare up when a fungus, Candida albicans, that lives on our skin goes into overdrive. As this is often due to hormonal changes, teenage girls going through puberty may be prone to a common form, vaginal thrush. Symptoms include itching, redness, discharge and pain while peeing, but it’s easy to banish with Canesten Dual Action Cream*†, £4.10 (30g).
ZITS are the bane of every teenager’s life. For smaller outbreaks, a pharmacist can recommend face washes and creams. Severe cases may need something stronger. Acne can damage a child’s confdence, so ask your GP about treatments.
Serious illnesses and conditions are rare but if you are concerned about your child’s health, call 111 free for NHS advice, or see your GP. In an emergency, call 999 or go to A&E. 74

H
air this autumn is all about being relaxed – unfussy, not overstyled, and with a wave to add movement. ‘It’s like “pillow hair” – but better,’ explains hair stylist Andrew Barton. This look works on any length of hair, and, best of all, it can be done in a fash – perfect for busy mums.
Here’s how Andrew does it… 1 Spritz a small amount of sea salt spray into damp
hair, then rough-dry with your fngers. 2 Heat up a curling wand with a medium-sized
barrel until it’s ready to go. 3 Take random sections of your hair and wrap around
the barrel of the wand to create loose curls. 4 Wait until your hair is cool, then gently rake through
the ends with your fngers for a loose, tousled efect. 5 Finish with texturising spray – and you’re done!

The BIG debate
your child’s mobile?
‘
‘ Should you monitor NO
Helen Oldfeld, mum to Lily, 14 ‘There are two main reasons why I don’t check Lily’s phone. First, I think it’s more important – and more efective – to make sure she knows how to keep safe online. I’m always quite shocked by how much people give away on social media, and we’ve talked a lot about this. I’ve also been impressed by the teaching kids have at school about protecting themselves. ‘I’ve asked Lily to show me the apps she downloads, like Snapchat, and tell me what they involve. I was slightly concerned about the “fandom” sites [unofcial online fan clubs], so I’ve warned her to be aware that there are people online who aren’t what they seem. Then we’ve got all the usual rules about not giving out personal information or data that could tell someone where you are. ‘Obviously, if something was worrying Lily, I’d talk to her about it – we don’t have
of-limits topics at home. But that means I have to treat her as a person I trust, not as someone I need to micro-manage in case she makes mistakes. ‘The other reason I don’t read Lily’s texts is that I think everyone has a right to some privacy. I know she says things to her friends that she wouldn’t say to me – but that’s her business. ‘Lily is growing up fast, and I need to respect her as a young adult without insisting on checking her phone.’

YES
Maggie Hammond, mum to Josie, 14 ‘Josie has had a smartphone for two years now. When we gave it to her, I turned the internet of, and told her the phone was to be used for calls only. Anything else we would need to discuss in advance. ‘When it comes to technology, I think everyone is still working out the best and safest way to do things. Like a lot of families, we have a rule about no screens to be taken to bed. Then,
when it comes to texts, our guideline is to ask yourself, “Would you be happy for people to see that?” before you send. And that applies to my partner and me, too. ‘For us, as parents, the main thing is to keep Josie safe. She’s only 14 and we want to make sure she isn’t subjected to things that might disturb her. The fact that she knows I check her phone periodically makes it easier for her to come to me if something upsets her. For instance, I’ve been able to explain that some texts she was sent which made her feel uneasy were just computer-generated and nothing to worry about. ‘The key is being open as a family – none of us keeps our texts private. Those are our ground rules for having a mobile. ‘I’ve also explained how important it is to protect her online identity and not to give away any personal details. I need to know that all the messages she receives and the sites she uses are age-appropriate, too. She’s happy with that. ‘Like a lot of young people, Josie feels a big pressure to be “grown-up” before she’s ready, and she’s relieved to know that we’re here to help her.’
