riwijaya Air and regional subsidiary Nam Air to expand in 2016, fighting off Garuda and Lion The Indonesian airline group Sriwijaya is planning further expansion in 2016, with a focus on regional growth using its Nam Air subsidiary. Sriwijaya will take several additional Boeing 737-800s in 2016 enabling it to transfer smaller 737500s to Nam which will be used to open new secondary bases and compete against the expanding regional operations of Garuda and Lion. Privately owned Sriwijaya has emerged as Indonesia’s third largest airline group, well behind Garuda and Lion but ahead of AirAsia. Surviving an extended period of consolidation and challenging market conditions has strengthened Sriwijaya, leading to a brighter outlook. 16

HAI LION ready to resume Jakarta after two year hiatus Thai Lion believes that demand for Bangkok-Jakarta has sufficiently improved to support one daily flight. Thai Lion will mostly rely on sales in Indonesia, where it is able to leverage the strong distribution network and brand of its parent Lion Air. Lion Air has never served Thailand, although Bangkok is a popular destination for Indonesians. AirAsia is currently the only LCC group competing on the Bangkok-Jakarta route and operates two daily A320 flights. Garuda is the market leader with three daily flights using 737-800s, while Thai Airways currently operates 10 weekly flights using a mix of A330s and A320s.

ETSTAR PACIFIC plans to expand its international destinations in 2016

Jetstar Pacific is currently evaluating potential new destinations in both Southeast and North Asia. As was the case with Hong Kong, the focus will be on existing Jetstar Group destinations. This is a sensible approach as it enables Jetstar Pacific to leverage the Jetstar Group, reducing the traditional risk associated with launching new international routes, and it aids in Jetstar’s overall connect the dots network strategy. Jetstar Pacific also has been evaluating Bali, a destination not currently served nonstop from Vietnam but with tremendous potential. Bali is already served by both Singapore-based Jetstar Asia and Australia-based Jetstar Airways, providing an opportunity for Jetstar Group to offer connections to Vietnam via Bali from eight Australian cities. 18

AYAM BETUTU Chicken with Balinese Spices

A

yam betutu is one of my all-time favorite dishes. It’s a surprisingly easy recipe but really impressive to make for friends or at a dinner party – especially if you open the bananaleaf-wrapped chicken at the table. Because the vegetables are stuffed inside the cavity of the chicken, there’s not much washing up either! Here in Bali, ayam betutu (or it’s more upmarket cousin – bebek betutu) is a real treat. People often make it for special days or temple ceremonies. By wrapping the chicken in banana leaves, the moisture is kept in and the meat doesn’t dry out. A chicken cooked with this recipe will serve about 6 people depending on how greedy they are!

The Bali Aga, Baliaga or Bali Mula are the indigenous people of Bali, predominantly located in the eastern part of the island, in Karangasem. The Bali Aga speak their own dialect of the Balinese language. It dates back thousands of years and varies from village to village; the version spoken in the Tenganan village is different from the Trunyan village. In geringsing, both the cotton warp and weft threads are carefully dyed and crossdyed before weaving; the finished pattern only emerges as the cloth is woven. According to textile expert John Guy, “the ancestry of Balinese geringsing is far from clear, although some cloths display the unmistakable influence of patola”, the silk double ikats produced in Gujarat during the height of the Spice Trade (16-17C). Many of these imported cloths became inspiration for later locally-made textiles, but one theory is that the Balinese-made cloths were exported to India and copied there for production to Asian markets.

Many have unique Hindu motifs such as a bird’s eye view of a mandala with a sacred center from which everything radiates. Others feature designs clearly inspired by patola, for example a design known as the frangipani flower (jepun). The palette of geringsingis is typically red, neutral and black. Geringsing are regarded as sacred cloths, “ascribed supernatural properties, especially to assist in forms of healing. Gering means decease and sing means no.
