To Rent, Or Not To Rent? By Roger Paine Owning your home has been a British obsession for years. But the assumption that everyone should want to get a foot on the property ladder is now being openly questioned. The tradition of home ownership, more than 70% of us own our homes, is not shared by our European neighbours. In France 62% of households are owner occupied, in Holland it is 53% and in Germany a mere 46%. The remainder of the population are content to rent. Governments in these countries do not encourage home ownership in the way that successive administrations in the UK have done. Most famously when Margaret Thatcher urged everyone to embrace home ownership with her ‘right-to-buy’ scheme for all those living in rented local authority property. The present government has taken a different but equally zealous approach by introducing such schemes as ‘HomeBuy’ and the ‘First Time Buyers Initiative’. But is this what everyone wants? With today’s credit crunch making mortgage finance less readily available, and in spite of house prices in free-fall, many people have abandoned the “place of my own” dream and chosen instead to rent. Renting, however, can still conjure up images of grubby brown carpets or produce a whiff of peeling 1960’s wallpaper recalling Leonard Rossiter in Rising Damp. Although in most cases today nothing could be further from the truth. The popularity of ‘Buy To Let’ has affected rented property to the benefit of tenants, as investors soon realised that unless their property was well maintained, decorated to a high standard and had modern appliances any hopes of reaping a profit were slim. In turn, this has also forced private landlords to pull up their socks. External factors too have affected the rental market. Economic and other migrants into the UK usually rent for a number of years before making the commitment to buy. In the period 1996 to 2006, the number of migrants officially entering the country almost doubled from just over 300,000 to just under 600,000. In addition, student numbers have increased rapidly in the UK over the last decade, in line with the government’s stated aim of getting more

school leavers into higher education. As student loans have taken the place of student grants, and as credit generally has been easier for students to obtain, even in today’s recession, so there has been a massive increase in student debt. On graduation students now owe 550% more on average than they did 10 years ago. This debt generally takes years to pay-off, with the result that more and more graduates rent for longer as they simply cannot afford their own house. This is particularly true for young professional couples who even if not married will usually be in a stable long term relationship and just do not want the added responsibilities that home ownership brings. The average age of getting married, according to the Office of the Deputy Prime Minister, has risen to 31 and this, says the Association of Residential Lettings Agents (ARLA), means first time buyers are unlikely to take the plunge into home ownership until age 34. The changing size and shape of UK households has also contributed to the steadily increasing demand for private rented accommodation. The traditional model of a married couple living in a three-bedroom semi with 2.4 kids has changed dramatically in the last decade as the incidence of one parent, single person households and non-traditional family units has escalated. Divorce and the rise in the number of couples co-habiting for a relatively short time have also contributed to a rise in demand for private rented property. Many older couples too, whose children have flown the nest and find their family home too expensive to maintain, have sold their house and rather than simply down-sizing to a more manageable property have moved into rented accommodation. In many parts of Sussex and Kent, in areas beyond the influence of the M25, average rentals, per calendar month, are reported as, 1 bedroom flat, £500-£550; 2 bedroom flat, £550-£650; 2 bedroom terraced house, £675; 3 bedroom house, £800; 4 bedroom house, £950 upwards.. It seems that the ghosts of a once much-loved sitcom have finally been laid to rest.

Rare Wildlife Finds Sanctuary In Unusual Habitat An extraordinary series of photographs has been produced which tells a modern story of regeneration and new life in an unlikely and unexpected setting. The pictures are the work of Lee O’Dwyer who is an engineer and gas technician on waste management landfill sites. He is also a talented amateur wildlife photographer. In recent years this hobby has taken him around the world. Lee has photographed wildlife as far south as Cape Town and as far north as arctic Svalbard. But his latest collection of photographs was inspired by scenes much closer to home. Some of the filled and restored landfill sites that he has worked on are now providing him with an abundant supply of wildlife subjects for his lens. He’s discovered that some rarer species are positively thriving on the sites. Lee works for the waste management company Viridor which manages landfill sites across the UK. A very significant part of their work is the restoration of the landscape once the sites have been filled to capacity with millions of tonnes of rubbish. This summer Viridor had the foresight to ask Lee to use his technical skills behind the camera to photograph some of the former landfill sites as they are today. They offered him a three month secondment as the company’s ‘Official Wildlife photographer’. This new role has enabled him to travel to different Viridor operations across the UK and photograph the flora and fauna amongst the burgeoning wildlife at these sites.

The woodlark, which prefers to nest in heathland, is also faring well on the sites. It is classified as a schedule one bird – which means it is afforded special protection. Lee was delighted to first see for himself that they had made their home at Tatchells, a restored landfill area of beautiful heathland in Dorset. In the meantime, at Viridor’s Pilsworth site, Lee saw six pairs of nesting sky larks as well as a pair of grey partridges, whose numbers are also in serious decline.

The former landfill sites have now been skilfully covered, sealed, reseeded and landscaped. Today many of them are tranquil havens for birds, reptiles and mammals. Using his skills as a photographer and his extensive wildlife knowledge, Lee says he was able to survey the insects, animals and birds. “They could have sent a regular photographer to capture some of the wildlife, but with my knowledge of these habitats, I knew where and when to look for it. I suppose I was the ideal candidate for the job. Photography is one of the greatest interests in my life. I’m just delighted to have been asked to do the job of recording the beautiful and varied wildlife that has chosen to make its home on our former landfill sites.” Lee says that these sites are surprisingly good for wildlife. Some species have actually been thriving on them. Skylarks and woodlarks are good examples. Both are ground nesting birds who are finding it harder and harder to locate good nesting sites. Silage cutting in the middle of their breeding season means that skylark nests can be destroyed if they try to settle on farmland. The heathland in Dorset is also becoming a popular home for reptiles. Lee says that while he was surveying Tatchells in Wareham Forest he saw every species of reptile found in Britain and managed to photograph most of them. Lee says the key to photographing these unusual creatures is to get to the site early. “You are far more likely to see them when it’s quiet. And also at that time in the morning, you get the best light for the photographs. Midday summer sun is just too harsh. During the day is when I photograph the insects, butterflies and flowers. The evening gives me another chance to see the birds, reptiles and mammals, just as the light is fading again. “ The variety of wildlife that is choosing to make its home on these quiet, restored sites is testament to the efforts that have been made to conserve the habitat and return the land to its original glory.

How do they manage to pack in so much and still smile? What a term at Roedean! With close to four hundred students, a hundred of them day girls, the school embarked on the Autumn term as it meant to carry on: with gusto. The pace was set by the new headmistress Frances King who invited the whole community: pupils, parents, staff, feeder schools, Heads from the Girls’ Schools Association, members of Brighton and Hove Council for dinners, lunches, tea parties, concerts and plays at the school. Keen to engage with all Mrs King took as much pleasure listening to the girls’ opinion of Roedean, as she did encouraging them to interact with visiting guests. The prowess of Roedeanians seems amazingly effortless. Judge for yourself: in three months they made a thousand cranes to mark World Peace Day; danced the salsa on the European Day of Languages; hosted a Discovery Day for visiting pupils from near and far; wrote, directed, produced and acted in a Team Play Festival; played Vivaldi’s Winter and the Flintstones at St Margaret’s Church in Rottingdean for a swaying audience of local primary school children and then threw a Gala Festive Concert with all the trimmings; enacted Scheherazade and her wonderful tales in Arabian Nights; managed a trip to Stratford, one

to Tate Britain, one to Germany as well as taking in the Brighton Pavilion, tea in the Lanes; mosaic workshops at the weekend; a visit to a vintage fashion fair; mountain biking, climbing and setting up an outdoor weather station. All this on top of normal lessons, polo, karate, scuba diving, the Young Enterprise scheme, Duke of Edinburgh expeditions and raising £25,000 for charity. The ever efficient fleet of minibuses have been busy in a twenty mile radius, not only ferrying day girls but local junior school pupils to share the facilities of the science department for exciting chemistry lessons that went with a bang! Roedeanians have collected a few accolades along the way. The Schoolzart Competition based on healthy eating was won by a Year 8 student. Four of Roedean’s talented mathematicians finished in first place in the final of the Regional Maths Team Challenge. Some took up a new instrument in September and passed the Grade 1 examination in December, others finished Grade 8 with distinction. We Are The Champions In yet another fantastic achievement for pupils across Ashford School, two members of the Nicholls family have succeeded in being named National Triathlon Champions after a weekend of outstanding results! Along with school-mate Alice Doughty, Grace, Max and Euan Nicholls travelled to Wolverhampton on Friday for the two day competition which included a run, swim and shoot. Winning her run, finishing 6th in her shoot and 9th in her swim, Grace Nicholls (year 12) raced straight through to become the overall winner for her age group and was subsequently named as National Triathlon Champion. Spurred on by his sister’s outstanding achievement, the youngest Nicholls brother Euan (year 6, Ashford Friars Prep School) went on to win in his age group also, making two of the Nicholls children National Champions! These exceptional results were enhanced further with Max (year 8) finishing 6th in his age category after coming 2nd in his run, 4th in his swim and 17th in his shoot and then with Alice (year 8) finishing 10th out of 42 competitors. She finished 11th in her shoot, 17th in her run & 22nd in her swim. “This is a fantastic achievement! We are immensely proud of both Grace and Euan who have worked really hard, showing great commitment to their sports studies. 100% Local schools Sign Up To Mark ‘Our Rights’ Birthday Amnesty International today revealed that every local senior school is all set to join in ‘Our Rights Birthday’ celebrations this year. The celebrations are designed to mark the 60th anniversary of the Universal Declaration of Human Rights (UDHR), which in the aftermath of the Second World War set out for the first time international rights and freedoms for citizens across the globe. The celebrations are supported by the Co-operative Bank as part of its Customers’ Who Care ‘Defending Human Rights’ campaign in partnership with Amnesty. The schools have all signed up to take Amnesty’s new DVD education resource, Human Rights Are Our Right.The resource is just one of a menu of activities Amnesty has made available to schools to mark the 60th anniversary of the Universal Declaration of Human Rights, which also led to the creation of Amnesty International. Jo Cobley, head of Amnesty International UK’s education and students team, said “The response has been phenomenal. The UDHR set out 30 basic rights 60 years ago, and the response from East Sussex schools shows that they are as relevant now as they were back in 1948.

The resources being made available to schools include a new threeminute animated film Everybody, which stars Julian Rhind-Tutt; access to Amnesty speakers; and a new human rights passport. The History Of Smuggling By Roger Paine The dictionary definition of smuggling, “defrauding the government of revenue by the evasion of custom-duties or excise-taxes”, goes a long way to explain why stories of smuggling, and smugglers, have been a source of fascination for centuries. Few people want to pay the full price for something if they are able to purchase it more cheaply, or possibly pay nothing at all! Especially if this means that the government, or the monarchy, is being deprived of money which they want to use to wage wars or indulge in personal excesses. This aspect of “us versus them” has traditionally helped to provide a veneer of legitimacy to an otherwise illegal activity. The history of smuggling can be directly linked to the earliest recorded imposition of customs duty. This was approved at the Winchester Assize of 1204 in the reign of King John. From that time customs customary payment of dues of any kind - were payable to the King on the import or export of goods. Collectors of Customs were appointed by King Edward I in 1298 to collect customs for the Crown in certain ports. One of the first duties to be levied was on the export of wool, which was in great demand in Europe. The initial duties imposed were small but as the Hundred Years War progressed, so the tax increased in order to fund troops and further fighting. Smuggling, to avoid paying these taxes, began in earnest. Smuggling of wool, which was known as ‘owling’ after the owl-like noises made by smugglers to communicate with each other, was made punishable by death in 1661. Ten years later, King Charles II created the Board of Customs and during the same period the Board of Excise was established to levy inland duties on articles at the time of their manufacture. The next two hundred years saw taxes imposed on beer and tobacco, cheese and hard soap, salt and pepper and, at one point, playing cards and windows. In the eighteenth century, customs duties were imposed on imported luxuries such as silk and lace, tea, tobacco, rum and brandy. At each port, staff from the Customs House searched cargoes and collected dues. At sea, Customs Revenue Cruisers watched for vessels illegally offloading cargo. Ashore, Riding Officers patrolled the coast to catch smugglers as they beached cargoes and carried them inland to secret hiding places in inns, barns, caves and cellars. The coastlines of Kent and Sussex, with their proximity to the Continent, were in the front line of this activity. As attempts to apprehend smugglers became more organized, so smugglers became more ruthless. In the 1740’s the Hawkhurst Gang, so named as they hailed from the village of that name in Kent, terrorized the south coast from Deal to Portsmouth. It was said that they could raise 500 men in an hour and were prepared to murder to protect their trade. They even broke into the Poole Customs House to retrieve goods confiscated by the Customs service. The gang’s reign came to an end when its leaders were executed in 1749. Nevertheless, the government was hugely worried about the extraordinary quantities of smuggled goods. In 1779, in response to estimates of £7 million lost in revenue each year, Parliament passed another Act against smuggling. Yet in some areas, despite all the official efforts, whole communities were dependant on smuggling for their existence. In the Scilly Isles, the population faced starvation when stricter preventative measures were introduced. Smuggling continued throughout the early 19th century but began to decline after the conclusion of the Napoleonic Wars. The antismuggling effort had been stepped up with the formation in 1809 of a 26

disciplined coastal force, the Preventative Water Guard, and in 1822 of the Coastguard. But it was simple economics that ended smuggling’s golden era. Britain’s adoption of a free-trade policy in the 1840’s reduced import duties significantly and made smuggling no longer a viable occupation. Although smuggling, in one form or another, has continued unabated for the past 800 years smugglers now have little in common with their predecessors. HM Revenue & Customs (HMRC), as it became known in 2005, now tackles some of today’s most serious and organised criminals who attempt to smuggle illegal goods such as drugs, weapons, endangered species, and obscene material into the country. Around £110 billion in VAT, duties and taxes is collected every year but it is estimated that £2.7 billion per annum in revenue is lost as a result of tobacco smuggling, and a further £215 million through alcohol smuggling. The UK alone spends more than £1 billion each year tackling the problem of drug smuggling Whilst some of the goods now smuggled into the country are dramatically different from those of years ago, the practice of apprehending smugglers and their vessels at sea has changed little. HMRC now has five Customs Cutters stationed at strategic ports around the UK. The latest is HMCC Valiant, a 42 metre fast patrol craft which came into service at a cost of £4.3 million in 2004. With a skilled crew of 12 using the latest surveillance technology, it is aimed at meeting the challenge posed by today’s well-financed smugglers. A far cry from the days described by poet and author, Rudyard Kipling, who lived at Burwash, a village on a smugglers’ route inland from the Sussex coast. His poem, ‘A Smuggler’s Song’, reflects the respect local communities once had for smugglers where, euphemistically, they were known as ‘the gentlemen’: If you wake at midnight, and hear a horse’s feet, Don’t go drawing back the blind, or looking in the street, Them that asks no questions isn’t told a lie. A stylish and understated Belgium break By Cindy-Lou Dale Famously linked to WW1’s British war effort is Belgium’s hops capital, Poperinge, a quiet little Flemish town, twinned with Hythe in Kent. A short drive from the Channel Ports take you to this historical town whose main square, surrounded by neo-Gothic mansions, has an assortment of taverns serving local brews and creative confectioners offering distinctly unique pastries such as butter caramels, cake with apple slices soaked in beer, thin waffles with vanilla fillings and chocolate hop cones.

A bizarre statue stands beside the 13th century gothic church which dominates the square. The effigy is of Squire Ghybe, a peculiar Don Quichotte-like figure sitting back-to-front on a baying donkey stumbling over boulders. This figure denotes the three main cities of the cloth industry (Gent-Ieper-Brugge) which governed the county of Flanders (the donkey) in the wrong way, and tried to suppress the stubborn town of Poperinge (the boulder) in vain. Down a side street leading off the square is an 18th century mansion house, historically owned by a tobacconist, but now the Romantik Recour Hotel. The austere exterior of the Recour veils a sumptuous interior which has been sympathetically restored, incorporating many of the original relics in its design. The light classical music which greets you at the entrance underscores the hotel’s stylish atmosphere, promising luxury and indulgence.

The hotel, although brimming with priceless antiques, marble fireplaces and crystal chandeliers, harbours no excesses. Functional charm and modern-day creature comforts are all superbly offset against cameo coloured walls. Accents are in subtle relaxing tones of Havana and Russian lavender. Explore West Flanders’ colourful past which is bursting at the seams with legends, such as the submerged castle in the surrounding woods, and a knight from Napoleon's army who rides the skies. Visit local WW1 historical sites, the hops museum or the nearby Abbery of St Sixtus at Westvleteren. Later, return to the Romantik Recour and immerse yourself in a bubble bath, soaking up the surrounding perfection and complimentary sherry before entering the elegant and stylish Pegasus restaurant - noted in the Michelin hotel and restaurant guide. Here head Chef Bert Recour’s artistic skills will tease your palette with his exotic cuisine such as ointment of Jerusalem artichokes and pine-nuts with beetroot vinaigrette, and filet of pheasant with green cabbage and black truffle, perfectly offset by a superb international wine arrangement.

Nostalgia seeps from the eight spacious rooms which have all been individually decorated in muted shades of Tuscan honey, vanilla, buttercup, and soft moss against rough brick walls in hues of cocoa and bark. Bonhams Sell Image Of Kratatoa Painted By Sussex Boy Who Emigrated To Australia And Saw Volcanic Eruption The aftermath of the eruption of Krakatoa in 1883 – the enormous island eruption which formed tsunamis that killed tens of thousands of people – is the subject of a fascinating picture being sold at the Bonhams Exploration, Travel and Topographical Picture sale on 17 December in London. The eruption is believed to have caused the loudest sound ever made on earth during recorded history. The devastation it created was immense. Some of this horror is captured in the image painted by Isaac Walter Jenner (British 1836-1902) titled Krakatoa painted in 1887. The picture recalls the sight he saw from the ship RMS Roma which was carrying this Brighton-born artist to a new life in Australia. Those on board the Roma witnessed first hand the effects of the eruption. Jenner painted the floating debris in the sea, the brilliant sunset which was a direct result of the ash and sulphur dioxide released into the atmosphere by the eruptions, and the ship seemingly becalmed on a still sea, making smoke where once the volcano had erupted, making far greater smoke and ash. The painting – oil on canvas – is estimated to sell for £15,000 to £20,000. Jenner joined the Royal Navy at the age of eighteen, but he retired to Brighton, his birthplace, a decade later to become an artist. Unhappy with his prospects as a marine and genre painter there, he emigrated

with his large family to Queensland in 1883. They sailed from Plymouth on 31 July on board RMS Roma. By then Krakatoa had already begun erupting, although these eruptions really started to intensify on 24 August, culminating in the cataclysmic stage on 27 August. The main eruption was heard as far away as Alice Springs, 3,500km away, and is believed to be the loudest sound in recorded history. The tsunamis that accompanied each eruption, as well as the falling ash, resulted in the deaths of tens of thousands of people in the region, and the destruction of two thirds of the island of Krakatoa. "On approaching the Strait of Sunda nasty weather was experienced with a strong adverse current, afterwards ascertained to have been caused by the tidal wave in the Strait on the 25th [August]. Was delayed by floating lava getting into the pipes of the circulating pump, and on the morning of the 6th September met the Dutch man-of-war Prince Heinrich, whose captain gave warning that the ordinary channel through the Strait had been blocked and gave instructions to sail another course. Proceeded slowly, and reached Batavia the same day." (The Brisbane Courier, 26 September 1883, as quoted in Fry & Mahoney) Jenner and his family arrived in Brisbane on 19 September and he remained in Australia for the rest of his life.

The Cygnet Award, launched by the award-winning, Michelin-listed brasserie The Swan, in West Malling, reached an electric conclusion on Saturday 22 November, when the six talented young finalists came head to head to cook their original recipe creations at the Live Cook Off, at The Cornwallis Academy, in Linton, near Maidstone.

George Norris, from Ashford School, lifted the magnificent Cygnet Award in the younger category (year groups 7 &8) with his delicious ‘Baked Apples & Damson Jam’. George just edged ahead of fellow finalists Jordan Marsh, from Longfield School, with his ‘Kent Pear Crumble Cheesecake’ and Michael Prater from Chaucer Technology School, with his ‘Autumn Blackberry Shortcake with Mascarpone’. The only girl in the final cook off - Ashleigh Howling from Mascalls School - won The Cygnet Award in the older age group (year groups 911) with her original ‘Kentish Cobnut, Lentil & Mushroom Parcels served with Beetroot’. Ashleigh just moved ahead of the two other finalists in the older competition – Trevor Button from Longfield Academy with his ‘Vegetarian Cottage Pie with Kent Parsnip & Kent Apple Mash’ and Toby Harris from Ashford School with his ‘Rarity Plum & Apple Cobbler’. The two winners’ recipes will now go on to feature on the menu at the Michelin-listed brasserie. The Swan in West Malling has also promised to donate a pound from each Cygnet dish sold in the brasserie, to help further the work of the two food technology departments at Ashford School and Mascalls School. The two budding young chefs, George Norris and Ashleigh Howling, will also get to spend a day in the kitchen at The Swan with awardwinning head chef, Scott Goss and dine in the brasserie with friends and family to the tune of £200 each. All the competitors walked away with certificates and bottles of champagne and the runner ups were presented with £40 vouchers each to dine at The Swan. William Pettit, from Ashford School, with his ‘Veggie-Sheppy Pie’ was awarded a ‘Special Commendation’ as he was unable to proceed to the Live Cook Off, due to sudden illness. Commenting on The Cygnet Award Scott Goss, who headed up a team of judges including Produced in Kent’s Julie Monkman and the KM Group’s Digby Kennard, said: “The standard was incredibly high throughout this competition and The Cygnet Award has proved that original, healthy recipe creation, using seasonal and regional produce, is alive and kicking in this county. With 164 young people entering The Cygnet Award from 29 different schools, every single finalist in the Live Cook Off is a winner as far as the judges are concerned. They all showed tremendous skill and creativity and every one was delicious!” The electric final was captured on km.fm live radio , with breakfast DJ Neil Faraday and a camera crew from BBC South East, with the finalists appearing on the early evening news. Commenting on his win George Norris, of Ashford School, said: “I am so happy, this means such a lot to me and I can’t wait to have a day in the kitchen at The Swan with a proper chef. The Cygnet Award has been such an amazing experience and it might take my life in a new direction.” Kelly Norris, George’s mum said: “I can’t tell you how proud I am today. His win is brilliant, just fantastic and the best news. George has absolutely loved this whole experience, it’s been a really big competition with the radio and cameras here and The Cygnet Award has been an incredible thing for him to achieve!” The winner in the older group, Ashleigh Howling, of Mascalls School said: “I am very happy and it’s a big surprise. Who knows, it might be the start of something!”

We will definitely do it again.” Other teachers who came to support the finalists also praised The Cygnet Award. Ruth Pell, head of food technology, at Longfield Academy, in Longfield, near Dartford had two finalists in the Live Cook Off and even organised extra lunchtime cookery clubs for all the pupils that wanted to enter the competition. She said: “I think The Cygnet Award is fantastic. Jordan Marsh and Trevor Button have performed above and beyond my expectations and I am so proud of both of them. The standard here today as been very high, what a breath of fresh air this competition has been for secondary schools in Kent.” Jessica Gipson, director of the Maths & Technology College, at Chaucer Technology School, Canterbury, came to support finalist Michael Prater. She said: “The Cygnet Award is a fantastic initiative and has fitted in so well with what we are trying to achieve in our curriculum. It’s been especially good to see the boys playing such a large part in the final here today and to see the young people enjoying food technology so much. It’s a great inspiration to other pupils back at school to see these finalists taking part in such a big experience and will inspire even more young people to get involved next year.” Next year’s competition will be launched in September 2009, with the full media backing of the KM Group. Tip the right box Make sure your restaurant tip actually rewards staff for good service this year rather than topping up their pay to the legal minimum, says The Good Food Guide. The government has launched proposals to make tips fairer for service staff in the UK by banning employers from using tips or service charges to make up the minimum wage for employees, but a decision on these plans won’t be made until early 2009. The Good Food Guide urges customers to take the following steps this year: > Don't be afraid to ask where your tip is going - if you are at all unsure, pay the tip in cash to your waiter or waitress. > If staff do not get a share of the service charge, ask for it to be removed from the bill and pay the actual charge in cash to the waiter. Conversely, if you’ve received poor service, reduce or remove service charges added to your bill and tell the restaurant why you have done so. When Which?, publisher of The Good Food Guide, surveyed almost 1,000 members of the public about their tipping habits earlier this year*, 54% said they tipped around 10% or more. Elizabeth Carter, consultant editor, The Good Food Guide, said: "Good service should be rewarded, but the customer should decide where their money goes, not the management. Think about carrying extra cash when going to a restaurant and give hardworking staff a well deserved tip."

Baked Mushrooms Filled With Spinach, Brie And Walnuts Serves 4: Ingredients: 4 field or portabello mushrooms, wiped and stalks removed 45ml/3tbsp olive oil 225g/8oz baby leaf spinach 40g/1 ½ oz walnuts, chopped 100g/4oz vegetarian Brie (or Blue Stilton), cut into small pieces to taste salt and black pepper to serve mixed salad leaves and cherry tomatoes (halved)

Method: 1. Heat the oil in a frying pan and fry the mushrooms on both sides until tender. Remove and place in a greased ovenproof dish in a single layer. 2. Wash the spinach and cook quickly in the water remaining on the leaves until wilted. Drain well and use to top each of the mushrooms. 3. Mix the walnuts and Brie together in a bowl and season well. Top the mushrooms with the mixture and place in a preheated oven (190/375/Gas 5) or under the grill and cook until the cheese is bubbling and golden. 4. Serve on a bed of mixed salad leaves and garnish with cherry tomatoes. Note- to make a vegan version, substitute 100g/4oz Swedish Soft (plain or garlic and herb).

The Bannatyne Interview At Bannatynes Hotel, Hastings Aspect Publisher Neil McGuigan was recently given exclusive access to interview Dragons Den entrepreneur Duncan Bannatyne at his new Hotel, spa and fitness centre at Beauport Park, Hastings.

Yes I’ve been there I know what it’s like up there. Just going back to the early days as well, I don’t know if anybody has asked you these questions, but what’s your earliest memory?

NMG “ Well thanks for taking some time out Duncan. Firstly I would like to congratulate you on what you’ve done with the hotel. Do you mind me asking any questions about anything or...?”

It would have to be when I was being bathed by my parents in a tin bath in front of the fire, dried by my mum. My father dried me quicker but rougher. My mother used to dry me for too long and I was freezing.

DB “ Any questions except ones I don’t want to answer!

In those days did you get hot or cold water?

Going back to your time back in Clydebank you must’ve grown up in the 50’s and 60’s, hard times and from a hard area.

Luke warm I think.

Yes Were you involved up there at all? I know because I come from that area myself, did you have to get involved or were you involved in the gang side of things, any of the “teams”, the boys- or did you steer clear? No, well it wasn’t gang membership, where I lived it was just outside of Glasgow. But I know there was a lot in Glasgow, so we didn’t actually get involved in it but there were different schools from our schools that would fight occasionally, but that was it. Nothing really serious. What about the Catholic - Protestant thing? The Catholic Protestant thing was there yes, but the school you’re in, religion was that fight.

You moved on to start your first business. I found it fascinating how you started with the ice cream business, which I find really weird because you started it in the North East, which is fairly close to the Scots border. I mean you must have lived or died on the weather up there. No, because I did what we did in Scotland. I started doing ice creams as well as sweets, bits and pieces, that sort of thing. So that supplemented the ice cream sales. You’ve got a travelling shop actually. Yes, in those days you had those shops going round, not the ice cream vans but like the van where your mum used to get the vegetables and sweets and everything else like that as well. Moving right up to date, this place (Beauport) and well what was your main motivation? I’m sure it isn’t just money. I can see the motivation and the reason for expanding going up to your 62, 63 health clubs, but what was your main motivation for buying the hotel? I’d like to say I planned it. That would have been pretty clever but I didn’t because what happened was that the land became available for a health club, a year after, 18 months or so, The hotel came on the market itself. 38 acres. I want to control the land the health club is built on. So we did, I didn’t know exactly what we would do with it, so we started selling spa breaks, with the idea of a spa hotel. It was very successful, fantastic Yes and that’s going to really take off, and also it was interesting when you showed us around the rooms as well, with the niche of the Beauport park hotel had before. It really did exclude sort of your average reasonably well off travelling business men that watched their pennies. They can come here now, which is amazing, whereas before you wouldn’t even think about it, just drive on to the nearest B&B. Do you mind me asking about your kids? Yes, sure Who’s your oldest and who’s your youngest? My boy called Tom, 7 years old this month, and Abigail who’s 25. I’ve got to say as well, you’re 10 years older than me and you look about the same age as me, I might be doing something wrong am I? Or you’ve been doing something right. I’ve been to the spa, had a few facials.

Ok, and what about, Duncan Bannatyne, I know you’re here, you’re opening the spa, and you’ve got a lot of things going on tonight. If it wasn’t a work night, what would Duncan Bannatyne`s Friday night be like?

You’ve vetted him? I can imagine you look after your girls.

You know what? It really is too much because in two weeks time I’m going to be in Africa, I’m going to be speaking at a World Health organization, we’ve spoken to the African leaders, and two weeks after that we’ll be in Ethiopia. My life changes every single week.

Yes, that’s the crucial thing with my kids as well, that’s the most important thing definately, and it’s nice to hear you say it. I know you haven’t gone in this direction but I know in the press you’ve commented here and there about a few things and I know that we’ve got a few things , well a few pet hates. Bullying, paedophiles, possibly The Establishment sometimes, in the appropriate place, Jeffery Archer types. You haven’t gone down this direction but I thought many years ago before you were a nationally known face, you might one of these businessmen that might go into politics. Did you ever think about that?

There’s never a sort of average Friday night for you then, it just doesn’t happen. One night I’ve got a charity do with Gordon Ramsay, people like that, you know two or three in a row, but it’s constantly changing.

Yes but he’s a nice guy. My 22 year old hasn’t decided what she wants to do with her life yet, it all depends on what makes her happy.

Yes, no I don’t want to do politics, it’s not my thing. So what you’re saying about, and I realise why you’re saying it, with your business, you say these days you delegate to your MD. You don’t have to do much day to day, you spend very little time actually doing it but in fact you’re spending 5, 6 days a week working, whether it’s for a charity or for your own business’s really. 7 days a week, other than when I’m with my kids which is great fun. Mostly with my kids actually in the summer, I went to my villa for 46 days. 46 days! Yes? Yes, but I went away for two days because I had to go to a radio station to promote my book, they did it all on a radio station there, and I keep in touch on my blackberry. I stayed there for 46 days and 45 nights. Amazing, have you ever thought about doing a job swap with a publisher from Aspect, swap lives for a bit?

But have you never thought about it? What are your opinions on the current labour party? In my opinion Gordon Brown is the best person to lead this country, I think there is a problem in parliament and I think we should resolve it. It happened to Maggie Thatcher, it happened to John Major. With Tony Blair, he had no way out. With the election due four years later, he wants to get out, he can’t get out, he leaves, and the country is demoralized. Somebody else takes over and they all come out fighting again. I want fixed terms of government and then a 60 day handover period. To my very final question, if you were elected PM tomorrow, what would be the first thing you do? I would change the law to a fixed term in parliament Touche! Thanks very much.”

I haven’t got the intelligence to do it! It doesn’t take much! It’s a thought anyway. What are your aspirations for your kids?

About Me and My philosophy By Ben Harris, Photographer I am always looking for the ultimate image and really enjoy the adventure in its pursuit.

I started out as a photographer’s assistant in London. I worked first with a food photographer using 10x8 and 5x4 plate studio cameras. Composition together with a mixture of tungsten and flash lighting painted the pictures that appeared in food magazines and advertising campaigns.

I think it’s a good idea to have a mixture of formal and informal photographs on your Wedding day.

I then went freelance and joined the 'Association of Fashion, Advertising and Editorial Photographer’s’, and worked with a wide variety of photographer’s including Terence Donovan and Wayne Stambler. I also worked in John Swanell’s studios. I picked up a wealth of knowledge through Car, Advertising, Editorial, Food and Fashion photography, both on location and in the studio in this country and abroad. I use a mixture of digital and film formats. Both have their own merits depending on the situation.

I’ve sometimes found that couples, who ask for purely informal photographs, find that on the day, having some group shots taken seems appealing. So I think it is best to include a number of group shots either at the church and/or the reception. I tend if possible to take the largest group shot first so that there are no difficulties finding the odd guest in the bar!! Once they are taken the guests and couple can relax whilst I continue to respectfully and informally photograph . I am a purest. I don’t colour the image using filters on the camera. My use of software packages replicates what can be produced in the darkroom. I don’t manipulate the image too much and believe that the source is, all important.

I am always looking for the ultimate image and really enjoy the adventure in its pursuit.

What I mean by, source, is how the photograph was taken. The composition, lighting, exposure, the camera, even the feeling at the moment the shutter was pressed. All of these factors and many more make the picture taken at that moment in time unique.

I always meet the couple well before their wedding day at the wedding/reception venues to go through photographic locations and shot combinations. I also take a number of pre-wedding shots just as a bit of fun so that you can get used to me. It’s also good for lighting and

Big demand for insulation grants Wealden residents have responded in unprecedented numbers to offers of grant help for loft and cavity wall insulation. In just eight weeks, the Council’s Home Energy Efficiency Hotline has taken nearly 1000 calls from residents who want to save on energy bills and help cut down on harmful CO2 emissions. "The new Home Energy Efficiency Grants, offering free cavity wall and loft insulation for many householders aged between 60 and 70, has really made a difference," said Councillor Dick Angel, Cabinet member for Affordable Housing at Wealden District Council. "In just eight weeks the number of enquiries received by our Home Energy Efficiency hotline has been double that received for the whole of last year. "This new incentive, made possible through money from Wealden's successful bid to the Regional Housing Board, has really pushed the right buttons. But it does mean most of the available funding for the next three years has already been allocated." "We shall be urging the Government to take note of how willing the people of Wealden are to act to reduce energy wasting in the home, and to act themselves by providing more funding," said Councillor Pam Doodes, Leader of Wealden District Council. "We take Climate Change seriously at Wealden and this scheme has proved an effective way of encouraging households to reduce their greenhouse gas emissions." The response to the current scheme has been so great that grants for the second and third years of the Home Energy Efficiency scheme have already been allocated. It will mean that some of those households who have been successful will have to wait for these funding streams to become available.

The Benenden would replicate the original system perfectly: Finished in a tough polyester paint finish with antique leaded sealed units and key locking handles, the Benenden range was the perfect solution. Unlike more bulky UPVC systems, the elegant features of the Benenden range allows people living in houses within conservation areas to retain their original charm. The Benenden accommodates single glazed authentic leaded lights which can satisfy the restrictions imposed by the “custodians“ of English Heritage. Silk Is Hot News In Chillier Climes Sales of a top brand of luxury silk duvet are heating up – thanks to concerns over escalating energy prices. Hone Your Public Speaking Skills Battle Speakers’ Club launched successfully on 6th November with 29 people attending the inaugural meeting. This is the newest branch of Toastmasters International, the aim of which is to improve communication and listening skills amongst its members.

People join Toastmasters for a variety of reasons, whether it is to improve their skills as a result of a promotion at work, because they need to deliver the “Father of the Bride” speech or just because they want to be heard and taken more seriously.

The founding committee is a team of local business people who could see the benefit for themselves and others in improving communication skills. Giles Robinson, a partner specialising in family law with Gaby Hardwicke Solicitors, and who has long-standing experience of Toastmasters, has taken on the role of President. Mike Robertson of MRA Limited, an Independent Financial Advisor and Debt Management Consultant, has taken on the role of Club Enforcer/Treasurer!

Giles Robinson, the new President, who has 20 years previous experience with Toastmasters International said “Following the Toastmasters programme is a great way to boost one’s confidence. It is fun and it is friendly.”

Peter Matthews, the Director of Global Reinsurance Consultants Limited, is in charge of publicity, whilst Jason Rudland, the director of Argo Internet Business Consultants, which specialises in search engine optimisation, website design and e-business, is inevitably taking responsibility for the club’s web-based marketing. The fifth member of the team is Graham Gardner, an Independent Financial Advisor at Lifetime Financial Services Limited, who also has a long history with Toastmasters, bringing a significant depth of knowledge to the club. A regular club night allows members to practice their public speaking skills in a supportive environment and to receive feedback on those from other members. A structured programme enables the novice to become a competent speaker, and the more experienced presenter to become better. In the course of an evening one member will take on the role of Chairperson whilst others will deliver prepared speeches intended to achieve a particular purpose, such as improving body language, vocal variety or use of humour. A more experienced member then gives constructive feedback to the speaker. This is crucial, as it is the sort of feedback that a speaker never normally obtains in the “real world”. After a short break there will be an opportunity for impromptu speaking (up to two minutes to speak on a topic without prior notice) which is also evaluated.

Giles chaired a most entertaining first evening which demonstrated what members could expect if they joined the Club. On that night Mike Robertson gave a very creditable performance, delivering his maiden speech entitled “My Life, Who Dares Wins”, introducing himself to the Club. He was followed by Peter Matthews, whose speech assignment was to focus on his use of body language. Both members received constructive feedback from their evaluators, giving them tips and thoughts for the future. After a short break the topics session was run by Jason Rudland, who invited those present to talk about a sight, sound or smell which evoked a particular memory. Many of the guests took part in this lively and good humoured impromptu speaking session. Samantha Babister, the Division Governor for this geographical region of Toastmasters International (of which Battle Speakers’ Club is a part), commented that this was one of the most successful Club launches she has seen. She is looking forward to seeing the Club achieving charter strength very quickly. The Truth about your Money By Mike Robertson of MRA - Independent Financial Adviser’s For most of us, a New Year means a fresh beginning with resolutions. Now’s the time to start making those important decisions, especially when it’s in relation to your finances. For those so important decisions, I am recommending five suggestions for your New Years Resolutions. 1. Set up an emergency cash fund. Most people say, “It will never happen to me”. The importance of an emergency fund is to assist with exactly what it says on the tin, an emergency. It could be that you have a loss of overtime or end-of-year bonus; the washing machine needs replacing; the car has just failed its MOT. What would you class, as a financial emergency? Under normal recommendations, you should have at least 3 months worth of living expenses. Hold this on deposit in an instant access bank/savings account. If you’re self employed the permutation should be higher to compensate for income fluctuations and seasonal changes. 2. Get out of debt If you have unsecured loans, credit cards and/or overdraft debts, start budgeting, work as hard as you possibly can to decrease or even pay off these debts as soon as possible. How to do it? • Quit using your cards (easier said than done) and/or cut them up now, especially if you can’t afford to pay them off at the end of each month. • Create a financial statement so that you live within your means. • Map out your strategy for making the extra payments. • List all your credit cards in order of their balances from biggest to smallest along with their monthly minimum payment. • Concentrate on paying off the smallest card first while paying the minimums on all your other cards. • Once the smallest card is paid off, take that payment and add it to the next smallest card. • Continue this process until all your cards are paid off. • Replicate the same method on paying off the loans the same way. • Paying off the smallest credit card first will do a lot for your financial stratagem. 3. Retirement Planning If there’s one thing that everyone agrees on, it’s that pensions are very confusing, if you don’t understand, talk to a specialist independent financial adviser. Review your retirement planning at least annually. The beginning of the year is the perfect time to review your premiums and rebalance the investment funds. This is crucial as it also helps to manage the investment risk. It’s also important to understand that pension companies change investment funds and their charges from time to time.

The humble state pension, for most people is the steadfast pillar of our retirement income. Make sure you have an up to date future forecast. Company and personal pensions are a key vehicle for long-term savings. While it’s essential that we get to grips with pensions, we needn't overreact. Pensions should be just one part of our overall longterm investment strategies. Also, remember that your pension contributions are tax efficient – For every £80, you put into your Pension the Government will add £20, up to certain limits, which will help you to achieve the lifestyle you want in the future. However, if you are a higher rate taxpayer you can benefit from even more tax relief as an extra 20% (please remember tax rules may change in the future), which can be claimed through your tax return. 4. Set up a Financial Budget. I know, I know, nobody likes the “B” word. How many of you have tried budgeting and think it's a waste of time? Come on, let's see those hands. OK, that's just about everybody. However, a Financial Budget is a perfect way to see exactly where your money is going. If you don’t like doing this, speak to a financial adviser who specialises in cash flow forecasting (financial forecast planning). When setting up a Financial Budget, try to keep it as simple as possible. What you're trying to do with a budget is to prevent overspending, which ultimately leads to piling up debt. Contrary to the way most people budget, it rarely matters what you're overspending on, dining out, entertainment, clothes, etc. Who cares? It's still debt, right? The answer to budgeting is the “70% resolution”. It’s a faster and easier way to structure your budget without having to account for every penny. In other words, by limiting all essential spending to 70% of total income, your savings will soar. 5. Prepare A Personal Financial Statement. The only reason as to why a person wouldn’t want to prepare a personal financial statement is that they are afraid of what they might find out. Well, if this is you, its time to face reality. Personal financial statements (I’m talking about a net worth statement and a cash flow statement, which is basically the same thing as a budget) are an excellent way to gauge your progress from year to year. If you go through the year knowing that you are going to be accounting for your habits the next time you prepare your financial statements, you will do a better job of keeping your spending under control. In addition, once you prepare a net worth statement, you will find yourself wanting to improve on it. With every financial decision, you make, you will think about the effect every transaction will have on your net worth. Mazda Motor Corporation will showcase the world premiere of the allnew Mazda3 (known as Mazda Axela in Japan) 5-door hatchback at the Bologna Motor Show on December 3, 2008. The second generation Mazda3 5-door hatchback follows rapidly on the heels of the new 4door saloon version, currently on display at the Los Angeles Auto Show. The all-new Mazda3 5-door hatchback adopts the same fresh characteristics as its saloon counterpart, offering sporty driving and a dynamic design, together with top class environmental and safety performance. Environment-friendly qualities were top of mind at Mazda R&D during new Mazda3’s development, including more efficient powertrains, Mazda-typical weight saving engineering solutions and fine tuned ‘best in class’ aerodynamics. All petrol engine versions of the new Mazda3 will offer even further advanced environmental performance, including the world’s first vehicle catalyst to be constructed using single nanotechnology. MOTORING The Volvo XC60, with Volvo's unique Whiplash Protection System (WHIPS), is one of only five cars to receive the highest rating in Euro NCAP's new assessment procedure for evaluating the degree of whiplash protection offered by passenger cars in rear-end collisions. The Volvo XC60 also received the highest rating of five stars in Euro NCAP's Adult Occupant Protection tests, which includes front and side impacts. The new Euro NCAP evaluation procedure for whiplash protection consists of a number of different tests. Firstly, the seat's geometry is measured, for example, the position of the head restraint, in order to determine how well the seat can protect against injuries in a collision. Three tests are then conducted in a testing rig with varying degrees of collision severity. This rig is used to simulate a situation in which a stationary car is subjected to a rear-end collision. Finally, the results are evaluated and the car is graded on a scale of red, orange and green where red is poor, orange is marginal and green is good. "Our latest model, the Volvo XC60, performed well in all of the tests and was given an overall rating of green," says Thomas Broberg, a safety expert at Volvo Cars. Common injury Whiplash injuries are one of the most common types of traffic injury and occur primarily in rear-end collisions. If whiplash injuries can be prevented, considerable expense and the amount of suffering by the individual is reduced. "The reason for neck injuries is the very rapid movement between the head and body," explains Thomas Broberg. "This makes it vital for the whiplash protection system to support the entire back and head and to help the person's head move together with the torso. The design of the seat's backrest and a head restraint that is sufficiently high and positioned close to the head are also important factors." Volvo's WHIPS is a form of protection integrated into the front seats which supports the seat occupant's entire back and head in a rear-end collision. This protective system cushions the movement through energy-absorbing deformation elements between the backrest and seat cushion. If a rear-end collision occurs, the backrest follows the occupant's rearward movement in order to reduce the forces on the neck and spine. This year marks WHIPS' tenth anniversary. This technology was introduced in 1998 on the Volvo S80 and WHIPS has been a standard feature on all Volvo models since 2000. According to Volvo's Accident Research Team, this system reduces the long-term effects of whiplash injuries by half.

Volvo's work with safety is always based on real-life traffic accidents. Through Volvo's own Accident Research Team and tens of thousands of crash tests, facts are compiled that subsequently form the basis for the development of the safety systems of tomorrow. Helping a driver avoid an accident is naturally the most effective means of reducing the number of people injured or killed in traffic. For instance, the Volvo XC60 is equipped as standard with City Safety, which is a feature that helps the driver avoid colliding with the vehicle ahead in slow-moving traffic and other similar situations. Euro NCAP does not currently test safety systems of this type.

New Maserati Unveiled Under The Flag Of Its Sporty DNA

The MC Sport Line customisation programme focuses on Maserati’s racing heritage fresh from its latest international triumph in the FIA GT championship with the Bertolini-Bartels duo in Argentina, the land of Juan Manuel Fangio. Maserati has developed a special series of new options named “MC Sport Line”, which make their worldwide debut at the Bologna Motor Show, with new content that adds to Maserati’s already extensive range of personalisation options. The “MC Sport Line” is designed to enhance the sporty DNA of Maseratis for those customers who like to express their passion for racing through dynamic styling and a choice of technical solutions that increase driving fun without compromise. The name “MC Sport Line” sums up the on-track experience gained by the Maserati Corse department, whose contribution to the design of the functional components has been invaluable. The world of motor racing also inspired Maserati’s designers when it came to styling, hence the extensive use of carbon fibre, exceptionally popular among racing enthusiasts thanks to its direct links to racing. The GranTurismo S, the ultimate expression of Maserati’s performance, was the model chosen to first present the “MC Sport Line” catalogue to the public, which will be extended to the GranTurismo range and then will ultimately encompass the entire Maserati line-up during the course of 2009.

The carbon fibre door sill bearing the words “MC Sport Line”, tells you that you are entering a different environment, in which carbon fibre characterises the door panels, dashboard and central tunnel. The steering wheel rim is also made from carbon fibre, as are the paddle shifts for the electro-actuated transmission and the body of the instrument panel, dashboard and door panels, featuring carbon moulding. Looking at the central tunnel, carbon fibre dominates the entire section, acting as a backdrop to enhance the brilliance of the chrome. The “MC” pedal block complete with kickplate to the left is machined from solid aluminium. Under the “skin”, the suspension has been stiffened thanks to new, stiffer springs, shock absorbers and anti-roll bars; the new suspension set-up is synchronised with a specific Maserati Stability Programme software, allowing the driver more freedom. The car is now 10 mm lower than the GranTurismo S, resulting in on-road performance that is absolutely uncompromising in terms of handling and driving enjoyment. All the features listed are available either as part of the customisation package, following the indications of Maserati designers; or individually, to cater for the personal tastes of each customer.

From early 2009, GranTurismo S customers will not only be able to enhance the sporty look of their vehicle’s exterior and interior — but different technical solutions will also be available. Aerodynamics can be modified thanks to the addition of front and rear carbon-fibre spoilers, which benefit from track tests conducted on the GranTurismo MC Concept; the new aerodynamics not only optimise the vertical load but give the car a very distinctive appearance, as do the side skirts with the central panel finished in matt black, adding a dynamic edge to the side view. The sporty look of the exterior can be completed with carbon fibre mirror housings and door handles. The same dark shade is reflected in the glossy black 20” wheel rims that perfectly match the dark line of the exterior. 97
