February Welcome to

There’s an unwritten rule in our house that as cooking is my obsession, and my fiancé’s is DIY, we’ll both respectfully ignore any subsequent cost or mess that results from our hobbies. It’s about give and take – even if I don’t like the mess he makes initially, I do like the results.

And I really can’t complain too much – the number of times he’s washed up after me, or nipped out on a fool’s errand to find that ‘missing’ ingredient that will complete my meal.

I know my passion for food sometimes comes across as a bit of an obsession (my ‘salmon tartare period’ nearly broke us!) and that deep down he’s quite happy with simple dishes. So this Valentine’s,

ust like fashion trends, fragrances that are in vogue change each season. And this year, we’ll see some classic perfumes make a comeback.

For example, one of the big trends will be nostalgic, floral fragrances inspired by vintage fashion.

This means those rose scents that your grandma used to wear, along with gardenia and jasmine, are back in fashion and have never smelt so good. For a gorgeous floral, try Cacharel Anais Anais, 30ml, £15*.

Intense fragrances that are rich with spices and cardamom, are also making an appearance. Reach for an oriental or a classic chypre (musky scents with dry, spicy woods), such as

Rihanna Reb’l Fleur Eau de Parfum, 100ml, £28, and you’ll smell as fashionable as you look.

Cool, clean fragrances are another big influence this year and L’Eau D’Issey Eau de Toilette, 50ml, £35, captures this perfectly.

If you love deliciously sweet perfumes you’ll be pleased to hear that comforting, warm notes of honey, vanilla and foody aromas, like those in Beyoncé’s Heat Eau de Parfum, 30ml, £12, are on trend to keep us cosy.

With so many fragrances to choose from, it was hard to pick favourites. But after lots of spritzing and snifng, here’s my pick of five classic fragrances that are bang on trend for 2014.

WEAR IT WELL ● Spray perfume on your ‘pulse points’, eg wrists, inside the elbow, collarbone and under the earlobes.

These points release heat and help spread the scent. ● Don’t rub your wrists together after applying scent as the friction will alter the notes of the fragrance. ● Avoid putting fragrance on your cleavage and neck because the alcohol in it can dry delicate skin. ● Fragrance will last longer if you put it on after a bath or shower because it is better absorbed by damp skin.

Whip double cream until thick and spoon into meringue nests. Top with mango slices. Halve 2 passion fruits, scoop outthe seeds and flesh.

Spoon over the meringues.

Remove the pineapple ends and peel. Slice thickly and remove the core. Heat a little butter with brown sugar and stir until melted.

Add a good splash of dark rum and the pineapple and simmer for 5-10 minutes.

Put a few digestive biscuits in a freezer bag and smash with a rolling pin. Beat a little icing sugar into soft cheese, then peel and slice some kiwi fruit. Layer in glasses until full.

Why not also try...

• Salsa Peel and dice some

kiwi fruits and peeled, stoned avocados. Toss in lime juice, then stir in a little finely chopped shallot and deseeded red chilli. Serve with meat or fish.

• Kiwi & chicken wraps

Mix bite-size pieces of cooked chicken with sliced spring onions, diced celery Asda Light Mayonnaise and mango chutney. Put on tortilla wraps with sliced kiwi fruits. Fold over one end then roll up and serve.

Peel and stone ripe mango and slice. Mix with sliced red onion, quartered cherry tomatoes, a sliced chilli, chopped coriander and a squeeze of lemon juice. Serve with grilled pork chops or steaks.

• Mango & passion fruit

syllabub Cut ripe mango into small cubes. Whip double cream with a little icing sugar until it just holds its shape.

Fold in the mango and some passion fruit flesh and seeds. Serve in glasses.

• Mango & banana crumble Put cubes of mango and thick slices of banana (only just ripe) in an ovenproof dish. Top with a crumble mix and bake at 190°C/170°C Fan/Gas 5 for 25 minutes.

• Ice lollies Peel and thickly

slice the kiwi, put into the bottom of some lolly moulds, fill with lemonade then simply freeze.

scoop out the seeds and flesh of passion fruit and serve on vanilla ice cream.

Roll out ready-to-roll puf pastry and cut into 11cm rounds. Mark a rim around the edge, taking care not to cut all the way through.

Spread a little mascarpone in the middle. Peel, core and thinly slice eating apples and arrange on top. Sprinkle with caster sugar and bake at 190°C/170°C Fan/Gas 5 for 20 minutes. Top with passion fruit flesh and seeds.

Pasta There are so many shapes of pasta, it can be hard to work out which to use.

LONG, THIN PASTAS like spaghetti or linguine are great for smooth sauces like pesto, simple tomato, or an oil, garlic and chilli one. Each strand will then be evenly coated.

WIDE, FLAT PASTAS, such as tagliatelle or parpadelle, are ideal for mopping up creamy sauces like carbonara. The wider the pasta, the heavier the sauce can be.

TUBES LIKE PENNE or rigatoni work well with thick sauces such as ragu.

The grooves on the ridged versions hold even more sauce – great for pasta bakes.

EASY DOES IT Want instant flavour in recipes but too busy to peel and chop? The end result will depend on the quality of the wine though. If you don’t want to use wine at all, grape juice and a dash of wine vinegar will give a similar taste.

Make the most of any pastry leftovers to create even more yummy dishes.

Filo is a great alternative to traditional puf pastry for pies. Simply brush it with oil, tear the sheets into strips, scrunch into rough bundles and put on top of your pie. Brush with melted butter and bake in the oven.

Make a lemon and dill sauce, brush it on salmon fillets and wrap in filo pastry. Bake until golden.

Sautée sliced mushrooms in garlic and butter. Put the mixture in the middle of two filo squares and wrap up into bundles. Bake in the oven.

MAKES 4 READY IN 1 HOUR PRICE PER SERVING ÂŁ1.83 1 vanilla pod 150ml single cream 250ml semi-skimmed milk 400g rhubarb, cut into 2cm pieces 150g caster sugar 2 level tbsp seedless raspberry jam 3 large eggs, plus 1 extra yolk

1 Preheat the oven to 160C/140C Fan/Gas 3.

Split the vanilla pod lengthways with a small knife, then place in a nonstick saucepan with the cream and milk. Heat until almost simmering and set aside to infuse for 15 minutes. Remove the pod.

2 Meanwhile, put the rhubarb in a roasting tin in

one layer. Sprinkle on 75g of the sugar. Cover with foil and bake for 30 minutes.

Tip into a bowl and gently stir in the jam. Set aside.

3 Beat the eggs and yolk with the remaining sugar.

Pour on the milk and cream in a thin stream, whisking all the time. Divide the custard between 4 ramekins and place them in a

roasting tin. Pour boiling water into the tin to come halfway up the ramekins.

4 Cook in the oven for 30-35 minutes or until just set. Pile a little rhubarb compote on each and serve the rest separately.

Mackerel with rhubarb salsa

The tart rhubarb cuts through the richness of the mackerel

Sugar snap peas, to serve 1 Preheat the oven to 190C/ 170C Fan/Gas 5. Boil the potatoes for 5 minutes.

Drain, put in a roasting tin and toss in 1tbsp of the oil.

Cook in the top of the oven for 40 minutes until cooked through and golden.

2 Put the mackerel in a roasting tin in a single layer and brush with oil. Cover with foil and bake for 25 minutes. Drain of any juices.

3 To make the salsa, add the

rhubarb to a pan of boiling water, bring back to the boil and simmer for 2-3 minutes.

Drain. Refresh in cold water.

4 Add the orange zest, chilli and honey. Halve the cucumber lengthways, scoop out the seeds, and cut into small cubes. Add to the salsa with the onion and coriander.

5 Serve with the mackerel, potatoes and sugar snaps.

SERVES 6 READY IN 3 HRS PLUS 20 MINS RESTING PRICE PER SERVING £1.56 Pork belly joint* (approx 900g) 1tsp sunflower oil 2 large onions, cut into 6 thick slices 4 ripe pears 400g rhubarb, trimmed and cut into 2cm pieces Zest and juice 1 small orange 75g sugar 15g unsalted butter 1 Preheat the oven to 150C/ 130C Fan/Gas 2. Unroll the pork and pat dry with kitchen paper. Rub the skin with oil.

Sprinkle with 1tsp sea salt.

2 Put the onion in a roasting tin and sit the pork on top, skin-side-up. Pour in 400ml water (not over the pork) and cook, uncovered, in the oven for 21/2 hours, topping up the water when needed.

3 Increase heat to 220C/200C Fan/Gas 7. Top up with hot water to halfway up the onion, but not touching the pork.

Cook for 30-35 minutes until the skin is crisp. Discard the onion and rest for 20 minutes.

4 Peel, core and slice 2 of the pears. Put in a pan with the rhubarb, zest, juice and sugar.

Heat gently, stirring, until the sugar dissolves. Simmer for 10 minutes. Keep warm.

5 Peel, core and quarter the rest of the pears and fry in the butter until golden. Serve with the pork and sauce.

1 Preheat the oven to 190C/ 170C Fan/Gas 5. Roll out the pastry and line a 23cm flan tin. Prick the base and lay a piece of foil on top. Add baking beans or rice and bake for 10 minutes. Remove the foil and beans/rice and cook for another 5 minutes.

Spread on 25g of the jam.

2 Put rhubarb in a pan with 50g sugar, the zest and half

the juice. Cover and simmer for 12 minutes or until tender. Mix remaining juice with the cornflour and stir into the rhubarb. Heat until simmering and thickened.

3 Pour into a bowl and stir in the remaining jam. Cool for 15 minutes. Lightly beat the egg yolks and stir in.

Pour into the flan case and bake for 15 minutes.

4 Whisk the egg whites to form stif, glossy peaks.

Whisk in the rest of the sugar, 1tbsp at a time, until stif. Spoon onto the rhubarb so there are no gaps. Bake for 15-20 minutes until tinged brown.

Rhubarb chutney

This fruity chutney will keep for a year. If you don’t have a very large pan, make half the quantity.

MAKES 5 x 300g JARS READY IN 1HR 45 MINS PLUS COOLING PRICE PER JAR £1.52 400g rhubarb, cut into 1cm pieces Finely grated zest and juice of 1 orange 300g Bramley cooking apples (weighed, peeled and cored), cut into 1cm pieces 300g red onion, chopped 550ml red wine vinegar 550g granulated sugar 250g dried apricots, cut into small pieces 100g sultanas 2tsp mustard seeds 25g grated root ginger ½tsp salt 1 Put all the ingredients in a very large pan and heat gently, stirring, until the sugar is dissolved.

2 Bring to the boil, turn down the heat and simmer for 1 hour 15 minutes or until it is a chutney-like consistency. Stir often (taking the spoon right into the corners of the pan), especially towards the end of cooking, to prevent it catching on the base of the pan.

3 Meanwhile, preheat the oven to 150C/130C Fan/ Gas 2. Wash old jam, pickle or storage jars in hot soapy water. Rinse in hot water, then put the jars in the oven for 20 minutes to sterilise.

4 Leave the cooked chutney to cool for 15 minutes, put in the jars and add lids.

Season, then cover and simmer for 5 minutes.

3 Meanwhile, use small heart-shaped pastry cutters to stamp shapes from the bread. Heat 1tbsp oil in a small frying pan and fry until golden. Drain on a plate lined with kitchen paper.

4 Serve the soup in 2 small bowls or teacups. Stir in 3tbsp vodka and swirl 1tbsp cream into each one.

5 Top with croutons and serve immediately. The soup will keep in the fridge for up to 4 days.

2 Heat a nonstick frying pan until just hot and add the steaks. Cook them over a medium heat for 4½ minutes on each side for medium rare, or until cooked the way you like – see our guide, right.

3 Remove the steaks from the pan and set aside in a warm place to rest.

4 Meanwhile, make the peppercorn sauce. Reduce the frying pan heat to low and add the butter and chopped shallot. Cook until soft and just starting to turn golden.

1 Preheat the oven to 180C/ 160C Fan/Gas 4. Grease and line the bases of 2 x 19cm heart-shaped cake tins. Sift flour and cocoa together.

2 Beat 125g butter and the caster sugar until light and creamy. Beat in the eggs one at a time, adding a spoonful of the flour with the second egg.

3 Fold in the rest of the flour mixture and the cofee.

Divide between the tins and level the tops. Bake

for 25 minutes, then turn onto a wire rack to cool.

4 Meanwhile, break the chocolate into squares and put in a bowl set over simmering water, making sure the bowl doesn’t touch the water. Leave until the chocolate is just melted, remove from the heat and stir in the 100g butter.

5 Leave the chocolate icing to cool until spreadable.

Use a third to sandwich the cakes, then spread the

rest over the top and sides.

6 Knead a few drops of food colouring into the icing, then roll out on a surface dusted with icing sugar. Scatter glimmer sugar over some of the icing and press down gently with the rolling pin.

Cut out hearts to decorate the cake. The cake will keep for 5 days in an airtight container.

How to make them…

1 Preheat the oven to 180C/160C Fan/Gas 4.

Cut the chicken into bite-sized pieces and put in a large bowl.

2 Grate the carrots.

Add to the chicken along with the spring onions, red pepper, sweetcorn and beansprouts.

3 In a separate bowl, mix together the peanut butter, soy sauce and sweet chilli sauce.

4 Add this peanut satay mixture to the chicken and vegetable filling, and stir thoroughly to mix together.

5 Lay a sheet of filo pastry on a work surface and fold in half (keep the other filo under a damp paper towel).

Lay an eighth of the filling in a horizontal strip, 5cm up from the bottom of the pastry, leaving a 5cm gap at each side. Roll up into a sausage, then fold the ends under to seal. Transfer to a baking tray. Repeat with the rest of the filo and filling. Mix the butter and oil together, brush over the rolls and sprinkle with sesame seeds. Bake for 15-20 minutes.

6 Serve the spring rolls hot with a bowl of sweet chilli sauce for dipping.

1 Preheat the oven to 220C/ 200C Fan/Gas 7. Cut the potatoes into chunky chips and toss with the oil to coat.

Mix the crumbs and zest on another. Mix the egg and butter in a shallow dish.

3 Dip each fish piece in the flour to coat, shaking of any

5 Boil the peas, drain and return to the pan. Mash with the crème fraîche and serve with the fish and chips.

If you don’t have shaped moulds, use a 21cm square baking tin and cut into bite-sized squares MAKES 30 READY IN 10 MINS PLUS SETTING TIME PRICE PER SWEET 5p 125g Carnation Condensed Milk 150g icing sugar 150g desiccated coconut Pink food colouring 1 Put half the condensed milk in a large bowl and stir in half the icing sugar. Add half the coconut and mix

2 Mix the rest of the milk and icing sugar in another bowl and add a few drops of pink food colouring. Mix in the rest of the coconut.

3 Press the mixture into heart-shaped ice cube trays

MAKES 8 READY IN 1HR PRICE PER CAKE 36p 65g dark chocolate (70% cocoa solids), broken into squares 75g unsalted butter, plus 100g for the butter icing ½ level tsp instant coffee granules 75g self-raising flour 2 level tsp cocoa powder 100g caster sugar 1 large free-range egg, beaten 2tbsp milk, plus 2tbsp for the icing 200g icing sugar Few drops vanilla extract Pink food colouring 1 Preheat the oven to 160C/140C Fan/Gas 3.

Line 2 bun tins with 8 paper cup cake cases.

2 Put the chocolate in a large heatproof bowl with 75g butter, cut into cubes.

Add the cofee and 3tbsp cold water. Stand over a pan of simmering water, making

sure the bowl doesn’t touch the water. Leave until just melted, stirring occasionally.

Remove the bowl from the pan and cool for 10 minutes.

3 Sift together the flour and cocoa and stir in the sugar. Add to the chocolate with the egg and 2tbsp milk. Stir until evenly mixed – don’t overbeat. Divide between the cake cases and bake for 20 minutes or until the tops spring back when lightly pressed. Cool on a wire rack.

4 For the icing, beat 100g butter, the icing sugar, 2tbsp milk and vanilla extract together until light and creamy. Add a few drops of food colouring. Pipe onto the cakes. Store in an airtight container in the fridge for up to 4 days.

VALENTINE TREATS Rich chocolate trufes These can be made in advance and frozen before you dust with cocoa

MAKES 24 READY IN 15 MINS PLUS CHILLING PRICE PER TRUFFLE 10p 200g bar Asda Dark Chocolate (50% cocoa solids), roughly chopped 50g Extra Special Dark Chocolate (70% cocoa solids), roughly chopped 150ml double cream 2tbsp liqueur (either amaretto, rum, Tia Maria, Cointreau or Malibu) 4tbsp cocoa powder, for dusting 1 Put the chocolate in a bowl. Heat the cream until just simmering, then remove immediately from the heat and pour onto the chocolate.

Stir until melted and smooth.

2 Stir in the liqueur and chill for at least 3 hours.

3 Put the cocoa on a plate.

Using 2 teaspoons, shape the chocolate mixture into small balls, then roll in the cocoa. The trufes will keep in the fridge for up to 4 days.

250g Asda White Chocolate ¼ pot Asda Mixed Hearts, to decorate 1tbsp dried cranberries, to decorate 1 Draw a heart on a sheet of nonstick baking paper with a pencil – it should be about 20cm at the widest point.

(You could use an Asda heart-shaped cake tin as a guide). Put on a baking

tray, pencil-side-down.

2 Break the chocolate into squares and put in a bowl.

Stand over a pan of simmering water, making sure the base of the bowl doesn’t touch the water, and leave until all the chocolate has melted.

3 Spread the chocolate inside the heart, reserving about 2tsp. Sprinkle on the hearts and cranberries, and

leave in a cool place to set.

Once the chocolate has set, re-melt the reserved chocolate and drizzle it over the heart.

Tip: The chocolate heart slab will keep for up to a week stored in an airtight container in a cool place.

Researchers from Sweden’s Lund University have found a Nordic diet may be as good for your heart as a Mediterranean one**. Scandinavian staples of oily fish, berries, veg and pulses are well-known heart helpers.

Catch up with friends Having a great social life is good for your health, and your heart**. It's the perfect excuse to get in touch with all those people you haven't seen for a while.

Grab the grater Cheese is packed with the saturated fat that raises your cholesterol, so try grating it rather than using slices – you'll make less go further. If reduced-fat varieties don't do it for you, go for strong cheese such as Stilton (just a small amount) to give you the taste you're craving.

Swap the bacon butty …for a salmon sandwich. Red meat is high in the cholesterol that’s a danger to your heart, and processed meats such as bacon and sausages are particularly bad for you, according to a study in the journal BMC Medicine††. A heart-friendly salmon sarnie, on the other hand (ideally, on brown bread), is rich in omega-3 ‘good fats’.

Turn on the tap Too many sugary drinks are a sure-fire way to raise your risk of heart disease, as is alcohol‡. So cut down, and stick to plain water instead – free and available at a tap near you!

SPICE IT UP Salt raises your blood pressure, and that drives up your risk of a heart attack. Instead, turn to the spice rack.

Use a whole range, as well as the juice and zest of lemons, to add heat and flavour to meals.

Your heart will thank you for it...

If you have tightness or pain in your chest (especially if it’s spreading to other parts of your body), or you feel sick or dizzy, the British Heart Foundation advises you to call 999. 5 ways to Get ready for

spring

With spring just around the corner, get out into the garden and spruce it up for the (hopefully!) warmer months ahead

rake up leaves

Rake the lawn and borders and put leaves on a compost heap or in the recycling bin. To make mulch for the following year, pile leaves into black bin bags, sprinkle with water and shake.

Puncture the bottom and sides of bags, tie and store in a shady spot.

Revive the lawn

Lawns need oxygen to grow. Make holes with a garden fork, pushing it in 7cm deep, every 15cm. When the lawn starts to grow, apply a liquid feed, only mow on dry days and don’t cut the grass too short.

Start planting

You can plant roses, climbers, hedges and shrubs, such as magnolia and camellia, if the ground isn’t frozen or too wet.

Prune winter-fowering shrubs to prolong the blooms, and clip evergreens and climbers, such as jasmine and wisteria, to encourage new growth.
