Whole fish is a fab choice for the grill. Brush with oil and cook on a clean barbecue for 6-8 mins a side or add to a fish basket. Turn to p20 to discover ours. Or try the delicious seabass recipe below. Start it in the oven, then finish over the coals for an extra smoky flavour.

SERVES 2 READY IN 45 MINS PRICE PER SERVING £3.02 Preheat the oven to 200C/180C Fan/Gas 4. Line a baking tray with foil. Arrange 1 x 420g pack Whole Sea Bass and 1 lemon, cut into wedges on the baking tray. Top each fish with a small knob of butter. Bring up the sides of the foil to create a parcel and scrunch the ends to seal. Bake in the centre of the oven for 30-35 mins, opening up the foil parcel for the last 5 mins. The fish should be piping hot all the way through. For a chargrilled barbecue effect, bake in the oven as above, then transfer to your grill, opening up the foil parcel, for the final 5 mins of cooking. Meanwhile, cook 100g Giant Plain Cous Cous in 500ml water, according to the pack instructions. Drain well. Arrange the cous cous on a serving platter and stir through 150g Aleyna Roasted Red Peppers (from a jar), drained and chopped. Top with the sea bass, spooning over any juices. Garnish with the lemon wedges and 1 tbsp chopped parsley. Serve with salad, if you like.

This adult-only salad makes a great side for barbecued meat. SERVES 10 READY IN 40 MINS PRICE PER SERVING 86p • 2 large sweet potatoes, peeled • ½ tsp smoked paprika • 1 tbsp olive oil • 1 tbsp dark brown sugar • 175ml Jack Daniel’s Tennessee Whiskey • 2 large ripe peaches or nectarines, destoned and sliced • 1 red onion, finely sliced • 3 tbsp cider vinegar • 60g bag rocket • 1 x 390g tin Green Lentils in Water, drained 1 Preheat oven to 200C/180C fan/ gas 6. Chop potatoes into 1cm chunks, then put on a large baking tray. Mix together the paprika and oil, then drizzle over the potatoes and turn until well coated. Cook for 30 mins, tossing occasionally, until tender and beginning to colour. Set aside (the sweet potato should be served warm rather than hot). 2 Meanwhile, in a medium pan, heat the sugar and bourbon over a medium heat. Once the sugar has dissolved, turn up the heat and bubble for 3 mins. Add the peach slices and simmer for 2 mins. Lift out the fruit with a slotted spoon and set aside, reserving the bourbon mixture. 3 Add the onion and vinegar to the bourbon pan to make the dressing. Leave to stand for 5 mins. 4 In a serving bowl, toss together the sweet potato, rocket, lentils and dressing to taste.

• 3 small aubergines • 2½ tbsp harissa paste • 2 tbsp maple syrup • 1 tbsp lemon juice • ½ tbsp olive oil, plus extra to drizzle • 4 tbsp pomegranate seeds • Small handful mint or coriander leaves, roughly chopped 1 Halve the aubergines lengthways and score the flesh with a small sharp knife in a criss-cross pattern, being careful not to cut through the skin. In a small bowl, mix together the harissa, maple syrup and lemon juice. 2 Brush the skin side of the aubergines with the olive oil, then brush the flesh with half the harissa mixture. Barbecue skin-side down over a medium heat for 8-10 mins, until the skin is charred and the flesh is tender. 3 Brush the flesh side with the remaining harissa, then turn and barbecue flesh-side down for 5 mins, until browned. Transfer to a serving board or plate, using a palette knife or thin-edged spatula if the aubergine is sticking to the bars. No extra washing up! Make our chef’s sauce in the pan you used for your steak. While your cooked steak is resting, set the same pan over a medium heat and add a little finely chopped onion and crushed garlic. Cook for 2-3 mins. Add a glug of

1 Preheat oven to 180C/160C Fan/Gas 4. Take half of the cookie dough, break into chunks and press into the base of a 22cm round tin greased using sunflower oil. Bake for 16-20 mins, until lightly golden. Cool in the tin for 10 mins, then transfer the dough to a wire rack to cool completely. Repeat with remaining half of the dough. 2 To assemble, let the ice cream soften at room temperature for 5 mins. Line the base and sides of the same baking tin with baking parchment. Put 100g granulated sugar in a small pan with 100ml water. Heat very gently until the sugar is dissolved, then bring to the boil for 1 min. Set aside to cool completely. SERVES 4 READY IN 30 MINS, PLUS RESTING PRICE PER SERVING £1.41 • 200g plain flour • 4 medium eggs, beaten • 225ml milk • 40ml vegetable oil To serve: • 4 tsp creamed horseradish • 150g Extra Special Roast Topside of Beef • 85g bag watercress 1 Sift the flour into a bowl; season. Make a well in the centre and gradually whisk in the eggs and milk to make a smooth batter. Leave to rest for 30 mins. 2 Preheat oven to 220C/200C Fan/Gas 7. Pour the oil into a 25cm x 35 cm roasting tin and heat in the oven for 10 mins. 3 Pour the batter into the tin, carefully tilting the tin so it spreads evenly. Cook for 20 mins until risen and golden. 4 Turn out onto a board and leave to cool. Cut into four strips, slicing across the width of the Yorkshire pudding. 5 Spread the strips with horseradish sauce, followed by beef slices and watercress. Roll up and secure with baking paper and string or a skewer, if you like.

Invented in the 1950s, this frozen delight has been given a deliciously modern update.

SERVES 14 READY IN 1 HR 30 MINS, PLUS FREEZING PRICE PER SERVING 41p • 900ml pack Asda Really Creamy Vanilla Ice Cream • 150g Asda Frozen For Freshness Morello Cherries • 3 large eggs • 120g caster sugar • ½tsp vanilla extract • 100g self-raising flour • 8tbsp Extra Special Morello Cherry Conserve • 100g white chocolate • 100g fresh cherries • 70g strawberries, halved 1 Take the ice cream from the freezer. Set aside for 10 mins to soften, then mix with the frozen cherries in a bowl. Scoop onto a sheet of baking paper and shape into a cylinder, 32cm long. Put in the freezer to firm. 2 Preheat the oven to 180C/160C Fan/ Gas 4. Line a 32cm x 22cm Swiss roll tin with nonstick baking paper.

3 Whisk together the eggs, 100g of the sugar and the vanilla until doubled in size. Sift over the flour and gently fold through until combined. Pour into the prepared tin, then bake for 12-15 mins, until golden brown. 4 Put down a fresh sheet of baking paper and sprinkle over the remaining caster sugar. Tip out the sponge and peel off the original paper. Roll up the sponge lengthways, with the paper inside. Allow to cool. 5 Unroll the sponge and spread with 4tbsp of the cherry conserve. Unwrap the ice cream and lay it on one long side of the sponge. Roll up the cake around the ice cream. Discard the paper, wrap the roll in clingfilm and pop it in the freezer for 20 mins. 6 Meanwhile, line another tray with baking paper. Melt the white chocolate and dip each fresh cherry to cover the base. Put onto the tray and chill until the chocolate is set. 7 Unwrap the Arctic roll, discarding the clingfilm. Put onto a cake board with the ‘join’ on the bottom. 8 Stir 2tsp boiling water into the remaining conserve; drizzle over the cake with a spoon. Decorate with the chocolate cherries and strawberry halves to serve.

FOR THE PAST 10 YEARS, ASDA COMMUNITY CHAMPIONS HAVE BEEN ON HAND TO SUPPORT CHARITIES, PROJECTS AND INITIATIVES THROUGH OUTREACH PROGRAMMES AND GRANTS THAT MAKE A REAL IMPACT FOR LOCAL GROUPS

We sat down with Mavis Maughan from Asda South Shields to find out what it’s like to be an Asda Community Champion. Here’s what she had to say. WHAT MADE YOU WANT TO BECOME A COMMUNITY CHAMPION? I love making people happy! In this role, you get to meet so many different people, old and young. I’ve always enjoyed working with customers, so this was a perfect fit. WHAT DO YOU ENJOY ABOUT THE ROLE? Getting to know people in my community and finding out how I can support them – it’s nice when you see grants given to charities and community groups that need it. I love to put smiles on their faces and see the difference it makes. I also love meeting so many different people and our wonderful customers. WHAT GETS YOU THROUGH A HARD DAY? My colleagues, and the support I get from the groups of people around me. I’ve been able to meet so many people in the community

‘I love meeting so many different people and our wonderful customers’ TELL US A BIT MORE ABOUT THE WORK YOU’RE INVOLVED WITH We work with lots of local causes. There are places like the Charles Young Centre, which serves meals for the elderly and hosts events to raise money. Or groups such as the Adult Learning Centre and Arts for Wellbeing, which offer activities such as crafts and cooking, to engage vulnerable adults. We’ll go along if they need an extra pair of hands. Then there are the food banks, where we go to help sort the food and make meals. The ﬁrst cause I helped was Cancer Connections in South Shields. We did a sponsored walk to raise money, and we are still working with them today. HAVE YOU GOT A HIGHLIGHT FROM YOUR TIME AS A COMMUNITY CHAMPION? I met Princess Anne once! As part of our support for Guide Dogs for the Blind, I was invited to pick up an award from her. Another highlight was recording a song with Community Champions from the North East to raise awareness for Tickled Pink. We even performed it at Asda House before McFly took to the stage. I have also met so many amazing people in our communities – that’s the real highlight. Do you want to get involved? You can help, too, by going in store and speaking to a Community Champion who will point you in the right direction of local causes.
