One thing that we have become particularly renowned for is Mrs White’s Afternoon Tea which is served in the Castle between 1pm and 4pm daily – it is a treat not to be missed!
The Estate offers incredible activities such as golf, a driving range and practice areas, clay target shooting, archery, biking trails, tennis, and an absolutely fabulous Spa in the main Castle. The Leisure Centre, located in the Golf & Country Club, has a 17 metre swimming pool, sauna and steam rooms, and a fully equipped gym. Our Falconry School is also not to be missed; the experience amazes our guest time after time. ≈ Dromoland Castle History ≈
Dromoland Castle, one of the most famous baronial castles in Ireland, was the ancestral home of the O’Briens, Barons of Inchiquin, who are one of the few native Gaelic families of royal blood and direct descendants of Brian Boroimhe (Boru), High King of Ireland in the 11th century. 1002-1014 – Brian Boru ruled
Ireland as High King from his throne in Killaloe.
1014 – Donough O’Brien, a son of
Brian Boru, controlled Dromoland when it was a defensive stronghold. It was similar in structure to Bunratty Castle, which was also an O’Brien stronghold at that time. For the next 900 years a branch of the O’Briens lived and ruled from Dromoland Castle.

1651 – The Chief of the Clan O’Brien, Morrough, 57th King of Thomond, was forced to surrender his royalty to King Henry VIII, thus becoming the Baron of Inchiquin and First Earl of Thomond. Records show that the Castle was rebuilt during this period.
1660
– Sir Donough O’Brien moved the most powerful branch of the O’Briens to Dromoland in the late 17th century. He was an astute man and managed to avoid declaring for
either King James II or King William. He was, at that time, reputed to be the richest man in Ireland.
1730 – Sir Edward O’Brien, the
second Baronet, was revered as a famous racehorse owner and trainer. He built the turret on the hill opposite the entrance to the Estate, from where he would observe his horses race. He once gambled the Estate on a horse race. Mercifully, Sean Buis won the race and saved

1700-1730 – The second Castle/
house at Dromoland was built; it was more residential in appearance with a design of the Queen Anne period. The Queen Anne Court, the charming quadrangle of 29 guestrooms, is a century older than the rest of today’s Castle. It was rebuilt inside and redecorated in 1963 when the Castle was redesigned as a hotel.
1800-1836
– The present main building of Dromoland Castle, with its high Gothic-styled grey stone walls, was rebuilt and designed by the Pain brothers, famous architects of that period. The Castle was built by the then Lord of Dromoland, Sir Edward O’Brien, fourth Baronet, at great expense. The cost of cutting and hauling its stone from a nearby quarry on the Dromoland Estate alone was more than £80,000, a huge amount in Georgian times.
1803-1864 – Dromoland Castle
was the birthplace and boyhood home of William Smith O’Brien, MP. Despite his aristocratic background, Smith O’Brien fought militantly for the rights of oppressed Irish Catholic peasant farmers and led the Young Irelanders rebellion against the British authorities in 1848. He was sentenced to be hanged, drawn and quartered, later exiled instead to
Tasmania for his role in the revolt. He returned to Ireland in 1856 and there is a statue of him on O’Connell Street, Dublin. He died in 1864.
1880-1921 – The wealth of the
Barons of Inchiquin dwindled after a series of Land Acts started in the 1880s. During this time, landlords were compelled to sell their tenanted farmlands, thus the Inchiquins lost their main source of income. They still considered themselves fortunate, as their Castle had survived the troubled times of Ireland’s revolutionary war against Britain. The homes of many landlords in Ireland were left in ruins during the Irish Republican Army’s war against the British forces in 1920 and 1921.
1921 – The IRA leaders in Dublin
marked Dromoland Castle for destruction. However, sabotage orders were reversed at the last minute at the urgent request of local IRA leaders in County Clare, who argued that the Inchiquin Lords had been fair and benevolent in dealing with their tenant farmers. Sir Lucius O’Brien, the 13th Baron of Inchiquin (brother of Sir William Smith O’Brien), was remembered respectfully by the people for his relief work in the famine years of the 1840s.
1922-1940 – Although the family’s good reputation saved the Castle during the revolution, the later loss of income after the forced sale of the tenant farms made the Castle and
the 2,000+ acre Dromoland Estate increasingly difficult for the Inchiquins to keep. After the death of the 15th Baron of Inchiquin in 1929, Dromoland was supported mainly by the personal wealth of his widow, Lady Ethel Inchiquin, an heiress, whose portrait, painted by Herbert Draper, hangs near the staircase in the Castle’s hall.
1940-1962 – After Lady Ethel’s
death, her oldest son, Sir Donough O’Brien, the 16th Baron of Inchiquin, and his wife, Lady Anne, daughter of Viscount Chelmsford, a Viceroy of India, managed to maintain Dromoland Castle as a traditional ancestral home for more than 20 years. Lord Inchiquin tried to make the Estate self-supporting as a dairy farm, but by 1948 was so financially hard pressed that he began to take in tourists as paying guests.
1962 – Lord Inchiquin sold the
Castle, along with some 330 acres of surrounding land, and the hunting and fishing rights to Mr Bernard McDonough, an American industrialist, whose grandparents were born in Ireland. Conor O’Brien, the 18th Baron, and his family live in Thomond House and continue to farm and run part of the Estate as a sporting and leisure estate. The pedigree of the Dromoland O’Briens is kept in a vault at Lloyds in London and is 36 feet in length.
1962 – The Castle underwent major
renovations to transform the ancestral home into a luxury hotel. When the Castle was officially reopened as a resort hotel, visitors who remembered it from the days of the Inchiquins marvelled at the preservation of its stately, warm and cheerful baronial country house atmosphere. The public rooms on the main floor of the Castle look very much the same now as when Lord Inchiquin’s family lived there, although the Lord’s octagonal shaped study, under the round tower, is now a pleasant cocktail bar, and his library is now part of the Dining Room.
1987 – A consortium of mainly
Irish American investors purchased the Castle and Estate. Through their continued investment and management, the Castle has enjoyed a worldwide reputation for excellence and is regarded as one of the great resorts in Europe. Dromoland Castle

Fitted with particular care, the bathroom has been fully tiled in warmcoloured, natural stone, and features a super jet Jacuzzi with inset flatscreen television, two sinks, separate WC, original artistic impressions, warm fluffy towels, luxurious toiletries and mood enhancing light settings that will ensure an extended bath-time. In keeping with the rest of the Suite, the kitchen has been fitted out to the very highest standards, complete with natural stone worktops and flooring, Wedgewood delph and AEG appliances.
Noreen Fetton, Rooms Division Manager Noreen Fetton began her career at Dromoland Castle as a Trainee Manager in 1990. “This involved spending a length of time in each department within the hotel to gain the knowledge that was necessary to fulfil a managerial role,” she says. “During my training I travelled to New York and worked in the St. Regis Hotel and in The K Club in Kildare before returning to Dromoland as Duty Manager in 1995. I progressed to Rooms Division Manager in 1999 and I am currently still enjoying this role. My responsibilities are primarily in the front of house and accommodation areas. I am one of a large group of people in the Castle with a long service record and I attribute this to the wonderful people that make up the entire staff, the beautiful, majestic and historic building that we have the pleasure of working in every day, and to the fact that no two days are the same. Our work is ever changing, which makes it challenging and exciting. We are constantly developing and enhancing our product to deliver the best service and experiences for all our guests. We meet incredibly fascinating people - exceptional characters, the ‘ rich & famous,’ and we take it all in our stride! The most important aspect of my job is working to ensure complete guest satisfaction. To achieve this, I need the co-operation of every team member, and I am the person in their corner when the going gets tough. The encouragement and development of new staff, as well as acknowledging the loyalty of our long serving team members, is hugely important to me. Dromoland offers culinary expertise within a classically relaxed setting. EARL OF THOMOND RESTAURANT The Earl of Thomond Restaurant offers a relaxed but elegant dining experience. Enjoy breakfast, Sunday lunch and dinner in this wonderful setting. The bill of fare includes a large à la carte menu, a daily table d’hôte menu and a selection of gastronomic menus. Executive Head Chef, David McCann’s approach is one of simplicity founded on his classical training using the freshest locally sourced ingredients.

LIGHT LUNCH AND DINNER OPTIONS In addition to our restaurant menus, lighter snack options are offered. THE FIG TREE RESTAURANT The Fig Tree welcomes guests looking to enjoy quality food without the formality of the Earl of Thomond. The Fig Tree is located a short walk from the Hotel at the Golf & Country Club, or via golf buggy provided by the concierge. Relax with a drink at the bar and then enjoy simple classical cuisine in the stylish dining room. Alternatively,
sit outside on the patio and appreciate the scenery of the Walled Gardens. The all-day dining menu is available until 6pm, after which the restaurant operates a two or three course menu beautifully arranged by Derek McCoy and his team of chefs. Young children are also catered for with a dedicated menu. Formerly the Castle library, the Cocktail Bar at the top of the Main Gallery now provides the cosy setting for pleasures of a less literary nature. Open from 10.30am the bar is a restful haven for day-time refreshments with tranquil lake views and a gently burning log fire. Irish ballads provide the background for candlelit after-dinner drinks to complete your evening. MRS WHITE’S AFTERNOON TEA Mrs White’s Afternoon Tea features a tantalising selection of teas, delicious sandwiches and freshly baked pastries, served each day between 1pm and 4pm. Enjoy the Gallery menu from 11am to 10pm through room service. PICNIC BASKETS Our chef will be happy to prepare special picnic baskets for your requirements; from basic snack lunches to deluxe picnic baskets including Champagne. Ian Scott, Acting Lead Sommelier & Whiskey Ambassador Local man Ian Scott, who was born and bred in Shannon, has been working at Dromoland Castle for 17 years. Four and a half of those years were spent completing the Restaurant and Bar Management Trainee Programme. "That programme had a section on wine education, which caught my attention more than the food aspect of service, and I quickly developed a passion for food and wine pairing," says Ian. "As a teenager I was quite fortunate to be well travelled on family holidays, a lot of which were spent either in or close to vineyards, mainly in France, but also in Germany, Alsace and Tuscany." During his first two and a half years at Dromoland, Ian worked in food service, private dining and room service. He then got the opportunity to assist the sommeliers for the pre-dinner cocktails and is now acting lead sommelier at Dromoland Castle, as well as the hotel's Whiskey Ambassador. "Our wine list comprises over 200 wines and features the usual high end names such as Bordeaux and Burgundy," he says. "My love for Irish whiskey was always there, but the surge in production in recent years and the emergence of craft whiskey at the forefront of Irish tourism has given Irish whiskey a major boost. At Dromoland Castle, we currently have a vast range of 80 Irish whiskeys in our cocktail bar." Tony Frisby, Restaurant Manager, The Earl of Thomond Restaurant Tony Frisby is another long service member of the team at Dromoland Castle, joining as Restaurant Manager in 1988. "If you love what you do then it is a labour of pleasure," he says. "I'm 66 years of age and I have been here at the castle for almost 30 years and working in hotels since I was 16. I completed most of my training for the hospitality industry in hotels in Germany. There are many different aspects to my job. It is a position where you have to lead by example and you have to be there for your guests to satisfy whatever service requirements they may have. Guests at Dromoland Castle require a consistently high level of service and it is my job to ensure that they get it. I am responsible for about 30 staff, including four supervisors, as my role covers the room service department and the gallery area, as well as the restaurant and the wine waiters. I love working in Dromoland. Every job has its ups and downs, particularly when you are dealing with staff and guests on a daily basis, but if you are a restaurateur where else would you pick to ply your trade? It is a spectacular environment to work in. I like working at Dromoland because it is a five star establishment and that is the standard that I was trained to work at. It is what I'm about, so it is a perfect fit for me. And my colleagues, who are also my friends, work here too, which is great. "

WHEN I SET OUT to be a chef I decided very early on that classical cuisine was the foundation I wanted. After a nine year apprenticeship in some of the best restaurants and hotels in London, I returned to Ireland in 1995 and the challenges of Dromoland Castle. In a world of five-star hotels of multicultural influences, today’s chefs still owe their skills in a large part to those great chefs who played a major role in the development of cooking. The cooking at Dromoland is not static; we need to consider new trends in the context of classical cuisine. Irish stew, for example, has evolved into a refined lamb stew with seasonal vegetables and is still enjoyed

by many of our guests. Cooking also reflects present day habits and preference – lunch is no longer a main meal, instead it is a more casual fare; sandwiches, pasta, snacks and salads, which are all available in the Cocktail Bar, Gallery or Golf & Country Club. The ‘grand cuisine’ of gastronomy is a major event at Dromoland. The elegant surroundings of the Earl of Thomond Restaurant provide a perfect stage for both à la carte and table d’hôte menus. The cooking is firmly ground in classical cuisine, but with a lighter, more modern approach. Start with a terrine of foie gras paysanne or maybe a vegetable and chicken broth, in between a rocket and Parmesan salad or a refreshing sorbet. For the main course, pot roasted guinea fowl with
braised lettuce or poached Doolin lobster with Champagne. Definitely finish with brown bread soufflé, coffee and a wonderful selection of petits fours. Whatever the meal, the true quality is found in the ingredients; the vast majority of which are local, be it farmhouse cheeses, game from the Estate, Irish beef or lamb or fish fresh from the west coast. Therefore, my approach to cooking owes a lot to my training, the customer and the ingredients. This old building, a castle hotel, with all the modern comforts required, provides the unrivalled platform from which to create and explore our culinary future.

≈ Meet Our Chef ≈ David McCann, Executive Head Chef Dromoland Castle's Executive Head Chef David McCann began working at the castle back in 1995 and attributes his long service to his love of the job and of his work environment. "We have two kitchen teams in the castle - eight chefs in the Fig Tree Restaurant in the Golf and Country Club, as well as apprentices, and 25 chefs in the castle itself, along with auxillary staff, so our culinary operation is a great employer in the locality. Dromoland Castle is a busy five star hotel that runs 95% to 100% occupancy from May through to end of October, so we require that level of staffing." Apart from his skilled culinary team, David has built up a strong network of specialist artisan suppliers and growers over the years, including St Tola Goat Cheese, Garrihy Seafoods in Doolin, their local butcher, Reale's Butchers, and John Millane and Con Woods who supply lettuce and organic produce and herbs. "Dromoland Castle has grown so much since I joined the team here in 1995. It was a 68 bed hotel when I got here and there was no clubhouse, club restaurant or golf
course, so there has been significant reinvestment in and expansion of the property over the years. In my early days at the Castle my job was all about food as it was my first job as a Head Chef. However, over time I've built a successful team and I now have a brigade of chefs that I can trust, which gives me more scope to get involved in other, more global, issues at the Castle. These include the development of room service and of restaurants, as well as looking at where the hotel wants to go in terms of its food offering. For example, the club restaurant at Dromoland is a casual dining space for hotel guests – it is more of a brasserie style operation, so it is a step up from the fare and service that is available in most club restaurants. Also, our gastro pub at The Inn at Dromoland offers a standard of food that is available in a three star hotel, which is unusual. In addition, over the years, I've had to learn to cater for major events and banquets, conferences and weddings which has been challenging, but enjoyable."

After his work on the Dromoland Golf Course, Ron Kirby turned his hand to designing the most modern golf practice facility in Ireland at Dromoland Castle. The stone clad, slate roofed structure houses 9 driving range bays and a fully enclosed teaching bay. Mark Reynolds, Director of Golf Mark Reynold has been working for Dromoland Castle Holdings Ltd since March 2005. "However, my association with the property started many years before that," he says. "I have been a member of the golf club since 1988 and I have witnessed the many transformations in the golf course, as well as in the castle, over the years., including the golf course expanding from nine holes to 18 in the late s and a m in estment in which transformed the golf course into a Championship course. A new clubhouse as uilt on top of the old one in and a state of the art Golf Academy was added in 2005. My role as Golf Club ana er Director of olf is the co ordination, management and leadership of the golf operations. On a daily basis, this involves the overseeing of golf retail, guest services, practice facilities, golf events, and the golf membership experience. TENNIS The Castle has two all-weather tennis courts, which are available exclusively to guests without advance booking. Equipment is available on request at the Golf & Country Club. HORSE RIDING Three riding stables are located close to the Dromoland Estate, offering a wide range of horses and ponies suitable to all levels of riding experience, age groups and physical abilities. The countryside surrounding Dromoland is spectacular and varied, and this is an ideal way to explore the local landscape at a leisurely pace. SHOOTING With a little advance notice, our Hospitality Desk will be happy to arrange a session of clay pigeon shooting for guests interested in this enjoyable and challenging sport. ESTATE WALKS AND TRAILS As former guests at Dromoland know well, one of the most attractive aspects of the Hotel is the sheer beauty and tranquillity of

The briefest of walks around the Castle will take you to the secluded rose gardens, the Temple of Mercury, where the legendary 18th century racehorse ‘Sean Buis’ is buried, or the lily pond. While walking, the more eagle-eyed may catch a glimpse of the deer herd that roams the Estate. FALCONRY Beginning in the part of the world formally known as Mesopotamia, mankind has been hooding falcons for over 4,500 years. Throughout the ages, a number of great historical figures have been noted as keen falconers. In Ireland, falconry has suffered a rather mixed existence. There is evidence of interaction between mankind and raptors as far back as 7000BC but nothing that could be considered as hunting. Here, at Dromoland School of Falconry, we have a historical link to the sport. In 1615, Donogh O’Brien, fourth Earl of Thomond, ancestor of the current Lord of Inchiquin, signed his name to legislation regarding the tax and excise on the capture and export of Goshawks. At Dromoland School of Falconry, we offer a number of different experiences from hawk walks to owl evenings and falconry displays to lessons all designed to help our guests interact with our birds of prey.

One of Ireland’s landmark pubs, Durty Nelly’s has been part of the landscape at Bunratty for almost 400 years and continues to be the favourite ‘watering hole’ of locals and visitors alike. Nestled in the shadow of Bunratty Castle and the adjoining Folk Park, it has been the first stopping off point for generations of visitors to Ireland arriving at nearby Shannon Airport. The happy couple want to give their guests a traditional Irish experience, as a lot of the wedding guests at Dromoland Castle are from overseas.” Nelly’s famous music sessions take place nightly from April to October, and Thursday to Sunday, from November to March. Outside, the farmhouse-style split door is painted a traditional vibrant red and large rose bushes line the exterior wall. Just next door to Gallagher’s is JP Clarke’s, a rustic, relaxed pub with a contemporary feel. Offering a fresh, locally sourced menu for all tastes, as well as a stocked bar and welcoming staff, Clarke’s is the perfect destination for those looking for a satisfying meal in a casual setting.

The Shop at Dromoland is a veritable treasure trove of quality gifts to remind you of your sojurn at the Castle. Maev Martin talks to its manager Freda Brogan to find out what's on offer this year, and to some of the purveyors of exquisite pottery, knitwear and candles, as well as golf accessories, in Dromoland and its environs. And if you want to shop until you drop, some of Co Clare's well-known luxury boutique owners and jewellers will guide you on your way. Freda Brogan has been managing The Shop at Dromoland for three years now. "In all I have been part of the Dromoland team for over a decade, having had a previous role at the castle some years ago before leaving to raise a family of four," she says. "We stock a wide variety of locallysourced craft and gift products, many of which are created especially for us. The Dromoland-themed products are the most popular with our guests who like to take a little bit of the Dromoland magic home with them, whether it is pottery, crystal, slate coasters, sweaters, scarves or pictures. We are fortunate to have some very talented local craftspeople, such as
Ballymorris Pottery, McKernan Scarves, Susannagh Grogan Accessories, Foxford Woollen Mills, and Erin Knitwear, to name just a few. My colleague Pauline Scanlan and I are happy to share our knowledge of these treasures with our guests. Chef McCann provides us with a range of Dromoland pantry treats, including jam/chutney, infused oils and vinegars, and seasonal favourites such as plum pudding and Christmas cake. His recent addition - Dromoland Bread in a Bottle - is proving to be a great success, and Chef McCann's Dromoland Castle Cookbook is always popular with guests who wish to recreate some of his culinary
delights when they return home." Given the international lens on the business, Lily’s has a window on the world of flavours - they recently launched an all new super-premium collection, The Exquisite Edition. Lily O'Brien's Chocolates started life as the brainchild of Mary Ann O'Brien who started her own mini enterprise from her Co. Kildare kitchen in 1992. "This is very popular with children, families and adult groups, hen parties, and team building groups," says Hannah. "Participants each make and decorate their own unique piece. In six to eight weeks, when it has gone through our kiln, the finished glazed piece is ready to be collected or delivered. Quite a few of our customers are guests from Dromoland Castle. That's probably because we sell through the Dromoland shop, with work specifically made for Dromoland, every piece featuring their logo. Dromoland Castle itself uses some of our creations in their bar areas, including our ramekins." Ballymorris Pottery workshops are open to the public, where work in progress can be seen, as well as the full range of beautiful pottery. Ballymorris Pottery is also available through Temple Gate Hotel in Ennis, Doolin Hotel, O’Brien’s Crafts, the University of Limerick shop, as well as the National Museum in Dublin. The range of work reflects the breadth of Hannah Arnup’s interests
and training - she studied sculpture and ceramics in England, although much of her knowledge comes from her parents, who were the potter/painter and sculptor, Mick and Sally Arnup from North Yorkshire. Erin Knitwear specialises in handknitting and was set up in 1965 by Tom and Sally Lane. The company is still owned by the Lane family and run by Tom’s sons Billy and John. Initially, Erin Knitwear produced both traditional and fashionable Aran handknits and accessories for ladies, gents and children. Today, their product range has changed significantly. The company, which designs most of its own collections, introduces new styles and designs every year. All Erin Knitwear products are hand knit using 100% wool and are fleece lined for warmth and comfort. The company produces hats, caps, gloves, hand-warmers, scarves and bags in a range of designs and in a variety of colours. The Erin Knitwear portfolio is available in high profile stockists throughout the country and in the mid-west region, including in the shop at Dromoland Castle. Dromoland Castle's Wedding Executive, Margaret Daly has been working at Dromoland Castle for 15 years. Has her role at the castle changed in recent years to reflect the requirements of the modern bride and groom? "Weddings in general have changed over the last 10 to 15 years," she says. "There are a lot more details to be incorporated and the expectations, which we always try to meet, are much higher. My role is mainly in the promotion and selling of our wedding service to the future bride and groom and the co-ordination of their special day. We look after couples from the moment they enquire about our service right through to their requirements on the big day itself." Why does Margaret like working at Dromoland? "My role is consistently challenging," she says. "And I'm extremely lucky to work with a great team at Dromoland and I'm proud to be part of that. We update our offerings on our website on a regular basis to make the organising of weddings at Dromoland as easy as possible. DROMOLAND CASTLE is a protected structure so it requires regular and correct repair and maintenance. However, once in a while an extra bit of tender love and care is needed. A comprehensive programme of conservation work, involving external stone repairs, window upgrading and services renewal, began at Dromoland Castle last year. The key objective of the works, which were carried out under the direction of RIAI-accredited Conservation Architect, Michael Pledge, was to eliminate water penetration and enhance the thermal performance of the building. Phase 1, the essential stone and window repairs, were completed over the winter months of January through to April 2016. The main castle external stonework required a series of repairs. "Minor fabric damage had occurred through water penetration to all walls and this is to be expected with a building dating from the 1820’s," says Michael. "All elevations, particularly the lakeside elevation (north), required re-pointing to best practice conservation standards and damaged stones needed to be replaced or repaired. While this stone work was being completed, upgrading

works to 194 windows located in the main castle was carried out. 130 of the windows are over 170 years old, while the remaining windows are late 20th century. Timbers were cut out and replaced with matching profiled timber sections and single pane windows were re-glazed with thin conservation double glazing. The conservation work was exacting and time consuming, but it will help to see Dromoland through the next 100 years." Work was restricted to daytime hours and carefully monitored for noise. "Working closely with the hotel management, we developed a phased approach to the works that are being carried out over three winter periods," he says. "Working in this way requires a close day-to-day relationship between hotel management and the construction team to limit the impact that such works have on hotel guests." COMPLEX CONSTRUCTION Monami Construction is the main contractor on the Dromoland Castle restoration project. The company has completed guestroom refurbishments,
as well as a bar, restaurant and banquet hall fit out, at the castle's sister property, The Inn at Dromoland. At Dromoland Castle, Monami have completed phases one and two of a four-phase construction programme. Phase 1, which ran from January to April 2016, involved health and safety works to mechanical and electrical services, the refurbishment of 10 link corridor rooms, the upgrading of the kitchen ventilation, and remedial works to electrical boards in the Brian Boru Hall. Phase 2, which ran from October 2016 to May 2017, involved the construction of a new energy centre, the refurbishment of 16 lakeside castle bedrooms, the castle dining and lounge areas, and the remaining six link rooms. Phase 3, from November 2017 through to April 2018, will see the refurbishment of the castle bedrooms on the entrance side of the castle and the remaining public areas, as well as a revamp of the Queen Anne wing, and the construction of new water wells, reservoirs and the plant house. Phase 4, the Club wing refurbishment, will be carried out between November 2018 and April 2019. Stone pointing and window refurbishment,

as well as the installation of a new potable water system, are ongoing through all phases of the works between 2016 and 2019. "Initial pre-contract meetings outlined the client's requirements and identified the key issues to be addressed," says Trevor Cavanagh, Senior Quantity Surveyor, Monami Construction Ltd. "Multiple surveys were carried out over the course of the design process in order to define the scope of works required. Workshops took place between the main contractor, the client, the M&E subcontractors, and consultants. We also had weekly co-ordination meetings and workshops with the interior designer, site visits to specialist suppliers to inspect manufacturing progress, and bi-weekly mechanical and electrical co-ordination meetings. In addition, regular consultation took place between the hotel management and the design team to ensure that the client's needs were met. A major part of the construction programme was the removal of the existing mechanical systems,
including the water supply system, which had eroded over time and was leaking, and the installation of new hot and cold and mains water supply systems, as well as new air conditioning systems. A specific challenge was identifying routes for services through the castle - the existing pipe distribution network routes were difficult to locate and identify, so this meant that existing services had to remain live during phases of the works. However, we enter into these jobs knowing that there will be plenty of challenges along the way." Eco Mechanical Solution was involved in all mechanical services aspects of the Castle, from assisting them in the design and build of a remote energy centre, including a combined heat and power plant, a 2Mw district heating network, remote plant room installation, new hotel ventilation, and an integrated BMS system, as well as completely new water services and a Low Temperature Heating Water system. "Eco Mechanical Solution was delighted to have the opportunity to work with Dromoland Castle on their restoration project," says Johanna Halvey, Procurement

ELEGANT & SOPHISTICATED DESIGN Helen Casey Design Associates worked on the refurbishment of the 16 bedrooms in Dromoland Castle. "The client gave us quite a bit of design autonomy, which was great," says Myra Costello, a Partner with Helen Casey Design Associates. "We understood the work that needed to be carried out, so we made some proposals to the Dromoland team and agreed a design through consensus. The rooms that we worked on had lakeshore and woodland views, so we used the natural backdrop to develop our design concept. We adopted a sympathetic approach that reflected the unique and exquisite architecture and heritage features of the building, such as the vaulted ceilings and casement windows. The essence of our design concept was to create a relaxed, sophisticated and elegant atmosphere that enhanced rather than competed with the inherent beauty of the building. In addition, where possible, goods and services for the project were sourced in Ireland." Helen

Casey Design Associates specified natural textiles and wall coverings, including fine linen with embossed velvet embroidered in natural colours. They also employed wool carpets with a herringbone design in warm tones to blend in naturally with the interiors. The furniture was handcrafted and specially commissioned and designed by O'Donnell Furniture to complement the overall look. When it comes to the artwork that is featured on the guestroom walls, Managing Director Helen Casey points out that the prints are some of the finest examples of gold artefacts from the first century to early medieval times. These treasures form part of the collection of the National Museum of Ireland. The company, which specialises in the delivery of interior design work for the hospitality sector, recently re-branded from Quin Casey to Helen Casey Design Associates. "We are a small team of highly trained and experienced staff in both design and project management," says Helen. "We are currently working on projects in Sligo, Monaghan, Dublin, Athlone, Cork and Kerry, but we operate nationwide, with a portfolio that includes four and five star hotels, as well as restaurants, bars and spas."
THE SPECIALISTS O'Donnell Furniture supplied the castle furniture to the restoration project. "We worked closely with the interior designers to achieve the look that they wanted to achieve, which was a modern slant on a historical building," says Managing Director Aodh O'Donnell. "The rooms were quite large, so we supplied everything from four poster beds and bedside lockers, to foot stools, luggage racks, chest of drawers, dining and occasional tables. Of course, there were a lot of variations on those items because we had to blend into the existing surroundings. Again, we were combining a unique finish for the castle on the furniture with the steelwork and lattice work, and getting those elements integrated with each other to achieve the look that the interior designer wanted. We regard the restoration of Dromoland Castle as a very prestigious project for us." Mellott's Joinery supplied and installed 32 new sash windows at the castle. "The existing windows were sash windows but they were not original," says Henry Mellott. "The majority of the windows were original historic sash and had to be refurbished in keeping with conservation requirements. We had to ensure that the conservation requirements were all satisfied before we could proceed with the installation. 'Slimlite' double glazing was allowed, after a lot of consideration. The first stage of the installation programme took approximately one month and the second stage ran over three months." Declan Hayes' grandfather was the full time carpenter for Dromoland estate before it became a hotel. He then worked as the external carpenter for the hotel for many years before handing over the business to his grandson in 2002, following his retirement. Since then, Declan Hayes Carpentry has worked on many renovation projects at Dromoland Castle. "I'm the external carpenter who gets called in for many jobs throughout the year," says Declan.

This year, for Monami, work was mainly concentrated on the main castle suites and corridors. As specialists in hotel refurbishments, we have been involved in a number of restoration projects, including the Shelbourne Hotel and the K Club. We also carry out large volumes of work for the Dalata Group of hotels around the country."

"I carry out general maintenance jobs as well as new carpentry projects, when required. This year my main focus for the restoration project was the renovation of the link corridor bedrooms, the reception area and the main restaurant. We handcrafted the furniture for the 16 link corridor bedrooms as well as the corridor panelling outside the rooms. In the reception, we fitted new wall panelling and in the restaurant we crafted new bespoke window pelmets, incorporating the gothic detail of the existing mouldings and plaster coving on the ceiling. These pelmets were then hand painted gold and given a distressed look by the very talented Cavan artist Orlagh M Murphy. We created bespoke mahogany covers to contain the heating system in the restaurant. Each unit was made with design guidance from the onsite conservation architect to ensure that they blended in with the existing panelling detail and design of the wooden wall panelling. We also made 32 new air-conditioning covers for the renovated rooms around the castle." James Thompson Plaster Mouldings Ltd worked in the library area and on the main entrance hallway, restoring the existing cornices and reinstating them to ensure
that they appeared completely damage free. They also installed new cornices in some of the bedrooms. "This wasn't our first project at the castle - we work at Dromoland every few months, restoring different aspects of the plaster work," says Managing Director James Thompson. "In fact, if you look at all of the work that we have done at Dromoland Castle over the past 20 years I would say that we have worked on about 75% of that building. We have revamped new corridor sections, installing new cornice work and creating a trellis patterned ceiling in the corridors. We have also worked on all of the guestrooms at some stage, including the function room and ballroom back in the early 1990s, so I know the castle like the back of my hand!" BEAUTIFUL BATHROOMS Tiling contractors, Clare Tile & Marble installed porcelain tiles in the bathrooms, as well as marble flooring in some of the bathrooms. According to Michael Lynch, the company completes a lot of hotel and swimming pool projects throughout the country, as well as some commercial and domestic work. The painting work during the restoration works was undertaken by Conroy Painters. "This will have been our third year working in Dromoland Castle,"

"At the outset of the refurbishment project the brief was to provide a 'contemporary classic' look while addressing all of the demands of the end user and incorporating the latest innovations and designs to ensure total satisfaction and comfort for the guest. One of the many features incorporated in the bathrooms was a frameless walk-in shower - an extra large American style shower area with a breathtaking Villeroy & Boch power shower to awaken all your senses first thing in the morning. Fluffy warm towels at arms length from the shower provide a real sense of luxury and comfort. The most outstanding feature in the bathrooms must be the Astoria tiles by Villeroy & Boch. These stunning porcelain tiles in two colours - grey and greige - exude sheer luxury with their soft colours and extra-large size formats. As we moved through the Castle, some rooms proved more challenging in terms of their layout but, with the vast array of products available from Ideal Bathrooms and Villeroy & Boch, it was possible to overcome these hurdles while still providing a luxurious theme. In summary, I believe the bathrooms will stand the test of time, and meet all the challenges of a great hotel, just like the Castle itself."
